What do you want to be when you grow up?

T
his is one of those questions every little girl and boy is asked from kindergarten all the way to college. The children’s responses are often times imaginative. Johnny wants to be a firefighter, astronaut and doctor. He’s been imagining different scenarios since he got his first toy fire truck. But what about little Suzie? What could she aspire to become? It seems like ages ago that Suzie wouldn’t have as many opportunities. The glass ceiling hung high overhead and cultural norms prevented fighting these obstacles. Fortunately, things for the most part have changed, especially in a place like Denver where female entrepreneurs thrive in the job market. Forbes released an article about “25 Best Metros for Female Entrepreneurs” with some interesting statistics. The Denver-Aurora-Lakewood area came in third with a high number of women-owned businesses, 3.22, per 100 people, and high female earnings relative to male, at 87%. The opportunity for women to carve their own paths is endless in Colorado. So how does the entrepreneurial bug bite?

This is a question we answered after meeting with seven inspirational business owners (pg. 24) who each shared their own unique stories and tidbits of advice for aspiring entrepreneurs. I also got coffee with Danielle Renfrew Behrens, who is an independent film producer and started Superlative Films headquartered in Boulder (pg. 32). Chef Elise Wiggins of Panzano dined with us one afternoon and told us about her experience as a renowned chef (pg. 18). She also shared her own personal pastiche recipe. Each woman had her own story to share. And this month it is all about her-story, not his-story that defines these women. We hope you enjoy.

owntown Denver is full of life on a Friday afternoon. On the corner of 17th and Champa sits the Hotel Monaco. Tourists enter and exit, starting and ending their vacations. For me, a permanent resident, my destination is Panzano. Attached to the aforementioned Hotel Monaco, Panzano is led by Executive Chef Elise Wiggins. Buttery midday sunlight filters in from the street as I grab a chair and get settled. The ambiance is warm, calm and bright as Elise postpones her kitchen duties to sit down for our interview. Born and raised in Louisiana, Wiggins became interested in culinary pursuits "right out of the womb." She spent her childhood and teenage years perfecting recipes a la Julia Child and
dreaming of a future in the culinary industry. After high school, she took the university route, and began culinary school at the Art Institute of Denver. Wiggins has been a Panzano staple for 15 years. When asked about the difficulties of excelling as a woman in a male dominated industry, she shrugs. “I feel that the restaurant culture has moved past thinking that there is
a difference between working for a male chef versus a female chef. It’s more about how good you are and how you treat your team [which] has nothing to do with your [gender].” Her personable nature and confidence surrounding her craft is evident even to a cooking outsider like myself. As our conversation progresses from lifestyle to lunch, the excitement on Elise's face is palpable.
The dish she is about to prepare has a story all of its own. Today she is cooking Pastiche, a dish enjoyed by Catherine di Medici in the 1500s. Though it has changed in some respects, the heart and soul of Pastiche is still intact. During the lifetime of Catherine di Medici, some 500 years ago, meals were cooked for the masses. For a castle dinner, one needed to cook for over 100 guests. This involved cauldrons of ingredients and precision in regards to planning. Of course, a castle dinner without a show isn’t a castle dinner at all. Elise explains to me that birds (yes, live birds) were placed into the upper layer of crust and, upon entering the castle dining hall, were allowed to emerge and fly away. Due to the unclean nature of live fowl as a part of an evening meal, the upper layer of crust was entirely removed from the Pastiche. Of course, today there are no birds added (phew) and thus all crust is edible. However, Elise assures me, it is still a meal fit for royalty. The lunch hour rolls on and as a steady stream of guests make their way to tables, Elise CONTINUED >

excuses herself from our interview to return to the kitchen. She concludes our chat, telling me to enjoy my “Queen for a Day” epitaph that comes with indulging in the Pastiche. As I wrap up lunch, I think to myself how Elise Wiggins’ bright, bold personality is matched only by her talent and sheer love for all things cooking. Both Elise and her culinary pursuits are so authentic and full of passion that, when combined, produce magical (and tasty) results. After all, the alternative is for the birds.

WOMEN TO WATCH (CON TI N U ED)
"Do something unique that sets your endeavor apart.” WENDY TONG WENDY'S TEAM
Wendy Tong, an Air Force veteran and medical school graduate of Georgetown University, recently started her own company to provide household care for elderly people. The company goes by the name Wendy’s Team and is just that: a team of people personally trained by Tong, dedicated to providing senior citizens with quality care including pet care, companionship visits, grocery shopping, errands, housework, yard work, and quick check-ins. When Tong began home visits as a medical student, she realized how much the pressure of taking care of a loved one can affect a caretaker’s life. A desire to provide some relief to caretakers was a large part of Tong’s motivation in creating Wendy’s Team. Tong’s experience as a U.S. Veteran also helped to inspire the company. After seeing many veterans who had been led to believe they would receive more medical benefits than were actually available, Tong wanted to create a company to improve this situation. As for advice to others who are inspired to create change, Tong says, “Find something you have passion about and truly believe in. Solve a problem that’s real.”

SHANNON CUMBERLAND ROSY RINGS, PEACOCK PARFUMERIE
Inheriting the creative gene from her father, Shannon Cumberland took a liking to candle making as a child. “I think I inherited the crafty gene! I remember I had a candle making kit you could buy from the Sears and Roebuck catalog and I would re-melt and re-pour the same candles over and over again,” says Shannon. Inspired by romance, music, nature, and whimsical and quirky objects, Shannon started Rosy Rings in 1995, a luxury candles and home goods store. She later launched a sister business, Peacock Parfumerie, in 2011. Both brands are currently sold in the U.S., European Union, Asia and Canada, and she expects the international expansion to continue. Shannon’s tip for fellow entrepreneurs: “Do something unique that sets your endeavor apart, and be prepared to go without a personal income for a minimum of two years.”

”Learn to say ‘no’ to the good - to do the great.” KARMEN BERENTSEN A LINE BOUTIQUE
Entrepreneur Karmen Berentsen sold her first company in the tech industry in 2007. An avid fashion collector, one of her prized possessions is a bracelet owned by Audrey Hepburn. When Karmen heard A Line Boutique was closing its doors in 2012, she leapt at the opportunity to transform her passion into a career. A Line has experienced a sustained growth of over 600% in the past three years. Karmen credits her unique hyper-customer focused experiential business model. She says her family is her biggest support system and her best inspiration. “There is nothing more grounding than modeling for my daughter how to be ambitious, yet balanced,” says Karmen. Her words of wisdom: “Create experiences, not merely manufacture or sell a good product or service, but truly enhance lives. Learn to say ‘no’ to the good - to do the great. It’s easy to do the urgent and hard to do the important.”

Briar Schreiber can’t remember a time when she didn’t have a project going on the side, from running a boot camp fitness group during grad school to a fashion magazine project with a business partner. She started Hype House in November 2015—a marketing firm that provides strategic development, events and promotion in sports, fitness, fashion and music. “I’ve had a lot of great opportunities in my career to date, from running events at the Olympics, X Games, the US Open and more…and some projects not as attractive. In the lead of my own firm, I’m most excited about being the decision-maker over which clients and projects to pursue,” says Briar. She finds inspiration from thinking up ideas, doing research and taking measured risks. Briar’s tips for aspiring entrepreneurs: “Jump off the diving board! There may be such thing as a “perfect time” in an alternate universe but in the real world, there will always be a million reasons to postpone.”

hen I first walked into Espressoria to meet with Danielle Renfrew Behrens, she was sitting quietly at a table reading.
“You’ll see me reading scripts at every coffee shop in town,” says Danielle.
She’s a Los Angeles native who recently relocated to Boulder with her growing family. I’m not sure who I was
expecting to meet knowing she is a well-known film producer, but after our meeting I realized Boulder is a fitting home for her down-to-earth demeanor. This January, Danielle launched Superlative Films, a boutique equity fund to finance and produce independent films and documentaries headquartered in Boulder. “I’m setting up something that I think will be good for the community and art scene here,” says Danielle. “Everyone thinks with an independent film it’s L.A. or New York, and I’m excited to say, ‘Well you know what, there are other pockets of this country that are really excited about the arts and film.’” For the past six months, Superlative has been raising money from local and national investors. She’s now considering a number of projects while continuing to raise funds for creative, character-driven films. “Now I’m putting on a curator’s hat and I’m starting to find projects that I think are meaningful. No matter the genre, it always starts with a strong story.”
"No matter the genre, it always starts with a strong story," says Danielle.

DANIELLE’S STORY
Despite growing up in L.A. surrounded by hopeful actors, directors and screenwriters, Danielle never felt that childhood urge to enter the film industry. It wasn’t until college that things changed. “For me, it was just an avenue for social change,” says Danielle. “But then I fell in love with the medium.” After working on several documentaries for PBS focusing on women’s issues like the history of reproduction rights and Roe vs. Wade, her preferred style of film slowly started to shift. Originally focusing on subject-issue films, at 26, her preference changed to character-driven stories after working on her first venture into fiction filmmaking, Groove. It was a low budget independent film about the San Francisco rave scene. Real DJ’s and ravers were enlisted as actors to keep the authenticity of the story. In order to work on the project she opted out of film school and partnered up with writer/director Greg Harrison to work on set. This was her first gig as a feature film producer and Danielle was involved with every aspect of the filmmaking process from beginning to end. Starting with screenwriting to casting, all the way to sales. “With all of my films I’ve had a really close relationship with the filmmakers and I would lie on the train tracks for them,” says Danielle. Sundance accepted Groove (fewer than 2% of films submitted are accepted) based on a CONTINUED >

rough cut, and the film sold hours after its premiere with an intense bidding war. This launched Danielle’s producer career in the independent film industry. It also made her appreciate the power of storytelling. “At the end of the day if your film is not entertaining, it doesn’t matter how important the subject is,” says Danielle. This is when she also realized that addressing issues such as women’s rights could still be done, but with a creative twist. “Later I did Double Dare, and that to me was just as much as a feminist film. You see stunt women jumping off buildings and getting lit on fire, but it dealt with very substantive issues of women trying to make it in one of the most male dominated subsets of Hollywood,” says Danielle. “It was doing it through a different lens, an entertaining lens.” A NEW INITIATIVE
After many years working in L.A. it was time for a change in scenery. But Danielle’s 2012 move to Boulder didn’t mean the end of her career as a producer. Since living in the Front Range she’s completed three renowned projects all of which premiered at the Sundance Film Festival, The Queen of Versailles which received Sundance’s Best Director Award, Emmy nominated Kurt Cobain: Montage of Heck, and Grandma which garnered Lily Tomlin a Golden Globe nomination. She also launched her new initiative, Superlative Films, which will help small, independent movies with both financing and producing. There will be funding for both seasoned directors and new talented directors just entering the scene. “Discovering new talent is something I’m really excited about,” says Danielle. “Many filmmakers we know and love today got their start making films similar to those that Superlative is doing.” For example, a few heavy hitters like Lena Dunham, Wes Anderson, Quentin Tarantino and Paul Thomas Anderson are all now estab-

Whether you win, place, or show, the Kentucky Derby isn’t all about the horses. Let’s be honest, Derby Day is an excuse to embrace our inner Southern belle, don a stunning sun hat, and drink mint juleps until the cows (or horses) come home. There are no hard and fast rules for Derby Day dressing, so whether you go for a classic, feminine sundress or opt for a modern, casual look, we’ll make sure it’s you and your outfit that are the ones going home with a garland of roses.
Karmen Berentsen Owner of A Line Boutique
the SUNDRESS
A classic never dies - the sundress is a flirty welcome to warm summer days and backyard parties. Opt for a mature silhouette and length with preppy details like a button front and structured collar. An added belt accentuates the small of your waist while a wedge shoe adds height and prevents you from aerating the lawn…
a JUMPSUIT
A one piece wonder that we all forget about! Don’t be intimidated - the jumpsuit is an ultra chic yet effortless option for any elevated look. Whether a weightless chiffon romper or tailored pantsuit, there’s something for everyone in this category.
SHORTS & a TEE
If you’re a casual dresser, don’t feel like you need to abandon your go-to uniform. Simply opt for a more tailored bottom with finer fabrication and a well-tailored fit. Throw on a T-shirt with elevated detailing like lace finishes or eyelet punctuation. Add some accessories, an embellished flat and your work is done.

native of Oklahoma, Megan Hudacky knew very early in life that her future would involve the design industry. Following a long line of women in her family who attended the University of Oklahoma, she entered the Interior Design program at a time when its focus was on the integration of architecture and design. Her studies included a full range of skills needed for renovation and rebuilding. Hudacky moved to Denver after graduation and started her career at a top architecture and design firm to build on her education and gain mentorship before striking out on her own. CKY Design is full-service and strives to take conventional materials and ideas to a level of uniqueness for each project.
Hudacky has had her work featured in design publications including Sunset Magazine, Dwell, 5280, Residential Architect, and Inc Magazine. She has contributed to team project recognized by the AIA “Architects Choice Awards” and “Built Interiors” AIA Merit Award. “Every project takes constant work to maintain the conceived design, and it’s nice when you see the finished product come to life in the end,” says Hudacky. “To have a project recognized is always flattering.”

INTERIOR DESIGN OFTEN MISINTERPRETED
The design industry needs a stronger balance between architecture and interiors, according to Hudacky. It’s often an education process to convey the level of detail and skills a designer can offer to a project. “Being part of the entire process just makes a difference at the end of the day for clients,” says Hudacky. Further, many people still think modern design sounds scary, often conjuring up images of cold, ultra-contemporary spaces. Hudacky sees modernism as a balance of functionality, minimalism and warmth. She enjoys the education process with clients helping keep them in the comfort zone of cozy and livable through the use of textures, patterns and furniture. TRANSFORMATION TO A NEW MODERN
A recent project in Denver’s Golden Triangle neighborhood shows the transformation from a very traditional, Pottery Barn look throughout the home to a minimal, brighter and more zen design. Hudacky and the client went back and forth several times to hone the right mix of color and texture—with stunning results. The 1,400 square-foot condo—including two bedrooms, an office and the main kitchen/living area—carries soft colors and textured woods throughout the home to give it a very scaled-back feel to its modernism. The addition of storage helps lend a minimalistic look while adding functionality and striking beauty to the rooms. Perhaps the biggest transformation was to the angular entry hall, where a wrapping bench and drop-off counter were added to break up the angles. For more of Hudacky’s work, visit CKYDesigns.com. 42

AIR PLANTS
Tillandsia Bulbosa Belize Tillandsia Ionian Tillandsia AERANTHOS STRICTA There are more than 700 varieties Care, Light and Temperature: Air plants
need indirect sunlight and warm temperatures, as they are native to the Southern US, and Central and South America. Air plants thrive at temperatures between 65 and 80 degrees F, so here in Colorado, keep them indoors.
Care, Water: Air plants love humidity, which means they do
need watering. Filtered water is best, as chemicals in tap water can stress them out. I recommend that clients spritz them three times a week, or soak them upside down in water for two hours once a week. Bathrooms are a great location for air plants, as they will get a humid environment from the shower steam. Care, Food: They can be spritzed with an indoor
plant food once a month. I recommend following the instructions on the packaging.
DIY components: Air plants require no soil and
can be arranged in a variety of mediums, such as shells, sand, driftwood, ferns or stones.
