t's here--our semiannual beer and wine issue! This issue has been particularly exciting for me for the past few years as the Northland has exploded as a place known for good people making good products. This issue is no exception.

Terra Vox Vineyards is new to the area and is trying for a different look, feel and taste than what many would consider a 'Missouri' wine. They are exploring history through viticulture and discovering some interesting and award-winning flavors by doing so. As their portfolio expands, I'm excited to see what they discover. Jennifer Helber is proving that beer is not just a man's game. This trendsetter has worked with beer for many years now, from the yeast to the 'active culture' of home brewing, both in and out of the petri dish.

Park Hill South High School graduate Shaefer Schuetz earned the Walter Cronkite Scholarship award from the National Academy of Television Arts and Sciences Mid-America chapter for his achievement in broadcast journalism while he was at Park Hill South. This group, which also gives out the EMMY award, gives the Cronkite award to students who demonstrate potential as future broadcast journalists. Schuetz will receive his honor at the annual Mid-America EMMY Gala on Oct. 3 in St. Louis, Mo. A Glass of Wine a Day Helps Keep The Doctor Away? LOCAL DIETITIAN WEIGHS IN ON THE HEALTH BENEFITS OF WINE ARTICLE JENNIFER HIGGINS

"A

n apple a day keeps the doctor away" is a familiar adage that dances in our heads especially during f lu and cold season. But researchers are finding evidence that might just offer a slight modification to that maxim: A glass of wine a day to keep the doctor away. Some researchers advocate that antioxidants found in wine and beer may help prevent heart disease by increasing levels of HDL cholesterol (the "good" cholesterol) and protecting against artery damage. But some in the health field aren’t as quick to jump on the bandwagon. Either way, there are some tips to get as much health benefits from a glass of wine as you can. “If you are like many Americans and enjoy an adult beverage now and then, my recommendation would be to choose wine over beer," says North Kansas City Hospital Outpatient and Bariatric Dietitian Jackie Roth, MS, RD, LD. "Wine has fewer calories and carbohydrates than beer, so it has less impact on your blood sugar. Most beers also contain gluten. If you are gluten intolerant or have celiac disease, beer would not be recommended,” According to Roth, red wine is a better alternative than white wine. For those who don’t like alcohol, grape juice isn’t the same as wine in this case. “Red wine has more antioxidant properties than white wine," Roth says. "In general, the sweeter the wine the more sugar it contains; something to keep in mind for weight loss and blood sugar control. Juice is often packed with added sugar and can have a negative impact on weight and overall health, so it should be consumed in moderation. Grape juice would not have the same potential benefits of wine." For those considering drinking a glass a day, other health conditions should be considered before partaking. “Anyone who chooses to drink alcohol needs to consume it in moderation," Roth says. "If you are on medications or have medical conditions, talk with your doctor before you choose to drink. If you have diabetes, be especially careful with drinking alcohol and only drink if your blood sugars are under control and you have eaten. Intake should also be limited if you have gout, liver disease, kidney disease or pancreatitis." Finally, Roth offers a few tips for those who do choose to drink: “Talk to your doctor first. Choose drinks wisely; limit intake of sugary, fruity drinks. Don’t drink too much. Stay hydrated,” she says.

Strong is best known as top-shelf vodka. Painstaking steps are taken to make this unique vodka easy to sip, due to its smooth taste. The same principals are used on their soon to be released gin, Pillar 136. Most would not expect to find an upper-end distillery in Parkville’s cave located on Park College. “We started in the cave mostly because there is a sprinkler system,” says Steve Strong, owner of S.D. Strong. “I wanted to keep the distillery in Parkville, because I've lived here for the last 15 years and I love it. Platte County is under the International Fire Code, which has really strict rules about the amount of in- process work a distillery can have going on. Without an overhead sprinkler system the amount is very low. It goes up almost a hundred-fold by having the sprinklers. I contacted the fire marshal in this area and he actually suggested the caves.” The cave annually maintains a constant temperature of about 72 degrees and warms up by four or five degrees hotter during the summer heat. This consistent temperature allows proper aging.

The distillery only has only six employees, including Strong and his wife. This small crew creates each product, labels and bottles the vodka. Even bookkeeping and providing taste tests in stores are handled by Strong’s crew. But expansion is in the near future. “We’re distributed state wide in Missouri and Kansas,” Strong says. “S.D. Strong products are targeted for smaller restaurants and all major liquor stores throughout both states. We’re looking at distribution in Texas, Illinois and Nebraska currently and hope to be in those states in the near future and are ready to take over more space in the caves and more than double the size of the distillery. We’re quickly running out of room and will soon add gin, bourbon and rye to our product line.” S.D. Strong’s expansion is not by accident. Vodka consumers find an unforgettable taste in this upscale liquor that won several awards including a silver medal in 2013 at the Washington Spirit competition as well as other prestigious awards. The secret is in their preparation. “We use corn, rye and malted barley flour,” Strong says. “We put it in the mash tub to convert starch into fermentable sugars and move to a fermentation tank where we pitch the yeast. It takes about a week to ferment out all the sugars and turn it into alcohol. CONTINUED >

The mash is moved to our custom made 200-gallon still. We boil the mash until vapors rise up thru the copper mesh packed column to hit a condenser and are converted back to liquid alcohol.” Sound complicated? The next step helps create this topshelf product. “We distill our vodka three times,” says Andrew Ziller, sales manager for S.D. Strong. “Next we filter our vodka 16 times through a charcoal filter. This step takes out impurities and creates smoother tasting vodka. We are upper end but try to maintain a reasonable cost.” S.D. Strong takes pride in purchasing all products in the United States. Corn is bought from St. Joseph, Mo. and whiskey or rye barrels are built in southern Missouri. Even the bottles are created from Missouri companies. 'I

don't like beer,' is a common refrain heard by bartenders the world over. At the White Horse Pub, located at 10221 North Oak Trafficway, bartender Katie Fruetel has created a gateway drink: a beer and a cocktail rolled into one. The beverage, which she calls the Blushing Beer, utilizes a local favorite, Boulevard Wheat beer and two products from across the pond, Strongbow Apple Cider and Ribena, a black current flavored squash or non-alcoholic cordial. The balance of fruitiness from the hard cider and the earthiness of the wheat beer make for a very palatable base for the hit of sweetness from the Ribena. This drink also brings a bit of history with it. While you could use any berry or grape liquor for the recipe, Ribena is a distinctly British concoction. Formulated from black currants, the soft drink was touted during World War II as a great source of vitamin C, especially during the U-boat blockades when fresh citrus fruits from the U.S. were hard to obtain. While the drink does have quite a bit of sugar, as a flavoring, it hits all the right notes. Fruetel says that the beauty of this beverage is the ease of customization. "You can adjust the sweetness very easily and if even half the beer is too much, you can add more cider too. It's a great introduction to beer for a lot of people.” While there are many iterations of a fruity beer, this particular mix is unique to the White Horse Pub.

ox Vineyards founder Jerry Eisterhold stands between rows of grapevines planted along rolling hills covered in deposits of loess, or windblown sediment. When ancient glacial ice caps retreated from the border of the Missouri River, exposed windblown silt particles accumulated over time along the river and formed these deposits on land now carved into farm fields and residences in unincorporated Platte County. Eisterhold, a former agronomist that worked as a University of Missouri student in a soil survey laboratory, realized that these rich, deep deposits would be fertile ground for growing grapes. However, the story of how Eisterhold built Vox Vineyards and launched his wine label Terra Vox began with a quest earlier in life. He has long nurtured a desire to establish a vineyard and open a winery. “I’ve been producing wine since I was a kid,” he says. He grew up in Rich Fountain, Osage County, Missouri, a town with a population of 72 people after he left. Located southeast of Jefferson City and near the Gasconade River, Osage County is home to several wineries. As an adult living in greater Kansas City, Eisterhold brought his interest in wine with him. He has spent 20 years tracking and obtaining native American grape varieties from across the United States. “I have sourced grapes from collections and nurseries in Mt. Pleasant, Oregon, Texas, California and upstate New York,” Eisterhold says. He began planting grapevines in 1996, starting first in the backyard of his former home in Kansas City. Then he tried planting grapes in Peculiar, Missouri, and other rural areas to no avail. Eisterhold and his wife Kate finally sought an answer from above, so to speak. “It was Kate’s idea to rent a plane and survey land around Kansas City,” Eisterhold says. The couple spotted and eventually acquired 86 acres, where they built a home and the headquarters of Eisterhold Associates, Inc, a firm that designs interpretive museum exhibits. The land is near the Missouri and Platte Rivers as a water source, where the water table is available to the deep-rooted grapes. The relatively warm climate and mineral-rich soil is conducive to growing grapes without too much vegetal vigor. The trick is in finding out what grape varieties will grow best. The hills on Eisterhold’s property, just east of 45 Highway, are now filled with rows of approximately 4,306 grapevines. Eisterhold’s interest in heritage North American grapes was formed in part after reading Thomas Volney Munson’s book “Foundations of American Grape Culture,” originally published in 1909. Eisterhold was intrigued by Volney’s work in Texas and the Midwest, where the viticulturist collected and documented native American grape species and bred new varieties from them. Of the 31 genus vitis (grapevine species) grown around the world, 27 of them can be found in various growing regions of the United States. Thousands of European-based grape varieties, such as well-known Chardonnay, Pinot Gris, Pinot Noir and Cabernet Sauvignon, fall under the classification of vitis vinifera, a species of common grape vines. A few of these varieties account for the majority of world wine production. Eisterhold decided to explore some 60 domestic heritage grape varieties such as Cloeta, Lenoir, Albania and Wetumka. Today, Vox Vineyards has some 40 varieties of grapevines planted with the goal of narrowing the field to 24 varieties for optimal growth that will yield premium-quality wine. These obscure grape varieties do not have much established history in terms of how they should grow and taste, especially in northern Missouri’s terroir and climate. As a result, Vox Vineyards has operated as a real-time laboratory to determine what will grow well and produce the best wine. Whittling down the number of varieties through attrition and testing has been a slow, detailed process. “We want to have fewer varieties and develop more protocols on how to monitor the plants so it’s less experimental,” Eisterhold says. “You have to kiss a few frogs to find a few princes.” Eisterhold hired Moss Bittner, who has winemaking and vineyard management experience in California, New York, France, Germany and India, to serve as a hands-on winemaker during the harvest season. Bittner moved from California to Kansas City to better facilitate firsthand observation. “There are different approaches to making wine from different grapes,” says Bittner. “It’s hard to provide advice from a distance. Here, I can observe vine characteristics.” “It is an experiment to see what the grapes have to say,” Eisterhold says, alluding to the brand name Terra Vox, which means “voice of the land.” He suggests, "The grapes have a conversation to share. No one really knows what they are supposed to taste like grown here.” Bittner’s role is to help determine which varieties will work best for winemaking and ascertain the “voice of the grapes.” “We want to draw out the individuality of each grape,” Eisterhold says. Most of the Terra Vox wines will be produced from single grape varieties. “We will have one blend each of red and white, but up to two dozen types of wine eventually.” As the process unfolds, wine production for each grape will be small in response to what the vines will yield. Eisterhold positions Terra Vox as wine for people interested in exploring and discovering small-batch wines. 30

Current varieties (while supplies last) include 2012 Cloeta, a jet black grape that produces a wine with rich body, soft tannins and a likeable aroma of plums, chocolate, and coffee. Eisterhold explains, “It comes from Munson Vineyard in Texas and is like Merlot.” The 2012 and 2013 Lenoir, a full-bodied red grape variety sourced from a Texas nursery and acreage in Sonoma, California, used to be planted in France. Eisterhold says that Lenoir produces Terra Vox’s most powerful wine. "It has characteristics that seasoned oenologists haven’t been able to put into words.” The 2013 Wetumka, a white wine with the aroma of elderberry flowers, is slightly acidic with a touch of candied-fruit sweetness to balance the sugars. Last year, Terra Vox produced 885 cases of wine. Eisterhold hopes to boost production to 1,200 cases this year. As Vox Vineyards continues to refine its growing methods and winemaking production, Eisterhold wants the story of heritage grapes to be heard. “It’s part of the theme of Terra Vox to rediscover and uncover the deep significant history of Missouri," he says. "The wine has a missionary role to bring out the heritage of the area as the ‘voice of the land.’” Eisterhold stands in the vineyard and reveals more details of experimental grape varieties like the noble-sounding Wine King. Each American heritage grape variety has a backstory that hints at past intrigue being brought to the present. Afternoon sunlight plays off green-gold grape leaves and clusters of black, purple, and green grapes. Time and testing will tell Eisterhold and Bittner whether grapes such as Wine King will ascend and join the choir of a dozen Terra Vox wines now available at the winery’s tasting room and sold direct from the Vox Vineyard website.

A

microbiologist, a woman, and a beer expert walk into a bar. No. It’s not a joke. It’s an accurate, albeit partial description of Jennifer Helber, owner of Grain to Glass, a supply and bottle shop for aspiring and knowledgeable homebrewers. Once a white-coated lab researcher, studying botany, molecular genetics, and intent on creating new plants, Helber was completing her graduate degree in microbiology when she overheard Boulevard founder John McDonald quizzing her professor about the cultivation of yeast. Helber propagated the first yeast for what has grown to be the largest specialty brewer in the Midwest. 32

A decade later, armed with a Master of Science degree in microbiology and a desire to move out of research, Helber responded to a newspaper ad seeking someone to help develop Boulevard’s quality-assurance lab. McDonald remembered her and hired her. She spent nine years conducting the sensory tasting of Boulevard’s production beers daily, to ensure that each style had the desired flavor characteristics. Helber quickly established herself in one of the most male-dominated industries in the country. “After I established and equipped the Quality Assurance Lab in 1999, I became the Sensory Specialist. It was my job to train others


to teach others to recognize ‘off’ flavors in the beers to assure the quality.” Helber explains, "I would spike the beers with different flavors the testers should be able to recognize in their beers as being of poor quality, such as butterscotch, vinegar and baby puke.” Helber’s love of working with beer, and sometimes drinking it, partially centers on the fact there are so many variations. “You’re never bored with beer,” she explains. “I’ve never been as much a wine drinker as I am a beer drinker. Of course, I started acquiring a professional taste for beer when I started working at Boulevard. “What some don’t realize is beer goes with virtually everything. You can have beer pairings just like wine pairings. Not only that, but the carbonation in beer helps cleanse the palate. And, versatile? We even made stout floats at Grain to Glass last month!” When did Helber’s interest in home brewing begin? “I started home brewing when I was working at Boulevard," she explains. "I became president of a local homebrew club, ZZ Hops, and began sharing

information on bottling and brewing, in general. I love beer and wanted to help others have successful brewing experiences. Also, I had visited Portland and Asheville, both craft brew meccas, and realized we didn’t have any home brew equipment and supply stores that compared. I could see the craft beer trend taking off; I decided the timing was right.” In 2012, Helber opened Grain to Glass in the River Market area, moving the business to its current location at 1611 Swift Avenue in North KC, in March of 2014. She taught brewing classes on site to help others get started off on a good foot so they wouldn’t get frustrated and quit. While purchasing their home brewing supplies at Grain to Glass, beer geeks can enjoy a handpicked selection of craft beer by the bottle and hang out at the bar to discuss beer and brewing. Local cheeses from Green Dirt Farm in Weston, and Askinosie direct trade chocolates from Springfield, Mo., round out the perfect triad of beer, CONTINUED > cheese and chocolate. We even made stout floats at Grain to Glass last month!” Based on the eclectic mix of ingredients in the store, alongside the brewing recipe books, chocolate, local honey, real maple syrup and local coffees, it’s easy to liken home brewing to cooking. “Just as in cooking, you can add your own personal touch to most beer recipes and trade out ingredients as long as it’s not a key ingredient needed for fermentation," Helber says. "Each batch can have its own unique flavor.” For those who wish to take a simpler route and not bring in their own recipe or measure out the ingredients, Helber provides pre-made kits such as Addicted Coffee Stout, in which she incorporates coffee from Kansas City’s own Oddly Correct. It’s but one of many of the creative brew mix kits available. As the interest in homebrewing grows, so does the popularity of craft beers and brewing among women. The increased participation reflects in the membership mix of local brew clubs such as the Kansas City Bier Meisters. Uniquely female


in its membership, the Helles Angels, a local women-only craft beer club, has been around since 2011. Grain to Glass welcomes about as many female brewers as males. “More and more women are getting into craft brewing, both professionally and personally. I’ve seen the numbers grow,” observes Helber. “In some of the classes I teach, it’s not unusual for women to comprise 50 percent or more of the attendees.” In addition to hosting classes on the fine art of homebrewing, Grain to Glass hosts an annual homebrew competition, the Picnique Belgique. Held in August each year, the competition features all Belgian categories and concludes with a special awards dinner featuring special guest speakers such as Stan Heironymous, (Author of Brew Like a Monk) and Florian Kuplent (Brewer of Urban Chestnut). The competition is part of the Kansas City Homebrewer of the Year Award. For beer geeks, it’s but one of many opportunities in the area to put their brewing skills to the test. Brewing is hardly all work and no play for Helber. Her in-depth knowledge of brewing is not without its rewards. A record of her involvement in the brewing industry includes: former membership in the American Society of Brewing Chemists, former president of ZZ Hops, an original member of the Pink Boots Society (an international organization consisting of the female movers and shakers in the beer industry), former Chair of Malt Sieve Analysis Technical Subcommittee, convener of workshops at the World Brewing Congress, author of brewing publications, and writer of scientific articles for multiple research publications. All of this and more made Helber a natural for selection as a judge at the Great American Beer Fest in Denver, the largest collection of U.S. beer ever served, in a public tasting event and private competition. Awash in ale, Helber claims to have no single favorite, but if she were stuck on a desert island and could have only one beer, she would choose Sierra Nevada Pale Ale. “It satisfies my craving for hops and relieves my thirst. Still,” she protests, “There are so many good beers out there, I wouldn’t want to just have one.” Spoken like a true beer lover.

This is the reality for Metro Lutheran Ministry (MLM). More than 2,000 families were provided emergency assistance from that humble two-story ranch last year alone. It’s where people have flocked for food, school supplies, and assistance with rent and utility payments. “The need just continues to grow,” says Operations Director Starla Brennan. “Thirty-four percent of kids in the Northland get free or reduced lunch. Countless people don’t have bank accounts and need help

with basic financial literacy. We’re seeing a very real need for case management in addition to emergency assistance, and we need more space for that.” Brennan says that MLM helps everyone, regardless of faith or religious affiliation, and many churches in the area refer people to MLM for help with a variety of problems. “There are so many stories of need, I could list hundreds. “This was not the life we had planned,” remembers Leigh, as she thinks back to how she felt when her son, Wil, was first diagnosed with autism at age two. Many parents share similar memories of feeling lost, inadequate—alone. Two years later, life is very different. Wil, who couldn’t communicate back then, now sings full songs. Rather than being withdrawn, he often makes eye contact and follows directions. Brennan. “In both of those families, the children had been separated from their parents. In order to be reunited, they have to be stable. They have to have a grasp on their finances and have a home. The kids have to have beds. It’s not just one step to helping them. When we work with people who are in crisis, they’re never in just one crisis," says Brennan. "They’re in several simultaneously. Unemployment means someone can’t pay rent, or buy food; divorce often means issues with eviction and problems for kids at school. Every situation is unique and nuanced, and it takes time and individual attention to help them.” What MLM does is powerful, but it doesn’t happen in a vacuum. It requires more space than they currently have; more office space, more space for staff, and more space for clients to gather, talk, and learn how to break the cycle of poverty. “Our goal is to help stop this cycle,” says Brennan. “To deal with the increased volume of people who need help means that we have to expand our services from 40

emergency assistance to case management. We go into a client’s home to teach them how to cook, how to budget, how to navigate their world successfully. It’s powerful, but it requires more space and more resources on our end.” Brennan says the Northland community has been generous with support. “The Northland community has really stepped up to help with funding. We’ve received grants that were only possible because we were able to raise the required matching amount, and we couldn’t have done that without the support of those here in the Northland.” Brennan credits Jeani Wells, Emergency Assistance Coordinator, for knowing the Northland community intimately and understanding the resources available to help clients in need. MLM operates almost exclusively on contributions, grants, and individual donations and serves residents at seven locations in Clay, Jackson and Wyandotte counties. They recently held a fundraiser to benefit a new Northland Service Center,

which will provide a larger space with more capacity to help those in need. “It’s easy to talk about need in a broad sense, but what we really focus on is each client," says Brennan. "Here’s an example: one mom just graduated from our year-long program. She is a domestic violence survivor with two sons. She came here to Kansas City because she was fleeing an abusive husband. She didn’t know anyone, and it wasn’t long before her husband found her. Before she went through the program, her boys were moving from school to school and had disciplinary issues. She juggled jobs and struggled with finances, and lived in fear. Now she and her boys are settled in. They are doing well in school—excelling, actually—and she learned how to stretch her budget to provide for them. They are the reason we do what we do. The Fine Art of Getting By In Belgium

N

o one tells you that when you are a beer or wine lover, you may start to travel in pursuit of your chosen beverage. For a cult beverage, some can make specific trips out to festivals, wineries or distilleries. A couple of years ago, my husband, Aaron, and good friend, Jeff, and I decided to swing by Brussels, Belgium, while we were all in Paris. But as in everything, the words of the The Gambler come in to play--know when to hold 'em, know when to fold 'em. Know when to walk away. Know when to run. Oh, Kenny. You were never so right. It started out innocently enough. There is a brewery called Cantillion in the heart of Brussels that is known for their small batch sour beers, still brewed in the same equipment that they used 100 years ago and by the same family. It is a pilgrimage that many take if they are in the area. It's amazing to see the process of beer open fermenting and then resting in wooden casks for years before approaching the sweet (or sour) spot where it can become palatable. We booked early tickets on the TGV and it whisked us northward toward beer nirvana. Cantillion was in the gritty, working class area of town. We trekked over and found the brewery, where we were greeted by the granddaughter of the original brewer. We took the self guided tour, tasted samples from the barrels and marveled at how far we had come from when we all met at the Flying Saucer. That should have been the end of a wonderful beer story. But it's not. We made our way to the Grand Place, or central square, had a lovely lunch and Jeff and I went to the chocolate museum. Still a great day, despite both Aaron and Jeff carrying a pack of three 750 ml bottles with them to bring home. We saw the iconic Manekin Pis, the statue of a little boy putting out a fire in a very organic way. We visited a lovely beer bar named Moder Lambic and tried more artisan cheeses and charcuterie. 50

After realizing that we had booked the last train back to Paris and its departure was still several hours away, we, and I mean I, decided that we couldn't leave without a true Belgian waffle. Aaron suggested Haagen Daaz in the train station. I scoffed. Wasn't Haagen Daaz American? We headed back to the main tourist area, and began our comedy of errors. The first mistake was trying to get a bored Belgian teenager to care about making a waffle. We ordered three, with a variety of toppings like chocolate, strawberries and whipped cream. She handed mine to me, with a ridiculous little fork. As I was trying to cut into it, my elbow slipped and hit the waffle coming out of the window, my husband's, and sent the waffle, and all the chocolate therein, all over his shirt. After a long day of walking and consuming, he stormed off to find something to clean himself off with as Jeff and I stared at each other. Jeff said it best, "I think we broke him." Next came Jeff's turn. As we ate our remade waffles on a small sill in the pedestrian-only street, he set down his phone. And left it. Not intentionally, of course, but it wasn't until we had found another small bistro and bar to relax and recuperate in, did he realize it was gone. We headed back to find it. As the menfolk rushed on ahead, I managed to walk behind a tourist gesturing wildly while telling a story. With an empty water bottle in hand, he threw back his arms and hit me squarely in the face, so hard that my sunglasses flew off my head and I staggered backwards. My exclamation of, 'Are you SERIOUS RIGHT NOW?!" may have outed me as an American. At that moment, I just didn't care. Some cities have an expiration date. Brussels, for us, had one of 4 hours. We stayed for 7. Know when to walk away, know when to run. When in Brussels, get the beer and run.
