Editor’s Letter

Tricks & Flips

Our June issue is dedicated to the men in our Chesterfield community. John and I are raising six boys (ages 4-17) in our Chesterfield home; one day soon, they will be men. Putting this issue together piqued my curiosity about what things our boys thought that all men should know how to do; so I asked them. I asked each of our sons individually so they would not be influenced by any of their brothers’ answers. The older boys had some interesting answers; some of their responses to the question were very specific while others were quite broad and generalized. Here is the breakdown of the answers the “tweens to teens” gave. All men should know how to: • Change a flat tire • Drive a car • Cook • Shave and groom/ have good hygiene • Play sports and/or talk about sports • Fix things • Solve problems • Change diapers • Tie a tie Our boys in elementary school had some different ideas to offer. According to them, all men should know how to: • Get a wife • Use money wisely • Dress properly and stylishly • Be successful • Be wise • Learn things • Get through each day alive After I finished smiling about some of their answers and chuckling to myself about certain others, I realized how interesting it was to learn what our young men think are the vital skills they need to master before venturing into full-fledged manhood. I was impressed with their insight and also thought they covered a great deal of actual items required in the “manly skills set.” The last one of our boys I interviewed was our youngest son, who is four years old. All men should know how to: • Do tricks and flips He couldn’t think of anything else; I suppose in a preschooler’s eyes if a man can do tricks and flips he is set for life. Yours in Community,

DAVID BARFORD NOMINATED FOR OUTSTANDING PHILANTHROPIST AWARD David Barford, a 20-year resident of Chesterfield, has been nominated by his peers for the Outstanding Philanthropist Award for his efforts to co-found Global Learning Exchange Initiative (GLXi), a nonprofit organization which is bringing quality education to children in Guatemala. standing Philanthropist is one of the categories of awards presented every year by the Association of Fundraising Professionals (AFP) at their National Philanthropy Day Honors Program in November. Barford is best known as a successful business person in the field of technology and telecommunications. His philanthropic work has gone largely unrecognized, which is highlighted as one of the reasons for his nomination. The nomination states that he is deserving for the "meaningful actions he has taken to support the youth of Guatemala and the thoughtful, even quiet, manner in which he is doing it." Barford and Ray Kollar co-founded GLXi in 2012 in an effort to empower people in developing countries through education that includes technology, quality teaching materials and teacher training. They are piloting the program in Guatemala because of Dave’s experience there. “My passion for Guatemala goes way back to 2006 when my children and I started doing mission trips to the Mayan Highlands to dig water wells,” Barford says. GLXi’s early focus is on literacy because it is the key indicator for success for individuals, communities and countries. Board members of the nonprofit developed an innovative literacy curriculum built on research-based teaching practices, sophisticated technology and engaging children’s literature. After one year, test results indicate that first-graders in the GLXi program were reading at a level almost equal to third-graders who were not in the program. Results of the Outstanding Philanthropist nominations will be announced in November. Beyond Overalls HISTORY 101: ALL THINGS “MANLY” IN CHESTERFIELD’S FASHION PAST ARTICLE AIMEE PELLET | PHOTOGRAPHY PROVIDED

H

ave you ever heard of a "Spinart?" Probably not. In fact, I’m fairly certain that it was a word made up by someone in my family. It was what my great-grandparents called a man who was kind of a flashy dresser or show off in the fashion department. Thus someone sporting a jaunty hat or a new pocket watch might be met with, “Well, aren’t you a Spinart?” One might think that in a small farming community such as Chesterfield, people were too far removed from urban society to care about fashion. Perhaps we think time was too precious for such folly because of the nature of farming in an era of less mechanization, more manual labor and a “sun-up to sundown” work schedule; that is true to some extent. Without technology as an aid, those with other professions such as storekeepers and business owners also worked longer hours. Books were kept manually, inventory was not mechanized and correspondence was written on manual typewriters or by hand. But, of course, people didn't have emails to catch up on, Facebook pages to update, Twitter feeds to follow or television shows to binge watch either. People of any era or location still had the desire to feel fashionable. While fashion might not have been at the top of the prior-

ity list, it certainly wasn't an entirely dismissed element of society. Looking through the photographic archive of Chesterfield is perhaps the best way to gauge the fashions of a particular time period. Early photographs were mostly taken in studios for formal occasions so one can see the proper fashions of the day. It wasn’t until the early 20th century when home cameras became commonplace that you begin to see casual, everyday clothing. Photographs from the late 1800s show men in formal three piece suits, such as the wedding photograph of Chesterfield residents Henry Kummer and Rosa Sahm from 1895. Men’s shirtwear of the day required a rather uncomfortable looking starched collar. However, since clothing was washed much less frequently than we do today, collars were a removable item that buttoned onto the back of the shirt at the neck, allowing only the soiled collar to be washed with some frequency. As an interesting side note to this photograph, if you look closely near the gentleman’s feet, you’ll see what looks like the foot of a fan or similar object. These were actually stands placed beyond photography subjects that would hold them at the waist, rendering them

less mobile. Any movement in an early photograph would cause a blur, given the long exposure times of early cameras. Early photographs such as this also show fairly polished hairstyles. I remember once asking my great-grandmother how people styled their hair like that, in a slicked backed manner, before commercial styling products were available. Her answer? Lard. Yes, that’s right. And if that seems a little odd, women used sugar water to create intricate hairstyles before hairspray. In an era where hair was not frequently washed, it is no wonder that we also hear of bed bugs and lice as a more frequent problem in the past. Mr. Kummer is also sporting quite a dashing moustache. While facial hair on men has revolved in and out of vogue, even seeing a current reemergence, facial hair was a personal choice as it is now. Looking through other photographs from Chesterfield, one can tell that moustaches were quite a trend during this late 1800 period. By the beginning of the 20th century though, it seems to be mostly older men sporting a “lip sweater”--perhaps a carryover from their younger days. Most active, young farmers kept a clean shave, most likely to avoid facial hair turning into a dust catcher or something even more dangerous-- getting caught in farm machinery. Of course, not all of Chesterfield’s residents were farmers and those with less physical jobs might be seen sporting a “nose neighbor”, such as Joseph Schwenk, a mail carrier in Chesterfield. Once again I’m reminded of an object that fascinated me as a child; as décor in one of our bathrooms, my mom had placed a mug and big brush. The fascinating part is that inside the mug still lay a round of shaving soap from when my great-grandfather had used it. We had quite a few antiques in our house, but few of them had remnants of their original materials in the them. Having watched my Dad use a modern razor and shaving cream out of a can, I was shocked to learn that this is how men used to shave, using a straight blade no less! Another mainstay of men’s fashion were suspenders. Like facial hair, they seem to go in and out of style, alternating with belts as a method of keeping men’s pants up. However, there was a time when belts were primarily a military item. Suspenders were the rule of the day. Men’s pants generally had a higher waistline and looser fit than they do today, so a belt might have an awkward fit. Suspenders


allowed pants to hang properly and could also be adjusted a bit for length without needing alteration. Belts eventually came into style, particularly for casual wear, around World War I. By the 1920s, casual wear for men became more popular. Men had both work clothes and formal clothes, but now also casual wear which was generally pants, a shirt with a fixed collar, perhaps a sweater and some type of hat—usually a fedora in the 1920s. While it’s quite a long way from today's denim jeans, cargo shorts and polo shirts, most men still dressed more formally than we would today. We even have a photograph of my great-grandfather fishing with three friends… in suit pants, vest and a necktie! I’m sure any sports fan can also notice a marked change in the fashion of the day. West County folks took their sports seriously enough to have uniforms. My grandfather played for the Creve Coeur baseball team. The uniform doesn’t look that different than some of the uniforms of today that try to emulate a retro appearance. But look closely at the shoes he is wearing. Not quite the scientifically designed athletic shoes of today. Thinking perhaps my grandfather had just forgotten to bring his shoes when the photos were taken, I searched for a few other old Chesterfield baseball photos and sure enough, they all wore what appear to the modern eye as dress shoes. How did they run in those? Perhaps what I find most surprising is the resurgence of men’s fashions from the past. Numerous companies are recreating the lost art of menswear. Everything from shirts and jeans to pocket watches, people are seeking out products that are handmade, of high quality and constructed in the USA. Hopefully it is a sign that people have begun to value the past. Maybe what’s old is new again; history often repeats itself-even in the men's fashion arena. ike and Donna Cox wanted to find a way to better enjoy the backyard area of their Chesterfield home and to utilize the space as a place to entertain family and friends. When the Cox family moved into their home in 2009, it already boasted a lovely pool in the backyard; unfortunately, due to the presence of bugs and a lack of shade they weren't able to enjoy being out in the backyard as much as they would have liked. Mike and Donna called and invited several building companies to come take a look at the area and to help share in their vision of adding an outdoor living space onto the back of their home. “Most of the companies we talked to seemed uninterested to work with us commenting that the space was too small to work with because of the closeness of the pool to the house. Larry Brost from Heartlands Building Company came in and had great ideas on how to create just the kind of space we wanted,” says Donna Cox. Heartlands Building Company worked with the Cox family to create an outdoor screen room complete with a stone gas fireplace, automatically retractable screens and colored, textured concrete flooring. The screen room is a true extension of the interior of the house and a shady transition out to the yard and pool. “Before we added the room, there was absolutely no shade out here and the bugs made things unpleasant at 16

times. We really hardly came out here at all other than to swim. Now, with our room addition we are always out here; we are so happy with it,” says Cox. The screen room is decorated and furnished like an interior room. “We purchased the furniture from Amini’s in Chesterfield and it is very comfortable and sturdy,” says Cox. The outdoor room has a large flat screen TV installed over the fireplace. The TV is held by an arm bracket that allows the Cox Family to pull it out and angle it to watch TV from the pool, and other areas of the yard. Across the pool, on the opposite side of the yard from the screen room is the new outdoor kitchen—also installed by Heartland Building Company. The outdoor kitchen has granite counter tops and top of the line stainless steel appliances including a grill, refrigerator, ice maker and supply storage. One end of the outdoor kitchen features a counter area for serving food and the other end has counter –height seating sheltered by an umbrella that has lighting installed inside its canopy for evening use. “Heartland Building Company worked with our ideas and added their own to come up with a great plan to make our backyard a great place to entertain; they were very professional and delivered on everything they promised. We are looking forward to our first summer with our new room and outdoor kitchen,” Cox says.

en’s fashion today boasts the best of the old and the new. To be sharply dressed for every occasion, a man can be creative with his wardrobe and accessories selections while still giving a nod to the traditional. Several Chesterfield fashion experts share their insights.

EDUARD TITOV, SUITS4MEN

Every man must have a classy, well-fitting, basic-colored, multi-purpose suit that will be useful to work many functions from a funeral to job interview, says Eduard Titov, president of Suits4Men, in Chesterfield Mall. Suits4Men is a more than 100-yearold, three-generation, family owned and operated men’s custom clothing business. “Today, a lot of men are geared toward a charcoal gray suit and find black too formal,” Titov says. “Men’s styling has changed drastically; today, everything is more tailored and closer fit to the body.” In today’s market, a large trend in men’s wardrobe is the vest and a tie bar, Titov says. “And, a lot of gentlemen are getting into spread collar shirts.” A big trend in today’s fashion in men’s clothing is a light brown or saddle tan dress shoe, which Titov calls “the number one necessity man wants in today’s fashion world.” Color palettes on suits have changed for this season, and one of the hottest colors is a lighter blue. 20

Judy Garrett is a men’s clothier personal stylist for the J. Hilburn direct sales company of men’s clothing and works out of her home in Chesterfield. Garrett says that a popular look today is “a pair of jeans that fit and are in a dark wash, paired with a sports coat – navy is always a popular color.” Trending materials are a light weight wool or linen for summer. “We do a half-lined jacket due to the summer heat here that’s popular,” Garrett says. Custom shirts are making a comeback as well. “Most men have never had a shirt that really fits,” Garrett says. “Most guys are wearing shirts that are way too big.” Popular shirt colors in her line are greens and blues, as well as lavender. “Also, pocket squares are back and increasing in popularity, just in the last few years, because then you can choose not to wear a tie with it, but just have a splash of color in your pocket,” she says. “French cuffs with cufflinks also have been trending. I think a more tailored and crisp look is on the rise, as well as having a nicer shoe to wear with blue jeans for date night.” DANI CORBITT, BESPOKE APPAREL

“Men’s fashion trends are a bit more stable than women’s, but staples remain where, for instance, definitely a man needs to have a navy suit and a gray suit along with a sharp blazer and khakis in their wardrobe – that will get you through most work necessities,” Corbitt says. “What changes is the cut. We’re seeing that going from a super trim, really tight look to, for instance, a well-fitted jacket that allows you to move. It’s fitted without being tight.” She’s pleased to see the resurgence of the pocket square replacing the tie, especially since so many men aren’t required to wear a tie every day to work. “Having fun with socks and a pocket square is an awesome way to show a little personality,” Corbitt says. Pairing a patterned jacket with jeans is a great look for going out to dinner as well as work. “Today, popular jeans for men are dark washed solid and five-pocket,” she says. Corbitt’s noticing more of a seasonal turnover with men’s looks like she has seen with women’s looks in the past. “For example, we have some sage-washed jeans that are a lot of fun through the spring and summer but that a man definitely won’t want to wear in fall or winter,” Corbitt says. “Men are encouraged to turn over jackets. We have sportcoat specific fabrics for spring and summer, and men are having a lot of fun with the texture and color today.” COURTNEY MCMANEMY, HUT NO. 8

Courtney McManemy is store manager with Hut no. 8 Chesterfield, a brand name clothing exchange store at 146 Chesterfield Valley Drive. “Today, men love cargo shorts in different styles and patterns, and boat shoes or loafers, as well as bow ties, are really in as well,” she says. Round plastic glasses frames are becoming a popular trend with men in West County, says Kayla Theiss, office manager and who runs the optical department at Lisa B. Dibler LLC optometrist, at 266 Lamp and Lantern Village in Chesterfield. “A lot of men still opt for black or brown frames, a more classic look,” she says. “Aviator or Ray-Ban Wayfarer frames in sunglasses are very in now. Men also tend to like the mirrored sunglasses lenses look.” No matter how you slice it, Chesterfield is a great place to shop and learn the latest trends to make sure you are (or you have) a sharply dressed man!

The Thrill of the Grill Tips and Tricks to Become a "Grill Master" ARTICLE PATRICK LATOUR | PHOTOGRAPHY LATOUR PHOTOGRAPHY

T

he sun is shining and the warm summer days are calling your names. Readers, it's grilling season! Grilling can be fun, thrilling and therapeutic all at the same time. There is nothing better than spending summer days outside, hanging with friends and family, surrounded by the mouth watering aroma of meat cooking on the grill. Are you new to the "thrill of the grill?" No problem, allow me to spark some of your interest. WHAT TYPE OF GRILL?

First let’s talk a little bit about gas vs. charcoal grilling. I prefer gas simply because it’s more convenient. I love being able to walk outside and light up the grill with a flick of the wrist. Don’t get me wrong, charcoal definitely has its perks, too. Charcoal grilling comes with the added bonus of flavor from the charcoal and charcoal grills usually come with a cheaper price tag than gas grills. Though I do enjoy the smokey flavor that comes from charcoal grilling, it is a little more involved than its propane counterpart. A charcoal grill also needs to be cleaned more frequently than a gas grill (to remove the ash) and I’m also not a huge fan of the taste of lighter fluid. GRILLING TECHNIQUES

There are certain techniques that you can follow to ensure a fantastic flame grilled feast. Do you notice that sometimes your steak isn't quite cooked the way you hoped? You were shooting for a medium-well steak, only to cut into a under-cooked bloody cut of

beef? Maybe your ribs took a bit longer to smoke than you thought? Most of the time this unforeseen tragedy is simply due to the temperature of the meat before you put it on the grill. Try placing the cut of meat on the kitchen counter for an hour to let it come up to room temperature. Now, I know what you’re thinking: if Mom found out you were doing this she would faint. Have no fear; simply explain to Mom that as long as the meat is cooked to its proper internal temperature, you will live to see another day. The reason you should let it hit room temperature prior to grilling is that once you throw it on the grill, it will immediately begin the cooking process. When you go from the fridge to the grill, your cooking time is thrown off because the meat still has to reach a warm temp before it will begin to cook on the inside. GRILLING THE PERFECT STEAK

When I think of steak on the grill, I envision a picture perfect, lightly seasoned 1" thick ribeye searing on a hot grill plate. When it comes to steak, most people's eyes are far bigger than their stomachs when they choose that 2 ½" steak but the truth is, that’s not a steak, that’s a roast. Grab yourself a one inch thick steak from your local Chesterfield grocery store--no more and no less than one inch thick. Again, I always go for a ribeye but you can choose a New York strip or a sirloin. A good grill master can grill any kind of steak.


HEALTHY CHOICES FOR THE GRILL

I personally like to keep seasoning simple with salt, pepper and a little garlic. Brush the steak with a light coat of olive oil, season and let it sit at room temperature for an hour. Fire up the grill and preheat it to a medium-high heat. Place that beauty on the hot grill plate and let it cook, but don’t go too far. Want those nice grill marks? After 3 minutes, turn the steak about a half turn and let it cook another 3 minutes. Flip and repeat, About 5-6 minutes on each side for a 1" thick steak will produce a perfect medium-well steak. MASTERING THE GRILL

There are some simple rules you can follow to help you become a master of cooking all cuts on the grill. First, beef should be cooked "fast and high." Are you looking for that perfect medium-well steak? Grab yourself a 1" thick ribeye, put the room temperature steak on a medium-high flame, let it grill about five minutes on each side and let it rest for a few minutes before eating. Here's the "beef" on grilling pork; most pork should be cooked "low and slow." You can get by with cooking a pork chop fast on a medium-high heat and it will be enjoyable but when it comes to ribs and pork steaks, low and slow is the best way to go. After you put your favorite spices or dry rub on them, let them sit out for about an hour at room temperature. Preheat your grill to 225 degrees, put those puppies on the grill and let the heat do its thing, turning every 30 minutes.

Want to go a little healthier? Try grilling some fish. Fish is a delicate choice so you need to take the right steps. Brush a light coating of oil on the fillet, season and let it sit in room temperature for an hour. The most important step is preheating your grill when it comes to fish. This will prevent an unfortunate event--sticking. If your fish fillet sticks to the grill, you will have a fishy mess when you try to remove it. Preheating ensures that your fish fillet will naturally release itself from the grate once it’s done cooking. Preheat the grill to a medium-high heat, around 400 degrees. A 1" thick fillet will take about 3-4 minutes on each side. Remember to let the fish release itself from the grill on its own. If you can’t slide your spatula under the fillet with ease, it’s not ready to flip. You could make it easier on yourself and use a wooden grilling plank. You can find these wooden planks at most grocery stores in Chesterfield. They are designed specifically for grilling fish and usually add a nice flavor to fish. Don’t be a chicken when it comes to grilling because poultry is excellent on the grill as well. I don’t know about you but chicken used to be my nemesis when it came to the grill. In the past, every attempt resulted in a dry piece of pathetic poultry. There is a secret to grilling chicken; don’t overcook it! It’s very easy to overcook chicken because everyone is so scared of getting salmonella, and everyone should be scared because salmonella is frightful--that's a whole different article though. Yes, you MUST cook chicken to the proper temperature of 165 degrees and as luck would have it, that proper temp is the perfect temp for moist, tender chicken. Once again, season the chicken with your favorite seasoning, then let the chicken sit in room temperature for about an hour. I recommend marinating chicken. A nice ginger teriyaki marinade is great for chicken, When you are ready to grill, fire that baby up to around 350 degrees. To get the chicken to that perfect temp should take only about 30-40 minutes. They call this the grilling season but to me every season is grilling season. So take these tips and go enjoy a taste of everything your grill has to offer.

The EXCITEMENT of a "DAD-TO-BE" WORDS PATRICK LATOUR

A

s soon as my wife and I joined our lives in marriage six years ago, we planned to have a baby. After no luck and multiple doctor visits we started becoming discouraged. We thought a baby simply wasn’t in the stars for us. With the thought of having a baby set aside, we started to move forward with our lives, focusing on work and hobbies. I'm not saying all of the negative pregnancy tests didn't take an emotional toll on us, but as we both strongly agreed that we got married because we fell in love and wanted to spend our lives together. As time went on, the idea of having a baby just seemed impossible; when my wife woke up one morning feeling ill, only one possibility came to mind--food poisoning. Well, after the third morning of illness, and a few other indications, my wife decided to take a pregnancy test. Of course we both figured it would come back negative. After all, we had long accepted that we weren't going to have a baby. You could imagine the feeling of disbelief when my wife sent me a text message with a picture of a positive pregnancy test. I was in so much disbelief that I instantly ran to the nearest Walgreens to buy a second pregnancy test. I guess after so many negative tests in the past, I needed that extra confirmation. When the second pregnancy test came back positive, disbelief turned into shock and shock grew into fear. Yes, fear! Was I ready to be a father after so long? Will I make a good father? Do I have enough wisdom to raise a child? What if it’s a girl? What if it’s a boy? Who is going to change the diapers? Millions of thoughts raced through my mind as my wife and I stood in the kitchen, staring at each other. “Are you happy?” my wife asked. That simple question made me realize that it wasn’t fear that I was feeling. It was the feeling of excitement! Everything about becoming a father for the first time is exciting. From the first ultrasound, seeing the tiny little human for the first time and imagining what he or she will look like to the seemingly endless discussions on names. Feeling the baby kick for the very first time is

probably one of the coolest experiences ever but one of the most exciting things that come with this experience is finding out the gender of the baby. Could we have waited and be surprised after the birth? Yes! Did we wait? Not a chance! I always envisioned that I would have a boy and I wanted a boy--but at this point in life I was happy as long as the baby was healthy and happy, too. When we found out we were having a baby girl, suddenly many more questions popped in my head. Am I ready to be a father to a baby girl? Am I going to be able to brush her hair properly before school? Again, who is going to change the diapers? I was and I am still very nervous about being a father but it’s a good nervous because this "eustress" that I am feeling will assist me with making good decisions as a father. As the days go on, I get more and more elated. I am excited for everything that comes with this wonderful new status I have been given--a dad-to-be. I am excited to meet the little person who has been cooped up in there for nine months. I’m excited to see if what she looks like is anything close to what I imagine her to look like. I’m excited to hold her for the first time and see her beautiful smile. I am excited to come home to her after a long hard day at work and put her to bed at night. I am excited for the sleepless nights, spit up and yes, I am even excited to change diapers.
