OH HONEY… ARTICLE MELISSA LATIN PHOTOGRAPHY KATERA SIEGEL
MARINADE INGREDIENTS
½ cup Mike’s Hot Honey ¼ cup orange blossom honey ½ cup olive oil 3 tablespoons paprika 3 cloves minced garlic Juice of one lemon Juice of ½ orange Salt/pepper Red pepper flakes to taste
It is super important to me to continue to support local businesses. For this spicy honey shrimp with shaved brussels sprouts, I continue to support my local fishmonger and fish market, The Carolina Fish and Food Market. The fresh, North Carolina shrimp they offer makes this recipe incredible. It is definitely worth a trip to the Ballantyne area to see what they have in stock.

Lincoln Street has been transformed by owner Randolph James. Vibrant murals and displays of local art draw you in to uncover what hidden gems may be lurking inside. I am always immediately inquisitive as to what new and exciting gourmet items line the handmade shelving. James steers me in the direction of this new offering, an amazing “spicy” version of honey, Mike's Hot Honey. My creative juices started flowing and I wondered what kind of savory recipe I could compose utilizing this special ingredient. I could not get home fast enough to start researching. Instead of creating just one, I tested and developed two incredibly versatile recipes—spicy honey shrimp with shaved brussels sprouts and spicy honey walnut chicken. The following marinade works beautifully for both of these dishes and the protein can start bathing in this luscious combination the night before, the morning of or a few hours in advance. Preparation for each recipe takes just under 20 minutes in one cast iron pan. 16
Lake Norman Lifestyle | March 2017
1. Start by rinsing the shrimp. Add to the marinade and store in the fridge for at least an hour, or overnight. 2. Prep the brussels sprouts by cutting off ends and slicing into thin rounds. 3. Heat a cast iron pan lined with a thin coat of olive oil to medium-high. Toss in the shaved brussels sprouts, season with salt and brown. Remove brussels sprouts and reserve. 4. In the same pan, pour shrimp with marinade and continue to cook on medium-high heat until the shrimp has turned pink and the marinade has caramelized. 5. Add the brussels sprouts back to the pan, toss and reheat for just about a minute. Sprinkle with red pepper flakes and serve with prepared rice.
SPICY HONEY WALNUT CHICKEN INGREDIENTS
1 pound chicken breast tenders ¾ cup walnuts ¾ pound fresh green beans 1½ cup prepared rice Marinade (see above) INSTRUCTIONS
1. Chop chicken tenders into bite-size pieces. You also can use boneless chicken thighs or any other protein you desire. Marinate the chicken overnight or for at least two hours in the fridge. 2. Cut the ends off of the fresh green beans and cut into 1-inch pieces. Heat a cast iron pan lined with a thin coat of olive oil to medium-high. Start browning the green beans and remove once they have browned but still have maintained their “snap.” To the same pan, turned down to medium heat, add the walnuts, toss and slightly brown for a few minutes. Keep your eye on the pan and continue to turn the nuts as they can burn easily. Add nuts to green beans and reserve. 3. Return pan to medium-high and pour in the chicken with marinade. Allow chicken to cook thoroughly and marinade has caramelized. Add the green beans and walnuts back to the pan and allow to reheat. Sprinkle red pepper flakes and serve with prepared rice.
I hope you enjoy these recipes as much as I loved creating them. Feel free to make them your own. You can substitute any of the proteins or even make a vegetarian version. Thank you for allowing me to come into your kitchen monthly and share my passion for great food you can make all on your own! Special thanks to Katera Siegel Photography for her amazing photos. pend just five minutes with Ashley Richardson and you’ll know this Allen Tate Realtor has more than an interest in selling houses. She has a passion for homes and an even greater passion for the clients who buy and sell them. This award-winning Realtor specializes in a variety of properties—from Birkdale Village houses to luxury estates like a $1.65 million Balmore Pines Lane home. This amazing transitional-style property has equally amazing views—the sixth hole of an immaculate golf course in the front and a fabulous water view in the back. With a stunning 7,342 square feet of custom living space, a wraparound porch that takes full advantage of the scenery and a private boat dock, this house is the epitome of luxury lakefront living. Richardson works with a professional photographer to showcase her properties in the best light—sometimes literally. A picture of a Devonshire Drive home shot at night emphasizes the beautiful symmetry of the windows and the stunning landscaping at nightfall. Lighting plays an equally important role in interior shots. The glow of lamps and a twinkling chandelier emphasize the architectural features of the property’s magnificent dining room while sunlight showcases the stone patio and custom fire pit. CONTINUED >

A lovely property on Beaten Path Road exemplifies this transitional elegance that lures a broad market of buyers. This house’s great room is a perfect example of how her collaboration makes a fabulous space look even better. Pink Carnation
hey say a picture is worth a thousand words, but perhaps a flower can express your sentiment in an equally expressive and more fragrant way. Did you know every bloom has a meaning? For example, a daisy symbolizes innocence—a perfect gift for your sweet little girl, maybe at her first dance recital. Perhaps a basket of daisies would help a new mom feel a bit less overwhelmed. A forget-me-not means—you guessed it—I remember. Only does the sender mean “I remember you?” Or, “I want you to remember me?” A pink carnation says, “I’ll never forget you,” whereas a red one expresses, “my heart aches for you.” Hmm, maybe don’t send pink and red ones together. We all know the rose means true love, right? No, wait. Multiple sources cite the meaning of the dark red rose as unconscious beauty and define the red chrysanthemum as meaning true love. Those same sources also say the dandelion represents overcoming hardship, although I wouldn’t recommend sending those. To anyone. The hydrangea, which is abundant in the Carolinas and is one of my favorites, can express heartfelt emotion, like gratitude. Only other sources insist the meaning of this same beautiful flower is heartlessness. How is that possible? And the lily has an equally confusing message. The white bloom represents purity while the orange lily indicates passion. Likewise, the violet can represent either modesty or faithlessness. Huh? The stephanotis means marital happiness. Does that mean sending this flower is off limits if you’re single? And what exactly is a stephanotis anyway? Confused? Me too. So perhaps we shouldn’t put a lot of meaning into what each flower supposedly means. The gesture is the important thing. I’ve never known anyone who wasn’t pleased as petunias to get a bouquet—no matter what kind of flowers were in the bunch. Spring is here, so send those flowers simply because they’re beautiful. The recipient will know exactly what you mean.
