These life-long bakers turned their passion for making good-tasting and good-for-you food into a successful business model with products sold in Idaho, Montana, Colorado, Utah, Washington, and Wyoming. We also have some great content on how to make the most out of your summer--packing the perfect beach bag, smoking delicious meats, and keeping your kids active during the summer months. f the surge in barbecue and smoking competitions across the country is any indication, grilling has become an art form. This summer, gather around the grill to try a technique that’s rising in popularity – smoking – to create a masterpiece meal. From secret marinades to tricked out grills and smokers, competitive smokers know there is a near ritualistic approach to teasing the perfect flavor out of a premium cut of meat. Smoke like a pro with these tips from Omaha Steaks Executive Chef Karl Marsh.

START WITH STYLE Start by deciding how you’d like to prepare your meat. Smoking infuses flavor throughout the meat, while extended cook times at low temperatures make it extra tender. Smoking also lets you create unique flavors using wet and dry rubs, seasoned wood chips and planks.

READY YOUR RUB For best results, brush meat with cooking oil or another liquid ingredient (such as yellow mustard) before adding rub. Spread rub on a clean plate and place the meat on it. Coat both sides with rub by gently pressing the meat on the plate.

SET UP THE SMOKER Preparation varies from one recipe to the next, but one constant is the importance of maintaining a steady temperature. As you prepare your charcoal, be conscious of where you’ll place wood chips or other flavor enhancers.

Ancho Chile Rubbed Smoked Beef Brisket Prep time: 1 hour | Cook time: 11-13 hours Rest time: 1-2 hours | Total time: 13-16 hours

Whole Omaha Steaks Brisket for smoking

cups white vinegar

2/3 cup yellow mustard 3/4 cup Omaha Steaks Ancho Chile Rub 4

cups Ancho Chile Smoking Spritzer, divided (recipe below)

cups apple or cherry wood chips, soaked in water

Remove brisket from bag and rinse with white vinegar then water. Dry completely using paper towels. Slather brisket generously with yellow mustard. Rub generously with ancho chile rub and inject with 1 cup Ancho Chile Smoking Spritzer. Prepare smoker using 1 chimney of pure lump charcoal fully lit and one chimney of pure lump charcoal unlit. Make sure water pan is full and adjust vents until smoker maintains a temperature between 225 and 250 F. Place brisket on smoker fat side up and brush smoking spritzer over top. Every hour check smoker temp, squirt with smoking spritzer and add handful of wood chips. After 3 hours, flip brisket fat side down and squirt with spritzer.

After 6 hours, flip brisket fat side up. Wrap heavy duty foil around the last 3-4 inches of brisket tip to prevent it from drying out.

2 cups apple juice

Restock water pan and add lump charcoal as needed. Adjust vents

1 cup cranberry juice

until temperature is between 225 and 250 F.

1 cup canola oil

Beginning at 8 hours, check internal temperature every hour and apply spritzer and wood chips.

2 tablespoons red hot pepper sauce 1/2 cup Omaha Steaks Ancho Chile Rub

Between 11-13 hours, when internal temperature is between 195 and 200 F, if fork slides easily into brisket, it is done.

Combine all ingredients and mix well.

Let brisket rest for 1-2 hours before slicing and serving.

ith the school year complete, kids are excited to relax after a year of hard work, learning and extracurricular activities. However, this may lead to the temptation of sitting on the couch watching TV or playing on a computer or mobile device. In fact, a recent survey conducted by Dr Pepper Snapple Group’s Let’s Play initiative found that only 33 percent of children participate in daily active play, and for 30 minutes less than the U.S. Centers for Disease Control and Prevention recommends. It’s important for kids to get daily active play because it contributes to their physical, emotional and social development, and helps them maintain a healthy lifestyle. To ensure kids get the active play they need this summer, try boosting their playtime with these tips: Make play time family time. According to the Let’s Play survey, in general, year-over-year younger children’s active play time is more likely to be impacted by busy family schedules. To make sure your family is getting the physical activity they need, find windows within your busy schedule to fit in some play, even if it’s just a brief break. For example, rather than asking about your children’s days at the dinner table, take a pre-dinner family walk to hear more while getting in some steps. Create summer structure. Without structured school days, kids may get too comfortable sitting inside playing video games. An American Academy of Pediatrics study shows that rather than playing outside, kids are spending an average of seven hours per day on entertainment media and other electronic devices. It’s important to let your children have downtime during the summer, but setting up weekly family playdates will give them something to look forward to while keeping them active. This could be a weekly family bike ride around the neighborhood, a game of catch or capture-the-flag. Creativity is key. Summer means longer days, more hours of sunlight and more opportunities to be outside. Get creative when motivating your kids to be active. For example, take a daily activity like walking the dog and turn it into a scavenger hunt by drawing up a treasure map of things your children should find on their walk, such as a pine cone, flower, blue car and other items around the neighborhood. Host backyard playdates. Playing is always more fun with friends. According to the Let’s Play study, longer stretches of active play are more likely to occur with friends or siblings. Round up kids from your neighborhood to get together for a different activity each week, such as an obstacle course or hide and seek. This allows your children to socialize and be active for an extended period of time. The Push-up. There is no movement better for building overall strength. Don't be intimidated; you don't need to be a Marine. Start with a modified version with your hands on your counter top. Do 10 of each variation, every day. Next week, increase it to 15. Week 3, try it on your knees. It takes less than 10 minutes a day. Recognize your progress as you get stronger and be proud.

Tilt hips forward creating a diagonal line. Either stay on knees or come up on your toes. 4. Drop your chest towards the ground, in control, then simply push it back up.

Targets primarily triceps (back of your upper arms) also shoulders, back & abs 1. Use the same form as the standard push-ups, but this time you squeeze your elbows into your side. Place your hands just a few inches apart, directly under your chest. 2. Drop your chest as low as possible, keeping your elbows glued into your rib cage. 3. This push-up takes some time to develop the strength. If you cannot take your chest all the way down, even dropping a few inches will work the muscles and build strength. 16

arie Boesiger and her mother-inlaw Kris have a lifelong education in baking – starting with chocolate chip cookies and ending up entrepreneurs and business partners creating over 6,000 healthier alternatives packed with oats and nuts called The Backcountry Bar. “I learned to love baking when I was a young girl,” says Karie. “My sister and I would vacation at our Grandma Margaret’s in Spokane. One of the activities she planned for us included our special baking days. We each chose what type of cookie we would wanted to make (and eat) and she assisted. Hand-mixing the ingredients was completely entertaining. We were not old enough to operate a mixer. I imagine we must have made a huge mess, but we loved every minute of it.” After years of experiments and research and baking a lot of cookies for parties and friends, Karie earned herself the title of “Karie Jean the Cookie Queen.” The Boesiger women created The Backcountry Bar in 2005, originally called The Everything Good Cookie, and began the search for CONTINUED >

local coffee shops that might be interested in carrying their product. The Boise Co-Op was the first to sign on in 2006 followed quickly by St. Luke’s Hospital downtown Boise. The Backcountry Bar is now distributed to over 200 retail stores including health food stores like Whole Foods, food co-operatives, grocery stores like WinCo Foods (a long-standing customer), fitness and outdoor retailers, and coffee houses in Idaho, Alaska, California, Montana, Oregon, Utah, Washington and Wyoming. You can also find the women each Saturday during the season selling the bars in a little booth at the Boise Farmer’s Market downtown Boise on Front Street. The Backcountry Bar isn’t just a healthy alternative to a cookie; Karie and Kris think of their bar as a wholesome meal replacement. It’s a soft bar loaded with dried fruits, nuts, a variety of seeds, rolled oats and all natural peanut butter, with a gluten-free version also available. “Our future plans for the business include expanding the line with new varieties,” Karie explains. “We have started with test runs for a product that does not contain peanuts. Some dried fruits we have experimented with include blueberries, goji berries, and cherries. Dark chocolate is requested from many of our customers as well as utilizing other natural protein sources. It is fun mixing up the flavors and experimenting with complimentary taste combinations.” The goal of Backcountry Bar was to create a bar for all kinds of lifestyles and people, whether you are a runner fueling for a marathon, an athlete skiing in the backcountry, a teenager needing a filling after school snack, or a busy mom racing between carpool, 20

work and soccer practice. “Our motto is ‘Your Lifestyle, Your Fitness, Your Bar’,” Karie explains. “We wanted to create something that works for everyone.” And it seems the Boesigers have succeeded in creating just that – as many of their customers have nothing but praise for the pre-packaged snack. ”I adore these! I buy them at WinCo and keep them in my birth bag. As a childbirth doula, I'm often away for long periods of time and need a great source of quick nutrition. The Backcountry Bar is one of my go-to items,” Macy Huberty tells us. “These are so yummy! We pack them for all our trips,” shares mother and Boise artist Angela Stewart. “We even enjoyed them on a mountain in New Zealand, and I have a picture to prove it! We always keep a few tucked in the freezer so they are ready to go with us on an adventure... or when my always starving 6-year-old has a hunger breakdown.” Kris and Karie have their hands in every aspect of the business. The bars are manufactured locally at the University of Idaho Food Technology Center in Caldwell. While their baking team has changed over the years, it is always a nice mix of new and old friends and family who love to work hard and enjoy being productive. When

they began the business in 2006, they had a staff of 4 bakers with an output of 500 bars at the end of the day. Today they employ 10-15 people and produce 6,000 bars in one day. This year marks the ten year anniversary of The Backcountry Bar, and the Boesiger women are excited to announce that Intermountain Division of Albertsons, one of the US largest food retailers in the United States, just signed on to carry The Backcountry Bar at their Pacific Northwest locations. They also have plans for business expansion, a growing pain for any small business entrepreneur. The women hope to move, eventually, from manufacturing it themselves and managing the current distribution to finding and securing a co-manufacturing

To Canvas In A Snap T

his is one of my constant “go to” DIY projects. It’s fast, it’s easy and it looks oh so professional. I love displaying photos, but I

don’t necessarily love a lot of photo frames. These canvases create a crisp, clean look…. All in about 30 minutes! Let’s get started.

Step 1: • First things first, grab your supplies. • Photo on photo paper • 1 ½ inch thick wrapped canvas • Mod Podge in Matte finish • Black spray paint in Satin finish • Clear spray paint in Satin finish • 4 inch or 6 inch foam paint roller • Small paint tray • Place your photo on the clean, dry canvas to make sure it fits correctly. Trim the edges if necessary.

Step 2: Spray paint the canvas sides and a little of the top with the black spray paint. It is VERY important to let this dry completely.

Step 3: Using your foam roller, roll Mod Podge over the entire top of the canvas. Center your photo on top of the wet Mod Podge. Smooth the photo with your hands starting in the middle and pushing out toward the edges

Step 4: Roll a thin even layer of Mod Podge over your photo. This is a little scary “painting” over your photo, but I promise it will dry clear. Once it is covered with a thin layer start at one side and roll straight rows from side to side, in the same direction, as to avoid roller lines once it dries. If you see small bubbles in the wet Mod Podge, it is too thick. Thin it out by taking an almost dry roller over the photo to lift some of the Mod Podge. Repeat until the bubbles are gone. Let this dry completely.

Step 5 • Spray the top and sides of the entire canvas and photo with satin spray paint. • Dry…Hang….High Five. Congratulations on your new Photo Canvas! This same technique can be used on 4x4 tiles of your choice to create custom coasters. You will add a bit of Peel and Stick Cork or felt to the back of the tile so the coaster doesn’t scratch.
