ttending the festive annual luncheon of the Buckhead Coalition, I was a polka dot in a sea of dark suits. I elbowed my way into conversations and met some of Buckhead’s most faithful champions. The dynamic Ted Turner (pictured left, showing me an old photo of his daughter, Laura Turner Sydell and Sam Massell) accepted the invitation of the equally dynamic Sam Massell and the two leaders exchanged quips. Atlanta’s former mayor shot questions aabout the career and character of media mogul-turned-environmentalist and we were all shamed into promising to pick up trash around our neighborhoods, as Turner does as he walks the blocks downtown where he lives when he is camping out in Atlanta. SM: You are a defender of environmental sustainability and the installation of solar panels. Why do solar panels have to be so ugly? TT: I don’t think they are ugly at all. Soon, our parking lots and roofs will be covered with them. When I look at a solar panel, I sure don’t see fumes of disgusting exhaust billowing out from them.

Around Town HIGH UNVEILS LOS TROMPOS The High will unveil the second large-scale, interactive design installation by contemporary Mexican designers Héctor Esrawe and Ignacio Cadena on the Woodruff Arts Center’s Carroll Slater Sifly Piazza. The site-specific work, titled “Los Trompos” (“The Spinning Tops”), continues a multi-year initiative to activate the outdoor space and engage visitors in a meaningful art experience upon entering the campus of the Woodruff Arts Center (of which the Museum is a partner). The installation builds on the success of 2014’s “Mi Casa, Your Casa” commission, for which Esrawe and Cadena dotted the piazza with three-dimensional open frames shaped like houses that invited visitor interaction. Originally planned as a two-year project, the Piazza activation program is extended for three more years with funding from a recent grant courtesy the Lettie Pate Evans Foundation. A
city government — almost by definition — has a lot of forms and documents but at least in Brookhaven, city officials aren’t killing trees with its paperwork. In fact, 98 percent of all the paper used in Brookhaven’s city offices are actually a sugarcane by-product. “No trees are used,” says Brookhaven Facilities Manager Brook Middlebrook. Brookhaven’s government officers are certainly aware of being role models in the quest to be more green. “Our policy is to shred 100 percent of the paper we use. Employees fill up their blue recycle cans and empty them in the recycle/shred bins on each floor. These bins are emptied, shredded and recycled,” says Middlebrook. “This means 100 percent of our paper is recycled and secured, avoiding the possibility of dumpster diving. At our weekly food truck events, as well as other city-sponsored community events, we have blue recycle containers and encourage their use.” Brookhaven’s devotion goes beyond recycling. “We have our Level-2 charging station available in our parking lot for city guests, and our building has HVAC control systems that are automatically turned down during non-business hours,” says Middlebrook. “We make attempts to buy economical vehicles like the Ford Escapes, and the Police Ford Interceptors with EcoBoost were chosen in part due to their fuel efficiency.” Buckhead is keeping up with its neighbors on the environmental front with a number of initiatives including PATH 400, which opened in January and it’s already become a place to get exercise and enjoy the fresh air as it is a place to meet like-minded individuals. PATH 400, once it is completed in 2016, will feature 5.2 miles of pathways that go through the heart of Buckhead connecting neighborhoods, office and retail locations with a path for bicyclists and pedestrians. Eventually it will join the Atlanta Beltline as well as trails in Sandy Springs and north Fulton County. Making the area more pedestrian friendly is an important goal as Buckhead and Brookhaven increasingly become the commercial heart of metro Atlanta. The Buckhead Village Streetscape program is a $2 million effort aimed at increasing streetscape improvements along several roads in Buckhead. Perhaps the most visible evidence of the greening of Buckhead is the Charlie Loudermilk Park, located at the intersection of Roswell and Peachtree roads. Still under construction, the park will feature a lawn, clock tower, public sculpture and a bubbling water feature. 16

The High is doing its part with a green roof, retaining about 62,000 gallons of storm water per year.
Not to be outdone, Brookhaven is also greening its area with the Historic Brookhaven Neighbor-hood Association dedicated to maintaining and expanding parks and landscape maintenance. The city is currently renovating the “micro park” by Club and Davidson drives and more improve-ments are in the works for additional green spaces. Little Nancy Creek Park is a five-acre park formerly owned by the City of Atlanta that was recently acquired from the City of Atlanta. Civic leaders and volunteers are working together to get the financing in place as well as a community-friendly park design. With so much development occurring in the area, both Brookhaven and Buckhead leaders are quick to meet with developers, building management companies as well as residents to learn how to better preserve the environment and sustainability. Livable Buckhead serves as a coordinating point for education about waste management programs, energy conservation as well as how to cooperatively manage and protect metro Atlanta’s rivers and streams. This important message of going green, recycling and appreciating the environment is hitting home. A perfect example of how the environment need not be at odds with developers is seen in Brookhaven where a love of tree and green space prompted a company to reduce the scale of their projects in order to save trees, especially old growth. Developers and Brookhaven neighbors Mike Elliott and Melissa Bryson acquired a 3.4-acre lot on Mabry Road and, although the zoning could allow for a minimum of .35-acre lots, they are designing .55 acre lots to more than an acre for the four lots. Bryson admitted the project, dubbed Brookhaven Forest, could have been more profitable had they reduced the lot size but felt it went against the feel of historic Brookhaven.

In an effort to create a more sustainable arts campus, the Woodruff Arts Center created a Sustainability Team comprised of 12 members in July 2014. The goals of the Sustainability Team are to reduce energy consumption and greenhouse gas emissions; recycle, reduce and reuse the “stuff” used daily during the work day; conserve water; mitigate the impact on the environment; and, educate employees and stakeholders regarding sustainability. The Sustainability Team successfully executed the following initiatives campus-wide: • Replaced more then 1,500 75-watt lamps with 12watt LED lamps; • Uses rain water from the High’s expansion roofs in a cistern that is used to irrigate the arts campus; • Replaced chillers and boilers in the energy plant with new energy-efficient units; and, • Implemented an aggressive recycling program. Also, the High completed the installation of a GreenGrid® Green Roof System atop the Frances Bunzl Center, which serves as the administrative building for the Museum. The installation by Weston Solutions, Inc. (WESTON®) is the largest modular system installed to date in the Atlanta metropolitan area. The 6,680-square-foot vegetated green roof helps clean and reduce storm-water runoff, reduce the urban-heat-island effect, reduce energy consumption, extend the roof life and improve air quality. This particular green roof also has the ability to retain about 62,000 gallons of storm water per year. For the High’s modular system, vegetation and engineered growth media were pre-planted in lightweight modules made of 100 percent post-industrial recycled plastic. Low-growing vegeta-tion and hearty, drought-resistant plants such as Sedum ‘Murale,’ Sedum ‘ Weihenstephaner Gold,’ Sedum ‘Sexangular’ and Sedum ‘John Creech’ were then installed in four inches of soil. The modules were then placed on the administrative center’s roof. The plant leaves turn colors in the cold months of winter, and bloom in the spring. As a result of these efforts the Woodruff Arts Center was named a “Top Performer” in the Atlanta Better Building Challenge in 2014.

et in the small, Southern town of Simpsonville, Alabama in the 1950s, Secrets Of The Ladies Mission Society, will appeal to lovers of The Help and Fried Green Tomatoes. When the town doctor, Lester Seabrook, passes away, many in the community mourn but none pay much attention to his grieving widow, Adie. The ladies in town have never invited her into their close circle despite the fact that she stood by their beloved doctor’s side as his nurse for decades, seeing them each through many joys and heartaches. As a poor farm girl, Adie snagged up one of the most eligible bachelors in their small town, and the ladies have never forgotten it. But when word gets out that Miss Adie is writing a book about the history of the town and its people, members of the local Ladies Mission Society begin clutching their pearls. Determined to find out what exactly Adie plans to include in her book, the ladies begin to descend on her home with their mostprized casseroles and cakes. Miss Adie’s caretaker, Eula, escorts each of the ladies to Miss Adie’s bedside and then fills their re-
frigerator with the guests’ offerings, (while the women try to peak in kitchen to see who has already visited based on their signature dishes.) Determined to keep their secrets safe, the ladies each assess Adie’s health and question whether she will expose their secrets as revenge for never being invited into the Ladies Mission Society. On a good day, Adie recognizes each woman and makes round-about acknowledgements regarding their pasts. On a bad day, she simply looks out the window at the barren land that was once her and Doc’s thriving garden. While each woman relives their darkest secrets, they come to their own realizations after their visits. They know that if not for the prospect of a published account of their buried secret, they never would not have faced their pasts and continued to carry their burdens alone. As each of the women’s stories of abuse, teen pregnancy, affairs, and suicide unravel, so does their perception of Adie, and in turn others in their close circle and community. They learn that they can change their own and the town’s future and unite in an effort to show Adie Doc’s love as well as respect Doc’s wishes for the future. This southern story touches on the darkest secrets in every community but focuses on the love and forgiveness that makes it thrive. Laurie Rothrock Dick is a former magazine editor, public relations/marketing manager, newspaper feature writer and copywriter. At various points in her career, she was the Editor-in-Chief of TV Guide, Southern Banker, a reporter for The Gwinnett Daily News, among other publications. n the 1990’s Martha Stewart brought crafting into vogue, elevating it to a higher status than it once acclaimed. Little did she know--or perhaps she knew exactly--that she was spawning a new generation of women who believe they can have the best in home décor, food and decorating, all while doing it themselves. Enter CraftBox Girls, an Etsy meets Pinterest meets Martha Stewart website inspired by the spirit of Southern hospitality, where the crafty can muse and create. The site was founded by Buckhead’s Lynn Lilly, a female entrepreneur who loved DIY projects. Inspiration was born while planning her own wedding. Lilly yearned for unique ideas and found the marketplace empty of inspiration. Employing necessity as the father of invention, she got to work creating a site that would inspire like-minded females to go one step farther than they had before in their quest to DIY, with panache. After reaching out to Lilly’s two most creative friends and investing seven months of market research and design conception (the focus was women ages 25-55), CraftBox girls was born in February of 2014. The online brand has grown to include 10 bloggers

writing expert content, a female-online community, an e-commerce platform where hand-made items can be sold or bought as well as workshops, crafting stations and “afternoons out” where creativity is the focus du jour. Lilly cheers, “We have also been so thankful for the network of female bloggers and entrepreneurs here in Atlanta that have supported and helped Craft Box Girls through our first year.” I dive into the website, and readers be warned: it is addictive. I easily spend an hour perusing craft ideas, recipes, gifts and reading blog content. M
any BuckHaven families talk at some point in their lives about “downsizing” their households – some with unbridled anticipation and others with dread. There are myriad reasons we consider moving out of the homes we’ve often spent years getting used to and making just right. Once the kids move on, empty-nesters may reconfigure their space with ground floor master suites and other amenities, or move down the street or down to the coast. Downsizing can be seen as a stage in life to get along with less, or a new freedom that allows you to have and do more. The term “rightsizing” is even used, since moves can be about making what you have better match your lifestyle. Midlife BuckHaven residents may tell you they have rooms or even floors in their larger homes they no longer use. They may want to keep the house so kids and grandkids have a place to gather and visit for holidays, or they may prefer the freedom of locking a condo door and leaving town without the usual home upkeep worries. Traveling and spending more time at second homes or with distant kids are the reasons we most often hear for families downsizing. But people are also concerned about taxes, healthcare costs and preserving their savings for longer life expectancies. A safer environment with walkable shopping and nearby restaurants, one-level living or an elevator and other services might be attractive. Maintenance and upkeep worries for older homes and larger lots seem to be a universal nuisance as we age. And “boomerang” kids that move back home one or more times after college, grad school or failed jobs and marriages spur some parents into moving into less accommodating digs.

Regardless of the reasons, affluent BuckHaven downsizers often are ready to make a change long before they’re ready to move into local retirement communities like St. Ann’s, Canterbury Court or Lenbrook. Whether they’re still working or retired, a desire to stay in the same part of town near friends, shopping and favorite haunts is often key. And having less space often means jettisoning the extra bedrooms and basements, but not larger rooms for family antiques and entertaining, walls for artwork and space to “save” family china and other heirlooms for the kids. While one-level living may be desired, an extra bedroom upstairs for the kids or grandkids, or a home office and storage in a partial basement may be fine. Condos along the Peachtree Rd. corridor and scattered around Buckhead and Brookhaven are popular spots. Residents can usually count on associations to handle most or all exterior maintenance, and neighbors or staff often help with deliveries and interior access for maintenance when traveling. Also attractive are the many infill cluster home communities, where residents may have small gardens and outdoor areas, but little upkeep, typically with shared association landscaping. Spread throughout more traditional Buckhead neighborhoods, these cluster homes may be easier to find in a specific area than condos. Virginia and John, Buckhead natives who went to E. Rivers together and have been married more than 60 years, downsized from their Peachtree Heights West house of over 40 years to a cluster home off Howell Mill. They considered Park Place and other condos, but eventually decided on a smaller home when they received an offer on their large house. Other than occasional overnight visits by out of town relatives and their Atlanta grandson, they seldom used their upstairs or finished basement, and the large lot and house required continuous upkeep. They purchased and remodeled a 15-year-old house to add hardwood flooring and more traditional moldings, a custom fireplace, and updated library and sunroom. The house they chose has a large ground floor master suite, kitchen, dining and living rooms, along with an enclosed sunroom and small library. This gave them multiple spaces to spread out, but is still less space to manage. Their new library, pictured, is about one quarter the size of their

previous one. They also have room for guests upstairs, and an office and storage space in a partially finished basement. While still a large house by most standards, it allows the owners to keep furnishings and artwork they still enjoy daily, but they can easily lock up and travel for several weeks without worrying about upkeep issues. One surprise to the wife is the heightened sense of community; due to proximity they interact more with their neighbors than in their previous home, where they couldn’t easily chat when checking the mail or pulling in and out of their driveway. This is often an unexpected but welcome advantage of downsizing, although the adjacent neighbors barking dog, parking or common area services can sometimes be drawbacks. Another Buckhead couple, Bill and Early, have downsized twice from their larger Buckhead home, first to a smaller Buckhead cluster home, and then to a Brookhaven condo. Like many Northside Atlantans, they enjoy traveling with friends, and spending time in north Georgia and on the coast. When a fall on their stairway resulted in a broken leg, they decided to move into a one-level condo just off Peachtree. They remodeled a spacious ground-floor unit with 3 bedrooms for kids and grandkids, and have an elevator down one level to garages and additional storage. They chose a building with large rooms, and were able to add several windows and move a wall while updating the flooring, kitchen and baths. Their large wainscoted dining room, pictured, is sized for a larger home, and great for family and friends. As frequent travelers, they check the fridge and take out the trash on their way down to the garage, and they’re on their way. Jim, a widower whose kids were grown, was restless in his large Brookhaven house that was full of family memories. He moved into a midrise condo on Peachtree, which his daughter helped him redesign around favorite furnishings. Downsizing is often a chance for people to “edit” their pos34

sessions, jettisoning less desirable items and junk they’ve accumulated over decades. While everyone agrees this process is a hassle, many people find getting rid of Aunt Margaret’s sofa, broken toys, and 20-year-old tax returns invigorating. De-cluttering seems to lift a burden from our souls, and makes it easier to focus on what’s most important to us. Although not yet needed, Jim and his daughter took the opportunity to install some Aging-in-Place features when they remodeled his unit. They widened some narrower doorways in case he ever needed to use a walker or wheelchair, installed bath grab bars, and a curbless shower with bench. While getting older is something we all expect, many people think, even into their 80’s, that it’s still years away. Aging-in-Place doesn’t replace the need to eventually move into a retirement or assisted living facility, but can extend your safe and comfortable independent living years in your residence. Staying put, wherever that may be, is usually most economical, and making appropriate home modifications to enjoy another 3-5 years of independent living, or longer, can have a significant payback. Whatever your choices, find a location and amenities that match your lifestyle, and relax.

ho says life doesn’t get better with age? I am here to tell you, they didn’t know what they were talking about. I am proud to announce that I am 66 years old... an official senior citizen, a baby boomer, and I am living my best life, right now, and from all indications, I expect it will only get better. I will share a sprinkling of the spices in my life...it was my 56th birthday when I would go on my first hike, ever. It was in the North Georgia mountains on the Blood Mountain trail, the highest point on the Appalachian Trail in the state of Georgia. The hike leader had the forethought not to tell me it was the most challenging hike the group trekked, until after the hike was over. I didn’t know it was supposed to be hard. I was enjoying the experience so much, I never realized how steep the trail was, nor do I remember the strenuousness of the trail. I was savoring one of the most exhilarating feelings that I had ever experienced. It was so invigorating to me, being out in nature, becoming one with my surroundings. I had awakened a passion for the outdoors that I didn’t know I possessed. A few years later, after many hikes, the hike leader could no longer lead the hikes due to his work schedule. Acknowledging my awakening, he asked me to take over the group. This urban city, girly-girl took over the leadership...went on to become a certified outings leader through the Sierra Club, certified in Wilderness First Aid through the Wilderness Medical Institute of the National 36

Outdoor Leadership School (NOLS), and a Certified Interpretive Guide (CIG) through the National Association for Interpretation. After sharing my hiking experiences through my online newsletter, my first official hike as the group leader went from the usual 8 – 10 people to 30 hikers. There were men and women of all ages. One set of hikers stand out to me, they are a family of three generations: mother, daughter and granddaughter, and the son-in-law joins us as well. Continuing on my quest, and having a desire to learn as much as I could about the environment and conservation, I became a community partner with REI (Recreational Equipment Inc.), and the Georgia Conservancy. I was able to expand my involvement. I participated in overnight camping, canoeing, service projects and other outdoor activities. Later, I started a Meetup group to bolster my outdoor activities. Now, I am an active participant in bicycle riding, kayaking, white water rafting, tree climbing, spelunking, zip lining, and more. For my 64th birthday, I led a group on an obstacle course at Treetop Quest at the Gwinnett Heritage Center, where I completed all nine levels of challenges. For my 65th birthday, a group joined me for a 5-day sailing experience in Belize on a 46-foot catamaran. That same year, still celebrating my coming of age, I led a group to the Grand Canyon where among our adventures, we hiked the Bright Angel trail to more than 1,000 feet
below the rim, which we were told, less than 10 percent of the 5 million annual visitors ever accomplish, and we were among the less that 1 percent of African Americans to do so…all of us were over age 50, with the oldest being a 75 year old great-grandmother. One of my groups, OPALs, the acronym for Older People with Active Lifestyles, was featured on the CNN AccentHealth Network, for the entire month of January 2015. I was selected by the Huffington Post/ TODAY Show as one of their 50 Over 50 who reinvented themselves. Whoever says life doesn’t get better with age, needs to speak with me! ABOUT THE WRITER:

Southern-Inspired Meal Delivery Service is Just Peachy ARTICLE HELEN GREBE

pring is here, and with it, little league sports. It’s a scenario many are familiar with: It’s 6 p.m. and you’re racing to the ball field for your son’s one-hour practice. Your daughter is at gymnastics and needs to be picked up by 6:30 p.m., which means you won’t be home until 7:30 p.m. and both children will be hungry before your car even pulls into the garage. Or, there’s the weekday rush hour drive home. You’ve left work at 6 p.m., you’ll get home by 6:45 p.m. but your spouse is awaiting your arrival anxiously and you’re both hungry enough to throw the towel in and eat out. Who has time to prep? Today, our lives are packed with on-the-go activities. A little help goes a long way. With Peach Dish, it appears that help has arrived (and none too soon). Peach Dish is an Atlanta-based company in its infancy that is progressing grandly toward maturity. In its second year of operation, the company selects, preps and ships gourmet, ingredients for mealtime, along with an easy-to-follow recipe. All one has to do is cook. The business took off like--well, hotcakes-- feeding hungry diners all over the United States. It’s as simple as sign-up, select and order. Founded by Hadi Irvani, a Buckhead resident whose career was built around successful e-commerce businesses, Irvani decided to venture into food, inspired by his love for throwing dinner parties. Known for his lavishly wild and extravagant dinners, Hadi loved to feed and entertain guests but didn’t have the often-necessary time to prep ingredients. A light-bulb moment occurred: to create a company that delivered prepared ingredients along with a recipe. And Peach Dish was born. While Peach Dish is one of four companies shipping foods nationally, what sets the business apart is its southern charm. All three competitors are based in NYC, Peach Dish is the only delivery company that is Southern-based and focused. They take their Southern focus seriously. Judith Winfrey, president, utilized her decade of experience in the food business to bring in partnerships with Southern food artisans that help create the staple ingredients for Peach Dish’s many recipes. Fresh, local ingredients are the mainstay of the business as evidenced by their suppliers that include Tucker Farms, Bamboo Juices, Revere Meat Company, H&F Bread Company and Sweetgrass Dairy, among others. Growth is steady. Peach Dish recently announced an integration with Bit Pay (another Atlanta-based company). The company’s focus is simple: growing their subscription base and offering seasonal dishes that impress. Their subscription base is already at 10,000 users and steadily rising; Peach Dish ships 1,000 packages weekly, which is 4,000 servings per week (a box is a minimum of four servings). When one considers that their price 38

is reasonable (particularly for organic, fresh ingredients) at $12.50 a serving, eating out seems ridiculous. Winfrey concurs. “We deliver the joy of making something with your own hands, the ritual of making dinner with the convenience of dining at home,” she says. “You can spend more time with loved ones because we’ve done the largest part of the work--selecting the recipe, shopping and prepping--for you.” I’m eager to see how the recipes shape up, being a former cook myself of many a recipe that didn’t quite live up to snuff. I’m pleasantly surprised by the elegance of Peach Dish’s recipes including lobster risotto or steak dinner for two. The ingredients are flavorful and enterprising. For example, a curried guinea hen meatball with a coconut milk sauce and escarole over rice. Winfrey notes that this is due to the fact that Peach Dish works with a culinary director (a graduate of the Culinary Institute of America) to formulate every recipe. Peach Dish offers tempting vegetarian options like seared tofu with lemon glaze that was so light and exquisite that customers went crazy for it. If your mouth isn’t watering yet, it will be; Peach Dish is rolling out a new “Taste of Georgia” series that will include recipes from celebrity southern chefs the likes of Satterfield from Miller Union and Angus Brown from Lusca in Buckhead. I marvel at the idea of Peach Dish’s convenience and promise to place an order soon. I could use more time at home in front of the fire with a glass of wine and my husband. Maybe I’ll even get around to finishing that book I started weeks ago. “That’s exactly what we intend to provide our customers,” exclaims Winfrey. “We want to make your life easier, healthier and delicious.” I , for one, think that is just peachy! Sweet & Spicy Almonds Yields 8 servings
2 c. roasted almonds 1/4 c. coconut oil 1/4 t cayenne 1 t organic seasoning salt 1 T brown sugar 1 T Lea & Perrins Worcestershire In small saucepan heat the coconut oil on low until it melted. Next, remove from the heat and stir in the cayenne, seasoning salt, brown sugar and Worcestershire sauce. In a medium-size mixing bowl combine the roasted almonds and seasoned coconut oil mixture and toss together until all the nuts are coated evenly.

Parmesan Egg, Tomato & Avocado on Whole Wheat Toast or English Muffin Prepare your eggs any way you like and add or top with Parmesan cheese. Next place the eggs on top of your toasted wheat bread or English muffin. Then add freshly sliced tomato and sliced avocado. Season with Kosher salt and pepper and a drizzle of olive oil.

Roasted Chicken Mixed Grain Salad Yields 4 servings
1 c cooked bulgur 1 c cooked quinoa (any variety) 4 T olive oil 2 T white balsamic vinegar 1 T chopped Italian parsley 2 T chopped mint 1/2 c. chopped dried fruit mix (apricot, golden raisin, cranberry) 1/4 c. toasted pecan 1 T lemon zest 1 lb shredded roasted chicken kosher salt to season pepper to season In a medium size bowl combine the bulgur and quinoa, toss together gently. Next add the olive oil, white balsamic vinegar, parsley, mint, dried fruits, pecans and chicken. Season with salt and pepper. Mix gently until all the ingredients are incorporated. Finish by adding in the lemon zest, taste one final time and adjust seasoning as needed.
Morning Blast Blueberry Ginger Smoothie Yields 2 servings
DINNER
8 oz blueberries ( fresh or frozen) 1 T fresh ginger, rough chopped 1 t cinnamon 1 T flax meal 1 c. almond milk 1/2 c. plain Greek yogurt Agave nectar, to taste Place all the ingredients in the blender and blend until smooth.

Spice Rubbed Mahi 1 lb Mahi filet 1 t chili powder 1 t chipotle powder
1 t kosher salt 1/4 t white pepper 2 T lime juice 3 T olive oil Corn tortillas In a bowl combine the chili powder, chipotle powder, salt, pepper, lime juice and olive oil. Mix together until smooth. Next, rub the mixture all over the fish and let sit for 10 -15 minutes. Re-move the fish from the marinade and grill or broil until the fish reaches a medium well tempera-ture. Once the fish is cooked pull the meat apart into smaller pieces that will fit into a corn tortil-la. Top with the marinated cucumber and pineapple relish. Marinated Cucumber 1 English cucumber, julienne 2 t salt 1 T sugar 2 t cracked black pepper 1/2 c white wine vinegar Using a small to medium size bowl combine the salt, sugar, white wine vinegar and cracked black pepper. Next, add the cucumber and toss gently to coat Pineapple Relish 1 c. diced pineapple 2 T diced red pepper 1 T diced jalapeño 1 green onion, chopped 1 T chopped cilantro 3 T lime juice Combine all the ingredients in a bowl and mix together. DESSERT
Vegan Dark Chocolate Mousse Yields 4 servings
6 oz dark chocolate 1 12oz package silken tofu 3 T agave nectar 1 t vanilla extract 2 T vanilla soy milk, almond milk or coconut milk Melt the chocolate until smooth, using either a double boiler or in the microwave on low power. Next using either a food processor or blender, combine tofu, melted chocolate, agave, vanilla and soy milk. Blend on high until smooth and creamy. The mousse can be eaten immediately or re-frigerated for later.
