For many die-hard music fans, summer means festival season. Living in the state of Colorado, we are privilege to some of the best in the country right out our back door. In the fall of 2001, rumors started swirling about a four day music festival that was to take place the following June somewhere in the backwoods of Tennessee. The names that were being thrown out had the entire jamband world a buzz. Widespread Panic, Ben Harper, Jack Johnson, Phil Lesh & Friends, Moe., and the list kept going and going of the powerhouses. Needless to say, when the announcement of the first annual Bonnaroo Music Festival came out, we were all in. The majority of our group left out of Kansas City in a Chevy Suburban, with an enclosed trailer in tow. The map said eight hours to Manchester, Tennessee. As we approached our destination, the excitement was quickly extinguished as we came to a bumper to bumper traffic, some twelve miles outside of the festival entrance. Our driver at the time was my best friend (now brother-in-law), Austin. Austin has many attributes, but patience in traffic is not one of them. After not moving for a few hours, the frisbee and watermelon fun was starting to wear off. When most people look at a grass median dividing the highway, the thought of driving down it wouldn’t normally cross their mind. Austin Chamberlin saw this as untapped opportunity. When he told us his plan to simply drive down the middle of the median and pass everyone, the reaction was to “GO FOR IT!” Austin proceeded to ease the Suburban over to the shoulder, and off into the grassy wide open. We began to pick up some speed and pass hundreds of cars. Although we were driving on grass, what lay beneath was lumpy, uneven ground, with ruts and drainage culverts. As we bounced down the way, the trailer we were pulling actually became airborne a few times. Our plan was actually working! The bystanders (still not moving) had mixed reactions. Some cheered, some laughed, some gazed in awe. As the time came for us to merge back into traffic, there were far more four-letter words and middle fingers being lobbed at us than cheering. As friendly as the hippy crowd is, I soon realized the only way we were getting back in that line of cars was by cold hard cash. I pulled a crinkled up ten dollar bill out of my wallet, ran up to a semi-truck driver, and we were back in business. Certainly a memory we won’t soon forget. • White butcher block paper • Paint swatches in a variety of colors from your local paint store (I went to Guiry’s) • Scissors • Double-sided tape or glue INSTRUCTIONS

Step 1: Lay down white butcher paper on the table. Step 2: Cut the paint swatches into individual boxes. Step 3: Using glue or tape (I just set the swatches in place), place the swatches in an ombre fashion down the length of the table. I chose pinks, purples, greens and blues; however, you could do it with one color or multiple colors, depending on the theme.

CHAOS As I spin these rhymes These lines With the melodies of chimes I declare this verse to be chaos As I split open wide tradition My rhymes will face no omission You ask why chaos? Because chaos is an antonym to order Order a synonym to defined borders. And these rhymes must defy the foundation of the nation. Never to fall back into line, never to grow dim With no laws, with no rules, you can taste the freedom, something they don’t teach in schools. Rhymes can’t fall into a line like mules. No! They should explode in vibrant hues. In neon yellows and blues. Not be condensed, and pressed into a tin like tobacco chews. No! Lines, rhymes, they charge through like Bonaparte piercing the heart. They will not be treated as a product to be taken off a shelf and placed into a cart No they will cry out like a singing lark And if my lines my rhymes should have eyes Behind them will always be a bright spark.

LA DOLCE VITA VIA PERLA: ITALIAN HOSPITALITY IN THE WEST END

P

earl Street is bustling with life on a Thursday evening as I make my way to Boulder’s new Italian hotspot, Via Perla. Bordered by both 9th and Pearl streets in the heart of the West End, Via Perla is flanked by an outdoor patio perfect for Pearl Street people-watching over artfully crafted Italian fare. I spoke with Owner Peg Romano, no stranger to the Boulder restaurant scene, as we enjoyed bites of an array of menu items straight from the kitchen prepared by Head Chef Martin Woods. Alongside her husband, Romano operates the famed Med as well as Brasserie Ten Ten. “This is our town,” Romano states, heartfully putting into words how connected to Boulder both she and her husband feel. She goes on to describe the great people she has met as a result of being in the restaurant business. “We love entertaining our friends, neighbors and all of the visitors to Boulder. We feel very fortunate and proud,” Romano remarks about her years in the restaurant industry. Italian hospitality. It’s real. Though not Italian by birth, various travel experiences allow the Romanos to offer dishes reminiscent of their many family trips to Italy. ABSTRACT PAINTER JULIANA FORBES MAKES HER MARK ON CANVAS AND THE WORLD.

B

orn and raised in Aspen, Colorado, artist Juliana Forbes has held a pencil or paintbrush in her hand ever since she can remember claiming, “Art has been a bright thread weaving through every experience in my life.” In the '90s, she moved to Boulder, where she raised her children and currently paints and teaches classes to young students out of her studio. The creative use of color — variants of red in particular — immediately draws you in. Her work is layered and textured and deliciously deep. And there’s often a sense of history or some type of story woven in, buried underneath. With patterns that organically appear, often in shadows, sidewalks or weathered walls, Forbes explains, “There is clearly something more mysterious and potent going on in the world than I can fully comprehend or describe from my vantage point — a dynamic conversation between all life.” This is the intangible element that gives you pause while taking in one of her pieces. “I want my paintings to resonate in our innermost core, not our intellect. Having done mostly representational work until the age of 30, Forbes attended an art expo in Madrid that changed everything after finding three pieces that viscerally affected her, so much so that she returned home and began producing abstract work. “Since then I have weaned myself from depending on images to conceptually represent something and tried to directly, emotionally communicate, circumventing intellectual analysis, which can be confining,” says Forbes. She says her pieces now begin with un-self-conscience marks — creating spots on a different surface and then transferring them by rubbing them onto her canvas. “This jump-starts a conversation that I can follow, without steering the painting with a heavy hand," Forbes says. "My recent paintings are abstracts in saturated, energetic color, sometimes vaguely evocative of branches. And they are getting bigger and bigger! I love layers of information — transparent layers of marks and color — that deepen the 'conversation' of a painting.” She goes on to describe how the past few years have been an enlightening time for her as an artist: 40

“All sorts of things fell apart, and I began tripping over assumptions that I’ve carried all my life: you can’t do that, proper paintings are like this, to get X you have to do Y. Rules. Followed by a reluctant admission that the marks I find most beautiful are made by accident: loose, organic shapes free from my efforts to sculpt them. This was humbling and frightening. If I wasn’t going to sculpt my marks, shapes and colors, what was I doing? Which led to appreciating that whatever moves me is my artistic gift, not my technique. Which, in turn, led to discerning the difference between the voice of inspiration and the voice of habitual patterns and conventions.” "Our world feels chaotic with fear, but I believe underneath our fear and cynicism, is awe," Forbes says. Start with Dinosaur Ridge, which offers some indoor and outdoor exhibits including hands-on interactive stations as well as a guided shuttle tours (or walk the ridge trail for free from the visitors’ center with older children). etween the months of February and May, as the snow sluggishly vanished, the ground thawed and greenery blessed the hillsides of Boulder, Mountain Flower Dairy was busy welcoming 20 baby goats. Once old enough, many of these kids will be passed along to other farms and four or five will be mixed into the herd, becoming permanent residents at this unique, urban goat farm in the heart of Boulder.

Mountain Flower Dairy (MFD) is a non-profit that promotes local, sustainable agriculture and humane animal husbandry within Boulder’s urban setting. The farm rents its modest acreage from the Long’s Gardens property in North Boulder, along with Growing Gardens and Iris Farm. These organizations labor this land together and share the desire to keep the farmland working as agriculture. Through a combination of practices, Long’s Gardens, Iris Farm and MFD collaborate to decide what crops would be advantageous for both the land and the goats. MFD Farm Director, Michael Montgomery, a culinary school graduate with a passion for farm-to-table food practices, explains that “for the goats, particularly the milking does, we look for nutrient rich crops that are high in protein. Legumes, such as field peas and

vetch, are often in the mix. These plants are also good for the soil by adding organic matter and helping to fix nitrogen.” The goats' waste is recycled and tilled into the fields where they’ve grazed and then used again for flowers. “It’s a win-win for the animals and the soil,” says Montgomery. Since its inception in 2012, the MFD has become an educational resource in stewardship and community, hands-on farming. The farm hosts a variety of tours and summer camps and aims to expose people to sustainable agriculture and safe, raw dairy production. “Raw milk and raw milk products are challenging for farmers, but it’s a great starting point for small dairies and we want to show that raw milk can be done safely,” says MFD’s Co-founder and Executive Director, Taber Ward, a CU law graduate specializing in public health, CONTINUED > food and agricultural policy. According to Colorado law, people may only consume raw milk that has not been pasteurized (heated to a certain temperature for a certain amount of time) if they actually own a portion of the herd producing the milk. For MFD, this means distributing the milk to members of a co-operative or “herd share,” who pay for boarding dues and partial ownership and then receive product as a benefit. The milk and cheeses for MFD’s herd share program are distributed at Cured, Boulder’s acclaimed deli. “We have around 120 families that get milk from us through our co-operative, and we are just milking about 14 goats right now,” says Ward. “So 14 goats can make a big difference.” Ward points out that like other raw products, such as eggs or red meat, raw milk is not inherently dangerous if food safety is kept paramount in the production process. Under the Pasteurized Milk Ordinance, the pasteurization of milk became required by law in the 1920s. This was during a time when dairy farms were becoming so large that farmers had a hard time maintaining adequate sanitation levels and animal health. The MFD team has considered pasteurization, as it would mean a direct route to the retail market. However, investing in that level of equipment would require massive scaling of the company, which no one is quite ready for or necessarily wants. Small-scale animal husbandry is the appeal of the farm. “That may be what’s wrong with the animal agricultural industry, is the scale, and that’s what we are trying to avoid,” says Ward, eluding to large 68

masses of livestock, often kept in small spaces where animals aren’t able to express natural tendencies. For Chef Michael Montgomery, the benefits of consuming raw milk over pasteurized milk are apparent. “Because I am a chef, I must say that flavor is a huge benefit of not pasteurizing milk," says Montgomery. "The lack of heat keeps the milk from having a cooked taste and allows the subtle grassy-sweet flavor of the milk to come through.” He also explains that pasteurization often kills good bacteria, enzymes and vitamins that make milk healthful in the first place. MFD’s goats live on a diet that includes rotational grazing, organic alfalfa and donated juicing pulp from Wonder Press Smoothie & Juice Bar, one of MFD's local partners. All of this contributes to the nutrient-rich milk, which could potentially be sacrificed in the pasteurization process. Educational Coordinator and Herd Manager, Maddie Evensen smiles as she points out the various personalities of the goats, each with their own name. A young pair of kids press their faces against the other’s and simultaneously peep through the fence. It's as if they’re smirking. “They’re best friends,” laughs Evensen. Some are shy and others are bold. Some lounge in the shade while others energetically move about. Each one seemingly content, and each one playing a big role on this little farm.


VISIT MOUNTAIN FLOWER

It makes for a perfect day for "kids" to meet kids. Mountain Flower Urban Goat Dairy is open to visitors every Saturday, April–July, from 10 a.m. to 2 p.m. and the last Saturday of every month, August–October, from 10 a.m. to 2 p.m. Mountain Flower Dairy runs on love, goat milk, enthusiasm, volunteer hours and donations. Traditional Ricotta MOUNTAIN FLOWER DAIRY FARM DIRECTOR MICHAEL MONTGOMERY SHARED WITH US HIS DIY, CREAMY RICOTTA RECIPE.

| METHOD | 1. Use whole milk 2. Add 2 teaspoons citric acid per gallon of liquid (dissolved in

1 cup cool water). Add 1/2 of this citric acid solution to the milk (save the rest of the citric acid). Stir briskly for 5–10 seconds. 3. Add 1 teaspoon salt 4. Heat the milk slowly on low-to-medium heat, stirring well

to prevent scorching 5. At 165–170 F watch for small flakes forming in the milk and

the separation of small curds. If, after a few minutes, you do not see the flakes forming, add more of the citric acid until they form (do this in small 1-teaspoon increments to avoid over acid milk). 6. Continue heating to 190–195 F then turn the heat off. The ther-

mal mass of the whey will hold at this temp for quite some time. The higher temp is used here because of the additional proteins found in whole milk vs. whey. 7. As the curds rise, use a perforated ladle to gently move them

from the sides to the center of the pot. These clumps of curd will begin to consolidate floating on top of the liquid. 8. Let the curds rest for 10–15 minutes.

*** This is very important because this is the point where the final ricotta quality is assured. 9. Ladle the curds gently into draining forms (No cheese cloth

Top your favorite bread or crostini with homemade ricotta and sweet fig jam. Best with lemon shaves and a touch of fresh thyme. • TOTAL TIME: 45 MIN • SERVINGS: MAKES THREE 1/2-PINT JARS | WHAT YOU NEED |

• 2 pounds green or purple figs, stemmed and cut into 1/2-inch pieces • 1 1/2 cups sugar • 1/4 cup plus 2 tablespoons fresh lemon juice • 1/2 cup water | HOW TO |

• In a large, nonreactive saucepan, toss fig pieces with the sugar and let stand, stirring occasionally, for about 15 minutes until the sugar is mostly dissolved and the figs are juicy. • Add lemon juice and water and bring to a boil, stirring until the sugar is completely dissolved. Simmer the fig jam over moderate heat, stirring occasionally, until the fruit is soft and the liquid runs off the side of a spoon in thick, heavy drops. About 20 minutes. • Spoon the jam into three 1/2-pint jars, leaving 1/4 inch of space at the top. Close the jars and let cool to room temperature. ate Siegel first laid eyes on Jay Shimko across a crowded bar, but she didn’t think he’d noticed her. It wasn’t until she was

on her way out that he summoned her with a smile, a wave, and of course, a beer. That first encounter turned into a street-side first kiss, then a proposal at their brand-new home and, finally, a wedding three years later at Bob's Farmhouse and Oxford Farm. “Choosing a location was one of the hardest parts of wedding planning,” Kate says. “For months we went back and forth on whether we should get married in the mountains or in Boulder.” Although the big views of the mountains were tempting, Kate fell in love with a family friend’s farm just outside of Boulder. Upon visiting, she started daydreaming about the ceremony in the field with the Flatirons in the background, cocktail hour next to the fishing pond and the reception in what felt like a secret garden. “From that moment on, the mountain resort wedding was a distant memory. We knew this was the place!” she says. For their Regal Americana-themed wedding, Kate and Jay put as much of themselves into the day as they could fit. “When planning the wedding, I was passionate about putting pieces of our lives and personality into the décor,” Kate says. Among the personal touches: Michigan cherries (an homage to Jay’s home state) made appearances in tablescapes; pieces of fencing from their home were re-imagined as menu and bar signs; the signature cocktail was a ‘Zingerita’ in honor of Kate’s dad’s former company, Celestial Seasonings; groomsmen wore fly fishing boutonnieres, an ode to Jay’s passion for fishing; and reception tables were named after cities the couple had visited together. Even the date, July 4, 2015, was meaningful. Kate works in politics and has an intense pride for the United States. As the new Mr. and Mrs. walked back up the aisle, each guest waved an American flag.

“What a visual!” Kate says. “Each decision was made with a memory and a passion in mind, which added so much meaning and intimacy to such a special day.” Even though the wedding took place in a rustic, outdoor setting, the couple’s formal décor and ‘Colorado Black Tie’ attire made for a sophisticated event. Elegant chandeliers and gold silverware mingled with gold-painted antlers, while Pastures of Plenty catered a lofty farm-to-table dinner of halibut and short ribs. “I loved incorporating a juxtaposition of an all-American rustic wedding with regal, elevated details,” Kate says. Following the wedding, the couple escaped to a Michigan lake for a mini-moon, where they had time to unwind and reflect upon their wedding weekend. Then, in February, they took their real honeymoon to Grand Exuma, Bahamas. “It was heavenly,” Kate says. “We even swam with pigs!”
