es, it is true. The trends in modern design have definitely gone mainstream - and that is a good thing. Even fast food restaurants are re-facing their traditional storefronts with modern aesthetics. Of course, this doesn’t make them any more appetizing for most of us, but at least now they are easier to look at. This issue digs much deeper than the typical design features. We even have a guide to outfitting the modern dog in all the latest fashion and gadgets.

Boulder’s most modern man, Lon McGowan, has been quite busy in 2015. He launched Alpine Modern Magazine, Alpine Modern (the store), and most recently, Alpine Modern Cafe. Our “Now Open” segment introduces the new cafe at College and 9th. I suggest visiting as soon as possible, because this is about to become the Snooze of espresso bars with a line around the block. October is also officially the “Month of Modern,” which was co-founded by Kate Bailey and local architect Harvey Hine last year. Year two for this month long event is now upon us, and we are excited to be on the bill with so many great, local companies. Please join us for the wrap party on October 24th at the Boulder Museum of Contemporary Arts.

MEDICAL AND NUTRITIONAL HEMP ON THE RISE Cherie Arnold, a visionary force in the cosmetics, nutraceutical and natural products industry, announced the launch of MediQI Energetics®, a new, premium line of cannabidiol (CBD)-infused health and wellness solutions. Though derived from the hemp plant, CBD is the sober, non-psychoactive cannabinoid with beneficial health and supplement properties. The human body contains trillions of cannabinoid receptor sites which, when activated, create a heightened sense of wellbeing and balance. CBD can be ingested orally or applied topically through the skin. Indeed, CBD products now span far outside the hemp industry, and MediQI® is pioneering a new wave of formulations for the health and beauty sectors. The company has developed a proprietary formulation that delivers pure CBD extract in a nutrient-dense, bio-available liquid easily absorbed by the body. Its premium CBD-infused products will be launched this fall in limited edition through a variety of marketing and direct sell channels. MediQI®’s innovative products help people experience their innate sense of well-being and healthy life balance. The woman-owned company is developing highly functional, nutritional, naturopathic products that help to repair health, enhance energy and sustain a prime effect on the body’s physiology. BOULDER GREEN HOME TOUR Local non-profits The Colorado Green Building Guild and The Colorado Renewable Energy Society were proud to present the inaugural Boulder Green Home Tour, which took place on Saturday, September 26th. People from Boulder and surrounding areas were invited to tour the community and to step inside some amazing green homes. The homes included a wide variety of sustainable aspects including passive solar design, ground source heat pumps, solar energy systems, alternative insulation materials, the latest in window technology, non-toxic, renewable and recycled materials, water conserving plumbing and landscaping, and much more. Some of the homes were among the greenest in the nation and include LEED Platinum, Net Zero Energy and even “regenerative housing“ (making more energy than it consumes). The purpose of the Boulder Green Home Tour is to highlight some of the most innovative green building projects in Boulder and to help promote the collaborative exchange of ideas on green building in our community. One unique aspect of this years’ event was the partnership with Flatirons Habitat for Humanity to showcase one of their latest sustainable homes and donating 10 percent of the proceeds to their local projects. WELCOME TO THE MONTH OF

MODERN With the arrival of October it is officially the Month of Modern. We sat down with Kate Bailey who was the visionary behind MoM, and got the scoop about the exciting month ahead. ARTICLE DANA LAPINEL | PHOTOGRAPHY LINDSAY LINTON

32

Boulder Lifestyle | October 2015

1. L ET’S START OUT WITH THE BASICS. WHY DID YOU DECIDE TO START THE MONTH OF MODERN (MoM)?

Colorado has a rich history of modern design, but it has always taken a back seat to “mountain” and “rustic” design in national media. My mission is to cultivate a conversation about “Colorado Modern,” and present the Denver/Boulder region as one of the nation’s most vibrant hubs of modern design. With so many people moving to the region from all corners of the world, the time is ripe to showcase the incredible design talent we have in our state. Colorado’s rich history of modern design, the high quality of work and craftsmanship, and a desire to simplify our lifestyles, has fueled a resurgence of modern design in Colorado. We are excited to focus a spotlight on both the great history of modernism in Boulder as well as the incredibly talented architects, artists and designers working today. As well, Colorado has great food, fantastic weather and an active population. There are many events related to the outdoors, but not many occasions to study and celebrate design. We believe that there is a pent up interest that the public has no outlet for, and Month of Modern intends to fill the void.

will integrate thought-provoking events, contests and a Wrap Party/ Award Ceremony. We want to celebrate the businesses, organizations and individuals who elevate industry standards and drive the modern movement forward. 3. TELL US A LITTLE BIT ABOUT THE HISTORY OF MODERN IN COLORADO?

This legacy of modern design was founded in the 1940s when people began to flock to the Front Range, lured by its unmatched beauty, mild climate and a desire to pursue a more simple way of life. Boulder was at the epicenter of this architecture movement with a group of struggling architects who were commissioned to build homes for the forward-thinking university professors, artists and scientists who populated this area along the Front Range. Today, the influence of these pioneers—Charles Haertling, Roger Eason, Hobart Wagener, Gale Abels, James Hunter—can be seen and felt throughout the city, with clean, evocative designs sitting side by side with Victorian homes, 1970s office buildings, and iconic modernist homes and buildings. 4. WHAT DIRECTION IS THE CURRENT “COLORADO MODERN”

2. T HIS WILL BE THE SECOND YEAR THAT MoM TAKES PLACE IN BOULDER. WHAT ARE SOME CHANGES WE WILL SEE AT MoM15?

We are excited to have three major international brands as sponsors this year—Knoll, Sherwin Williams and Porcelanosa—which is raising the profile of the event and allowing us to create more innovative programming and reach a wider audience. Last year we had so much positive feedback on the lecture that we decided to make all of our events spark conversation. MoM15

MOVEMENT GOING?

Our region’s ranching, mining and agricultural history can seep in and roughen up the edges of ‘pure’ modernism. David Barrett of Barrett Studio Architects best described it as ‘beat to hell modernism." A certain kind of rough texture, coupled with sustainability and a reverence for the connection of indoors and outdoors, is now driving the future of Colorado modern design. CONTINUED >

Boulder architect Renee del Gaudio put it best, “The Colorado modern movement has a deep commitment to sustainability and an appreciation for the natural world. The result is a movement of thoughtful, environmentally responsible, modern design that deepens people’s connection to the natural world through architecture.” During MoM15 we aren’t looking for answers. Instead, we want to cultivate a conversation about how modern design enhances, informs and brings communities together and ultimately creates a better, more thoughtful and meaningful way of life. 5. DEFINE YOUR IDEA OF WHAT MODERN IS?

Modern isn’t a style it’s a way of life. Modern design is about simplifying. It’s thoughtful. It makes our lives easier, better, more inspired, creative and gives us the ability to create meaningful relationships with those around us. 36

Built to Last

A GREEN HOME BUILT TO LAST

ARTICLE EMILY O'BRIEN | PHOTOGRAPHY BEN TEMPER

"Ten years ago people thought being green was ordering bamboo from China," says Hindman. "Now one of the greatest things you can do is to order local."

esigned with sustainability in mind, this beautiful home was built in line with the two owners’ deep respect for the environment as well as their active outdoor lifestyle. A collaboration between Cottonwood Custom Builders and HMH Architecture + Interiors, this Colorado Modern style home uses warm, sculptural materials and forms. A curved roof helps it fit into the landscape and maintain an organic feel, while the indoor/ outdoor design plays up the area’s gorgeous weather, stunning views and distinct lifestyle. “When you’re in that living room, you feel like you’re out in open space. It’s just incredible,” says Cottonwood Custom Builders President Jeff Hindman. “This is a house that we deconstructed, really before anyone was doing that," says Hindman. Hindman goes on to say that along with the teardown, a $30K contribution to ReSource was made of recyclable and reclaimed materials that were spared from landfills. “Ten years ago people thought being green was ordering bamboo from China,” says Hindman. “Now one of the greatest things you can do is to order local.” And that’s exactly what they did. Locally sourced Colorado flagstone was used on the exterior and, in fact, the majority of materials were not only sourced locally, but also made from recycled, sustainable or reclaimed materials. For example, the wood flooring throughout most of the home was made from old railroad ties. You can still see the square holes where spikes had been drilled through, bringing in a slightly rustic design. Concrete was also purchased nearby and poured to create sleek countertops throughout and a beautiful modern hearth. Solar panels on the roof provide all of the electrical requirements and a Coolerado evaporative system keeps the home cool with minimal energy consumption. A high efficiency boiler produces radiant heat. And the house is sealed with foam insulation to create an airtight envelope. During the hot summer months, a custom designed steel trellis equipped with deep overhangs shades the high performance windows to help minimize the cooling load on the house. CONTINUED >

DON’T DIVIDE BOULDER A NO VOTE on the anti-growth ballot measures is a VOTE for Boulder’s future. Let’s manage our growth responsibly, working together as one community to meet our environmental, housing and transportation goals. These two initiatives embed in the City charter extremely vague, divisive and backward policies that will hinder many of our efforts for a comprehensive, carefully-planned, sustainable future.

LUXURY LIVING SPACES

Hindman adds, “It took one month for demolition and 10 months to build. We finished right on time and on budget.” Hindman also got creative with salvaging methods. In order to preserve two patios in the back of the home, they buried them in mounds of dirt and then after working on the top for sixplus months, they unearthed them. Still in great shape, they incorporated new white flagstone patios to create multiple outdoor living spaces while saving loads of time and materials. “The whole house just came together so well. In the 20 years I’ve been working, this was by far the best project.” "Ten years ago people thought being green was ordering bamboo from China," says Hindman. "Now one of the greatest things you can do is to order local."

A Better You with Roots of Wellness GET THROUGH THE WINTER MONTHS WITH AYURVEDA MEDICINE

ARTICLE ERICA BONIFACE | PHOTOGRAPHY LISA DOANE

W

hen we booked our appointment with Heather Baines at Roots of Wellness in Boulder, we didn’t know what to expect with the Ayurveda health care approach. Trust us when we say this: Unless you’re as healthy as Chuck Norris, you could greatly benefit from Ayurveda. “I have two types of people who come to see me—those who are at their wits’ end with their health challenges, and those who are relatively healthy but they know they can do better,” says Heather Baines, who is an advanced Ayurveda health care practitioner. Just answer this question: When was the last time your doctor spent more than two hours with you? Asking you questions about your sleep, your diet, your health care goal? Heather asked every important question you could imagine during our appointment. She really got to the roots of our problems and offered other methods to improving our day-to-day health. She focuses on Dinacharya (habits and daily schedule) to improve our overall health—such as rest, relationships, exercise, nutrition and work. We didn’t even get scolded for our love of blueberry muffins—or our unhealthy obsession with coffee.

Okay, fine. We can say that we were given a gentle hand slap to put down the muffins and end some of our not-so-appealing food addictions. Gut health is a major indicator of health by Ayurveda standards—something Heather says modern medicine is just now beginning to understand. “Ayurveda sees our diet and our body’s ability to digest the food we eat as the foundation upon which the health of the body is built,” says Heather. “The health of the mahasrotas [digestive tract] directly influences proper and balanced digestion, which creates the health of the body, the health of the mind, and the health of the immune system.” In other words: Our health begins with gut health. After our almost three-hour appointment with Heather, she e-mailed over a complete Chikitsa (an Ayurveda wellness plan) for us. She detailed over 15 pages worth of advice, health care tips and herbal suggestions for us to start implementing daily. She even provided some amazing soup recipes to help us get through the cold winter months ahead. “During cloudy, rainy or snowy weather, avoid dairy products, do not take warm milk at night; instead choose clear broths or tea as your bedtime treat,” suggests Heather in our Chikitsa. You can book an appointment with Heather at Roots of Wellness directly on her website at: RootsOfWellnessAyurveda.com. A twohour initial appointment is $250. 954 North St., Ste. 303 Boulder 303.475.9294

Heather Baines

Ayurvedic medicine is one of the oldest systems of medicine in the world, which originated in India more than 3,000 years ago. It’s not about making you feel bad for your current medical plan, but rather to help with individualized alternative treatments—such as compounding herbs or proprietary ingredients, diet, exercise and lifestyle recommendations. One out-of-the-box practice that you won’t experience with your primary care doctors—pulse reading. At the end of each appointment, Heather will read your pulse as part of your overall Ayurveda diagnosis. “This provides extraordinary information about the nature of the disease, the ease or difficulty in which a condition may be reverse or palliated, and the strength and ability of the patient to dedicate themselves to Ayurveda care.” October 2015 | Boulder Lifestyle

ith Halloween right around the corner many parents worry that they will have to face their biggest fears – candy and its three notorious ingredients; high fructose corn syrup, artificial sweetener and artificial colors. Fortunately, there are now artificial free candy options that trick-or-treaters can collect. Justin’s and Little Secrets, both rooted right here in Boulder, are changing up the candy industry and showing how tasty sweets can be made the all-natural way. JUSTIN'S

He put that plan into action in 2004, and he actually ended up pioneering an all-natural candy movement. “Five years ago there weren’t any ‘better for you’ candy options, and our peanut butter cup was one of the first to fill the gap of traditional experience for more health conscience consumers,” says Justin. Originally, the now-famous operation started with Justin making nut butter in his modest kitchen. After friends started getting sticky fingers from tasting his new creation, he decided to start expanding

Have you ever had those times in life where you just have to just do it yourself? For Justin Gold, that kind of mentality is what inspired his delicious, organic candy line known simply as... Justin’s. “I was in such distress that I couldn’t find any great tasting organic peanut butter cups where I shop, so five years ago I started making my own,” says Justin. “My goal was to deliver on the traditional peanut butter cup experience but to use only the best ingredients that are conflict free and 100 percent organic.”

Justin’s to the local farmers market, then to the local natural grocers and eventually (and quickly) his business became a national brand with loyal followers. “When I started, my goal was to become a national brand and I wrote it into my business plan, but it blows my mind that it’s becoming a reality. Every time I see our products on a store shelf or in someone’s cabinet I pinch myself,” says Justin. LITTLE SECRETS

It’s not surprising that most of us love candy, chocolate and – well – candy-coated chocolate. Constantly you have to fight that urge to snag the M&Ms that haunt the grocery store checkout. Well forget about the M&Ms and get acquainted with Little Secrets, artificial free and imagined right here in Boulder. “I decided to take one of America’s favorite forms and put in the most delicious Fair Trade chocolate I could find, and take out all of the gross artificial colors and flavors,” says founder Chris Mears. Little Secrets uses fruit and vegetable extracts to create all of the bright, fun and beautiful colors. So they’re healthier right!? “We don’t encourage you to replace your kale salad with Little Secrets,” says Chris. Not the answer I was hoping for but you can at least feel better about indulging on these all-natural treats, and maybe sharing some with your kids. “Growing up, M&Ms were my favorite but as I learned more about natural foods and the abundance of chemicals in processed food, I realized I not only didn’t want to put chemicals and artificial flavors into my body, but I also didn’t want to give them to my friends and family,” says Chris. The solution to this problem – Little Secrets. The next problem is whether or not you’ll want to share. ShareLittleSecrets.com

he immediate juxtaposition between the modest stonewalled exterior against the stunning, white modern interior makes this small, but mighty coffee shop instantaneously stand out from the crowd. Having opened just a few short months ago in mid-summer, Alpine Modern Café has already made a name for itself. This doesn’t come as a surprise though. The growing Alpine Modern brand’s mission is to elevate the modern design and lifestyles of mountain communities around the world. You may have noticed people around Boulder reading Alpine Modern Magazine or sporting one of its wool hats or daypacks from its apparel line. Founder Lon McGowan’s distinctive look blends architecture, design and functionality and marries it to warmth—all of which are very apparent in the café building’s remodel that McGowan spearheaded. It’s all about clean lines and contrast, but in an approachable way.

“It was all very collaborative, even down to the milk pitchers. The systems put in place behind the bar make crafting great coffee easier, leading to the customer interaction being the center of focus,” says assistant manager of the café Abigail Baum. That intention and thought behind each product and item is evident—seen in the amber colored, reusable coffee bean jars. Cherry-picked purveyors include Huckleberry Roasters and Middlestate Coffee, who café managers Alex and Abigail Baum had strong relationships with from working at a previous cafe. “We get to handpick things that we know people do well. The fact that bigger roasters were willing to work with us when we said we wanted to change their bag…it really gets us excited about all the vendors we’re using,” says Baum. Despite its modern interior, the café itself is anything but stiff. No, sir, it’s quite the contrary—incredibly warm and welcoming— charming even. The barn-like ceiling, crisp white walls, large artistic light fixture, beautifully handcrafted walnut furniture—to name a few—all work in tandem to create a light and airy feel. You’ll find a large community table topped with a succulent centerpiece. Contemporary artwork adds little pops of color. And the service behind CONTINUED > the counter is undeniably friendly. oving to a new place is one of the most exciting feelings to experience, but along with excitement also comes the feeling of not being ‘in the know.’ Kelly Cope Russack, Addrienne Amato and Lee MasseyHeekin all moved to Boulder between 2010-12 and felt like they couldn’t break into the already-established art scene. Fortunately, they all met each other. “In typical Boulder fashion, we all had connections from our previous lives: from high school, graduate school, local playgrounds and overlapping friendships,” says Kelly. “While standing at the kitchen counter, Addrienne and Lee began conversing and quickly realized they had studied at graduate school in New York together. The crazy part is that they didn’t recognize each other by face but by their work.” As the new artists in town, Addrienne and Lee were eager to get back to the studio and be part of the local art dialogue, so the three new friends decided to take action. “With Kelly will“by showing work in familiar ing to open her spaces, we believe the viewers home to an intican feel comfortable show- mate crowd showing up on a friday night in casing her friends’ going-out-attire or friday artwork, the Boulafternoon bike clothes,” says der Creative Collective (BCC) was russack. “all are welcome.” born. We found that our newish friendly community didn’t have an art scene we were connected to, thus building community around art became our intention,” says Addrienne. The first event was a success with roughly 50 supportive friends from various social circles showing up to enjoy the pop-up art show, Touch Taste View. “Originally we had thought we could keep things intimate by showing in private residences; as our numbers grew, we had to seek alternative venues,” says Lee. At the most recent "Burnout" pop-up, Sanitas Brewery became the stage for Collective viewers.

Architecture Extended Tomecek Studio Architecture does more than just design a home; their vision is to design an overall experience that positively impacts the lives of those who use the home. Client + Architect + Task + Place.

ARTICLE BY EMILY O'BRIEN PHOTOGRAPHY BY RAUL GARCIA AND STUDIO HT

B

rad Tomecek, founder and owner of Tomecek Studio Architecture, approaches building in a different way. His boutique design firm operates on the progressive edge of its field, while fundamentally concerned with issues of space, light and texture, it’s underpinned by an exploration of “how to build.” In order to provide creative solutions to specific circumstances, it employs research-driven processes that yield efficient and unique solutions—believing quality is the ultimate measure of value. “We’re more academic than most firms,” says Tomecek, who is no newbie to the world of architecture. For over a decade, he was co-owner and co-founder of Studio H:T before he launched Tomecek Studio Architecture in 2013. He’s also been on the board of directors for AIA Colorado North and AIA Colorado Denver and currently lectures at University of Colorado Denver. Tomecek says, “Construction technology is hundreds of years old, and while other industries have rapidly adopted new fabrication technologies, the fields of architecture and construction have been averse to exploring similar possibilities. In our own small rebellion, we have explored modular prefabrication with shipping containers and wood-frame boxes, panelized prefabrication with Structural Insulated Panels and German eco-panels, and are currently reviewing opportunities to utilize cross laminated timber panels in construction.” The firm also leans heavily on the systems side and openly admits to obsessing about the different natural elements that come into play with how a building will function. “In theory, if you know the answers to how the wind, sun and weather work, the houses almost design themselves … almost,” says Tomecek. 66

Boulder Lifestyle | October 2015

With invigorating energy and zeal, the studio visually captures the essence of what clients’ desire, devises a plan and then constructs it using a variety of methods. Most clients want one-of-a-kind, creative structures either commercial or residential. Some projects involve introducing high quality design to a prefabricated factory setting. “One house concept can be based completely on light, while another could be based more on technology,” says Tomecek. “Prefabrication is only a small fraction of our work.” PREFABRICATION

Tomecek Studio Architecture’s approach to prefabrication is one of the many tools it utilizes under the right circumstances, the goal being to marry architecture and design to a manufacturing process in hopes of producing a unique project within an efficient time schedule and effective budget. “In the world, we manufacture tons of things, but housing has never really caught on,” says Tomecek. “You need someone overseeing it with a designer’s eye. It’s about balancing both manufacturing and design worlds.” CONTINUED >

ALPINE RESIDENCE

A unique 40-foot-wide property, this stunning residence blurs the distinction between interior and exterior space. It also focuses a significant amount of attention to the Flatirons. Constructed with a sophisticated German prefabrication system, the Alpine Residence was planned in the technological realm and approached with a strong eye for high-end, high-quality German design. The insulation values were almost twice the American standard. Window values were also way ahead of their time. The house was designed to the LEED Platinum standard. Panels were crafted in Germany and then shipped to Boulder; the whole house was erected within 10 working days. 68

Boulder Lifestyle | October 2015

“The humble transparent entry elevation is based on a series of north-south solid walls that are connected with storefront glass. This experience unfolds moving through the residence until the occupant is hovering on a deck three stories above the rear yard – ‘floating’ in the trees,” says Tomecek. Since you’re building large elements of a pre-fabricated house under a roof and it’s not susceptible to weather, projects don’t endure typical weather delays. There is also considerably less waste with prefabricated homes, which is great for the environment. Tomecek adds, “It’s really about looking at how me might build better and for the future.”

s many of you probably already know, the normal dayto-day business usually revolves around our beloved hounds. Feeding, walking, cuddles and love are all included in the daily agenda. Although we give them a hand here and there (thanks to our nifty opposable thumbs), our canine counterparts put in their share of help, too. For example, dogs keep you honest in your outdoorsy lifestyle by insisting on going outside in the rain or snow, and everything in-between. So in honor of man’s best friend, we want to introduce you to some of the furrier Boulderites you might meet around town. And as the old saying goes, ‘every dog has its day.’ And CONTINUED > today – these dogs had theirs.

NOTEWORTHY NON PROFITS ROCKY MOUNTAIN PUPPY RESCUE (RMPR)

A group of hardworking fosters and volunteers who work to save the lives of unwanted dogs, puppies and various animals in and around the Colorado area. They focus on the younger animals that, when dumped in a shelter, are often exposed to disease and experience lack of socialization, literally killing their chances at becoming balanced adult dogs. RMPR has successfully rescued and rehomed 2,500+ animals and is still going strong. FRONT RANGE RESCUE DOGS

Founded in 1984, Front Range Rescue Dogs is an experienced and dynamic non-profit volunteer group committed to providing competent canine search and rescue teams to missing person emergencies. They certify teams in Wilderness Air Scent, Wilderness Trailing, Avalanche, Evidence, Disaster, HRD and Water. The group is available to respond 24 hours a day, 365 days a year. GET INVOLVED: If getting out of bed at 2 a.m. and driving into the mountains to search for a missing person in a blizzard sounds like an adventure you would look forward to, then this might be the group for you. HUMANE SOCIETY OF BOULDER VALLEY

Every year, animal shelters around the country receive more dogs and cats than they can possibly find homes for in their communities. The humane society know what that's like and strive every day to find homes for all of our adoptable pets. While they still have some pet overpopulation issues, our community has done a great job in focusing on the importance of responsible pet guardianship, including spaying and neutering their own pets to decrease pet overpopulation in and around Boulder County. GET INVOLVED: There are tons of volunteer opportunities for every type of schedule or adopt a pet! CONTINUED >

our Noses Brewery is just that. What started during a family trip to Ireland has made its way back to the States as a family-run, dog-friendly brewery in the heart of Colorado’s Front Range. The original “four noses” of the operation are owner Tommy Bibliowicz, brother David, mom and dad. Of course, growth is essential to any operation, and the addition of Tommy’s wife Megan makes the nose count currently five (human noses, that is). Located just off Wadsworth Parkway in Broomfield, Four Noses sits at the far end of a very dog-centric cluster of businesses. The spacious patio, complete with a fire pit perfect for every Colorado evening, backs up to a small grassy incline. Backyard meets brewery at Four Noses; add in the visiting food trucks and prepare to be transported from suburbia into a hop-infused utopia. All beer concoctions are developed by Bibliowicz and brewer Charles Noll. Taps

But, a slight modification to a Bob Dylan quote yields, “the beers they are a-changin,” and fall will offer a new range of taps from which to choose. Almost as integral to the brewery as, well...beer, are the canine companions. Bibliowicz recounted a hike Megan and he took with their three dogs, Mash, Porter and Dakota, to explore one of Colorado’s hot springs. When they reached the trailhead, they found the disheartening “No Dogs Allowed” sign that any fan of the fourlegged knows so well. The lack of inclusion bothered both Tommy and Megan, and the group turned around. Thus, Four Noses is 100 percent dog friendly. As in, not just the patio, or the parking lot, but the taproom as well. Bibliowicz says his favorite aspect of their business is watching their ideas come to fruition. With two of the four "noses" in architecture, design comes in at number two following only the beer. A quick visit to the website (4NosesBrewing.com) shows how true that is. visit to an art museum. All branding is done in-house including the labels affixed to the cans distributed from the brewery. Distribution is the word of the year for the Four Noses crew. Since February of 2015, Four Noses has released eight varieties of their beers in cans. More will follow come fall and winter, allowing the brew crew to expand their ways of getting their craft to customers. When asked to pick a favorite, Tommy Bibliowicz comes right out and says it’s “impossible.” Each batch brewed at Four Noses is individually crafted by brewers based on what they love to drink. Each change of season, meal and even feeling influences which beer is fit for a particular moment. “At the end of the day, everything here is brewed with the mind set: this is the beer we want to drink, and hopefully there are people out there that agree,” says Bibliowicz. Bravo.

a community culinary hub FOOD LAB BOULDER ARTICLE EMILY O'BRIEN | PHOTOGRAPHY COLLEEN KELLY

ood Lab Boulder opened its doors this month. It’s the brainchild of personal chef Casey Easton, who sharpened her culinary skills through years of catering and showcasing her mouthwatering bites at farmers markets around town. Easton also is a recipe tester and food developer for Vegetarian Times. The mission at Food Lab is to help enhance the level of culinary skills, food and wine knowledge to the community in an entertaining and informative way. Easton has purposely decided to go without a professional program; Food Lab is strictly a place for those who love food, want to learn more about it and have fun while they're at it—say by mastering a new dish while on a date with a glass of wine in hand. Easton wanted to have a cooking school in an exciting, relaxed environment and saw the need for a more intimate, yet casual event 82

space in Boulder. Food Lab combines all those needs into its impeccably designed, functional dream kitchen and event space. As a 2000+ square foot kitchen on Pearl Street, Food Lab welcomes all types of students from seasoned home chefs to new-to-cooking college kids. Even mini chefs, as young as age six, are invited inside. Hands-on classes are offered in a wide range from hog butchery to pickling and canning. Not to mention sushi, pasta, tacos, breads, salads and soups– there is something to delight the pickiest of palates. Adult classes function as one-day workshops, each three hours in length, which is nice for those with busy schedules. All end with a tasting and recipe to take home. Teaming up with ambitious local chefs to teach classes and create unique menus for culinary-based classes, also allows them the ability to create a platform to present themselves on a broader public stage. “All the teachers will be different. So there’s no head chef. It’s very collaborative,” says founder and creator Casey Easton. Students who don’t want to even pick up a knife can still participate—something Easton realized throughout her years of teaching. “Sometimes people just would rather sit back and enjoy watching the chef cook while sipping a glass of wine,” says Easton. “Demonstration dinners allow you to do just that.” Since it’s a multi-dimensional space with a stellar kitchen setup, Food Lab has already been utilized for culinary video production. It’s also a great venue for groups and hosts corporate events, bachelorette parties, receptions, etc. You can even book it just for the space and have food platters delivered from GB Culinary or its neighbor Cured. After years of sampling classes all over the country, Easton has appeared to assemble the right recipe for success. “I really got to see what works best at all the places I visited. And then I got to take out those pieces I thought would work well in Boulder,” says Easton. A community culinary hub growing roots in a foodie town. Naturally, Food Lab aims to fulfill all the unique Boulder food needs, which is music to the ears of Paleo and Gluten-Free followers. New classes and menus are constantly being added, but most three-hour lessons are $75 per person. 1825 Pearl St. Boulder 303.349.5553 FoodLabBoulder.com October 2015 | Boulder Lifestyle

modern kitchen demands style. From the simple egg cracker to pots and pans, each necessary kitchen gadget is an opportunity to express a contemporary look. Even the simplest kitchen tools can make a statement. Don’t be afraid to mix black, white and grey basics with pops of color to keep things interesting. Either incorporate two to three colors, or go wild with all of the colors of the rainbow. But most importantly, remember to always shop for function but keep style in mind.

Home Matters

MINIMALIZE YOUR SPACE ARTICLE SHERYL HADLEY OrganizationAndRelocation.com

Living in a cluttered home or trying to work in a cluttered office is an exercise in frustration. Car keys get swallowed up, you can’t locate your important report in time for your meeting, or you replace something you can’t find only to have the original turn up shortly after. Isn’t that the worst? Make sure that never happens again by getting clutter under control... one random sport sock at a time. FIVE WAYS YOU CAN SHOW THE CLUTTER IN YOUR LIFE WHO’S REALLY IN CHARGE.

1. Just get rid of these things--I mean, seriously: why are you keeping them? 2. If you’re so overwhelmed that you don’t know where to begin, try starting with one small area that haunts you the most - a section of kitchen counter, a small table top. 3. Pick up five things, and return them to their proper location. These should be items you’re used to seeing deposited on counters or floors: mail, the dog’s leash, a newspaper section, your daughter’s hair clip, random sport socks. If you don’t have a designated place for them, think about one that would suit, and start using it all the time. 4. Give yourself the gift of a “Maybe” box that you can put things in for now. Sometimes, even though we know we should get rid of something, we can’t quite let it go. Look at the random selection you’ve kept a few months down the road--chances are it will all go straight to donation. 5. Be a more conscious shopper so that you’re not filling your decluttered home with more clutter. Whenever you see something you want, add it to an ongoing list with the date you first saw it, and then revisit the list 30 days later. You may find when you check back that the urge to purchase it has gone. And if you do decide to get it, at least you’ve given the item the time and consideration it deserves.

6 ITEMS TO PART WITH TODAY! • Trash • Broken items • Duplicates • Items you hate • Gifts you never bonded with • Any gadget unused for a year 88

OH, LADY CAKES TAKES A CREATIVE (AND DELICIOUS) APPROACH TO SEASONAL FALL FOODS. RECIPES AND PHOTOGRAPHY ASHLAE WARNER ASHLAE WARNER OF OH, LADY CAKES!

Denver-based vegan baker Ashlae Warner is a food and travel blogger that has it all covered. Amazing vegan recipes, jaw dropping photos and wonderfully entertaining (and uncensored) commentary all throughout her blog, Oh, Ladycakes. Oh, Ladycakes was nominated for Saveur’s Best Food Blog Award in 2014 and took home Editor’s Choice for Best Original Recipes. Not surprising if you look through her creative list of sweet and savory recipes. Ashlae has also caught the eye of national media such as Martha Stewart Living, Buzzfeed and Food52 (the list goes on and on). When we asked Ashlae what inspires her imaginative, vegan recipes, it seems that everything is a source of inspiration. “The changing of the seasons, my husband's insatiable sweet tooth, our travels, a half-empty refrigerator,my Oma (that's German for grandma) who bakes nearly every day, and the list could go on and on,” says Ashlae Warner.

RAW FIG CHEESECAKE CRUST

1/2 cup raw walnuts 1/2 cup raw pecans 1/2 cup raw almonds 20 dried mission figs FILLING

1 1/2 cups raw cashews, soaked overnight 8-10 dried Calimyrna figs 6 tbsp raw nut milk (or water) 2 tbsp red beet juice, optional 1-2 tbsp lemon juice 1 vanilla bean, split and scraped TOPPINGS

1/4 cup chopped raw nuts 4-6 fresh black figs Line the bottom of a round 6" spring form pan with parchment paper; set aside. In a food processor fitted with the S blade, blend the walnuts, pecans and almonds into a coarse meal. Add the mission figs and pulse until combined. Press mixture into the prepared pan then cover with plastic and freeze until ready to use. Drain the soaking water from the cashews and transfer them to the container of a high speed blender, such as a Vitamix. Add the Calimyrna figs, nut milk, beet juice, lemon juice and vanilla bean; blend until smooth, about 1-2 minutes. If you have a Vitamix, you’ll want to use the tamper. If you don’t have a Vitamix, you’ll likely have to give the mixture a good stir every 30 seconds or so. Once blended, pour the cashew mixture over the crust and freeze for at least four hours, or until solid. When ready to serve, allow the cheesecake to thaw for 15 minutes, then top with chopped nuts and fresh figs. Yield: 12-16 servings OhLadyCakes.com CONTINUED >

BAKED PUMPKIN AND TOFU WITH KALE

1 block extra firm tofu 1/2 cup Worcestershire sauce, divided 3-4 cloves garlic, minced 1 tsp ground turmeric 1/2 tsp ground cinnamon 1 small sugar pumpkin 3 tbsp olive oil 3 cups frozen chopped kale 1 small yellow onion, diced 1/2 tsp fine sea salt, plus more Lightly oil a large baking dish, such as a cast iron dutch oven or a soufflé dish. Drain water from the tofu and rinse. Wrap in paper towel and press to remove a bit of the excess water. Cut into small 1/2 cubes and put in a bowl. Top with 1/4 cup Worcestershire sauce, garlic, turmeric, and cinnamon; mix to combine then let marinate in fridge for 30 minutes. Using a sharp knife, cut the pumpkin in half and scrape out the seeds (save for later) (roasting, holllaaaa). Cut pumpkin in 1/2-1" slices and then into small chunks. Put in prepared baking dish. Toss pumpkin with the remaining 1/4 cup Worcestershire sauce, oil, kale, onion and sea salt. Remove tofu from fridge and toss with pumpkin mixture – make sure you scrape out as much of the marinade as you can. Cover pan with lid or tin foil and bake at 375˚F until pumpkin is soft, about 45 minutes (could be up to an hour if your pumpkin is dry). Can be served with your favorite grain or enjoyed as is. Interview with Leslie Durgin POLITICS THEN AND NOW ARTICLE ANDY MANZ

L

eslie During was first elected to the Boulder City Council in 1989 and served as mayor from 1990 to 1997. Leslie recently retired and is now re-entering public life in Boulder, so we thought it would be a good time to catch up with her. WHAT ARE THE ACCOMPLISHMENTS YOU ARE MOST PROUD OF FROM YOUR TENURE ON CITY COUNCIL?

Like many times in Boulder, we faced some challenging issues back then. There was a robust conversation about balancing jobs and housing as we recognized that affordable housing was beginning to disappear. These are tough issues and, frankly, they are very similar to what we struggle with today. As mayor, my responsibility was to keep a balance between competing interests…to keep conversations going, bringing people and organizations together to work cooperatively on common goals. I am most proud of helping facilitate productive deliberations which resulted in important positive advances in the areas of greatest concern. For example, we adopted the successful practice of locating subsidized housing throughout the community so that affordable housing is integrated into neighborhoods instead of only one area as is common elsewhere. I’m also proud of guiding the City to a more actively engaged role in funding and providing human services to children, families and people in need. During my tenure, we also provided young people with a meaningful role in community decision-making through the Youth Advisory Board. I look back with great pride on those accomplishments. AND WHAT HAVE YOU BEEN DOING SINCE YOU RETIRED FROM CITY COUNCIL?

While volunteering on Council and for a while thereafter, I worked full-time managing many non-profit policy, educational and service organizations in Boulder and in Denver. Most recently, I was employed as the senior vice-president at Planned Parenthood and as director of government relations for a law firm. Last year I retired for a second time. In addition to reading, gardening and enjoying my growing family, I now serve on the 94

Board of Directors of the ACLU of Colorado, and Frasier Meadows Retirement Center. I am also loving my work for the Boulder Chamber as their liaison between the business community and non-profit organizations. More recently, I assumed the role as co-chair for ONE BOULDER. We are a group of citizens and organizations working to defeat Ballot Issues 300 and 301 in the upcoming City election. These initiatives run counter to my own philosophy of working together to resolve community issues. Instead, they will divide us, causing chaotic neighborhood disruption and hurting Boulder’s local economy.

lot of musicians have played The Tonight Show in its 60-year history, but incredibly rare is the type of breakthrough performance Denver singer-songwriter Nathaniel Rateliff and his band the Night Sweats pulled off in early August. Jigging around in black jeans, a short-sleeved black dress shirt and a classy black hat, the stout, bearded Rateliff was veritably in the zone as he debuted his recent shift from indie-folk to R&B-flavored soul for millions of Americans with the barnstorming “S.O.B.” Tonight Show host Jimmy Fallon became an instant, vocal fan, along with many record-buying Americans, as the brand-new LP Nathaniel Rateliff & the Night Sweats sold 20,000+ copies in its first week. Speaking by telephone just before leaving for a three-month headlining tour that had to be totally re-booked when the initial venues sold out, Rateliff balked when asked if his game-changing performance on the Tonight Show felt like hitting a home run not just for himself and his band, but also for Colorado. “It was such a surreal situation that after it was done I was, like, ‘Did we do a good job?’” Rateliff says. “Even when Jimmy was playing the record and going on about some songs, I was like ‘Is this good?’ I was a little ignorant about exactly what was happening. But as far as being part of the Colorado community, I love it here.” Rateliff, who grew up in Missouri, moved to Denver as a teenager with a good friend in 1998 and never left. “It definitely helped change the shape of me as a person, and helped me get out of some of the things I was raised with," says Rateliff. "I love it here and just kind of got stuck. It’s not too muggy and buggy, and not too racist.” Uniquely, Rateliff’s voice is as alluring and honest as Sam Cooke’s but also contains a Tom Waits-style gruffness. He says that his soul turn was a long time coming: "It's something I wanted to do for a long time. It just took a while to figure out how to do it and not make it cheesy.
