Martha For The Win!

When I was first married in 1992, I discovered the guru of domesticity; the one, the only, Martha Stewart. I have always loved to cook and bake and had one of the most extensive collections of cookbooks of anyone I knew. But when I saw Martha on TV for the first time, I couldn't get enough. Her voice. Her style. Her flair for perfection. Everything about her just spoke to me. If there has ever been anyone I have wanted to meet, it was and still is, Martha. I subscribed to her magazine and watched every show. I bought her green, jadeite bowls and her cake and cookie decorating kits. When I discovered her logo was a honey bee, I almost died. They are one of my favorite creatures! Honestly, I think if I ever got the chance to meet her, I would slap out faint.

One of the first "fancy" recipes I made happened to be Martha's Coq au Vin. It was the base for my exploration of French cuisine which started way back when. Palmiers, madeleines, tarte tatin, even French onion soup - I made them all.

I am also a huge Olympics fan and love watching as many competitions as possible. The Paris Olympics this year were outstanding! Did you see any of the Games? I don't remember other Games that were nearly as exciting. But then, Martha Stewart showed up with Snoop Dogg at the dressage competition, and I was completely undone.

Love for French cooking + Olympics + Martha/Snoop = EUPHORIA!  I mean, look at them in their dressage outfits. Totally for the win in my book.

I was so excited to plan this year's Food issue as an Ode to French cuisine, for all of the reasons above, and one other... it's finally Fall! You'll notice an article about Larry the Pool guy, now carrying hot tubs. I can't think of a better time to sit out in my backyard in a hot tub than Fall. It just fits. Our cover girl, Lisa Thiffault, owner of Lisa's Crêperie, is native to France and makes delicious crêpes... savoir-faire is everywhere!  Blessings to you and your taste buds this October, my dear community. I hope you find the time to cook Chef Pauli's Coq au Vin, you are going to love it!

Married chefs vow that the wow is in the pink of the smoke ring.

The smoke ring – typically found in the outermost 8-10 millimeters of smoked meat – is defined by its pink hue and is the mark of the perfect barbecue.

favorite color is pink,” explains Chef Andrew “Drew” Chambers, founder of Pink’s Barbecue. “The truth is that we do like the color, but what we really like is the pink hue in your meat when preparing it over an open flame – and at the correct temperature. It is the perfect way to enjoy it. The flavor, texture, heat, and taste are at its optimum.”

Chef Drew and his wife Gwen are the culinary duo behind Pink’s Barbecue. Chef is a third-generation entrepreneur and Chef Gwen got her start as a baker. They both studied at the esteemed Johnson & Wales College of Culinary Arts. Together, they bring a combined fifty years of kitchen and industry experience to the business. He’s the palate and the visionary; she’s the organized mastermind that makes it all work. Upon moving to Georgia more than 20 years ago, they came with the dream of starting their own brand and business. Like many, their journey has come with its fair share of challenges. Without a

brick-and-mortar presence, building a food business is a labor of love, but the pair have persevered with creativity, innovative resources, and discipline. Chef Drew’s email signature includes this anonymous quote as part of his sign-off:  “Some of us are building from scratch. No inheritance, no connections, no backups. Just blood, sweat, and skills.”

The road to Pink’s Barbecue started in 2014 with a smoker purchased on Craigslist. After a conversation with friends about the need for a new perspective on barbecue in Coweta and Fayette counties, the couple took the leap of faith and hung their shingle. Chef Drew also recalls a quote in the halls of his alma mater, Georgia State University, which ignited his entrepreneurial spirit and the next step up in his career.

“Barbecue is the English version of a Spanish word, [barbacoa], describing an Indian cooking technique, that took root in the South.”

Never too many cooks in the kitchen for the husband and wife duo who set their tables and serve their customers with family and faith as core values.

Connecting Community With Crêpes

Paris, France, and Senoia, Georgia may be worlds apart, but at Lisa’s Crêperie and Café, both cultures come together over crêpes and coffee. Even before owner Lisa Thiffault or her staff bid you, “Welcome in!” the delicious smells and laid-back atmosphere mingle with a sense of community appealing to regulars and newcomers alike.

Lisa’s love for her customers and Senoia extends beyond serving authentic French crêpes. She relishes being a good neighbor and giving back to the community that has helped her grow a successful business. Tucked along bustling Main Street, Lisa’s Crêperie has been named Taste of Senoia’s top restaurant two years in a row. Lisa has also helped develop Senoia’s Alive After Five event and focused national attention on the town while battling to a fifth-place finish on Food Network’s Great Food Truck Race. As a veteran, Lisa is also proud to give military and law enforcement discounts.

With three food trucks traveling throughout metro Atlanta, the Crêperie’s community involvement reaches beyond Senoia’s city limits. Lisa’s was awarded the most creative vendor at The Cotton Fair in Gay, and when the devastating tornado ripped through Newnan, Lisa’s provided free food for volunteers and created a platform for donations. “It was an amazing feeling to help the community with the crêperie.”

Another way Lisa enjoys giving back is by mentoring young people. The Crêperie not only helps sponsor events at local schools, but Lisa is also involved with work-based learning programs and speaks to entrepreneurship groups at local high schools. “I’ve been told time and time again how inspiring my story is. I love being an example for young entrepreneurs,” she said.

Born in France, Lisa later lived on the Island of Corsica where she learned to make authentic French crêpes from the grandmother she calls Mammie. After moving to the United States at 7, however, none of the crêpes she sampled here could compare.  I’m a huge foodie,” she said. “I would always say, ‘One day I’ll open a crêperie.’”

The idle thought of starting a crêperie took root during the five years Lisa served in the military as a helicopter mechanic.

She made crêpes for her squadron and sold them during fund-raisers. After she and her husband moved to Senoia, she started making crêpes at the Peachtree City Farmer’s Market in 2017. “When I want something, I work really hard, and I give it 150 percent,” she said.

Today, Lisa’s Crêperie and Café, with its newly expanded dining room and side-walk seating, is a popular spot to gather with friends, work, or study. The versatile menu covers every meal from lunch to dinner. “There is no French crêperie anywhere in this area. It’s a hidden gem to find authentic French crêpes, pastries, and macarons.”

One of her biggest challenges initially was getting people to try crêpes. “They think they’re only sweet, but there are

so many good, savory crêpes such as chipotle chicken with fresh avocado and chicken, bacon, and ranch. Everything in our crêpes is made fresh to order including the homemade sauces. It’s all very fresh, high-quality, simple ingredients— something that’s hard to find these days.”

As the mom of three young children, Lisa admits she depends on her staff to keep the business open seven days a week. “I love my staff,” she said. I couldn’t do this without them.” Lisa has even pitched her business during an open casting call for Shark Tank. “Eventually, we’d love to have Lisa’s Crêperies all around the nation,” she said.

Coq Au Vin

A SIMPLIFIED VERSION OF THE ICONIC FRENCH CLASSIC... HARD FOR ANY PALETTE TO RESIST!

Coq au Vin

Coq au vin, or “chicken with wine”, is a rustic French stew, traditionally made with a red Burgundy, but I’ve found any dry red

INGREDIENTS

4 servings

• 4 slices bacon, chopped

• 2 pounds chicken - skin on, bone-in breasts or thighs

• 1/2 teaspoon salt and pepper

• 1 onion, diced

• ½ pound button mushrooms, diced

• 1 teaspoon dried thyme

• 1 bay leaf

• 3 cloves garlic, smashed

• 2 tablespoons butter, softened

• 2 tablespoons flour

• 2 cups red wine

• 2 cups chicken stock

wine will do nicely. Cook with wine that you will drink at dinner and you will love every succulent bite!

DIRECTIONS

Using a Dutch oven, sauté the bacon until it is very lightly browned.

Dry the chicken thoroughly, season with salt and pepper, then brown in the hot bacon fat, along with the onions, garlic, mushrooms, and herbs. Cover and cook slowly for 10 minutes, turning the chicken once.

Pour the wine into the pot and add enough stock to just cover the chicken. Bring to a simmer. Cover and simmer slowly for 25 to 30 minutes, or until the chicken is tender. Remove the chicken to a dish.

Simmer the liquid in the pot for a minute or two, then raise the heat and boil rapidly, reducing the liquid to about 2 1/4 cups.

Remove from heat and discard bay leaf. Blend the butter and flour to form a smooth paste. Beat the paste into the hot liquid with a wire whisk.

Stirring, bring to a simmer for a minute or two. Arrange the chicken back into the pot, add mushrooms and onions around it, and baste with the sauce. Cover and simmer for a few minutes to warm through. Serve with crusty French bread and mashed potatoes.

Benjamin Franklin said, “The discovery of wine is greater than the discovery of a constellation.” As the world’s top exporter of wine, France has over 10,000 wineries, with each region producing different varieties. Red and white wines, rosés, and sparkling wines, can be distinguished by their fermentation processes, the variety of grapes, and even the soil type. The most evident distinction is the color of the wines. The color is based on the grapes’ skin color and the use of the skins in the fermentation process. Red wines are made with red grapes and their skins, which give them their color. This process, known as maceration, is responsible for extracting a red wine’s color and flavor. Longer maceration times result in deeper-hued reds with more intense flavors. This is why light-skinned grapes like Pinot Noir produce a fresher, brighter style of red, whereas thick-skinned grapes like Cabernet Sauvignon yield more power and concentration. White wines are typically made with white grapes but can also be made with red grapes because the grapes in white wines are stripped of their skins and seeds before being fermented, ridding the wine of any color.

Regarding aging, red wines benefit more from oak barrel storage than white wines. Oak barrels allow more oxygen to seep into the wine, which causes the wine to be less acidic, a better alternative for red wines. White wines can be aged in a barrel, but most are aged in stainless steel containers to maintain acidity.

Wines from France differ based on the regions in which they are produced. Composed of nearly 74,000 acres of vineyards, the Burgundy region, located in Eastern France, is most notable for its production of Pinot Noir and Chardonnay grapes.

Red Burgundy wines are derived from the Pinot Noir grape. Featuring a medium body and medium to high acidity, these wines include notes of spice and forest floor, making them a more earthy Pinot. This wine excels in its versatile pairing options, especially in the meat scene, having the ability to pair with lighter foods, such as chicken, all the way up to heavier foods, such as steak. Regarding its pairing with a charcuterie board, red Burgundy wines pair well with herbaceous cheese, such as those featuring garlic, tomato, and basil.

White Burgundy wines, or Chardonnay wines, pair well with the fall weather as the grapes are prepared in cooler climates. These wines can age in an oak barrel, though only for a short period of time. Featuring a medium or full body that is not considered buttery, this wine is close to Champagne, the famous sparkling white wine from northeastern France. The way it is fermented allows for the production of a fresher Chardonnay. This wine can be chilled, though it is not a necessity. It pairs well with lighter foods like creamy white pasta, chicken, or seafood.

And, of course, the famous bubbly drink, Champagne, must be mentioned. Quite a few discrepancies exist regarding who exactly invented the sparkling wine. Champagne should not be equated with Prosecco, as Prosecco is a similar sparkling wine that originated in Italy, while Champagne is produced exclusively in the Champagne wine region of France. It adheres to strict appellation rules, which include specific vineyard practices, the exclusive sourcing of grapes from designated areas, precise grape-pressing methods, and a secondary fermentation process in the bottle to create its signature carbonation.
