Breathe in that fresh Colorado air... A
hh, breathe it in, the great outdoors. There are thousands of reasons why people love this part of the country, and Boulder in particular. Outdoor activities, mild climate and all the natural beauty that surrounds us, are certainly high on the list. As a child, growing up in the Midwest, we were fortunate to be just an eight-hour drive from Colorado’s front range. Most notable, even above ski trips, were the family camping excursions. The memories of trout fishing with my dad on a high mountain lake, listening to my mom play guitar around the campfire, and even fighting with my older sister over the Walkman headphones, will always be etched into the walls of time. Spending 10 days in Colorado each summer was not always in my parent’s budget, but sure as the sun rises in the east and sets in the west, my folks made it happen for us. This often meant sacrificing common luxuries throughout the year, or my dad working side jobs, but the third week in July, the Manz family was headed west. Now that I am raising my own family here in Colorado, Kate and I have begun new traditions with our kids. One of these is a pilgrimage to the Telluride Bluegrass Festival in late June. If you know, you just know. We are already counting down the days. We are excited about this issue, as outdoor activities are such an important part of life for many of us. From our family to yours, we wish you safety and enjoyment, wherever your adventure takes you.

National Wildlife Federation’s widely popular nationwide event, the Great American Campout is celebrating its 10th year of connecting people with the great outdoors so that they will form a deeper desire to protect wildlife and wild places. Nick Offerman, star of NBC’s Parks & Recreation series, serves as official celebrity spokesman in promotional online and print ads for the cause which kicks off on Saturday, June 27, and runs through September 7, 2015 (Labor Day). To participate, National Wildlife Federation asks people of all ages to make an online pledge to camp anywhere - from a forest to their own backyards – at least once this summer and provides all the information needed, including a directory of hosted Great American Campout locations tips on what to bring, lists of campout activities and recipes, and more. Campers are encouraged to take #Campies (Camping Selfies) and submit them to NWF’s Facebook, Twitter and Instagram pages to share their experiences and create an extended community of participants year round. WIZARD’S CHEST STORE LEAVING CHERRY CREEK The Wizard's Chest will leave its Cherry Creek North home of 33 years to relocate at 451 Broadway beginning in September. The toy and costume store will stay open in its current location at 230 Fillmore St. through December with complete transition to the Broadway store occurring in January 2016. Montagu, the 4th Earl of Sandwich, was kind of a jerk. He’s famous for his John incompetence and corruption as a politician, as well as for having an affair with an opera singer while his wife’s health deteriorated. But he also invented the sandwich, so all is forgiven. Alright so he may not have ‘invented’ it, but he did popularize it when he ordered his valet to tuck some meat between two slices of bread so he could satiate his hunger during a poker game without having to meddle with a cumbersome fork and knife. It’s pretty much Britain’s greatest contribution to the food world. The sandwich is the portable, functional, end-all and be-all of meals. It’s the gastronomic equivalent to the Swiss army knife. It’s satisfying for lunch, yet strong enough to stand up to dinner. It’s the greatest invention since, well, sliced bread. And while the humble sandwich can be thrown together with just about anything in your pantry and fridge, Denver’s delis boast some serious meat-bread-cheese combinations that elevate this brown bag staple to full on craveable status. Frank Bonanno has conquered pretty much every type of cuisine (French at Mizuna, Italian at Luca, Asian at Bones), so it’s no surprise that his Highlands sandwich joint is pretty darn good. An East Coast native himself, Bonanno missed the thick, meaty
sandwiches he got back home. Nothing too fancy – just simple food made with high quality meat and fresh bread. It’s just a well-balanced, complex, delicious sandwich. With the mountains horizon beckoning, we packed our gear, brought along Chef Grant Buchanan and proved that modern day camping can be a foodie’s delight. Embrace the wilderness while camping, but by all means bring a few key home comforts; pillows, picnic blankets, and a well-stocked cooler, do not disqualify the front-range camper from an authentic experience. Our version of camping is up-leveled to enjoy life’s finest pleasures: gourmet food and fresh air.

NO FLAVOR SPARED
The key to cooking at a campsite is a seasoned cast iron skillet that infuses a flavor history onto new dishes. Cast iron plays a prominent role in Grant’s American fare, bringing the experience to a whole new level. Wake up to camp coffee and an over easy egg tostada: the fry bread soaks in the flavors and seasons itself. We used a French press for flavorful coffee that’s surprisingly easy to make. Lemon and honey are easy pantry staples to include for tea drinkers. After a day of hiking, exploring, or simply relaxing, dinner in camp is an exceptional pleasure. Cured olive butter crowns a pork chop and asparagus. The chop is browned and crisp on the outside, but each bite tender and bursting with flavor. No camping meal is complete without dessert: the s’more needs no introduction (but perhaps a whittled stick). Local dark chocolate, hand-cut vanilla bean marshmallows, and Justin’s Peanut Butter cups combine for the ultimate s’more experience. In addition to this sticky icon, Grant creamed butter and sugar for a rich, classic strawberry cake baked in cast iron over a bed of hot coals.
RESTFUL RETREAT
The Rocky Mountains are a stage set for relaxation. Pine forests, mountain streams, and fields of wildflowers are an ideal dining room for the menu prepared by GB Culinary. Dessert or not, the true sweet ending to a day in the woods are a few guitar chords, a good book and a place to relax and take in the night sky. This delicious vacation is right out our backdoor. COOKING AT THE CAMPSITE What you’ll need: Tongs: You’ll need a sturdy pair of metal tongs. Get a set that is at least 16” long and that can quickly lock and unlock. Gloves: A pair of heat resistant gloves is a good idea Coleman Grill: Comes in handy when preparing a camp feast. It heats up fast, is safe and easy to use, and is durable for many future camping trips. Cast Iron: I can’t say enough about cast iron. It’s cheap, dependable, controls heat well and lasts a lifetime if well cared for. Table Settings: Lightweight and durable silverware, mugs and plates. Stainless steel and titanium are excellent choices. Camp Libations: Grapefruit mimosas with breakfast. Local beer and Moscow Mules are a must around an evening around the campfire.

SWEET TEA GRILLED BONE-IN PORK CHOP W/ ASPARAGUS & CURED OLIVE BUTTER Serves 2
2 center cut bone-in pork chops, 1-1” thick 10-12 asparagus spears Brine 6 cups of water, 12 red tea bags, 1⁄4 cup sugar, 1⁄2 cup salt, 15 ea. black peppercorns Olive Butter 1⁄2 cup cured, pitted black olives, 8 tbl butter, softened 1 sprig rosemary lemon juice, to taste TO BRINE THE PORK: 1. Bring water, sugar, salt, & peppercorns to a boil. Simmer until sugar and salt are dissolved. 2. Place tea bags in and steep for 30 mins or until cool. 3. Submerge pork chops in a bag with the brine and place in a container(so it doesn't leak). Place in the refrigerator until ready to pack. FOR THE OLIVE BUTTER: 1. In a food processor place the olives and rosemary and pulse until smooth. 2. In a bowl beat the butter until fluffy and soft. 3. Fold in the olive puree and season with black pepper & lemon juice as needed. 28

ULTIMATE GRAIN FREE GRANOLA AND TRAIL MIX
• 2 cups chopped nuts • 1/2 cup sprouted pumpkin seeds • 1 cup unsweetened coconut flakes • 1 cup dried fruit • ½ cup cocoa nibs • 1/4 cup coconut oil • 1/2 cup honey • 1 teaspoon salt • 1 teaspoon vanilla • 1 teaspoon cinnamon • 1 egg white, whisked until frothy 1. Combine coconut oil and honey in a small saucepan over low heat. Heat, stirring, just until combined. Take off heat. Stir in salt, vanilla, and cinnamon. Set aside. 2. Combine nuts, coconut flakes, dried fruit and cocoa nibs and pour oil mixture into the nut/fruit mixture. 3. Add in egg white and combine further by hand, making sure everything is coated well. 4. Transfer granola onto baking sheet, arranging it in one even layer. Place baking sheet in the oven. 5. Bake granola for at 300 degrees for 25-30 minutes, until dry and golden. Rotate the pan if the granola is browning unevenly. 6. Once cooled, break the granola apart into whatever sized chunks you prefer. Store in an airtight container and bring along while you hit the trials or as your morning granola.
4. Lay plastic wrap on the table and spoon the olive butter mixture in a straight line down the middle. Roll the plastic until it resembles a cylinder. Roll tight and tie the ends. Place in the refrigerator until ready to pack. TO EAT:
1. Place a cast iron skillet over the campfire and heat oil until a oil is loose and pan is hot. 2. Take the pork chops out of the brine, pat dry thoroughly with a paper towel. 3. Season the chops with salt and place in the pan. Cook on first side for 4 or so mins until a nice crust forms. 4. Flip the chops and add the asparagus around. Be sure to keep an eye on the heat from the fire. After another 3-4 mins on the second side, take the pan off the heat and remove the chops, setting them aside in a warm place to rest. 5. Top the chop with a few asparagus spears and a slice of olive butter. Enjoy!

The largest dunes in the United States happen to be here in south central Colorado just east of the San Juan Mountains. Visitors enjoy the challenge of hiking on the massive dunes or sand skiing and snowboarding. Make sure to stop by Zapata Falls on your way home. Nps.gov CAMPFIRE STRAWBERRY CAKE Serves 4
• 1 c. flour, all-purpose • 1/2 tsp baking soda • 1/2 tsp baking powder • 1/4 tsp salt 4 tbl butter, softened • 2/3 cup + 1 1/2 tbl sugar, divided • 1/2 tsp vanilla extract • 1 large egg • 1⁄2 cup buttermilk • 2 cups strawberries, fresh & sliced To eat: 1. Scrape coals away from the fire off to the side of the fire pit. Make a line of the coals 8-9 in long and 3-4 wide. Set two logs or rocks of relative size on either side as a stand for your cast iron. The pan should be able to sit on the logs or rocks and be over the coals but a few inches off of them. 2. Mix the flour, baking soda, baking powder, & salt and set aside. 3. Mixt the butter with the 2/3 cup sugar until fluffy and creamy. Add the vanilla and egg and stir to combine. Mix the dry into the butter mixture alternating with the butter to keep the clumps out. 4. Pour the batter into a cast iron rubbed down with butter and cover the top in strawberries. 5. Dust with remaining sugar and lay foil on top of the skillet. Place on the logs or rocks and cook for 12-15 mins or until done. If you have a dutch oven this works well. You can also have the dry mix done before and the butter & sugar whipped (just has to stay at room temp until ready to use!) 30

FORE-AND-AFT WITH COMMUNITY SAILING OF COLORADO

A
n early morning breeze sends ripples across Cherry Creek Reservoir as a young lady pushes her Vanguard Optimist into the cool water. She climbs in, fastens the rudder, adjusts the single sail on the eight-foot dinghy, and the wind does the rest. Welcome to Day 4 of a week-long sailing camp held by Community Sailing of Colorado. Yesterday's stuffy yacht club, with its monied patrons and expensive boats, has been replaced with a new generation of enthusiasts eager to get out on the water and even more eager to help others experience the thrill of sailing. Community Sailing of Colorado (CSC) is one of hundreds of community sailing programs flourishing throughout the country. Colorado may be a landlocked state, but the sailors at CSC simply smile and ask: who needs the coast? SAILING FOR ALL
Founded as a non-profit organization in 1994, Community Sailing of Colorado began with a mission to provide children with access to sailing. They later expanded and currently provide multiple programs for kids, adults and those with disabilities. Brandon Kass has been involved with sailing programs for almost 20 years and has been CSC's executive director the past four years. “We get kids hooked on sailing by being safe, having fun and providing instruction,” Kass declares. “When we do those three things kids come back as different individuals.” Community Sailing of Colorado reaches a wide demographic. Kass is proud of the scholarship program, which assists students who might not think of sailing as something they could do. 42

“We want to eliminate the financial barrier to get students from all types of backgrounds involved with our program,” Kass says. In 2011, CSC expanded its reach to offer lessons to students with disabilities. “This was an important step forward for us, and in partnering with Craig Hospital we were able to make it happen,” Kass says. In 2014 CSC held lessons for 212 individuals with disabilities; this year they hope to double that number. VOLUNTEERS MAKE IT HAPPEN
As with any nonprofit, the backbone of the organization is the volunteer force. CSC relies on more than 100 volunteers who do everything from prepping boats, fundraising and, of course, providing more than 500 students with lessons. Ken Hovland has been a Community Sailing volunteer for 12 years. An avid sailor himself, Hovland felt it was time to give back to the sport that had given him so much. “I most enjoy watching students make progress,” Hovland states. “Some come to us not knowing the mast from the rudder but then we see their self-confidence build throughout the week.” A BROAD REACH WITHIN THE COMMUNITY
Community Sailing of Colorado is thrilled to return to the prestine waters of the Boulder Rez this May for the second year, to host sailing classes to youth and adults. Last summer CSC shared the joy of sailing with nearly 200 children on the water.
For these students sailing leads to new places, not just physically but also mentally. This summer, Peyton Anne will apply to be a Junior Instructor, a small group of experienced students who play a key role in the instructional process. THIS YEAR AT CHERRY CREEK RESERVOIR
Partnering with the Cherry Creek State Park for 2015, Community Sailing has already begun sailing at the Cherry Creek Marina this spring with youth classes. Starting in May, CSC will offer spring sailing classes for Adults and individals with disabilities. "During the summer months, the action kicks up, we hope to see over 350 children sailing through our five-day sailing camps at Cherry Creek," says Kass. “We aren’t taking kids for boat rides, sailing is our platform to build skills, foster confidence and make lasting experiences with every person who steps into one of our boats,” says Brandon Kass, CSC’s executive director.
FAMILY SAIL NIGHTS IN DENVER
CSC will host three Free Family Sail Nights throughout the summer. Families can enjoy an evening at the Cherry Creek Reservoir to go for a sail, enjoy a cold drink and relax by the water. “The success of our programs last year gets us really excited about the summer season and getting out on the water. It could be racing, cruising, or enojying an evening on the water, we've got something for everybody,” says Kass. The second Tuesday of June, July and August CSC will hold free a Family Sail Night for Denver area families to enjoy an evening on the water. "It's a great way to learn more about the program, go for a sail, and cruise into the evening." NEXT-GENERATION SAILORS
Thirteen-year-old Peyton Anne James has been sailing with CSC the past two years. “It was very much her idea,” recalls Juli, Payton Anne's mother. “After that first week-long camp she was hooked.” Juli wasn't surprised, given her daughter loves the water and has an uncle who owns a sailboat.
