We Can Make a Difference T

he issue of limited natural resources first arose for me when I was 9 years old in Miss Stanhope’s class. Much to the horror of my fellow classmates and me she professed that if the population boom continued at the current rate, there wouldn’t be enough food to feed the world by the time we graduated high school. I won’t say how long ago that was, but thankfully, this food shortage hasn’t happened as of now.

This is a complicated subject that includes the continuing exploitation of resources, which provide jobs as well as large corporate profits. It’s still up to each of us to be responsible stewards of the earth that sustains us and will hopefully sustain future generations. Thankfully, much has changed in the last 25 years in the way we think about our ecological footprint. Most of us are aware of the small and significant ways we can make a difference. Similarly, the prevalence of unhealthy chemicals in many of the materials within our homes and businesses has resulted in the development of better alternatives. These options are not only healthier, but they are also designed to last. As this month’s edition focuses on ecological consciousness, we’re taking a look at some of these trends in green and sustainable building. Also, watch for the article about a North Boise gem serving regionally sourced, natural and organic foods in a most intimate setting. Here’s to each of us making a difference for the collective, while enjoying April and its promise of spring!

Around Town BOISE STATE’S ‘SOPHOMORE START’ COULD SPEED COLLEGE DEGREE Boise State University is committed to helping future high school graduates enter college with a full year of classes already completed — saving students substantial tuition costs and putting them in a great position to earn a degree on time and on budget. To that goal, the university is piloting the new “Sophomore Start” program in the West Ada, Nampa and Parma school districts this spring with plans to expand to additional high schools in fall of 2015. The program will enable high school students to earn 30 credits at the concurrent enrollment fee of $65 per credit — a 75 percent discount over Boise State’s per-credit tuition. “This is a great opportunity for students and families in our district. It is a great cost savings for our families, and also provides an academic roadmap for our students who will be attending Boise State,” says Cindy Sisson, director of curriculum at West Ada School District. “We are very excited to be partnering with Boise State University in their Sophomore Start option.”

The Peregrine Fund is seeking photographs featuring the majestic beauty and precarious circumstances of birds of prey around the world for its new juried photo exhibition. Entries accepted on May 1 and winners will be announced July 11. The theme, “Raptors at Risk,” offers professional and amateur photographers an opportunity to draw worldwide attention to the true life stories of eagles, hawks, falcons and other often-misunderstood birds of prey. The exhibition is sanctioned by The Photographic Society of America, the only organization in the United States and one of only four in the world, authorized to oversee the work of accomplished photographers. It will operate under the new 2015 international Nature Division rules that reward the storytelling content of a photograph as well as the pictorial quality. S

tate & Lemp – so named for its location – takes the concept of seasonal menus and the commitment to sustainability to fertile depths.

THE TRIO IN THE TRIANGLE

The restaurant sits on a small triangle where Lemp converges with State Street, the inspiration of co-owners Jay Henry and Remi McManus. Henry had previously worked with Boise restaurateur John Mortimer and McManus had been a professional cyclist. “We knew we wanted a limited seating,” says McManus, “and the space dictated the form of the restaurant.” Chef Kris Komori cut his cookery chops in Portland, Oregon. When the three men merged their creativity and good taste (pun intended), a culinary star was born in the Boise foodie firmament. IT’S ABOUT THE EXPERIENCE

While there is a great deal of overlap in their individual roles to create the consummate guest experience, McManus is responsible for the front-of-house. “The experience is my whole focus,” McManus explains. Guests are greeted at the front door with champagne and invited to view the Gallery – art and sculptures showcasing local artists and rotated every three months. McManus uses custom-made wooden salt boxes – from which salt is gently ladled from a small spoon onto the dish instead of using a salt shaker – in front of each place setting as the holder for a personalized name tag. It’s a charming custom rarely seen nowadays, employed here with a distinctly post-modern twist. THE GREEN AESTHETIC

The tables and chairs were handcrafted from 85-year-old pine and fir by Boise artist and furniture maker Matthew Grover. The carpet is made of post-consumer recycled materials, and the wooden barn door (with overhead track and rollers) that separates the kitchen from the dining area was originally from the Cathedral of the Rockies. Re-used crown molding decorates the back wall. An assortment of plates and glassware from second-hand stores live a repurposed life. Glass punch cups (from old ginger ale and sherbet punchbowls) are employed as coffee cups. A cut crystal bowl holds an assortment of souvenir spoons for guests to use for spooning sugar or sorbet. “We have people who bring them or mail them to us,” says Henry. “Guests love to look through the bowl to see where each spoon is from.”

A NETWORK OF PURVEYORS

“The menu at State & Lemp is seasonally driven,” says Henry. “It’s always about the next menu and changes every few weeks.” To source locally and regionally, the three men have created relationships with suppliers such as Peaceful Belly in Boise, Loganics in Fairfield and Malheur River Meats in Vale, Oregon. Once a month, Komori and Henry walk the fields with Josie Erskine to get a feel for what will be coming. “At the end of the season, we ask farmers what they need to move because we can design a menu around it,” says Komori. “We’re here to showcase it.” THE FOOD PROFILE

A case in point is the parsnip soup from a recent menu. You might wrinkle your nose at the thought of parsnips but this soup’s ingredients includes Dungeness crab, pomegranate, Bosc pear and bleu cheese. “Green is not just local but how we use the product,” says Komori. For instance, fennel and pickle juice are used to build flavor, color and texture. Instead of composting, Komori says he juices “the scrappy bits,” then dehydrates the pulp into a powder and uses it as he creates the food profile. Composting is in their future. They plan to garden the raised beds at Lowell Elementary and plant beds around the restaurant. THE NORTH END LIFESTYLE

McManus, Henry, Komori and the staff all live in the North End and commute to work via bicycle most days. Their clientele often ride in, too. “There are days in the summer when there will be three cars in the parking lot, but the lot will be jammed with bikes and the restaurant will be full,” says Henry. “At the end of the night, we leave in a gang and everyone peels off to their homes. It’s like being a kid again.” STATE & LEMP

W

hat is Zip Zap Zop? It is not the name of a fizzy candy, nor is it the name of a Dr. Seuss character. Zip Zap Zop, “The New Sound of Business,” is a company co-founded last year by Megan Bryant and her brother Gavin McCaleb. Zip Zap Zop is also the name of a simple ice breaker improv game. A standup comedian trained in improv, Bryant wanted to find a way to bring her improv training into the business world. “I’ve been working for four or five years trying to figure out how to incorporate improv into other facets of life,” Bryant says. “My brother Gavin is the one that got me into improv. We both have done a lot of presenting over the years.” Bryant and her brother eventually realized they could train employees using improv as a tool to approach even the toughest workplace topics. “The workshop curriculum can be tailored to the company’s needs based on what their goals are,” explains Bryant. “We’ll find out if they are trying to overcome a challenge or if they just want to have some fun.” The team building aspect of improv invites participants to be free to be silly in a “No Judge Zone.” “My favorite thing about improv is that once you know the rules you can make up different scenarios,” says Bryant. The scenarios aid in building understanding about various concepts. “I’ve worked with Youth Groups helping the kids understand how businesses work.” While Zip Zap Zop keeps Bryant busy, she has many other aspects to her life. She is a founding member of the improv troop Chicks and Giggles. The group is made up of trained improv veterans. The women of the troop are the Chicks while the men in the group have decided they must represent the giggles.

Bryant’s love for stand-up comedy and improv—they are two different things— also led her to found the Annual Idaho Laugh Fest. Held each January usually when the Treasure Valley inversion is at its thickest, audiences are invited to step out of the dark clouds of winter and step into a smiling good time. One of Bryant’s main goals for the Laugh Fest is to gradually increase the general public’s comedy IQ. “I want the education component to teach the difference between improv and standup,” says Bryant. “Hopefully the audience will be more open to having comedy be an entertainment option more regularly.” The beauty of the Idaho Laugh Fest is that Bryant has made certain there is something for everyone. “The kids matinee last year inspired families to do fun improv games with their own families,” explains Bryant. The shows have a rating ranging from PG to R so audience members have an idea of what to expect. “In Boise we are still a conservative town, so the comedians who perform are learning how to branch out with their material.” As if Bryant’s improv training, festival organizing and stand up gigs weren’t enough to keep Bryant busy, she is also happily married and a mother to three young children. “I want to be with my kids all that I can, although my kids scare me to death because they already seem smarter than me,” says Bryant. “Fletcher is 7, and asking persistent questions about life. PJ is in the thick of her terrible twos in the most adorable way. Shepherd is in the middle of the newborn stage where he still grunts in his sleep. T

he buzzwords have been around for decades: durability, sustainability, healthy, energy efficiency. Lately, however, the buzz has gotten a bit louder and more persistent, and all of those words have coalesced into one over-arching term— green. Call it what you will, it all boils down to making our communities more livable. Green became a national movement back in the 1970’s when events like Earth Day, and books like The Greening Of America, by Charles Reich began encouraging us to start thinking about how we treat our planet. It began with simple ideas like not littering, and has since percolated down through virtually every aspect of how we lead our lives.That includes how we design and build our homes and businesses, both inside and out, and even how we landscape them. Suzie Hall, president of Cornerstone Design in Boise, remembers working on Idaho’s first Leadership in Energy & Environmental Design (LEED) Platinum-certified building. “The Banner Bank building is probably our biggest sustainable project to date,” says Hall, “but our firm has been doing green interior design for about a dozen years.” Hall’s offices are a prime example. When she bought the space it was an empty shell with a dirt floor. Everything that went into it is sustainable, energy efficient, low-flow, low-flush and healthy. “Air quality is the healthy part of a green space,” Hall explains. “For example, carpets and pads can trap a lot of stuff, and they’ll off-gas VOC’s for as long as 20 years.” Volatile organic compounds, or VOC’s, are known to aggravate allergies and cause other medical issues. Paints, wall coverings, cushion fabrics— pretty much anything can off-gas. Even hard surfaces like cabinets and wood floors contain toxins such as formaldehyde in their coatings and adhesives.


Recycling was one of the first buzzwords of the green movement, and it’s an even hotter topic today. Virtually any product made, at least in the U.S., comes under scrutiny to determine where its pieces and parts came from and where they’re going once they’re used up. Today there are two sides to the recycling coin. For most of us it’s about what to do with materials we’re finished using, but for interior designers and building contractors it’s also about where the materials they use in your home came from. Cradle to cradle is a product certification coined by William McDonough, who has written several books on green issues. “The chairs in our conference room are a good example of that,” Hall says. “It means they’ve gone through a process that not only documents where the materials in them came from, it also ensures they’ll be recycled back into something else at the end of their life, instead of going to the landfill.” Sometimes the buzzwords evolve. Recycling, for example has also come to be known as re-using or re-purposing. “We try to keep whatever we can when we design an interior for an existing home or business,” says Hall. “There’s always that balance. Local sourcing, for materials as well as craftsmen, is a big part of what we do. It saves on transportation, fuel and so much more.”

Perhaps the buzziest of words in green interior design today is lighting. Incandescent is out, LED is in. They’re low voltage, low heat and long lasting. Everything you could want in a light bulb. “Lighting is a huge sucker of energy,” says Eric Crawford of The Loop Technologies in Eagle. “Only about 10 to 20 percent of the energy produced by an incandescent light bulb actually generates light. The rest just generates heat. Then you have to use air conditioning to get rid of the heat, so you’re actually paying twice.” Crawford is excited about Rimikon. This Canadian company makes LED light fixtures that can be used anywhere, from the shower to the kitchen to outdoors. Their system is so efficient and easy to install it can knock 20 to 30 percent off a commercial electrical bid. Energy efficiency is right at the top of most people’s to do list, whether they’re thinking green or not, because saving energy means saving money. “We have a client who was very concerned about the energy draw of their extensive audio visual system when they weren’t using it,” explains Crawford. “We put a keypad at the exit that powers down their entire AV system whenever they arm their alarm and leave. We know you don’t want to come home and wait for everything to boot back up again, so we have an app that lets you turn the AV system back on remotely. Then, when you get back home, it’s like you never left.” How about an electric window shade system that keeps your house cooler? When the sun blasts through your picture windows the heat it generates makes your air conditioner work overtime. No problem if you’re there to lower the shade, but when you’re not, a heat sensor kicks in and lowers it automatically. Then, when the temperature goes back down, the shade automatically raises. New technology doesn’t just apply to fancy lighting and audio visual systems. Building codes for new buildings and remodels have been getting more and more robust when it comes to green. CONTINUED >

“To me, durability, healthy, efficiency, the whole green thing, equals quality,” says Josh Bogle, owner of Green Remodeling in Boise. “Builders in this area who really focus on these things are just flat out building better homes. Some of them are driven to it because of a real belief that this is what’s right for the planet, others get into green building because they start learning about building science; what it is that makes homes work better.” Building science, a relatively new field, takes a hard look at how all the components of a home interact with each other and affect each other over time. Still, you can have all the right pieces and not get them put together in the right way. “It’s really about craftsmanship, too,” Bogle adds. “There’s that extra understanding of what the strengths and weaknesses of those materials are, so that they’re used appropriately.” It’s easy to throw around words like green and all the rest, but if a home is certified green, whether by the U.S. Building Council’s LEED standards, or the National Association of Homebuilders, or by Energy Star, that becomes a verified standard that the marketplace can look to and know the value of a product. “To build a home that’s highly durable, highly efficient, super healthy for the occupants—and at this point we really know how to do that—doesn’t have to be a big cost driver,” explains Bogle. “It’s merely a matter of being conscientious. And if you’re starting a home from the ground up, there’s no excuse not to build it green.” Considering all the effort and cost that goes into building or remodeling a home, the planning stage is a huge component in making sure it gets done right, but one area that generally gets left out of that process is landscaping. “When you look at the list of sub-contractors for a building project we’re way down at the bottom,” says James Adams, owner of The Nature Company. 20

Adams advocates bringing in a landscape designer during the planning stage to make sure outdoor things like hot and cold running water, enough power outlets and hose beds, and adequate driveway drains that prevent water from running down the street are all considered. “We’re always putting something in the ground that’s meant to create a healthier, quieter, calmer environment,” explains Adams. Arguably the biggest key to good landscape design is water use. That means more than designing a sprinkler system that’s zoned appropriately for lawn and planter, sun and shade. It means recognizing where we live, and what works and what doesn’t in our particular ecosystem. “Boise exists in a high desert, yet everyone wants to plant more grass,” Adams says. “Grass is great for soccer fields and parks where we want to run and play, but the trend in homes today is smaller lots with less room for those kinds of activities, so the greenscape is giving way to hardscape.” Designers like Adams are turning more and more to walkways and patios, rock work and water features, all the pieces of the puzzle that aren’t plants, instead of things that people need to water and fertilize all the time. This kind of thinking has spawned yet another green buzzword: xeriscape. “Minimal watering and hardscape make xeriscape,” Adams explains. “You can use plants like ornamental grasses and Artemisia (sage), which is a huge family of plants. There are some really fun things that are conservative in terms of water.” Our homes and work spaces are where we spend the vast majority of our lives. It only seems natural that we should want them to be comfortable, as livable and as economical as possible, both inside and out.

P

hil Sigler’s life philosophy can be summed up in the title of his first book, If You Can’t Be First, You Must Be Better! Sigler is the founder and driving force behind the new Boise TechMall, a onestop shop marketplace of vendors geared towards building a better business through technology. Radiating sparks of energy and enthusiasm that are almost palpable, Sigler says his goal is to help entrepreneurs grow their business from initial concept through execution by using the expert services provided by the TechMall. Sigler successfully ran a variety of high tech businesses for 18 years when a flash of inspiration took him by surprise in 2010. “I was at the Auto Mall in Nampa and was fascinated by the concept of having all these different brands to choose from under one roof,” Sigler explains. “I went there to buy a Pathfinder and left with a Hummer! I thought, ‘What if I could take all the smart people I know in technology and business, and put them in one room? I could provide a synergy like nothing else!’” Sigler met his business partner Jay Panuska at a venture capital conference. Panuska had read Sigler’s book –there’s also an app— and liked it. When Sigler shared his vision of a tech mall, Panuska loved it. Sigler reached out to his connections and pitched the idea. Four months after breaking ground, the mall was completed and fully leased. “It went so fast because we were using a team of experts,” says Sigler. The TechMall, located on the corner of Overland and Cloverdale in Southwest Boise, has three floors. The ground floor provides a “hi-tech trade show experience” with vendors such as Device Repair Pros who fix smartphones and tablets, and The Viewfinder, a videography and photography space with a green screen and an au24

tomated mic boom where you can easily tape and edit your video message. There are also several visible racks of servers so the nontech person can see firsthand what the term “server farm” refers to. “It’s a museum of the future,” explains Sigler, “where you can learn about technology and business with a hands-on experience, and have fun doing it.” “We try to do a lot of firsts in here,” Sigler says. These firsts include a Bitcoin ATM, smart headsets and wearable technology, and a 3D printer sponsored by Boise Office Equipment. One corner of the ground floor known as the Innovation Center is dedicated to brainstorming ideas with a better-than-a-white-board wall mount for tracking inspiration. The second floor is the TechMall’s Innovative Design Center. The open floor plan encourages collaboration where like-minded individuals can exchange ideas with experts. To promote the relaxation that fires creativity, the Design Center features the Boise TechCafe, which offers reasonably priced sustenance and java, and the HotSpot, where the next Steve Jobs can enjoy a glass of wine or pour a cold one from the beer wall. The beer wall is the hops equivalent to the automated wine dispensers you find at Bodovino. Here’s how it works: you load your card with the cashier, set your glass upside down on a circular spot in the grate under the beer taps and it’s automatically rinsed, then place said glass under the chiller for that perfect frosty coat, select your favorite microbrew and pour a pint. Open the door that reveals the back end of this high tech wall and you’ll see a dizzying array of wires and connections that create the lager magic on the front end. The third floor is the Business Solution Center, where someone


with a business idea can follow a plan that’s been mapped out to help achieve success. The entrepreneur will find help with writing business and marketing plans, access to attorneys, certified accountants, financial services, website creation, graphic design, SEO implementation and app development as well as business coaching. There are also conference rooms and a training center that are free and available to anyone. Sigler’s first book focused on his 12/24 guide to successful business: 12 principles and 24 philosophies and an app to help you create a business plan. His next book, due out this spring, is entitled Now What? It helps the fledgling business owner write a marketing plan. “For most people, it’s not easy to start a business and navigate the foundational aspects that can make or break the original concept,” Sigler says. Oh, Yes We Can! WORDS JIM COSGROVE

I

f someone tells you that you can’t follow your dreams, don’t believe them – not even for a second. For much of my adult life, people have told me, “you can’t do that!” or “that’ll never work.” And I’m not talking about expecting things to always “work out” or “succeed.” I’m talking about following your passions, no matter the outcome. Success is never guaranteed. But stagnation is certain if you don’t ever take a leap of faith. When my brother Dan and I first went into business together, many raised their eyebrows and shook their heads. One friend said, “Bad idea. My dad and his brothers started a family business, and now they don’t speak.” Nearly 13 years later, we’re still in business – although some months we limp along. Oh, and we still talk. Shortly after we married, my wife Jeni decided to quit her job (with family health benefits) and work with me. People told her, “You can’t work with your husband. You’ll drive each other crazy, and your marriage won’t last.” What they didn’t count on is that Jeni and I actually enjoy spending time with each other. It’s not always a picnic, but it works, and at the end of the day we still (most of the time) like each other.

When we found out Jeni was pregnant, our friends and family said, “I guess that puts an end to touring together. You can’t travel when the baby comes!” Oh, yeah? Watch us! We traveled with baby Lyda, and she learned how to adapt and ride in a car seat for long distances without a video player. “OK, fine,” they said. “You’ve done it with one, but you’ll never manage traveling with two kids.” Done it - and we are still doing it. We’ve logged about 17,000 miles on the road together this year. It’s crazy and exhausting sometimes. And, yes, there are tears and tantrums and frazzled nerves, but there is also laughter and joy and new people and new experiences and wonders to behold. The important thing is that we’re together. We still run into friends, family, and complete strangers who insist on dispensing advice laced with “can’t” and “don’t” and “shouldn’t.” We’ve learned to smile and nod our heads and plow forward. We know it’s just their prejudice and fear talking – fear of the unknown and fear of failure and, even, fear of success. There are some people who can’t imagine living the way we do. Fair enough, but I can’t imagine living any other way.
