F

ood is fuel. Food is comfort and family. Food is romance and love. I learned that food is also an adventure when I lived in St. Thomas and worked marketing an elite fleet of yachts for charter in the Caribbean and Mediterranean. The chefs aboard these sail and power boats were experienced graduates of Le Cordon Bleu and other esteemed culinary arts programs worldwide and could create four-course gourmet meals from a galley the size of your shoe closet. Chef Karin, a tall drink of water from South Africa and her partner, Captain Trevor, a blond Tom Selleck, ran a 72’ custom steel-hulled beauty out of Tortola and invited us out one weekend for an overnight. We sailed around a warm rainstorm, watched the Indy 500 in the air-conditioned main salon, and skin dived down so deep my cheeks nearly burst as I exploded up to the surface of that perfect water. More memorable yet was the lemon meringue pie Karin made that night. We passed around a chilled bowl full of egg whites, taking turns with the wire whisk until soft peaks formed. Magic. Another chef from England, Christine, would promise her guests a New York style cheesecake during charters. Imagine spending the day sailing and SCUBA diving, returning to the aft deck festooned with tropical flowers, just the right sauvignon blanc and the promise of homemade cheesecake after your meal of grilled Caribbean spiny lobster and a filet. christine’s new york style cheesecake Crust 1 C graham cracker crumbs 1/2 C gingersnap cookie crumbs 1 T sugar 6 T melted butter Combine all, press into the bottom and up an inch of a 9-inch springform pan. Bake at 350 degrees for 7-8 minutes. Filling 4 x 8 oz. packages of cream cheese 1 1/3 C sugar 5 eggs at room temperature 2 egg yolks at room temperature 1/4 C sour cream grated zest from 1 lemon 1 t vanilla

Cream the cheese and sugar with a beater until fluffy. Add eggs and yolks one at a time until mixed well. Add remaining ingredients, beating on low and scraping bowl until smooth. Pour into cooled crust. Here’s the tricky part: Bake for 15 minutes at 450 then turn the oven down to 225 and bake for another 1 hour and 15 minutes. Turn the oven off and let the cake sit with the door open. Best made while at anchor, not under sail. Cool and refrigerate (though we have been known not to wait, enjoying a piece about 3 hours later while it’s still custardy and warm). Remove from pan and enjoy.

Two local small businesses are giving back to Atlantans in big ways. Buckhead’s Silva and Thomas Hair Studio is a fully operating hair studio with a specialty for creating wigs for cancer patients. Salon co-owner and key hairstylist, Errin Thomas and his team of 14 stylists recently hosted a makeover event for 10 female cancer survivors sponsored by the Survivor Glam Squad / Peter Coppola program. The Survivor Glam Squad was originally founded in the UK by Keely Webster, who is also one of the faces for Peter Coppola Keratin Concept. Keely initiated this program to uplift women suffering from all types of cancers, providing them not only the opportunity to regain their femininity but to meet other women going through similar experiences. These inspiring makeover events also provide a comfortable occasion for family and friends to support and celebrate their loved one’s road to recovery. This nonprofit organization provides complete makeovers to women who have survived cancer by assisting them in regaining their sense of beauty, self-esteem, femininity and confidence. Peter Coppola, hair industry icon and founder of Peter Coppola Keratin Concept and the Keratin Revolution, teamed up with Survivor Glam Squad to provide these uplifting experiences in salons for women survivors nationwide. He developed a special treatment for the altered hair survivors often experience. The Peter Coppola Keratin Treatment, which is formaldehyde and aldehyde free, improves the condition and texture of the hair after chemotherapy. Salons participating in the Survivor Glam Squad / Peter Coppola program provide complimentary services such as complete hair/wig styling, fashion tips, make up application, photo sessions, education and motivation. On January 12, Errin Thomas and his team were on hand to provide both hair and makeup for these amazing women from the Atlanta area. Now in its 25th year since debuting at the Atlanta Apparel Mart in 1990, the ACC Show is collaborating with well-known interior designers and architects in the metro Atlanta area to create a refreshed onsite exhibition titled “Make Room, Modern Design Meets Craft – Let’s Entertain.” Each designer will create a room setting in their own unique style inspired by objects of fine craft. As avid craft enthusiasts, Buckhead resident William Peace and Jackie Naylor of Brookhaven are among the ten who jumped at the opportunity to showcase their creativity. A Kentucky native, William Peace, of Peace Design, couldn’t resist combining his passion for fine craft and Scotch whisky when the ACC suggested that he design The Balvenie Scotch whisky tasting room, a special 2014 show component that will help toast the Show’s 25th anniversary. The whisky tasting room proved a big hit in several ACC shows in 2013 and is a first in Atlanta for 2014. Best known for his rustic elegance, Peace plans to combine the slab table work of ACC furniture artist Matt Campbell with the curved wood seating of Pennsylvania-based Donald Shelton to complement the traditions of handcrafted Scotch making. It was also no surprise to the ACC that interior designer Jackie Naylor is fueled for a second year for her participation in the popular “Make Room” exhibition, incorporating handmade craft into rooms designed specifically for entertaining this year.

“My attraction to the ACC Show began with the first show 25 years ago. I have attended ever since, and even attend the wholesale market in Baltimore. The quality of the craft is not trendy, but I see it as versatile to fit into any setting,” says Naylor. “Incorporating craft in my clients’ homes has always been a gratifying experience; to educate and expose them to this wonderful art form– fine handmade craft.” Naylor has chosen two simple and understated craft pieces including a sensual bronze vessel by Decatur metal artist Mike Sluder and simple stone votive holders by Alabama-based Brooks Barrow to create a sensual, calm, casual and inviting entertainment space. The ACC Show in Atlanta draws thousands of fine craft collectors from around the Southeast who find great joy in learning the makers’ creative processes, developing relationships with the artists and hearing the stories behind each handcrafted piece. With the addition of the “Make Room,” event, organizers hope to help attendees discover ways to integrate treasured objects into modern design settings. ’ll admit it! I have a serious sweet tooth, a love for craft cocktails, and the ability to turn things up during the weekend. Seriously. I would be lying if I said I didn’t enjoy having the spice in my life. A self-proclaimed wine enthusiast and foodie, I don’t mind paying the premium for a good time out. Truth is, I consider myself to be like other fellow Atlantans seeking to strike that balance between moderation, fun and healthy living. Besides practicing hot yoga and eating mostly paleo during the week, I by no means practice or advocate living life in the ‘restrictive lane.’ However, as someone who considers themselves to be a conscious consumer, what I will say is this: I pay serious attention to what’s on the menu when dining out. Everything from food source, means of production and final presentation. My loyalty and support for those restaurants utilizing regional and statewide farms and growers for produce is ten-fold. Why? While I enjoy supporting local economy, I also find great value in contributing to the growth of restaurants who are just as concerned about what’s going in my body as I am. n the 30 years since Melissa Bryson and Denise Raymond met in their eighth grade homeroom at Ridgeview Middle School in Sandy Springs, they have bonded over many things, including their love of cooking and entertaining for their families and friends. Melissa and her siblings were ‘sous chefs extraordinaire’ helping their mother in the kitchen throughout childhood. Denise credits her sister with cultivating her love of cooking, beginning with her gifts of a Bon Appetit subscription and a three ring binder of recipes, followed by multiple informal cooking lessons. After years of watching others and experimenting, Melissa (now in Brookhaven) and Denise (in Smyrna) are now both just as comfortable making meals for two as they are making meals for 50 and

they want to share their knowledge. Together they have created McNack’s Kitchen, a cooking and entertaining website featuring tons of amazing recipes and fabulous party tips. The website also focuses on entertaining. Melissa and Denise want to teach people to throw their own parties by offering party coaching services. But these women don’t stop there! They also offer cooking classes, and will soon be launching an upcoming monthly menu subscription service. In addition to their love of cooking, their love of football has led the women to collaborate on another website adventure called Flip the Field. Growing up, the two played football with their siblings and neighborhood kids as well

as watched the games on television, but found that some of their friends didn’t understand the game. Flip the Field is for women to learn about football in a fun and light-hearted way and hopefully allows them to enjoy more time with the men in their lives. They think most women can find something to embrace about the sport, too. An Open Letter to the Romantics of Atlanta Words Chef David Berry

I

’ve taken a poll and, while the data is informal, it is definitive. The data shows that most people equate Valentine’s Day with romance and candlelight. This is not a stop-the-presses news bulletin. However, while you may think that going out with your significant other for a candlelight dinner at a fancy restaurant makes for a successful Valentine’s Day, a chef might disagree. February is known for Valentine’s Day, the day for lovers, which can be a stressful scenario for some. Getting reservations at the right restaurant can sometimes be daunting. Dealing with the less-than-intimate setting at the restaurant with all the other couples crammed into the space near you isn’t, in my opinion, very romantic. Don’t get me wrong, restaurants are happy to have you in for Valentine’s Day. If you find yourself feeling this way, I suggest you follow these simple instructions. I propose that you stay in and prepare a meal yourself. I know I’m a chef and telling you to stay home. Am I crazy? No, I want you to have the romantic evening you have envisioned for yourself and sometimes the stress of going out can be more effort than it’s worth. That said, with a nominal amount of planning, you can enjoy a romantic meal for two in your home. You can devise, prepare and execute a very successful meal. Listen to your date and determine their food likes ahead of time. Do some research, but keep it simple. For example, a roasted butternut squash soup could be a very simple first course and could be made several days ahead and heated up that evening. Place a dollop of whipping cream with honey, cinnamon and a pinch of nutmeg on top of the soup and let it melt on the surface. A second course should be something that can be finished quickly on the stove or that can

be pulled from the oven. It’s cold outside, so grilling is probably not the best choice and try not to go too heavy. You don’t want your date to be stuffed. Tournedos of beef, a sauté of scallops, or shrimp, are great choices and can all be served with a compound butter that again can be made well ahead of time. Roasted root vegetables and tubers are an easy side for any of the above. Cauliflower, brussel sprouts, parsnips, fingerling potatoes, baby beets, turnips and rutabagas are great. They can all be peeled, tossed in good olive oil, kosher salt and fresh ground black pepper, and then roasted until tender. Sauté some fresh spinach and you have a great meal. For the final course, you can’t forget the chocolate. Chocolate pots de creme are fun and easy to make. Just remember to make some small crunchy cookies to go with them. Take your time planning the menu. Find good recipes and ask for advice. Once you have chosen the menu, choose wine for each course, but remember that champagne is always good! Take time to set the mood or tone for the table. Today is the day to break out your good linens, tableware, flatware and crystal. By all means, get flowers and some candles to make it special. If you have prepared in advance, you can take your time and enjoy your time together during dinner and between each course. At the end of dinner, turn off the oven, put the dishes in the sink for tomorrow and blow out the candles. It’s Valentine’s Day, so write your own ending.
