This dawned on me just the other day as I was helping my dad unpack boxes at his new house. Upon the fireplace mantel, along with all of our family’s pictures and my grandma’s old wooden clock, stood a small green vase looking oddly out of place. I took a closer look. There was a chip at the top, the paint was fading and I could clearly see where I had gone outside of the lines—I was only about eight when I painted it. “Dad, why did you put that vase out there?” I asked. “It’s so old.” He replied, “Because you made it.” Sure, that vase wasn’t as nice or polished as some of our picture frames and other antiques, but it held even more value because it was made with love. In this issue, we celebrate all the wonderful people in Arizona who have followed their passions to create amazing and unique products, featuring stories on Arizona’s Queen Bee, the musical duo of Haley and Spencer, and sweet treats from artisan chocolatiers Zak’s Chocolates.

Two international investment bankers, Helen Yung and Jan Wichayanuparp, met by chance in New York City while training with the same company. Seven years later, they started an artisan ice cream business that is now recognized as one of the top ten in the country by USA Today. Yung was born and raised in Hong Kong and went to high school in America. After college, she became an investment banker. In 2002, she left the corporate world and went to Le Cordon Bleu in Australia. Although they had no restaurant experience at the time, she and Wichayanuparp decided to venture out into the ice cream industry. “Ice cream is fun to make, it can be made in advance, there’s no waste and everyone leaves with a smile,” says Yung. All recipes are original and contain locally-sourced products. The 20-plus flavors rotate daily and include favorites like Salted Butter Caramel Swirl, Fleur de Sel Caramel, Almond Buttercrunch, Rocky Road and Brownie Swirl. The Peaberry Expresso is made with Peaberry-roasted coffee beans from Café Cortez Coffee Company in Tempe. Their dairy-free sorbets are all made with fresh fruit and offer wonderfully distinct flavors, as found in their Coconut, Strawberry, Basil Lime and Peach, which is made with peaches from Schnepf Farms. Zak’s Chocolate
The artisan chocolatier shop celebrated its first anniversary this past April and has definitely taken the chocolate world by surprise. The secret to its success? The owners make their own chocolate! Yes, Scottsdale has a chocolate factory that produces some of the best chocolate you’ve ever tasted. Husband and wife team Jim and Maureen Elitzak both left careers in the finance industry to build a business that originally started as Maureen’s hobby. For over twenty years, Maureen was known for her chocolates, which she shared with family and friends, receiving rave reviews and encouragement to start her own chocolate business. She kept perfecting the taste of her chocolate, wanting to ensure the consistency of flavor was maintained with each batch. Maureen and Jim are now certified Chocolatiers and the recent recipients of a Bronze Medal for their Milk Chocolate Bar at the International Chocolate Awards. Zak’s Chocolate starts by importing the finest cocoa beans directly from farmers in Peru, Madagascar, Belize, Guatemala, Nicaragua and Papua, New Guinea. “These cocoa beans have different, distinct flavors
due to the region they come from – similar to that of coffee and wine,” explains Jim. The chocolate-making process takes a month from the grinding and roasting of the chocolate to the finished product. All their chocolates are made from scratch, without any preservatives, and infused with a wonderful selection of flavors. Many of the products they use are locally-sourced, including dairy, honey, peanut butter and craft beer. Other housemade treats include brownies, caramels and marshmallows. The brownies can be enjoyed in a flight of three, each made with chocolate from a different region and served warm. One of their latest creations is a Cold Brew Mocha that has a mild, refreshing taste without any sugar. The brew is made from the seed of the Cacao Bean. It’s absolutely delicious, and to their knowledge, Zak’s Chocolate is the only place you can find it. Believe me when I say you’ll be back for more. DETAILS:

She’s been the Pennsylvania Honey Queen, the American Honey Queen and is currently resident beekeeper at Butterf ly Wonderland, as well as owner of AZ Queen Bee, a bee management company in Scottsdale. When Brown was in second or third grade, she read a story about bees, and since then her fascination with the creatures has never wavered. As a middle schooler, she shadowed bee professionals in her home state of Pennsylvania, and when she turned 16 her parents allowed her to get beekeeping equipment. Brown also started attending local beekeeping club meetings, where she found out about the State Honey Queen program. After winning the title, she spent a year traveling around Pennsylvania garnering publicity, promoting the use of honey and teaching people about beekeeping. Following the state title, she was crowned national American Honey Queen by the American Beekeeping Federation in 1997, then took a semester off from college to traverse the country, teaching the basics of beekeeping. After moving to Arizona in the early 2000s, Brown worked a corporate job before returning to her earliest and strongest passion. As resident beekeeper at Butterfly Wonderland she’s responsible for maintaining the museum’s observation hive, ensuring that the queen is there and laying eggs. She also maintains a few beehives scattered throughout remote areas in CONTINUED >

the Valley, as well as a small hive in her backyard that she uses in presentations she gives to school and civic groups. So, just what makes honey so extraordinary? “I like the idea that honey is incredibly unique based on the area that it comes from,” says Brown. “Every honey is different based on the environment and the nectar flow that year.” She says Arizona honey, in particular, is unique because there’s not a lot of nearby agriculture and pesticide usage is low. “You have this very clean environment with really unique vegetation,” says Brown, describing our state’s honey as “light mesquite.” And you’d probably be surprised at just how productive these bees really are. “One bee only makes one drop of honey. If you keep that in mind, you understand how much work goes into the production of just one pound of honey,” says Brown. “It’s amazing to me that we have these insects that can do that for us. We can take this golden goodness and put it to use.” To capture a little bit of that “golden goodness,” Brown bottles her own honey.

“I personally think that the honey I bottle is extremely rare and very unique. It captures the essence of the Sonoran landscape.” “I’m also very diligent in my beekeeping,” she says. “ I don’t use any chemicals and I’m treatment free. It’s as natural as it possibly can be because that’s how I want to eat it. I feel like there’s a lot more art, maybe, to what I do. It’s a lot slower process, everything takes a little longer the way I do it, but I believe it makes it a better product.” She also creates personal care products such as lotion bars, rolled candles and beeswax lip balm. Both Benedict’s Café in Scottsdale and Butterfly Wonderland carry her goods, while La Grande Orange stocks her honey.
“With the harvesting of honey, you always have the byproduct of beautiful beeswax,” Brown says. Beeswax, which is hygroscopic, meaning it absorbs or attracts moisture, makes it an ideal ingredient in lip balm or lotion. Besides naturally sealing in moisture, beeswax also repels water and has natural SPF 15. In case you were wondering, yes, she does get stung. But that doesn’t deter her in the slightest. “I personally enjoy the idea of beekeeping in that I’m constantly learning,” Brown says. “I’ve been beekeeping for over 20 years and there’s so much to learn. There’s so much to be looking for.”

Along with producing a single, Haley and Spencer have also seemed to adapt well to life on the road, kicking-off their first tour with performances in Arizona, New Mexico, Colorado and Nevada during the summer of 2014. “I remember playing in Boulder, Colorado at this coffee shop, but it was staged as a music venue so that all the chairs were turned towards you,” says Spencer. “It was the most intimate show we had ever done. The audience was listening to our every word and we could talk to them, tell them stories and just really connect with them in an incredible way.” For Haley and Spencer, that deep connection with the audience and storyteller feel they try to weave throughout all of 76th Street’s performances is really what makes it all worth it to them; and the result is absolutely mesmerizing. The duo also seem to be in perfect harmony when it comes to more serious things too, like their personal goals and aspirations, as well as those for 76th Street, and the amount of time they are willing to commit to rehearsing. “We’ve always been dreamers, and we’ve always had high expectations for ourselves. That’s how we’ve managed to get as far as we’ve have,” says Haley. “And when you’re committed to doing something every day, you realize that it’s more than just a hobby; it’s a career you want to do for the rest of your life,” adds Spencer. With the duo planning to spend the summer writing, working on an acoustic album, and their second single, the world can definitely expect to hear more from 76th Street. Creative Infusion JACKI COHEN CRAFTS WONDERFUL WORKS OF FUSED GLASS ART ARTICLE TERESA K. TRAVERSE PHOTOGRAPHY PROVIDED
W
henever local fused glass artist Jacki Cohen opens her kiln, she takes a deep breath. She never knows just what to expect. “The biggest learning curve is figuring out the kiln,” says Cohen. “You have to keep records. Long lists of what works and what doesn’t. Sometimes you can salvage things.” Although she says she’s never had any total disasters, as a self-described perfectionist, she wants her work to be flawless. But she’s had 12 years to hone her craft. More than a decade ago, Cohen took a stained glass class at Scottsdale Community College that changed her fate. She learned how to cut glass and the mechanics of the medium, eventually discovering her current passion: fused glass. Fused glass is essentially the layering or stacking of multiple pieces of glass on top of each other, firing the pieces in a kiln, which can get up to 1,800 degrees, eventually fusing all the separate pieces into one final product. To do this, Cohen purchases large sheets of colored glass, breaks them strategically using her glass saw or special glass cutter and then creates her products. “Fused glass gave me more options. I instantly fell in love with it,” she says. Cohen has always been interested in art, although she never studied the subject in school. As a Valley native who graduated from ASU with a business/marketing degree, she worked as a buyer for Dillard’s. It was at the department store that she learned to refine her eye for color and layout— a trait that would serve her well when she became a glass artist. Three years ago, she started her own business creating fused glass art products. 34

“This is what I can do forever,” she says. “For me, when I’m working with glass, it puts me in a meditative state. I can work for hours and forget about everything.” What defines her work? Graphics and whimsical touches. Many of her glass objects are adorned with hearts (one of her personal favorites) and cacti. She says she’s inspired by bright colors and fashion, too. “I think art should just make you smile. You should like to look at it. It doesn’t have to be complicated.” Cohen creates pieces that are both functional and beautiful. She makes vases, crosses, bowls, candle holders, spoon rests, knobs, pulls, salt and pepper shakers, and garden stakes in addition to Christmas- and Jewishthemed objects. Her two permanent collections include an 11-piece wall installation at Congregation Beth Israel in Scottsdale and three pieces in the Keaton Fine Arts Gallery in Superior, Arizona. Her favorite pieces to craft? The commissioned ones. She has made an array of unique gifts for bridal parties and sports fans, and loves when her clients are happy with her work. “When I make something for somebody, I really put my heart and soul into it,” says Cohen. “I do this. It’s all 100-percent handmade by me. I don’t buy pre-made. I cut my own stuff. It’s local art from a local artist.” She says people have even asked “You’re the real Jackie?” when she answers the phone. “I’m a real person. You can come talk to me. Indeed, Arizona is home to some of the oldest and finest Mexican restaurants, which integrate the harvest of the desert into their spicy menus. Most chefs agree that the key to creating great Mexican food at home, in particular great salsa, is using fresh ingredients, straight from the farmer’s market or garden, if possible. Dubbed “America’s Favorite Condiment,” salsa continues to rise in popularity nationwide with fruit salsas being the current rage—featuring everything from pineapple and mango to apples, blueberries, peaches and grapefruit, boosting the flavor of the salsa. While many people view chips and salsa as a diet disaster, fresh tomato salsa is actually quite nutritious, being rich in Vitamin C and lycopene (the antioxidant found in tomatoes) and loaded with capsaicin from spicy peppers, proven to help aid in digestive issues. Plus, salsa is naturally low in calories, and always seems to add an element of festive fun to the start of any meal. H
aving, until this last year, spent the entirety of my adult life immersed in the hospitality industry, I have had the opportunity to indulge in some spectacular meals in all sorts of amazing settings. I will be the first to admit that I had been spoiled by being surround by talented chefs who could turn something as mundane as lunchtime into nothing less than an event. On those rare occasions, they would get that twinkle in their eye and ask if I could sample something they were working on for an upcoming menu. I knew I was in for an extra special treat. Being in the hospitality industry also made me aware of what was going on within the restaurant scene; and wherever there was any sort of buzz, rest assured you’d be able to find me waiting in line shortly thereafter. When trips to Las Vegas were scheduled, while others where hitting the hottest clubs, my wife and I would map-out an itinerary 42

based on every celebrity chef in town. And no four words—none—caught my attention quite like, “James Beard Award Nominee.” With that said, however, few of those experiences are the ones I recall when asked about the best meals I’ve ever had. Sure, I know more than most the dedication and craftsmanship required behind the scenes to make an unforgettable meal possible, but I have also witnessed time and time again that food alone does not make a great dining experience. More often than not, the secret is who you share that experience with. Earlier this summer, while my family was on vacation in California, we took a day and made a spontaneous trip to its central coast. Around noon we found ourselves strolling the streets of Morro Bay, and both my wife and son kept pointing to the overpriced restaurants along the way, which focused more on their claim of having the best ocean views than having the best food in town.
I would have none of it, and after recalling a seafood market on our drive in, I convinced my family to go and secure us a spot on the pier where I would meet them in just a few minutes. Upon my return, I carried a brown bag with a deli container of fresh Dungeness crab meat and another of house made seafood salad. Clanking around the bottom were three cans of ice-cold soda, while sticking out of the top was an over-sized baguette, along with a bag of locally-produced kettle chips. Assembled with my pocket knife and bare hands, the resulting sandwich was anything but photogenic. But being able to pass it around and share it with the two most important people in my life while the wind blew in from the Pacific seemed to calm, and time around us began to slow. Those are ingredients that you cannot put in a recipe or teach in culinary school.
