GOOD TIMES

Christmas in July at Great Harvest Bread Company On Saturday, July 21, Great Harvest Bakery & Cafe hosted a Christmas in July event to benefit the Christmas Mother. Everyone who brought in a new toy received a free loaf of cinnamon chip bread. There were plenty of delicious holiday baked goods, including gingerbread men, sugar cookies, Christmas tree brownies as well as hot chocolate and pumpkin lattes. Santa and Mrs. Claus were on hand to take photos with the kids.

6th Annual Charter Colony Lemonade Stand to Benefit FeedMore 9-year-old Carter Moore began a lemonade stand in 2013, benefiting FeedMore, when he was just 4 years old. Every year the kids of Charter Colony come together to serve baked goods donated by neighbors, ice-cold lemonade, and this year—every kid's favorite— slime was also for sale! It's become a wonderful tradition combining the drive and heart of some very dedicated children who are the change we all wish to see in the world. The total in donations this year from this kid-driven effort is almost $1,000.

friend Jessica Johnson about a potential business venture by saying, "So I have this crazy idea." Jessica responded excitedly with, "I'm all about crazy!" The two teamed up in October 2017 and began their adventure together by flying out to Utah for two weeks of training at BaseCamp Franchising, the parent company of Uptown Cheapskate. “We learned a lot about each other during those two weeks in Utah. It helped us get used to each other’s quirks and habits,” Maggie says. “It was beneficial for us in the end because spending so much time together, we have figured out when and how to respond to each other. Sometimes we don’t even have to speak. We can just look at each other and know what the other is thinking,” Jessica added. The idea for the store started after Maggie had a glowing experience at the Uptown location in Short Pump. She researched more about BaseCamp Franchising and location opportunities and soon found herself in Utah to further explore the idea. "They presented a great business model, and we soon began scouting locations in Midlothian,” Maggie says. Maggie and Jessica met four years ago while working in the same department at the CarMax corporate office. “Maggie and I had very similar experiences growing up, moving around to different places. We connected right away and have been friends ever since,” Jessica says. As single parents with comfortable 9-to-5 jobs, they understood there would be challenges ahead. Yet, the endless opportunities outweighed the risks, and they both foresaw their sacrifices leading them to success. Jessica’s background includes banking and retail management, while Maggie spent the majority of her management career at Starbucks after graduating college. CONTINUED >

WHY SHOPPING AT UPTOWN CHEAPSKATE WILL BENEFIT YOU AND OUR MIDLOTHIAN COMMUNITY. The Uptown Midlothian store offers locals the chance to recycle as well as refresh their wardrobe. “Sell us the items you no longer want and walk out with the latest fashions for a fraction of mall prices,” Maggie says. “Trends change so quickly, it's difficult to remain stylish on a budget, but Uptown provides that opportunity.” They also focus on giving back in meaningful ways, both locally and globally. “BaseCamp Franchising encourages their owners to get involved in the community and provides philanthropic opportunities from the start. On a local level, we look forward to supporting our neighboring schools with their fundraising needs as the upcoming school year begins. We already have a partnership with a local nonprofit called The Thrifty Quaker, who collects all of our donated clothing to sell in their store; their monthly proceeds support a variety of local organizations. Additionally, we implement the bagless and fill-a-bag programs. Both send proceeds to support the building of schools in third-world countries, and the company just finished building their eighth school,” Maggie says. WHY THEY MADE THE LEAP TO LIVE THEIR DREAM. They love to welcome new patrons and seize every chance to create lasting relationships. Not to mention, they love fashion. Each day brings new excitement for these entrepreneurs. “Clothes are an expression of your personality and should make you feel comfortable being you, whether you’re wearing your favorite pair of jeans or trying a new look,” Maggie says. All in all, these two amazing women are thrilled to make an impact on their community. "We hear regular feedback on the excitement of having an Uptown location on the Southside. I'm a graduate of James River, and Jessica is from Thomas Dale, so supporting us is providing some local gals with the chance to live their dream!" WESTCHESTER COMMONS RESTAURANT SERVES NEW AMERICAN CUISINE IN AN "UPSCALE CASUAL" ATMOSPHERE 20

Midlothian Lifestyle | September 2018

ARTICLE STEPHANIE HOWER PHOTOGRAPHY FRED + ELLIOTT PHOTOGRAPHY AT THE SHAVED DUCK RESTAURANT, DINING OUT IS AN EXPERIENCE TO BE TREASURED. Owner and General Manager Joe Kmetz and Executive Chef Matt Kirwan strive to provide Midlothian with an upscale atmosphere and excellent food and beverage choices, all within city limits. After connecting through a mutual friend from high school, Joe and Matt mapped out their vision and capitalized on their extensive knowledge of the food industry. Joe has worked as busboy, server, bartender, line cook and kitchen manager. "I've held almost every position in the industry," he says. "I was part of another restaurant group from 2013-2016 but left in order to pursue owning a restaurant that was a better representation of myself. My dad approached my twin brother and me with an idea of a family-owned business, something he has always dreamed of. We worked together on a business plan for about two years and looked for the right location for a year during that process, settling on Westchester Commons because it provided a neighborhood feel." Matt worked at Virginia's, a restaurant in the lower east side of Manhattan, for three years, and was seeking the chance to come back to Richmond to open his own restaurant. CONTINUED >

"Joe texted me one day, and I was back in Richmond a month later with Joe getting the groundwork started for The Shaved Duck." After much hard work and dedication, the team has established a restaurant that is unique to the area. "Our motivation was to provide the area with a restaurant experience that you can only get in downtown Richmond: high-quality food paired with a top-notch beverage program with excellent wines, craft cocktails and the best service you can find in the area," Joe says. "We are the only restaurant in Midlothian that offers a tasting menu comprised of five courses with wine pairings." Their menu is based on Matt's background in French bistro-style cooking, as well as some Italian and Southern dishes. "French food is my favorite, and I try to do all of the old-school French styles with new techniques," Matt says. "Using every part of the animal, making stocks from bones, making everything in-house...things like that are very important to me." He also enjoys introducing people to new foods. "It's amazing how many people have eaten here and said they had never had duck before!" As a 2005 graduate of Midlothian High School, community is important to Joe. "The Shaved Duck Restaurant hosts local charity and nonprofit brunches the last Sunday of every month, as well as showing appreciation for educators and helping professionals," he says. He and Matt also participate in the Westchester Commons concert series by setting up a food tent and have taken part

in events such as Broad Appetite and A Taste of Midlothian. For those wondering how the restaurant acquired its name, Joe has a story behind the distinctive moniker. "We decided on The Shaved Duck Restaurant as our restaurant name one night when I was working on the business plan," he explains. "I took a break to have some bourbon and to do some word association to trigger some ideas. After what seemed to be a million bad ideas coupled with several bourbons, I had 'The Shaved Duck Restaurant' written down. So, I called my twin brother to ask what he thought; he hated it. It didn’t make sense to him. I asked if he would remember it to which he replied, 'Of course, it’s off the wall'. I told him 'That’s the point; it’s intended to be catchy and memorable.' The rest is history." + JOE KMETZ'S FAVORITE DISH AND BEVERAGE: "A good duck breast paired with an old fashioned." + MATT KIRWAN'S FAVORITE DISH AND BEVERAGE: "Parisian gnocchi (the French style of gnocchi that is pâte à choux-based) served with charred corn, confit duck and pickled ramps in a white wine butter sauce. Soup is

SOUL

T

his is definitely the easiest and best way to make rich-tasting butternut squash soup, without having to peel and dice a large,

awkwardly shaped vegetable. You start by cutting the squash in half lengthwise and roasting it in a hot oven. Scrape the roasted flesh from the skin, and simmer it with sautéed yellow onion, fresh sage, and a tart Granny Smith apple. When everything’s soft and the flavors have melded, purée it all in the blender. Finally, enrich the soup with a bit of heavy cream.

1. Heat the oven to 425°F and arrange a rack in the middle. Line a baking sheet with aluminum foil. Place the squash pieces cut-side up on the baking sheet. Melt 1 tablespoon of the butter and brush all of it over the tops and insides of the squash halves (alternatively, you can rub it on evenly with your fingers). Season generously with salt and pepper. Roast until knife tender, 50 minutes to 1 hour. 2. Meanwhile, peel, core, and cut the apple into medium dice. Cut the onion into medium dice. Melt the remaining tablespoon of butter in a large saucepan or Dutch oven over medium heat. Add the apple, onion, and sage, season with salt and pepper, and cook, stirring occasionally, until softened,

LOCAL’S CHOICE LEAD MOVER AND SHAKER AT WESTCHESTER COMMONS

Get to Know Mark Bowen His real title is Marketing and Operations Manager, but everyone here knows he is your go-to person for events, leasing and generally all things Westchester Commons for more than three years. WHAT’S SOMETHING PEOPLE WOULD NEVER GUESS ABOUT YOU? I have been a ring announcer for professional wrestling. FAVORITE MOVIE: The Untouchables with Kevin Costner, Sean Connery and Robert DeNiro FAVORITE MUSICIAN OR BAND: Bruce Hornsby. I’ve seen him 20 times in concert. DO YOU HAVE A PET? Yes. I have a 10-year-old bassett hound named Max I’ve had since he was six weeks old. BEST PET EVER. WHAT’S YOUR FIRST VIVID MEMORY? I remember sitting on the floor with my parents when I was about 2 1/2 years old watching Neil Armstrong walking on the moon—extremely vivid memory. WHAT HOBBIES/INTERESTS DO YOU HAVE OUTSIDE OF WORK? Attending live entertainment events (concerts, theater, festivals), cosplaying with my daughter at comic cons, outdoor grilling with a good Virginia craft beer —Devil’s Backbone Vienna Lager is my flavor of choice—getaways to the beach or to the mountains with my wife, Jennifer. WHAT INSPIRES YOU? People that do good in this world and are not looking for anything in return. They just look to give more than to receive. I’m proud to say Westchester Commons has helped various nonprofits raise more than half a million dollars in the past three years through events we’ve held or hosted. IF THERE WAS ONE THING YOU COULD CHANGE ABOUT YOUR JOB, WHAT WOULD IT BE? I would speed up the process of bringing in new business to open at our center.
