HOW-TO 1. Preheat oven to 350. 2. Place pomegranate molasses, orange juice, butter, 1/4 cup sugar in a sauce pan and heat until the sugar dissolves. 3. Peal, de-core, and half pears. Place them in the pan cut side up and simmer for about 10 minutes. Flip pears cut side down and simmer until they begin to soften, about 10-20 minutes depending on the ripeness of your pears. 4. Once soft, pull the pears and syrup and place in the fridge to chill. 5. Place walnuts and flour in a food processor and pulse until the walnuts are finely ground. Whisk in the rest of your dry ingredients. 6. Once the pears are cold enough to cut, slice them into 1/4 inch slices and fan them along the bottom of a buttered 10" springform pan. Pour the syrup over the top. 7. Whip 1 1/2 cups sugar and the eggs with an electric mixer until pale and voluptuous. 8. Fold dry ingredients into egg and sugar mixture until incorporated, be sure to not over mix. 9. Fold olive oil into batter. 10. Bake for 50-60 minutes at 350. 11. Let the cake cool for 10-15 minutes so the caramel can cool before inverting the cake and removing the bottom. This cake can be made the day before. 26

IN YEARS PAST, ELDORA HASN’T EXACTLY BEEN KNOWN AS THE GO-TO PLACE FOR PRIME SKIING. According to Sam Bass, Eldora’s new marketing director, Powdr Adventure Lifestyle Co, Eldora's new parent company, is dedicated to changing that.
BASS SAYS, “WE’RE NOT A BIG RESORT…WE ARE THE BACK POCKET SKI AREA OF BOULDER COUNTY, SO WE WANT TO LEAN INTO THE LOCAL CULTURE HERE AND GROUND OUR BRAND AROUND THE BOULDER LIFESTYLE.”
For a local skier, the idea of a corporation owning such a nearby mountain might not sound like good news. Many big companies lose the heart of a ski area, as they become too focused on making profits and creating a cohesive business model throughout all of their resorts. Bass promises that Powdr is different. John Cumming, Powdr’s CEO, went to CU in the ’80s and participated on the ski team, utilizing Eldora’s proximity to Boulder for practices. He lived in Nederland for a time, and he co-founded Mountain Hardware in 2000. He's no stranger to the Front Range, in fact, he has been a local. “Powdr’s strategy is for each resort to invest in their own excellence… They want each property to retain its local character,” Bass explains. “They want each resort to sort of survey what makes it unique and invest in that, and emphasize those things.” According to Bass, one of Powdr's corporation-wide priorities is for all of their mountains to support things like local business and charities, the communities they are a part of. Along with this, they are dedicated to focusing on sustainability and long-term investments in the resort's futures. For Eldora, some of these long-term investments have included infrastructure improvements such as the new six-person high-speed chairlift opening this season and renovations made to the main lodges. Bass says that Eldora has been listening to feedback from locals and are making changes based on what they’ve heard. Wifi at the resort will now be free (and faster), the restrooms have been redone, and the restaurants will have new recipes on the menus. One of Eldora’s biggest selling points has always been the resort’s proximity the Boulder (and the fact that you don’t have to get on I-70 to go skiing), but weekends at the resort can be crowded. If you’re skiing on the weekend and aren’t willing to make an early-morning call time, Bass says it’s better to wait for the afternoon shift. Or, better yet, come up on a weekday when the powder is fresh, and the parking lot is empty. With Powdr, Bass thinks the resort will finally make Front Range residents proud to call themselves local Eldora skiers. “We realize that it is a lot more than a new brand campaign and saying we’re doing this. We recognize that we actually have to show that and bring it to life in meaningful ways,” Bass says.

When you've wrapped up for the day, head to Nederland's Kathmandu Restaurant, which serves Nepalese and Indian dishes.

If you're not quite ready to head out of the mountains (who could blame you?), check into the Goldminer Hotel, which looks exactly like it did when it was built in 1897. Plus, they've got your mornings covered with a complimentary breakfast.

The New Girl on the Block Meet Lady Jane
CIRCA 1960. Palm Springs, California. Clean lines, minimalistic vibes mixed with calming greenery hanging high along the ceiling offer a relaxed joint to grab a cocktail amidst green cushioned furniture. But it’s not 1960. And we’re not in Palm Springs. Instead, we’re in the Lower Highlands, and I’ve found myself at the newest, and unbiasedly chicest, neighborhood hot spot: Lady Jane.

As you walk through the door, you’re greeted by a millennial’s aesthetic dream— house plants and deep, rich wooden features mixed with emerald green and gold accents. A butterscotch-colored leather couch to your right and a coffee table adorned with potted cacti begs for your attention, while a cozy nook atop a set of wooden bleacher-esque stairs calls to you and your girlfriends for a night filled with gin and gossip. Palm leaves guide you as you walk through the room, turning the corner to more cozy seating just asking you to stay awhile. The orb lights are low and give off a warm glow. “You don’t need to be in a suit and tie to grab a drink here after work,” says Owner Jake Soffes. “The concept behind Lady Jane is casual. Dress it up how you want.” As the flirty new sister bar to Hudson Hill in Cap Hill, Soffes wanted a space that would age well in a neighborhood that needed a new niche. With Soffes love of mid-century modern and Frank Lloyd Wright’s iconic architecture, the vision of Lady Jane was born. “When I opened Hudson Hill, I was on a mission to create a space to grab a drink that wasn’t a speakeasy or a restaurant,” says Soffes. “Denver had limited options. But now with Lady Jane, we’ve created a modern neighborhood bar that fits perfectly within a career-focused and creative community.” Lady Jane offers an extensive cocktail menu, crafted by Mineta Gould who is also Lady Jane’s general manager. Gould is a wizard with a cocktail shaker and shows off her magic behind the smooth bar top. She creates a menu of drinks that appeases any palette, even mine that mostly prefers cider and sour beer.

The menu includes a slew of drinks, like a whiskey sour that uses the egg yolks left over from egg white drinks to make its honey egg cream. The list also features a cocktail for a cause. This round is a drink called “Believe in Me,” which consists of bourbon, Macadamia Liquor, and a house bitters blend. This drink benefits teen programming at the MCA Denver. Another popular cocktail, the “Oh, Caroline” presents itself beautifully with a pink, frothy consistency along with a hint of floral and blueberry—and was my personal favorite. The bar also offers collectible glassware that features designs by local Denver artists. “The menu is rotating and seasonal,” says Gould. “Right now, we’re featuring a Beach Boys “Pet Sounds” album theme.” Even though the menu changes, the ingredients to some of Lady Jane’s favorite cocktails are kept behind the bar. The next menu theme will reflect literary characters, which already makes me want to cozy up with a fall-inspired cocktail in hand. Lady Jane also offers a small food menu with big taste. The grilled prosciutto sandwich is an automatic favorite, with Sao Jorge cheese from Portugal and spicy dijon mustard, while the cheese platter is enough to satisfy along with a glass of wine. The new bar prides itself in its approachability, value, and price. Lady Jane is chic and timeless, providing a scene to call your own in a neighborhood that will be ever-changing. This just may be your (and my) new spot. 50
