Mobile Dental Clinic Offers Free Dental Care for Underprivileged Area Youth The Boys & Girls Clubs of Greater Scottsdale and Christina’s Smile, a mobile children’s dental clinic, recently teamed in conjunction with the Waste Management Open to provide comprehensive dental care for 120 local youth and Club members. Selected children ages six to 15 from low income families had the opportunity to benefit from this free, threeday dental clinic in early February at the Boys & Girls Clubs of Greater Scottsdale Hartley & Ruth Barker Branch. Dental services were provided in a 53-foot mobile dental clinic, which was equipped with the instruments and supplies necessary to perform procedures raging from routine cleanings to sealants, restorations, root canals and extractions on children who might not otherwise have these services available to them. Local dentists and their assistants volunteered their time to assist the founder of Christina’s Smile, Dr. Richard Garza. Garza created the clinic in response to the desperate need for quality dental care in communities around the country. “There are millions of children in our country that are unable to get the proper dental care they need,” Garza says. “We see children who have never been to the dentist and are possibly in pain or embarrassed about the way their teeth looked. We fix these problems and the kids just can’t help by show off their new smile.”

German Osio Announces Third Valley Restaurant: Sumo Maya German Osio, one of the valley’s fastest moving young restaurateurs, recently announced his third valley restaurant: Sumo Maya Mexican-Asian Kitchen at 6560 N. Scottsdale Road. The 5,200-square-foot restaurant will serve as the focal point of the new mixed-used development Marketplace at Lincoln and Scottsdale Roads, which will also include 288 condominiums, a high-end yoga studio, juice bar, and additional retail space. Sumo Maya’s Mexican-Asian fusion menu will be built around tapas-style small plates, all under $20, with some being offered as dim sum. Approximately 30 percent of the menu will be modern Mexican, 30 percent modern Asian, and 40 percent Mexican-Asian fusion.

Legendary Restaurateur Paul Fleming Brings Unique Restaurant Concept to Arizona Paul Fleming announced plans to open Paul Martin’s American Grill in Scottsdale at the Borgata Shopping Center. This is the first location 10 North Scottsdale Lifestyle | April 2014

in Arizona as well as its first location outside of California. The concept was co-founded by Paul Fleming, who is widely regarded as one of the restaurant industry’s most creative concept developers. Associated with other critically acclaimed restaurants, Fleming developed P.F. Chang’s China Bistro, Fleming’s Prime Steakhouse & Wine Bar, and Pei Wei Asian Diner. Fleming is also one of the founding partners behind Z’Tejas Southwestern Grill. The brand new 6,552-sqare-foot location in Scottsdale will feature a seasonal menu of contemporary American dishes and cocktails hand-crafted in a “scratch” kitchen. Taking the signature Paul Martin’s look, the restaurant design will be focused on creating a comfortable and timeless atmosphere with a mix of private, public, and communal dining spaces. The Rugby Bowl: Spikes & Spokes On Saturday, April 12, the Fiat of Scottsdale Rugby Bowl: Spikes & Spokes will make its valley debut at 1:10 p.m. at WestWorld of Scottsdale as one of the world’s most popular sports meets the rolling thunder of motorcycles. As hundreds of the hottest bikes in Arizona growl along the field, the nationally-ranked team from Arizona State University will take on the number one-ranked team and defending college champions from Brigham Young University. The Rugby Bowl is teaming up with Bikers for Boobies, a non-profit 501(c)3 that provides cancer awareness, education and financial resources for cancers, including breast cancer, will be the primary charity partner for the new event. Arizona’s State Wide Day of Giving The Alliance of Arizona Nonprofits and Arizona Grantmakers Forum are pleased to announce the return of Arizona’s statewide day of giving for a second year. A Story of Everlasting Love North Scottsdale Couple Celebrates 58 Years of Marriage Article Kathleen Shipman | Photography Provided

N

orth Scottsdale residents Charles and Lorraine Christophel are healthy, energetic and--most importantly--very much in love. It’s hard to believe that on April 1 (no fooling) they will be celebrating their 58th Wedding Anniversary. The couple’s story is one of young love that flourished into a lifetime of happy memories. “I like to say, we were young fools and now we’re old fools,” says Lorraine. The Christophel’s storybook relationship began in the Bronx, N.Y., when Charles was 18 and Lorraine was the tender age of 15. Living just one block away from each other, the couple went out on dates reflective of a much simpler time. Before long, the two became inseparable, mutually enamored. They were two kids in love. “She was the prettiest girl in the neighborhood,” Charles says. At age 21, Charles enlisted in the draft and entered the Army. When given the opportunity to relocate to Hawaii to work in finance, Charles knew that he first wanted to make Lorraine his bride. The two were married Easter Sunday of 1956. Living in Hawaii for a year was an incredible experience for Charles and Lorraine, who hadn’t known life outside of their Bronx neighborhood. The new exotic world enhanced their already blossoming relationship. “We didn’t have a dime to our name, but every day we would go down to Waikiki Beach,” says Charles. “No money, but full of happiness and love. It was one of the most marvelous times of our lives.” When the carefree days in Hawaii ended, Charles and Lorraine went on to create a beautiful life together. Charles succeeded in his accounting career, which enabled the Christophel family to leave 12 North Scottsdale Lifestyle | April 2014

their old Bronx neighborhood for good. Lorraine stayed home and raised their five children. With an endless supply of love to give, Lorraine fostered both children and animals as well. “I could never have enough kids, enough animals, or enough Charles,” says Lorraine. “That’s my list.” In 1989, Charles and Lorraine made the decision to transplant from New Jersey to Scottsdale, with the hopes that the Arizona climate would help Charles’s asthma. Since then, many of their family members have followed in their footsteps and have also moved to the valley. Every summer though, Charles and Lorraine return to the east coast, where they have a house in Lake George, N.Y. “I always say, ‘We have the best of both worlds,’” says Lorraine. For Charles and Lorraine, family has always come first in their lives. Their world revolves around their children, 13 grandchildren, and 11 great grandchildren. Every Sunday Lorraine creates a dinner for everyone in her family that is able to attend. Besides the great company, Lorraine’s excellent cooking and baking skills keep the dinner table full of guests.


“Eating together is a marvelous experience because it helps keep the family together, sharing, laughing, eating,” says Charles. For the past 35 years, Charles and Lorraine’s Lake George house becomes the gathering spot for the extensive family. Members will travel from all over to visit Charles and Lorraine in Lake George, which for the family has always been an iconic destination. “It’s always so good to have something that brings your whole family together,” Charles says. Another passion Charles and Lorraine share is their dedication to a healthy lifestyle, keeping them quite active beyond their years. They not only walk 25 miles a week together, but Charles also works out in his home gym four days a week. The couple take vitamins daily and eat purely organic, all of which has helped attribute to their vitality. “We are very health conscience,” says Charles. “We’ve been reading labels for 50 years. Any label with words you can’t pronounce, we won’t touch it at all.” Charles and Lorraine spend their days happy together in their North Scottsdale home. Although Charles officially retired 20 years ago, he has worked from home for his daughter’s accounting firm for the last 18. Just as he keeps his body healthy, he likes to keep his brain sharp as well. Lorraine, who is famous for her baked goods, is constantly in the kitchen. She proudly finds new ways to turn her delicious treats into items made entirely of healthy ingredients. “Back in our day we didn’t have preservatives,” Lorraine says. “We’ve always eaten like this.” As Charles and Lorraine celebrate their 58th Wedding Anniversary, they have reflected on the many paths they have taken leading up to it. Just as in their days as a young couple from the Bronx, the love they share for each other still burns strong. “Lorraine and I are still very much in love,” says Charles. “Life could not be any more beautiful.”

t’s spring and a time many brides’ dreams come true…marrying a wonderful man and having a beautiful wedding. They’ve spent countless hours looking at bridal magazines, visiting bridal websites and making countless trips to get the right wedding gown, cake, flowers, caterer, music, invitations. Unique ideas can put a personal spin on the traditional things on a bride’s list. We’ve collected some concepts for brides-to-be to consider and help make her day extra special.

Invitations

The formal invitations with tissue and multiple envelopes are no longer the norm. With the scrapbooking craze still big, invitations have taken on a new, more personalized look that is custom-made to the couple’s theme and interests. It’s a great time to be creative from the “Save the Date” cards to the actual invitation and R.S.V.P cards. Have fun with color, ribbon, lace, rhinestones and print images to create that special, personal invitation. Photography

Carla and Michael Beedy of Carmichael Studios are a husband and wife team who blend video clips with still photos to bring their photos to life. A beautiful photo of a couple’s first kiss is then put with a video of them dancing. Also something to consider is the first look session where the groom sees his bride for the first time before the ceremony. During this private time that the couple is together, the photographer is quietly behind the scene taking photos and the priceless expressions and moments are captured on film. This is also a perfect time before the ceremony to take many photos including the family before the guests arrive. “We also recommend the bride has a hair and makeup rehearsal to make sure she loves the look and that it will last the entire day,” states Carla. “We give each couple a Wedding Photography Checklist with timeframes so nothing is overlooked and everyone knows what times to show up”. Another idea is to have a surprise video of the bride or groom sharing why they fell in love with the other and to share some things their guests may not know about them.

Wedding Cake

Shimmer and glitz on a simple cake has made its debut. Burlap and lace are also making a comeback on the cake scene as well as the frosting look of crepe paper gathered into a flower. “I’m finding that brides come into my bakery with photos in hand of cakes they’ve seen and love that were on Pinterest,” explains Eva Zasimovich, owner of Sweet’s Unlimited. “The majority of the brides like simple cakes with a little bling.” An initial monogram on the cake is another personalized touch to consider that is the same color as the frosting. Also, many brides still like a small tiered cake and have stacked cupcakes or a petite cake topped with a real flower as centerpieces at each table. Flowers

The table centerpieces this year are unstructured, as are bridal bouquets. Jeweltone- colored flowers are being featured. And, terrarium centerpieces are being shown with only a few blooms and lots of greenery under glass in all shapes and sizes. Clustering these as a centerpiece makes a beautiful tablescape. A touch of citrus garland is popular for decorating the bridal table or the cake table. The large bridal boutique has been replaced with a smaller version of different complimentary colors which separate it from those of the bridesmaids. Even petite nosegays are being shown in bridal magazines. Music

Romance is back and Big Bands are making the scene along with crystal chandeliers and beautiful china to decorate the table. You can Google to find ideas for a playlist to listen to before handing your personalized selections to a DJ or band. Dancing has grown

more and more popular and couples, parents and bridal parties are making surprise debuts on the dance floor. For ideas, you can go to YouTube.com and search wedding dances. Attire

Brides are adding a bit of color to their wedding gown. Many incorporate a touch of blue to complete the tradition from the poem “Something old, something new, something borrowed something blue and a silver sixpence in her shoe.” Before the late 19th century, blue was a popular color for wedding gowns, as evidenced in proverbs like, “Marry in blue, lover be true.” Also popular this year is hints of pink and peach in pale blushes and nudes. “A more formal look is making the scene in men’s attire”, states Danielle Goettl, wedding planner for Outstanding Occasions. “The casual dress attire of suspenders and cotton bowties are being replaced with a more sophisticated look.” Vows

Many couples still choose to stay with the traditional wedding vows where others want to be more creative and recite vows they have written or a poem they both like that reflects their love for each other. Food

Family style servings brought to the table have become an option to the buffet and formal meals. A table then shares a variety of entrees and vegetables. Another idea growing in popularity is serving a late night snack of chocolate covered pretzels, popcorn in multiple flavors, ice cream cups or pizza. Even the latest craze of food trucks has entered the wedding scene. “Consider having a food truck cater your rehearsal dinner or a bachelorette party. The chef can prepare a special meal for the evening and having a food truck adds to the festivities,” states Lori Baker, owner of Food Truck Caravan. continued >

This year, romance has made a larger presence in weddings with the lace, ribbon, sequins and chandeliers. If your budget won’t allow it on a grand scale, then add touches of it to your venue. And, to change things up, have a combination of different seating arrangements for a softer look. Combine round tables in the center with rectangle tables around the perimeter or make another shape with smaller tables staggered. A bridal table can be a small table for two with your bridal party sitting with their family and friends at the other tables. And soft floral patterns are making an appearance in linens.

C

an a sleek and sumptuous silk wedding gown help someone dealing with cancer? Certainly! And so can a lace-trimmed confection that’s all dolled up with crystals, because a wedding dress that’s donated by a bride who has already said her vows, or by a bridal salon, boutique or designer, gives Brides Against Breast Cancer (BABC) a chance to sell that finery and raise funds for the free programs and services it supports all around the nation. BABC supports individuals affected by cancer, their families and caregivers, and takes part in other outreach activities, like the10,000 breast self-exam cards it plans to distribute this year. “There are many cancer support organizations that raise funds for medical research, but what we do is deal with the pyscho-social aspects, providing programs for adults and children that focus on education, nutrition, exercise and therapy,” says Amy Paulishak, senior vice president for the Florida-based, non-profit, which is an affiliate of its sister organization, the Center for Building Hope. 18 North Scottsdale Lifestyle | April 2014

“Even if you’re not in the market for a gown,” she says,” you can volunteer at one of our events or, if you’ve already said ‘I do,’ you can donate your gown and receive a tax deduction.” With more than 5,000 gowns in BABC’s inventory, and sometimes as many events as six per weekend, the group is on target to raise $2 million this year with the 100 bridal shows already scheduled on its “Nationwide Tour of Gowns.” Each show arrives in town on BABC’s “Big Pink Truck” and usually attracts about 150 guests, although the number can reach as high as 800. An average of 20 gowns walks out the door of each show with a beaming bride-to-be, and even though that doesn’t always happen, Paulishak says BABC’s approach makes real economic sense for those watching their pocketbooks. “If a customer personally hasn’t been impacted by the downturn in the economy, she knows someone who has,” Paulishak says, Donating a gown also resonates emotionally for those brides who wish to “pay it forward.” And, speaking of paying it forward, volunteers -- those who work at the bridal shows or in other capacities -- are truly the


backbone of the operation. According to BABC’s website, more than 4,000 volunteers accrued over 32,000 hours of in-kind service in 2013. JoAnn Grant, an event planner and owner of Apropos Creations, serves as a BABC’s volunteer city coordinator in Arizona. She says the future brides she meets at the bridal shows are always pleasantly surprised not only by the available merchandise and on-trend gowns in all styles and sizes (ranging from 4 to 18 with an average price tag of about $600), but also the opportunity to raise money for such a good cause. Approximately 75 percent of the gowns are new and have been donated by salons and boutiques because they didn’t sell, for whatever reason; the others are gently worn dresses that have been previously owned. “Everything is reduced, and you can find some great prices,” says Grant. An interest-free layaway program is even available. For those who can’t make a bridal show or don’t need a dress, there are still ways to help, Paulishak says. wo brilliant iridescent Blue Morpho butterflies fly past my shoulder as they play chase in the early afternoon. With wings stretched out, they look about the size of my hand. They move like puppets pulled with stings as they dance to the tune of trickling water from the fountains. Filtered sunlight pours through the atrium’s glass ceiling. Meticulously groomed plants and brightly colored flowers line the pathways. A group of school kids sits on the ground with their notepads and pens in hand. As I look around, there are beautiful butterflies everywhere, some on the plants, some eating fruit from bowls and one even hitching a ride on a little girl’s skirt. She freezes in place and squeals with excitement telling her friends she can’t move because she doesn’t want to scare the butterfly away. This truly is Butterfly Wonderland. Butterfly Wonderland, located in Scottsdale, is both a for-profit and non-profit 501c3 facility. The Butterfly Wonderland Foundation was established to provide on-going public education programs, activities and specialized materials for school children in the region. The foundation also helps provide educational and research opportunities, as well as scholarship and internship programs. “When you see a butterfly, you are seeing a survivor,” says Adriane Grimaldi, the director of education at Butterfly Wonderland. “There are four stages in their life cycle: egg, caterpillar, chrysalis and butterfly. In any of those stages, there is an obstacle that can prevent them from going onto the next.” 20 North Scottsdale Lifestyle | April 2014

Children learn about the ecosystem, as well as powerful life lessons such as this when visiting the atrium. And thanks to the foundation’s scholarship program, hundreds of children are able to attend this wonderland at no cost each year. Children’s First Academy in Tempe, a school for low income and homeless children, was granted a scholarship and sent 28 children on a field trip. The children enjoyed the butterflies and bees, and watch a specially edited, 14-minute version of the IMAX movie the Flight of the Butterfly, in 3-D. Grimaldi said they were proud to send the kids off with a Butterfly Wonderland sweatshirt to keep them warm. One of Grimaldi’s favorite moments in the day was when one of the little girls she was leading down the hallway looked up at the butterfly pictures and declared that she would love to work here someday. “These are kids who live on the streets, by the river bottom or in a shelter,” says Grimaldi. Maybe this experienced sparked a passion within this youngster to chase her butterfly dreams. Volunteers are an important part of the education program. Butterfly Wonderland has about 82 volunteers, 45 of which are active. Many of the non-active volunteers are snowbirds. “Forty-four volunteers donated 512 hours in December. That’s pretty substantial for an organization that just opened in May,” says Grimaldi. Volunteers help with numerous jobs, from taking tickets, to answering questions about the butterflies, bees, ants, aquatic fish or other critters at Butterfly Wonderland.

ccording to a survey by online wedding magazine The Knot, the average cost for a couple marrying in the U.S. is $28,472. If your wedding is on the horizon, this figure may come as a shock. However, while it’s possible to arrange an affordable wedding with sensible budgeting and cost-saving strategies, no matter how big or small your wedding, there are always some costs that you may forget. Here we offer five financial tips for couples planning their big day to avoid any unwelcome surprises. Set a wedding budget and stick to it

The first step in planning any wedding is setting a sensible budget. You will need to decide as a couple how much you can realistically afford to spend on the ceremony, reception and other wedding essentials. With this decided, you then need to make a list of every item required for your wedding day, using advice from wedding magazines and sites, as well as from your friends who have recently tied the knot, to compile this. Then estimate the amount you have available to spend on each item. You may be pleasantly surprised to find that many local businesses can work to your budget, however much that might be. Don’t leave out these frequently forgotten costs

Even making a detailed list you may not account for every aspect of your wedding, so taking note of these often neglected costs, outlined in a recent publication by Money.co.uk, will help you to stick to your budget. Don’t forget to take into account 22 North Scottsdale Lifestyle | April 2014

the charges for a marriage license and wedding stationery, including those all-important thank you cards; you may also want to thank your guests with favors and acknowledge the help of bridesmaids and others who have assisted with preparations by way of a gift. The venue and wedding suppliers may additionally ask for some extra payments, which according to ABC News, if they haven’t included tax and gratuity can increase the costs by up to 30 percent. As well as checking out these charges, you need to think about the costs of framing photos and an album to remember the occasion by. Finally, don’t forget to include yourselves in the head count for the reception. Cut out unnecessary expenses

Inviting fewer guests is an obvious way to cut back, but did you know that just by marrying towards the beginning or end of the year or by avoiding a Saturday wedding you could save yourselves some money? There are plenty of other ways to make savings too. For instance, if you marry near your home, there is no need to pay for accommodation at the venue, and you can save on expensive suppliers by preparing items such as flowers, table decorations and the cake yourself. Despite the best budgeting, you never know what might happen in the lead up to your wedding. This is why it’s good prac-

tice to keep about 10 percent of your budget back to pay for costs that you couldn’t anticipate. Avoid the word “wedding”

If you are already planning your wedding, you may have noticed that similar products seem to cost suspiciously more when the suppliers know they are for use as part of a marriage ceremony or reception. Therefore if you are using suppliers for items such as your flowers, cake or catering, wherever possible avoid saying that they are for your wedding and instead use the word “party”. Obviously, a compromise is necessary if you want to benefit from these savings, as an item such as a tiered cake would give the game away.

A

fter years of teaching second grade in the northern Phoenix area, Alyssa Hall was frustrated with the diminishing role that she felt creativity was playing in the classroom. So much so, in fact, that she felt it was taking a toll on her personally. As an educator, she has always been a firm believer in lifelong learning, and decided to take some cake decorating classes as a way to express herself once more. Little did she know at the time that this one simple decision to look for an outlet would end up guiding her out of the classroom and into starting up her own business baking cakes. As things took off, it did not take a long to figure out what to call her new company. “When I was teaching I always wanted everything to be really cute, so my teacher friends would constantly refer to me as a cuteologist,” explains Hall. “So when I started to make cakes, I would naturally refer to them as cuteology cakes. I would bring the ones I practiced on into school, because nobody likes food quite like teachers do, and I would announce that here was the cuteology cake for the day, and the name just kind of stuck, so I kept it.” Like many small business stories, Cuteology Cakes started out as a side project, with Alyssa making cakes for a handful of family and friends. But as word got out about a cuteologist going mad on the baking scene in the North Valley, she began spending more and more time filling orders. Three years later, her once-hobby and creative outlet is now her full-time job. Alyssa admits there has been no real secret to her success, just a refusal to provide nothing less than a first-rate product to her clients, along with an equal level of service that only a company like hers can provide. “Because I am just a one-woman show, I really get to know people and the level of service naturally has to go up. I don’t spend my time 26 North Scottsdale Lifestyle | April 2014

with hundreds of clients, but rather just the amount of clients that I feel comfortable that I can work with in order to do a great job. “And on top of that, I have a high attention to detail. It is important to me to not just do the basic, but to blow them away. When I quote a cake, in the back of my head I am already thinking of little ways to make that cake turn out better than they could have ever imagined.” Building deep relationships and providing amazing cakes has helped to build a core foundation of repeat business at Cuteology Cakes. In fact, Alyssa has yet to spend a single dollar on advertising, believing instead that an enthusiastic word of mouth campaign is better than any banner she could buy on a web site. With a full slate of cakes to make week-in and week-out, she may just be right. Custom cakes will always be at the core of what Cuteology Cakes does, but they also offer a wide variety of cupcakes, cake pops and even cake ball-cakes for any sort of occasion, as well as a wide variety of other tasty confections that would fit perfectly on any dessert table. “Moving forward I would eventually like to merge my education background with my cake decorating background,” says Alyssa when asked to look into the future for her company. “I would love to teach classes and attend seminars. You never really stop being a teacher, I guess.” She has already begun that transition a bit, as Cuteology Cakes now offers a children’s cake decorating party package as part of their services. O

n Hayden Road, just north of Via de Ventura, there is a neighborhood restaurant that is building quite a reputation of serving a wonderful menu of American cuisine with southern influences. I recently had the opportunity to find out for myself what the locals are talking about. Chef/Owner Chris Collins grew up with restaurant DNA in his blood. Being the fourth generation of restaurant owners, Collins grew up helping his dad, Wally Collins, with his Marie Calendar restaurant at a young age. And, later he helped him open Wally’s American Pub in Scottsdale. So, it was only natural that Chris majored in hotel and restaurant management at Boston University, where he received a swimming scholarship and graduated cum laude. After graduation, Collins was snatched up by the Houston’s restaurant chain where he worked for five years in six different states and at 10 different locations. Returning to Arizona, Collins decided to plant some roots within the community and in December of 2011 he opened his first restaurant, Grassroots Kitchen & Tap. Collins really loves the neighborhood atmosphere where locals can come and gather. He encourages it by having a “social hour” instead of a happy hour so neighbors and friends can gather together. There are larger tables and a wonderful open patio where they can sit comfortably while enjoying their meal.

During his time in New Orleans Collins brought back some of that southern style of cooking to Scottsdale. So, on Monday’s you’ll find in keeping the tradition it is red beans and rice day. tortilla soup and on a Friday to try one of my favorites, lobster bisque. In fact, all the soups sound delicious. I continued my tasting with a “sharing plate” appetizer of organic Scottish salmon, which was smoked in apple and cherry wood and served with toasted baguette and homemade remoulade sauce. I loved the smoke taste and the generous portion of salmon. Other fish selections include tuna, swordfish, scallops, redfish, Texas snapper and Idaho trout. “We have an extremely high standard for our seafood selection,” states Collins. “Each fish has their own specs and we are extremely particular on where it comes from and the cuts we serve.” Next, I enjoyed the farmer’s vegetable chop salad which consists of cabbage, red and gold beets, grapes, butternut squash, corn, radishes, cherry tomatoes, scallions, English cucumber, Edamame, feta cheese, basil, parsley and creamy champagne vinaigrette. I enjoyed the crunchiness of this raw vegetable salad which can be served with salmon, chicken, shrimp or tuna. There are seven sandwiches to choose from. I sampled the shrimp po’boy and it was awesome! Made with a light bread coating and served with Nola remoulade sauce on a French baguette roll and homemade Cole slaw. I thoroughly enjoyed the shrimp – it was so good that I definitely will order it again on a return visit. Next, I tasted the seafood southern shrimp and grits. Now, this probably would not have been something I would have ordered, but I was pleasantly surprised how good it was. It’s another recipe from Collins New Orleans days and it is definitely worthy of being on the menu. The shrimp has a little crunch and the grits have a light flavor of jalapeño and cheddar, with a Tasso ham relish. I recommended you try it as it really is very different and very tasty.


For entrees there is the popular barbecue brisket, Topher’s braised short ribs, half roasted chicken, pork chops, Carolina baby back ribs, a petite filet and a combo plate of rotisserie chicken breast and a half rack of ribs. I especially enjoyed the Carolina-style baby back ribs that are imported from Denmark, where they have the highest pork quality standards. The ribs are served with a wonderful house-made barbecue sauce that is honey sweet and not sugary sweet. These ribs are definitely finger licking good, but a warm towel is served to avoid that temptation. Sticking to Basics

Collins had worked both in the kitchen as a chef and as a general manager during his

tenure at Houston’s where he learned the importance of organization and the execution of the meals which are necessary in running a great restaurant. He takes extra measures to insure your first bite is as good as the last and the memory you leave with. “Consistency is as important as quality,” states Collins. “I make sure not only are the foods properly prepared but that all portions are the same in thickness and quality so customers can be assured of getting the same delicious flavor they enjoyed when they come back and order it again.” Obviously Collins is doing something right, in just the couple of years his restaurant has been opened, Grassroots has received Phoenix New Times Top 10 Burger award and

the Best Rotisserie Chicken award. If possible, try to save room for one of their amazing pies. Key lime is always available and a featured pie of the day may be apple, coconut cream, cherry or pumpkin. A Love to Remember Words Hona Amer

E

veryone sits and waits with anticipation. The door opens and everyone stands to get the first look at the bride walking ever so slowly down the aisle. While the people sitting around me try to see the bride, I steal a quick glance toward the altar. There stands a man who is about to commit his life to his bride. The emotions are written on his face--excitement, fear, joy. His eyes peer through the crowd to get a glimpse. Then, he sees her. Down the long aisle, the one he is waiting for comes closer and closer. His smile tells a story of its own, drawing my attention back to his bride, reminding me that this is their moment, a moment worth celebrating. Somewhere between a beautiful love song and the lighting of the unity candle, the bride and groom say their vows. Some parts are unscripted and from the heart, while other words have been repeated for decades. Through these words that hold so much weight and meaning, they commit to love one another “for better or for worse, for richer, for poorer, in sickness and in health.” In a beautiful instant, they have joined their

lives together. They walk back down the aisle jubilantly. That aisle is just the beginning of their path that will keep moving together as they navigate through days, weeks and months ahead. Those months will turn into years, and every year, there will be one day on the calendar that reminds them of this time. In all of our lives, we need markers to remind us of the beautiful moments in our lives. Weddings and anniversaries need to be celebrated, because in the midst of the years, life happens. For some, the loss of a family member brings life into full view. For others, a sickness may threaten to tear your marriage apart. In those times when life seems dim and cloudy, we need rays of hope that will spill into the darkest seasons. Anniversaries remind us of commitments that were made through smiles and tears. They give us strength to keep going when the vow of “through sickness and health” finds us in the former instead of the latter. Some anniversaries might consist of a sigh, followed by a declaration that “we made it.” Other years will be full of celebrations of new babies, new

jobs, new homes and new grandchildren. It would be wonderful to know the value of love as you live life. Yet, many times, the memories are most cherished when we look through the rearview mirror. Young love is beautiful, but there is something special about love that endures through decades. When two people walk hand in hand through life’s tragedies and triumphs, it’s worth celebrating. It’s worth pressing pause and remembering how one person has so drastically changed another’s life.
