Think Thanksgiving E
very year, Thanksgiving arrives before Christmas. And yet it seems we continue to “push” the acceptable date of doing Christmas-y things before its time. A great example is hanging exterior Christmas lights. Now more than ever, Christmas decorations seem to be going up immediately following Halloween—in some cases before. I was an eyewitness when Costco put out Christmas decorations in September. I’m still twitching. Interestingly, there seems to be a great divide among the population; on one side are the avid lovers of all things Christmas who literally start playing Christmas music November 1. On the other side are the curmudgeons who say "no" to Christmas before Thanksgiving. As a passionate advocate of the latter, I implore you not to leave Thanksgiving out. You might counter this point with “we’re not leaving Thanksgiving out!” Oh sure, you celebrate in between all of your caroling and tree-decorating but that doesn't count. I’m a firm believer that Thanksgiving deserves its own period of celebration too. As corny as it sounds, Thanksgiving should be a time to take pause and give thanks. If you’re reading this column, be thankful you have eyesight. If you get out of bed each day, be thankful you can … you get the idea. With all of the wonderful things we have in our lives, why not take the first couple of weeks in November to actually be appreciative. In November of 1621, the settlers of Plymouth Rock and the Native American Wampanoag tribe held a feast together to celebrate their newfound friendship, and also to give thanks for the pilgrims’ first successful corn harvest. The entire event lasted three days, and though their food may have looked a little different than ours, the message was the same: Give thanks. It was not until 1863, in the midst of the Civil War, that Abraham Lincoln declared Thanksgiving a national holiday. He set it to be observed the fourth Thursday in November. In 1939, Franklin D. Roosevelt tried to get it moved to the third Thursday in November to increase sales during the Great Depression. The outcry from the general public was so overwhelming, FDR was forced to move it back. Maybe I'm a stalwart supporter of Thanksgiving, but it’s because I feel there is something truly special about it. To me it’s pure and simple. No gifts, songs or grand overtures, just a meal with family and friends … and a little football. This year, hold off on decorating for Christmas until after Thanksgiving. Enjoy Thanksgiving and use the time to take a deep breath and reflect. After all, Christmas can wait for a couple of weeks. Right?

Stars Come out For Christmas Boat Parade Comedic actress Leslie Mann and Sugar Ray lead singer Mark McGrath have been named as the first-ever grand marshals for the 106th Newport Beach Christmas Boat Parade. Both Mann and McGrath have called Newport Beach home since childhood. The Newport Beach Christmas Boat Parade and Ring of Lights home decorating competition is Newport’s Christmas card to the world. The boat parade runs for five consecutive nights beginning Wednesday, December 17 and ending Sunday, December 21. Each night the parade starts at Bay Island at 6:30 p.m. and finishes at the same site at approximately 9 p.m., completing its 14.7-mile route around Newport Harbor. The theme for the 2014 Christmas Boat Parade is “Deck the Hulls with Bows of Jolly.”
Decommissioning San O The decommissioning of the idled San Onofre Nuclear Generating Station will cost an estimated $4.4 billion, according to a plan submitted recently by majority owner Southern California Edison. The plan, summed up in three documents and submitted to the Nuclear 10

Regulatory Commission, envisions major decommissioning work to begin in early 2016. The documents include a decommissioning plan, a cost estimate and how to manage spent fuel. The facility on the northern San Diego County coastline has been inoperative since January 2012, when a small, non-injury leak was discovered in one of the two reactors. The other reactor was shut down for maintenance at the time. The decommissioning trust funds established by San Onofre’s owners currently total about $4.1 billion, according to So. Cal. Edison. Based on the updated cost estimate, anticipated cost escalation and future trust fund earnings, SCE said it believes the San Onofre decommissioning is fully funded and no further customer contributions will be required at this time.

Historical Treasure Julie Laughton Design + Build restores historic Laguna Beach home
W
hen general contractor Julie Laughton of Julie Laughton Design + Build was tasked with redesigning a historic home in Laguna Beach, she took a deep breath and got to work. The home, built in the 1890s, is a charming beach cottage that presented more than a few modern-day challenges. Big on personality, but short on storage space, Laughton had to decide how to redesign the home to provide her client with the greatest impact, while staying true to its period. “My biggest challenge was getting maximum storage without moving any windows or walls because the home is historic,” Laughton says. Laughton chose a natural palette to complement the views of the house. “I decide all the color choices in advance, giving complete consideration to the surroundings,” she says. “There’s a lot of natural light. I thought about the period of the home and location—there’s a killer whitewater ocean view. For the counters, I decided to go with a honed, grey-blue limestone that has natural seashells and fossils; with the worn vintage floor, it was perfect.” 12

After carefully assessing the house, Laughton decided her best option would be to gut the kitchen and bathroom because they had been designed non-period and did not match anything in the house. “I opted for new period-style cabinets and slab and flooring to make the kitchen appear like it had always been there. I also chose wood floors that look like they’re 100-year-old distressed oak.” The kitchen redesign also included new, modern stainless steel appliances that have an older appearance. Laughton also replaced the existing cabinets with new solid wood cabinets with vintage shaker-style doors. Now completely restored, Laughton recalls her favorite aspect of the project:. “My favorite was the demo, and getting rid of the bad design and cabinets that were done in the 1980s. ooking for a new twist on America’s favorite holiday? This year, less is more for Thanksgiving table décor and savory side dishes, according to several area florists and chefs. They suggest it’s time to “go green” and get back to basics, with simple table arrangements consisting of edible California wildflowers and native plants, along with simple recipes using California’s plentiful, fresh vegetables. First impressions do register, there are several key tips for maximizing the wow factor when creating your holiday table. According to longtime florist Augie Manna, manager of Anne’s Flowers and designer to many top hotels, including the Fairmont, the top three things to remember when planning your 2014 holiday décor are: 1) Use “homemade” center pieces and place cards whenever possible, to give a welcoming, “homey” feel; 2) Stay within a color scheme; and, 3) Add at least one exotic or expensive item to flowers and food. Living in California, we can easily follow his first tip and integrate the many wildflowers found growing in our backyards and gardens. Take it one step further, and utilize pretty edible flowers abundant in California, Arizona, Utah and Nevada, such as juliflora (the Mesquite flower), prickly pear cactus flowers, manzanita, canaigre, and even dandelions (yes, they are edible). With a bud vase, a few flowers and some holiday ribbon, anyone can easily create impressive place settings that add a festive touch without breaking the budget. The third tip to creating a

homemade arrangement which still looks elegant is to add one “exotic” touch, such as the Bird of Paradise flower, which tops an easy arrangement. The traditional Thanksgiving colors of brown, orange and gold are an easy “safe” option. But, according to Manna, the purple in the Bird of Paradise is a hot accent color this year for Thanksgiving, adding a burst of contrast and elegance. Include mini-pumpkins down the center of the table or along the buffet line, and accent with simple backyard greens, such as eucalyptus leaves, ivy or pine boughs. Pine cones serve as innovative place-card holders. To create impressive holiday centerpieces, simply start with a clear glass vase. Next, place an assortment of wildflowers (stems removed), green leaves and even a small gourd in the base of the vase. Gently fill the vase with water halfway up the neck. Tie decorative ribbon around the neck of vase. Place more flowers and leaves into neck of vase, and fill to the top with water. Finally, top the vase with a Bird of Paradise or two, for more fullness. We also love the idea of repurposing used liquor bottles and wine bottles as unique decanters for ice water on the table. Simply soak old bottles in warm water to remove the labels, then tie a decorative bow around the bottle neck to coordinate with your centerpiece ribbon. Getting “back to basics” is also a current trend popular in area restaurants, and it’s easy to integrate into your Thanksgiving table. More and more chefs are promoting the “farm-to-table” movement
which focuses on utilizing the freshest local ingredients. A star in the farm-to-table movement, Chef Bill Blackburn, owner of Blackburn’s Farm-to-Table Restaurant in Corona, explains. “It’s not only the flavor that improves when using fresh local ingredients, you are actually creating food which is better for your body, free of pesticides and chemicals,” he says. Your guests will devour our unique update on classic stuffing, featuring the state vegetable of California, the artichoke. This “Artichoke Olive Stuffing,” a savory blend packed with parmesan, is not only delicious, but easy to make. Don’t like artichokes? Simply replace them with asparagus tips or hearts of palm. Kalamata olives make a great substitute for green olives, if you prefer, and try a bit of feta cheese with the parmesan, for a truly Mediterranean twist on this stuffing. Notably, even though Chef Blackburn is devoted to using fresh ingredients, he suggests using dried herbs when making stuffing and other baked goods, as the flavors blend more evenly and intensely. While Thanksgiving can be a diet disaster with all the heavy gravy, the high-carb rolls, and the fatty potato casseroles, you can keep dessert calories under control with this unique “Skinny Pumpkin Cream Pie.” Best of all, your guests will never guess it has half the calories and a third of the fat grams of traditional pumpkin pie. How do we do it? We simply replaced some of the heavy cream with fat-free sweetened condensed milk and started with a simple, homemade reduced-calorie pastry shell. But, if you’re pressed for time, the pie is equally delicious, and nearly as skinny in a pre-made shell. We top it with a light cream cheese frosting for added flavor. Then, we take a tip from Chef Blackburn, who is known to utilize unique, local ingredients in his menus at his restaurant, creating dishes that are visually appealing as well as delicious. “Adding a garnish of an edible flower is an easy, impressive way to make an ordinary dish become extraordinary,” says Chef Blackburn. Here, we add a unique touch, which will keep your friends talking long after the holiday: We top the pumpkin cream pie with bright red prickly pear cactus flowers.
Skinny Pumpkin Cream Pie

ening combined. Lightly press down shortening to eliminate air bubbles. Then, using a large spoon, gently scoop out shortening from measuring cup and add to flour mixture (discard remaining water in measuring cup). Cut shortening into the flour mixture, using a pastry cutter, until small dough balls form. Add the 8 tablespoons of ice water, one at a time, and continue mixing. If dough appears too hard, add additional water. Chill dough in refrigerator if it’s too soft. Form dough into a ball. Roll out dough, and place in a 9-inch pie pan. Light Cream Cheese Frosting:
• 8 ounces reduced-fat (Neufchatel) cream cheese • 1 cup powdered sugar • 1 teaspoon vanilla extract Instructions: Place all ingredients in large bowl; beat until smooth. Refrigerate until ready to use. Pie Instructions: Preheat oven to 425°F. Combine pumpkin, condensed milk, egg substitute and spices in a large bowl. Beat until just smooth; pour into pastry shell. Bake at 425° for 15 minutes. Reduce heat to 350° (do NOT remove pie from oven); bake an additional 25-30 minutes, or until knife inserted in center comes out clean. Cool completely on a wire rack. Store in refrigerator. Top with Light Cream Cheese Frosting when ready to serve, and garnish with edible local flowers, such as prickly pear cactus flowers or dandelions. Yield: 8 servings. • 1 loaf (1 pound) sourdough bread, cubed into ½ inch pieces • 2 jars (6 ounces each) marinated artichoke hearts, drained and diced • 1¼ cup grated parmesan cheese • 1 teaspoon dried rosemary • 1 teaspoon salt • 1 teaspoon ground black pepper

1 pound mushrooms, rinsed, trimmed & sliced 1 tablespoon butter 1 large onion (1/2 pound), chopped ¾ cup chopped celery 2 tablespoons minced garlic ½ cup green olives or Kalamata olives, sliced (some whole for top) • 2 teaspoons poultry seasoning • 2¼ cups reduced-sodium chicken broth • 1 large egg Instructions: Preheat
oven to 350°F. In a large bowl, gently stir together bread, artichoke hearts, parmesan and rosemary; set aside. In a large skillet over high heat, melt butter and cook mushrooms, onion, celery and garlic, stirring frequently, until vegetables are lightly brown (about 15-18 minutes). Pour vegetables into a large bowl. Pour ¼ cup of broth into skillet, stir to scrape up browned bits. Add broth mixture to veggies. Pour remaining 2 cups broth over bread mixture; add poultry seasoning. Stir well to combine. Add salt and pepper. Make an indentation in stuffing; add egg. Beat egg with fork until blended; stir egg into stuffing. Gently fold in sliced olives (reserve some whole olives to place decoratively on top of stuffing, if baking in casserole). Spoon stuffing into 9-by-13-inch casserole dish. For moister stuffing, cover with foil; for crustier stuffing, do not cover. Bake about 45-55 minutes, until hot in center or lightly browned. Note: Stuffing can be made one day ahead; simply make stuffing, place in casserole, cover with foil and store in refrigerator. Increase baking time by about 15 minutes for chilled stuffing.

Movember is a charity event held each November, which sees men grow stashes to raise funds and awareness for prostate and testicular cancer and mental health. If you’re unfamiliar with Movember, here’s a quick tutorial: The Movember Foundation is the leading global organization committed to changing the face of men’s health. They achieve this by challenging men to grow moustaches during Movember (the month formerly known as November) to spark conversation and raise awareness and funds for men’s health issues. Started in Melbourne, Australia, in 2003, it’s now seen around the globe every November 1–30, with campaigns in 21 countries. If you observe an onset of moustaches in various stages of

Meet Newport Beach Resident and Ultimate Mo Bro, John B. Cornuke John Cornuke is an inspiration. Aside from a successful career, he, along with his team (Team Nuclear, a play on his last name), has raised $500K over the past four years during the month of Movember—all in the name of the Movember Foundation. It all began while Cornuke was attending a high school sporting event. He observed a gentleman growing a moustache. At the time, he mused to himself, “Perhaps this guy is bringing back the ‘70s because it certainly isn’t ‘cool’ to sport a mustache.” Intrigued, he struck up a conversation with the man. “He informed me that he was diagnosed with prostate cancer, and he was participating in a charity called Movember. I inquired further and we developed a friendship.” That chance meeting was a complete game-changer for Cornuke, who says, “After hearing this gentleman’s story, I thought it was time to put aside my pride and do something positive, and completely out of character. I looked into the charity and put together a team of friends and neighbors. We had 10 that first year and we raised $38K. Our goal at the time was $10K.” Motivated by his three sons, ages 16, 10 and 9, Cornuke says he will continue to do something positive to give back. “I’m blessed to have grown up and live in Newport Beach. I feel so fortunate to be healthy. Did you know one in six men will be diagnosed with prostate cancer in their lifetime? One new case of prostate cancer occurs every 2.2 minutes and a man dies from this disease every 17.5 minutes." “I know men dislike talking about their health,” he says. “That’s why I challenge each of my team members to schedule a doctor’s appointment every year. If detected and treated early, prostate cancer has a survival rate of 97 percent.” Now in its fifth year, what started as a grassroots effort has grown exponentially. “We’ve been awarded the number-one team in the United States for the past two years out of 18,000." Personally, Cornuke says, “I’ve raised $15K to $20K each year, but it’s really about the team. Now I focus my attention on helping others to raise money." “This has been a work in progress, and every year we [the team] learn something new,” he says. “Recently, I created a board of directors for Team Nuclear—currently 170 members strong. We hold a charity bike ride (bar hop), a poker tournament and a golf tournament all in the name of men’s health.” When asked what advice he’d give other men, Cornuke chuckled “Get over yourself. Spare Change for Change Newport Beach Teen learns the power of giving
S
pare change is a nuisance. It gathers at the bottom of our purses and weighs down our pockets. Naturally, some of us have a coin jar, but who really takes the time to get it counted? Few ever do. Leave it to the creative teen, Isabel Bellino, who had the idea to take ordinary spare change and transform it into help for a thriving charitable organization. The concept is simple: Donate spare change to make a change in the community. When Bellino was just 12, she read a statistic stating there are 38,000 cases of suspected child abuse, neglect and abandonment reported each year in Orange County. At the time, she needed an idea for her Bat Mitzvah project so she made the decision to dedicate her project to raising money for at-risk children in her community. “This is when Spare Change for Change (SC4C) was born. That year, friends and family collected $1,300 in coins. We created baskets full of toys, blankets, clothing and toiletries to donate to Orangewood Children’s Foundation. It meant the world to me to see the difference I was making in the lives of these unfortunate kids,” Bellino says. The experience made such an impact on Bellino that she continued her efforts. “My goal was to involve as many teens as possible. I wanted to raise awareness about the many challenges homeless and abused children face in our community. Teenagers have so much potential to give back to those in need; it seemed a shame not to jump on this prime opportunity.” Never wavering from the original mission, SC4C continues to donate coins they collect to Orangewood Children’s Foundation. Orangewood programs serve children and teens currently in foster care. They also serve former foster youth working on independent living and disadvantaged families throughout the county. SC4C funds specifically support Orangewood’s Resource Center in Santa Ana, a drop-in center for newly emancipated foster youth. Today, Bellino is a high school senior in the Classical Voice Conservatory at Orange County School of the Arts (OCSA) in Santa Ana. She continues to grow SC4C, with chapters at Corona del Mar High School, Newport Beach; Foothill High School, Tustin; Laguna Hills High School, Laguna Hills; Mater Dei High School, Santa Ana; Orange County School of the Arts, Santa Ana; and Woodbridge High School, Irvine. She also has a chapter at Community Bridge Club, Fountain Valley. Each chapter places 12-ounce plastic bottles labeled with the SC4C logo in key locations to collect spare change. Once the bottles are filled, they are collected. They say it takes a village, and in this case, it’s absolutely true! Bellino shares the secret of her success.

“My mother, Mary Bellino, has been my greatest support,” she says. “My father, Joseph Bellino, introduced me to his contacts at Wells Fargo Bank who agreed to waive the fees for counting our bags of coins. Kristi Piatkowski, Orangewood’s Manager of Corporate & Foundation Relations, has been an amazing Spare Change for Change supporter. OCSA teacher, Mrs. Allison Conrey, our club advisor since 2012, has always been available to give us advice. Katie brings fresh community outreach ideas and the promise that Spare Change for Change will continue long after I graduate from high school next spring. In college, I hope to grow Spare Change for Change into a national public awareness and philanthropic initiative to support the six million children nationwide who are affected by child abuse, neglect and abandonment,” Bellino says. Garden State Provenance’s Lush Backyard Sets the Tone for Terrific Food and Devilish Drinks Article Rich Manning

e can’t stop eating the fries. That may not be the first thing you expect to hear about Provenance, the breezy Napa-inspired dining venue socked away in the corner of Newport’s Eastbluff Village Center. But my wife and I closed the main entrée portion of our meal by absentmindedly reaching for the oblong cuts of crisp, gently seasoned fried potatoes, long after I devoured my succulent lamb and my wife left behind all the bones of her pan-fried fish. If we hadn’t placed our order for dessert, we may have finished the generous plate in its entirety. The fries are indicative of what is to be expected at Cathy Pavlos’ hidden gem. The Nor Cal-esque cuisine created here is for those who believe food matters. However, there is still much to love here, even if you don’t consider yourself to be in that vein. The venue’s backyard patio is deftly crafted to block out the intrusions from the outside world, such as the CVS, which we quickly forget is right next door. This outdoor oasis is loaded with fresh vegetation that Pavlos and her crew plunder daily to help bring the menu’s list of seasonal plates to life; from appetizers like the indulgent offering of bitter greens (that we inhaled) to accompaniments such as the blood orange leek risot30

to that comes with the lamb. It’s a pretty setting to plunk down into, even if you get something relatively straightforward like a burger—which comes with those wonderful fries. Provenance is also an ideal milieu to unwind with a drink or two. A variety of wines, beers and mixed beverages are to be had here, but the special concoctions featuring barrel-aged cocktails and house-made sodas are the scene-stealers. You can play mad scientist and blend these combos any which way you like. The Earl Grey cream soda mixed with their house-infused vanilla bean whiskey makes a sarsaparilla drink so devilish, it practically sports a goatee. When you visit Provenance, expect to be plunged into an environment where people are welcomed, and one in which the Pavlos view their food as an expression of passion, not a fussy necessity. If you find yourself in the latter category, this may not be the place for you. Although admittedly, the fries here are good enough to possibly convert you. Provenance

aguar’s beautiful F-Type V-8 S sports car has an exhaust that pops and crackles with a sound that is part Formula One and part ‘48 Mercury with straight pipes when you trigger the active exhaust system with a button on the console. The change in sound serves notice that this is not a Jag like any other. Don’t be mistaken, the new F-Type with the 495-horsepower, supercharged V-8 is not a boulevard cruiser beefed up for performance; it is a bonafide performance car softened enough to be a boulevard cruiser. It packs plenty of bite to go with its bark. Poke the throttle and the surge pastes you back in the seat as the car slingshots to 60 miles per hour in 4.2 seconds. The electronically limited top track speed is 186 mph. As a friend once said, it goes fast quick. The F-Type is a lightweight, all-aluminum, rear-wheel-drive two-seater built to challenge any car in its segment. It is beau32

It’s hard to explore the V-8’s performance without a racetrack, but my brief drive around town gave hints as to just how capable the car is. The ride was compliant and comfortable despite the 20-inch wheels and ultra-low profile tires. I didn’t notice any undue harshness on the highway. When pushed through turns, the F-Type was composed and confident, at least at street speeds. The V-8 S model just begs for an open track so one can safely explore its performance. The well-finished cabin was finished with soft-touch leather piano black trim. It was cozy but not crowded. The sport seats fit nicely and instrumentation was simple and clear. The fully automatic power top goes up or down in 12 seconds. The smallish trunk has 7 cubic feet of space so packing light is the order of the day for weekend trips but that is the case for most sports cars of this size. Convenience and safety items included heated seats, heated steering wheel, heated windshield, front parking sensors, rearview camera, blind-spot monitor, vehicle stability control and front and side airbags.

The F-Type shows that Jaguar is serious about building a performance car. The V-8 makes prodigious power with great sound, the handling is tight and the ride is compliant.

Puttting Thanks back into Thanksgiving Words Kim Brockhoff-Faris
I
t’s hard to imagine that Thanksgiving is right around the corner. I should have known in mid-August when the Halloween decorations started to appear in stores. Thanksgiving is my favorite holiday. No gifts and hardly a decoration, just a lovely meal with good friends and family, football, and, God willing, cooler weather. It's a day to relax, take a walk on the beach, forget about the diet and enjoy. But it's so much more——it’s also a day to reflect on what's really important. Recently I came across a cartoon that read, “There's always at least one weird person in every family and if you don't know who it is, it's probably you.” That’s an understatement. Thanksgiving with family is like a box of mixed chocolates. There are a variety of personalities including a few nuts, but that’s the beauty! Family means accepting what you have and loving it anyway. No family is perfect but as long as there is support and unconditional love, it's a happy place to be. Friends are equally as important during this time of year. Friends are like family to me. I feel blessed to have such loyal, true and fun people in my life. Few can argue that real friends are one of life's rarest treasures. This is why I enjoy Thanksgiving, it reminds me how blessed I

am. It’s my goal to treat every day like Thanksgiving (minus the 5,000 calorie meal and long nap). This year I promise to make a conscious effort to express my gratitude more often. I know this will require discipline and focus. I will concentrate on what I have right in front of me and not concern myself with the things missing in my life. Let's face it, life isn't easy for anyone. We all have some type of personal struggle. Amidst adversity, there is always a reason to be grateful but you have to look deep within. The answer is to count the positives when the negatives arise. I’ve learned the key to real happiness is to be generous. When I take the focus away from myself and truly think about other people, I find authentic joy. I believe if I walk with an ungrateful heart that I will miss out on touching someone else's life. It’s easy to forget the smallest gift like a smile or kind word can have great impact on another person. These are the types of things I think about during Thanksgiving and try to hold close throughout the year. Never underestimate the power of gratitude and giving. Be mindful and focus on these two precious gifts. In return, they will be a great source of endless joy. Not only on the fourth Thursday of November but every day.
