A Special Summer!
AUGUST 2016 publisher
T
his is a special summer–the summer of the 2016 Rio de Janeiro Olympic Games! Our cover of beach volleyball's three-time Olympic gold medalist Kerri Walsh Jennings reflects that. Having won three Olympic gold medals with partner Misty May-Trainor, she is competing in her fourth Olympics with 2012 Olympic silver medalist April Ross, in hopes of winning a fourth gold medal and setting a record as the most decorated beach athlete (male or female) in the sport. This lady isn't even thinking about a silver or bronze! You will enjoy our story about the recent Association of Volleyball Professionals Tournament, hosted in Huntington Beach, where Jennings/Ross won and moved on to qualify for the Rio Games. Also of note this month is the centennial celebration of America's National Park Service, signed into being on August 25, 1916. What's not to love about this country's amazing natural and historic parks, and our story showcases 10 of them. Additionally, you'll want to know that the NPS is waiving admissions for 16 days to 127 parks, including Yellowstone and Joshua Tree, so, schedule your travel plans! You will love reading about Orange County millionaire businesswoman Tina Aldatz, who, through tremendous odds growing up, found success in creating Foot Petals designer foot pads that put her on Forbes Magazine's "Entrepreneur to Watch" list and allowed her to sell her company after 10 years for $14 million. Now, she's on to another venture called Savvy Travelers, a lifestyle, health and wellness business, all the while sharing her success story at shelters, universities and women's business groups to inspire others to do the same. Her book, From Stilettos to the Stock Exchange, is an inspiration! Summer always brings us to the beach. Our ladies fashion feature on swimsuits, beach hats, sunglasses and to-die-for jewelry will get you in the mood. And, our article featuring recipes for a healthy, gluten-free picnic will make your mouth water. Don't miss our Parting Thoughts column where writer Deirdre Michalski shares her spot-on summer barbecuing tips and also tells us about restaurants in the area who are serving some toprate BBQ this summer. Finally, our Hot Spot restaurant review for Fly N Fish Oyster Bar & Grill on the Newport Beach boardwalk will have you yearning for shellfish and other ocean fare. Whatever your choices this summer, whether picnicking, barbecuing or beach going, enjoy! We are in the perfect place to do so!

he 50th summer of the Sawdust Art Festival is here. Since 1966, the festival has expanded greatly from a humble dirt lot to a sprawling, three-acre eucalyptus grove in Laguna Canyon. Over time, Sawdust came to organically incorporate many forms of art, education programs and charity efforts. This has allowed the festival to grow, not just its size, but also the unique opportunities it creates for the Laguna community. The origins of the Sawdust Festival date back to the mid-1960s, in the midst of counter-culture and a community’s increasing interest in arts and crafts. After a few years of modest success, the Sawdust board made the pivotal decision in 1972 to purchase a three-acre property from artisan couple Walter and Dorothy Funk. In effect, the Sawdust board decided to charge admission for the first time. Eventually, by charging a small admission, Sawdust would be able to generate funds for high school art scholarships, public education and other charitable causes. By 1987, the Artists’ Benevolence Fund emerged. In its mission to assist both Sawdust exhibitors and working artists in the city 18

of Laguna Beach, it has successfully granted more than $100,000 to artists in need. Another group stemmed from the Sawdust Festival–the Sawdust Art Enrichment Fund. Stepping in to educate public schools who lose funds for the arts, providing art therapy programs for homeless individuals and sponsoring local artists to give hands-on art lessons to the public are among its philanthropic accomplishments. Starting June 24th through August 28th, the Sawdust Art Festival will have its doors open from 10 a.m. to 10 p.m. daily. Two hundred Laguna Beach artists and home-grown eateries will be featured amidst a charming eucalyptus grove. Painters, sculptors, photographers, glassblowers, woodworkers, furniture makers, and fashion designers are just a few of the different artisans who will display their works before an anticipated 200,000 visitors this summer. Farm fresh produce and sustainable seafood are delivered to the restaurant each day. Every component of the food is put into consideration. Rather than cooking with the standards, Hawkins seeks the best. The bacon alone is worth a notable mention. Nueske’s artisanal bacon comes from a family-owned company based in Wisconsin and is smoked for twenty-four hours over fragrant Applewood embers. The chef uses this bacon in his creamy chowder and also wraps the crispy strips around succulent seared scallops. The dipping sauce that garnishes the scallop plate is a blend of achiote spices and charred tortilla stock. The flavor exudes a smoky finish with a hint of garlic and pepper. During the summer, tourists flock to the Newport shore and occupy most of the restaurant’s tables from happy hour until late in the evening. The only downfall is that Fly N Fish does not take reservations. So, you might have to wait a while for a table in the warmer months, but it’s worth it. During the winter, the restaurant is packed with locals. It’s the best time of year for those of us lucky to call this area home. Fortunately, the food remains swimmingly good all year round.

A HEALTHY, GLUTEN-FREE PICNIC ARTICLE SUZETTE ZARA PHOTOGRAPHY JOY REYNOLDS With long summer days and warm summer nights, everyone is in the mood for a picnic! These easy, healthy recipes are perfect at the beach or in the backyard. The key to a successful picnic is fun food which travels well and can be made ahead. For easy healthy sides, pack fresh sliced fruit in pre-refrigerated mason jars, which keep cool and clean up easily. For an easy entrée, these bourbon-spiked ribs are packed with flavor and nutrients, and they stay hot and fresh wrapped in foil in your picnic basket. A traditional picnic favorite–cornbread–is jazzed up here with jalapeños and cheese; plus, it’s gluten-free for a healthy touch! While ribs might not seem like a healthy meal choice, they do provide essential vitamins, minerals and protein. A single serving of ribs gives you nearly half of your entire daily zinc requirement, along with 75 % of your daily recommended selenium intake, 25 % of daily vitamin B-5 and 23 grams of complete protein. The blueberries in this delicious barbeque sauce help create a sweet tangy glaze, while adding a healthy dose of antioxidants to pump up the flavor and keeping calories low! Enjoy!

A CENTENNIAL FOR AMERICA’S NATIONAL PARK SERVICE (CON TI N UED)
Chaco National Historical Park Chaco Culture Culture National Historical Park
A UNESCO World Heritage Site, located in New Mexico, the park encompasses the sacred
ancestral homeland of the Hopi and Pueblo people. With more than 4,000 prehistoric archeological sites, the park contains the most extensive site of historic pueblos in the America Southwest. In 2013, the park was recognized as an International Dark Sky Park, joining the ranks of only three other U.S. national parks, making it one of the most coveted places for stargazing. Located in the remote San Juan Basin in the northwestern part of the state, the park is only accessible by dirt road.
Acadia National Acadia National ParkPark
The 47,000 acres that make up Acadia National Park is home to many titles. It’s the
only national park in the State of Maine, the oldest national park east of the Mississippi, the home to the tallest peak on the Atlantic Coast–Cadillac Mountain, and it was the first national park in America to have an endowed trail system. In 2015, the Acadia Trails Forever celebrated its 15th anniversary. The project was established by Friends of Acadia and Acadia National Park to restore the 130-mile hiking trail, and, since then, has continued to repair miles of lost trails in the park.
Mammoth Cave Park Park Mammoth CaveNational National
This park in central Kentucky is home to the longest cave system on Earth, currently hous-
ing 400 miles of subterranean passageways that have been explored by few. A portion of the caverns and tunnels are open to the general public via ranger-guided tours that span anywhere from one to four hours. The park is also home to bats, which, unfortunately, have steadily decreased in numbers over the past century and a half. The park is currently undergoing efforts to protect bats and raise awareness about their slow disappearance from the park.
Olympic National Olympic National Park Park
With nearly one million acres of raw wilderness that ranges from the Pacific Coastline to the peaks of
the Olympic Mountains in Washington, beyond being a national park, the park is also an International Biosphere Reserve and a World Heritage Site. Ninety-five percent of the land is designated wilderness, which means no roads run through it. In 2015, the park opened The Glines Canyon Spillway Overlook, so that guests can now view down into the 200-foot deep canyon to view the Elwha River flowing,
Grand Teton Park Park Grand TetonNational National
Located in Wyoming, Grand Teton National Park is at the top of everyone’s favorite list. It’s
the home of the major peaks that make up the Teton Range, including its namesake, Grand Teton, at 13,775 feet tall. The park is infamous for being a playground for grizzly and black bears, elk, moose, bison, big horned sheep, river otters, beavers, marmots, bald eagles, and many other animals. Seeing wildlife is so common that photo safaris are among the most popular of the park’s tour offerings. 32

H
ow can a high school dropout become a millionaire entrepreneur? The story of Tina Aldatz’s rise to fame and fortune is quite remarkable.
UNDETERRED! Millionaire businesswoman Tina Aldatz overcame tremendous odds on her road to success. ARTICLE DONNA BUNCE
Tina Aldatz’s father was a gang member addicted to heroin, and her mother was a hair stylist who loved to party, drink and smoke pot. “My parents fought all the time,” Tina says. “It eventually turned violent, and my dad almost murdered my mother. After that, my sister Angela and my brother Rocky and I were put in the Good Shepard Shelter for battered women in Los Angeles with our mother. Within a short time, Tina’s mother, Phylis, moved everyone to Buena Park to live with her brother George “Butch” Tuthill and his wife Patty, where they survived on government assistance. Soon, however, they were back to moving from apartment to apartment because her mother couldn’t pay the rent. It was during this time that the children found their mother trading food stamps for beer and cigarettes, and they had nothing to eat. “I was nine years old, and mother simply didn’t want to be a mother anymore, so we were on our own,” Tina says. “We would go to a store where one of us would spill a drink while the others stole candy. We sold the candy at school to buy food. Angela cooked for us–her specialty was huge pots of beans–I cleaned and Rocky handled the money.” 34

Tina Adaltz, entrepreneur extraordinaire
Tina with her mother Phylis Tuthill
By the time Tina was 11, her mother was abusing her, and she went to live with her father in Arizona. She led an unsettled life, with her father taking her on a three-state fraudulent check-cashing spree. By this time, Tina’s father had a new girlfriend and a baby girl. Tina and the new girlfriend didn’t get along. When Tina’s grandfather, Jesus Aldatz, who she was close to, died in Los Angeles, she went to the funeral and never returned. Her father couldn’t attend the funeral because he was wanted by the FBI. Now 13, Tina moved back with her cocaine-addicted mother, and when she became abusive again, Tina moved in with a family friend and attended Fullerton High School. By age 16, she obtained her high school equivalency, rented her room for $150 a month and worked bagging groceries at Albertson’s until age 17, when she began working as a receptionist for Parnelli Jones in Dominguez Hills.
Tina, right, with her best friend and business partner Margie Floris
Soon, Tina was heading to a new retail adventure. She attempted to work the makeup counter at Nordstrom South Coast Plaza before she landed an assistant manager position at South Coast Plaza’s Victoria’s Secret, where she spearheaded its new fragrance business. A few years later, she was manager at Victoria’s Secret in Manhattan, its flagship store, and, a few years after that, she moved to BCBG Max Azria, becoming the top merchandizer in the company. Her broken family beckoned, however, and three years later, Tina was back in Los Angeles working for BCBG. She had been sending money to her brothers and sisters for years, but now there were other children to consider. Her father had three more children through another girlfriend and this girlfriend, who moved on, had three more children with another man. The father of the second set of children was also abusive and wanted nothing to do with them, so they ended up in a shelter, ironically the same shelter Tina and her siblings were in 20 years earlier. “I took them out of the shelter and, through child protective services, I took Eric and Richard to live with me, and Angela took Kady because she had a daughter,” Tina says.

ummer is here, and now is the time to enjoy some serious backyard entertaining. In our home, I am the one who likes to play with fire. Whether grilling salmon on cedar planks, sizzling some steaks doused in a dry rub, tossing veggies in a slotted metal pan, or daintily creating grill marks on fresh peaches, it's all great fun. Here are a few things I have gleaned over the years that may improve your summertime success. And, for those who might think “grilling is just not me, I do have two creative restaurant options with stellar BBQ menus. ENTERTAINING. I think I have finally solved the dilemma of enjoying our company and trying to grill, a next to impossible task. And, to make matters worse, our grill is far away from the action of conversation and beverage sampling. So, here's what I do... the chicken, fish or meat has been marinating. After appetizers are on the table and everyone has a drink, my hubby sneaks away to turn on the grill. Then, about 10 minutes later, I slip away for a very short stint. I grill the items on both sides, or, if using the cedar planks, set those on the grill for a total of about 10 minutes. Then, I place these items in the oven to be finished off there. I use an instant-read thermometer, and, with a trial run at this, you will master the timing as well. MARINATING. I decide days ahead whether I will be applying a dry rub or liquid marinade. I like to marinade my chicken one day ahead, and, if doing so, just make sure to not include any citrus or acid in the marinade. My favorite is to use a buttermilk ranch dressing with some olive oil and garlic. It turns out so moist. For steaks, I do those the day of, and, for fish, two hours before go-time. GRILLING ACCESSORIES. Here are my three favorite items for grilling: For fish, there are thin cedar wraps that I soak in water ahead of time and then wrap the fish in them. It is similar to using the cedar planks, which I 50

also use. For vegetables, there are metal bowls with handles on both sides and slits on the bottom. By placing this on the grill, it is perfect for tossing veggies, and they don't fall through the grates. I prepare an oil and herb mixture to brush on the veggies and I always cook them ahead of time and reheat. Onion slices, mushrooms, zucchini, carrots, asparagus, golden beets, and, so forth, all marry nicely on the grill, giving them a roasted flavor. And, for pitted fruits, I use a flat, slotted metal tray with handles on both sides. I brush the peaches or plums lightly with oil and place on the tray. I do this ahead and reheat when the dessert course is on-deck. BBQ. Don't be fooled by the pictures you may see that suggest you apply the BBQ sauce while grilling. I have found that it burns. I suggest it is better to use a light rub or marinade and then apply the barbecue sauce after the items come off the grill. I apply the BBQ sauce when finishing it in the oven. There are a plethora of sauces right off the shelf that are excellent. Dining out is also an option, and this summer some of our local restaurants have created some inventive, value offerings. Every Sunday during summer, the Oak Grill at the Island Hotel is featuring their Slow Smoked Sundaze BBQ. Chef Marc Johnson spent some time in the South, and his cornbread and sauces will make any Southerner a bit homesick. Guests can select from one of four entrees, two sides and dessert for $34. Another choice is The Bungalow in Corona del Mar. Wednesday evenings, all summer long, guests can order a two-course, prix fixe menu with choice of five different sumptuous BBQ entrees, numerous sides, and, best of all, complimentary corkage (one bottle) for just $35.
