What are you thankful for? A cozy home? Family? A job you love? Your health? I'm endlessly thankful for all of the above, plus something else: Friends. I moved around a lot growing up. There's value in that – it taught me to adapt, to work harder, to see the potential in new situations and to rely on family. What it didn't teach me was what it felt like to have long-term friends. There were no cell phones, Internet, Facebook or Instagram back in my day. There were landlines with the accompanying long-distance charges and snail mail. With a couple of wonderful exceptions, I lost touch with the friends I knew for a season. Then, I went to college and fell in with a group of girls that are fast friends to this day. In fact, the four of us traversed Switzerland, Germany and France together last month. Post college, I struck gold again with colleagues in a new city – over the years, those friendships have grown to resemble family so closely that our families are traveling thousands of miles to spend Thanksgiving on the beach together this year. And here in Colorado Springs? Gosh, I'm blessed with amazing friends who help mother each other's children and tackle the laughter and tears of life together. What's the saying? Sharing doubles the joy and halves the sorrow? It's absolutely true. May I encourage you to take a moment this month and think about the big and small things you're thankful for. And, more importantly, the people you're thankful for? Tell them. Show them. And by all means, please read this month's issue. It's jam-packed with great articles... a fine-dining establishment that began as a pop-up dinners project, a local pie truck that serves up heaven in a pan, a cider house that offers three tiers of sweet brew, a new shop embracing the art of "maximalism," a one-day ballet, the history of Manitou Springs, winter scents from several local candle makers and more. Pie. It conjures up images of grandma’s table, laughter and family. It’s happiness in a nine-inch tin. As the holidays approach, we spoke with Heather Briggs, owner of Gold Star Pies, about the beauty of this versatile dessert.
THANKSGIVING AND PIE – THEY GO TOGETHER LIKE PEANUT BUTTER AND JELLY. WHY? The holidays scream for beautiful desserts and pie is a gorgeous labor of love. It takes time and it’s an art and making it for those that we love is a gift that we give. It’s a food that says we are thankful for someone and we love them enough to roll out a crust, combine decadent ingredients into a filling, shape a top crust, and bake to perfection. Thanksgiving is all about foods that are simple but take time and care, and pie is one of those.
WHAT PIES DO YOU OFFER AROUND THE HOLIDAYS? We always feature our truck favorite, Bourbon Pecan. It goes perfectly with any spread. This is our official menu for Thanksgiving: Pumpkin, Salted Maple, Dutch Apple, Chocolate Chess, Bourbon Pecan, Tart Cherry and Apricot Honey Cobbler. Sampler Pie: One slice each of the above 7 flavors.
MOST SUPERMARKETS OFFER A SPRAWLING PIE SELECTION THIS TIME OF YEAR – WHAT MAKES GOLD STAR PIES DIFFERENT? Our pies are made from scratch, in small batches, and all the dough is hand-rolled. We make sure we get a flaky, delicious crust on every pie. We hand peel and chop the fruit and nuts that go in our pies, and love to get creative with ingredients. Our customers appreciate complex spice combinations and creative flavors. We love to feature local fruit and we always bake in season. We offer the tried-and-true classics, but always have an outlier for the adventurous.

or delivered. The easiest way to find us is to check the calendar on our website here: goldstarpies.com/calendar. We try to get the truck out once a week for folks to get slices.
HOW MANY PIES HAVE YOU HAD IN THE ROTATION OVER THE YEARS? WHICH ONE IS THE FAN FAVORITE? WHICH ONE IS YOUR FAVORITE? We usually have about 40-45 flavors rotate through the menu over the course of a year. We bake in season, so many of the fruit flavors come and go depending on what is ripe and available. My favorite pie is Rhubarb Cream, which is a childhood favorite that my grandma used to make. It’s very seasonal and we only make it in the early summer, usually with rhubarb from Black Forest. The fan favorite is either Bourbon Pecan, which we make year-round and hardly ever leave off the weekly menu, or Palisade Peach, which is a summer flavor for us.

EVERYONE BAKES CAKES, BUT MANY FOLKS ARE INTIMIDATED BY PIES. WHY IS THAT AND WHAT ADVICE WOULD YOU OFFER THEM? We teach pie classes and what most people say in class is that making crust is intimidating and keeps them from the joy of baking pie. In reality, crust is easy to whip up, and pie is a rustic and very forgiving food. I always encourage people to be brave and mix fruits and spices, and to err on the side of leaving a pie in the oven for an extra 5 minutes. The biggest mistake in making pie is undercooking, which can lead to a soggy crust and runny filling. Making sure the pie bakes long enough to set well and produce a thick and bubbly filling is key.

THE FINE ART OF MAXIMALISM Shiplap isn’t for everyone. Chunky layered bangles and statement eyewear might not be for everyone. But for icon Iris Apfel they are foundational to her look. She takes joy in relaying the origins of each piece. She recounts the search that started in her adolescence to find pieces in antique stores that stood out and conveyed a feeling. It’s not just a fashion statement, it’s a memory, and it’s a conversation. Coco Chanel is credited with stating “Before you leave the house, look in the mirror and take one thing off.”
MAXIMALISM Maximalism is in direct disobedience of Chanel’s sentiment. Maximalism is a world in which more is more. Where colors are not muted and accessorizing is not just encouraged, it is essential. Patterns are not just tossed in to create texture, they are layered to increase depth. And it is a world where quality is the main requirement. Maximalism is an exercise in full immersion. Evan Guy is Colorado Springs’ maximalist experience.
EVAN GUY Drawing on 35 years of industry experience including interior design and high-end consignment, Richard Schell and partner Greg Wragge reimagined what was in order to create a new brand. Evan Guy is this brainchild. Schell was first hired at 13 to arrange and make things beautiful. He worked in a flower shop through high school, while also nurturing a musical background that allowed him to travel outside of his small Wyoming town after high school. His work history includes a short stint in the oil fields prior to being drawn back to design in 1985. Though he might breeze through this part of his career when he tells the story, it’s subtly reflected in some of the more industrial elements of his design. Schell has designed for the illustrious Broadmoor Hotel and branched out in 1987 with Wragge to open Rich Designs Home, offering exclusive interior design for the Colorado maximalist.
Wragge is the strong silent to Schell’s charismatic nature. He is observant and attentive with a discerning eye. There is a sense of grounding in being in his presence. Colorado-born, Wragge has a musical background, as well, having studied piano, clarinet and voice. He has spent years collaborating and casting the vision of Rich Designs Home and maintaining the daily work of their shop “I Saw it First”, a high-end consignment store here in the Springs, through its closure. Music was how these two met more than 40 years ago and they have been harmonizing ever since.
FOUR DECADES Evan Guy is an amalgamation of Schell and Wragge’s two middle names. It is the evolution of their 40 years together and 35 years in business into one entity and has been described by their long-time associate, Beth, as the apogee of their careers. Carefully curated in extravagant balance, the space comprises interior design, gallery art, high-end statement jewelry, and a haberdashery. Bandit and Finn, Schell and Wragge’s two dogs, might as well be part of the staff as they are staples in the shop. Greeted as an old friend upon entry and offered a beverage from the hospitality station in the back is gilded, old-world gentility. Then the wandering begins. There is just enough white space, but no more than just enough.
TEXTURES + COLORS The textures and colors blend walking through the shop, but looking back, there is a realization that each space has been curated individually as its own vignette and transitioned ever so eloquently from one to the next. The dichotomy of standing out and blending in is captured at its essence here. A hardline masculine space is graced with a bouquet of long-stem flowers or a colorful piece of artwork as juxtaposition. Perhaps a room with metal and leather is made warmer with a plush throw or a cozy rug. Another room with bright CONTINUED >

colors and loud artwork is made softer with a velvet patterned pillow depicting wood grain, drawing the natural back into the seemingly synthetic. The second pass is even more impactful. In the second pass, one is free to let the lines draw the eye to the hidden gems that were missed on the first pass. The atmosphere of the room is encompassing and the mood is revealed. Other senses kick in and the wanderer notices there is a specific scent assigned to each space. There is age, there is culture, there is intention. The books in a space are not just to fill space, they are classics, they are vintage, they are early editions. The glassware is not just to hold items, it is its own item, curated to convey class. All of these items have been collected to emphasize the soul of the space. Schell and Wragge hope their space illustrates that polished same-ness is not all that is out there. They hope that guests can leave the shop confidently with a new one-of-a-kind piece, or at least knowing the same feel can be achieved in their own environment. The careful placement of things loved and memories collected creates a curated space that speaks volumes.

There’s a new way to kick off the holiday season in 2022: a one-day ballet performance called “Wintertides.” This collaboration between the Connexus Dance Collective and the Colorado Youth Ballet is supported by the Colorado Ballet Society. Three components will comprise the Nov. 19 event: Liminal Spaces and Pathways by Connexus and Stella Natalis by the Colorado Youth Ballet. Liminal Spaces is an energetic and electric piece that explores the “in between.” “The work explores seasons of waiting, pausing, and transitioning and represents thresholds for the physical, mental, emotional, and spiritual,” said Laci Landry, one of the choreographers. Pathways is a contemporary, abstract depiction of the different directions life can lead, intersecting in some places, and diverging in others. And the premiere of Stella Natalis, which means “the star of origin,” interprets the Christmas message of peace, compassion and new life in a ballet highlighting 60 members of the Colorado Youth Ballet. “The Colorado Youth Ballet Students are bringing their personalities to the Stella Natalis choreography, as well as their disciplined training,” said Kate Walsh Honea, artistic director for Colorado Ballet Society. The Colorado Ballet Society’s 25th anniversary season also will include a Holiday Showcase, A Colorado Nutcracker, Don Quixote and more.

ROBERTA O'BANION: HELPING FAMILIES BUILD MEMORIES
Roberta O’Banion isn’t simply a real estate agent – she’s in the business of making dreams come true. “Owning a home is a dream,” she said. “It’s the place you raise your family and build memories.”
HER STORY O’Banion grew up in Rio de Janeiro, Brazil. When she was 22, she moved to the United States to expand her law degree and learn another language. She settled in San Diego, decided to shift her energy toward travel planning instead, and stayed. Online travel agencies were tough competition, but O’Banion offered what many online outfits didn’t: superior customer service. “My clients knew that if they were traveling out of the country and had a problem, they could always reach me,” she said. “I was always available.” Then, 9/11 hit and travel ground to a halt. O’Banion’s career path zagged again – this time into real estate, where she has thrived for more than two decades. Four years ago, O’Banion and her family moved to Colorado Springs during the so-called bomb cyclone of 2018. Their son laughingly asked whether Colorado was such a great idea, but they have since settled in and love this community.
HARD WORK + HONESTY Growing up in Brazil helped shape the type of real estate agent she is. Her parents guided their children to work hard, to earn their money, and to always be honest and ethical. “I don’t have a filter,” she said, laughing. She said she regularly tells her clients, “You might not want to hear this, but… Then I show them the numbers with examples.” In other words, she sees her primary job as bringing her clients back to reality. About being honest. About sharing information and helping people think in the long term rather than in the moment when buying a house. “It’s all about creating that trust,” she said.

GOING THE EXTRA MILE So, with thousands of agents in the Pikes Peak region, how does she set herself apart? O’Banion tries to give every client an edge. That often includes: • A complimentary staging consultation. • A visit from O’Banion the evening before photos to make sure everything looks great. • A complimentary home clean-up to prepare for an open house. • Checklists to help prepare for home inspection and appraisal. • Virtual showings for potential buyers who aren’t able to visit in person. • Helping clients find the right home for them, even if means a lower commission for O’Banion.
The extended days on market can prove valuable to score a deal on a home, she said. “But be sure to balance your expectations,” she added. “Sellers still hold the cards as long as there are fewer homes for sale.” As for sellers, O’Banion said one of the biggest mistakes they can make is pricing a home too high. That typically leads to fewer showings, fewer offers, and could ultimately result in an unnecessary price reduction, she said. “If your home sits on the market too long, buyers may think that there’s something wrong with the property (even if there isn’t). … Don’t make the mistake of getting greedy!” she said.
SHEVOCK REAL ESTATE “Taking care of people has always been my passion and what I do the best. … the only way to be happy is to do what you love,” O’Banion said.
THE REAL ESTATE MARKET There are some indications that the local market is cooling a bit. What guidance is O’Banion giving clients? First, she said everyone should stop trying to time the market. “If this is the right time in your life for you to move, you find a place you like, and you can afford the monthly payments, go for it!” she said. For buyers, increased inventory means properties are sitting on the market longer than they were during this time last year and there typically are fewer home showings per property.

Just southwest of Colorado Springs tucked away deep in between the bright crimson rocks at the foot of Pikes Peak, you’ll see the faint glow of a little town known as Manitou Springs. You may know it for a few local staples such as the Manitou Incline, Miramont Castle, the Cliff Dwellings, and its effervescent mineral spring waters.
150 YEARS OLD It’s quirky, quaint and beloved by locals and tourists alike, and this year it is celebrating its sesquicentennial anniversary. Those who have had the pleasure of wandering Manitou’s charming streets may have heard a tale or two about the history of the town. Although time has afforded embellishments of the lore, you’ll be pleased to find that Manitou is far more fascinating than even the enthralling stories that give it its unique reputation.
DIGGING THROUGH HISTORY I was delighted to dig through some of the histories of the town by visiting the Manitou Springs Heritage Center & Museum and had the privilege of speaking with the man who knows Manitou: Board President Michael Maio. A wealth of knowledge on the town’s past, Maio walked me through the history of Manitou, sharing detailed stories, some of which I had never heard before. As we examined gems from Manitou’s bustling past, I learned the true story behind the legend of Emma Crawford and the coffin races, the history of “the other” incline, and even found out about the 12-foot tall and vibrantly lit “Manitou Springs” sign that was rumored to be seen from the borders of Kansas. Yet back before it was ever a town, legend has it that local Indian tribes believed the Manitou’s natural
mineral springs waters had magical healing properties, a gift from the “Great Spirit Manitou.” Whether or not the legends are true, there’s no denying that there is something special about the waters of Manitou. As the town grew around the eight mineral water springs, its reputation reached the far corners of the country. Manitou was believed to be a miracle mecca, promising clear mountain air and the prospect of healing waters.
TOURIST ATTRACTIONS Gaining popularity, appeal, and thanks to the booming railroad industry, Manitou Springs became known for multiple unique tourist attractions, including what we now know today as the Manitou Springs Incline, the more elusive Red Mountain Incline, and the Cave of the Winds. Manitou Springs became known for other attractions as well, such as the Ute Chief Gusher – a giant bottle that, well, gushed spring water, promoting the local bottling plant. It also became the birthplace of famous events such as a car race to the top of Pikes Peak that still happens annually and is known as the Pikes Peak Hillclimb. Or the more quirky, but notable, event of a man pushing a peanut up Pikes Peak with his nose. Yes, a peanut. Manitou has no shortage of history and intrigues, and although I’ve only begun to scratch the surface, you can do a deeper dive by visiting the Heritage Museum yourself. Surely, there would be no better time than now, during the 150th anniversary of Manitou Springs, to take a walk down its charming streets and experience for yourself the town whose history runs deeper than the effervescent mineral springs running through it. Boxing Brothers Ciderhouse Caters to Diverse Palates
Colorado Springs has a reputation for craft beer. With more than 425 breweries in the state, we call at least two dozen of those our own. Even with that kind of variety, beer isn’t for everyone. Matt Bonno and Katie Murray, high school sweethearts and owners of Monte Cervino Beverage Company, saw a need in the craft brew community. They decided to put their years of home-brewing to the test.
THE SWEETER ALTERNATIVE Boxing Brothers Cider was conceptualized when these two entrepreneurs moved to Colorado Springs and found a phenomenal beer scene. What they didn’t find, however, was cider. Cider for those who don’t like the taste of beer but might prefer something sweeter. Cider for those who have allergies to gluten and seek out cider as their libation of choice. Perhaps, cider for those looking to enhance their foodie experience or embrace a bit of nostalgia. Matt explains the different types of ciders and how he and Katie wanted to address a diverse palate while honoring ciders from around the world. The goal was to create

ciders to pair with meals in the way wine or beer are traditionally paired.
THREE TIERS OF CIDERS Boxing Brothers Cider started out distributing to liquor stores, then after a few years, opened its tasting room. This setup allows them to have three tiers of ciders. Flagships are always on tap and ones you are likely to find in stores, as well. Seasonals are fan favorites, but not necessarily offered year-round. Lastly, small-batch ciders can only be found in the cider house. Monte Cervino Beverage Company also has branched out and started small-batching wine as well as sourcing coffee beans to roast in the spirit of pushing the beverage envelope. Matt and Katie encourage locals to “Go to the weird spots, there is really good beer and cider here, and so much of it is local.” It’s easy to support your neighbors and ensure your dollars end up back in the community while getting adventurous with your beverage choices. Ephemera is a word of Greek origin that refers to experiences evanescent, only lasting a moment. The venue Ephemera — found within Colorado Springs’ culinary collective, COATI Uprise — fosters an environment that encourages guests to live in the moment and experience something impermanent.
POP-UP DINNERS Ephemera began as a passion project of pop-up dinners by chefs Ian Dedrickson and Adam Ridens, along with creative curator Jasmine Dillavou. Dedrickson and Ridens became fast friends working together at Chef Brother Luck’s fine-dining establishment, Four. The two later served as bartenders at Axe and the Oak Whiskey House, eventually co-managing the tasting room at Ivywild School. While behind the stick at Axe, the duo showcased their first pop-up dinner. “I had this dream of doing pop-up dinners, and the reality was first realized in my apartment,” Dedrickson says. “We did this goofy, coursed dinner for friends — and Jasmine put together awesome décor, creating a complementary environment. We decided to try another pop-up, and it turned into more and more.”
BRICK + MORTAR Eventually, Ephemera’s dinner events caught the attention of Atlas Restaurant Group. They partnered to create an elevated space within the culinary collective COATI Uprise. “At COATI, we maintain the idea of immersion, treating the space like a gallery,” Dedrickson says. “Every six to eight weeks, we have a new artist installation that Jasmine curates. The environment is really important to the dining experience.” The art of Ephemera is essential to their mission and vision, often integrated into their dishes and dinners — and Jasmine Dillavou develops the visual side, cognizant of color, scent and sound. “I ensure the visual weight of an experience is equal to the culinary,” Dillavou says. “Guests should feel
immersed, and both taken away and taken care of. A culinary experience doesn’t stop with the food or sense of taste. It goes beyond that.”
A CULINARY JOURNEY For one dinner, Ephemera paired with Su Cho, a Korean-American artist from Seoul. When developing the menu, Ephemera looked to the colors, concepts and shapes of Cho’s work and asked his mother to teach them proper Korean cooking techniques. Each dish was prepared and presented in a way that honored both Korean traditions and Cho’s artistic creations. “With our tasting menu, pairings and events, we curate your experience,” says Dedrickson. “You’re going to get seven courses with elements and combinations you’d never thought of — and great wines from places you’ve probably never heard of. We want Ephemera to be a journey into a different world — forget the next hour and a half; just have an exceptional experience brought to you.”
THANKSGIVING DINNER Ephemera plans to provide take-home Thanksgiving meals again this season. “Just pop by here, pick up your meal, ready-to-go, and enjoy each other’s company,” says Dedrickson. “Ephemera is known for experimenting, being esoteric and surprising, but Thanksgiving is about tradition and traditional foods. I really appreciate good, simple food done well.” On Dedrickson’s left forearm is an “old school,” traditional tattoo of a book with a red cover titled, Mise en place. This French phrase meaning “everything in its right place” refers to the setup and preparation required before cooking.
