Bring on the hops! O

nce upon a time, a place that served Newcastle and Sam Adams was thought to have a “good” beer list. The times have certainly changed. If you are a hop head, there is no better place to live, than Boulder, Colorado. The industry is literally changing before our very eyes. Brewers are constantly pushing the boundaries on hop variations, aging techniques and wild yeast strains.

In the mid-2000s, I had become quite bored with the standard Wheat Beers and Amber Ales. Sierra Nevada Pale Ales in the parking lot of Phish shows were my transition into hop-forward selections. Once I developed the affinity for Pale Ales, I soon pushed through to the most glorious category of beers (in my humble opinion), the India Pale Ale. My palette has enjoyed being wrecked by hops ever since. For obvious reasons, this issue was especially fun for our team. Make sure to check out our Parting Thoughts segment. This month, Charlie Papazian (godfather of craft beer) spotlights some of his favorite relics and historical trinkets from the early days of micro brewing. Although I have not ventured into the art of making beer yet, I do have some of my favorite, related standbys below. Cheers to all of the beer geeks and brewers. This one’s for you!

Around Town NATIONAL OYSTER DAY AT JAX FISH HOUSE Jax Fish House & Oyster Bar are celebrating National Oyster Day with free oysters and incredible specials once again. HARPETH RISING PERFORMANCE IN BOULDER

JACK'S BENEVOLENT BASH On Sunday, August 2, The Post Brewing Company will host Jack’s Benevolent Bash, an annual event that benefits The Autism Society of Boulder County and The Jack Ferrigno Send a Kid to Camp Grant. Jack’s Benevolent Bash will bring together The POST’s chef, brewer and restaurant friends from across the country to cook, eat, drink and play together. Chef Brett Smith of The POST created the Jack Ferrigno Send a Kid to Camp Grant in 2012 in honor of his dear friend John Ferrigno's son Jack, who had autism and passed away due to a seizure disorder when he was only 8 years old. Over the last three years they have raised $75,000 to send 150 developmentally challenged kids to fun, confidence-building summer camps. For the past six years, Harpeth Rising has challenged the boundaries of folk music and created a sound that is both excitingly unique and surprisingly familiar. Their virtuosic instrumentals of banjo and violin mixed with cello and foot percussion create an exciting and unique blend of musical genres that include folk, rock, bluegrass and roots music. Their original lyrics, conveyed through powerful three-part vocals, are both gritty and poignant. The goal of the competition was to get students excited and motivated to learn, especially in math, science, programming and technology disciplines included in STEM learning, in addition to teamwork and creativity. BOULDER'S ALE TRAIL The ale trail is the creation of Boulder's own Martin Mapes, though he dislikes taking too much credit for the idea. The trail was created by making the connection between all the breweries sprouting up in the Boulder and Longmont areas and their close proximity to the Longmont-Boulder Regional Trail. After the website launched in January, the ale trail gained four sponsoring breweries all along the trail, with hopes that more

breweries will begin sponsoring as well. The trail itself is almost completely flat, and the scenery alternates between suburban and rural. The path winds its way through housing subdivisions, past a disc golf course and through a field where prairie dogs scurry through the grass as airplanes from nearby Boulder Airport fly overhead. And there are almost no cars to be seen. Although the website and idea has only been launched for about six months, it's only a matter of time before the idea takes off. BoulderAleTrail.org

hile owner Greg Starr’s Ph.D. isn’t in alcohol distillation, after eight years – coincidentally the approximate time most complete a doctoral program – and one smooth silver rum later, Greg has earned his honorary “Rum Doctor” title. Geek Spirits is a family-run operation that includes Greg, his wife, Sherial, and their 12-year-old son, Connor. As Boulder’s first rum distillery, the Starr’s made sure to fulfill their responsibility and deliver, by perfecting their product before sharing with the public. Sherial says they have experimented with a variety of mashes in their kitchen, fermenting with different types of molasses and yeast…and tasting how they blend and interact. That process went on for years before the Starrs were confident in their proprietary blend. “The starting material (molasses and sugar cane juice) is really expensive, but the flavor you get from it is so well worth it… you want that sustainable quality for consistency,” says Greg. Not only does the Geek Spirit recipe deliver a smooth, high quality rum, it also carries a light butterscotch smell that makes the drinking experience all the more fantastic. Making liquor is a complex process in which every variable has the potential to change the flavor of the end product. Outside of the recipe, the still itself greatly determines taste and drinkability. Greg researched and operated several stills before deciding on bringing “Einstein” – a large copper still from Germany – to the distillery. Getting “Einstein” to Boulder was a mess, according to Greg. The oil spill off the coast of Texas left the beautiful contraption at sea for a month until the harbor was cleared. Then “Einstein” was put on a train to Denver and trucked to the distillery. Upon arriving in Boulder, it was discovered no one had a tool to remove the bolts holding the custom-crate – which housed the still – to the truck. So they axed the heads off of the fasteners to set it free. After that, the forklift’s fork wasn’t big enough to handle the cooker and moving the massive still became a hands-on experience. When all was said and done, “Einstein” was put together and taken a part multiple times to perfect the entire system. “The good thing is we learned a lot about how everything works, we’ve taken almost every piece off of it at least once, we know it inside and out,” says Greg. Ironically, Greg’s Ph.D. is in electrical engineering not mechanical. “Fortunately they force you to take some mechanical classes during undergrad years, it’s come in handy, especially how thermo-dynamics coincides with the steam aspect of making rum,” says Greg. You can pick up Geek Spirits Silver Rum at select area liquor stores or come by the distillery to grab a bottle and try the “Geek Old Fashioned” signature drink developed by The Bitter Bar’s owner and renowned bartender James Lee, or a green juice cocktail courtesy of Pressery juices. Greg and Sherial invite you to sit back, relax, have a drink and hopefully watch them work at their tasting room, which provides a panoramic view of the connected distillery.

oulder has long been a hotbed in the area of sustainable architectural design and green building. The healthy competition that exists between its architectural firms encourages envelope pushing and attracts attention from other markets, thus affecting change throughout the country. The Farmhouse project recently completed by Rodwin Architecture + Skycastle Construction in Boulder represents the pinnacle of the firm’s work in sustainability thus far. With LEED Platinum certification, it is the firm’s first regenerative home, meaning it produces more energy than it consumes. And it is beautiful and eminently functional to boot. CONNECTED TO NATURE

Pete and Laura Terpenning’s passion for plants, flowers and all things gardening is evident throughout their property, from the raised beds full of edible foods to gorgeous xeriscaping and permaculture gardens. Ready to build their “forever” home tailored to their lifestyle and personalities, they knew they wanted a green home that was uncomplicated and could help them feel connected to the outdoors. The couple turned to Rodwin Architecture for the firm’s expertise in sustainable design. Another draw was the combined design/ build service offering, which lends the ability to better predict and control costs through close coordination and preserves the original design intent throughout the process. A modern interpretation of the arts and crafts style was chosen for the home that sits in the center of the property. gives a very cohesive feel to the home and its furnishings. Connection to the landscape is achieved through careful planning and flow of the rooms, including an open view through the home and off the back porch while standing at the front door. The ability to reconnect with the landscape is architectural, but also functional by allowing a cross-breeze. “We really wanted a warm and cozy home and loved the idea of feeling surrounded by all of the gardens,” Laura says. “Now that it’s done, it’s so what we wanted.” SIZE MATTERS

The Farmhouse size is among its green features since smaller homes are naturally more sustainable. At just 2,800 sq. ft. of living space after removing the double wall system, the design had to include creative built-in shelving and multi-tasking of the rooms. The upstairs sewing room, for example, doubles as an extra guest bedroom and includes a custom wall bed that, when in the closed position, has pieces that fold out to create the sewing table. The design also includes creative built-in shelving, such as shoe cubbies under the stairs in the entryway, shelves in the kitchen’s center island and bookshelves in a reading nook at the top of the stairs. Lead Designer and Project Manager Kirsten Snobeck, Assoc. AIA, LEED AP, compares the built-ins to a ship’s design. “Each square foot was maximized by creating spaces and little nooks and crannies for the things Pete and Laura needed,” says Snobeck.

HOW GREEN IS GREEN?

Although there are several scales to evaluate green building practices, the U.S. Green Building Council’s LEED, or Leadership in Energy and Environmental Design, certification system is widely recognized as the most established and robust measurement. It evaluates projects based on things like site design, use of native species, water reduction, air quality, use of recycled materials, deconstruction of the existing structure and diversion of materials from the landfill. The Platinum designation of the Farmhouse is exceptionally hard to achieve, and only a handful of homes have achieved this in the country. Perhaps an even more impressive outcome for the project is the Home Energy Rating System (HERS) rating of negative eight. A rating of 100 would mean the home uses 100 percent of the energy per square foot allowed in building code. A negative number means the home is truly generating much more than it uses. “This allows the Terpennings to charge their new electric car from the home’s extra energy and still get a check from the utility company each month,” says Snobeck. IMPACTING PEOPLE AND PLANET

Principal Architect Scott Rodwin, AIA, LEED AP, has been personally involved in driving change in the building sector since arriving in Boulder in 1992 and opening his firm in 1999. The USGBC reports that buildings are the largest single sector consumers of energy and the largest producers of waste, more than both transportation and industry. "What we do with buildings has perhaps the single largest impact on the planet," says Rodwin. “With this project, as with any, we’re not just looking at the architecture,” says Rodwin. “We look at the clients’ total life goals and see how what we build for them can support that.” 36

hen a Colorado summer comes around there is no reason to stay inside. That’s why Leah Colby of La Dolce Events, Chef Hosea Rosenberg of Blackbelly restaurant and Crystal Sagan from 3 Chicks Bartending decided to collaborate on an elegant, farm fresh dinner served right at the source. Lone Hawk is a working farm located in a charming, secluded area just outside the City of Boulder. Colby, the event’s organizer, loves the farm’s location because of its stunning views of the Front Range and the surrounding countryside. “It’s perfect for a serene, alfresco event,” she says. Typically when one goes out to dinner you drive to the city, in this case you are driving away. All the way down a modest dirt road until you reach a red barn, the soft glow of stringed lights and the natural serenity of farm living. “I love Lone Hawk. The people who own the farm set the mood- relaxed, natural and fun. We utilize some of their produce and we love the setting. Such a magical spot,” says Chef Rosenberg. CONTINUED >

The guests included family, friends and local community members who appreciate locally sourced, farm fresh food (and drinks). Crystal Sagan of 3 Chick Bartending had organic, creative cocktails from the start, and later paired wine with the four-course meal, all prepared with fresh, local ingredients. The dinner included seasonal fruits with salmon, garden-fresh lettuce and burrata, and Front Range steak. “When I was very young, we lived in the mountains and raised goats and grew almost everything we ate. We traded with the neighbors who had chickens,” says Chef Rosenberg. “So living off the land and eating what you


grow was something I learned at a very young age. I’m happy to be back on that program as an adult.” The relaxed, outdoor setting brought individuals together where there was warmth from the fire pit and wellfed smiles. Not only was the event a success, but it also benefited Attention Homes, the non-profit organization that helps youth in crisis here in Boulder. It was a fine evening where laughter, conversation and music filled the air. CONTINUED >

The Rise and Return of Sour Beers

I

n the land of beer and mountains, where breweries are our neighborhood gathering spots, most 5th graders can tell you the difference between a Pale Ale and an IPA (not by taste, just in theory), and a kegorator in the office is as expected as health benefits, we cherish our beer, we take immense pride in our breweries, and we love trying new styles. One of the newest styles to hit the scene is the sour beer. And by new, I mean old. Really, really old. In fact, essentially all beer was sour until around the mid-19th century, when the understanding of microorganisms, fermentation and sterilization gave brewers control over the “wild” bugs in the suds. At that point outside of a few breweries in Brussels, sourness was taken out of beer, favoring instead an exploration of crisp, bitter, malty and other flavor notes. Now breweries across America, taking a cue from those few time-honored breweries in Brussels, are embracing sour beers to the delight of beer geeks and mainstream drinkers alike. Sour beers, as you might imagine, are characterized by a tart taste and a higher pH than most beers. They can range from earthy, to crisp, to smoky, and beyond, but all maintain at least some degree of puckering. These flavors are developed by purposefully infecting, or inoculating as the preferred beer term, the beer with the “wild” bugs and yeasts that other beers fear, and then letting them sit in oak barrels for at least 6 months, often 2-3 years, or even longer. There are three main “wild” players in this game, each bringing their own unique flavor notes. Lactobacillus and Pediococcus, called as Lacto and Pedio in the beer world, are strains of bacteria that consume sugars and produce acid. Brettanomyces, known as Brett, is a yeast that can

consume most three-part sugars, and gives a beer slight acidity and plenty of earthy or funky flavors (sometimes getting the description of “horse blanket,” but in a good way, promise). With all this sugar consumption going on, sour beers for the most part end up very dry along with the tartness. To offset this dryness, fruit is often added, creating a wonderfully delicate and complex character. Fruit inclusion or not, these beers bring a new engaging quality that is food-friendly, interesting and fresh. The most intriguing part about this entire process might be that it tends to be more nuture than nature. Let me explain. With most beers, the brewer can control the process, the elements, the ingredients…the “nature” of the beer, creating exactly what he or she intended. When it comes to sour beers, the inclusion of these “wild” bacteria and yeasts take some of that control away, relying on the “wild” yeasts and bacteria that happen to come in contact with the beer, in other words…the “nurture.” Sour beers are often created in containers left open to the elements (called a coolship/koelschip) before aging in oak barrels, meaning that any of the bacteria and yeasts in the air, on your clothes, in the brewery can simply fall in and leave their mark along with any of the “wild” bugs the brewer might mix in. This lack of control, this sense of happenstance, gives sour beers a touch of mystery and luck. Mystery aside, these beers are popping up everywhere, engaging a unique side of our taste buds with every sip. From funky, to zingy, to simply slightly tart, sour beers are becoming a cherished style and are certainly worth a try if you’re not already in the fan club. Promise. CONTINUED >

A

ccording to the American Homebrewers Association (AHA), there are currently 1.2 million homebrewers in the United States. This should surprise, well, no one in Colorado. Boulderites don’t need to look far to find beer made locally. In fact, our brewery selection rivals New York City’s Starbucks-on-every-corner. Overpriced lattes step aside, this is beer we’re talking about. And if we’re talking about beer, we’re talking about hops. Fueled by both the homebrewing and grow-yourown-food revolutions, many city residents have taken to growing their own hops and bringing their favorite brew even closer to home. Why grow your own hops? Many homebrewers find that planting, growing, and harvesting hops at home is much cheaper, easier and more rewarding than picking up from a store. Since hops are perennial plants, they will return every year and bestow a harvest. They need little space to flourish, and allow for an important connection to be made between the brewer and the final product, the beer. Hops are perfect for novice planters and green-thumbs alike. They need 6-8 hours of sun per day (no problem for Colorado residents),

and ample water (this one is important). With proper care, hops can grow up to 20 feet in their first year. Plant hops on a trellace or arbor and watch them “climb” throughout the summer. Some plants can generate up to 6 pounds of cones in one year! It is important to note that hops can be dangerous for dogs and other pets, so grow away from where man’s best friend(s) will be hanging out. Just as there are numerous varieties of beer, so are there with hops. Deciding which hops to grow based on your particular tastes is crucial to getting the beer you want. There are dozens of different types of hops, sometimes separated by region. For simplification purposes, these hops are divided into two categories: aroma hops and bitter hops. Aroma hops are used primarily as a finishing hop and produce, well, aromas. Bitter hops are used to flavor the beer and are extracted in the boiling process. The addition of hops is a creative process as well as a 'step' in the brewing recipe, and brewers often find new and CONTINUED > exciting ways to flavor his or her favorite beer.

• Hops grow on bines (not vines). Bines need a support in order to grow upward, while vines can climb on their own. • Only female hops are used in brewing. • The hop bine can take up to three years to mature. • At the end of the growing season, hop bines can be made into wreathes and other crafts. • An old Appalachian folk remedy for sleeplessness involves stuffing hop bines into a pillowcase. 1.STERILIZE Rinse all equipment with unsented soap to ensure cleanliness of beer. 2. BOIL Bring 1 gallon of water to boil. 3.ADD MALT Turn off heat and add malt extract being careful to dissolve all of it without letting it settle to the bottom. 4. ADD HOPS Turn heat back on to a rolling boil and add the hops. Boil for 30 min. Now you have “wort.”

5. PITCH Fill a sanitized fermenter halfway with cold water. After 5 minutes, add wort, then enough cold water to add up to 5 gallons. Wait till the temperature reaches between 70 and 75 degrees, then add or “pitch,” the sanitized yeast. 6. OXYGENATE Use an airlock filled with no-rinse sanitizer to seal the fermentor. Give it a hearty shake for a minute to oxygenate, then limit shaking.

7. FERMENT Store the fermenter for three to four weeks at 65 to 75 degrees in a dark area. Do not disturb it during this process.

9. BOTTLING BUCKET Remove the sugar-water mixture from heat and add it to a sanitized bottling bucket. Use a autosiphon or racking cane to transfer the liquid into the bottling bucket from fermenter.

8. CARBONATE To prime the beer for carbonation, bring 2 cups of water to a boil, add 5 ounces of priming sugar and boil for 10 minutes.

he term “Colorado-made” has meant something reputable to craft beer circles for some time now, but it wasn’t until last year that Boulder decided to share that prestigious slogan with craft beer fans at the inaugural Boulder Craft Beer Festival. Last year, the event organizers had anticipated only a maximum of 2,000 people and within 30 minutes of opening the gates, the festival had sold out of tasting glasses. ummer might be in full swing and the sunny weather may have most of us outdoors, but that doesn’t mean you can’t still hit the gym. There’s a new spot in town that’s gaining a lot of momentum called Beat Cycle. It’s a full body workout that’s much more than just an ordinary, run of the mill spin class. Beat Cycle opened last September. “We’re known for being a dance party on a bike,” says Hilary Cruz-Abrams who co-owns Beat Cycle with her husband, Carlos.

They founded the company after moving to Boulder from New York a few years ago and they felt frustrated they couldn’t find the same type of spin classes they had grown accustomed to attending and teaching. Hilary and Carlos met in college as varsity athletes and share a love of sports. “We opened on University Hill partly to get the college population addicted to fitness,” says Hilary. “It’s all about the beat of the music.” Some might says it’s also all about the lights, which are colored and ref lect off a disco ball. Black lights are also used and the class is always as dimly lit as possible to alleviate any self-consciousness people might have.

“It’s a huge hit in the college community and the Boulder community at large,” says Hilary. The indoor cycling classes are fast-paced and highly energetic. Most of the time you are not even sitting on your bike saddle. Local Limelight WHERE DID THE IDEA OF JAZZ ON 2ND AVE COME FROM?

Jazz on 2nd Ave came from four guys, Howard Treppeda, Brad Goode and Don Grusin, but Howard is the real reason the festival exists. Years ago, Howard was hosting live music at his restaurant, Treppeda’s, where Brad Goode, a professor of jazz at CU was playing that night. Don Grusin, a legendary American jazz musician showed up that night to hang out with Howard and to hear Brad play. That night, Don suggested that the town of Niwot needed a Jazz festival, and Brad and Howard jumped on the idea. WHAT WERE EVERYONE’S INDIVIDUAL ROLES IN BRINGING THE FESTIVAL TOGETHER?

T

he highly anticipated fifth year of Jazz on 2nd Ave returns on August 13, 14 and 15, for its biggest year yet, as the masterminds behind J2A bring Niwot big headliners, delicious food and drinks and a feeling of community through music that is fit for any musical preference. I had the pleasure of sitting down with one of the festival’s founders, Gene Malowany, for an exclusive interview on how far the festival has come and how it will continue to grow and flourish in the future.

Like I said, the festival would not take place without Howard, but everyone involved has a unique musical background that allowed the festival to develop into what it is. Howard’s father was a jazz musician in New York for a number of years, so Howard grew up with a passion for music, but ultimately was successful as a businessman in the restaurant industry. Treppeda’s Ristorante was able to incorporate Howard’s musical background by hosting live music every Thursday night. Don’s experience came from his legendary playing, producing and writing which allowed him to help organize musical acts. Brad’s incredible talent, and knowledge of the jazz world were the connections the festival needed to bring in internationally acclaimed artists. Although he does way more than book the acts! I grew up playing music but ended up being drawn to art and eventually wound up in the branding and design world as a creative director. That’s my role in the festival and in Colorado Jazz Group—so I get the best of both worlds. WHAT WAS THE ORIGINAL VISION OF THE FESTIVAL?

Originally, the vision of the festival was to bring people together through free jazz music, but has become so much more. The festival has evolved into Colorado Jazz Group, a non-profit which now presents and produces Jazz on 2nd Ave, while also serving as the epicenter of jazz in Colorado. CJG is dedicated to supporting jazz education in schools, mentorship programs, and top-tier jazz performances in Colorado. One of the mentorship programs is the CJG Lions. WHAT TO THE CJG LIONS DO?

The CJG Lions is a mentorship program where five gifted kids are selected by Brad from all over Colorado to come to Niwot a few days before the festival begins to work and rehearse with the headliners of J2A. Following these rehearsals, the Lions launch the festival at 11 a.m. on Saturday, August 15. WHAT CAN WE EXPECT TO SEE FROM THE FESTIVAL THIS YEAR AND IN YEARS TO COME?

This year, you can expect another high energy year with headliners Aisha deHaas – the leading Broadway vocalist from New York, and Howard Levy – the world’s top harmonicist and cofounder of Bela Fleck and the Flecktones, as well as Donald Harrison and Big Chief – legendary New Orleans saxophonist and his super funky band. Along with a pretty stacked lineup, guests can expect to enjoy gourmet food vendors like Treppeda’s and L’Atelier. Also look for local breweries and definitely find the Sangria tent. 72

This year, we’re really stepping up our game for social media during the festival with blanketed WIFI. Social media is such a great form of outreach and we want our guests to be able to use Twitter, Instagram, Facebook or any other app without any network problems. Last year, in the first two hours, we experienced 60gb of activity! Each year we make positive and necessary improvements so we can continue to be an upscale festival that has something that appeals to virtually anyone. The festival kicks off on the 13th at 6:30 p.m., with a private event featuring the Colorado Jazz Group Lions, Howard Levy and Donald Harrison at Treppeda’s Ristorante in Niwot. This exclusive musical debut caters to the authentic jazz fan who is looking for an intimate show, while also helping to support the mentorship program of the CJG Lions as well as Treppeda's Ristorante. The $50 minimum per person for this event can be used on amazing Italian food as well as drinks and is certainly a very small fee for the intimacy and spectacular music that will be experienced. Friday, August 14th will be a first for the festival as they host “Second To None,” an intimate, pre-festival evening featuring all headlining artists: Aisha deHaas (NYC), Howard Levy (Chicago), and Donald Harrison & Big Chief (NOLA) plus CJG’s Big Band. The Big Band is a 17-piece orchestra composed of the finest Colorado jazz musicians and educators. The evening is a Colorado Jazz Group fundraiser benefitting its educational outreach, in-school residencies, and mentorship programs (like the Lions). Tickets for the event are $20 at the door or online and will begin at 7:30 p.m. with food and drinks available for purchase. The free festival and main event will take place on Saturday, August 15, from 11 a.m. to 10 p.m. with international, legendary and local jazz all day. When Allie Thielens, designer and co-founder of local clothing company NINOX, heard GQ called Colorado Congressman Jared Polis the worst-dressed man in congressional history, she did what any clothing designer would do. She reached out to him to offer a makeover. “He’s a Boulder native and we wanted to introduce him to NINOX. We chose clothes for him that were professional enough to wear on his day-to-day instead of his traditional polo,” says Thielens. Polis took a lighthearted approach to the whole GQ jab to begin with. “Well, GQ apparently has it out for everything Boulder, as they called Boulder one of the 40-worst dressed cities so it 74

"Now I won't have to worry about my pants getting wet in those frequent DC downpours,or the recent ones we've had here in Boulder this year." In the end, we all know it’s not only about the clothes. Polis says, “It is what's inside that counts. Clothing shouldn't be a distraction, but it is one of the ways that we can show creative style especially in a drab place like Washington, DC. I've never really spent much time on clothes, I spend a lot of my time studying testimony, reading up on issues, and being the parent of a one- and a four-year-old. Often I just grab what I can in the closet in the morning and sometimes it leads to interesting combinations. I always try to bring creative out of the box solutions to national issues, so I guess it makes sense that my attire is a bit out of the box as well."
