hristmas is a beautiful time of year, especially in Arizona, where the weather is absolutely perfect and there are enough holiday events going on around town to keep even the youngsters content. Around Town CASINO ARIZONA INTRODUCES NEW PASTRY CHEF Casino Arizona, an enterprise of the Salt River Pima-Maricopa Indian Community (SRPMIC), is thrilled to announce the arrival of its first-ever pastry chef. With more than 20 years of culinary experience, Chef Jeff Mack will serve an instrumental role in creating the property’s dessert options. Chef Mack started his career in 1985, and quickly learned the importance of menu development as an assistant pastry chef at the Radisson and Resort and Spa Scottsdale. He would continue to develop his craft and assume additional responsibilities, managing teams and working as an executive pastry chef at various properties throughout Arizona. In November 2013, Chef Mack began working at The Boulders, a Waldorf Astoria Resort for six months before taking on his new role at Casino Arizona. “Transforming classic desserts is my specialty so I enjoy placing a modern-day twist on traditional sweets, “ Mack says. “Typically, classic tiramisu is made of mascarpone cheese, espresso and ladyfingers. But in the past, I’ve enhanced the flavors by incorporating a roasted banana into the recipe. It’s the same concept and idea, but it includes a fresh angle.”

G

rowing up in Iran, Johnny Nikbakht only knew of America as a land of opportunity. Like many other boys, he went to school, played ball, and rode his bike with his friends, but he couldn’t express his views on certain subjects without fear of persecution, and the idea of belonging to a free society was always on his mind. After school was dismissed every day, with his backpack and aspirations of a better life in tow, Johnny would go to the bazaar with his father and grandfather to sell rugs. “I always had a passion for rugs and the craftsmanship that went into creating such masterpieces,” he says. Without ever really knowing his family’s business would one day help him achieve the American Dream, Johnny spent years working for his predecessors, as well as other companies in the industry. He ended up in Germany and Canada pursuing professional fulfillment but encountered more setbacks than rewards. In 2005, ultimately seeking the good fortune he knew was available to him in the United States, Johnny moved to Arizona.

“What drew us to Arizona was the 365 days a year of clear and sunny weather, the clean and new city of Scottsdale, and the friendly people that reside in this town,” Johnny says. He quickly discovered a niche in the area rug market and opened PV Rugs that same year. “Our goal is to bring the best possible customer service of any rug business,” Johnny says. “We want to make our customers happy, and that pride and compassion drives us every day.” PV Rugs offers design consultations for custom-made floor coverings, with an emphasis on educating clients about the manufacturing and pricing processes. Once a design has been finalized, details are sent abroad to countries like Persia, India, Pakistan and Turkey, where the product is hand-woven or hand-knotted. Depending on the complexity of a rug’s pattern, color combination, available dyes, how many knots per square inch, and country of origin, fulfilling a custom order can take up to four years. “This is why I don’t think of a rug as a piece of mat you walk on,” Johnny says. “It’s a piece of art.” For a rug without the wait, the shop’s 2,500-square-foot showroom is open daily and displays a beautiful selection of contemporary, Oriental, Persian, Southwest, and transitional tapestries. PV Rugs also provides appraisal; repair and restoration; moth proofing; all-natural cleaning; fabric protection; and staging for model homes, weddings, and other special events. “We wanted to create a convenience for our clients and be their one-stop shop for everything rug related,” Johnny says. Johnny’s wife and two sons are helping accomplish that goal – taking charge of everything from customer interactions to bookkeeping to direct importing – while cultivating the familial business environment Johnny remembers as a kid. Years from now, as his children continue on in the business (with the possibility of additional locations being opened in the future), Johnny’s legacy will remain. at the Farm

I

absolutely love the Christmas season and all the preparations leading up the holy day. For me, there are a few family traditions that I especially enjoy. One of my favorites is decorating the Christmas tree. I specifically wait until evening, play my favorite Christmas Carol’s, light a couple logs in the fireplace, turn down the lights, grab a mug of hot chocolate with a chocolate mint added for flavor (or a glass of my favorite merlot) and start decorating the tree. Over the years, I have acquired a wonderful collection of ornaments, which hold memories of family, friends, vacations and some of my favorite hobbies. This Christmas, I’ll be adding a new tradition to my holiday season by visiting The Farm at South Mountain. There, we will participate in some of the special events planned for the holidays along with enjoying breakfast at the outdoor restaurant, Morning Glory, or a late lunch at The Farm Kitchen.

Heard, benefactor of the Heard Museum, wanted others to become self-sufficient by using the property for farming. Each parcel that was sold included a cow and 50 chickens. There was a parcel of ten acres, located at 32nd and Southern, where 100 pecan trees were planted. For over 40 years the land was owned and cared for by a retired cattleman, Skeeter Coverdale. Each year, Skeeter would harvest 5,000 pounds of pecans. When it got to be too much work, he sold the property to Wayne Smith. Smith brought with him a new vision for the property. He wanted to create a place with gardens, restaurants and markets for people to visit and enjoy. One of his faithful employees, who participated in bringing Smith’s vision to life, was Pat Christofolo. She worked closely with Smith for years and, later, purchased the property in 2012. Christofolo continues to add her creative touches to this charming, rustic destination where visitors can enjoy the farm to table experience

Skeeter’s original cabin is still on the property and used by many brides on their wedding day. It is also available for small events like bridal showers or small birthday celebrations. For daily breakfast and brunch on weekends, you’ll want to grab a table at the Morning Glory Cafe. This outdoor restaurant is nestled back under the pecan trees near the organic gardens and has a great view of The Farm’s daily activities. It’s known for its fresh made muffins and pastries, locally made sausages and seasonal omelets all made with The Farm’s freshest ingredients. I couldn’t resist trying the Farm Monte

for life. I’ll be purchasing a couple of these delicious pies to add to my Christmas festivities. For a gourmet meal you won’t forget, make dinner reservations at Quiessence. This restaurant is located in the original bunkhouse on the property with a private brick oven on the patio. It has a reputation for creating some of the most incredible rustic entrees, which are prepared by Chef Dustin Christofolo. “I really take pride in using as many locally sourced ingredients in Quiessence dishes as possible. I work with local farmers every day to try and get the best product to include in our menu,” states Christofolo. “Using the whole animal, from head to tail, is important for me and it helps me plan creative dishes. I think our customers appreciate the ambiance that we have created with a perfect mix of fine dining and local products.” Strolling the Grounds

There are two shops located on the property. The first is the Botanica, a modern market that offers unique garden, patio and kitchen products from many local vendors. The second is a nursery called Succulentia, where you can purchase rare, exotic cacti and succulents. This unique greenhouse also displays a wonderful collection of cacti and ceramics from around the country. Also on the property, in a small casita, is a healing center called Utopia. Here you can enjoy a healing massage, intuitive reading, energy clearing and take classes on self-awareness, healing movement, dance, yoga, drum making, chi gung and other healing arts. Cristo and it was heavenly. I also sampled the Huevos Rancheros and it was equally delicious. For lunch stop by at The Farm Kitchen, which is The Farm’s original restaurant, open daily serving freshly made sandwiches, organic salads, seasonal soups and freshly made-from-scratch baked goods that can be enjoyed on the large patio or for a picnic under the shade of the pecan trees. I sampled the fresh Kale Salad and it was a burst of wonderful flavors of kale, quinoa, raisins, dried cranberries, pepitas, Feta cheese and poppy seed dressing. Yummy! Holiday Field Trip to Arizona’s Christmas City

W

ith lights wrapped around saguaros and palm trees alike, the holiday season in the desert certainly has a unique feel. But fortunately for those who look for something a bit more traditional that might put

even Ebenezer Scrooge in the spirit, Prescott is just a short 90-minute drive away. Why Prescott? The quiet mountain town situated at an elevation right at one mile high comes alive during December as the community of 40,000 unites for a calendar of events and festivities that last throughout the end of the year. While other cities might offer more bells and whistles, Prescott becomes a genuine wonderland that has a tendency to take visitors back to days gone by. So much so that in 1989, then-Governor Rose Mofford made it official by issuing an official proclamation that declared Prescott “Arizona’s Christmas City.”“I’m not really sure how it came to be,” explains David Maurer, CEO of the Prescott Chamber of Commerce. “But over the years this community has just gone all out for the Christmas season. There are more activities, special events, concerts, plays- you name it, and you can pretty much find something amazing throughout the entire month.”

Nothing symbolizes the arrival of the holidays in Prescott quite like the lighting of the Courthouse held on the first Saturday of December. This year will mark the 60th year of the tradition, which actually begins early in the day with festive parade, which weaves its way into town and around Prescott’s Courthouse Plaza. As the parade comes to an end and the sun begins to set, the season’s first carols are sung by children’s choirs on the steps of the courthouse, which leads into a presentation before the city flips the switch on nearly one million lights which illuminate the building as well as over 100 trees that surround it throughout the plaza. Perhaps Prescott’s signature holiday event is held the Friday following the courthouse lighting -- the Acker Musical Showcase. More than 100 of downtown Prescott’s shops, galleries, and boutiques team up with local musicians who donate their time and talents for a unique night of shopping and music. “Acker Night” continued >

Scottsdale’s Best BBQ & Car Wash is crucial for the success of music in Yavapai County throughout the year, however, as proceeds from the evening help to provide scholarships for music lessons, instruments, and local youth performing arts programs. The lobby of the Prescott Resort and Conference Center is transformed into the “World’s Largest Gingerbread Village” shortly after Thanksgiving. Budding confection real-estate moguls pay for lots on which to construct their delicious masterpieces, with proceeds going to help the Yavapai Big Brothers Big Sisters. The village is free to visit, however, and is open 24 hours a day until it meets the candy wrecking ball just after the New Year. Also beginning just after Thanksgiving and throughout December is Wildlights and Animal Sights, hosted by the Heritage Park Zoological Sanctuary. Each Friday and Saturday evening the Sanctuary will reopen at 6 p.m. and welcome visitors to sip on hot chocolate as they stroll the grounds and enjoy the lighting displays throughout the park. And what would the holiday season be without a visit from Santa? He usually makes an appearance at the parade just prior to the Courthouse Christmas Lighting, and will usually stop by the Heritage Park Zoological Sanctuary at least once to visit the animals, including other appearances at the many other events up until his big night. “When people ask me why Prescott is ‘Arizona’s Christmas City,’ I always tell them the same thing,” summarizes David Maurer. “It is not that we have the most or even the brightest Christmas lights or anything like that. It’s that we present that small-town feel that reminds people of what the holidays were like when they grew up. E

very person has a story, and sometimes we have the privilege of our stories intersecting with someone else’s life in a meaningful way. After meeting a lady at a church event and staying in contact with her, I began to sense a need in her life. Christmas was approaching, and she had nothing to give her two daughters for Christmas. She was a schoolteacher and going through a significant personal challenge. As I became more aware of the situation, I began to wonder how I could participate. At that time, I couldn’t just buy multiple Christmas gifts for the whole family. So, instead of doing nothing, it made sense to find other family members who could link arms with me to bless someone at Christmas. As we went shopping and selected gifts for the little girls, it was so exciting. When the mom was given the gifts, she was so overwhelmed with emotion that she almost couldn’t accept them. We reminded her that someday she would be in a place where she could give something to someone else. That moment would be her opportunity to participate in the bigger story of giving. The ripple effect of giving usually reaches farther than we might expect. Although the experience seemed small in the scope of life, participating in a bigger story made the meaning of Christmas come to life in a new way. When we think about giving in our lives, we can think we don’t have anything to give or that we want to save our giving for a big moment. We like to give to people when we know that we are going to get something in return. We want a give and take relationship with the people in our lives. However, the power of giving is most realized in a moment or experience when no one can give you anything in return. Sometimes we want giving to be glamorous, where we receive accolades and recognition. Yet, giving is not to build our ego or give us more authority or position. Being generous to others changes our heart, mindset, and

perspective on life. Instead of trying to figure out how we can accumulate more for ourselves, we begin seeing ourselves as conduits of the blessings given to us. The truth that small acts of kindness can change the world sound less like a greeting card when we actually participate in impacting someone’s life. While giving can be done in a large capacity, incorporating a spirit of giving into our everyday lives begins to change our perspective and the way we look at the world. With an increased awareness of the needs surrounding us, we can be part of the answer. Generosity starts in the heart not necessarily with our hand extended. But, the act of being generous ushers us into knowing the fulfillment that we might not experience any other way. As you look around at people in your life or community, what do you have in your hand that you could give? Maybe you will decide to buy Christmas gifts for a family in need with whom your children attend school or help a family member who would be blessed by your generosity. While good intentions are a place to start, the act of getting involved in someone else’s story changes our story. It turns our mindset from getting to giving. While Christmas is a wonderful time to give, may you see the needs around you every day and may a spirit of giving guide you to be generous, even to those who could never give you anything in return.
