Sweet September. A
s summer days of Slip and Slides and Popsicles are now relegated to weekend activities, we look to one last holiday to close out the summer. For our family, September in Colorado is a memorable time. Last week marked the three-year anniversary of our relocation from Kansas City. Aside from missing our family, the decision to head west was relatively easy. Selling our house and two businesses while being pregnant with our third child was not quite as easy, but where there’s a will, there’s a way. There are many things to love about Colorado in September. As the warm summer nights give way to crisp fall temperatures, the transition in wardrobes has always been enjoyable for me. This issue was truly a community endeavor. Where else can you round up a vintage airplane and a 1971 BMW in less than a day’s notice for a photo shoot? We are so thankful for everyone who pitched in their time and resources. Here is a special “thank you” to some of the people that provided some sweet props for September:

LOCAL SMALL BUSINESS HANDCRAFTS FOR LOCAL CHARITIES Lauren and Keith Whittier, founders of TenTables.org, initially launched a large giving campaign back in December 2014, selling a limited edition set of handcrafted farm-style tables made from reclaimed snow fencing from the Western plains. The Post Brewing Company’s award-winning beers will be available at liquor stores, restaurants and bars in Denver, Boulder, and the corridor this summer. Howdy Beer and Townie Ale hit shelves in signature 6-pack boxes in mid-August. The POST celebrated this “can-tastic” event with a series of Can Release Parties: first at Centro Latin Kitchen on Friday, August 21; then at The Post Brewing Company on Saturday, August 22; and finally at LOLA Mexican Fish House on Sunday, August 23. Inspired by his love for the outdoors and all things wild, Max Seigal set out to capture the beauty of the natural world. TRU HOSPICE PUTS ON PIZZAZ! TRU Hospice, founded as Boulder County Hospice in 1976, is hosting PIZZAZ! its legacy gala event Friday, September 18, 2015, at the Marriott Westminster to generate funds in support of its hospice and palliative care and grief support programs. uests gathered together from near and far at The Fresh Herb Company in Longmont, where organic flower farm owners Chet and Kristy Anderson hosted a lush Field to Vase dinner over the summer. Attendees relished a communal-style dining experience, sat at farm tables amid rows of flowers and soaked in the gorgeous summer evening as the sun set slowly behind the mountains. The night was just one of a 10-city dinner tour for Certified American Grown farmers. The Fresh Herb Company, a certified American Grown Flowers Farm, was the perfect setting for the Field to Vase dinner, a newly launched pop-up series that plants a floral twist on the farm-to-fork concept. "The Field to Vase Dinner Tour puts a face on the flowers, introducing the farmers and highlighting why it is so important that flowers at the center of the table be as fresh, local and sustainable as the food on your plate. That's a powerful experience," says Kasey Cronquist, administrator of the Certified American Grown brand. The evening is intended to spark conversation of the slow flowers movement, a crusade to give consumers more of a choice to buy locally grown, domestic flowers, similar to how the slow food movement advances toward a greater use of locally grown, sustainable food. arre Burn,” “Bar Method,” “Dailey Barre,” “Power Barre,” “Pure Barre,” “VertiBarre.” The IDEA Group Fitness Trend Watch named barre classes as a top trend for 2015. What’s up with new workouts using old school ballet barres and taking over Boulder and Denver health clubs and fitness boutiques? Is it ballet? Dance? Pilates? Yoga? Turns out barre formats can be all of the above.
ROOTS
Many of the latest barre techniques have developed out of the teachings of Lotte Berk, a European ballet dancer in the 1950s who worked with an osteopath to create exercises focused on building core stability. Contemporary barre workouts use similar micro-movements for stretching and toning with particular emphasis

on form and alignment, and generally with some infusion from kinesiology and physical therapy. PURPOSE
Laura Henderson, owner of The Bar Method in Denver, explains, “It’s designed to create long, lean and sculpted muscles. It’s for anyone who wants a challenging workout with attention to form, technique and safety.” Lexi Bulich, regional group fitness manager for Colorado Athletic Clubs, adds that barre classes are rooted in the disciplines of grace and ballet. "They include small, controlled movements, isometric holds, and high repetitions that tighten and tone your entire body.” GOALS
The intentions behind barre workouts dovetail nicely with the goals women often express when seeking their ideal workout. “Women come to their trainer or instructor and say, ‘Please help me flatten my tummy, tone my thighs, tighten the skin under my arms,’” says Dana Bennett, group exercise coordinator for Lakeshore Athletic Club in Broomfield. “Our Power Barre classes are very targeted and specific to the muscles people want to work.” Amy Chesterton, Bar Method Boulder owner, adds, “Barre based workouts are a hot trend because it’s a low impact exercise that effectively tones the entire body in one efficient hour.” ACCESSIBILITY
Barre workouts tend to be accessible for a variety of ages and fitness levels, with many studios offering beginner or basic level classes. 60

“You think you have to be a dancer, and you think you have to be flexible, but you don’t have to be either of those,” says Mish Metz, Pure Barre Boulder owner. “If you can hold onto the barre, you can do anything we do in class.” DIFFERENCES
While the theories behind barre formats are often similar, individual class experiences can vary widely. The physical barres can be bolted to the studio walls which enable participants to work their core more intensely, or some barres are portable which can afford instructors more creative flexibility. Some studios use workouts that are scripted by corporate, while many clubs feature classes developed by individual instructors. Some classes are slow and deliberate, while others are faster paced or more interval driven. Class size can range from eight students to 40, with smaller classes enabling instructors to offer hands on modifications and adaptations. NOT FOR EVERYONE
While most venues emphasize safety and proper form and alignment to prevent injury, barre classes may not be for everyone. Some classes may be safe for pregnant women, but some studios discourage anyone from initiating a barre routine after becoming pregnant. Most professionals agree people with neck, hip, low back or knee issues should consult their doctor for approval and seek modifications from their instructor. “As a pilates and Barre Burn instructor, I have seen an increase of low back, knee, and hip issues as a result of some barre classes,” says Tracy Martino, a barre instructor for Colorado Athletic Clubs who has been teaching group fitness for 26 years. “People with knee injuries and knee replacement need to be cautious.”
RAISING THE BARRE
The latest trend from Vertical Method in San Francisco turns the barre on its end. At Wendy McClure’s Boulder Body Dynamics studio, barres reach from ceiling to floor for VertiBarre class. “Turning the barre vertically with three points of spinal contact, you’re working to get strong from the basic platform of proper spinal alignment,” McClure says. “If we’re not in proper spinal alignment, the stronger muscles keep getting stronger, and the weaker muscles keep getting weaker.” Working with a vertical bar emphasizes what she refers to as “posture fitness.” “We have all these motions that create roundedness (of the spine,)” McClure says. “Running, cycling, computers, sitting – we’re always flexed forward. The VertiBarre workout focuses on the back body.” In addition to vertical barres, the future also includes a new barre specific studio within a health club at the Colorado Athletic Club Union Station, opening in early 2016. PASSION AND RESULTS
The Dailey Method’s Emma Heckman sums up the popularity and success of barre formats. “I think people have fallen in love with the efficiency and focus of one hour on the entire body,” she says. “It’s a mindful practice that unites balance of the mind and body so well. And it’s amazing how quickly people see physical results.” Metz agrees, saying, “The passion from all of us for Pure Barre just gets greater. It’s a formula and it works. 4 Bartlett pears, sliced 1 tbsp ginger, minced 1 lemon, juiced 1/3 cup coconut sugar TOPPING:
1 cup Purely Elizabeth Ancient Grain Original Oatmeal 1/2 cup walnuts, chopped 1/3 cup coconut sugar 5 tbsp coconut oil 1/4 cup millet flour Preheat oven to 350 F. In a bowl, combine pears, ginger, lemon, and coconut sugar. Meanwhile, in a separate bowl, combine topping ingredients. Pour fruit mixture into an 8 x 8 pan and sprinkle topping evenly. Bake for 30 minutes or until top is browned and fruit is bubbling. Serve with ice cream on top!

We fell in love with Lacey's Instagram because it was engaging and so versatile, plus you can see her personality shine through each post. We headed out with Lacey to Red Rocks and she showed us one of her favorite early morning circuits to get the body moving. RED ROCKS WORKOUT
"Red Rocks is one of my favorite places to work out. Not only are the stairs killer, but you've got a gorgeous view to look at while you sweat it out! This 20-minute circuit is great when you combine with running up the stairs at Red Rocks for the perfect combination of strength training and cardio," says Spruce. PHOTOGRAPHY COLLEEN KELLY
1. WALKING PUSH-UPS: Start in a push up position with hands on the upper stair and feet on the bottom. Do one push up, then at the top take a step out with your arms and legs, then do another push up. Do 10 to the left and 10 to the right.
3. TRICEP DIPS: Face the stage with your hands on the edge of the stair. Walk your legs out straight. Bend your arms to lower yourself down, then squeeze your triceps to press back up. For more of a challenge, try alternating lifting your legs with each dip. Do 15 reps total.
2. STEP-DOWN SQUATS WITH SIDE LEG LIFT: Facing sideways on the 4. STEP UPS: Facing the stairs, edge of the stair, take a step down take a step up with one leg, with the outside leg coming into a bringing the other leg in tosquat position. Use the standing ward your chest (use your leg to lift yourself back up and abs!). Step back down and rethen lift the outside leg using your peat on the other side. Do 24 outer thigh. Do 15 on each side. total. (12 on each side.) Repeat this circuit as many times as you can in 20 minutes. For an added challenge, run up the stairs, do the circuit, then run down the stairs and do the circuit. Your body will thank you! 70

eal - Food for Enthusiasts, located in the heart of iconic Pearl Street, is “something special,” as described by owner Wayde Jester. Zeal is loaded with paleo, organic, local and delicious fare for enthusiasts and non alike. We visited the bright, modern bistro and were met with smiling chefs and baristas whose commitment to “real” food shone through at every angle to customers. Zeal offers breakfast, lunch, small plates, and dinner items as well as an extensive array of juices for the “conscious cleanser.” “Zeal” means great energy or enthusiasm in pursuit of a cause or an objective. To say this definition fits is an understatement. Wayde Jester, in his own words, “shut the door on [his] old career … because [he] felt like Zeal was needed in this world.” Jester sought out to remedy the lack of quality, local and responsibly produced ingredients missing from the food scene, citing the expression “paying up to eat down.” He found that restaurants whose missions included serving healthy, unprocessed, and organic food items were often expensive and did not cater to the breakfast or lunch crowd. So, without having the “first clue about what it takes to run a successful restaurant,” Jester followed his gut and opened the doors to Zeal - Food for Enthusiasts. The rest is history. Delicious history. Our first stop on the menu was the Cauliflower Wings ($8), sure to appeal to the pickiest of meat-eaters. The sauce is supremely Buffalo-style with a hint of lemon tahini that adds the perfect zing. This appetizer can be washed down with a “drink the rainbow” Juice Flight ($8). All juices are cold pressed, organic, and run on taps. We are not in Tropicana land anymore, Dorothy. This is pure, unadulterated Boulder. And we love it. Those who seek out zesty, tart treats will love the House Pickles & Ferments ($7), which consist of kraut, kimchi and a chef’s choice. Both plates are perfect for sharing with a group, making it easy to try multiple appetizer items. For the main course, it does not have to be Tuesday to enjoy the Paleo Jicama Shell Tacos ($12). Loaded with chicken, beef or fish and a huge helping of flavor, these tacos can be shared as well (though we won’t judge if keep them for yourself). If tacos aren’t your forte, the Colorado Striped Bass ($19) is a local treasure, paired with fingerlings and grilled asparagus that looks almost too good to eat. Almost. Zeal speaks volumes about community. The attention to detail surrounding all aspects of the food preparation allow for Celiacs, vegans, food allergy sufferers and “regular Janes and Joes” to enjoy a meal together without the worry surrounding the restaurant’s ingredients. This is where the “food for enthusiasts” subtitle comes into play. Jester’s explanation, “You don’t have to be one to enjoy Zeal, but for those that ‘get it,’ it's so much more than just a meal out,” helps explain what keeps people coming back. Not only do the food dishes reflect the owner’s original vision of serving “a delicious meal that feeds your soul while nourishing your body,” so do the staff. Zeal is a team effort on every front, and when people come together for a common goal, the effect on the customer is profound. ZealFood.com

his salad is my favorite, super clean, super charged, healthiest version of all of my taco bowl variations. And the best part is, it is so delicious you will forget you are even doing something good for yourself. Although I am not vegan, I truly appreciate having a couple of solid vegan salads and meals I can whip up midweek when I am busy, or after an indulgent meal the night before when I am just craving vegetable, nutrient-packed goodness. This meal makes amazing leftovers, too. So perfect for lunch on the go the next day. Just omit the avocado from the leftovers and make sure to keep your dressing on the side.

CHOPPED CHICKEN SALAD WITH HONEY MUSTARD DRESSING
Makes 5 Mason jar salads • 1 rotisserie chicken • 12 pieces of bacon, cooked and crumbled. • 1 cup blueberries • 6 oz goat cheese • 1 cup chopped pecans • 1 cup mixed cherry tomatoes • 1 head of romaine lettuce 88

• 1 head of green lettuce • For honey mustard dressing • 1 cup sour cream • 1/4 cup mayonnaise • 1/4 cup dijion mustard • 1/4 cup honey • 1 tablespoon sesame oil For the salads, I like to start with cooking the bacon. I fry the bacon in my cast iron skillet, and let the pieces cool in paper towels. Once cool,
tear the bacon into pieces and set aside. While the bacon is cooking, chop the lettuce and the tomatoes. Since this is a chopped salad, I like to cut the lettuce thin at about a 1/2 of an inch long by a few inches wide. For the chicken, I like to pull off all the meat by hand so it is nice and shredding. Be sure to discard the skin for a more lean salad. To make the dressing, simply hand whisk the ingredients into a bowl. Add salt and pepper to taste. Then add a small splash of water to get your desired consistency. 1 to 2 tablespoons will do the job.
Now you are ready to assemble! The trick to the Mason jar salad is wet on the bottom and dry on the top. Start with the dressing. Then add tomatoes, pecans and chicken. Then add the first type of lettuce, romaine, followed by blueberries, goat cheese and bacon. Top the jars off with a little more lettuce. You are all set with a week’s worth of salads! You can also pack these salads for an afternoon in the park with family and friends. Simply keep the jars chilled in the cooler and pour into a bowl to enjoy.

The Pearl Street Stampedes have been marching through Downtown Boulder every Friday night before CU home football games for the past 10 years. Hundreds of Buffs fans line the Pearl Street Mall to enjoy the sounds of the Golden Buffalo Marching Band and to cheer on members of the CU football team. Led by Stephen Tebo’s vintage 1948 fire truck, the Golden Buffalo Marching Band performs for fans starting on the 1300 block of Pearl Street moving west. Colorado.edu

SEPTEMBER 18-20 JAIPUR LITERATURE FESTIVAL AT BOULDER THROUGHOUT BOULDER
The largest free literary festival in the world, the Jaipur Literature Festival, is coming to Boulder for the first time in 2015. During the festival, visitors can attend talks, readings, musical performances and writing workshops as part of the free, three-day festival. SEPTEMBER 19 WEEKEND OF INQUIRY WITH GANGAJI BOULDER MARRIOTT
Gangaji is an American born spiritual teacher and author. Over a two-day period, attendees will willingly ask their deepest questions and commit to facing what arises, whatever that may be. Each full weekend day consists of two meetings with Gangaji, and may also include a video program.
