Hello, BuckHaven. A

ttending a cooking school recently at The Swag resort in the Great Smoky Mountains of Waynesville, NC, I learned NOT to flip a crepe, season from high above the pan and to hold a sharp knife on the blade between my pointer finger and thumb. Chef Bledsoe taught our small and enthusiastic class how to score and sear a duck breast and poach a pear in port. Sous Chef Jake Osburn shared his secrets for piping perfect rosettes of goat cheese mousse. I was inspired to cook all the masterpieces we learned for my family. Someday. Not yet, though. In the meantime, we cook our usual favorite dishes and Sue on a hike after cooking class at dine out often. And, why not? We are surrounded by amazing The Swag in the NC restaurants and chefs. We asked a few to help us pack a picnic Smokies. Above the for a Valentine's Day and writer Laura Miller, along with Cathmountain top! erine McGahan from Rumson Gifts helped us put it all together. Jonathan Phillips shot the picnic at Murphey Candler Park. Now, make your own magic (and share a few photos with us on our Facebook page)! Sean O'Keefe Events made some magic for us with his gorgeous tables for two, introducing a new seasonal flower-of-the-month club. Readers can subscribe to receive a unique arrangement each month from Sean O'Keefe Events head floral designer, Marty Helling by emailing Info@SeanOKeefeEvents.com. In other news, Lifestyle Publications is proud to announce our collaboration with the one and only American Cancer Society, as media sponsor for the upcoming third annual Hope Ball on April 30 at the Delta Flight Museum, honoring our friend, cancer survivor Jeff Wigbels. Enter the contest (on our website) to come as our guest, and consider sponsorship opportunities by visiting HopeBall.org.

HELP FINISH THE FIGHT AGAINST CANCER The American Cancer Society’s life-saving mission is driven by community volunteers from all walks of life. Even a few hours a month can make a difference. Opportunities in our community include serving on teams that organize special event fundraisers. From walks to galas, there’s a place for everyone to get involved. Event volunteers help recruit sponsors and participants, coordinate logistics and much more; driving cancer patients to treatment appointments; helping cancer patients with appearance-related side effects of treatment. The Ritz-Carlton Reynolds Lake Oconee

FRESH AIR, PERSONALIZED SERVICE, SO CLOSE BY ARTICLE SUE G. COLLINS PHOTOGRAPHY SUE G. COLLINS AND PROVIDED

P

ulling up the long welcoming driveway to the The Ritz-Carlton Reynolds, Lake Oconee after a short but taxing drive east from

Atlanta, I checked my watch (for the last time, I promised myself ) and bolted across the courtyard to the spa. The warm staff showed me to my locker and I changed into the thick robe and spa sandals, sinking into one of the over-stuffed armchairs in the softly lit lounge. My 50-minute Winter Resistance Ritual massage was, hands-down, one of the best full-body, multi-sensory treatments I’ve ever had. I was a pool of happiness after the dry body brushing (for exfolia-

tion), a massage with tea tree and eucalyptus oils (my new favorite), a very warm rain shower with infused steamed towels around my feet and warmed volcanic stones in my willing palms and cooling moisturizer again massaged into my renewed skin. The large sauna, steam room, whirlpool tubs and private showers beckoned in the newly expanded women’s lounge. I was welcome to lounge then or, as a hotel guest, was encouraged to come back anytime during my stay. I couldn’t imagine staying away.

The National Tavern and (below) the broad lawn at The Ritz

Too soon, I floated the few steps through the cool lake country air to the lodge-like lobby of The Ritz-Carlton. Just 75 miles from noisy Atlanta, the AAA Five Diamond lakeside resort is glowing from a multi-million dollar renovation. Through the bank of windows in the grand beamed lobby, the tranquil outdoor infinity pool, whale-shaped kids pool, updated sun deck, and fire pits dot the broad lawn leading to the lake. My travel companions, still glowing from their massages, ventured out to the 6,000-square-foot ice rink where hot cocoa was being served. A lakeside bonfire was being stoked, ready for s’mores later. We found a sofa inside in front of another roaring fire and chatted with guests - a group of ladies celebrating decades of friendships and coworkers attending a team-building weekend. Lucky them! Cockplemented by an arugula salad. These pair-

AL FRESCON (CON TI N U ED)

The magic is in the delivery of these flowers, candy, jewelry and cards. What better and more unique way is there to celebrate your love than a winter picnic? Begin with the location. Pick a local park with picnic tables or grassy areas. Find a spot near a body of water, if possible. The quiet, soothing sounds will be a perfect backdrop to the romantic meal. Murphey Candler Park in Brookhaven has numerous large, grassy areas as well as shaded picnic tables, all complemented by the large, peaceful lake. Set the scene. A large, soft blanket is key. Add some candles, flowers, and some large pillows to make dining more comfortable and intimate. Don’t use paper plates and plastic utensils – real plates and silverware transform a casual picnic into a special dinner. Make your main dish special. Your main dish should be a favorite food or from a favorite restaurant, whether it be upscale or casual.

Invoking a first date or an engagement meal is a good way to go. There Brookhaven suggests their famous There Burger with white cheddar, applewood smoked bacon, caramelized onions and golden raisin jam. Splurge and get two sides to share, such as the garlic parmesan rosemary fries and roasted brussels with house-smoked ham. Don't forget dessert. A rustic main dish pairs nicely with an upscale, festive dessert, and Davio’s at Phipps Plaza recommends the decadent warm chocolate cake, paired with cherries, vanilla ice cream and chocolate sauce. The rich dark chocolate makes for a special Valentine’s dessert, and the compact size makes it a perfect dessert for outdoor dining. However, make sure to present it with an air of style because after all, we eat with our eyes first. Valentine’s Day is all about spending time with the one you love, so impress them this year by enjoying some of BuckHaven’s finest restaurants, al fresco, in one of the city’s many amazing parks. Good Food For All Georgia Organics Makes Good Happen

S

aturday mornings are a special time for the Tirrill family of Buckhead. John, Greer and their daughter Mary Holmes attend the local Peachtree Road Farmers Market every weekend in search of local, organically-sourced food. “We had quit buying tomatoes, cucumbers, strawberries, melons, lettuce, and a host of other foods at the grocery chains because none of it tasted the way we remembered fruits and vegetables tasting when we were growing up,” says Greer. Mary Holmes is mentally and physically disabled, and the visits to the market are a chance for her to be adventurous and spend time getting to know the farmers, whom her parents jokingly call Mary’s “boyfriends.” The farmers market also became the place that the Tirrills found Georgia Organics. Since 2010, they have been Seed & Soil Society Members, one of the highest membership donor levels where community members donate $1,000 annually to assist in funding Georgia Organics. The Tirrills have lived in Buckhead for 14 years, and since their love of organic food has grown, they moved to a twoand-a-half acre lot that gives them more space to grow a garden of herbs and compost their food waste. “It’s satisfying to know our charitable giving is going to an organization that is grassroots in the truest and best sense,” says Greer. “Money from donations through the Seed & Soil Society goes directly to support farmers, from educational workshops to hands-on assistance in the lengthy, expensive process of becoming certified organic.” The farmers market is an example of how Georgia Organics is living their mission: to connect organic food from Georgia farms to Georgia families in the community. By bringing local farmers to the markets, they are encouraging Atlantans to buy and eat local foods. When other sustainable farmers see the community’s increased demands for Georgia-grown foods, they, too, become involved. Georgia Organics was founded in the 1970s, and since then has developed many programs to enhance Georgia’s sustainable local food systems through education and advocacy. Another key to building the local food movement is through the Farm to School program. Georgia Organics launched the program CONTINUED >

in 2007, and since then has helped schools across the state to create policies surrounding local food, grow edible gardens, serve local food in the cafeterias, and provide education on cooking and nutrition. In this coming year, Ashley Rouse, the director of Farm to School for Atlanta Public Schools, plans to pilot a “garden-to-salad bar program,” where food grown in school gardens is served in the cafeteria, and to secure land for a farm to grow food for the district. Georgia Organics’ incentivizes schools to participate in the Farm to School Program through The Golden Radish Award. In 2015, 39 schools received a Golden Radish Award, up nine schools from the previous year. More than 18 million meals were served with local food and the Farm to School program reached 700,000+ students. For the second year in a row, Atlanta Public Schools received the Gold level, the highest level possible for the Golden Radish Award. Among the schools in Buckhead, Garden Hills Elementary School, Sarah Rawson Smith Elementary School, and Sutton Middle School were recipients and continue to grow edible gardens. The support of the community and the school system encourage the elemental statement of Georgia Organics: “Good food for all.” Getting involved in Georgia Organics is easy. General Memberships start at $50, or become a Sustaining Member by a monthly donation of your choice at GeorgiaOrganics.org. .

WORDS DENNIS MALCOLM BYRON

B

esides the Meadowcreek High School students who are already scheduled to report to her classes throughout the day, it is a regular occurrence for alumni, aspiring chefs, industry professionals and faculty to pay Culinary Arts Instructor Chef Simone Byron a visit. Their reasons for stopping by range from simply saying hello, to getting a dose of Chef Simone’s humorous, yet authoritative instruction; or simply catching a whiff and—if lucky—a forkful of whatever delectable dish is being prepared. Her laboratory is a recently erected state-of-the-art kitchen rivaling the most upscale restaurants in Atlanta, courtesy of the Gwinnett County School System that realized the potential of her current and future students. Chef Simone and her pupils have garnered accolades and awards locally and nationally in her brief three-year tenure. Chef Simone, age 32 and a graduate of the Atlanta Art Institute, is devoted to her diverse student body and reminds them they are all one family, and she graciously accepts the role as the mama. She can’t help it. It’s in her blood. When our great grandfather Cyril Byron Sr. served as the executive chef on Marcus Garvey’s Black Star Line on the way to America by way of Jamaica, he went on to start the Byron Catering Company in Bronx, New York, during the early 1900s. Since its inception, the Byrons’ Thanksgivings were on Saturdays because they had to work on the traditional Thursdays, leading to a family tradition that is still honored.

42

BuckHavenLifestyle.com | February 2016

Chef Simone’s mother Brenda Byron was an incredible elementary school teacher for more than 40 years earning numerous accolades in education and appearing on national television shows including the CBS Morning News and the Oprah Winfrey Show; the latter reunited Brenda with one of her students from decades ago while she was instructing her third grade class at Hapeville Elementary School in front of millions of viewers. (Simone was an honorary student in the background at age 8 that day.) Fittingly, mom was also a phenomenal cook who perfectly reinvented recipes she came across in cookbooks, magazines and eventually online. Before Brenda’s passing from the unforgiving return of cancer the day before Thanksgiving in 2012, Simone was by her side mentally recording every chop, stir and dash of spice. Even I, Simone’s oldest brother, played a small role by sharing what I learned at one of the most lauded hospitality institutions in the world, Cornell University’s School of Hotel Administration. We all knew Simone was destined for greatness. Now, others are investing in Simone’s prerogative to provide her Meadowcreek students with a future. World-class hotels including Loews Atlanta provide her wide-eyed pupils tours of their hectic back-of-the-house operations; restaurants such as Surin of Thailand, Foundation Social Eatery, and South City Kitchen host heavily discounted—if not free—dining experiences; esteemed Atlanta-based culinary authorities such as Certified Master Chef

Daryl Shular and Westminster Academy Executive Chef Eric Centeno happily give lectures on what their occupations demand; culinary-themed field trips hundreds of miles away in cities such as Philadelphia, Pa., occur annually; and Publix, United Way, the Gwinnett Health Department and Vulcan have recently funded a Meadowcreek High School community garden Chef Simone wrote a proposal to support neighborhood sustainability. And when her students are not winning silver and gold medals during regional and national culinary competitions, Chef Simone balances being a National ProStart Invitational Competition coach and the perfect mother of her 8-year-old son, Cameron, who is also destined to be a chef. Oh, and she is also catering for realty gurus, politicians, lawyers, corporations, and school officials to name a few under her burgeoning company Dishful Thinking. Ultimately, Chef Simone does her best to use the finest, freshest and most flavorful ingredients for anything she serves up, but the one that is the most immeasurable is love, and her students, growing clientele, and family savor it with every heavenly bite. Dennis is a monthly contributor to Lifestyle Publications and, while honoring his sister, they would also like to pay respects to Chef Simone Byron’s lead student and mentee for four years before his tragic death in a car accident, Abdirahman Bashir.
