Lifestyle Letter

Celebrate the holidays.

DECEMBER 2015 editor

M

y most memorable Christmas was during one of the hardest periods of my life. My mother was battling a serious illness, which had landed her in the hospital just a few days before Christmas. Knowing that I was going to spend the holidays in a hospital while my mother struggled with her health really hit me hard. I would just take one look at the brightly lit tree or cheerful Santas lining our mantelpiece and tears would instantly well up in my eyes. Christmas Eve came and passed. My father and I visited the hospital, had dinner there, came home and went straight to bed. However, the next morning something unexpected happened. My father woke me up at 5 a.m. to make our traditional baked ziti Christmas dinner. By 10 a.m., the sauce was cooled, the ziti was made and everything was ready to go to the hospital. I’ll never forget the look on my mother’s face when she saw us bring in the dinner—her smile was so pure and filled with joy that it’s still etched in my memory today. Just as we were about to eat, her nurse walked in. That’s when my father had the idea of inviting all the nurses to share our Christmas Dinner. By the end of the day, all the food was gone, everyone was stuffed and I had almost forgotten where we were. Reflecting on it now, I realize that it wasn’t so much about us keeping up the spirit of the holiday; it was my mother’s strength, my father’s kindness and the selfless willingness of the nurses to give up their Christmas to help us that I will always take with me. As the holidays are a time for friends and family to gather together, I encourage you to spend some time with your loved ones and cherish all the wonderful and lasting memories you will make this year.

airmont Scottsdale Princess Resort has all the right ingredients to transform its beautiful grounds into a magnificent winter wonderland complete with a polar express train, ice skating rink, 45foot high Christmas tree and 2.8 million lights for their guests and the community to enjoy. Also consider celebrating Christmas Day there, choosing from a selection of delicious holiday cuisine at one of its renowned restaurants.

CHRISTMAS BRUNCH

After all the presents have been unwrapped, a leisurely brunch is a wonderful way for the whole family to relax. The chefs from the resort’s f ive restaurants are preparing a fabulous Christmas brunch that will be held in the Palomino Room from 10 a.m. to 3 p.m. Chef Jeremy McMillan, from Bourbon Steak, contributes with an American Kobe beef chuck roast served with horseradish crème fraiche and chimichurri; soy and balsamic braised baby shitake mushrooms; and Arizona wheat berries with squash, chestnuts and apples. Chef Forest Hamrick, from La Hacienda, prepares Mexican delights, including tamales de pollo en salsa verde, which are green chile chicken tamales with tomatillo cream and pico de gallo; and 14

frijoles chinos, refried pinto beans with chile guajillo and queso chihuahua. Save room for the champurrado, made with Mexican chocolate, warm milk, maize, piloncillo, cinnamon and vanilla. From Ironwood American Kitchen, Chef William Schultz prepares chili-brined bone-in pork loin roast with dried fruit and Catalan sausage stuffing. Other tantalizing dishes include seared Wahoo; whole roast goose with Brussels sprouts and bacon lardons; candied yam brulee; green beans with chanterelles and honey glazed carrots; spinach Madeleine; fingerling potatoes with bacon; marinated mushrooms with white balsamic and micro arugula; braised turkey meatballs; Tandoori leg of lamb and vegetable kebabs. Chefs Jakob Leavitt and Nicholas Anderson, of Toro by Richard Sandoval, will prepare Angry Tuna Roll Sushi and Electric Eel Roll Sushi, along with two types of ceviche: tuna nickel made with white soy, avocado, nori and sesame; and shrimp made with citrus-habanero broth, avocado and pickled onion. Breakfast specialties include farm fresh eggs, omelets, Florentine Benedict, brioche French toast, buttermilk pancakes, red velvet pancakes and malted Belgian waffles. There will also be a wide selection of breakfast meats including pork, chicken, chorizo sausage, bacon and honey glazed ham.

If you can’t make Christmas brunch, consider having a wonderful meal at one of the resort’s restaurants. At La Hacienda, a special entrée of pepper crusted prime rib will be served with Yukon gold mashed potatoes, chile relleno casserole, green beans, bacon salsa entomatada, au jus, horseradish crema and pan bolillo with chipotle honey butter. Being served at Ironwood American Kitchen are two “Holiday Fare” nightly specials: salted, crusted prime rib with seasonal vegetables, butter whipped mashed potatoes, horseradish cream and herbed au jus and rosemary garlic pork loin with baby carrots, herb roasted potatoes, fire roasted apples and honey mustard glaze. Two desserts are also offered: a flourless chocolate cake with peppermint ice cream and a warm Southern pecan pie with vanilla bean ice cream. The Toro special is a Caribbean pineapple honey ham with natural jus, Yukon gold mash potatoes and salsa criolla slaw. The al a carte menu will also be offered. Fairmont Scottsdale Princess knows how to celebrate the holiday season with wonderful events and savory cuisine that will have you feeling festive throughout the whole month.

Giving Back

Season of Giving A NONPROFIT ORGANIZATION IN NEED OF A CHRISTMAS MIRACLE ARTICLE MICHELLE GUERRERO | PHOTOGRAPHY PROVIDED

W

hen Rob Perelka was a teen going through a challenging time, someone wisely taught him that every kid counts, even him. This notion was something that stuck with Perelka as he grew up and what eventually inspired him to help start the nonprofit organization Every Kid Counts, Inc. (EKC). “We are a children’s charity without borders,” says Perelka, president and co-founder of EKC. “We help where we can, when we can and how we can, but primarily in education, athletics and through philanthropic giving.” Currently, EKC is focusing its energy on the Books to Bikes Literacy Program, Character Counts Scholarship Program, Stuff the Pack Back to School Drive and Season of Giving Campaign. A HOLIDAY MIRACLE

“Every day you wake up and you know you are making a difference in someone’s life. We have a lot of great people who take the ball and run with it,” says Perelka. Primarily through the generosity of Chase Bank, EKC stuffed 750 backpacks this year, 400 more than the year before. During the past four years, they have given away nearly 700 bikes to kids in the Creighton Elementary School District and have encouraged Arizona children to read more than 50 thousand books through the Books to Bikes Literacy Program. 16

North Scottsdale Lifestyle | December 2015

“It’s a great learning experience for them and they get a brand new bicycle for doing something that’s a positive benefit to themselves,” says Perelka. EKC hosts a monthly bike drawing for kids who submit their reading lists. EKC also creates opportunities for kids to deliver oral book reports so they can get experience with public speaking. Even though EKC is out in the community doing great things, the program has scaled back because of the economy. While Perelka remains optimistic about its ability to continue to serve children, it’s clear that EKC could use a holiday miracle of its own in the form of sponsorships, toys and funding. “We are making a difference and we can make an even bigger difference with more support,” says Perelka. FAVORITE TIME OF THE YEAR

EKC's Season of Giving Campaign runs through December 24, and Perelka and his team are collecting toys, food and clothing for families. Donors can drop off goods or monetary gifts to any Chase Bank in the Valley. EKC also has an impressive holiday events calendar filled with parties for various groups including the Creighton School District, military families at Davis Mathis Air Force Base and underprivileged children in Flagstaff.

Oil on Canvas, 24 x 36

“Moonlight Chill” One of Perelka’s favorite holiday events is the Secret Santa program. Board members stack boxes of gifts on people’s front doors, ring the bell and run. It’s a total surprise for the families receiving the gifts. Santa’s elves, as well as EKC, remain anonymous.

PERELKA’S GIFT

“Someone made a difference in my life when I was 14 and I’ve been giving back ever since,” he shares. When Perelka was a teen his life was turned upside down when his parents divorced. They moved back to California and he had to become a young man well before he was ready. Jessie Orosco, a World Series major league baseball pitcher, was related to Perelka’s neighbors and heard that the kid next door was struggling. So one day, he stopped by to see if Perelka wanted to play catch. That one game of catch turned into a meaningful friendship that would set Perelka’s life in a new direction. “Not only was I keeping up with the balls Jessie was pitching to me, he also changed my spirit because he talked to me. He told me that I could do anything I wanted to.” Perelka’s heart began to mend, the pieces of his family eventually glued back together and his desire to help others grew. During college he started an athletes leadership program, and when he graduated he was hired by the Arizona Rattlers Arena Football Club and another nonprofit organization. Then one day, he and some friends had a brilliant idea for a program and founded EKC. That was more than 21 years ago, and he still continues to give with the same fervor and enthusiasm as when he first started. “We make a difference in all kids, but we also make a big difference in the whole family.” Learn more about Every Kid Counts and giving and volunteer opportunities at EveryKidCounts.org.

here is an undeniable sense of serenity one feels when they are in the midst of nature’s awe-inspiring beauty. Aspen, Colorado in the winter is certainly no exception. A hushed stillness seems to wash over the town as fluffy snowflakes gently descend upon massive fir trees and the freshly-powdered ground creates a sea of sparkling white against a backdrop of the majestic Rocky Mountains. As General Manager of the St. Regis Aspen Resort, Heather Steenge-Hart, always says, “Nothing compares to Aspen in the winter.” One visit here will definitely have you coming back for more, especially if you’re staying at the cozy and inviting St. Regis Aspen Resort.

WARM WINTER WELCOMING

SMALL TOWN CHARM

Nestled at the base of Colorado’s legendary Aspen Mountain, the resort offers top-notch luxury amenities with an added bonus of spectacular panoramic views of the surrounding mountains and town. “We like to say that The St. Regis Aspen Resort is ‘Aspen’s Best Address,’” says Steenge-Hart. “The property is located feet from the gondola, steps from town and offers magnificent, sweeping views of Aspen Mountain.” The resort recently underwent an interior and exterior remodel helmed by award-winning designer Lauren Rottet and now exudes warmth and comfort in all respects. Rottet’s design concept flawlessly integrates the building with its breathtaking surroundings, creating a contemporary yet cozy mountain retreat. “We really thought hard about how John Jacob Astor, who started the St. Regis New York, would envision a manor in the mountains, and then we ensured that it spoke to its Aspen roots,” explains Steenge-Hart. That sense of modern elegance combined with rustic charm that is found in the resort’s common areas is also very much present in its 179 luxury guest rooms and suites. All are adorned with wellappointed furnishings and many now include private fireplaces, creating an authentic winter experience.

If looking to venture outside the resort, downtown Aspen offers a quintessential mountain town experience. Its snow-dusted, tree-lined streets and colorful storefront windows create a scene straight out of a snow globe. A true diamond in the Rocky Mountain rough, this quaint district is home to a diverse assemblage of activities and entertainment, from high-end shopping and museums to eclectic galleries and boutiques to world-class dining and cultural festivals. SOPHISTICATED SLOPES

Although downtown holds its many charms, Aspen’s captivating mountains will quickly beckon you to their freshly powdered slopes. Luckily, the St. Regis Aspen Resort offers a host of winter activities that allow all to enjoy the region’s glorious snowfall, with worldclass skiing being at the top of the list. “Aspen offers guests the power of four—four mountains (Snowmass, Aspen, Aspen Highlands and Buttermilk Mountain) of varying terrain and difficulty levels,” says Steenge-Hart. “You are able to ski all four mountains on one ski pass and can even tackle them in one day if you really set your heart on it.” CONTINUED >

Whatever option you choose, you are sure to experience the exhilarating thrill of gliding down the crystalline mountainside as towering evergreens, snow-covered grounds and blue skies intertwine into one swirling mass. Other invigorating winter activities at the resort include snowmobiling, dog sledding and winter fly fishing. For future Olympic skiers, there is also a wonderful ski and snowboard school open to ages 7 to 17. If looking to experience the best skiing Aspen has to offer, try the new High Society Ski Package. In true St. Regis luxury fashion, the resort partnered with local Aspen ski brand High Society Freeride Company to create a limited edition St. Regis Aspen ski. During the 2015/16-winter season, those booking the Presidential Suites can enjoy its sleek, speed-worthy design with an undeniably smooth ride down the mountain.

After a long day spent on the slopes, relax and unwind at the resort’s premier Remède Spa while experiencing some unique amenities like the confluence waterfall and oxygen lounge. Be sure to indulge in one of the exclusive spa experiences, such as the Rocky Mountain Ritual, which includes a full body treatment to exfoliate, smooth and restore the skin’s natural glow or the Oxygen Facial to hydrate and recharge. If spending an evening at the spa isn’t your cup of tea, settle down at one of the resort’s premier restaurants. Tempt your taste buds with sumptuous handcrafted Italian cuisine at Trecento Quindici Decano, which offers classic pasta dishes like Bucatini Carbonara and hearty mains like Colorado Lamb Chops atop sizzling caponata and rich Barolo sauce. For a world-class dining experience make a reservation at the resort’s Chefs Club by FOOD & WINE, where a hand-picked group of the magazine’s “Best New Chefs” curate a one-of-a-kind, seasonally inspired dinner menu for guests to enjoy. After dinner, stop by Shadow Mountain Lounge for a signature cocktail or head outside and roast s’mores around a roaring fire pit for a perfect finish to a wonderful winter day. The memories made in Aspen will stay with you long after your trip is over. It’s more than a place; it’s a feeling and a life-changing experience.

PUT A PERSONAL STAMP ON THE HOLIDAYS WITH CUSTOM STATIONERY AND SPECIALTY GOODS ARTICLE KORY KILMER | PHOTOGRAPHY IMAGES BY MICHAEL

A

fter years of helping other people get their own businesses up and going, Rene Showalter knew the time was right to start focusing on something of her own. She had plenty of experience in the interior design industry, but as she looked at the prospect of going into business for herself, she knew that she wanted to do something different; something where she could continue to be organized and creative while also interacting with people. Eventually Showalter found herself at a gift show in Los Angeles, and after walking around and looking at all the different things select vendors had to offer, she felt herself being pulled toward stationery, paper and invitations. In talking with people afterwards, she found a certain appeal in helping mark some of the biggest events in others’ lives, like graduations, weddings and birth announcements, and knew she was on her way. An opportunity to share retail space with a florist gave her what she needed to make the leap, and Celebrations in Paper was born. That was almost two decades ago. “The business has actually changed quite a bit,” says Showalter. Before the recession, she had a lot of corporate clients locally and across the country that would not shy away from splurging on top-of-the-line invitations for special events throughout the year. But as budgets tightened, that aspect of the business began to diminish. 28

and now there are just not that many left,” says Showalter when asked about why she feels Scottsdale is the perfect home for her business. “I think the ones that did survive, those are the ones where you still talk to the shop owner. People here want that level of personal service. They want to touch the different papers and see the different methods of printing; that’s why they come here, and that’s why we love being here.” Celebrations in Paper is open Monday through Saturday from 9 a.m. to 5 p.m. For more information call 480.946.5680 or visit CelebrationsInPaper.com.

“With social media and other alternatives online, businesses just are not doing that anymore. It pushed us more toward the higher-end, custom stuff. Now our primary customer is the person who still really wants to give a great thank you note, or who really wants to create a memorable or one-of-a-kind invitation or announcement, and that’s great!” As the business has evolved, Celebrations in Paper has also expanded its inventory to include a bit more than just stationery and cards. Showalter is always on the lookout for items that she personally enjoys, believing that if she and her staff are passionate about what they have on the shelf, the easier it is to make sure that each customer leaves with just the right thing. From small handmade gifts and favors to soaps, lotions and a variety of books, chances are they’ll have something perfect for any occasion. With a continual commitment to drive her business toward excellent products, an unmatched quality of personal service, and an unyielding attention to detail, Showalter has positioned Celebrations in Paper as one of the best specialty shops of its kind in the Valley. After establishing that kind of reputation, and after years of resisting the idea of getting her own dedicated place, four years ago Showalter moved Celebrations in Paper into its current space— an 1,800-square-foot retail shop in the heart of Old Town Scottsdale, which is right where she feels it belongs. “Things were really hit or miss back in 2008 and 2009, and there were plenty of stationery stores that ended up going out of business,

While others are bemoaning the appearance of St. Nick and his requisite team of reindeer long before the pumpkins and ghosts have made their annual October appearances, these holiday-philes are counting down the days until they can put up their Christmas trees, string thousands of lights outside and hang their stockings by the chimney with care. I have a confession for you: I’m one of them. Much to my family’s chagrin, I play Christmas music year-round in my car. In my defense, nothing will help you get through a 118 degree August day more than listening to Bing Crosby croon his way through “White Christmas.” Most every night between Thanksgiving and New Years, I head out with my kids to see the gorgeous holiday decorations in our neighborhood, and don’t mind the ever-earlier appearance of Christmas goodies in the store. You might think that with all of my sugar plum dreams and multiple viewings of A Charlie Brown Christmas—yes, even in the middle of summer—that maybe I’d be immune to the stresses that are so common during this time of year. Let me assure you right now that nothing is further from the truth. Right around the time when the candy canes start showing up in the supermarket, I start to come down with my annual case of the “shoulds.” You know how it goes. I should really bake more cookies this year. I should get everything wrapped by the middle of December so I won’t be up until midnight on Christmas Eve. I should see 38

more of my family and friends. I should tie some cheerful swag around my banister so it looks like that gorgeous picture I saw in the magazine. Should, should, should. It’s enough to almost take the joy out of one of the happiest times of the year. And I know I’m not alone. With this in mind, I’ve decided to give myself and everyone else I know—including everyone taking a break from their holiday To Do lists to read this article—a very special gift this year. I’m calling it The Gift of “Don’t Need To.” Go back a few paragraphs and replace all those “shoulds” with “don’t need to.” Did you feel your blood pressure lower? So did I. Sure, your family loves it when you pull freshly baked cookies out of the oven, but I bet they’ll gobble them up just as fast if you make them with store-bought dough. And while it’s nice to have everything done before Christmas morning, it’s not like you can abandon all of your other responsibilities to focus on the holiday. Your friends and family are wonderful and you want to see them, but there are plenty of other opportunities to see them throughout the year. Instead of rushing through a holiday dinner at your Aunt Betty’s house because you feel you need to be there, suggest that you all get together in the first week of January and enjoy a leisurely barbecue at your place. And all those holiday decorations that would make Martha Stewart drool? Do what you have time for and what brings you joy, and leave the rest. Your house will still be full of holiday cheer and you’ll feel more relaxed and at peace this season, and that’s plenty lovely all on its own.
