Humane Society of Charlotte Launches Campaign for New Animal Center In September, the Humane Society of Charlotte launched the final stage of its $15 million fundraising campaign to support the construction of its new animal center. To celebrate the launch, a party was held at the Panthers Den in the Bank of America Stadium. SOUTH CHARLOTTE RESIDENT CAROL LONG VISITED SOUTH AFRICA FOR A VACATION THAT INCLUDED ONE WEEK IN THE COASTAL CITY OF CAPE TOWN AND ANOTHER WEEK IN AND AROUND

AFRICA’S LARGEST CITY. One day was spent on safari with participants engaging in up-close interaction with a wide variety of animals ranging from elephants to the rare white rhino. Carol, sister of our magazine’s co-publisher, Lyn Coaldwell, recounts the surprisingly close bonds she formed with her fellow travelers along with how her experiences in South Africa have changed her perspective. FAST FRIENDS Carol traveled to South Africa as part of a tour group. She discovered how traveling with strangers to a foreign country far from home can form tight bonds early on. “You become a support system for one another, and you quickly learn what interests you share as well as the likes and dislikes of your travel companions,” Carol says. “When you travel with people abroad, relationship forming is accelerated. There are fewer distractions than the ones we deal with in our daily routines.”

There are fewer distractions than the ones we deal with in our daily routines.” —Carol Long AN UNLIKELY DESTINATION While South Africa had long appeared on Carol’s list of potential vacation sites, visiting the country had never been a priority. It wasn’t until a friend suggested South Africa and this tour that Carol considered how a visit to the country could provide a refreshing change from European destinations she had visited numerous times. CAPE TOWN Carol was amazed by the natural beauty found in Cape Town, the coastal city that is one of South Africa’s capitals. “Cape Point marks the boundaries of the Atlantic and Indian oceans,” she says. “Standing on the rocks and watching the swirling blue water is like nothing I could have ever imagined. The children are so happy and smiling there; they sing, dance and entertain travelers in the streets.” Carol was struck by the rich plethora of opportunities South Africa offers. “There is something for everyone—distinctive artwork, fresh and colorful cuisine, diverse shopping possibilities and the chance to visit one of the many wineries in the area. All of these elements come together with a flair and service unique to South Africa that is extremely welcoming to travelers.” JOHANNESBURG AND THE LEGACY OF NELSON MANDELA The lasting effect of Nelson Mandela is manifest in the overpowering presence the late leader still maintains throughout South Africa. “I knew Nelson Mandela still had a large presence in South Africa,” Carol says, “but I didn’t expect to find tributes to him everywhere. From the smallest village to the largest cities, there are statues, portraits and even Nelson Mandela tea. As evidenced by South Africans’ abiding affection and the numerous dedications, including Nelson Mandela Square in Johannesburg, Mandela remains the center of the platform where all hope resides.” A SAFARI ADVENTURE The South African wildlife presented Carol with numerous surprises, from the close proximity of the large game animals on safari to learning that South Africa is a natural habitat for penguins, an animal commonly associated with colder climates. 14

Carol’s favorite safari experience involved a close encounter with a large elephant that came right up to her vehicle. Their tour guide warned everyone to remain quiet and calm. “I remember thinking all at once, I never thought I’d get within touching distance of an elephant in the wild in Africa! I could literally reach out and touch him.” Carol also remembers the fear she felt. The elephant she saw in Pilanesberg National Park could have easily toppled their open-air vehicle with a nudge; ultimately, the animal was simply inquisitive, as curious about the people observing him as they were about him. LASTING EFFECTS Carol credits her experiences in South Africa with giving her a deeper appreciation for nature thanks to the sights and sounds found within the rich South African landscape; from the swirling blue waters off Cape Point, to the top of Table Mountain and the enduring memory of watching the beautifully striped zebras strut through their natural habitat. For Carol, a return trip to South Africa is not a question of if; it’s simply when she can go back to the country that offered such an open welcome.

“When we remodeled the kitchen, we went with the classic stainless steel, and then as you see on the JennAir oven, it has touches of a matte brass on the controls because while we like neutrals, we do pull in a lot of metallics, and we pull a lot of textures into our décor. So we went with finishes in the kitchen that would play into that but not overwhelm it and not look too industrial.” The technological advancements JennAir appliances offer have also proven their worth in practical function and as a time saver. Both Casey and Eric work full-time and Casey notes, “It’s nice to be able to preheat the oven from my cell phone on my way home.” Commenting on the popularity of the JennAir product line, Roddey Player relates, “JennAir recently went through a relaunch and came out with two new product lines called Rise and Nori. With a tagline like ‘Bound for Nothing,’ they wanted to make a bold statement with their new designs. ON JAN. 11, 2018, BARBARA WAS POWER WALKING AT NIGHT AND TRIPPED ON A BROKEN SIDEWALK. She lacerated her face and broke her jaw on both sides. Barbara spent six hours in an emergency room receiving stitches and was told nothing more could be done to address her broken facial bones until the swelling went down in approximately six days. During that time, her jawbones separated further. Barbara recounts how she was in agony when her long-time dentist, Dr. Ross W. Nash of Charlotte Cosmetic Dentistry in Huntersville, called her and told she needed help immediately and asked permission to put her in touch with Dr. Raymond Haigney. Barbara is extremely thankful to Dr. Haigney who was kind enough to view her X-rays after hours and, shocked at what he saw, immediately sent a car to bring her to the hospital. Emergency surgery was required, which involved a huge incision, re-breaking her jaw, moving nerves and putting her face back together with a combination of plates, screws and more stitches than Carrie Underwood received following her accident. Barbara credits Dr. Nash with restoring her well-known megawatt smile following extensive work that included no less than three dental recalibrations to realign her teeth. Barbara went through three months of partial facial paralysis and then with the prayerful support of friends, strangers and churches near and far, everything miraculously healed. She feels blessed to have been cared for by world-class doctors right here in Charlotte. One week after her facial and oral surgery, Barbara learned she had breast cancer. Her case happened to be picked up by Dr. Peter Turk, one of the best surgical oncologists in the country. Barbara had to undergo another surgery and radiation but is now cancer-free and confident she experienced a second miracle. However, Barbara’s harrowing year did not end here. She would endure a painful bout of pneumonia, small skin cancer and the death of a beloved cat of 14 years before 2018 ended. Today, Barbara looks to the future. “It is with such gratitude that I get back to doing things I love and spending time with the people I love.” Reflecting on the challenges of last year, Barbara describes how incredibly thankful she is for the first-rate medical care she received from doctors Nash, Haigney and Turk and for the kindness of strangers who, upon recognizing her, would greet her with warm well-wishes. THANKSGIVING STUFFING OR DRESSING? LET’S SETTLE THIS ONCE AND FOR ALL! From my research, the stuffing versus dressing debate is mainly a geographical matter. Northerners, whether it is stuffed inside the turkey or not, will always call it stuffing. Southerners will always call it dressing. As long they taste good, who cares! All I know is that I get a great sense of comfort from each, and every time I prepare these “stuffing” recipes (See, I am a Northerner!), I am back in my childhood home in awe of my mother. Oh, and the smells...the beautiful aromas coming from her kitchen during the holiday season. As long they taste good, who cares! Here is my take on the North and South stuffing/ dressing debate. Hope you enjoy! 28

SAUSAGE STUFFING INGREDIENTS + 2 loaves white bread + 1 package Jimmy Dean Sage Sausage + 3 stalks celery, finely chopped + 1/2 white onion, finely chopped + 1 stick butter, salted + 1 box turkey stock + 3 tablespoons fresh parsley, chopped + 1 egg, beaten + 1 1/2 teaspoon kosher salt + 1 teaspoon black pepper
D I R E C T I ONS 1. Start by browning the sausage. While the sausage is browning, toast the bread. Once the bread has been toasted, start pulling it apart into pieces in a large deep bowl. 2. Once the sausage has browned, remove from pan, drain any excess grease and place, in batches, in a food processor. Pulse only about three times to break up the sausage. Do not turn into a paste. 3. Heat up the butter, celery and onions in the same pan you browned the sausage. Allow to soften for about 5 to 8 minutes—do not brown. Once the celery and onions have softened, add 2/3 of the box of stock to the pan. I use turkey or chicken stock. Allow to cook for a few minutes then add back the browned sausage. 4. Add the parsley and a dash of salt/pepper to bowl with the toasted bread. Pour the contents in the pan on top of the toasted bread. Incorporate. The mixture should not be dry at this point. If it is, add a bit more stock and mix. Allow the mixture to cool just enough to add one beaten egg. Do not add the egg while it is too hot, or it will scramble. Mix the egg into the mixture. 5. Form into balls, place in a buttered dish and bake on 375 F for about 15 minutes and/or stuff your turkey prior to placing in the oven.

OYSTER DRESSING INGREDIENTS + 1 pint shucked oysters + 10 to 12 slices country or cornbread + 2 cups chicken broth + 1/2 cup oyster liquor + 4 tablespoons butter + 1 1/2 stalks celery, finely chopped + 1/2 white onion, finely chopped + 1 tablespoon Old Bay + 1 teaspoon kosher salt + 1/2 teaspoon black pepper + 1/4 cup fresh parsley, chopped
DIRECTIONS 1. Start by toasting the bread. Break toast into pieces in a bowl. As the bread is toasting, heat up the butter, celery and onions in a pan. Allow the vegetables to soften, not brown, about 5 minutes. Add the chicken broth, oyster liquor and Old Bay to the pan. Simmer for about 5 more minutes. 2. Break apart the oysters and add to the pan. Season with salt/pepper. Add in the fresh chopped parsley. Slowly mix in the toasted bread pieces; you may not need to use all of it. Check the consistency after several handfuls. You do not want the mixture to be too dry or too wet. 3. Spray a 10-inch cast-iron pan with nonstick spray. Add in the dressing mixture and bake at 350 F for about 15 minutes, covered. Uncover and place under broiler for another 1-2 minutes, just enough to brown the top.
