F

all is one of my favorite times of the year. Growing up in the Midwest and watching the colors of the leaves burst into golds and reds and oranges always brought me excitement. Now living in the desert, I find myself missing those beautiful colors of fall; however, the lower temperatures and perfect weather make up for it.

Because of the comfortable outdoor temperatures, Arizona is a great place to get active outside. There are a countless number of different activities to keep you active and in shape: from outdoor bootcamps, to putt-putt mini golf, hiking and more. One of my favorite fall outdoor exercise activities is running. I have a goal to start training for my first marathon this fall. We will see how it goes! Read about more outdoor options and where you can get information in our feature this month. If you are dying to take in the changing of the leaves, a good place to do it is in Napa Valley, Calif. After the grape harvest, the vineyards boast their stunning colors, the hills roll in fiery reds against the blue sky, and the brisk smell of fall fills the air. Running from the Heat

The Valley’s only summer race series started in May and ran through August. The 2014 Summer Series consisted of four 5K races and one four miler. For anyone who has taken a run in 100+ degree heat knows that blood, sweat and tears were all part of the fun.

WONDERLAND!-THE MUSICAL ADVENTURES OF ALICE

See fast-paced, live improvisational comedy in this exciting show that will keep you on your toes. Wonderland!—the Musical Adventures of Alice, is a silly adaptation of Lewis Carroll’s classic, Through the Looking Glass, and comes to the Mesa Arts Center. Exuberant music will carry familiar characters through this coming-of-age story. Along with your favorite characters, you will see some new ones, like a train conductor, light saber-wielding knights, a baseball team, and a gospel group called The Responsibilities. BLEND PHOENIX MEETS HOUSTON Dancers show their skills in this concert event shared between the Phoenix-based Conversion Dance Project and the Houston-based Rednerrus Feil Dance Company. This is a great opportunity to see local dance work, as well as dance styles out of Houston. Performances run from October 24 to October 25, 2014. JOURNEYS OF A PHOTOGRAPHER: THE PHOTOGRAPHY OF SUE CULLUMBER Gorgeous lighting and vivid colors are a couple of the things you will see in Cullumber’s photography. Her love of recreational activities has led her to many far-off places where she has taken unique photos. Along with being used for audiences’ viewing pleasures, the photos have also been used as aesthetic instruments to discuss environmental conservation. Cullumber’s photos have been published in National Geographic, as well as Parade Magazine, and she can often be seen hiking around the Southeast Valley with her camera. DIA DE LOS MUERTOS FESTIVAL The Day of the Dead is upon us and spirits will unite at the Mesa Arts Center. The Dia de Los Muertos Festival will have a colorful mercado of jewelry, merchandise, and arts and crafts, as well as tasty foods. The festival will also feature live entertainment. FALL RHYTHM FEST Feel the rhythm of the night as Tumbleweed Park hosts the Fall Rhythm Fest. Have fun with the whole family during this evening of music, fireworks and fun. Entertainment will be provided by some of Arizona’s hottest bands, and there will be a variety of delicious food and beverages. The kids will enjoy interactive amusements, while the adults can take part in music contests. Then relax with the family on lawn chairs and blankets for the rest of the evening as you listen to the sweet sounds and watch the fireworks display. Admission is free. TARGET 3 FOR FREE Come take part in special events put on by Target 3 for Free. Free events will take place in the Arizona Museum of Natural History, Mesa Contemporary Arts Museum, and the i.d.e.a. INDIAN ART MARKET The city of Chandler hosts the Chandler Indian Art Market from October 10 to 12. The event is in collaboration with the 10

DANCE BALLET BASICS Created for the lightly trained dancer, Dance Ballet Basics is a fun class that will focus on building a solid ballet technical base. AN EVENING WITH ALEX BOYE After stunning the world with his “Peponi” on YouTube, Alex Boye takes his solo career on tour. Known for his African take on American pop music, as well as ethno-classical music, Boye takes on fresh new combinations of ethnic sounds with pop music. CERAMICS: SODA OR WOOD FIRING Slips and glazes, surface decoration, and soda and wood firings will all be a part of this exciting ceramics class. A major focus will be on the soda and wood firing process, which includes loading, firing, and unloading kilns. One of the goals of class will be to play with different ways of firing the Boury-box style wood kiln and down-draft soda kiln. Surface, slip, glaze, and wadding techniques will also be discussed in this class. The ceramic fun starts on October 22 and finishes on December 10. Classes take place at the Mesa Arts Center. ALI JACKSON TRIO The man with the drummin’ hands comes to Mesa Arts Center. The talented Ali Jackson has performed with legends Aretha Franklin, Wynton Marsalis, and Dee Dee Bridgewater. Jack Strikes Back: Leukemia Survivor Inspires Others Chandler dad turns tragedy into triumph by honoring son and giving back Article Meghann Finn Sepulveda | Photography Provided

H

e was a normal, healthy four-year old. It wasn’t until his parents, Keith and Beth Welch of Chandler, noticed Jack was more tired than usual. Unexplained bruising on his legs raised initial concern. Doctors diagnosed Jack with acute lymphoblastic leukemia, a blood and bone marrow cancer, on Sept. 19, 2011. Learning about the diagnosis, the news came as a shock to the Welch family, including big sister Natalie, now 10. “We immediately thought that maybe there was something we could have done to prevent it,” says Keith, a Chandler Fire Department battalion chief in the Outreach and Innovation section. “We wondered if he was exposed to something that caused it.” After meeting with a team of physicians at Phoenix Children’s Hospital, the family learned that there was no genetic link and that Jack just happened to fall into the category of children who are at risk for the disease: Caucasian males between the ages of three and five. According to The National Cancer Institute, this type of cancer occurs when the bone marrow makes too many immature lymphocytes, a type of white blood cell. 12

“We were devastated,” Keith says. “We felt anger, but that didn’t come until later. We first had to come together and fight.” Treatment

Jack was immediately admitted into the hospital where he spent a week before heading home for treatment. Jack will complete three years and four months of treatment this coming January. Although he was considered to be in remission after the first month, Jack required on-going treatment in the event that the cancer was hiding in his body. His treatment included eight months of high-dose chemotherapy and cranial radiation. Now in maintenance, Jack takes a low-dose chemotherapy pill every day and undergoes a spinal tap every 90 days to test fluid to confirm a negative diagnosis. “Life got much easier when Jack could take the oral chemotherapy pills,” Keith says. “But he experienced typical side effects such as nausea, vomiting, weight loss and extreme mood swings.” Finding Support, Giving Back While in the hospital, the Welches read about the Leukemia & Lymphoma Society and learned about Light the Night Walk. This annual event honors blood cancer survivors, as well as those lost to the diseases, and it shines a light on the importance of finding cures and providing access to treatment.


In the November following Jack’s diagnosis, the Welch family signed up for Light the Night Walk and created the “Jack Strikes Back” team. “In less than a month, we were able to raise $8,000 as a result of love and support that came from family and friends,” Keith says. “Following the event, I was asked to join the board of directors.” Serving as a board member for three years, Keith says that this opportunity gives him a way to identify with and give back to the community. He is also asked to speak regularly to various organizations for kids and adults about the financial help, research and community support available through the Leukemia & Lymphoma Society. “It’s uplifting to tell your story or hear others who have been through this journey,” Keith says. “These stories of strength help put everything into perspective.”

Bright Future

Today Jack is a healthy and active little boy. A second grader at Ryan Elementary, Jack enjoys playing baseball, football and basketball. His dad is grateful to be his coach. “He’s a survivor,” Keith says. “I get to do the normal things every dad should get to do with his son.” As the end of Jack’s treatment nears, the Welch family is hopeful that Jack can remain cancer free. “We’re positive and cautiously optimistic,” Keith says. Setting a Positive Example

The desire to give back is something Keith hopes will motivate his children. “This has changed us and we’ve all learned a lot,” he says. “I stop and think about what I can teach my kids and am hopeful I can instill this in them.” Welch feels it’s important to demonstrate this to children at an early age. “I want to be a good example to them.”

R

ecreation and Athletics for the Disabled (RAD), a Chandler nonprofit organization, was founded nine years ago to ensure that people who have disabilities can participate in sports, recreation and Special Olympics, regardless of their financial situation. Their slogan is, “RAD pays so others can play.” RAD works closely with the city of Chandler’s therapeutic recreation program. Paul Tom, RAD’s board president, is a Special Olympic athlete. Tom says, “The city of Chandler has an awesome program to help train people for the Special Olympics, but it’s not cheap.” RAD is truly a mission of love embraced by the whole Tom family. Paul’s wife, Harriet, is the board secretary and their son has been a recipient of RAD support. “You never are prepared, or you never think when you are young that you are going to have a child who has special needs,” says Harriet. “Over the years, I have learned so much from my son and his friends. I am so proud that we decided to do this [start RAD] nine years ago.” Some of the activities offered through the city include bowling, softball, golf, track and tennis. RAD is dedicated to assisting any person who has a disability and wants to participate in recreation or athletic activities. They occasionally pay for equipment, team shirts, and items like bowling ramps. They also put together several social events for participants. RAD doesn’t turn anyone away who wants to participate in the city’s sports program. RAD has also provided scholarships for city-sponsored summer camps and trips to Disneyland. “Many of the people on our board and volunteers,are parents, grandparents or friends of people with disabilities,” says Harriet. “Our son is 31 now. When he was little he didn’t play little league or t-ball. But over the years with all the training and practice, now he’s an amazing athlete. Four years ago he participated on a national level in Nebraska for flag football. The Chandler team won the gold metal. But it doesn’t come cheap.” RAD has no paid staff, and virtually no overhead, so the funding they raise 14

goes directly to the athletes. They don’t have a facility of their own, so they utilize the Chandler Senior Center for board meetings. Their major source of funding is a grant, but they also welcome and encourage financial contributions from the community. Their donations qualify for the Working Poor Tax Credit, so families can donate up to $400, individuals can donate up to $200, and receive dollar for dollar back at tax time. RAD hosts social events like their annual family luau barbecue, in which they rent the Hamilton Aquatic Center for the party. They have a movie night at Harkins in Chandler Fashion Square. RAD provides the movie, drink and popcorn for all the guests and they fill the theater. They also have a 1950s sock hop. Their last hop attracted 300 people, including guests from Scottsdale, Mesa and Tempe. “It gives kids an outlet. It gives them an opportunity to socialize,” says Paul. “It gives us a support system. As family members and parents, it’s great to know we aren’t alone,” says Harriet. “But it’s mainly for our son. He’s been able to make long-lasting friendships,” says Paul. “We wish we could be bigger and wish we continued > could clone the program [for other cities].”

She has a rare disorder called Prader-Willi syndrome, but she doesn’t let that stop her from competing in the sports she loves and inspiring others to do the same. Heather has been involved with RAD for the past eight years and competes in the Special Olympics in cheer, track and field, swimming and bowling. “I like it,” says Heather. “It makes me happy.” Heather lives with her grandmother, Clota Honea, a RAD board member who helps with fundraising. “There are about 150 people who live in group homes who couldn’t participate if it weren’t for RAD,” says Clota. In addition to the sports, Heather has also enjoyed the parties and socialization. She was nominated for most inspirational athlete through Special Olympics, even though only one is chosen per state. Heather has even had her art work selected for use in a fundraiser in conjunction with Paper Clouds Apparel. “RAD has given her the opportunity to sparkle and shine,” says Clota. “They are a community of their own and they get that acceptance. ome states live for the summers, while Arizona lives for summer to end. And with the temperatures finally dropping into the friendly double-digit regions, the joys of living in Arizona are once again back in full force. It’s tempting to stay indoors and spend your weekends immersed in all things football, but these days were made for outdoor enjoyment. Breathing in the cool brisk air as the sun is rising over the horizon makes for absolutely perfect conditions for any outdoor activity. Hut, Hut…Hike! (or Bike) One great pastime is taking to the mountains, and locals can do so either on two feet or two wheels. Hikers and bikers alike can have their pick of any of the many trails in the area that range from easy-going to butt-kicking difficult. They can head up Mormon Loop on South Mountain or Cholla Trail on Camelback Mountain for both a cardio boost and a view of the city when you reach the top. all sports’ season has arrived and the next best thing to being at the game is watching the game with friends at your local sports bar. Over the last six years, the Stadium Club, on Ray and Alma School, has become the go-to place for the game…. and a week full of fun events! With 30 flat screen televisions and a big screen, you’re sure to catch all the games as well as sing a little karaoke as you wind down the evening from 9 p.m. to closing, Tuesday through Sunday. People have so much fun singing oldies but goodies here that Stadium Club earned the New Times Best In Phoenix award for karaoke, as well as the East Valley Tribune Best In East Valley award. If karaoke isn’t your specialty, don’t despair. Try out a little Team Trivia on Wednesday and Friday nights from 6:30 p.m. to 9 p.m. with gift cards given out each night.

back in her hometown of Buffalo, New York. Kruse tended bar during her college days and continued to one night a week even after she started her corporate job. When her office moved, Kruse jumped back into what she loved and purchased the Stadium Club. “I was fortunate to achieve my goal of having a neighborhood bar and restaurant at only 27 years old,” Kruse says. “My customers are like my extended family.” It’s been eight years since Kruse made that decision, and the last six years she’s been running the restaurant with her parents (and partners), Mike and Debby Kruse. The family business keeps growing into one big family. “We hope to provide an atmosphere where everyone feels at home, has a great meal and a great time on every visit,” states Debby. “The Stadium Club is a place where you can get comfortable, relax and have fun.”

In addition, you can create your own Bloody Mary Bar with all the garnishes. During half time, you can enjoy a game of pool on one of two tables. And, if you are a serious pool player, be sure to ask about the pool league that plays on Tuesdays and Thursdays. A Menu to Please Everyone

I started my taste testing with some of the popular items on the menu. Since the Kruse family is from Buffalo, it was only fitting for me to try the Buffalo special, Beef on Weck. This sandwich consists of thinly sliced organic beef served on a “Kummelweck” roll that is topped with kosher salt and caraway seed and served with a horseradish sauce. I thoroughly enjoyed it as I dipped it into the au jus sauce. Next, I sampled another Buffalo specialty, the chicken wings. These jumbo


wings are fresh, and very meaty. Choices include regular, mild, medium, the honey barbecue, teriyaki, hot and Sun Devil hot. If you like wings, try the 49-cent wings special on Tuesdays. Plus, you can order the wings with bones, boneless or naked (unbreaded) wings. All are served with celery, carrots and homemade ranch dressing. They really are finger-licking good! I sampled a half-pound, flame-broiled burger topped with lettuce, tomato and onion and green chili sauce. This burger was nice and juicy. I especially enjoyed the green chili sauce, which is also available on the chicken sandwich. Sides include steak fries, curly fries, sweet potato fries, onion rings, potato salad, cottage cheese, chili cup, house-made coleslaw or chips and house-made salsa. Chris Whitman was a regular customer before becoming the kitchen manager and head chef. He currently is attending Le Cordon Bleu and plans to graduate in December 2015. Whitman also worked as kitchen manager at Firebird’s and Tonic Tavern and Kitchen.

“Employees are treated like family, and customers are treated like guests,” says Whitman. “That is why I enjoy working here with the Kruse family.” Stadium Club is also a popular family destination and kids, 12 and younger, can select from a menu that includes burger sliders, grilled cheese, hot dogs, and chicken fingers all served with fries or a cheese quesadilla and a drink for only $4.99.

aving spent thirteen years in the Girl Scouts, Alexis “Cookie” Carter knows a thing or two about selling cookies. She knows quite a bit about baking them, too, which is why shortly after relocating to the Valley from Southern California in 2011, she founded Cookie Girl Cookie Shop. Now don’t worry guys, it’s not just a girl’s thing. “I had been a math teacher for over eight years, and at the end of the 2012-2013 school year it just felt like it was time for a change,” explains Alexis. “I really wanted to see where I could get this cookie business to go, so I just kind of stepped out on a leap of faith.” Her approach to growing her company has been slow and steady, which has allowed her to focus on perfecting her recipes. Alexis sought an outlet that would allow her to get the Cookie Girl name out while at the same time allow for quick feedback on new reci22

pes and ideas. Cookie Girl Cookie Shop is committed to using 100% natural ingredients and offers a unique variety of traditional, wheat free and vegan cookies, so one place made perfect sense. “The farmer’s markets, for me, have been a wonderful test market,” she says. “They have been the best way for me to see if my customers like my cookies and they are fast to offer their feedback – both in what they like and don’t like, and what kind of cookies they might like to see.” The farmer’s markets have also been a great way for Cookie Girl to build early relationships with their clientele, which in turn has helped to establish a very passionate and loyal following very early on. “I am just continually meeting people who enjoy the cookies and before I know it I am delivering to their work or even their homes,” adds Alexis. “It has really been just word-of-mouth that has been the most powerful. People who


enjoy Cookie Girl Cookies are telling their friends and family members to come and check us out. The cookies find themselves in the workplace or at different gatherings and the next thing I know I am getting new orders.” With best-selling flavors like Oatmeal Chocolate Chip, word-of-mouth tends to come easy. But it is unique flavors such as the soon-to-be-famous Sweet Potato Cookie, made with highgrade extra virgin olive oil, which really seems to generate the most buzz. “Most people have never heard of a Sweet Potato Cookie until they hear about ours, but when they do they stop in their tracks, their ears perk up, and they just have to try it.” Looking toward the future, Alexis has set her sights high as she plots the trajectory of her company. She hopes to someday see Cookie Girl Cookie Shop cookies in everything from vending machines to high-end grocery stores. Not wanting to forget her roots, however, she also would someday like to have her own storefront that would allow her to continue to distribute her product directly to her customers here in town. “I always want to have a local presence,” she says. “These

umpkins, pumpkins, pumpkins… They are everywhere this time of year! Those iconic orange symbols of Halloween not only make perfect jack-o-lanterns and tasty pie, but pumpkins also help create moist, delicious muffins and nutritious smoothies. Packed with Vitamins A and C, pumpkins are a nutritional powerhouse of antioxidants and dietary fiber. Amazingly low in calories with only 26 calories per 100 grams and no saturated fat or cholesterol, pumpkins are also a rich source of minerals, including copper, calcium, potassium and phosphorus. The “zeaxanthin” in the pumpkin helps filter UV rays in the retina of the eye, helping to protect from age-related macular disease (ARMD) in the elderly. There is no shame in using canned pumpkin; many professional bakers use it. Plus, the nutritional benefits are nearly the same in canned and fresh pumpkin. These easy pumpkin muffins will warm your kitchen with the cozy fall aroma of cinnamon and nutmeg, while the healthy pumpkin smoothie is like pumpkin pie in a glass, without the fat or calories.

They bake up delicious as mini-muffins or as a cake. Personalize these muffins by adding a cup of your favorite chopped nuts or fresh cranberries. Ingredients:

1 box (18.25 ounces) spice cake mix (any brand) ½ teaspoon cinnamon ½ teaspoon nutmeg 1 can (15 ounces) pumpkin (NOT pumpkin pie mix) Streusel topping (optional): 1/3 cup all-purpose flour 1/3 cup light brown sugar ½ teaspoon ground cinnamon ½ teaspoon nutmeg 4 tablespoons (1/2 stick) unsalted butter, cubed small Instructions:

Heat oven to 350°F. Line a 12-cup muffin tin with paper liners. Place all ingredients in a large mixing bowl (Note: Disregard directions on cake mix box, adding only pumpkin, cinnamon and nutmeg to the dry mix). Stir until well combined, either by hand or using an electric mixer. Add nuts or cranberries, as de-

sired. Spoon into paper-lined muffin cups, about 2/3 full (batter will be thick). Smooth top of batter to create neat muffins. If using streusel topping, sprinkle each muffin with about 2 teaspoons of streusel topping. Bake at 350°F for 16-20 minutes. For streusel topping: In a large bowl or food processor, combine all ingredients (use pastry blender if mixing by hand). Pulse to combine, until batter is small balls, the size of peas. Yield: 12 muffins. Per serving: Calories: 128; Fat 3.8g; Carbs: 23.2g. Cost Per Serving: $.63. Pumpkin Spice Smoothie

2 cups unsweetened almond milk (or, use standard 2 percent dairy milk) 1 cup canned pumpkin 1 large banana 2 tablespoons golden raisins (optional) 1 teaspoon pure vanilla extract 1 teaspoon ground cinnamon ½ teaspoon ground nutmeg ½ teaspoon ground ginger Instructions:

“S

o who actually read the waiver before they signed it?” the instructor asked. Sheepish grins crossed my entire class of some 10 people. “Exactly,” he continued, “because we know if you had, not one of you would still be here.” The group erupted in laughter. “Now we are going to watch a video explaining exactly what the document did say.” Welcome to skydiving. Ever since I was a child jumping down stairwells with my best friend onto carpets and wearing red capes pretending we were Superman, I’ve wanted to f ly. More than once, I’ve dreamed of soaring like a bird above the earth. Over the years, I’ve been hang gliding, bungee jumping and even f lew through the jungles of Costa Rica on canopies like Tarzan. But through it all, nothing has compared to jumping out of an airplane 14,000 feet high, free falling for what seemed like eternity, and relying on nothing more than a bunch of vinyl to ensure my safety back to reality. The year was 1996. I was a mere 27 years old. Having just finalized a divorce, I was looking to experience all life had to offer-to do something crazy and even dangerous. My destination was Hinckley, Illinois—about three hours outside Chicago. I chose to skydive tandem, which meant I would be attached to an expert parachutist with clips. It would be the expert’s parachute that would save us from certain doom. By going tandem, I would now have to “free fall” for two minutes. If I went solo, a mechanism on the airplane would release my cord the moment I left the airplane. Free fall, baby! Next, I signed numerous waiver forms. I actually did start to read one, but after the first mention of death, I stopped read-

ing and just signed. I responded several times to workers’ questions with, “Whatever.” Then came the video. A religious-looking man in black attire with a long white beard spent 15 minutes saying something like, “What you are doing is very dangerous. You could really, really die. You could really, really be permanently paralyzed. You could have brain damage. But if you do, you won’t sue. If you can’t walk, you won’t sue. If you die and can’t walk, no relatives will sue…..Have a nice day.” After the completely ignored message and a quick lesson in terms of what would actually happen, I dressed in what looked like an orange prison jump suit with a helmet and goggles (like that would save me). Then my guide, Bill, clipped me to his gear. We boarded the airplane. Before I knew it, I leaped to my death—I mean, jumped out of the airplane. I was flying! I beamed. “Fun, huh?” Bill said as we hurled more than 100 miles per hour through the sky. “Okay, pull the cord.” I panicked. I couldn’t find it. “Pull it!” I still struggled. “If you don’t pull it in the next second, I have to,” he said, with worry now. Success. After we catapulted another 100 feet up, we drifted for another five minutes. The sky never looked so blue. The sun never looked so yellow. Life has never been the same.
