APRIL 2015
re you a saver or a spender? Do you like to collect or giveaway?
I recently had the pleasure of hearing Joshua Becker speak at a women’s conference here in the city. Becker spoke on becoming a minimalist. It didn't happen overnight, but Becker found himself simplifying his life in order to have more time for family and those things he found more important than caring for his garage full of stuff. If someone were to ask me I would definitely say I am a saver and I absolutely love a clean, neat and clutter-free home. It is officially spring and for our family that means Spring Cleaning is in full swing. I have enlisted the help of a good friend of mine, Danielle Accovelli, to give our home some help with an all-natural cleaning approach with safe products made with some of my favorite essential oils that smell out-of-this-world amazing.

Second Story ARTICLE KATHLEEN BLAIR | PHOTOGRAPHY PROVIDED
N
ine years ago the father and son team of Don and Tommy Plato opened Gelato Spot, and now they’ve taken their restaurant knowledge to another level... to the second story, as a matter of fact. Yes, the Second Story is their new restaurant located in the space above Gelato Spot. Tommy is passionate about food and enjoys the dining experience. He’s traveled extensively and has meticulously gleaned from what he liked the most to create just the right atmosphere for the Second Story. It took him over three years to build his vision, from conception to implementation. Like a theatrical director, he hand selected each person for the role they’d play to produce his plan. Every detail was well thought out and implemented with the cuisine being the main focus. “I have a discerning palate and a very good understanding of flavors. My culinary goal has been to build flavors in layers – a layering of textures and flavors,” explains Tommy.
THE CULINARY EXPERIENCE BEGINS
I was greeted outdoors at a hostess stand right in front of the entrance. From there I was guided up the staircase to a beautiful, softly lit dining room. A large crystal chandelier sets the mood in the room filled with wood tables and leather seats. A small bar seating six is tucked away on the right. This quaint, intimate room seats 44 and the two patios seat 32. It’s a wonderful backdrop for the presentation that’s yet to come. THE STORY UNFOLDS
The menu is broken down into sections as if you are reading a program for play. Diners are allowed to pick which dining experience they would like – a three-course, four-course or five-course meal from the Intro, Prologue, Plot and Finale. The menu starts with the Intro, which is the beginning of your dining experience. Next, you go to the Prologue which ties in to the story and sets you up for the main plot. The Plot encourages you to go on and holds your interest as you get drawn in to the experience and, lastly, you close with the Finale, which is the concluding part of the presentation. I tasted my way through the program. Each meal builds up to the next. For the Intro, I sampled the Inside Out Caprese and the Mushroom Flatbread. I thoroughly enjoyed both. The Mushroom Flatbread has a wonderful combination of flavors that include a cheese sauce, shitake and oyster mushrooms, caramelized onions and truffle oil. The Inside Out Caprese has burrata, charred cherry tomatoes, crispy basil, balsamic reduction and parmesan tuile. CONTINUED >

From the Prologue I sampled the Rogan Josh Beef Short Rib, which was extremely tender and very delicious. It’s served with Biryani rice and charred broccoli. I also tried the Bouillabaisse and I was happy it was served with bread to soak up the amazing saffron broth. Next, from the Plot I was served the Planked Roasted Kobe Beef with fig mostarda and glazed mushrooms and I wasn’t disappointed as I savored each bite. I also enjoyed the Chilean Sea Bass, which was like butter in my mouth. The Finale was a Better Than Butter Cake Rum Cake, extremely moist and very flavorful. THE CAST

Like any presentation the players contribute to one’s overall enjoyment. This cast is undoubtedly the cream of the crop. In the role of General Manger, we have Vincent Kelly. Playing the role of Bar Man is John Christie. Performing in the role as Executive Chef is Josh Bracher. Kelly is well casted for his role as General Manager. He is professional, personable and wonderfully knowledge about food and beverage. His description of each dish had my mouth watering before I took a bite. His knowledge of wine was beautifully executed with his wine pairing selections that enhanced my meal. Plus, he has a million dollar smile that’s contagious.
Christie, a multi-talented author, poet and teacher, is very passionate about his trade. It is evident in his precision of mixing cocktails and sharing stories that will make your journey through the “spirits” memorable. In addition, he enjoys teaching a mixology class and a whiskey class. “There is no bad whiskey, just some that are better than others,” states Christie. Chef Josh is young and extremely talented. He previously worked at Posh in Scottsdale and graduated from the Arizona Culinary Institute. His love for cooking is evident in the delicious flavors he produces. “I have creative freedom to create amazing food together with my culinary team,” shares Chef Josh about his passion. Our waitress Lauren was attentive and friendly, wearing a uniform that is perfect for the role.

hat better way to spend a morning than wandering through rows of deliciously fragrant produce and herbs at a local farmers market? With new markets sprouting up across the Valley, it is now easier than ever to buy locally grown organic produce and other specialty products free of agricultural pesticides for your next meal. They also make for the perfect way to get in touch with the local community and gather new recipes and inspiration for creating wholesome, natural meals. THE SIMPLE FARM
Tucked in the heart of Scottsdale past the busy streets and crowded shopping centers, lays a quaint suburban farm that provides the community with a bounty of fresh flavors. The Simple Farm was a true endeavor of love for founders Lylah and Michael Ledner, who started it as a way to restore dignity to the dinner table and inspire others to cook homemade meals with all-natural, organic ingredients. Started in 2009, this thriving farmers market has now grown to feature over 100 vendors all serving up farm fresh foods, offering both locals and visitors the chance to take home everything from exotic fruits and vegetables to homemade artisan breads and decedent desserts. The Old Town Farmers Market also offers freshly harvested seasonal specialties such as apples and cider and local honey and jams. Another experience featured is the Edible Education Series, which teaches home cooks tried-and-true sustainable cooking techniques for creating organically inspired meals. Cleaning SURFACE BEAUTY
PERFECTLY POLISHED
The perfect alternative to chemical-laden cleaning sprays, this All-Purpose Lemon Basil Natural Cleaning Spray works wonders on all of life’s everyday messes. Using only natural, organic ingredients, this homemade cleaner is safe enough to drink and easy to store anywhere in the house without worry. But don’t underestimate its mild ingredients; this cleaning spray is tough on dirt, leaving stainless steel surfaces, windows, tiles and counters spotless and streak-free.
Without a doubt, every day we will encounter at least one small spill that can’t be simply remedied with a towel and water. However, store bought wipes are usually doused in a soppy mixture of chemicals that will leave both your room and your hands smelling of antiseptic, while the disposable nature of the wipes can be harmful to the environment. DIY Reusable and Disinfecting Cleaning Wipes provide the perfect eco-friendly solution to leave your home absolutely immaculate. Plus, these handy wipes can also double as homemade Swiffer pads.
THE INGREDIENTS:
SCRUB-A-TUB
• 2 cups of filtered water • 1 cup of organic (non-GMO) distilled white vinegar • 20 drops of organic lemon essential oil • 15 drops of organic basil essential oil
Hands-down the most dreaded area of the house to clean is the bathroom—endless hours of scrubbing soapy residue off a tub or slaving away with a toothbrush to remove grime typically come to mind. This inevitably leaves us desiring stronger, and more toxic, products to achieve a longer, faster clean. However, a homemade All-In-One Bathroom Cleaner can work just as effectively as its chemical counterparts—plus, the essential oils will leave your bathroom with a clean, natural smell. Use this spray to clean the tub toilet, sink and floor, and added bonus; this cleaner also works great on removing stains from carpets and rugs.
PUTTING IT ALL TOGETHER:
• Combine all ingredients in a glass spray bottle (not plastic, essential oils destroy plastic) and use as needed for household cleaning.
THE INGREDIENTS:
• 2 cups of water (distilled for long-term use) • 1 tablespoon of baking soda • 3 tablespoons of liquid castile soap • 30 drops of tea tree essential oil • 30 drops of orange essential oil • 1 glass bottle PUTTING IT ALL TOGETHER:
• Pour water into the bottle, followed by the baking soda, castile soap and essential oils. • Place the top on the bottle and shake to mix the ingredients.
THE INGREDIENTS:
• 2 cups of water (distilled for long-term use) • 1 cup of organic white vinegar • 15 drops of lavender essential oil • 5 drops of lemon essential oil • 5 drops of tea tree essential oil • 6 wash clothes PUTTING IT ALL TOGETHER:
• Roll the washcloths and place them in a jar. • Combine the water, vinegar and essential oils in a small bowl. • Pour the vinegar mixture over the washcloths, while pressing the washcloths into the liquid until completely wet. Add more vinegar/ water as needed. • Close the lid on the jar. • Remove the washcloths as needed. Wash the dirty clothes in the washer and repeat the process. CONTINUED >

LOVELY LINENS
There’s nothing like the smell of fresh linens, whether it’s snuggling up between the bed sheets or curling up on the sofa with a blanket to watch a movie. Yet no one would like to think that as they delight in these simple joys, they are also breathing in toxic chemicals. One simple and safe way to enjoy the smell of fresh linens without worry is by using a Homemade Natural Linen Spray. This versatile spray easily freshens up fabrics such as bed sheets, pillows, mattresses and curtains, while the essential oils work to fight bacteria, viruses and mold—leaving linens deep- cleaned and smelling wonderful. THE INGREDIENTS:
• 4 ounce glass bottle • 30 drops of any of the following oils: purification, lavender, thieves peppermint or lemon • 2 tablespoons of vodka (to help the oils dissolve in the solution) • 6 tablespoons of water Putting It All Together: • Mix all ingredients in a glass bottle (not plastic, essential oils destroy plastic) and shake before using.

LAUNDRY FRESH
Along with a clean home, one of life’s simplest, and greatest, joys is having freshly laundered clothes. We’ve all taken something out of the dry, whether clothes or linens, and put it right on—snuggling up to the warm fabric. A simple, natural Homemade Laundry Detergent is a great, and inexpensive, way to get truly clean clothes without the worry of having harmful chemicals, fragrances and additives embedded in their newly washed wears—and it’s high-efficiency safe too. THE INGREDIENTS:
• 1 bar of grated bar soap (homemade or natural store bought, try Dr. Bronners) • 1 cup of washing soda • 1 cup of borax • 20 drops of lemon or lime essential oils Putting It All Together: • Grate the soap using a hand grater or food processor. Grate into fine particles to dissolve easily. • Carefully mix the soap with the washing soda and borax (use gloves or a spoon as they can be drying to the skin). • Store in an air-tight glass jar. • Use 1-2 tablespoons per load. • Optional: Add 1 tablespoon of Oxygen Booster for whites if needed.

Giving Back
Local Business Tells Employees to “Go Take a Hike” (For a Good Cause) ARTICLE ALISON BAILIN BATZ | PHOTOGRAPHY PROVIDED

or its 30 anniversary, Pioneer Title Agency is doing something different. Rather than hosting a party in the grand ballroom of a prestigious resort, this Arizona-based, family owned business has partnered with the Arizona Trail Association on its “Take a Hike” event. The Association is also celebrating the 30th anniversary of the Arizona Trail and to celebrate, created the first-ever fundraising and employee wellness challenge utilizing the Arizona National Scenic Trail. The Arizona Trail is a continuous path across the state of Arizona and is open to all forms of non-motorized recreation, including hiking, running, backpacking, horseback riding and mountain biking (outside designated wilderness areas). Through the unique partnership, Pioneer’s team of more than 375 individuals – including team members from Scottsdale, Paradise Valley, Phoenix, Anthem, Chandler, Glendale, Goodyear, Tempe, Mesa, Chandler and beyond – has set a goal to raise at least $30,000 in 2015 to support the Arizona Trail. The community-minded team will also collectively hike, bike, run or ride all 800 miles of the Arizona Trail. Families, friends, customers and associates will also be invited to participate. In addition to the wellness benefits associated with time spent on the trail, the initiative hopes to encourage everyone to explore a segment of the Arizona Trail that they likely haven’t seen. The planning process of a point-to-point hike, overnight camping trip, or longer distance effort on the Arizona Trail will encourage collaboration, critical thinking and camaraderie, too. “This project, which many of our offices will be undertaking together, is one of many volunteer and fundraising activities our folks will be involved in in 2015. In fact, our team has a statewide community relations program, Pioneer Title Agency in Action, which focuses on giving back both time and money to hundreds of local causes across Arizona,” says Keith Newlon. While our ‘Take

a Hike’ Trail program is special for our 30th anniversary, giving back at the hyperlocal level is something each and every team members in all 55 branches is encouraged to do each day.” When complete, the $30,000 raised through the project will greatly assist the Arizona Trail Association in its mission to build, maintain, promote, protect and sustain the Arizona Trail as a unique encounter with the land. “The Trail initiative is really two-fold,” says Newlon. “While raising money for the Arizona Trail is important, we want to also raise awareness about all that the Trail offers. It’s a unique, giant playground for us all to enjoy and we want to spread the word.” Perhaps not coincidentally, the concept of the Arizona Trail began about 30 years ago when Dale Shewalter sat atop Coronado Peak near the U.S./Mexico border and shared his dream of a cross-state trail with others. The nearest town to this historic location is Sierra Vista , where the Newlon family founded Pioneer Title Agency and still operates several branches today. “One of our goals for this challenge is that more Arizonans will fall in love with the natural wonders that exist along the Arizona National Scenic Trail,” says Matthew Nelson, executive director of the Arizona Trail Association. “Pioneer’s commitment to covering the entire length of the trail is admirable, and means that many individuals will get to experience some of the least traveled areas in our state.” “It seems very fitting that Pioneer Title Agency, being a local Arizona company with such a wide reach across the state, become involved with something as special as the Arizona Trail,” says Cindy Newlon. “Arizona is a place where we live and raise our families, a place where we work and serve our local communities and also a place where we play.” For more information, or to make a pledge to the Arizona Trail, please visit PTAAZ.com.

DIY Made Simple ARTICLE AMY KASTNER

o It Yourself. It is something that most of us are familiar with--at least those of use that have watched HGTV or visited Pinterest. The concept of DIY is in my blood. I grew up watching my mom create amazing decor items for our home out of fabric that she found in the clearance aisle, or using different things that she already owned to create something better than what we could have found in the store. I would like to think that some of her creativity was passed on to me, and hopefully I can pass it on to my own children. For some it is a chance to relieve stress and let their creative juices flow. For others, it is a necessity, either for financial reasons, or because they feel that it is better to reuse something that is already owned instead of adding to their growing collection of household items. As a person that needs that creative release, and a new small business owner, I happen to fall into both categories. I am excited to share a couple of my own projects with you just to give an idea of what DIY possibilities might be in your own home. My first project involves an existing piece of furniture. My aunt gavem me this this dining room table not long after I moved out of my parents’ house. It was in great shape, until multiple craft projects took their toll on its finish. I decided that something needed to be done, but I also wanted to have a place where my children could express their creativity, as well. I kept going back to using chalkboard paint, but was nervous since I had never seen it used on such a large piece of furniture before.
A lot of elbow grease, a little help from a very special little girl, and a couple of coats of paint later, and this little gem emerged complete with a chalkboard top. I now have a place for the kids to play while I cook dinner, and it also has great possibilities for creating unique place settings, writing the names of dishes when we have friends and family over for dinner… the sky’s the limit. The second project was cheaper, and much more fun (or so it seemed to me). We had a wall in the nursery that needed to be repainted, and I could not decide what I wanted to do with it. I knew that I wanted something different, but it took a bit of online searching before I found a suggestion for using scrapbook paper instead of traditional wallpaper. I visited the nearest craft store, used my handy 50 percent off coupon, and bought a book of scrapbook paper that had the colors that I needed for $9 (plus a package of glue dots). In about an hour, I had “papered” the entire wall in the nursery, and still had additional paper to use for other room decor. The best part is that when I get tired of it, I can pull the paper off easily, without the mess of traditional wallpaper, and take the glue dots off of the wall with a paint scraper. Both of these projects can easily be done over a weekend, and result in great new spaces that you and your family will enjoy. Don’t be afraid to do something out of the ordinary with your next DIY project. You may end up creating something you love. April 2015 | North Scottsdale Lifestyle

Parting Thoughts
Finding Life in the Dried Up Leftovers WORDS JIM COSGROVE
I
made some corn bread for a family gathering last year and nobody ate it. Only two pieces were cut from the dish, and they were left abandoned on plates. The bread was whipped up from one of those mixes that come in a bag. “From Wisconsin,” it said on the package. “Organic. Whole grain.” And it tasted about as dry and organic as a ground up Wisconsin barn door. I couldn’t bring myself to throw it out, so I wrapped up the remainder to feed to the birds. Then I remembered a clever baking trick I learned from a bunch of nuns I worked with long ago at a soup kitchen in Gallup, N.M. It was a lesson in recycling, renewal and revival — a lesson in breathing life back into things destined for the dump. These nuns would drive all over town to supermarkets and restaurants to pick up any edible discards they could salvage to feed the hungry. On this day they had a huge box of very ripe, bruised bananas and loads of bready things — semi-stale sweet rolls, cinnamon buns, dinner rolls and croissants. On the floor of the kitchen they placed the biggest mixing bowl I had ever seen — big enough for me to sit in. They had us peel all of the mushy bananas and drop them into the bowl. Then they dumped in all of the dried-up sweet breads and rolls and poured in a couple gallons of milk. Nothing was measured or weighed. They were winging it. And my guess is that these women had spent years winging a lot of things, which is part of what made them so awesome.
One of the nuns handed me a potato masher, and four of us churned up the concoction in the bowl until it was a velvety batter. Then they poured it into about 20 greased bread pans and slid them into their cavernous ovens. The result was delicious, moist banana bread they served to their guests that evening. It was a modern-day loaves and fishes story — turning scraps into a feast. So, taking a page from the sisters’ wing-and-a-prayer cookbook, I crumbled up the dry corn bread into a mixing bowl. I added some milk, a few scoops of applesauce, and several shakes of cinnamon and poured it into a couple of baking pans. It was not only moist, but also really tasty. I was instantly inspired by how this little baking lesson can apply to my life and to my family. I don’t necessarily need to throw out things, situations or relationships in my life just because they get a little dried and crumbly. Maybe I just need to add a little of this and some of that — like a pinch of patience or a dash of a different perspective — and remix it. Or maybe I could mash it all up with something sweet and bake it for a while, and then see what comes out. Sometimes it’s best to ignore the recipe and just wing it.
