ASHEVILLE RESTAURANT WEEK ‘Round here, we love farm-to-table fare—you know that. But at no time is this more clear than during Asheville’s Annual Restaurant Week. This year’s celebration will take place January 17th through 26th, and nearly every participating restaurant holds steady to those tenets of fresh, sustainable and delicious fare. During the week, participating restaurants offer a prix fixe menu priced from $15 to $35 per person. Some of our favorites this year? Nightbell, the Bull & Beggar and Rhubarb.

lot of chefs have simple resumes; they detail hours spent in kitchens and

classrooms, preparing dishes and leaving the real world somewhere in a steamy haze. Ofri Gilan is not one such chef. Take a look at her resume, and you’d wonder how anyone could fit so much life into one lifetime. Her paths have been as diverse and varied as the trails around our mountains. But one thing has remained constant throughout her life: her passion for good, healthy food. “I love food. I love shopping for it, I love the markets, I love fresh produce, I worship vegetables,” Gilan says with a laugh. It’s a passion that began at a young age, on her kibbutz in Israel. Gilan reverted to her passion for food and began offering personal chef services in Boston. Gilan focused her work on people with special dietary needs. A personal chronic illness inspired her interest in therapeutic diets, and she worked with hospitals to help train patients to eat well. Though they’re often given lists from dietitians, folks with conditions like epilepsy and Crohn’s can’t follow those lists without the skills to prepare the dishes. Last year, Gilan, her husband and their son moved to the mountains in pursuit of a lifestyle change. Although she hasn’t been able to break back into her work in hospitals,

FINDING

FREEDOM ARTICLE JESSICA LOHREY

Imagine a building with 100 stories. If you look out the window, the view will be different from each floor. We are all born on a floor within this hypothetical building. What we see and experience in life is colored by the floor from which we are viewing life. We are all born into a household, a family and particular life circumstances. From birth we are taught who we are, what we like and dislike, what is good and what is bad. We inevitably develop a learned perspective about living. We also develop skills and tools to help us survive within our unique life circumstance. We spend most of our lives on this one floor of the 100-story building. We desperately try to stay there, even when it may be less than ideal. Everything else is unfamiliar and frightening. We may not have the tools to thrive in any other reality than the one we know. If the full spectrum of life offers myriad possibilities depending upon one’s vantage point, the ancient yogis believed that to be Jessica Lohrey is a Certified Yoga Therapist practicing in Asheville,

W

e all want freedom: freedom from fear, from pain, from worrying about what others think of us. What would

your life look like if you were completely free? How would you carry yourself? How would you spend your time? How would this freedom affect your relationships with others? The word yoga has become synonymous with fancy pos-

tures, drinking kombucha, wearing mala beads and striving to

live a perfect life in a perfect body. Let's admit it: the common “westernized” version of yoga is intimidating. The ancient yogis didn't care how they looked, what they wore or if they were doing the postures "correctly." They were practicing for different reasons. They practiced to become more free. 22

covery. However, students are guided and challenged to explore new ways of thinking and being.

Modern yoga is about taking an ancient philosophy and adapting it to day-to-day life situations. Anyone can reap the benefits of a well-guided yoga practice. Through yoga we become aware of our own colored views based on years of repetitive thought and behavior patterns. Yoga can also help to curtail self-criticism and soften our judgments of others. We can become the big person looking into the snow globe instead of the little person inside, lost in the storm. That is true freedom. How does it work? Try following these 5 simple steps the next time life throws you a curve ball. BREATHE Deepen the breath, elongating both inhale and exhale. RELAX Scan your body and notice where you are holding tension. Exhale and release it. Start by softening the belly. FEEL Take notice of any body sensations, thoughts or emotions that may be present. Turn your attention toward your moment to moment experience of these. WATCH Observe the whole process as a “witness.” Notice how this is

unfolding, rather than why, or if you like or dislike it. Personal connection with the situation will diminish and you can let it be exactly as it is.

ALLOW Allow the process to happen. Let go of resistance and control. Let the experience wash through you. In this moment of exhilaration, allow change to happen. That’s it—you’re now a yogi.

A New Kind of Medicine ARTICLE WESLEY BROWN PHOTOGRAPHY MIKE BELLAME

J

anuary is the month of resolutions, and most of them orbit a single idea: health. Gyms fill with new fitness devotees, piles of organic produce dwindle at alarming

rates, folks hit the pillow earlier and their yoga mats later. And yet, good health is a seemingly unattainable goal for a growing percentage of Americans. Dr. Gus Vickery is a doctor in the truest sense of the word, in that his singular goal is to improve the overall health and well-being of all his patients—and even those who aren’t his patient. Over the past decade, he’s watched as rates of formerly rare

conditions like fibromyalgia, diabetes, chronic pain and migraines have increased with alarming swiftness. Simultaneously, he’s pinpointed the cause of these health problems and set out to revoke it. It all comes back to one factor: poor health. “The first thing they have to do is actually desire [good health],” Dr. Vickery notes, his elbows propped on the desk, fingers arching to meet. “We can almost always identify things that individual could begin to implement themselves that will facilitate their movement toward optimal health.” The problem is that those simple changes are actually difficult. Dr. Vickery notes that folks often have a large list of complaints, but when you offer solutions they shut down quickly. But if you’re open to those solutions and genuinely want to feel good, the first step is to see how your daily habits align with your end goal—namely, good health. “Take an inventory of your daily habits,” he says. “What do you eat, drink, sleep, expose your brain to, who do you socialize with, who are your influencers? Are those consistent with what you say you want for yourself ?” And if not—be willing to change. But often Dr. Vickery is met with the response, “I get that, but why can’t I make it happen?” That’s where the science comes in. The prefrontal cortex is the muscle of the brain that allows you to develop emotions, think critically, create visions and act upon them. For years, dopamine (received through addictive habits—anything from eating fatty foods to shopping to gambling to watching tv) was thought to be a direct response to pleasure, but CONTINUED >

inflammation and blood clots are common ailments in his practice, but Dr. Vickery says that the right foods can eliminate those symptoms. Local, grass-fed meats, smaller portions, eliminating sugar and junk carbs— simple changes that reverse a host of metabolic diseases and naturally manage weight. The other keys to health include sleeping, exercise (or, as Dr. Vickery puts it, simply “movement”), and meditation ( just taking some reflective time for yourself). But Dr. Vickery understands that these changes are all easier said than done, which is why he and his team do their absolute best to make them accessible to everyone who steps though their door. For primary care copay, they offer patients a nutritional curriculum, help teach them their new skills, and offer access to cognitive behavioral specialists and nutritionists whenever possible. “We help them see that future they want for themselves,” he says. “They’ll access a mental and physical vitality they may have never tasted in their life, and they will never trade it back again.”

Dr. Vickery's Guide to Health 1. Eat healthfully and source locally. Not only is eating local foods better for the environment and your community, it's better for your body. These foods are chock-full of good-for-you ingredients like omega-3s. Be aware of your portion sizes and eliminate junk carbs and you'll be amazed by your new energy. 2. Move your body. "If you don't love 'exercise,' renarrate it!" Dr. Vickery says. Take your dog for a walk, play ball with the kids, whatever it is, just move. 3. Sleep well. That means turning off electronics an hour before bed and logging the recommended 7-9 hours per night. Doing so will quicken your metabolism and help your body handle stress responses. 4. Turn off stress input. If you surround yourself with constant contact to stressful situations—pinging work emails, stressful or dramatic friends—your health suffers. Know when to turn them off. 5. Meditate. "It's not just a cliché," says Dr. Vickery. Some quiet reflective time for yourself gives your brain time to recover.

side from its omnipresent beer and music scenes, Asheville is also well-known for the active lifestyle options the city provides

locals and tourists alike. From the many water-based activities the French Broad River has to offer to the dozens of gyms found throughout the city, there is a healthy, active outlet for everyone. However, if hiking the national forests or CrossFit classes aren’t your thing, a new dance studio in South Asheville has an exciting, unique way to add a dose of excitement and exercise to your life. Planet Ballroom opened its doors at 1550 Hendersonville Road nine months ago, and according to instructor and co-owner Bradley Davenport, response has already been great. Davenport is a North Carolina native who has been teaching dance at other Planet Ballrooms for eight years. Prior to joining Planet Ballroom, Davenport toured with several dance productions, but teaching at the studio provides a chance to help others realize their potential. Davenport and Planet Ballroom chose Asheville because the city is growing quickly and is known as a place where people seek out unique experiences. Planet Ballroom offers personal dance lessons, class lessons and even fitness classes. The dance studio seeks not to just be another

Keeping Your Pet Healthy: • Know Your Pet’s Diet: Find out what foods your pet likes and are recommended for their health. • Exercise: Pets need to release energy daily to prevent the onset of health problems. Before being domesticated, peak fitness determined whether they would survive the wilds. While they’re not hunting prey anymore, they still need that physical exercise. • Socialize: Like us, pets crave community. Bringing them to the park or on hikes is a great way for them to have a chance to meet other pets. • Trips to the Vet: Regular trips to the vet will keep you informed of your pet's well-being. While your

pet does their share to keep you healthy, make sure the favor is returned. • Grooming: Treat your four-legged friend to a full-scale grooming. This prevents their coats from matting and becoming extremely uncomfortable.

And lastly, as suggested by Denise: “Just spend time with your animal. Just sit down, put your electronics down, and pet them. Just be with them.

to music. It was at a very young age; I was always singing. I think my mom shoved me in the choir or something, but I always really enjoyed music… My father used to always play ‘60s or ‘70s music. I think when I got my drum set, everything changed. I just had so much fun, and playing drums was a good release of energy. I got a guitar one Christmas, I just kept playing with it… I could never take practice, I was always too

impatient… I’ve taught myself, just by using the ear and memory. Q: What inspired your move to Asheville? I grew up in Boston, but I’ve been here almost a year… When I visited Asheville as a family trip, I just knew. I, on a whim, shoved my entire life into my Toyota Corolla and did a 19-hour drive across the country, just a leap of faith…it’s

been the best decision I ever made. Self-expression is the whole reason I moved down here, how they embrace everyone and have such an [artistic] culture. Music just adds to the whole environment of Asheville. I want everyone to know that Lincoln is here, that he lives here and he really wants to be a part of the community… I’ve just been embraced here as a musician.

Asheville and community.

Q: What do you enjoy most about the Asheville Music Scene? The collaboration. The ability to meet other people who play music. The variety of music and instruments. People are busking, and I can just go sit and jam. I’ve had conversations with homeless or drifters, conversations started because of music… The community here is so supportive; if you sound good, they really enjoy it. That’s the atmosphere that I needed. Q: What would be your advice to someone trying to break into the music scene, especially in Asheville? Hit the streets. We live in a unique place where you can walk out the front door with your guitar and pick a spot [to play]. Especially if you want to hone your skills, if you’re an early musician, no one’s gonna bother you and you’re gonna get feedback and you’re gonna walk away feeling good. Converse with other musicians and utilize them. I want people to know that it’s absolutely ok to express yourself, you shouldn’t be afraid to show that to other people. Take people by surprise, just show people that it’s ok to be you. If you have a skill or talent, don’t hide it. I try to bring that out of people. Q: What are your hopes for the future? To be a solidified musician and member of this community. It really is a small city, and I want to be someone that people know is there. I want Asheville to keep growing and improving, and I think I can help do that… I didn’t just come here to make money or go on an emotional journey, this is where I want to be. I want to contribute to the city.
