Table X Redefines Fine Dining

Table X offers a culinary experience far removed from the traditional. Chefs and co-owners Mike Blocher, Nick Fahs, and Chef de Cuisine David have continued serving modern American cuisine while carving out its unique identity in the culinary world since 2016. From the moment diners arrive, it's clear Table X is more than just another fine dining establishment—it's an elevated experience crafted without shortcuts.

The restaurant’s seasonal tasting menu is at the heart of this experience, designed to showcase the freshest local ingredients. After the challenging circumstances of COVID-19, the duo decided to offer a tasting menu only to streamline processes. Guests can opt for 5 or 7 courses that can be accompanied by a wine pairing for an extra fee, with each dish telling a story of craftsmanship and detail. Every element on the plate—from the warm, crusty sourdough bread paired with house-made cultured butter to the delicate pumpkin roll—is prepared from scratch in Table X’s kitchen using locally sourced or home-grown ingredients. Try the UT47 heritage Angus beef with smoked onion and a caramelized buttermilk jus.

"The restaurant has evolved over eight years; when we opened, we were new on the scene in Utah; our vision, since the beginning, was to do a seasonal chef-driven menu, digging into local products," Mike said. "We felt that we could still make people happy and give fewer choices but give them more of a curated experience that explains where you are."

A full vegetarian tasting menu is available, celebrating seasonal vegetables as the stars of the plate with the same level of attention and creativity. Try the house-made Campanella pasta with autumn squash, hazelnut and sweet garden garlic or the vegetable steak, served with a smoked onion sauce, confit baby turnip and fermented garlic scape butter. In addition, they will accommodate dietary restrictions as they want all of their food to be approachable for everyone.

Table X Bread, i.e., the bakery, is run by Nick and produces everything from scratch. The classic sourdough is served in the restaurant, and there is a rotating bread selection, from focaccia to various croissants. Sandwiches and sweets like seasonal cakes and cookies are also fan favorites.

"Bread has always been important to us; we feel like no good meal starts or ends without breaking some sort of bread," Mike added. "Bread has been and will always be the constant on the menu."

Beyond the food, the restaurant prioritizes community connections. The chefs regularly partner with local farmers and artisans to source ingredients, ensuring every dish reflects Utah’s agricultural heritage. Events like wine-pairing dinners and culinary workshops further engage the community, making Table X not just a restaurant, but a gathering space for food lovers.

The ambiance at Table X ties together the exquisite dining experience. The restaurant perfectly balances upscale dining and a relaxed, unpretentious atmosphere. Whether enjoying a summer evening with garden-side seating or cozying up inside its warmly lit dining room.

"If you have never been to Table X, stop in the bakery first, try some bread and check it out," Mike says. "It is a great way to see what we are all about."

The Hardy Brothers

The Hardy Brothers have been a part of Utah’s vibrant music scene for over a decade. Founded in 2012 by James Hardy and his three brothers, the band has evolved into a dynamic ensemble that blends rock, reggae, and folk influences. With roots in the Mountain West, James credits the region’s cultural diversity for shaping their eclectic sound. “The mix of cultures here has always influenced our music,” he shares. “The genres that we like to create are all over the map and we love the diversity of music in the Mountain West.”

Today, the band includes James Hardy on vocals and guitar, Maddison Cassita on vocals, Conor Papineau on guitar, Justus Craigle on bass, Tony Tuitupou on drums, Jared Ramos on trombone, Matt Pizza on percussion, and Skip and Zach Hardy as studio musicians and engineers. Together, they create music that resonates deeply with their audiences, both locally and beyond.

There are many local spots where the band loves to perform. From the lively Gracies Bar in Downtown Salt Lake City to the intimate settings of The Hog Wallow and Riverhorse, each venue offers a unique connection to their fans. "I love the relationships I've been able to create with the local owners of the venues and having our community come show up," says James. Sundance Mountain Resort holds a special place in the band’s journey. Having played there since their early days, James describes it as “a homecoming.” He fondly recalls annual performances and memorable encounters, including meeting David and Coco, a couple who became lifelong friends.

"We had been performing at Sundance for about a year and we noticed this couple at every show and always so tuned into our music," says James. "One day we went up to them to start a conversation and to this day we are the best of friends." David, a musician himself, later started his own band, The Dead Cowboys, and now performs alongside The Hardy Brothers. Such connections highlight the deep sense of community the band fosters through their music.

The Hardy Brothers are not confined by genre. While they identify as a rock/reggae band, their upcoming album features a blend of styles, reflecting their diverse influences. One of their anticipated 2025 releases, “Lady Moon,” is a folk-rock ballad inspired by a camping trip under a full moon in Utah’s red rock desert. "We love going camping in the desert and it was one of those nights where we were all around the campfire and that full moon was coming up over the desert." Another single, “In Your Favor,” carries an uplifting message: “Just remember, the universe is conspiring in your favor.” James hopes their music spreads a message of positivity and enlightenment, echoing the “one love” ethos from one of his biggest inspirations, Bob Marley.

Reggae’s connection to the Salt Lake Valley is deeply rooted in the region’s cultural history. Salt Lake has strong ties to the Mormon Church and James believes that their connection to Polynesian communities is what brought reggae’s rhythmic beats and positive vibes to Utah. “When I was growing up, you could feel the spread of Bob Marley across the valley,” he recalls. This cultural tapestry continues to inspire The Hardy Brothers’ music.

The band has also been a proud participant in the Zion Reggae Festival, a celebrated event that showcases the best reggae talent in the region. Their performance at the festival has become a highlight of their career, connecting them with reggae enthusiasts and introducing their music to broader audiences. “It was unbelievable to be a

He teaches music at a therapeutic boarding school for teenage boys, using his songs to inspire and empower. “Life is a rollercoaster, and you have to actively practice your happiness,” he says. This philosophy informs his teaching and songwriting, creating a meaningful connection with his students and fans.

With new music on the horizon, The Hardy Brothers are poised to continue their journey of spreading joy and unity through their art. James is excited to release new music in 2025 and announces that each song will be presented individually as a "jewel," that has been crafted with care and attention. Hinterland Way

Hinterland’s proud “ski misfits” have been creating a name for themselves handcrafting skis since 2009. And they’ve done it all by the sweat of their brow.

While their tight-knit team comprises the types you’d love to grab a beer with on the slopes, they do not play around when building top-of-the-line skis for “the people who are out there skiing every single day the lift is running or in the backcountry,” as CEO and one of the originating founders, Creighton Elinski, puts it. “Whether that be the pros, heli guides, ski guides, local folks, and everybody in between.”

Handcrafting each pair of skis with love might be an understatement; insert “obsessively” and you get closer to the truth. No cracks get past the nose of builder and craftsman, Matthew Fritz (also known as “Fritz”), who comes from a long line of craftsmen himself. His job is to make all of “Creighton’s wild ideas a reality,” as he says.

In an arduous and meticulous ten-hour process, Fritz has his hands on the tiniest of details—building the sidewalls, cutting all the pieces and components by hand, and guaranteeing that not only every pair of Hinterland skis is a literal work of art but is built to endure a beating on the mountain.

Because where other enterprises cut corners to increase their bottom line, the steadfast team takes an “off-piste” or counter approach. “If there is a better material on the market, we'll find it and we'll use it. And if there are better build techniques, we'll spend the extra time to develop the tools or create the processes to make that ski just a little bit better in every single way we can,” the earnest CEO explains.

And well, the proof is in the skis. They’ve built skis for clients that have lasted the test of time—15 years strong (since they opened) and aspiring to last a lifetime. Known to even get better with time, Fritz adds, "They break in, they don't break down."

Maybe not so ironically, the Hinterland team is also built to last. They’ve remained intact through plenty of their own rough terrain— enduring times of feast and famine all while staying committed to the heart of their brand and each other. This is the major reason why partner and investor, Jared Turner, was drawn to the nimble crew and wanted to help them take their brand to greater heights.

"What impressed me was that the skis are incredible, high quality, and have a beautiful aesthetic. They're the best skis in the world, but it was their camaraderie as a team—usually guys who have worked together as long as they have, have a beef, but they didn’t have issues and they've had some hard times,” he says.

Why Utah? Besides the obvious proximity to the mountains (they can have a prototype ready and on the mountains in three days), they fell in love with the unique die-hard ski community here that has stuck with them through the good, the bad, and the ugly.

“Utah was a bit of a strange place to move 10, 20, 30 years ago,” Creighton says. “So you know that the people here are here for a reason. The skiers are very passionate and kind of stuck through the woes of Salt Lake City and did it all for skiing. So there's a lot of heart here.”

Fritz echoes his sentiment, “I feel like I finally found my place of mountain misfits. I would want to support anything they do, so I'm very encouraged by their support of what I'm doing.”

This exchange of local support spills into their love of the environment and giving back as well. Creighton's extensive eco-conscious background has caused them to take extra measures. Even while locally sourcing most of their material, they are aware of the sport's environmental impact. Partnering with Tree Utah, they are revegetating the Wasatch Front in areas damaged through skiing, hiking, and foot traffic by planting two trees for every pair of skis they sell.

Beyond their ambitious plans for the ski brand— including a goal of sponsoring the Salt Lake City 2034 Winter Olympics—Hinterland has a surprise in store for early next year: groundbreaking innovations in ski design.

Their latest models, the Highmark and Highmark 95, are tailored to different skiing experiences. The Highmark is for carving and front-side slopes and the Highmark 95 is for variable terrain and smooth skiing that combines multiple models into one, making it much less demanding than some of their other styles.

“Even if they're from beginner to intermediate, we've got a quality product for them here that they can use and grow on as they work towards being an expert skier,” Creighton concludes.

For over four decades, Glen Phillips has been a familiar and uplifting presence in Holladay. By day he serves as your friendly State Farm agent but beyond that he is a beloved community advocate. Glen embodies the values of hard work, community service, and kindness. His dedication to helping others runs deep and his involvement in local initiatives spans decades.

While serving on the Chamber of Commerce Board of Directors, he built connections with many local businesses and participated in events such as Holladay City’s 20th anniversary celebration and its annual tree giveaway. He also took part in a food bank supporting students at Olympus High School, ensuring that kids from low-income families can focus on their education with some help from the community to lessen financial burdens.

In his professional life, Glen goes beyond selling insurance. “I look for ways to save people money and offer better protection,” he says, emphasizing the importance of being genuinely helpful. "If I can serve people and help them solve their problems, my work is done." His favorite part of Holladay? “The people,” he answers without hesitation.

An avid runner, Glen logs 10 to 13 miles on weekends, finding joy and vitality in staying active. “Being active keeps you young,” he advises. "It's hard as you get older to keep working hard and being active, but I think it's also the thing that makes you stay young in some respects," says Glen. Whether jogging through Holladay or lending a hand to community efforts, Glen lives by his mantra: “Just be good to each other.” His boundless energy and dedication have made him not just a State Farm agent but a treasured member of the community as well.

This fondue is perfect for any gathering! Pair it with your favorite local bakery breads and wines for an elegant dinner. Using quality cheeses will enhance the flavor and create a better melting texture.

Santangelo emphasizes the timeless adage, "drink and eat from the same place," when pairing wine with fondue. His top choice is the Chasselas grape from Switzerland, particularly the L’Alpage, Chasselas, Montsur-Rolle. This wine, available at Utah DABC, complements fondue’s richness with its pure minerality and refreshing qualities. Its clean, crisp profile balances the cheese's decadence, making it an ideal companion.

Santangelo also suggests keeping a bottle of Kirsch liqueur on hand for a fun Swiss tradition called "Coup du Milieu." If someone drops their bread in the fondue, they must kiss their partner and take a shot of Kirsch—a playful way to add charm to the evening.

FONDUE

Ingredients:

• 1 cup of dry white wine (e.g., Sauvignon Blanc or Pinot Grigio)

• 1 garlic clove, halved

• 8 oz Mifroma Gruyère cheese, grated

• 8 oz Swiss cheese, grated

• 1 tbsp cornstarch

• 1 tbsp fresh lemon juice

• Freshly ground black pepper and salt, to taste

• A pinch of nutmeg (optional)

For Dipping:

• Cubed crusty bread

• Steamed or raw vegetables (broccoli, baby potatoes, or asparagus)

• Sliced apples or pears

• Cooked sausage or steak

Directions:

1. Toss the grated cheeses and cornstarch together in a bowl.

2. Rub the inside of a fondue pot or heavy saucepan with the halved garlic clove, then discard.

3. Add the white wine to the pot and heat over medium-low until it starts to simmer

4. Stir in your lemon juice.

5. Gradually add your cheese mixture to the pot, one handful at a time. Be sure to stir constantly and melt the handful of cheese completely before adding more.

6. Once the cheese is fully melted and smooth, season with black pepper, salt and a pinch of nutmeg to taste.

7. Reduce the heat to low and transfer the fondue pot to its stand or keep the saucepan on low heat. Serve immediately with your favorite dippers.

INGREDIENTS

• Ripe Pear

• Prosciutto

• Burrata

• Lemon Zest

• Extra Virgin Olive Oil

• Dried Figs

• Red Pepper Flakes

DIRECTIONS

1. Slice the ripe pear into thin slices.
