At Union Fitness in Eagan, owner Jen Williams has created a welcoming environment where fitness meets community, making it a destination for women looking to take charge of their health and wellness at every stage of life.

A HOLISTIC APPROACH TO FITNESS

Union Fitness is not your typical gym; it’s a family-owned space that focuses on a holistic approach to fitness. Union Fitness is designed to help members feel their best, from building physical strength to nurturing emotional health. One program, Empower-U, is tailored specifically for women navigating mid-life changes. This eight-week program brings together small groups of women who start the journey together, working on strength training, nutrition, and emotional health. Jen explains, “Women come to us feeling like they’ve lost themselves, their bodies aren’t cooperating, and their emotions are all over the place. And we lose about 3 - 8% of our muscle each decade after age 30. This can be demotivating to women as they might

not be able to do everything they used to. Empower-U allows them to ‘take themselves back’ and feel empowered through support, structure, and community.”

A COMMUNITY OF STRENGTH AND SUPPORT

In a recent Empower-U session, 21 women joined together, supporting each other through weekly accountability calls and a dedicated WhatsApp group. Here, members share recipes, ask for motivation, and celebrate their wins.

“The WhatsApp group was so engaging,” Jen shares. “Members were sharing their journeys, cheering each other on, and forming new friendships. It’s a community where women in similar phases of life can come together and feel understood.”

For women over 40, finding a gym experience where others are on the same path is rare. Today, about 90% of the 150 members are women over 45. The focus at Union Fitness isn’t on the scale or getting smaller; rather than striving to fit into jeans from years past, members are training for life and longevity.

CLASSES AND MORE TO SUPPORT A HEALTHIER LIFE

Union Fitness offers small group strength training classes with six people or fewer, allowing coaches to provide individual attention and correct form. This approach helps prevent injury, especially for those new to weightlifting or returning after a break.

Beyond strength training, Union Fitness also emphasizes emotional wellness. Empower-U includes breath work, stretching, and meditation sessions that give members tools to cope with stress, improve mental health, and build resilience. With seasonal affective disorder (SAD) affecting about 5% of the population, especially during the winter months, these classes are a lifeline for staying positive and energized.

MORE THAN JUST A GYM

The team at Union Fitness goes above and beyond to create an environment that’s as welcoming as it is empowering. A massage therapist is now on staff, and the gym features a relaxation lounge—a space to unwind and connect with fellow members.

Union Fitness has a lasting impact on its members, which is clear from their commitment to the program. “No one from our last Empower-U group has left the gym,” Jen says. “They’ve all stayed on, which speaks to the power of this community.”

BODY20 DONATES ADVANCED ARMOR TO MENDOTA HEIGHTS POLICE DEPARTMENT

We all know that our police officers are subject to more dangers than we could ever have imagined just ten or twenty years ago. Between 2021 and 2023 alone, more officers lost their lives in the line of duty than in the previous 20 years combined.

In a generous act of community support and to help protect the lives of those who serve, an anonymous donor partnered with Body20 of Mendota Heights to donate 22 ceramic armor vests to the Mendota Heights Police Department.

Owners Katie Bellows and Larry Grundtner are committed to making a difference in the lives of local first responders, and believe that the generosity of this donor will be a significant step in that direction. These ceramic add-on vests provide extra protection by going over standard Kevlar, specifically defending against rifle shots, which standard bulletproof vests can’t stop.

THE INSPIRATION

Katie added that the entire Body20 team felt strongly about supporting the police department in their own neighborhood. “We’re a new business here, and we want to be part of the Mendota Heights community in a real way,” she said. “Providing these vests to our local officers means so much.”

Captain Wayne Wegener of the Mendota Heights Police Department, who accepted the vests on behalf of his team, was enthusiastic about the additional protection the vests provide. “To receive a donation such as this is amazing. We are always looking for ways to keep our officers safe. This allows each officer to have a properly fitted carrier and armor available when they need it.”

A PARTNERSHIP IS BORN

The partnership between Body20 and the Mendota Heights Police Department goes beyond the equipment donation. When Captain Wegener visited Body20 to try out their fitness services, he got a firsthand look at their unique approach to fitness training.

Wegener was able to see how Body20’s technology-driven, high-intensity workouts could benefit his officers, and he was impressed with the potential. “I didn’t know what to expect when I was offered to try it. I am used to walking into a gym and seeing treadmills, ellipticals, and weights.” He said, “I was impressed with how the technology was able to work all the major muscle groups in my body.  It felt like I had completed a full-body workout after about 15 minutes. It’s definitely a game changer for those of us who want to be healthy but are pressed for time.”

Body20 is also extending a special offer for its training services to those who serve the community in support of first responders. “We’re happy to extend a deal to all first responders,” Larry said. “Anyone interested can contact us for more information about the offer.”

Looking ahead, Body20 has plans to continue supporting the Mendota Heights Police Department through fitness and training. “Thanks to a very generous donor, we’re able to provide six months of training specifically for the Mendota Heights officers,” Katie mentioned. This initiative will enable local police officers to experience Body20’s unique, highefficiency training.

We see ourselves as part of this community, and supporting our local officers is one of the best ways we can show that.

Larry was excited to see Captain Wegener’s response to Body20’s workout. “He brought over one of the vests so we could see how the two pieces of armor work together. After that, we had a great demo session with him, and he really enjoyed it. It was rewarding to watch him appreciate both the added protection of the vests and the potential of our workouts,” Larry shared.

MORE THAN A BUSINESS ENDEAVOR

For Katie and Larry, opening Body20 in Mendota Heights this past May was about more than launching a business—it was about becoming an integral part of the community. The pair have already made it clear that their support for Mendota Heights is ongoing and meaningful. “We see ourselves as part of this community, and supporting our local officers is one of the best ways we can show that,” Katie noted.

Eagan and Grand Avenue are welcoming back StretchLab with their recent soft reopening on December 19. With refreshed spaces and an invigorated approach to one-on-one assisted stretching, the studios are ready to guide their members toward greater flexibility, mobility, and comfort in their everyday lives.

Owned by Ursula Amiot and her husband, the Eagan StretchLab and StretchLab on Grand Ave. locations combine Ursula’s expertise as a chiropractor with a passion for helping people live pain-free. “It wasn’t a tough stretch—pun intended— for us to take this leap,” Ursula shared. “Seeing people reclaim their lives without pain is incredibly rewarding.” The inspiration for this venture came from personal experience: her husband discovered StretchLab while preparing for a ski trip and became a devoted fan after noticing the benefits.

PERSONALIZED FLEXOLOGY

At StretchLab, members can expect personalized care from trained flexologists like general manager Codi Acker. Flexologists guide each session, helping members relax while they handle the work. “Think of it like flossing your teeth—no one loves doing it, but it feels so good when it’s done. And here, someone else does the work for you,” Codi explained.

The results speak for themselves: grandparents can play on the floor with their grandchildren, day-to-day tasks become easier, and countless members experience relief they never thought possible. “So many people live in pain and don’t realize it doesn’t have to be that way. We can help them find a different path,” Codi said.

The beginning of the year is packed with inspiration and motivation to get back on track after a sweet-filled holiday season. It can feel extreme, and it also can be depleting to cut oneself off from everything indulgent after weeks of eating favorite sweet and savory recipes. For sugar lovers who believe going cold-turkey feels intimidating or overwhelming, nutrition-packed desserts are a great way to stick to healthy food goals without the guilt.

Nutrient-Rich Dessert To The Rescue

Frozen PEANUT BUTTER Bites

Danger ahead: this snack is amazing. It’s the easiest of the bunch and also satisfies a sweet tooth craving. This can be whipped together in just 5 minutes and makes just a small amount. Feel free to take creative liberty here with your amounts, but if you make it to this recipe, they are around 90 calories per bite.

1. Cut a banana into 8-10 small slices, around 1/2 inch each.

2. Spread 1/2 tablespoon of peanut butter (or your choice of nut butter) on each banana slice.

3. Drizzle a small amount of melted chocolate chips or caramel over each bite.

4. Freeze for 15-20 minutes and enjoy!

Pro tip: A dash of sea salt flakes on top of these can be *chef’s kiss.*

These are great to keep on hand in the freezer all weeklong. Once they set, add them to a closed container to keep the bananas from browning.

Late night snack cravings are real! When finding yourself rooting through the cabinets for a sweet fix, these protein cookie dough bites are a great way to curb temptation. This recipe yields around 20 small bites, which can be cut into small squares or rolled into dough balls. Each bite is around 105 calories. If you find the dough is a little too dry, add a dash of milk as needed.

Ingredients

• 1/4 cup milk

• 1/2 cup vanilla protein powder

• 1/4 cup maple syrup

• 1/4 cup peanut butter (or alternate nut or sunflower butter)

• 1 cup almond flour

• 1 teaspoon vanilla

• Chocolate chips as desired

Pro tip: Use mini chocolate chips and for a dash of savory add sea salt flakes on top. Once combined, store the bites in the refrigerator in a covered container to keep them moist.

Protein COOKIE DOUGH Bites

There’s probably no more quintessential symbol of winter than a snowman. We’ve all seen Frosty and are probably pretty familiar with Olaf. But if you want to install one into your own yard, you’ll have to put a little elbow grease into creating one without the help of world-class animators.

Here are some tips to help give your yard a well-dressed frozen sentry sure to turn your neighbors’ heads.

Tip 1:

NOT ALL SNOW IS SNOWMAN SNOW.

It takes more than a flurry to build a snowman. Heavy, slushy snow won’t work, and if it’s too powdery dry it won’t pack together. If you can pack a good snowball, you can build a snowman.

Bonus tip: Dry snow can be modified to workable snowman snow with a quick spritz of water from a spray bottle, or a light mist from that garden hose you really should have already put away for the winter.

Once you get your base section in place, shore up the bottom with snow. Then at the top, create a bowl-shaped indentation to allow the next section to sit securely. Ensure each section is well-packed with added snow around the “joint” between the sections.

SNOW IS HEAVY. ENLIST A BUDDY.

A willing helper can help lift that heavy next stage into place. You can even roll it onto a tarp and lift from either side to get it up there. A third set of hands can help move it into place. Otherwise, use plywood as a ramp to roll it up yourself (braced well against the bottom with plenty of support underneath, so as to not damage the base). You might need an extra bowl of Wheaties to roll it up there alone.

Tip 5:

PILOT HOLES ARE YOUR FRIEND.

Simply jamming details into your snowman can mess with its integrity. Use a sharp stick to gently create some pilot holes for your features before you set them into place.

GIVE HIM SOME PERSONALITY.

There’s always that classic snowman uniform of a scarf, hat, a carrot nose and coal (sure, we all have that lying around these days — river rocks might be easier to get your hands on). Or you could be a bit more creative, maybe with an old oversized Hawaiian shirt, a jazzy vest, or go all-out and channel your inner Martha Stewart, breaking out your Dremel to make something custom for your wintery lawn guest. You might need to use your imagination — not many of us have corncob pipes or top hats anymore, either.

Pro tip: if you’re dressing your snowman, put any body clothing you might use on before adding the arms.

Just remember. If you mess it up, it’s ok because he’ll be back again some day.
