A Wedding Tip

C

an you hear those wedding bells, Readers? Wedding season is fast approaching. No one in our family is getting married this year so far, but we are closely following a “wedding saga” of someone we know--a guy named Rom. Rom is our server at Chili’s in Chesterfield. He is our server because we are some of his “regulars.” When John and I get a chance to go out, we occasionally choose Chili's for our “date night” (more like our “date hour”). We start our “date hour” once our younger children have been tucked in their beds. Our older children keep their eyes and ears out for things and...out we go. Since we go out well after the normal dinner hours we are often Rom’s only table. We often get the chance to converse with our server, Rom, since we have him all to ourselves. One particular evening when we arrived, Rom was even more smiley and energetic than normal; he shared that he had just finished paying for an engagement ring for his long-time girlfriend, Brandi, and he showed us the ring. He proceeded to tell us about his elaborate plans for his surprise proposal that was to include their families, a huge movie-type poster of the couple and a fancy dinner. We couldn't wait to come back the next week and hear how it went—hoping she said “YES!” Well, all went as planned, except Rom’s girlfriend walked into that restaurant and right past the HUGE custom poster without noticing it—but in the end she did accept his proposal and the wedding plans started right away, since many venues and services are booked a year in advance. I have a sneaking suspicion that Rom and his fiancée are paying for their own wedding; each time we see him he has details to share how the plans are going. Rom is very gracious about wanting his fiancée to put together her dream wedding. The bad news is that the newest plans included her changing the original venue to one she liked better; the change resulted in the loss of a rather large deposit. He just smiled and raised his eyebrows. I found it heartwarming the way he is focused on her happiness surrounding the "big day." The good news is that recently, the young child of another one of Rom’s “regulars,” wrote him a tip for “70 bazillion dollars!" I saw it with my own eyes on the receipt; what great timing! That should certainly take some of the sting out of the lost deposit.

Balaban's: 40 Years of Ambiance and Excellence WINE AND DINE IN CHESTERFIELD

I

n 2009, opening a restaurant in the throes of the recession may have seemed foolhardy to many. Yet, after a bottle of wine— OK, maybe three bottles—on the 19th hole, the idea took shape. Two semi-retired neighbors and, by their own admission "bad golfers," found themselves in the bar, the 19th Hole of Norwood Hills Country Club, one day that summer. The conversation meandered and then lit on reopening Balaban’s. One of the golfers, Steve McIntyre, boasted a long history with Balaban’s. He started as executive chef under Herb Balaban Carp, the original owner of Café Balaban in the Central West End. When Carp retired a few years after opening, McIntyre bought the restaurant and operated with panache and acclaim and a series of partners until he closed Balaban’s in late 2007 while facing a difficult lease renewal and dealing with the deaths of a partner and his father in close succession. Through McIntyre’s ownership, Balaban’s proved to be the place with the buzz, the place where every celebrity visiting St. Louis came to dine. It well earned its inclusion in the Class of ’72, a select group of restaurants so dubbed by Post-Dispatch restaurant critic Joe Pollack for raising the bar for dining in St. Louis. Discreet about his early Balaban’s days and the swinging years, McIntyre contends he does not remember many stories but then loosens up and describes a Tibetan cook who prostrated himself in Balaban’s® dining room when the Dalai Lama came to dine. In the bar after golfing that summer day, McIntyre missed

Balaban’s, the ambiance and the kitchen. Wisely, McIntyre had kept ownership and rights to not only the name, logo and recipes but also kept hundreds of bottles of wine, which he meticulously stored, from the original, award-winning Café Balaban wine cellar. The other golfer, Brian Underwood, is now McIntyre’s business partner. Underwood headed compliance for A. G. Edwards for 30 years, and long harbored the dream of owning a wine store. So, Underwood believes they drank a bottle of wine and developed the concept to reopen the bistro and pair it with a retail wine store. Somewhat sheepishly, McIntyre admits they did actually drink three bottles that summer day. While searching for locations, the two partners found a freestanding building at the southwest corner of Dierberg’s Marketplace in Chesterfield, at the intersection of Baxter and Clarkson and started renovations which cost more than $1.5 million. McIntyre and Underwood knew they wanted to be in Chesterfield, and they also wanted to create a wine program to give customers great prices within their retail wine store. “We chose Chesterfield, just as we choose to give customers a break on their wines. Most restaurants mark- up wine with dinner three and four, maybe more, times the retail price. We sell wines at competitive retail prices whether the customer drinks their wine here with dinner or takes it home. Whatever the bottle, in house the customer pays a mere $8 corkage,” McIntyre says. For months after opening the weekend before Thanksgiving in 2009, with a bistro dining room on the small side, they had to away 50 to 100 people every night. By 2012 the two expanded into 2,000 square feet of adjacent space vacated by two other businesses which gave them room to create an intimate Wine Room, seating eight, housing the award-winning wines from the original cellar. A Tuscan-inspired party room, seating 80 for dinner and accommodating 100 for cocktails, was also created in that additional space.


By then they had also hired Chef D. Scott Phillips, a 1994 graduate of Johnson and Wales University in Providence, Rhode Island, and a specialist in catering. Originally a restaurant, wine store, bar, gift basket and carry out operation—with the party room expansion, Balaban’s began catering led by Chef D. Scott. Today, much of their business centers on catering parties, weddings/wedding related events and corporate activities, in house and across the greater metropolitan area. An event manager and his assistant are ready to find a magician or a harpist, to set up multiple food stations, or to decorate the venue in unique fashions. Last November Balaban’s celebrated their fifth anniversary in Chesterfield and their 40th anniversary of excellence with a week of retrospective pricing and special events. Using old menu boards, Balaban’s duplicated their original menu. The restaurant and catering operation continue to offer new dishes and their signature dishes: fresh Cucumber Bisque, aristocratic Beef Wellington, Pasta Ligurian culled from an earlier chef’s travels, Smoked Trout Pancake and Morel Mushroom Pasta which creates what they call “Morel Mania” during the short spring season. imly-lit ceremonies, textured linens and the inclusion of various finery, inspired by Pinterest.com are all among the latest new wedding trends in Chesterfield and the West County area. When making decisions about their wedding with regard to dresses, clothing, cakes, flowers, ceremonies and receptions, couples are "marrying" various older traditions with new trends, to make their weddings days meaningful and memorable. Aaren Muex, owner/lead event planner of the eightyear-old Divine Events, LLC, a wedding and events planning organization, says, "While intimate wedding ceremonies are a continuing tradition, dimly-lit ceremonies seem to be a new trend. Another thing staying the same is having everything – the ceremony and reception - in one location, such as the same hotel. The only thing that changes is flipping the room." Muex says couples are choosing different patterns and textures in wedding linens. “For example, tablecloths have things like more sequins,” Muex says. “While traditional wedding cakes are often a wedding staple, some couples are starting to incorporate alcohol-infused dessert tables. You’ll have some desserts with vodka or some kind of alcoholic drink infused with-

in the dessert on a separate dessert table." Late-night food stations have become a new trend, being used at the “after party” of the wedding to provide additional food at the end of the reception. “So many people look at Pinterest to get ideas, wanting to copy off that sometimes,” Muex says. “I try to come up with ideas to bring out the couple, because it’s important to incorporate what they like and make the wedding their own, latest trends or not.” Angela Carter, daughter of owner Mary Tuttle with Mary Tuttle’s Flowers at 17021 Baxter Road in Chesterfield, says trends her shop is seeing include flowers that are in soft, muted tones of whites, creams and blushes. “Hand-tied bouquets are still very popular with all roses, garden roses, peonies, hydrangea, orchids or combination of flowers. Garden roses are a favorite as they have great texture, are romantic, look and smell fabulous,” Carter says. Texture is still popular as well, for those couples that are going with an outdoor or winery venue. “For receptions, we’re seeing more requests for gold, silver or mercury glass to add pop to the soft, muted florals and more traditional style arrangements versus tall and extravagant,” Carter says.


Carter added that bridesmaids’ dresses in magazines are trending on the shorter side, but she’s really seeing quite a variety of lengths and styles of dresses depending on time of year and venue. “Men's suits are popular again versus the traditional tux,” Carter says. “As always, our goal is creating what the bride and groom have envisioned as their perfect day and making it a reality.” Fawn Miller, Wedding Experience manager (wedding coordinator) for McArthur’s Bakery, including a location at 13700 Olive Blvd. in Chesterfield says, “These days, many engaged couples are ordering smaller cakes, for their weddings, than in the past. For example, they’ll do a small two- or three-tier cake – to have something for the couple to cut for the photos, with a larger sheet cake on the side, which is a more budget-friendly option." Additionally, some couples are doing dessert bars. “They’ll order a small two-tier cake for them to cut but have other dessert options, like mini cheese cakes or brownies or cookies to accompany the small cake so guests have the option of whatever they like to eat,” Miller says. However, she admits the traditional white wedding cake is most often selected. “Couples are people pleasers and want something everyone will eat,” Miller says. A new trend in cake decoration is textured icing as opposed to flat icing. “Textured icing can look, for instance, like a stucco type material on a wall,” Miller says. A cake style that’s “in” right now is the vintage, chic kind of cake. “While a lot of couples go to Pinterest to get ideas, many end up changing their mind because what they see – often, cakes that are covered in fondant (icing) - are expensive,” Miller says, adding use of fondant (icing) can almost double the price of a cake if it’s completely covered in it. Fondant is sheets of marshmallow-like icing rolled out over the cake and smoothed in place. Though there are some things that can be done with fondant that can’t be done with regular icing--such as solid or more even tone of color on a cake and pro-

viding a smoother and cleaner overall look to the cake--it is not used as much at wedding as you might think. “It’s used a lot more on TV reality shows like Cake Boss than for real life weddings,” Miller says. “Traditional cake looks, such as plain icing with fresh flowers or scroll decorations piped on the cake, still are popular. Often couples will do some of the old and new, like use the old-fashioned scroll design but in popular colors like navy Different cakes and coral or blushes like blush pink with gold.” Debbie Shackelford and her daughter Samantha own Signature Bridal Salon/ Boutique, at 703 Long Road Crossing Drive No. 10 in Chesterfield, where customers often are greeted by the store’s mascot, Samantha’s French bulldog, Winston. “A popular trend in wedding dresses is to incorporate any kind of lace, especially vintage lace,” says Debbie. “With trends coming from Pinterest, couples like the vintage look and carry it through their whole wedding theme. Brides can incorporate their mother’s or grandmother’s veil in their own dress or veil or ensemble. A lot of brides still like the traditional cathedral veil with blusher.” While ivory is a popular dress color, many brides are getting into café or champagne or blush colors. “But, for men’s tuxedos, they still want to stay classic, so black , gray and slate blue are and have been really big,” Debbie says. Wineries seem to be a big draw as venues, allowing couples and guests to be outside. “Some old traditions become new again,” Debbie says. “When I got married 33 years ago, both parents walked me down the aisle, and I've had a number of brides recently who wanted both parents to give them away.”

You should buy the best ring you can afford without going into major debt. Have a price range in mind, and do your best to stick to it. Going in with fairly specific parameters will help your jeweler find the right engagement ring to fit your budget. Once you have a good idea of the style of engagement ring she will love, and one that

The four C’s of diamond grading; cut, color, clarity, and carat weight, are your guide to finding a diamond with the most sparkle. Cut refers to the quality of a diamond’s symmetry and proportions. It is the factor that fuels a diamond’s fire, sparkle, and brilliance. Poor cuts lack sparkle because they do not have the angles needed for the diamond to capture light and reflect it. Color refers to how “white” the diamond is, or its lack of color. Diamond color is graded on an alphabetical scale beginning with

“D,” which is colorless. It’s typically recommended to stay within the D to I grades to avoid diamonds that are light yellow or brown in color. Many color distinctions are subtle, but even slight differences can make a difference in diamond quality and price. Clarity assesses the natural, internal characteristics of the diamond. Because diamonds are naturally formed under extreme heat and pressure, virtually all diamonds have small imperfections, called “inclusions.” Flawless diamonds have no visible inclusions under 10X magnification and are extremely valuable. If you are concerned with price and size it may be worth opting for a diamond with a few, less noticeable inclusions. Carat weight is a measure of the diamond’s weight. A carat refers to the diamond’s weight, not its size, so two diamonds that look different in size may have the same carat weight. Some diamonds are cut to maximize weight resulting in less sparkle. For the best value, consider a diamond that weighs just under the carat weight you initially desired. For example, savings can be significant if you choose a .98 carat diamond instead of a 1-carat diamond. Diamonds are the most popular, but certainly not the only, gems that can be used for the center of the engagement ring. Precious stones such as sapphires, rubies and emeralds, as well as many semi-precious stones, can be used to create special, classic, and timeless settings. Some precious and semi-precious stones can be as expensive as a diamond, but others may be much less expensive and still offer a beautiful look.

Selecting the setting for the center stone can be overwhelming as there are thousands of designs, details, and metals to choose from. Begin by considering both her personal taste and lifestyle. For example, if she is active or wears gloves in her occupation, you might consider a less delicate setting, with a lower set diamond. “Halo” settings, where the center diamond is surrounded by smaller that add sparkle and the illusion of greater size, are very popular now. The classic, solitaire, single stone setting, has retained popularity and is a good choice for the proposal. You and your future bride can then come in later to choose a more elaborate mounting, or request a custom designed ring. Most settings are available in a variety of metals. White gold does not interfere with the color of the diamonds and has soared in popularity in recent years. Yellow gold is the classic metal for engagement rings, and is regaining popularity, as is rose gold. Platinum, the most valuable of precious metals, is a good choice for allergy sufferers because it is pure. When you have selected and purchased the perfect engagement ring, a final word of advice; get your ring insured as soon as possible. You may be carrying it in your pocket for a while, waiting for the perfect moment to propose. Things happen. Hopefully the only thing that will happen is that she will answer your proposal affirmatively and you will slide that perfect ring on her finger while both sets of your hands are trembling with excitement and joy! History 101 SOMETHING OLD, SOMETHING NEW, SOMETHING SIMPLE: EARLY WEDDINGS IN CHESTERFIELD ARTICLE AIMEE PELLET | PHOTOGRAPHY PROVIDED

W

e have all been through that phase of life where it seems like everyone we know is getting married in the same year. It becomes an endless stream of bridal showers, bridesmaids’ dresses, bachelor/bachelorette parties, tuxedo fittings, rehearsal dinners— and, oh yes, the weddings! We have many stories in our family’s long history in Chesterfield. Some have been written down; some have been shared verbally and some stories are in the form of mementoes and tangible items— but, strangely, we have very few stories about weddings. We have a few items and stories from my grandmother’s wedding in 1935-stories about family weddings before that? –Nothing, really. This isn’t necessarily uncommon in a family history. Weddings were often much simpler affairs, often including elopement, particularly in rural farming communities such as Chesterfield. Many of the traditions we know today were slow evolutions of simpler customs of the past. In the early 19th century, brides often wore colorful dresses. But in 1840 when Queen Victoria wore a white satin wedding gown, the popularity of the white wedding dress emerged. By the turn of the century wedding photos show a variety of styles. In looking through some of Chesterfield’s archived photographs, it is apparent that while sometimes brides may have worn white gowns, more often brides chose a darker dress, in some cases possibly a quality dress they already owned-- yet other times more casual attire was worn. My great-grandmother’s wedding photograph shows a smart and fashionable blouse and skirt typical of styles in 1914, while my great-grandfather wore a suit. Wedding photography was very 22

different than it is today. Most notably, photographs were taken in a studio rather than at the actual wedding itself. Today a bride and groom may receive hundreds or thousands of choices from their photographer. However, the limitations of early film photography required that most photographs taken indoors be shot in a studio for ideal lighting—no flashes. And candid, outdoor photography was often overexposed or blurry, due in part to the need for longer exposure times. So rather than take time out of the actual wedding day events for what could be a lengthy process, couples would often go to a studio beforehand for one or two posed shots. In my family, we actually have more photographs of wedding cakes than we do of brides and grooms! Apparently, several family members were quite skilled at baking and decorating and they created most of the wedding, shower and anniversary cakes at home. While the photos are sadly a bit blurry, it is clear that these weren’t just a typical sheet cake. They were often multi-layered, intricately decorated cakes. And remember, this was in the days before boxed cake mixes and electric mixers were common. I do remember my great-grandmother telling me that baking a cake required a strong arm and a lot of patience to gain a light and fluffy texture. Angel food cake in particular required whipping more than a dozen egg whites by hand. Electric stand mixers must have seemed like quite the revolution when they made their appearance in the residential market in the 1920s. That is, for those who could afford them—the first KitchenAid stand mixers would have cost about $2,000 in today’s currency. Perhaps that’s why I don’t remember my great-grandmother or even my grandmother ever owning an electric mixer. The 1920s, a decade of emerging wealth for the middle-class, as well as some economic growth in Chesterfield, brought slightly fancier weddings. The Chesterfield archives have a few wedding photographs from this era—still taken in a studio, but with larger wedding parties, flowers, ring bearers and flower girls. When my grandparents married in 1935, one of the local St. Louis papers described the event, giving a detailed idea of the fashion of the 1930s. “[The Maid of Honor] wore a gown of Dubonnet transCONTINUED >

parent velvet, designed along the princess line, flaring below the knees… [and] carried an arm bouquet of yellow roses.” Despite the drastic change to a fashionable wedding, the article also mentions, “a reception was held at the home of the bride.” Receptions were commonly held at home, attended by close family and friends. This was not unusual as most other major life events, such as funerals and births, centered on the home. It wasn’t until much later that growing reception sizes—and perhaps the family’s desire for less work— moved receptions into larger venues. While most traditions have been added or become more elaborate, a few traditions have fallen by the wayside. A “shivaree” (spellings vary) is one of the few wedding


customs that my relatives remember from the early days in Chesterfield. This wedding night tradition actually dates back to medieval Europe when citizens would gather in a noisy group as a form of social coercion against social “errors” such as premarital relations. However, by the late 19th century in small US communities like Chesterfield, the custom had evolved into more of a prank. Well-meaning friends and family would gather outside of the newly betrothed couple’s bedroom window. They would use pots, pans and makeshift musical instruments to create a noisy disturbance as the bride and groom began their wedding night. Clearly, this was more amusing to the participants than to the bride and groom. While I’m sure some modern couples long for a return to smaller and simpler wedding traditions, I’m equally sure they are thankful that a “shivaree” is no longer part of the local wedding customs. Parting Thoughts

ream gown? Check. Persnickety florist? Check. Top-notch wedding planner? Check. Unexpected glitches? Check-Check. I have attended and participated in many different weddings across the country. Every blessed event had one thing in common: some sort of unforeseen mishap. Amazingly, not one involved a wacky uncle + booze. To all future brides and grooms, “zillas” included, the only thing I can advise is to roll with the fiasco. With every marriage, your sense of humor is necessary icing on the multi-tiered cake. You may as well start laughing on day one. Here are some true-life wedding blunders from my own experiences… Years ago, a dear friend invited me to be her maid of honor. We lived in different cities. When I arrived days before the wedding, we noticed my pink taffeta frock endured travel wrinkles - despite my direct flight, oversized garment bag and careful packing. “No problem,” said the giggly bride, “I’ll have my dry cleaner press it!” The morning of the Sunday wedding, my friend realized she forgot to pick up the dress the evening before. The dry-cleaner was closed with the maid of honor’s gown locked inside! Luckily, her groom and his buddy were freshly-minted journalists. They quickly employed their investigative skills, tracked down the owner’s home number (via the fire department) and met the grumpy bed-headed man at the shop. Hours later, I began my promenade down the aisle. It was an outdoor wedding. The sky was blue. My gown was as smooth as a rose petal. The guests had no idea what had happened! But they did notice when the heel of my left shoe got stuck between the garden bricks. Good times.

Then there was the wedding of some friends in the broadcast industry. The bride had asked a talented videographer to tape her big day. He agreed, but privately grumbled to me her wedding was scheduled the same time his beloved football team was playing. He had never missed a game in his life. Ever! The videographer found a creative solution. Just before the wedding, he showed me the transistor radio in his suit pocket. The ear bud wires looked like video equipment. He was all grins until the church’s sound system somehow picked up the game’s frequency during the vows. Fumble! At my own wedding, my newly-minted brother-in-law “decorated” our getaway car with some beyond-PG-13 innuendos. No. “Innuendos” is too soft of a description for what was scrawled across the windshield. But I gave him a pass, probably due to what happened at his wedding a few years earlier. My future husband and I were a new item. I was keeping a low profile as “the girlfriend.” Shyness and some bad static cling will do that. So when it came time for the bride to toss the bouquet, I hid in the back of the room. Way back. Her throw was so wild, it surpassed the anxious “single ladies” in the front, went through the chandelier and literally fell into my arms. Sometimes, even the flubs can lead to wonderful things.
