Loaded Potato Soup
COZY UP ON A RAINY SPRING DAY WITH THIS LOADED BAKED POTATO SOUP!
ARTICLE BY ALYSSA LAVY, MS, RD, CDN | PHOTOGRAPHY BY ALYSSA LAVY, MS, RD, CDN
Ingredients
(yields ~12 C or 6-8 servings):
• 3 lbs. baby dutch yellow potatoes or similar
• 1 medium head cauliflower
• ¼ tsp salt
• ¼ tsp pepper
• ¼ tsp garlic powder
• ¼ tsp onion powder
• 2 Tbsp oil (such as avocado or vegetable)
• ¼ C scallions, chopped (white/light green parts)
• 1 sweet onion, diced
• 4 C chicken stock
• 2 C water
• 1 C Greek whole milk yogurt, plain
• 1 1/2 C whole milk
• 2 Tbsp oil (such as avocado or vegetable)
• 1-1 ½ Tbsp kosher salt (amount may vary depending on preference and amount of sodium in chicken broth)
2. Chop cauliflower into florets, rinse and pat dry. Toss cauliflower with 2 Tbsp oil, ¼ tsp salt, ¼ tsp pepper, ¼ tsp garlic powder, ¼ tsp onion powder. Spray medium sized baking sheet (9x13 inch works well) with nonstick cooking spray and transfer the cauliflower in a single, even layer. Roast in oven at 450 degrees Fahrenheit for about 20-25 minutes, until slightly browned. Once cauliflower is in oven, move forward with the next step .
3. Wash potatoes and transfer to a large pot. Add enough water to the pot so potatoes are covered. Bring water to a boil and boil until potatoes are fork tender, about 15-20 minutes. Drain water and set potatoes aside. While potatoes are boiling, move forward with the next step.
4. Warm 1 Tbsp oil in a small pan. Add chopped pancetta and sauté until browned and crispy, about 5-10 minutes. Remove from heat and use a small strainer to reserve the oil in a small bowl or measuring cup. Set pancetta aside in a small dish. If you do not plan to add pancetta, you can omit this step and just replace the reserved oil with oil of your choice in step 6.
5. Place about half of the boiled potatoes in a blender. Add roasted cauliflower, chicken broth, 2 C water and blend until smooth and creamy. Set aside.
6. Warm 1 Tbsp oil plus the reserved oil from the pancetta (about 3 Tbsp total) in large pot used to boil potatoes. Add onion and sauté for 5 minutes, until softened. Add scallions and sauté for another 2-3 minutes, until onion is slightly browned.
7. Pour about ¾ of the pureed potato and cauliflower mixture into the pot. Keep the remaining amount in the blender.
8. Add approximately ½ of the remaining boiled potatoes to the remaining puree in the blender. Add milk and Greek yogurt. Blend until smooth and creamy.
9. Add pureed mixture to the pot. Add kosher salt, remaining ¼ tsp pepper and remaining ¼ tsp garlic powder to pot. Warm over medium heat for 5-10 minutes. While soup is warming, cut the remaining boiled potatoes into cubes. Add to soup and reduce heat to low-medium for another 10-15 minutes. Scoop 1-2 cups of soup into a bowl and serve with a sprinkle of shredded cheddar cheese, a spoonful of crispy pancetta, a pinch of scallions (dark green part) and a dollop of sour cream for the ultimate loaded baked potato soup. Store leftovers in an airtight container for up to 3-5 days and reserve extra toppings in separate containers.
This is the creamiest, coziest loaded baked potato soup – and it’s made without heavy cream or
flour! The creaminess comes from pureed potatoes and cauliflower, along with protein-filled Greek yogurt and milk, which makes it perfect for rainy April days when you want to feel warm and cozy without feeling weighed down by a heavy meal. Plus, this loaded baked potato soup offers plenty of gut-healthy fiber and nutrients like potassium, vitamin C, vitamin B6, folate and calcium! Top it with shredded cheese, crispy pancetta, a dollop of sour cream and chopped scallions for the ultimate loaded baked potato taste in every spoonful!

IMPROVE YOUR Wellbeing WITH GREENWICH Psychology & Wellness
Therapy offers a safe space for personal growth and emotional healing, but can come with misconceptions and often have many feeling skeptical about whether it's the best thing for them. While many of us live in a constant state of stress, the benefits of therapy can help us work through daily frustrations and find a way to deal with them in a productive way.
As a clinical psychologist, Dr. Michelle Peacock at Greenwich Psychology and Wellness, specializes in guiding high-functioning clients through complex struggles to rediscover clarity to be more productive and live a fulfilling and healthy life. Dr. Peacock and her team offer a variety of services from therapy to life coaching services in adolescents, adults, couples, and families experiencing a variety of symptoms including anxiety, depression, trauma, obsessive-compulsive disorder, relationship problems, divorce, and life-transition difficulties.
"Individuals who are high functioning often do not think they could benefit from therapy or coaching. However, the significant responsibilities of executives, entrepreneurs and their families often create stressors that can be overwhelming," said Dr. Peacock.
She stresses that as many professionals experience symptoms of anxiety, depression and ADHD, it can lead to problems in other areas of life from relationships, procrastination, decreased productivity and difficulty managing a work-life balance.
A
conversation with Dr. Michelle Peacock on how to overcome conflict, address anxiety and more

GL: WHAT TYPES OF SERVICES DO YOU PROVIDE AND WHAT IS YOUR MISSION?
MP: Our concierge treatment approach ensures personalized attention and providing clients with the highest level of psychological treatment to break through barriers, regain control, and build resilience. Therapy and coaching have the potential to empower individuals to overcome challenges, strengthen relationships, and lead more fulfilling lives. We are trained in and utilize trusted gold-standard treatments to ensure effectiveness including cognitive behavioral therapy, dialectical behavior therapy, schema therapy, motivational interviewing, and problem-solving therapy.
GL: WHY DID YOU DECIDE TO GO INTO CLINICAL PSYCHOLOGY?
MP: I instinctively knew that my purpose is to help people improve their mental health and to find their power and potential to have more meaningful and healthier lives. It is incredibly rewarding to hear and understand another person’s life story, often tragic and painful, and to be a guide for them as they positively change the trajectory of their lives and their family’s lives. I am grateful to my past, current and future clients for their trust in allowing me to be a part of their lives as they courageously wrestle with the challenges of life. I feel honored to work alongside others and help them navigate life more effectively.
I originally trained and worked as a forensic psychologist applying psychology to the legal field in the areas of criminal and family court including high-conflict divorce, violent behaviors, and threat assessment. Something most people, even many psychologists, are unaware of is that a forensic psychologist is most effective if they have strong clinical skills including competency in observation of behaviors, clinical interviewing, diagnosis, treatment planning, and communication skills.
Dr. Peacock offers a sanctuary of compassion and professionalism, where people of all ages can receive excellent care. Kinney Lane
A MEAL DELIVERY SERVICE FOCUSED ON WELLNESS
Kinney Lane is a name that often sparks curiosity if you don’t know the story behind it. It’s rooted in the owners' rich family history and traditions on the street of Kinney Lane. The owner’s Italian grandparents along with her mother moved to Kinney Lane from Brooklyn into a 19th-century boarding house. Rachael would visit the house every summer and spend her days running through the fields, eating tomatoes straight from the vine, and gathering with family around the table to enjoy meals made with fresh, seasonal produce that was often sourced right from their own land. Those summers are what shaped Kinney Lane because they instilled a philosophy that celebrates quality ingredients and the joy of sharing a meal. Kinney Lane is also a tribute to Rachael’s mother who passed away from Covid in 2021. She had a special ability to bring everyone together around the table, which is what Kinney Lane continues to do as they foster cherished gatherings, meaningful connections, and warmth around food.
Kinney Lane’s mission, inspired by this story, is to redefine how healthy food is brought to the market. They are a local delivery service offering fresh, chef-prepared meals that make healthy eating convenient and delicious. They aim to provide busy moms and professionals with convenient and nutritious food that simplifies mealtime without sacrificing quality. of other responsibilities. They saw a gap in the market for fresh, local produce and protein-rich meal options that are plantbased and animal-based and are also easy to prepare. Kinney Lane therefore creates thoughtfully prepared meals with a focus on quality ingredients. Their goal is to take the stress out of healthy eating, “allowing our customers to focus on what matters most.”
Kinney Lane shows their dedication to their customers through their rotating weekly menu, designed around customer favorites that have been refined through their years of experience. Their meals are made fresh daily with local ingredients and delivered on a two-day delivery cycle on Mondays and Wednesdays to ensure their meals stay fresh and flavorful throughout the week. Their salads are prepared fresh on the day of delivery and are among their most popular options as their fresh, quality ingredients really set them apart from any other salad, with touches of massaged kale, nuts, and seeds for crunch. Their dressings are also seedoil-free. Kinney Lane prioritizes health and wellness, which is why many of their entrées come with five different vegetable options available as well as each offering customizable protein swaps to suit individual preferences. They also offer mixand-match vegetable and protein sides to ensure that customers can build meals that they truly love. And don’t forget dessert, even on a healthy diet, as they are Fairfield and Westchester County’s bestkept secret, being gluten-free, dairy-free, and refined-sugar-free. All the indulgence, none of the guilt!
Kinney Lane continues to expand, opening a shop in New Canaan in 2023, where customers can pick up their meals. They’re excited to be growing this shop in

the coming year to offer an even larger selection of foods. Their New Canaan location is special because the customers can see exactly where their food is getting made, adding a level of trust and authenticity that’s missing in other delivery services. The space is meant to feel like home, an inviting place to gather with friends, enjoy a meal, and feel part of a community, truly going back to Kinney Lane’s roots at the family dinner table.

THE EXCHANGE IMPACT
In a world where meaningful connections can drive real impact, The Exchange Project stands out as a catalyst for change. Founded on the belief that collaboration and shared experiences can create lasting social progress, the initiative has been making waves in communities and industries alike.
ARTICLE BY KELLIE KERWIN

At the helm is Carly Ridloff, whose passion and vision have shaped The Exchange Project into a platform for innovation,

dialogue and transformation. In this Q&A, Carly shares the inspiration behind the project, the challenges and triumphs along the way, and what’s next for this growing movement.
CAN YOU SHARE THE INSPIRATION BEHIND THE EXCHANGE PROJECT?
The Exchange Project was born from my personal journey. Watching A Plastic Ocean in 2015 opened my eyes to the plastic crisis, and The True Cost made me realize the fashion industry's role in global waste and exploitation. Once I understood the damage, I couldn’t ignore it—I had to help.
I’ve always loved fashion as self-expression, but I didn’t want to compromise my values. So, I started swapping clothes with friends, then expanded it into The Exchange Project. As our swaps and resale grew, it became clear that people want sustainable options but need an easier way to access them.
My mission has always been to bridge style and sustainability, and The Exchange Project is the
embodiment of that vision. Now, it’s about scaling it for even greater impact.
WHAT MOTIVATED YOU TO GET INVOLVED IN THIS TYPE OF WORK?
I’m not sure what exactly motivated me to take on such a huge problem, but someone has to start! Every item swapped keeps clothes out of landfills—and your closet too! I always say, if it’s not working for you, let it go. The Exchange Project has become a metaphor for life: if something—whether it’s clothes, people, or thoughts— doesn’t elevate your life, make room for what does.
WHAT IS THE CORE MISSION OF THE EXCHANGE PROJECT, AND HOW HAS IT EVOLVED SINCE ITS INCEPTION?
The Exchange Project has evolved from simple clothing swaps to a multi-faceted movement. What began as in-person events now includes luxury resale and a vision to expand into a fashion tech platform, where women can swap via an app.
Carly Ridloff
Our mission started with swaps and has grown into providing a responsible, sustainable way for women to exchange clothes. If items aren’t right for our events, we donate them to women’s shelters. We’re committed to keeping clothes out of landfills, ensuring they are properly distributed rather than sent to clothing landfills abroad.
Beyond clothes, we exchange ideas—sharing wellness tips, books, and practices to elevate both individuals and the planet. Our consignment line has also grown, offering women a place to sell luxury items and earn more than from traditional resellers. We love helping women make money and find new homes for their treasures!
WHAT IMPACT HAS THE PROJECT HAD SO FAR, AND ARE THERE ANY SUCCESS STORIES THAT STAND OUT TO YOU?
The Exchange Project has made a big impact, hosting over 30 events on the East Coast and saving hundreds of items from landfills, like 546 pieces at our event with The Granola Bar and Laura Skolnik. A standout success is how we've helped people shift away from fast fashion, with attendees now opting for sustainable swaps instead. Our luxury resale consignment also gives high-end pieces a second life.
Next, we’re evolving into a fashion tech company to make sustainable fashion even more accessible. The momentum is building, and I’m excited for what’s ahead!

EMPOWERING THE NEXT GENERATION
April is Financial Literacy Month, a time dedicated to raising awareness and understanding of financial matters that impact our lives. At The First Bank of Greenwich, we believe financial literacy is not just for adults—it’s crucial we teach our children these important lessons too. That’s why we are committed to educating the younger generation and equipping them with the knowledge they need to manage their finances responsibly.
The First Bank of Greenwich has hosted a series of engaging Financial Literacy programs tailored specifically for middle school and high school students. These programs focused on fundamental financial concepts such as budgeting, savings, credit scores, and responsible borrowing. Our goal is to ensure that young people are equipped with the skills they need to make informed financial decisions throughout their lives.
One of our standout initiatives is the Start to Save program, which encourages younger individuals to begin their savings journey early. Through this program, children as young as 6 can participate and learn the importance of setting financial goals and developing good saving habits. The First Bank of Greenwich will increase the child’s initial deposit by making a one-time $5.00 deposit and donating an additional $5.00 to that child’s school PTA if their PTA is a participant. Furthermore, there is no monthly charge or minimum average daily balance required to earn interest. In addition, every time the child makes a deposit, they can spin our “prize wheel”. This helps promote savings and encourages kids to visit the branch regularly and learn more about banking.
Additionally, our financial literacy efforts extend through our various products and services, designed to teach practical money management skills. The First Bank of Greenwich offers educational resources and online tools to help customers improve their financial literacy. We also provide a range of accounts, including personal checking accounts, health savings accounts, pet savings accounts, and holiday club accounts.
As part of our commitment to financial education, we partnered with Greenlight, a leading financial
technology company. Greenlight offers a suite of tools that empower parents to teach their children about money management in a hands-on and practical way. Through Greenlight, young users can gain valuable experience in budgeting, saving, giving and managing their own debit cards all under parental supervision. The Greenlight app allows parents to set spending limits, assign chores, and automate allowances, making it a comprehensive tool for financial education.
Greenlight’s debit card for kids and teens is designed to help them learn about financial responsibility in a safe and controlled environment. With real-time notifications and detailed spending reports, parents can monitor their children’s financial activities and provide guidance as needed. This hands-on approach ensures that children not only understand financial concepts but also practice them in their daily lives.
At The First Bank of Greenwich, our dedication to financial literacy is evident in everything we do. By empowering the next generation with essential financial knowledge, we are helping to build a stronger, more financially secure community.
Join us this Financial Literacy Month in making a difference. Let’s teach our children the value of financial literacy today for a brighter tomorrow.
For more information about our Financial Literacy Programs and the “Start to Save” initiative, visit our website or contact us today. Together, let’s make financial literacy a cornerstone of our children’s education.

AMANGIRI & CAMP SARIKA: A DESERT OASIS OF LUXURY AND TRANQUILITY
ARTICLE BY ANNA BARNES
PHOTOGRAPHY BY AMAN
Tucked away in the vast, dramatic landscape of Southern Utah, where the sculpted sandstone cliffs meet the endless horizon, lies Amangiri—a retreat that redefines the meaning of luxury, seclusion, and connection to nature. This exclusive resort, part of the Aman collection, is a sanctuary of minimalist elegance. Just a short distance away, Camp Sarika, Amangiri’s more intimate and adventure-driven sister property, offers a refined glamping experience that allows guests to immerse themselves in the raw beauty of the Southwest while maintaining the highest level of comfort.
Located in Canyon Point, Utah, Amangiri seamlessly blends into the untouched and otherworldly red-rock country on over 900 acres of the Colorado Plateau. The resort’s design is truly a masterpiece of modern architecture, where concrete walls, clean lines, and floor-to-ceiling windows seem to have been born out of the natural landscape. The muted tones of the structures allow them to blend harmoniously into the sandstone hues of the desert, creating a meditative, almost surreal ambiance.
Immediately upon arrival, guests are enveloped in an atmosphere of serenity and exclusivity. The resort’s main pavilion, which houses the reception, dining areas, and the iconic swimming pool wrapped around a monolithic rock formation, serves as the heart of Amangiri. Whether soaking in the sun-drenched pool, savoring cuisine infused with Native American and Southwestern influences, or gazing at the infinite stars in the night sky, every moment on this property feels cinematic.
When guests secure their reservation at Amangiri, they have two choices for accommodations. Both of which are a masterclass in understated luxury. Amangiri itself has only 34 suites along with a handful of private villas which are designed to maximize the stunning desert views while maintaining an atmosphere of seclusion and tranquility. Rooms are equipped with floor-toceiling windows that open onto expansive terraces, many featuring private plunge pools and fire pits, allowing guests to fully embrace the desert’s raw beauty.
For guests looking for an elevated wilderness experience or just to take their desert adventure to a more immersive level, Camp Sarika—located just a short drive or scenic hike from Amangiri— provides a unique glamping experience unlike any other. With just ten tented pavilions, Camp Sarika offers an intimate and luxurious retreat that brings guests closer to nature without compromising on sophistication.
Each pavilion, constructed with canvas, stone, and timber, features private plunge pools, fire pits, and outdoor lounges where guests can enjoy the warm desert sun during the day and bask in the beauty of the celestial sky at night. The interiors echo Amangiri’s
minimalist aesthetic, with neutral tones, handcrafted furnishings, and subtle design details that pay homage to the Navajo culture and surrounding landscapes. The bathrooms are spa-like sanctuaries, complete with deep soaking tubs and indoor and outdoor rain showers so guests can continuously enjoy the surrounding landscape.
Camp Sarika also offers an exclusive dining experience, with a private restaurant serving seasonal, locally inspired dishes. Whether it’s a sunrise breakfast overlooking the mesas or a fireside dinner beneath a blanket of stars, every meal at Camp Sarika is an experience in itself.
A visit to Amangiri and Camp Sarika is not merely a stay—it’s a journey of wellness, relaxation, and adventure. The Amangiri Spa, a 25,000-square-foot sanctuary of holistic wellness, offers an array of treatments inspired by ancient Navajo healing traditions. Guests can indulge in hot stone massages, desert clay body wraps, and sound baths designed to restore balance and harmony. The spa and fitness center also offer daily classes like yoga, Pilates, and mindfulness walks to ensure a day filled with tranquility.

canyons and hidden mesas, where the region’s rich cultural heritage is also woven into the experience. There are many opportunities to explore the sacred lands of the Navajo Nation, visit ancient petroglyph sites, and learn about the traditions and stories of the indigenous people who have called this land home for centuries.
Perhaps their most famous activity is the Via Ferrata. Via Ferrata translates to “Iron Way” in Italian, an ode to its origin. Amangiri’s seven Via Ferrata climbing routes offer a thrilling way to scale sheer rock faces with the help of a series of steel cables and ladders. Each route offers breathtaking 360-degree views.
To ensure every guest’s desires are met, Amangiri also offers an array of bespoke experiences that allow visitors to explore the surrounding landscape in unique and exhilarating ways. For example, for a more serene experience, hot air balloon rides provide a bird’s-eye view of the undulating desert terrain at sunrise, an unforgettable spectacle of light and shadow. Helicopter rides provide breathtaking aerial views of the Grand Staircase-Escalante and the iconic Lake Powell, while horseback riding excursions offer a more grounded yet equally scenic journey through the desert’s vast, rugged terrain. Guests can embark on guided, more extensive hikes that reveal hidden gems of the region, or take to the waters of Lake Powell for an unforgettable boating adventure.
If slower is more your speed, Amangiri and Camp Sarika offer activities at the main pavilion for all guests to enjoy such as a bespoke candle making class, Native

American Hoop Dancing, a chance to get familiar with the local flora and fauna, just to name a few.
What makes Amangiri and Camp Sarika truly special is the feeling of profound stillness and connection that they evoke. In a world that often feels chaotic and fast-paced, this desert retreat offers a rare opportunity to slow down, breathe deeply, and simply exist in the moment. A vacation that you return from actually rested and rejuvenated. From the golden glow of the sunset against the cliffs, to the soothing embrace of a desert-inspired spa treatment, or even the sheer awe of standing beneath an endless sky filled with stars, every experience here feels deeply intentional and transformative.
For travelers seeking an escape that is equal parts luxury and adventure, Amangiri and Camp Sarika stand as beacons of exclusivity, serenity, and unspoiled natural beauty. In the heart of the Utah desert, where time seems to stand still, this is a place where the soul finds solace, the mind finds clarity, and the body finds rest. Amangiri and Camp Sarika are not just destinations—they’re an experience that lingers long after you’ve departed, calling you back to the magic of the desert once more.

HOW DO YOU SERVE YOUR LOCAL COMMUNITY?
I founded my law firm 16 years ago and value having a personal relationship with my clients to guide them as best as I can. I also cultivate relationships to increase support for organizations that mean a lot to me. I took an eight-year hiatus from formally practicing law to raise my children. During that time, I became very involved in several organizations in Greenwich. My work with the Junior League of Greenwich led to my involvement with many other non-profits most notably as a Board Member of the American Red Cross, Metro New York North Chapter since 2016 as Nominating Chair and on the Community Preparedness Committee; Greenwich Old Timers Athletic Association (GOTA) Board Member since 2018 as Donation Chair and now First Vice-President of the organization and
as a committee member on the Friends of the Wallace Center Board as well as a few years on the Advisory Board for Abilis. I am also a longtime supporter of Planned Parenthood serving on their luncheon committee. I am also a regular contributor to Special Education Legal Fund’s monthly webinars, I participate on various panels speaking on Estate Planning and Business Law as well as presenting to the Greenwich High School PTA on legal issues.
WHAT DO YOU LOVE ABOUT LIVING IN GREENWICH?
I love living in a Town that has a real sense of Community and a strong sense of volunteerism and give back throughout every stage of life. I value our small businesses and try to support them as much as I can, they are the lifeblood of this community. It is because of this Community that we are so fortunate to
have wonderful restaurants, diverse shopping, an incredible museum, and beautiful parks and beaches.
WHAT IS YOUR FAVORITE HIDDEN GEM IN TOWN?
Tod's Point is one of the main reasons we decided to raise our family here and live on the eastern side of town. Another would be the Greenwich Skating Club - my son started his love of hockey and being a goaltender there. The cutest, quaintest little outside rink with a lot of community and passion for the sport.
WHAT IS YOUR FAVORITE PIECE OF ADVICE OR FAVORITE QUOTE?
"Women belong in all places where decisions are being made...it shouldn't be that women are the exception," Ruth Bader Ginsberg.
FAMILY TIME is the Best Investment
These simple, yet intentional ideas can make the best memories.
EAT DINNER TOGETHER AS A FAMILY.
This meaningful time around the table is where connections happen. Let everyone share good moments from the day or something they struggled with. Create a jar of conversation starters, exchange giggles and cook up something delicious.
CREATE SURPRISES
Everyone likes to feel special – and surprised. The littlest things make the biggest impact: A backyard picnic; a sleepover in an indoor fort; an after-school ice cream treat; a bathroom spa day.
CREATE FAMILY TRADITIONS
Build weekly or monthly traditions –movie nights with popcorn, board game marathons, a gratitude jar, evening bike rides, living room dance parties, even a family book club to discover old favorites and new reads.
EXPRESS LOVE AND GRATITUDE
In busy seasons, it’s easy to forget to let a loved one feel appreciated and thought of. Tuck a hand-written note in a lunch box or give an unexpected hug; spend time sharing what you’re thankful for about them.
KEEP GENERATIONS LINKED
Consider Sunday meals with grandparents or weekly phone calls if distance separates. Invite them to share their childhood stories and treasured memories. Start a yearly family scrapbook filled with favorite photographs and vacation souvenirs.
