CHICKEN ENCHILADAS
March is a busy month for many families as we transition to longer days and spring activities. It’s nice to have a few easy dinner recipes to prepare during the chaos of a changing schedule. I follow
The Defined Dish , where Alex Snodgrass shares easy family dinner recipes. This 6-serving dish takes only 10 minutes to assemble and 30 minutes to cook.

Ingredients:
For the enchilada sauce:
• 2 T. unsalted butter
• 2 T. arrowroot starch
• 2 tsp. chili powder
• ½ tsp. cumin
• ½ tsp. paprika
• 1 tsp. garlic salt
• ½ tsp. onion powder
• ½ tsp. dried oregano
• 1 tsp. kosher salt
• 3 T. tomato paste
• 2 cups beef broth
For the chicken mixture:
• 2 cups shredded chicken (I use rotisserie chicken)
• 1 (4 oz.) can chopped green chiles, undrained
• 1 (15 oz.) can black beans, drained and rinsed
• For the Enchiladas:
• 1 ½ cups Mexican shredded cheese blend
• 12 tortillas (I use Siete almond flour tortillas)
• 2 green onions, sliced for garnish
• Fresh cilantro, chopped for garnish
Directions: Preheat the oven to 375 degrees.
To make the enchilada sauce:
1. Melt butter in a small saucepan, then whisk in the arrowroot, chili powder, cumin, paprika, garlic salt, onion powder, oregano and salt. Stir constantly for 1-2 minutes to prevent burning.
2. Stir the tomato paste until fully combined, then slowly whisk in 1 ½ cups of the beef broth. Cook until the sauce thickens, stirring constantly. Once sauce is very thick, remove from heat, and whisk in the last of the beef broth. Set aside.
To assemble the enchilada skillet:
1. Pull and shred the chicken. Combine the chicken, black beans and green chiles.
2. In a 12-inch cast iron skillet, spread ¾ cup of enchilada sauce on the bottom. Layer 4 tortillas on top, followed by half of the chicken mixture and ½ cup of cheese. Add ¾ cup of enchilada sauce on top.
3. For the second layer, place 4 more tortillas and the remaining chicken mixture on top. Then add ¾ cup of enchilada sauce.
4. Finish with 4 more tortillas, the remaining enchilada sauce and cheese.
Bake uncovered at 375 degrees for 20-30 minutes or until hot and bubbling. Remove from the oven and let sit for 5 minutes. Garnish with green onions and chopped cilantro. Serve with a dollop of sour cream and rice on the side.
*If making ahead, use a Pyrex or casserole dish. A cast iron skillet is prone to rust when moisture is present for an extended time.

Wells Interior Design: Bold, Joyful Spaces with Personal Touches
Mary Kathryn Wells is not your typical interior designer. She doesn't ask for Pinterest boards or magazine clippings. She won't push the latest trends or insist on a certain aesthetic. Instead, she believes that your home should tell your story. With a deep love for color, pattern and the unexpected, she creates spaces that feel exuberant yet practical, celebratory yet deeply personal. After a life journey that has taken her from Little Rock to Atlanta, New York City to Maui, and finally, to Nashville in 2015, her design philosophy is shaped by a blend of adventure, nostalgia and southern hospitality.
"All the places I've lived are very present in my designs," Mary Kathryn says. "I love mixing caned furniture and rattan from my time in Hawaii, bold color pairings from New York, and pleated, patterned lampshades that feel distinctly Southern. It's all about juxtaposition—unexpected but joyful pairings that reflect the people who live in the space."

A self-proclaimed control freak (with, she admits, a touch of neurosis, Mary Kathryn has learned to embrace adventure. She moved to New York after college at Emory and met her husband while working in public education. When they decided to start a family, they took a bold leap—relocating to Hawaii while she was six months pregnant. "We put everything in storage and just went for it," she says. A few years later, another big shift came: moving to Nashville, newly pregnant with their second child, and navigating the transition from Maui's laid-back island life to the structured warmth of the South. "It was a mental shift," she says. "But returning to southern hospitality felt like home in a new way."
Now settled in Nashville with three kids (ages 6, 9 and 11), Mary Kathryn has built her interior design business around the principle that every member of the household—yes, even the littlest ones—should feel seen in their space. “When half the people in a house are under five, we need to account for that!” she laughs. "I had one client whose kids loved building forts, so instead of a coffee table in the living room, we did a giant crash pad. It’s temporary, but it brings them joy now, and that matters.”
Personalization is at the heart of her process. A formal living room might transform into a cozy library to honor a family of readers. An heirloom sari can be framed as a stunning piece of art, weaving cultural heritage into the design. A horse-loving client may find their walls adorned with shadowboxed horseshoes.
“Your home should reflect you—not a trend,” Mary Kathryn insists, “and incorporating personal elements doesn’t have to be complicated or expensive. A piece of art by your child, a framed belt from jiu-jitsu, even an old wedding invitation—custom framing can turn simple things into treasures."
For those looking to infuse personality into a space, Mary Kathryn's advice is simple: "Think about what lights you up. What do weekends look like in your home? What makes your family your family? Your space should support how you actually live, not just look good in a photo."

When selling a home in Nashville's competitive real estate market, staging can make all the difference. Liz Zipperer, Owner and Team Lead of Liz + Co, shares expert insights on creating a welcoming space that appeals to potential buyers.
FOCUS ON KEY LIVING AREAS
"It is most important to highlight the central living areas: living room/den, kitchen and primary bedroom," Zipperer advises. Buyers often prioritize these spaces when envisioning their future home, making them essential focal points for staging.
CREATING A WARM AND INVITING ATMOSPHERE
One of the simplest and most cost-effective ways to enhance a home's appeal is through lighting. "Opening the blinds and curtains for abundant sunlight is the most cost-effective," Zipperer suggests. "But if that isn't an option, I suggest adding warm light bulbs where possible." The right lighting can transform a space, making it feel more open and inviting.
THE ROLE OF DESIGN TRENDS
While certain design trends may come and go, Zipperer emphasizes that the key to selling a home is ensuring it is well-maintained. "Just as homes have different styles, people have different preferences. It is most important for the home to be well maintained and cared for." She also notes that staging significantly impacts a
home's time on the market. "Vacant homes can take twice as long and sell for less than unstaged homes."
AVOIDING COMMON MISTAKES
A common misstep sellers make is leaving personal items on display. Zipperer stresses the importance of a clean slate: "Buyers want to envision themselves in the home, so removing your family photos and personal knickknacks is important."

Curb appeal plays a crucial role in attracting potential buyers. "It doesn't always have a direct impact on value, but it does get more people in the door and interested," Zipperer explains. Instead, she recommends investing in staging, noting that "approximately 75% of sellers experience a 5-15% return on investment when professionally staged, per the Real Estate Staging Association (RESA)."
