Winter Farro Salad

A HEARTY WINTER FARRO SALAD WITH BRUSSELS SPROUTS, SQUASH AND HOT HONEY DRESSING

ARTICLE BY ALYSSA LAVY, MS, RD, CDN

PHOTOGRAPHY BY ALYSSA LAVY, MS, RD, CDN

This winter farro salad is the perfect mix of hearty and nourishing for this chilly weather. If you’re not familiar with farro, it has a chewy texture and packs in protein and fiber in every delicious bite. The pistachios, feta cheese and cranberries add saltiness and sweetness while the hot honey dressing packs a sweet and refreshing flavor with a hint of heat. Plus, the veggies add nutrition, while also adding gorgeous color and winter’s freshest flavors. This dish is complete on its own, or can be served as a side. The best part? It can be eaten hot or cold – so the leftovers can be enjoyed as easy meals throughout the week (if you don’t eat it all at once)!

Serves: 6-8

Ingredients

Salad

• 8 oz farro, dry

• 16 oz brussels sprouts

• 1 delicata squash (approximately 16 oz)

• ¼ C avocado oil

• ¼ tsp salt

• ¼ tsp ground black pepper

• ½ tsp garlic powder

• ½ tsp onion powder

• 1 tsp oregano

• 1 Tbsp parsley

• 1 C feta cheese, crumbled

• ¾ C dried cranberries

• ¾ C pistachios, shelled

• 7 oz arugula (about 5 C)

• Nonstick cooking spray

Dressing:

• ½ C extra virgin olive oil

• ½ C hot honey

• ¼ C plus 1 Tbsp lemon juice (juice from approximately 1 ½ large lemons)*

• 1 Tbsp balsamic vinegar

• ¼ tsp salt

• 1/8 tsp ground black pepper

*I recommend using fresh lemon juice

directions

1. Preheat oven to 425 degrees Fahrenheit

2. Wash and pat dry the brussels sprouts and delicata squash. Cut brussels sprouts in half (if very large, cut in quarters) and place in a large mixing bowl. Slice delicata squash in half lengthwise, remove the pulp and seeds with a spoon and slice into half moon shaped slices. Add sliced delicata squash to mixing bowl. Drizzle avocado oil over vegetables and add all spices (salt, ground black pepper, garlic powder, onion powder, oregano, parsley). Mix with a spoon until the oil and spices are well distributed and transfer vegetables to a large baking sheet sprayed with nonstick cooking spray. Use a large spoon to arrange vegetables in a single layer.

3. Bake in oven at 425 degrees Fahrenheit for 20-25 minutes, until vegetables are browned and slightly crispy on the outside and tender. Flip delicata squash and mix brussels sprouts about halfway through (approximately 10-15 minutes). Meanwhile, proceed to step 4 (below) while vegetables are roasting.

WINTER FARRO SALAD

4. Cook farro according to package directions. Once cooked, drain any excess water, rinse with cold water to remove extra starch and stop the cooking process and set aside. Proceed to step 5 (below) to make the dressing while farro is cooking.

5. Add olive oil to a medium sized bowl. Add all other dressing ingredients and stir with a spoon until well combined. Set aside.

6. Remove vegetables from oven once cooked (individual oven times may vary). Set aside.

7. Wash arugula, pat dry and place in a large serving bowl. Add cooked farro and cooked vegetables. Top with feta cheese, dried cranberries and pistachios.

8. Give the dressing one last stir before drizzling dressing over the farro salad. Mix with tongs or salad claws and enjoy! This can be served immediately while warm or enjoyed chilled (or warmed up) as leftovers and will last when stored in an airtight container for about 3-5 days in the fridge.

PREPCHESTER: WHERE MODERN PREP MEETS Functionality and

Style

MEET JULES ZOTTNER, FOUNDER OF PREPCHESTER, REDEFINING MODERN PREP STYLE.

ARTICLE BY KIMBERLY THOMAS PHOTOGRAPHY BY JULIA D’AGOSTINO PIERCE AND KYLE NORTON

Julia Zottner, lovingly known as Jules, has always had an eye for style and practicality. Her transition to entrepreneurship with Prepchester reflects creativity and purpose.

THE BIRTH OF PREPCHESTER

Prepchester is more than a name; it’s a mission. Inspired by the active lifestyle of Westchester and Fairfield counties, the brand’s name encapsulates Zottner’s vision of bringing modern prep to these communities and beyond. “Sports are at the center of our lives,” Jules explains. Prepchester fills a gap in accessories for racket sports and golf with a fresh, preppy sensibility.

FROM CONCEPT TO CREATION

The idea for Prepchester was born out of necessity. Jules found herself frustrated by a lack of accessories that matched her modern preppy aesthetic while addressing practical needs. The Birdie Belt bag was her solution to skirts without pockets, while the Jules Paddle cover was created to protect her bag from damage caused by a paddle racket.

Jules’ accessories reflect her lifestyle as a sporty, chic mom of two young children. Her designs cater to women who juggle competitive or recreational play with a busy schedule, prioritizing “grab-and-go” convenience without sacrificing style.

DEFINING MODERN PREP

For Jules, modern prep is about timelessness and versatility. “I’m always building a forever closet,” she says. Mixing brands to create unique looks admired by others is a hallmark of her style. As a mother to a 4-year-old and a 4-month-old, she leans into sporty chic staples—chic sunglasses, fleece jackets, and slip-on sneakers.

FROM FASHION TO FUNCTION

Before founding Prepchester, Jules spent 15 years in fashion, working for industry giants like Ralph Lauren and PVH. Her career at Ralph Lauren left a lasting impression. “We lived the lifestyle,” she recalls. Employees became ambassadors for the brand, wearing RL clothing daily and embodying its aesthetic.

Female-founded brands like Renwick, Addison Bay, and Dudley Stephens have fueled her entrepreneurial spirit. “They’ve cultivated loyal followings by filling voids in the market and understanding the needs of active women,” she says.

TRIUMPHS AND CHALLENGES

The greatest reward of running Prepchester? For Jules, it’s the ability to bring her vision to life and have creative control. Seeing her designs transform from ideas to tangible products is deeply satisfying.

However, challenges persist. Sourcing quality materials made in the U.S. is a struggle, as is delegating responsibilities while maintaining high standards. Prepchester’s commitment to sustainability stands firm. The brand uses SEAQUAL fabric, made from recycled marine plastics, underscoring its dedication to clean oceans.

where she biked around town. Her logo, inspired by the “P” maritime flag signaling readiness to set sail, reflects her passion for boating—a hobby she embraced after earning her boating license in 2018.

Jules’ coastal happy places, Rowayton and Chatham, MA, continue to inspire her. Her perfect day? Oysters at Rowayton Seafood, followed by a beach day at Harding’s Beach in Chatham.

“Her designs cater to women who juggle competitive or recreational play with a busy schedule, prioritizing “grab-and-go” convenience without sacrificing style.”

INSPIRED BY NEW ENGLAND’S CHARM

The scenic beauty of New England is woven into Prepchester’s DNA. Jules lived in Rowayton, CT,

A VISION FOR THE FUTURE

Looking ahead, Jules envisions Prepchester expanding into boating accessories while further developing its racket and golf collections. She also plans to introduce men’s and children’s lines. The brand aims to grow into select specialty stores and private club shops, bringing its modern preppy aesthetic to a wider audience.

WORDS TO LIVE BY

Jules credits a Villanova professor with advice that shaped her career: “If you are not passionate about what you are doing, then you will never be successful.” This mantra has guided her through every career move, including launching Prepchester.

As for her favorite quote? Ralph Lauren’s wisdom: “Don’t be today’s look. Be a look that’s timeless.” Prepchester embodies this ethos, offering accessories that are as enduring as they are stylish—a true reflection of Jules’ vision and creativity.

ISAIAH Levy, WINE DIRECTOR

1. WHAT DOES SERVICE MEAN TO YOU?

Service is the culmination of attitude, attentiveness, and awareness as well as the degree to which you’ll take said principles and apply them to any one guest's situation in a restaurant; this is what creates the feeling of Hospitality. I’ve had the pleasure of learning these core principles from highly professional individuals to help bolster my understanding of this concept and readily apply their techniques at Mōlì to enhance our guests’ dining experience.

2. HOW DOES THE SERVICE YOU PROVIDE ELEVATE THE LOCAL COMMUNITY?

A Mōlì we’ve actively sought out some of the highest regarded wines and spirits in order to address a niche that we previously did not see filled in the Greenwich prior; a need for luxury in restaurants. As a team we strive to apply high level service by offering a unique and premium quality “by-theglass” program accompanied by a

30-page wine list chock full of recognizable favorites and hidden gems from all over the world.

3. WHAT ARE SOME TIPS FOR PROVIDING EXCEPTIONAL SERVICE?

Treat your guests as if they were guests in your own home. When it comes to performing at the highest echelon, we focus on Hospitality at its core to ensure the guests’ experience is always our first priority. I pride myself in taking aggressive measures on the management side to guarantee our guests’ return in the future.

4. WHAT DO YOU LOVE MOST ABOUT WORKING IN THE GREENWICH COMMUNITY?

As a small town boy myself I thoroughly enjoy the kinship and sense of community that Greenwich offers. Having previously worked in NYC, it was a breath of fresh air to help start a restaurant with the same quality of food, beverage, and service outside of the fast-paced city environment.

Marghi Adzick: Redefining Wellness with Addison Bay

Elevating

Activewear for the Everyday Athlete

Wellness is more than a trend—it’s a way of life. Few understand this better than Marghi Adzick, founder and CEO of Addison Bay, a brand that marries functionality, fashion, and an empowering approach to wellness. As a former Division I athlete and accomplished entrepreneur, Marghi’s journey from sports to business exemplifies how activewear can inspire a balanced, active, and confident lifestyle.

WELLNESS AT EVERY STAGE

Addison Bay was born out of a simple idea: activewear should work as hard as the women wearing it. For Marghi, wellness isn’t just about workouts—it’s about creating a sense of ease and empowerment throughout the day.

“When I think about wellness, it’s about feeling good in your skin and prepared for whatever the day brings,” Marghi explains. “Women are incredible multitaskers, and they need pieces that make them feel stylish, comfortable, and confident.”

Addison Bay’s elevated designs transition effortlessly from high-intensity workouts to everyday moments, ensuring wellness and style coexist.

A HOLISTIC APPROACH

For Marghi, wellness is not just physical—it’s mental, emotional, and social. This ethos is woven into Addison Bay’s DNA, as the brand supports women in all aspects of their lives.

The cornerstone of this mission lies in its thoughtfully designed collections. Each piece encourages movement, celebrates individuality, and reduces stress by solving one of life’s

challenges: what to wear. By offering versatile options, Addison Bay empowers women to feel prepared and at ease.

“We want our designs to bring more joy and less stress to women’s lives. Feeling confident in what you’re wearing is a huge part of overall wellness,” Marghi shares.

BUILDING A WELLNESS-DRIVEN BRAND

Addison Bay’s wellness philosophy extends beyond clothing. Marghi believes in creating a company culture and brand community that fosters connection and well-being.

In 2019, Addison Bay hosted over 100 in-person events, from popups to trunk shows, creating opportunities for customers to experience the brand firsthand. “Community is a big part of wellness,” Marghi says. “There’s something powerful about bringing people together—whether it’s through events, partnerships, or social media— to share ideas and celebrate movement.”

When in-person events paused during the pandemic, Addison Bay expanded its online presence and strengthened customer engagement. This adaptability has been key to the brand’s growth.

DESIGNING FOR EVERY BODY

At the heart of Addison Bay’s mission is inclusivity. Marghi insists the brand serves women at every stage of their wellness journey. Whether chasing fitness goals, staying active with family, or finding time to unwind, Addison Bay designs for real women.

This year’s collection introduces luxurious layers for winter wellness routines, from brisk outdoor walks to cozy yoga sessions. “We focus on quality fabrics, flattering silhouettes, and timeless designs that fit into real women’s lives,” says Marghi.

LEADING WITH BALANCE

Marghi’s personal wellness philosophy shapes her leadership at Addison Bay. Balancing the demands of running a business and raising four children has taught her the importance of prioritizing health and well-being.

“Wellness for me is about finding balance. It’s not perfect, but I’ve learned to focus on the things that matter most—family, movement, and building a brand I believe in,” she shares. “When I take care of myself, I’m better for my team, my family, and my business.”

Her advice to other women? Take time for yourself, and don’t underestimate the power of small wins. “Even a quick walk, a good playlist, or an outfit that makes you feel great can shift your energy and mindset,” Marghi says.

WELLNESS FOR 2024 AND BEYOND

Looking ahead, Marghi envisions Addison Bay continuing to champion wellness in every form. With plans to expand its offerings and deepen connections with customers, the brand is inspiring women to embrace a life of movement and style.

“The more we focus on supporting women holistically—through functional designs, community engagement, and wellness-driven values—the more we can make an impact.”

New Year, New You

KIMBERLY NUZIE OF KIMBERLY NUZIE FITNESS BREAKS DOWN HOW TO SELF MOTIVATE AND HOLD YOURSELF ACCOUNTABLE IN 2025

It's never too late to start moving your body and setting personal goals, and what better time than at the beginning of a new year. In fact, most Americans quit their resolutions only ten days into the month of January. Kimberly Nuzie of Kimberly Nuzie Fitness, BS in exercise science and MS in exercise science and nutrition, is here to provide the encouragement we need to get up and get moving.

Tell us the best ways to hold yourself accountable with health and wellness resolutions in the New Year.  Enlist a workout buddy. When you have someone to check in with, it motivates you and keeps you honest with yourself and them. Taking a group class together or engaging in friendly competition makes things more fun. Also, break down your main goal into smaller goals and make them specific and attainable. Come up with ways to achieve these sub goals, for example, “I am going to exercise three times this week” or “I am going to complete

“Each day you will get stronger, you will enjoy it a little more as it becomes a part of your routine and you will start to see progress.”

ten pushups a day.”  Track your progress and once you hit those marks, reward yourself and enjoy the confidence boost you’ll get from hitting them.

What are the top three exercises you can do at home during the winter months?

One of the best exercises that works your entire body and focuses on strength and cardio is a burpee.  You can modify it by taking out the jump and slowing the movement down.  It incorporates a squat, pushup, jump and plank all into one!  Another great exercise is a lunge. This can be done stationary, walking, laterally or jumping…the options are endless! You can add dumbbells for an extra challenge. Lastly, triceps dips are a great upper body exercise that uses your body weight to work your triceps, chest, shoulders and biceps.  You only need a chair or a bench to complete them.

Any tips on incorporating your kids or family into your workouts?

Incorporating your kids or family is a great idea to get everyone moving and active.  Make it as fun as possible – think dance parties, a game of tag or sports, such as tennis or basketball.  Having your kids involved shows them that being healthy and strong is important and a part of your daily life.  It removes the guilt that some of us may feel when we want to work out, but also have kids to keep entertained.  Even just talking about healthy food choices and letting them help make dinner can open them up to trying new foods and healthier options.

Best advice for someone just starting out?

The best advice is start small and just keep going.  It doesn’t matter if you start with one pushup or five minutes of cardio.  Each day you will get stronger, you will enjoy it a little more as it becomes a part of your routine and you will start to see progress.  Don’t get discouraged if you are not seeing results within a week, it takes time and is a lifestyle change, not a quick fix.  Find something you enjoy doing, so you have more motivation to workout instead of dreading it!  Lastly know your “why.”  Why do you want to start and what keeps you motivated to not give up?

Dry January...But Make It Chic

SOBER CURIOUS DOES NOT HAVE TO BE BORING

While we have all heard the term "sober curious" a thousand times, it does not have to be boring! Here are six of my go-to mocktails and mocktail mixers— that can all be found at Whole Foods—for when I want something a little fun but don't want to regret it the next day. When creating the perfect mocktail, it is just like creating any drink, and I like to find fun garnishes and introduce interesting flavors to ensure my drink is always chic. A few things to always have on hand are fresh citrus, salt or tajin, fresh herbs, and fresh ginger juice. Oh, and of course a really great sparkling water (sometimes flavored!) works too!

BETTY BUZZ:

This mixer is great with seltzer and a fresh slice of grapefruit! Add a salt rim and trust me you won't miss the tequila.

MINGLE:

SWOON:

I love the ginger lemonade and will add fresh herbs and ginger juice for a extra kick.

Bethenny Frankel loved this product so much she invested. The cranberry cosmo is my favorite and it comes in a can too!

GORGIE:

I love an energy drink filled with benefits and none of the nasties. I pour it over ice and seltzer with a splash of cherry juice for a tart mocktail.

BETTY BUZZ:

I love the Betty Buzz mixers so much because they also look pretty set out, and a drink tastes better when it's pretty!

BEAR'S FRUIT:

These seltzers have really interesting flavors that lend themselves well to making mocktails! Get creative with them!

• 2 cups cooked quinoa, cooled

• 2 cups oats

• 2/3 cup of your choice of chopped nuts

The beginning of the year is packed with inspiration and motivation to get back on track after a sweet-filled holiday season. It can feel extreme, and it also can be depleting to cut oneself off from everything indulgent after weeks of eating favorite sweet and savory recipes. For sugar lovers who believe going cold-turkey feels intimidating or overwhelming, nutrition-packed desserts are a great way to stick to healthy food goals without the guilt.

• 1 teaspoon cinnamon

• 1 teaspoon baking soda

• 2 tablespoons chia seeds

• 2/3 cup raisins

• Optional: chocolate chips as desired

• Optional: add additional seeds or nuts on hand such as pumpkin seeds, sunflower seeds, etc.

Notes: Boil quinoa at a 2:1 water to rice ratio. For estimating, 1/3 cup of uncooked quinoa yields 1 cup cooked quinoa.

Add this mixture slowly to combine:

• 2 eggs

• 2/3 cup peanut butter, almond butter or sunflower butter

• 1/2 cup honey

• 1 banana

• 1 teaspoon vanilla

Bake at 375 degrees for 20 minutes, or until when the edges get golden brown. Bake in a 9x13-inch glass dish. After they cool, slice and enjoy. Keep them covered to maintain freshness.
