Inside one Huntsville family’s Greek Easter celebration

Easter, a significant Christian holiday, is always celebrated with great enthusiasm and unique traditions. Among these, Greek Easter stands out as a vibrant and captivating celebration. One of the most anticipated and crucial moments of Greek Easter is the Midnight Resurrection Service, known as the Anastasi. As the clock strikes midnight on Holy Saturday in Greece, churches are aglow with candlelight, and the atmosphere is charged with anticipation. The service culminates with the proclamation of Christ’s resurrection, and as the words “Christos Anesti” (Christ is Risen) resound, joyous celebrations erupt.
One Huntsville family has brought this tradition with them to Alabama, inviting both family and friends to participate in the festivities and culinary traditions. And knowing how this family loves to celebrate and serve the best food, the invitation is one that everyone looks forward to year after year.
Evie Pols’ dad immigrated from Greece as a college student. His parents and sister remained in Greece, but he carried his tradition of Greek Easter to the United States. While taking English classes at a cultural institute, he met John. Their friend group grew and soon Greek Easter became a tradition at his friend John’s weekend lake home in New York state. Evie says, “The celebration always included this core group of Greeks, but they had an eclectic group of friends and loved inviting them to the festivities. The Easter crew grew organically through the years.”
A whole lamb was always prepared on a spit, rain or shine. Once the lamb was ready, music played, the men would carry the lamb around on
the spit up and staircase, and then it was laid on the table to carve. Evie remembers, “If you were smart you stood close to a carver to get the best pieces.” Beyond the lamb, each guest contributed dishes to share. As the years passed, these dishes became just as much part of the traditions.
“The traditions are so fun - the dancing, the egg cracking - but this spiritual openness and inclusion is my favorite part of Greek Easter,” Evie remarks. In college Evie had the opportunity to join her extended family in Greece for Easter. “My favorite memory was of Good Friday evening. That night there was a candlelit procession through the neighborhood. My cousin and I joined our neighbors across the street for a feast of grille octopus and squid.” She continues, “The smell of seafood bbq wafted over the procession as it moved down the street.”
When Alex and Evie began dating one of his first experiences was Greek Easter. “Alex loves a good meal and a good time, and seeing his face light up his first Greek Easter is one of my favorite memories. When we left New York we always knew we wanted to carry this tradition with us.”
Now Alex and Evie have brought this tradition to Huntsville, opening their doors to family and friends to serve a huge feast. “We love to serve many dishes, both traditional and new.” Evie continues, “We passed on the whole lamb on the spit in favor of grilling a big gyro.” While the full lamb is festive it can be limiting in size.
The Pols serve a lot of vegetable heavy dishes. “Hortce and roasted beets is one I adore, so that is always included. My dad makes an epic pasticcio and my mom contributes a green bean and cous cous salad.” The best part of creating their own traditions is honoring the things they love, while

being able to tweak or pick and choose to make it enjoyable for every guest.
One of the most recognizable traditions for kids (and adults) is the egg-cracking game, known as “Tsougrisma.” In this lively game, two people each hold a red-dyed egg and take turns tapping the ends against each other. The goal is to crack the other person’s egg while keeping your own intact. The last person with an uncracked egg is believed to have good luck for the coming year. Those beautifully, dyed red eggs take center stage at the Pols’ celebration.
With a new generation of sons, the Pols see the joy in their children’s eyes when the cooking preparation and festivities begin. “The boys are proud to welcome their friends, and we all love that we have this special little crew of friends and family that is separate from school and other activities. And honestly the kids just love a party!”
Being the culinary family they are, Evie shares with us some of her favorite Greek foods to serve.
This traditional Greek maroulosalata lettuce salad is simple to make and one of Evie’s favorites.
MAROULOSALATA (GREEK LETTUCE SALAD)
Ingredients
• 2 hearts romaine lettuce
• 4-5 scallions, diced
• 1 bunch fresh dill, chopped
• 4 oz feta cheese, crumbled
• 1/2 cup olive oil
• 1 large lemon, juiced
• 1/4 tsp salt
Instructions
1. Rinse your lettuce clean then THINLY SLICE. Dry well in your salad spinner.
2. Whisk together the oil, lemon juice and salt until smooth and thick.
3. Place the first 4 ingredients in a large bowl. Pour the dressing over the salad. Toss all together and massage/scrunch the greens with your hands to infuse with the rest of the ingredients and break down its rough characteristics.

GASTRIN
Ingredients
For the dough:
• 4 cups of all-purpose flour
• 1 teaspoon of salt
• 1/4 cup of olive oil
• juice of 1 lemon
• 3 1/2 ounces of toasted sesame seeds (a little over 2/3 cup), ground
For the filling:
• 2/3 pounds of chopped hazelnuts, unsalted
• 2/3 pounds of chopped almonds, unsalted
• 2/3 pounds of chopped walnuts
• 1/5 pound of sesame seeds
• 1/5 pound of poppy seeds
• 1 teaspoon of coarsely ground black pepper
• 3/4 cup of honey
For the syrup:
• 2 cups of sugar
• 1 cup of water
• 1/4 cup of petimezi*
• 3/4 cup of honey
* Petimezi: a syrup made from grapes (recipe).

Instructions
1. Preheat oven to 350°F (180°C).
2. Combine the dough ingredients and knead to form the dough.
3. Roll out into 3 equal-sized sheets about 1/8 inch thick, large enough to cover a medium baking pan.
4. Combine all filling ingredients.
5. Place one sheet of dough in the bottom of a lightly oiled baking pan.
6. Cover with half the filling. Add the second sheet of dough and the remaining filling.
7. Place the third sheet of dough on top.
8. Cut into squares and then diagonally to form triangles. Sprinkle with a little water and sesame seeds.
9. Bake on the rack just below the middle of the oven at 350°F (180°C) for about 30 minutes.
10. When the pastry is cool, combine all syrup ingredients in a saucepan. Bring to a boil, then reduce heat and simmer for about 10 minutes
11. Pour the hot syrup over the cooled pastry and let sit until syrup is absorbed (about 3-4 hours)

They say you can’t take it with you, but with the current estate tax exemption set to expire in 2026, you may be paying more than you planned for. As the estate tax exemption drops from historic highs, savvy investors are rethinking estate strategies. Is your wealth protected?

Benjamin Franklin famously said, “In this world nothing can be said to be certain, except death and taxes.” So now is the time to plan. We got the scoop on how to plan for these upcoming changes from Jason Landers with Keel Point Advisors.
The federal estate tax is a tax imposed on the transfer of assets from a deceased person to their beneficiaries. It only applies to estates that exceed a specific threshold, with amounts above the exemption limit taxed at a rate of 40%. The Tax Cuts and Jobs Act (TCJA) of 2017 increased the exemption
The TCJA doubled the estate tax exemption, allowing individuals to transfer up to $13.99 million (as of 2025) without triggering federal estate taxes. However, in 2026 this amount is expected to drop significantly, with estimates indicating a reduction from $14 million to $7-8 million. For highnet-worth individuals and families, this reduction could have significant financial consequences. Currently, a married couple can protect almost $28 million from estate taxes. If the exemption reverts, the amount shielded for couples decreases to around $14-16 million. This shift would expose estates valued between $14-$28 million, which

are currently tax exempt, to be subject to significant taxation. This reduction could result in a significant increase in tax liabilities for many families, which may require reevaluating wealth transfer strategies sooner rather than later.
With the uncertainty surrounding the estate tax exemption, it’s essential for families to review and reevaluate their estate plans to ensure they remain effective. This includes reviewing current trusts, taking advantage of the higher exemption
There is the possibility that the current exemption could be extended or slightly modified, but for that to happen, Congress would have to pass legislation. Wealthy individuals are advised to act now to capitalize on the higher exemption amount before it expires. Examples of strategies include:
Gifting Assets Now: By gifting assets in 2025, individuals can lock in the higher exemption amounts, even if this amount is reduced in 2026. A married couple can gift a total of $38,000 per year to as many people as you like.
Trust Planning : Setting up irrevocable trusts, such as Spousal Lifetime Access Trusts (SLATs) or Grantor Retained Annuity Trusts (GRATs) can be an effective way to reduce estate tax liability. Estate planners are advising individuals to create gift trusts sooner rather than later. Once the trusts are established, assets can be transferred into them later in 2025, depending on if the exemption is extended or reduced.

If you are in a whirlwind of information overload and want to start simple, here are some small investments you can make that will add up to propel you into your health journey!
Investing in good cookware is a must. The safest materials to look for are stainless steel and cast iron, and they will last a lifetime with proper care. Also, be sure to toss that plastic tupperware that holds onto stains and is likely missing a lid, and get a good set of glass storage containers.
PRO TIP: REPLACING YOUR CUTTING BOARD WITH STAINLESS STEEL OR TEMPERED GLASS IS A MUST, TOO.
It’s no secret that there are pollutants in the air all around us. While we can’t control what goes on outside, we can make one small investment toward healthier air inside our homes. By simply adding an air purifier to your most lived in rooms, you will be reducing allergens, inhibiting mold growth, and even limiting circulation of infectious particles from viruses and bacteria. I love the AirDoctor for its UltraHEPA filters that capture particles smaller than standard HEPA filters. It also contains a Carbon/ VOC filter to eliminate gases and odors, which isn’t standard across most air purifiers.

The average person spends 1/3 of their time sleeping, so bedding is a great overhaul to include in your low-tox living swaps. Traditional mattress materials may off-gas harmful chemicals that come from flame retardants, formaldehyde, plastics, and adhesives. By choosing organic cotton, wool, or natural latex mattress materials, you will rest better knowing that you’re breathing clean air as you sleep. I personally chose a mattress and waterproof cover from Turmerry and, from price point to comfortability, I have no regrets.
PRO TIP: IF YOU’RE GOING TO INVEST IN A CLEAN MATTRESS, GO AHEAD AND SWITCH YOUR PILLOWS AND SHEETS THAT ARE LIKELY TO CONTAIN THESE SAME HARMFUL CHEMICALS. A GOOD RULE IS TO LOOK FOR THE “OEKO-TEX STANDARD 100 CERTIFICATION” WHICH ENSURES THAT A PRODUCT IS FREE OF HARMFUL SUBSTANCES.
Nobody wants their home to smell bad, but you may be putting your family at risk of allergies, headaches, and even hormone disruption if you’re using synthetic fragrances in your home. When I started diving into lower-tox living, fragrances were the first thing to go. Ditch the wall plug-ins and traditional candles and look for naturally scented options instead. Candle and aromatherapy companies have jumped on board to create safer scents that don’t pollute your space, so this swap is definitely attainable.

Our skin is our largest organ, so it makes sense that we should be paying close attention to what we expose it to on a daily basis. What works for one person may not be suitable for the next, but the fact that you are even thinking about the products that your skin is exposed to is a step in the right direction! Switching your body care products can be intimidating, but start small and remember it’s not time wasted to look up questionable ingredients when you read the labels. My recommendation is to avoid the obvious negative ingredients such as phthalates, synthetic fragrances, sulfates, and parabens. I found a fabulous local company called Eden’s Farmacy in Madison that makes all natural products at reasonable prices, and have implemented their hair care and deodorant into my swaps. You can also find them at Greene Street Market. I love a good bar soap and body butter from Buckley Farms in Fayetteville, Tennessee. They are all natural and smell delightful, while leaving my skin feeling clean and super moisturized.
PRO TIP: GET YOURSELF A GOOD MINERAL SUNSCREEN WHEN YOU ARE MAKING BODY CARE SWITCHES. LOOK FOR SOMETHING WITH ZINC OXIDE AS THE ACTIVE INGREDIENT AND MINIMAL INACTIVE INGREDIENTS. I HAVE BEEN THROUGH DOZENS OF SUNSCREENS AND I’VE FOUND THAT MY FAVORITE IS SKY & SOL FACE AND BODY SUNSCREEN.
Check your dishwashing liquid, countertop disinfectant, and dishwasher detergent. In recent years companies have been formulating safer options for everyday products. My favorite dish detergent and all purpose cleaner right now are from Attitude, and I love the powder dishwasher detergent from Earthley. If you are more of a DIY person, you can’t go wrong with hydrogen peroxide and water.
PRO TIP: A LITTLE BAKING SODA GOES A LONG WAY! I CLEAN OUR WHITE SHOWER WITH BAKING SODA AND WATER WITH A TOUCH OF VINEGAR TO DISINFECT, AND IT HAS NEVER LOOKED BETTER!

WHAT ARE THE MOST MEMORABLE MOMENTS FOR YOU DURING YOUR TIME AS A PROFESSIONAL ACTOR IN NYC?
I’ve performed at Carnegie Hall, Lincoln Center, Madison Square Garden, Off-Broadway, Off-OffBroadway, the NAMT (National Alliance for Musical Theatre) Festival, the NYC Fringe Festival, The Duplex Piano Bar & Cabaret Theatre, and even on a movie set in Brooklyn with Will Ferrell & Uma Thurman. But most of my career was spent on four different Broadway Tours that were based out of NYC: “CATS,” “Martin Guerre” (by the same creative team as Les Mis), “Cinderella,” and “Les Misérables.”
CAN YOU SHARE SOME INSIGHTS INTO HOW YOU PREPARED FOR YOUR ROLE IN “LES MISÉRABLES” AND WHAT CHALLENGES YOU FACED DURING THAT PROCESS?
I was initially hired as a swing (covering 11+ characters including Enjolras), so it was important to me as an actor to make them all different and unique. Not only are you responsible for each character’s solos, harmonies, staging, hair and make-up, etc.... you need each character to be authentic and distinctive. Otherwise, you’re not telling the story properly. You want the audience to have the experience that the creator and director of Les Mis intended. These are very big challenges to do correctly but they are very much worthwhile in the end. CONTINUED >
WHAT WAS IT LIKE TO TOUR WITH “LES MISÉRABLES”?
I loved touring with this show, otherwise I certainly wouldn’t have done it for four years. Every city has its own unique energy which I love. It was my job to be present every single performance and to listen. So many audience members love Les Misérables more than any other show, so it was my job to live up to those expectations by just bringing those characters to life every single time and simply telling the story.
DURING YOUR TOUR, WHICH CITY STOOD OUT TO YOU THE MOST, AND WHY?
The first city that comes to mind is Toronto, Canada. We played there for a few weeks, which is always a bonus, getting to really know the city. Toronto has a thriving arts scene, good public transportation, wonderful restaurants and fun nightlife. It also has some beautiful cemeteries. That might sound odd, but I’ve always found it peaceful to walk through cemeteries in different cities/states/countries.
WHAT INFLUENCED YOUR DECISION TO MOVE BACK TO HUNTSVILLE AFTER YOUR TIME ON BROADWAY AND TOURING?
After 36 years away I came back to be closer to my family and spend quality time with them while we still could.
I’m thrilled that now I’m working for Broadway Theatre League as their Director of Communications. It’s a full circle moment for me because I played Huntsville with Les Misérables in 2004 and BTL was our presenter. I remember Andrew Willmon, BTL’s Executive Director, very well from back then, and almost 20 years later we started working together again, but in this different capacity. It still feels very surreal..and awesome!
HOW HAS YOUR LIFE CHANGED SINCE RETURNING TO HUNTSVILLE?
It’s been an adjustment but we’re enjoying a quieter life here versus the exciting but chaotic energy of NYC. My husband and I bought a house and two cars and are just enjoying sitting on the back deck watching our dogs run around or taking a quick drive to the grocery store. These are things you simply don’t have living in NYC.
HOW DO YOU FEEL ABOUT THE PERFORMING ARTS SCENE IN HUNTSVILLE?
The performing arts scene here is fantastic! I’ve loved forging relationships with all the different arts organizations: Community & Children’s theatre, the colleges… And the high school theatre has grown so much since I grew up here and that’s so exciting to my inner Huntsville theatre kid from long ago.
WHAT ADVICE WOULD YOU GIVE TO YOUNG PERFORMERS WHO ASPIRE TO MAKE IT ON BROADWAY OR TOUR WITH A MAJOR PRODUCTION LIKE “LES MISÉRABLES”?
See every single show that you can. The more theatre you consume the better. If you’re ever given opportunities to take workshops or masterclasses with professional actors always do so. You can learn so much from not only working with them but also observing them working with others. That’s why the student workshop program that BTL has with all the Broadway touring companies is so important to me. It’s so crucial to take every single opportunity given to you IF this is what you want to end up doing one day.
And BE YOURSELF! There is no one else like you. Once you’ve done all the training, BRING YOURSELF into the audition room and have fun. You’ve earned it and they will love seeing that in you, even if this isn’t the show/role/time for you. They will remember you.

DO YOU HAVE ANY PLANS TO RETURN TO THE STAGE, WHETHER IN HUNTSVILLE OR ELSEWHERE?
That is a good question, and I’ve thought about it. It would really have to be the perfect project and the perfect timing for that to happen. When we’re in “Show Week Mode” at BTL it’s not uncommon to work 70 hours a week, and I am placing a big priority on my family time when we don’t have the tours here. Having said that, I’ve also been unofficially working on my “One Man Show” for years. So, it’s possible that Kip’s Kabaret might happen at some point sooner rather than later.
WHAT DO YOU BELIEVE IS THE BEST WAY FOR THE COMMUNITY TO SUPPORT THE LOCAL ARTS SCENE AND HOW CAN INDIVIDUALS GET INVOLVED TO MAKE A MEANINGFUL IMPACT?
Go see the shows! Buy season tickets. Tell your friends. Help spread the word. It’s so vital, especially now! Huntsville has community, children’s, high school & college theatre happening all over the place and we bring the Broadway tours here too. There’s room for all of us here, but we must support each other. And you must support us so we can continue providing entertainment for Huntsville.

The Frist: Farm To Table Exhibit Farm to Table: Art, Food, and Identity in the Age of Impressionism explores the intersections of art, gastronomy, and national identity in late 19th-century France. Featuring approximately 50 paintings and sculptures, the exhibition’s portrayals of farmers in fields and gardens, bustling urban markets, and chefs and diners in the age of grand banquets and a burgeoning café scene underscores connections between urban and rural life while capturing changing notions of gender, labor, and class.
Creating a legacy of art and seeing the world through Huntsville artist Betty Grisham

Betty Roper Grisham was a force to be reckoned with. She had many passions but the arts were definitely at the top. She was a prolific artist having many mediums. Betty was also a big advocate for local arts. Almost everything she did was somehow related to art, from spending hours in her beautiful flower garden and surrounding herself with nature to upholstering the walls in her home with fabric from her hand painted fabric company Betty Grisham Inc, to spending time with me painting in her studio, to being a founding member of the Huntsville arts league. No matter who she was with or what she was doing the subject of art and beauty was always prevalent.
When did she begin painting?
I’m not exactly sure when she started but she had a passion for art at a young age. Betty went to Montevallo to study art education in 1942 and then continued her studies at Columbia University earning a Masters degree in Fine Art in 1945. We have paintings in our home dating back as early as the 1940s.
Where did she find inspiration?
She was inspired by nature and her surroundings. She would spend time in her garden painting, they had a home on the mountain and we have several paintings of the view of Huntsville from the top of Monte Sano. She loved her family, so there are several paintings of me and my mom as well. Where ever she went she immersed herself in the surroundings and found the beauty in it.
Why did Huntsville become her community to create art in?
My grandfather, Charles Grisham, relocated from Birmingham to Huntsville to pursue his career in broadcast media to operate his new acquisition of the Channel 19 television station. Huntsville was also close to Betty’s family as she was from Athens, AL.
Who are some artists that studied under her?
No specific name comes to mind, I can only remember a few people’s first names. She had lots of people study her work from Montevallo. She would return to the campus and teach seminars, where many students there would attend. Some would even send their work to her home to critique.

Through her philanthropy she helped establish the Huntsville Art League, leading to the creation of the Huntsville Museum of Art. She also helped create the museum of Art at Auburn University. Betty’s portfolio is an extensive and distinguished one. She was an accomplished painter, print maker, and designer with a long list of exhibitions and honors to her credit. She truly made an enormous and enduring contribution to the culture and quality of life in Alabama. A creative life lived with a generous heart embodies the legacy of Betty Grisham.
What would you say to others to encourage them to create, whether it by art, writing, photography, etc?
Start creating, keep creating. Try everything and do it often. If it’s something you are passionate about then the only way to further that passion is to continue to create.
How does creating enhance your life?
I have been creating art in different forms for my entire life. I started out painting and drawing with my grandmother when I was a child then later earned an art degree from the University of Mississippi. I think my creative background has helped me in all aspects of my life. In my personal life it helps me recognize the beauty in the little things. In my professional life, I think my artistic background helps me curate the art and all the other beautiful things at The Little Green Store and Gallery.
What are some of Betty’s most memorable accomplishments?
All of her fabric was hand painted, and she created a fashion line out of it as well as home decor. Her fashion line was featured in Vogue magazine and a New York fashion week.
She had recognition and accreditation from the governor of Alabama as well as a letter from the President of the United States at the time Barack Obama acknowledging her contribution to the art in the United States.

• 2½ cups water
• 1 cup milk
• 1 cup steel-cut oats
• ¼ tsp sea salt
• Desired mix-ins or toppings, such as cinnamon, dried fruit, berries, nuts, maple syrup
1. Combine the water and milk in a large saucepan or small Dutch oven. Bring to a boil over high heat.
2. Stir in the oats and salt and allow the mixture to return to a boil. Reduce the heat so that the liquid maintains a gentle simmer, then cook for 20 to 25 minutes, or until the oats are thick and creamy. Stir occasionally, gently scraping the bottom of the pan to prevent sticking.

• 1 tsp sunflower lecithin
• 1/2 tsp ceylon cinnamon
• 1/2 cup blueberries/raspberries/strawberries (your choice)
• 3 cherries
• 2 oz pomegranate juice
DIRECTIONS
1. Add 50-100 mL of Macadamia Nut Milk into a blender, depending on your desired consistency.
