nce upon a time, a place that served Newcastle and Sam Adams was thought to have a “good” beer list. The times have certainly changed. If you are a hop head, there is no better place to live, than Colorado’s front range, Colorado. The industry is literally changing before our very eyes. Brewers are constantly pushing the boundaries on hop variations, aging techniques and wild yeast strains.

In the mid-2000s, I had become quite bored with the standard Wheat Beers and Amber Ales. Sierra Nevada Pale Ales in the parking lot of Phish shows were my transition into hop-forward selections. Once I developed the affinity for Pale Ales, I soon pushed through to the most glorious category of beers (in my humble opinion), the India Pale Ale. My palette has enjoyed being wrecked by hops ever since. For obvious reasons, this issue was especially fun for our team. Make sure to check out our Parting Thoughts segment. This month, Charlie Papazian (godfather of craft beer) spotlights some of his favorite relics and historical trinkets from the early days of micro brewing. Although I have not ventured into the art of making beer yet, I do have some of my favorite, related standbys below. Cheers to all of the beer geeks and brewers. This one’s for you!

ACORN'S SIGNATURE COCKTAIL
Mint Julep Build in a Julep tin: 1.5oz dickel 12 (or bourbon of choice) .5oz peach de vin (peach brandy) .5oz simple syrup, 5-7 muddled mint leaves, 1 dash angostura bitters. INSTRUCTIONS:
Place 5 or 6 leaves of mint in the bottom of a prechilled, dry 12-ounce glass or silver beaker. Add sugar and crush slightly with a muddler. Pack glass with finely cracked ice. Pour a generous 3 ounces of Kentucky bourbon over the ice. Stir briskly until the glass frosts. Add more ice and stir again before serving. Stick a few sprigs of mint into the ice so that the partaker will get the aroma. Cover with crushed iced and garnish with a mint sprig and a white bev nap tux around the tin.

Putting the Spirits Back into Craft Distilling ARTICLE DANA LAPINEL | PHOTOGRAPHY COLLEEN KELLY
W
hen I first arrived at the Leopold Bros. distillery, it was reminiscent of Willy Wonka’s factory – but instead of chocolate they’re producing artisanal spirits from start to finish. Twenty-two different kinds to be exact. As the name implies, this local, award-winning distillery is family owned and operated. Originally, Leopold Bros. started in Anne Arbor, Michigan, when Todd and Scott Leopold first opened a brewpub back in 1999. They eventually moved their operation back to their home state of Colorado, and settled on just producing small-batch spirits. Something the craft state of Colorado was missing. “First of all, there are plenty of world-class breweries in Colorado. I wouldn’t have added much to the conversation. Second of all, I fell in love with distilling, and wanted to focus on just one trade,” says Todd. The brothers have now been in business for the past 15 years. “I handle all the distillation, and Scott handles everything else. It keeps us focused on our responsibilities and out of each other’s hair,” says Todd. Todd is a professionally trained brewer and distiller. He wound up at Doemens Academy and eventually received a degree in malting and brewing from Siebel Institute of Technology in Chicago. He has also interned in Bavarian regions of Europe, which has influenced his pre-prohibition methods. “A brewer by the name of Eric Warner, who had opened up a brewery in my home state of Colorado, graduated from Weihenstephan, a world renowned brewing university in Germany,” says Todd. “When I read about his formal education when I was in my early 20s, I thought it was amazing…that you could actually attend university to learn how to make world-class beer. That drew me into my formal studies in malting and brewing.”
A DIFFERENT KIND OF DISTILLERY
One aspect of Leopold Bros. that makes them so unique are their eco-brewing techniques that have been implemented since they first opened, well before the environmental trend. “For one thing, Scott received his master's degree in environmental engineering in the early 90s, so that put us ahead of the curve in terms of thinking about energy use, material use and pollution prevention,” says Todd. To this day, their operation uses organic and natural ingredients, effective waste byproduct management, recycled water techniques and many local products that support farmers. “When we put our sustainability section in our business plans, it sounded like pretty good business practice. But when we showed the bankers when we were first starting out they thought we were crazy,” says Todd. Despite bankers concerns, their green methods have worked and the results are clearly visible as I walked around the distillery. They have a total of two garbage cans (the same amount as most of our own living accommodations), all of the handmade machinery is CONTINUED >

meticulously placed for the best conservation techniques and only 3-4 bottles of water can’t be recycled, compared to most distilleries where one bottle of whiskey results in 20 bottles of wasted water. Their goal is to get the ratio down 1:1. One of the products that they receive from local farmers is barley from San Luis Valley. Barley is a super grain and is used in 21 of the 22 spirits they barrel and bottle by hand. They use local barley to create their own malt using a malt floor. This is a practice that hardly any of the distilleries around the world use, but there is a huge advantage of this vintage technique. “Well, the biggest thing is that I have control of the quality of the malt. I’m able to make the type of malt that you would see at British malt houses in the 1800s. What’s important is the process to make it dryer which is why older style of malt has less moisture. More heat for longer develops more flavor. I can make the grain 100 percent Colorado, and I’m able to control 100 percent of the process,” says Todd. THE SPIRIT OF FAMILY AND FRIENDS
Leopold Bros. spirits can be found in various places across the United States and Europe, which is why I was surprised to find out that there are only a total of seven full-time employees. If you want an in with the Leopold Brothers, it’s best to start out as friends first. “We make spirits because we enjoy working together. I whistle while on my way to work every morning, and I look forward to seeing all my friends and family,” says Todd. "We make spirits because we enjoy working together. The Leopold Brother's mom, Joanne, does part-time bookkeeping for the business, and their dad, Bob has designed their beautiful, well-manicured garden. The mash tanks are intentionally next to the windows so there’s spontaneous fermentation from the pollen of lavender and shrub roses right against the windows. Todd hopes that by the time his daughter is 21, she will also want to be part of the family business. “We have 20 years to figure out how to talk her into becoming a distiller. If she chooses something else, that’s okay. We’re certainly not going to say you have to do this. I just have to figure out a way to talk her into it,” says Todd. In 21 years when his daughter can finally try her special rye whiskey, Todd can't imagine Leopold Bros. becoming a lot larger and wants to remain a small-batch distiller. He just wants to enjoy art of making fine spirits. “We all look at each other and can’t believe we get to do this for a living. We are so lucky,” says Todd.

MAKING FINE WHISKEY: MALT THE BARLEY, MILL THE GRAINS, FERMENT THE MASH.
• Colorado barley spread out in the floor malting room to germinate. • Barley is transferred to the malt kiln to be malted. • Malted barley, corn and rye grains are milled down in our milling room. • Milled grains are transferred to a grist mill, that combines everything in a mash tun. • The mash tun’s water is brought up to a certain temperature where yeast is introduced. • The mash is transferred to open-air wooden fermentation tanks to ferment for several days. • The fermented mash is distilled in a Vendome copper pot still. • The distillate that comes off of the pot still, known as “low wines,” are run through a 40-gallon column, or eau-de-vie, German still. • The distillate, or “high wines,” are then placed into a virgin, white oak, American charred barrel for aging. • After about two years, the whiskey is taken out of the barrel, then hand bottled and labeled

The Rise and Return of Sour Beers

I
n the land of beer and mountains, where breweries are our neighborhood gathering spots, most 5th graders can tell you the difference between a Pale Ale and an IPA (not by taste, just in theory), and a kegorator in the office is as expected as health benefits, we cherish our beer, we take immense pride in our breweries, and we love trying new styles. One of the newest styles to hit the scene is the sour beer. And by new, I mean old. Really, really old. In fact, essentially all beer was sour until around the mid-19th century, when the understanding of microorganisms, fermentation and sterilization gave brewers control over the “wild” bugs in the suds. At that point outside of a few breweries in Brussels, sourness was taken out of beer, favoring instead an exploration of crisp, bitter, malty and other flavor notes. Now breweries across America, taking a cue from those few time-honored breweries in Brussels, are embracing sour beers to the delight of beer geeks and mainstream drinkers alike. Sour beers, as you might imagine, are characterized by a tart taste and a higher pH than most beers. They can range from earthy, to crisp, to smoky, and beyond, but all maintain at least some degree of puckering. These flavors are developed by purposefully infecting, or inoculating as the preferred beer term, the beer with the “wild” bugs and yeasts that other beers fear, and then letting them sit in oak barrels for at least 6 months, often 2-3 years, or even longer. There are three main “wild” players in this game, each bringing their own unique flavor notes. Lactobacillus and Pediococcus, called as Lacto and Pedio in the beer world, are strains of bacteria that consume sugars and produce acid. Brettanomyces, known as Brett, is a yeast that can

consume most three-part sugars, and gives a beer slight acidity and plenty of earthy or funky flavors (sometimes getting the description of “horse blanket,” but in a good way, promise). With all this sugar consumption going on, sour beers for the most part end up very dry along with the tartness. To offset this dryness, fruit is often added, creating a wonderfully delicate and complex character. Fruit inclusion or not, these beers bring a new engaging quality that is food-friendly, interesting and fresh. The most intriguing part about this entire process might be that it tends to be more nuture than nature. Let me explain. With most beers, the brewer can control the process, the elements, the ingredients…the “nature” of the beer, creating exactly what he or she intended. When it comes to sour beers, the inclusion of these “wild” bacteria and yeasts take some of that control away, relying on the “wild” yeasts and bacteria that happen to come in contact with the beer, in other words…the “nurture.” Sour beers are often created in containers left open to the elements (called a coolship/koelschip) before aging in oak barrels, meaning that any of the bacteria and yeasts in the air, on your clothes, in the brewery can simply fall in and leave their mark along with any of the “wild” bugs the brewer might mix in. This lack of control, this sense of happenstance, gives sour beers a touch of mystery and luck. ordon Lightfoot said, “You just get the vibes of your surroundings and it rubs off on you.” It’s no secret that unique locations have leant themselves as inspiration for memorable music, art and literature, but special settings can also play a role in influencing another great work of art – food. Perhaps no one on the Denver dining scene knows that better than Justin Cucci. The chef first turned heads with Root Down, a converted gas station/mechanic’s garage that made industrial chic a thing. Cucci’s next challenge was transforming a former mortuary into one of the buzziest restaurants in town, Linger. Not one to shy away from a challenge, he fully embraced the building’s dark history, somehow making the macabre-with-a-wink atmosphere work to his food’s advantage. For his most recent restaurant endeavor, Ophelia’s Electric Soapbox, Cucci found another colorful, historic building: a former brothel. In fact, the space on 20th and Lawrence has had quite the racy history, housing peep shows and sex shops along the way. Now, though, the sinfulness is in the food. Taking a cue from the sexy, modern-speakeasy vibe, the menu is equally indulgent. Start with green chile goat cheese cornbread ($6), a heavy hit of sweet, spicy and tangy (thanks to the goat cheese) flavors. Much of the menu is similarly sharable – brothel boards, small plates, noshes and flatbreads all invite communal eating. The flatbreads are generous in size and offer familiar flavors with rich twists. A favorite is the prosciutto and pecorino with quail eggs and pumpkin seed pesto ($13). With entrees limited – just three meaty choices are offered – splitting the small plates is almost a requirement. Luckily they’re the highlights of the menu. The stout-teriyaki duck wings ($13) are just spicy enough and coated with a deep, robust sauce. The Belgian mussels ($15) are a great choice, especially if you like beer, which cuts through the curry broth. As mentioned, entrees are limited, but there’s a good list of burgers and sandwiches if you’re not in the mood for sharing. The two burgers are standouts. The brothel burger ($16) features yak (just try it), a Korean barbecue sauce and candied bacon on a pretzel bun. The sweet/savory combination is a definite winner. For something a little more traditional, don’t miss the frontiere bison burger ($15) with mushrooms, poblano peppers and Turkish chili aioli. Because you’re dining in such a lush, decadent atmosphere, you’re definitely going to want dessert. The S’more cake ($7) is a little potful of campfire goodness, while the smoked salt caramels ($1.50) are a relatively guiltless post-meal treat. Drinks are strong, as they should be when you’re sitting beneath vintage erotica posters. The Airedale ($8), with bourbon, rye, Aperol and grapefruit, is their most popular cocktail, while the Sex Machine ($10), with mezcal, cayenne and lime, might be the most talked about. What else you’ll be talking about – the space. Ophelia’s is not for the timid. In addition to being loud, the décor is, let’s just say, revealing. The place is a former brothel after all, so don’t expect simple elegance here. It’s intentionally bawdy, risqué and bold. If you can, snag a seat that overlooks the downstairs stage. From jazz bands to dueling DJs to graffiti artists, you aren’t going to get bored at Ophelia’s. Between the entertainment, food, drink and décor, it’s nearly sensory overload. But that’s why you’re here, right? To get an artful explosion of flavors, craftsmanship and gusto that are sure to rub off on you. OPHELIA’S ELECTRIC SOAPBOX

INGREDIENTS: 16 shrimp, peeled, devein 2 tablespoons olive oil 1/2 cup pale beer 2 cups water 1 cup yellow grits 1 cup white cheddar cheese, grated 1 tablespoon butter 1 jalapeno, seeded, diced 1/4 cup heavy cream 2 cups grilled corn kernels 1 cup grape tomatoes, halved 1 cup edammae 1 large shallot, diced 2 tablespoons cilantro, diced salt and pepper to taste

BEER BRAISED SHRIMP & GRITS WITH SUMMER SUCCOTASH
Yield: Serves 4 Prep Time: 20 minutes Cook Time: 15 minutes DIRECTIONS: Salt and pepper your shrimp. In a medium skillet preheated to medium-high heat, add one tablespoon of olive oil. Add eight shrimp to skillet and saute for one to two minutes, flip, pour 1/4 cup of the beer onto the shrimp, and cook for an additional minute. Remove shrimp from skillet. Add one more tablespoon of olive oil to the skillet. Repeat process with remaining shrimp. Remove shrimp from skillet and set aside. For the grits; in a large saucepan, bring water to a simmer. Pour in grits and begin to whisk. Simmer until grits begin to thicken. Continue cooking and stir often. Stir in cheese, butter, jalapeno, and cream. Season with salt and pepper. Keep warm. For the succotash, combine corn, tomatoes, edamame, shallot, and cilantro. Toss to combine, salt and pepper to taste. To serve: Pour grits into a bowl. Place four shrimp on top and spoon some of the succotash on top.
BUTTER CRUMBLE & FRESH PEACHES
Yield: Yields 1 quart Prep Time: 1 hour + overnight chill Cook Time: 1 hour INGREDIENTS: for the bourbon honey ice cream: 3/4 cup granulated sugar 6 egg yolks 2 cups whole milk 2 cups whipping cream 1/4 cup favorite bourbon 1 tablespoon vanilla extract 1 teaspoon honey fresh peaches, sliced for the brown butter crumble: 1 stick + 6 tablespoon unsalted butter 1/2 cup granulated sugar 3/4 cup dark brown sugar 1 1/2 cups all-purpose flour 1/2 cup whole wheat flour 1 1/4 teaspoons kosher salt DIRECTIONS: for the bourbon honey ice cream: In a medium saucepan, combine egg yolks and granulated sugar. Pour milk and cream
into saucepan and continue to stir until smooth. Bring the saucepan to a medium heat. Continue to whisk until the mixture has thickened and coated the back of the spoon...probably about 10 to 12 minutes. Turn off the heat. Strain the egg mixture into a large bowl using a fine mesh strainer. Stir in the bourbon, honey, and vanilla extra. Place plastic wrap over bowl and chill the custard in the fridge overnight. Also, place your ice cream maker into the freezer as well. The next day, remove plastic wrap from the bowl and the ice cream maker from the freezer. Pour the custard into the ice cream maker and churn for at least 30 minutes. Once thickened, pour the ice cream in a quart container and freeze until ready to serve. Top ice cream with brown butter crumble and fresh peach slices. Enjoy! for the brown butter crumble: In a large bowl, add granulated sugar. Set aside. In a small saucepan, add the butter and cook over low heat until brown and smells nutty. Carefully pour the brown butter into the bowl with the sugar and stir to combine. In another large bowl, mix together brown sugar, both flours, and salt. Add the brown butter mixture into the flour mixtures. Stir well. Transfer to a baking sheet sprayed with nonstick cooking spray. Press with your fingers to make an even layer. Cover with seran wrap and place in fridge for at least an hour to chill. Preheat oven to 350 degrees. Break the crumble into chunks so it gets nice and golden brown. Bake for about 20 minutes. Remove from oven and let it cool slightly.

I
n the coming months, summer will be drawing to a close as kids go back to school, pools lock their gates, and the weather shifts to the crisp fall air that Coloradans love so much. The shift in seasons tends to force us to put away our small, sporty vehicles and prepare our SUV’s for the months ahead, where their performance is vital. The Infiniti QX80 is certainly a vehicle fit for the months ahead, or for any month of the year. Its powerful 400-horsepower V-8 can tow up to 8,500 pounds, yet its luxurious interior provides plush seating for up to seven people. At first glance, the QX80 looks large and cumbersome, however, once you hit the road and start taking turns it is apparent this SUV is different. The QX80 handles exactly like a luxury vehicle should, cruising elegantly over potholes and speed bumps thanks to the hydraulic body motion control system that links shock absorbers from one side to the other, ultimately providing the smoothest ride, whether you’re driving down a freeway or navigating the back mountain roads. Another impressive feature of the QX80 is the Driver’s Assistance Package, which includes blind-spot warning, backup collision, avoidance intervention, forward emergency braking and forward predictive collision warning. At first, getting used to these features was a little nerve wracking, or even creepy at times, but the forward emergency

braking while having the car on cruise control is a Denver commuters dream. Even when I-25 is a parking lot, the vehicle will maintain a cruise control speed as low as 25mph and a car length of one, two or three cars, depending on the driver’s preference. Despite the incredibly opulent driving features of the QX80, the most luxurious aspect of the vehicle is its interior. The plush leather seats were roomy and comfortable and were accented with a classy Burl wood trim. Along with a beautiful interior, you can guarantee the QX80 to come with a “souped-up” technology system. Standard equipment includes a navigation system, a Bose stereo with 13 speakers and an around view monitor that gives a birds-eye view of the vehicle. The QX80 that I had the pleasure of testing also came equipped with the theater package that had 7-inch monitors in the back of each front headrest, which were capable of playing two different videos at the same time. Talk about a family car! So whether you’re looking for a family car to take on those fall road trips through the mountains, or for a luxury vehicle that can navigate any highway or city street, the QX80 is the car for you. This full-size SUV boasts elegance from the inside out and provides comfort fit for any driver.
