W
ell it’s that time of year again where getting in shape and eating healthy seems to be everyone’s goals. The gyms become flooded with hopefuls and people work hard, really hard, for about a month and then the reality of busy schedules and the convenience of fast food tend to show back up. As for myself, I love being in the gym. Throughout my pregnancy this past year I stayed committed and I was back at it as soon as possible after my daughter was born. For me, it’s about having a trainer who cares enough to keep me motivated. Having that appointment scheduled makes me get out of bed and to the gym. And as my diet goes, I try to give myself a little grace. Throughout the week my diet consists of a lot of protein and veggies. However on the weekends, pizza is a typical indulgence. There is more to living a healthy life, however, than just diet and exercise. Sleep is often overlooked, but it plays a tremendous role in our overall health. The average American does not get nearly the amount of sleep that he or she should. This combined with high demand jobs results in stress, fatigue and other health issues that could easily be fixed by getting the proper amount of sleep.

ARRANGEMENT FOR A SILENT ORCHESTRA In Arrangment For A Silent Orchestra, the violin is shown as a personal and cultural icon. The painting and video project explores (by way of the violin) the gradual dissolution of culture in modern-day society. ARIZONA SURFACE DESIGN ASSOCIATION: EXPLORATIONS As a non-profit organization since 1977, The Surface Design Association has focused on raising the level of excellence in surface design, which includes the coloring, patterning and structuring of fiber and fabric. This national organization of artists does this by encouraging creativity and innovation through exhibits, educational opportunities, publications and conferences. Students, curators, designers, artists, gallery owners and art educators from around the world are all a part of the organization’s 4,000 members. The Association brings Explorations to Chandler to celebrate new media, new technique and unexplored areas of art. Fiber artist Carol Eckert of Tempe will curate the exhibit. Her pieces of work are important additions to public and private collections across the country, including museums in Denver, Wisconsin, Boston and the Smithsonian American Museum in Washington D.C. She is known for her use of animal symbols, as well cultural myths from around the world. SIDESHOW Come one, come all! Step right up and feast your eyes on what may be true and what may be not so true. Illustrator and muralist, Brooklyn-via-Phoe-
nix artist Luster Kaboom returns to the Valley with his new exhibit and his newest creation: The Hairiest Man on Earth. His exhibit, “Sideshow,” explores bushy outsider, Hairy Jerry’s freaky world. Perhaps he is a misunderstood behemoth or perhaps he is a dreadful freak. You will have to take the tripped-out tour through this to show to figure it out for yourself. Make the Next Great Decision ARTICLE JEREMY JONES

at this. Don’t eat that. That’s good for you. You shouldn’t have that. You need to avoid gluten. Don’t eat too many carbs at night. Monitor your sugar intake. Keep your dressing on the side. Drink water. No more ice cream. Any of these sound familiar to you? Chances are you’ve heard one of them, are trying one of them, or have completely mastered one of them. And there is also a high likelihood that all of the different nutrition tips and suggestions you hear on a daily basis from television, magazines, your trainer, and/or co-workers all lead to one thing—confusion! Start 2015 off on the right track by really simplifying your approach to nutrition. Here is how you do it. Without being too technical, there is some very simple advice to help guide you day-by-day, meal-by-meal, food choice-by-food choice. Make the next great decision. That’s right, make the next great decision. Don’t fret or spend time worrying if you ate something you know you shouldn’t have. Acknowledge it. Learn from it (how does it make you feel? Does it correlate with your current fitness goals?). And move forward with the mentality that the next food decision you make, you will make a great one. This mindset really simplifies your approach to nutrition and your approach toward living a healthier lifestyle. Now with that being said, it is highly important to increase your educational awareness regarding food choices and even more important to trust the sources from which you are receiving your information. Don’t rely on gimmicks or quick fixes. There is no such thing as over-night success when it comes to weight loss or body fat transformation. If it took several years or months to stack on unwanted pounds or excess body fat, then be aware and acknowledge it is going to take some time to shed those same

pounds. Be grateful for the process and give yourself credit each step of the way. But again in this circumstance, I encourage you to take it one day a time. Focus on making the next great decision regarding your fitness goals. Start first with your healthy breakfast. Eat it. Enjoy it. And then think about your choice for a healthy snack or lunch. Taking each meal one at a time will help keep you focused on a day full of healthy choices. Day by day mini successes add up to a healthy lifestyle change. Set your long-term goal, but more importantly, focus on achieving each of your short-term goals. These mini-steps and accomplishments add up quickly and before you know it, your body and mind will be transformed. So no matter what your goal is stay focused on the next great decision that will take you closer to your goal. Some days you might move inches and some days you might make leaps and bounds, but as long as you are pointed in the direction you want to go, you will continue to make progress and you will continue to battle through the confusion. t’s 3:04 a.m. You’re wide awake in the middle of the night and can’t get back to sleep. Maybe you’re thinking about tomorrow’s big presentation at work, the argument you had with your spouse or your child’s science project. Interruptions to your sleep and/or the inability to fall asleep could be caused by a variety of triggers ranging from caffeine and alcohol to stress and sleep environment. Fortunately there are ways you can enjoy a restful night’s sleep. Stick to a Routine Today Americans function on very little sleep while balancing demanding jobs and adhering to overly packed personal and family schedules. The National Sleep Foundation’s 2011 Sleep In America® poll found that 43 percent of Americans between the ages of 13 and 64 say they rarely or never get a good night’s sleep on weeknights. While many say there just aren’t enough hours in the day, sleep experts recommend you make sleep a priority. “Adults should be getting between seven and nine hours of sleep each night,” says Lauri Leadley, clinical sleep educator and president of Valley Sleep Center. “It’s important for people to go to bed at the same time and wake up at the same time, even on the weekends.” Sleeping later on weekends won’t fully make up for a lack of sleep during the week and will make it harder to wake up early on Monday morning, according to The National Institutes of Health. For children, Leadley says that infants and toddlers typically require 12 to14 hours of sleep per day including naps. School-age kids and teens should aim to sleep about nine to 10 hours each night, and usually start staying up later as they get older. “By the time a child reaches adolescence, the biologic process

in their bodies shift and they tend to stay up and sleep in later,” Leadley adds. “That’s why moving back school start times are beneficial to this age group.” Maintaining the same bedtime and wakeup time helps to regulate the body and practice good bedtime rituals. “Be sure to incorporate a relaxing routine away from any natural light or light generated from an electronic device,” Leadley says. Americans report very active technology use in the hour leading up to sleep, according to the Sleep In America poll. Of those surveyed 95 percent of people use some type of electronics like a television, computer, video game or cell phone at least a few nights a week within the hour before bed. Eliminate Stress If you have a lot on your mind or are susceptible to getting anxiety especially before or during sleep, Leadley suggests leaving a notepad beside your bed. “Write down whatever is causing you stress and get it out of your brain,” she says. “Anything that can cause excitement or stress can reduce your ability to fall asleep.” Leadley also says that a psychologist can help create behavioral modifications needed throughout the day to help get the body and mind prepared for sleep. Other alternative and complementary treatments for sleep issues, such as insomnia, are available like acupuncture and hypnosis. Exercise and Eat Right It doesn’t matter what time of day or night you exercise, what’s important is that you fit it into your regular daily schedule.
“While it shouldn’t get in the way of your sleep, vigorous activity is encouraged even at night,” Leadley said. It is recommended that adults aim to incorporate exercise at least 30 minutes a day, on most days. What you eat also impacts your ability to sleep. Gastrointestinal reflux (GERD) is a common ailment that can cause sleep disruptions, according to the National Sleep Foundation. Spicy and heavy foods often cause indigestion and eating should be finished two to three hours before bed. Avoid Caffeine The National Sleep Foundation says that while caffeine cannot replace sleep, it can temporarily make us feel more alert by blocking sleep-inducing chemicals in the brain and increasing adrenaline production. While it helps keeps us up during the day, it does negatively affect our ability to stay asleep at night. Caffeine takes approximately six hours to be eliminated from the body so experts

suggest drinking caffeine in the morning. “Don’t have caffeine after 1 p.m.,” Leadley says. “It’s a real stimulant that can not only keep you up but can cause anxiety.” Caffeine isn’t only found in coffee and soft drinks – it is in tea, chocolate, ice cream, weight-loss pills, pain relievers, energy water, and alcohol.
Create a Calming Environment Before you get in bed at night, make sure to evaluate your room to ensure the best sleep can be obtained. Incorporate essential oils like lavender and be sure you are sleeping on a comfortable pillow and mattress with good support for both you and your partner. Also make sure your sleep environment is dark and cool. “The body has to cool down to initiate sleep,” says Leadley. “Aim for a temperature between 60 and 70 degrees.” Utilize white noise to help drown out any outside noise or sleep with ear plugs. Install black out curtains or shades if you need to sleep during the day to eliminate light. If you do find yourself waking up, you should get up and go into another room and try thinking about something that helps you relax such as golf or a beach vacation. “Counting waves actually helps your brain relax and you can fall asleep,” Leadley adds.

n an effort to help employees achieve good health, Able Aerospace Founder and CEO Lee Benson constructed a gym and implemented a comprehensive wellness program at the company headquarters located at Phoenix-Mesa Gateway Airport in Mesa. Today, Benson not only oversees 440 employees who engineer and manufacture aircraft repair and replacement parts, but he’s also focused on keeping his team happy, healthy and productive. Increasing Team Performance Since the majority of staff at Able Aerospace are engineers who often lift and inspect aviation parts, they need to

move properly to avoid injury. Through the wellness program, certified physical trainers and health coaches guide employees on proper strength training, cardiovascular and stretching techniques in the 10,000-square-foot, on-site gym. “We focus mostly on movement, mobility and range of motion for achieving good posture,” says Mike Austin, lead health coach at Able Aerospace. “It’s not a high intensity program.” Daily group classes are available multiple times throughout the day such as yoga and Zumba to promote balance and stability. There are also outside activities employees can join such as the hiking or biking club or sign up as part of a team for a weekend race.
“Having an employer that supports fitness at this level is a huge benefit,” says Mark Johnston, certification manager at Able Aerospace and Chandler resident. “It allows me to remain extremely consistent, even when I travel and can’t participate in a class, [trainer] Mike provides me with a road workout kit so that I am always moving forward in my progress.” Healthy cooking courses provide tips on how to incorporate whole food into daily diets and nutritional education offers tools to make smarter meal choices not only at the office but at home too. There are also many healthy lunch options for staff to choose.
“All of our vending machines are stocked with healthy options that are appealing to our employees,” Austin adds. At the Shake Shack – the cafeteria conveniently located on property – employees can purchase affordable protein shakes, salads, wraps or sandwiches for lunch so they can dine in instead of grabbing a meal at a fast food restaurant. Healthcare Savings As an incentive for participating in the wellness program, Able Aerospace will pay the health care monthly premiums for employees who work out two times per week. On average, monthly premiums range from $100 for an individual to $230 for family coverage. The company considers this to significantly impact overall savings traditionally spent on health care expenses including sick days, medication and other medical treatment for its employees. “We currently have 51 percent of our staff qualified for the health care premium reimbursement program,” Austin says. “We would love to reach 100 percent participation.”
Employees like Mark Johnston who participate in the wellness program no longer experience pain or need prescription medication for diseases such as diabetes and medical conditions like high blood pressure. “I developed chronic low back pain for which I had years of traditional medical treatment including epidural injections, physical therapy, chiropractic treatments that provided little benefit,” says Johnston. “When I was a participant in the pilot wellness program, I had immediate and significant improvement in my condition.” To date, Able Aerospace has saved $3.4 million on medical claims alone in the last four years. “Not only is it a savings to our employees, but a savings to us,” Austin said. Johnston says he’s now free of back pain and has significantly better mobility and strength, making him a very present and productive employee. The company is also tobacco-free and offers to pay for smoking cessation, counseling and other supportive therapies as incentive for employees to quit.
Marketing the Program After further evaluation of the program’s success and by implementing best practices, Benson and his team are currently seeking opportunities to package their wellness program and market it to other local businesses. The Able Aerospace wellness team would be available to help with training and managing the program for businesses seeking out a similar type of program. Last March, Able Aerospace was awarded the number two spot in the Phoenix Business Journal’s annual Healthiest Employers Program in the mid-sized company category. Leaders at Able Aerospace attribute the success of the wellness program to the company’s strong culture. “We have created a culture centered on wellness,” Austin says. “We really care about our employees.”

Hoofbeats With Heart

T
here are four little sisters who love to ride; they have sandy hair and bright soulful eyes. When they ride on the back of a horse, they feel free and at ease; for them, riding provides a sense of peace that can be difficult to find without a horse to lend its magic. Frankie Macias is the mother of two sets of beautiful twin girls. They are 5 and 7 years old, have been riding horses since they were two and three, and they all have autism. She fondly remembers the girl’s first day of riding at Hoof beats with Heart (HWH), the only East Valley therapeutic center to offer all four equine-assisted activities and therapy services: therapeutic riding, equine-facilitated learning, hippotherapy and equine-facilitated psychotherapy. “I wasn’t sure if my girls enjoyed the experience, but when we left the farm that day, one of my older twins spoke ‘yes’ after I turned to look at the other twin who had reached out to touch me, and was nodding and smiling. The significance was profound because they had lost all speech a year before and had become non-verba l /non- com mun icative after 18-20 months of age,” says Macias. One to two times a week, the family drives one hour to the center, where the girls participate in hippotherapy sessions; specifically speech and occupational therapy, which is conducted by a licensed therapist. The therapist uses sensory exercises, in conjunction with the rhythmic motion of the horse, to develop balance, strength, coordination and flexibility. These activities help improve neurological function and sensory processing, and can help improve skills to perform a wide range of daily activities. Macias tries to schedule the sessions no more than two or three days apart, but says the effects of the ride builds up in their systems and can last for five to six days. She observes that her daugh-

ters do better academically, developmentally and verbally with consistent riding. “When my 7 year olds started at age 3, just being in the unfamiliar farm environment overstimulated their senses with all the new sights and sounds of horses, roosters, etc., as well as the new smells, textures and tastes on the wind. Often they would cry their first four to five weeks, five minutes into riding, until a peaceful calm would come over them. Then they would spontaneously begin humming or singing during the rest of their session. Six weeks later there weren’t any more tears and language began to emerge and consistently increased,” says Macias. “I have been sold on hippotherapy
from the beginning and it just keeps getting better.” They perform all sorts of activities from horseback such as painting and riding on the activity trail where they can mail things in a mailbox, clip clop across a bridge, go up and down hills, through a mister and even throw beanbags through targets. Macias says that riding affects her girls on a molecular level. The movement in their hips target their neurology, and although there are few studies out there to support this relatively new work, it’s common to hear therapists and parents talk about the release of endorphins having a positive effect on the rider’s brain chemistry. “They have less anxiety, they are calmer and are more comfortable in their body,” says Macias. She explains that they experience a constant weightlessness,
similar to what one feels on a roller coaster. But when they ride, they become grounded, heavy and more aware of their body. “It’s impressive and I’ve seen such a huge change. When they don’t ride during the summer it’s like they are on a standstill. It doesn’t go away, it’s just harder for them to access their abilities,” says Macias. Each day that they are out at the barn, they are there for about four hours while the girls take turns receiving private sessions. But they entertain themselves with all the animals, including a rescue bull. Mom and the girls thoroughly enjoy the farm and the great outdoors. Hoofbeats with Heart is run by a dedicated group of volunteers. Founded in 2007 by equestrian Kelley Hullihen, her goals were to provide the community with safe and exceptional equine assisted activities and therapies, by a team of passionate professionals, to improve the quality of life for individuals with physical and emotional challenges. The center is located on 10 acres of property in San Tan, Arizona. They also offer traditional non-equine therapies in their client’s home or the HWH therapy studio located at the farm. “Kelley is an amazing individual with a big heart who holds a job and also runs her charity, just so that those with disabilities can ride and have a better life. That is pretty special” says Darshan Dawson, marketing manager for HWH. CONTINUED >

Without the scholarships and grants HWH helps to provide, the twins couldn’t receive these services. The program works with the Arizona Department of Developmental Disabilities and accepts private insurance. “Kelley makes it her mission to provide hippotherapy to everyone in need. My children are proof of that,” says Macias. All four of the twins love to ride but one has a special affinity for animals. Mom says she would eat and sleep on horseback and never get off if she could. She seems to find the animals that are injured and has a special connection with them. She wants to ride everything with hooves and mom refers to her as the animal whisperer. For her and her sisters, HWH isn’t a clinical environment where they are participating in yet another therapy. It’s a farm filled with animals to pet, friends to play games with and friendly horses to ride. It’s a place that inspires, promotes miracles, transforms lives and ignites hope. I
t’s the beginning of a new year and if you’re like most people, you are setting resolutions. No doubt two of the top resolutions include losing weight and getting fit. aving honeymooned in Greece and spent a few days cruising the Greek Islands, I couldn’t wait to experience the cuisine at Cyprus Grill. And, I was not disappointed. Christodoulos Komitis opened his first restaurant in Phoenix over nine years ago. He moved here in 2001 to attend Arizona State University and observed a void when it came to healthy, fast and convenient Greek Mediterranean food. So, with an entrepreneurial spirit, he ventured forward and opened Cyprus Grill near the Biltmore area. Word quickly spread as the restaurant gained much popularity, especially with the lunch crowd that enjoyed gyros, grilled chicken souvlaki pitas and fresh salads. In the evenings, the menu changed to lamb souvalki, Moussaka and other favorites. With such popularity in Phoenix, they decided in 2011 to expand and opened the Chandler location. Both Christodoulos and Penelope are warm, friendly people who care about their customers and work passionately to provide the best ingredients. The food quality and reasonable prices keep bringing customers back. They pride themselves on using only the highest quality of lamb, chicken, pork and seafood, as well as preparing house-made salads, hummus and Tzatziki. “I honestly love everything on our menu, like most Greek men, I love lamb and that is why I seek out only the best meat possible, 28

not only because I like it but also because my customers deserve the best too,” states Christodoulos. LET THE TASTING BEGIN I started with the avgolemono soupa which is the traditional Greek lemon and rice soup. It is very good and can be ordered by the cup or bowl. I sampled a variety of appetizers, including a jalapeño hummus which was very tasty and served with small pita triangles. I could have made a meal out of that itself. The others included the Greek style chicken wings, which definitely were finger licking good; dolmades, which are tender grape leaves filled with rice and served with a delicious lemon cream sauce; spanakopita which is Phyllo dough filled with spinach, feta and herbs; and the Greek fries, which are tossed with crumbled feta, lemon sauce, Parmesan cheese and oregano. They all were very good and I can see how the Greek fries can be addicting. The house-made Tzatziki, which is the traditional cucumber yogurt and garlic sauce, is served with pita and is wonderful. I love this sauce and it is often served with many of the Greek dishes. I thoroughly enjoyed tasting the gyro sandwich which is served with roasted lamb that has been slow roasted on a vertical spit until it is moist and crisp, then thinly sliced and served
with Tzatziki sauce, lettuce, tomatoes, onions in a rolled up pita bread. A real winner! Next, I tasted the chicken souvlaki dinner which has marinated pieces of chicken on a skewer that is grilled to perfection. The large chicken pieces were very moist and tender. A delicious meal served with rice, pita and a side Greek salad or French fries. Other popular items on the menu include the lamb chop dinner, grilled shrimp skewers, pitas, and the Spartan club sandwich which became the number one pita sandwich at both locations. I couldn’t end my meal without sampling the baklava, which isn’t overly sweet and delicious!! My dining experience at Cyprus Grill was extremely enjoyable. I felt like I was back in Greece as I savored the flavors of my authentic meal. I can see why they have received the Best Of Phoenix awards for Best Mediterranean Food in 2009, 2010 and 2011.They also received the Best Appetizer award by Best Of Phoenix magazine for their pesto calamari appetizer. GIVING BACK The Komitis’ are thankful for their loyal customers and who have contributed to the success of their Chandler location. “We have grown so much as entrepreneurs and value more than anything our loyal customer base, many who have been with us since day one,” Penelope says. “We have people drive all the way from Phoenix, the amount of love and support from the community has been amazing.” Therefore, they want to contribute to the community by giving back to others. They support the local sports teams as well as at special school events for Chandler Traditional Academy and Hamilton High School. They also donate food to Elizabeth House, a women’s shelter, through the wonderful organization called G.I.V.E. Although the Phoenix location was closed last October, they are currently working on plans to open another Chandler location early this year. Confessions of an Almost Skinny B WORDS DENISE SNODELL
A
s I write this, I am eating a brown sugar cinnamon Pop Tart. What an idiot, considering it’s the month we’re all focused on health and fitness. It’s a January ritual. This is the month we all strategize. We frown at ourselves in the full-length mirror, which is really the rearview mirror of what we did in December. Now, if you were to give my silhouette an objective squint, and are not a Beverly Hills resident, you might conclude I’m on the slender side. Especially when my clothes strategically drape over my little bay window, otherwise known as (a quaint) protrusion in the tummy area. Chalk that up to middle age, a history of carrying two large babies and not having a 90210 zip code. Height and weight charts back up my claim of being vaguely, relatively, somewhat slender. Furthermore, recent cholesterol blood tests prove I neither snack on bologna-stuffed funnel cake nor guzzle half & half on a daily basis. I am okay. Yet, the Pop Tart. How do things like this happen? I have been known to roll shopping carts where vegetarians and natural food snobs gather. I read labels and put tempting items back on the shelf if they seem too “chemical-y” or, as my youngest would say, have “a factory taste.” But now I am discussing the act of eating something naughty the exact month everyone has a plan to get in shape. Here’s why: I believe rigidly depriving oneself, even in the clean slate promise of pure, crystalized January, will backfire. It’s the old “never say diet” philosophy. I live by it, because I know I would collapse from boredom pouring blue-tinted skim milk over Special Not OK cereal. Stomach growls and stalking celery never work for me. 34

No reason to count calories either, because it’s fairly obvious a chain restaurant’s Decadent Whatever Mudslide dessert is worth its weight in cellulite. Anything delicious and gooey and on the back page of a menu will give you four digits. Forget the numbers. Go ahead, order it, take a few bites or three or four, then box it up for home and just pray you remembered to have sons back in the mid-’90s. That would make them teenagers now. Male teenagers–the golden family members who instinctively pounce the square Styrofoam boxes mysteriously parked in the fridge. Everybody wins here. Sometimes, if my bay window offers too much of a view, or if I have trouble zipping up my jeans, I ever so casually put myself on a willy-nilly austerity program. A half-sandwich here, a nice apple instead of chips there. I find black coffee goes better with my outfit for a few weeks. Cream? What’s that? Garbage is always in the mix, though. No sense craving something for weeks and weeks. If it’s always allowed, it’s less vital. Trust me, that bad snack I just demolished (the one anyone squeezing a Thigh Master right now would kill for) had a slight cardboard aftertaste. For me, occasional junk food is fine, as long as I avoid the Los Angeles area and put a temporary hold on Victoria’s Secret model auditions. And speaking of secrets, here are three other things I do to maintain my almost-svelte-is-that-a-bay-window figure: 1. I sort of exercise by doing pathetic jogs or decent walks. 2. I never drink stuff with sugar, real or fake. 3. Any time I go to the west coast, I pack Spanx.
