A LEGACY OF CONFIDENCE HERE IN WEST PALM BEACH

In West Palm Beach, where vibrant community spirit meets a deep sense of giving, Dr. Scott McCranels stands out as a true champion of both. As an orthodontist, he has spent decades shaping smiles—and as a philanthropist, he has brightened futures through his steadfast dedication to Smiles Change Lives (SCL).

For nearly 25 years, Dr. McCranels has been at the forefront of SCL, a nonprofit organization providing orthodontic care to children from underserved families. He was instrumental in anchoring the program in Palm Beach when it was still known as the Virginia Brown Community Orthodontic Partnership. His leadership, both as a participating doctor and a board member, inspired peers in the local orthodontic community to join the cause. Today, the Palm Beach program remains a model for SCL nationwide, demonstrating the profound impact of local commitment.

Each year, Dr. McCranels usually takes on three SCL cases, donating $6,000 to $7,000 worth of care per patient over an average of two years. These children—some as young as 10—often face significant challenges, from moderate

to severe dental issues, which can greatly affect their confidence and quality of life. Families served by SCL face financial barriers that prevent them from accessing necessary orthodontic care. By alleviating this burden, the program restores not only smiles but also a sense of hope and possibility for the future.

“Dr. McCranels’ early leadership in Palm Beach not only changed lives locally but also demonstrated what’s possible when a community rallies together,” says Alexis Barclay, Vice President of Smiles Change Lives. “His work laid the groundwork for Smiles Change Lives to expand into other cities and states, ultimately achieving the vision of helping kids nationwide.”

For Dr. McCranels, the results are deeply personal and rewarding. “It’s incredible to see how a confident smile transforms a child’s personality,” he says. “Especially in today’s world of social media, where bullying can be relentless and everyone has a camera in their hand.”

Tammy works as a dental hygienist. The sense of family connection and community is woven into the practice’s very foundation, making it more than just a business—it’s a cornerstone of the West Palm Beach community.

Before he followed his father into orthodontics, Dr. McCranels spent 14 years as a professional surfer, traveling the world and earning the funds to pay for his education. He even placed 12th in the ASP World Tour in the mid-1980s. During this time, he gained a deep appreciation for discipline, resilience, and adaptability, qualities that continue to shape his professional and philanthropic endeavors.

Dr. McCranels also points out that the psychological effects of having a healthy smile go far beyond childhood. These metamorphoses cascade into adulthood, often boosting academic and professional opportunities.

The legacy of giving runs deep in the McCranels family. His parents founded the family orthodontic practice in 1967 near Clematis Street, making it the longest-running orthodontic practice in Palm Beach County. His mother, Joann, now 86, still serves as the bookkeeper, while his sister

But it is Dr. McCranels’ work with Smiles Change Lives that best exemplifies how passion can be channeled into meaningful action. The impact of his work creates a ripple effect, touching lives far beyond what even he can see. A confident child may grow into an accomplished adult, their opportunities expanded by the gift of self-esteem. Attorney at Slaw: “Beer Can” Chicken and Asparagus

THIS DISH IS CRIMINALLY DELICIOUS—NO OBJECTIONS ALLOWED!

Welcome to the inaugural edition of Attorney-at-Slaw, my attempt to showcase some of the more fun, crowd pleasing recipes I have worked up experimenting on one of my favorite toys, the Big Green Egg. Despite my protests, I have been told that this recipe must be health and wellness focused. So, while future editions may have more pork and beef than you ever thought possible, this inaugural edition will focus on the healthier side of the grill.

CHICKEN: EASY TO MAKE, HARD TO GET RIGHT

Chicken, the classic “white meat,” is beloved for being lean, versatile, and best of all, delicious. But have you ever wondered: Do all those other foods taste like chicken, or does chicken just taste like everything?

For all its simplicity, chicken can be tricky. Done well, it’s juicy and flavorful. Done wrong, it’s dry and forgettable. This recipe, one of my favorites, uses simple techniques to ensure your chicken is tender, healthy, and crowd-worthy. While the original beer can chicken recipe stuffed, yep, you guessed it, a can of beer into the chicken’s cavity, we’ll be a little more civilized here.

INGREDIENTS:

• 1 whole chicken

• Olive oil

• Rub of choice (store-bought or DIY — see below)

• 1 cup of liquid (beer, soda, or broth)

• 1 bunch of asparagus

DIY RUB (OPTIONAL):

• 1 tbsp celery flakes

• 1 tbsp salt

• 1 tbsp paprika

• 1 tbsp garlic powder

• 1 tbsp onion powder

• 1 tbsp ground thyme

• 2 tsp dried sage

• 1½ tsp black pepper

• 1½ tsp dried rosemary

DIRECTIONS:

THE CHICKEN

Prep the Chicken: Pat the chicken dry with paper towels and coat it lightly with olive oil. Generously apply the rub, covering all sides. Refrigerate for at least 30 minutes, but no more than 4 hours.

Prepare the Oven or Grill:

• Oven Method: Preheat to 375°F.

• Grill Method: Preheat your grill to 375°F using indirect heat. Add wood chips for a smoky flavor if desired.

3. Assemble the Roaster: Fill a vertical chicken roaster or sturdy pan with your liquid of choice (beer, soda, or broth). Position the chicken upright on the roaster.

4. Cook the Chicken: Place the roaster on a baking sheet (oven) or directly on the grill grate (grill). Cook the chicken for 1-1½ hours, or until the thickest part of the breast reaches 160°F.

1. Rest the Chicken: Remove the chicken from the roaster and let it rest for at least 10 minutes before carving to lock in the juices.

THE ASPARAGUS

1. Prep the Asparagus: Toss asparagus spears with olive oil and season with either the same rub or a simple mix of salt, pepper, and garlic powder.

2. Cook:

• Oven Method: Increase oven temperature to 425°F. Roast asparagus on a baking sheet for 8-10 minutes.

THE SECRET TO SUCCESS

The liquid in the roaster keeps the chicken moist while infusing it with subtle flavor. I recommend lighter ales or soda like Dr. Pepper—avoid heavy beers like stouts or IPAs.

Let the chicken come to room temperature before cooking. Cold meat takes longer to cook, which risks drying it out. Allowing it to warm ensures even cooking and juicier results. Don’t skip the resting stage—it redistributes the juices, ensuring every bite is flavorful.

Carrie Rubin, founder of Perfect Advocate, has dedicated her career to ensuring seniors, particularly those with Alzheimer’s and dementia, are met with the attention, respect, and support essential to their well-being. For Carrie, advocacy is more than a profession; it’s a lifelong passion. “As a child, I always respected our seniors and enjoyed being around my elderly relatives and neighbors,” she recalls. Over time, this admiration grew into a commitment to help vulnerable adults navigate a healthcare system that often leaves them feeling isolated and overwhelmed. “Seeing their fear and isolation saddened me, and I felt compelled to step in and ensure seniors receive the dignity and care they deserve.”

Carrie believes successful advocacy is rooted in ethics, communication, and problem-solving. “We must always do what is true and right,” she insists. Her team’s creative problem-solving ensures each client’s unique needs are met with compassion. “Solutions don’t come easily, but we find ways to keep our clients safe while respecting their independence.”

One powerful example involved Mrs. P., who felt pressured by her daughter to move into a retirement community. Mentally sharp and deeply attached to her home, Mrs. P. confided in Carrie about her desire to stay where she felt most comfortable. Carrie helped her navigate a compassionate conversation with her daughter, empowering her to assert her wishes while preserving their bond. In the end, Mrs. P. spent her final days peacefully at home, surrounded by love. “Her voice mattered most,” Carrie says.

A HOLISTIC APPROACH TO WELLNESS

Perfect Advocate focuses on emotional and mental well-being alongside physical health. From caregivers engaging clients in arts and crafts to introducing therapies like chair yoga, Carrie ensures every aspect of her clients’ lives is considered. “Each client is unique, and we tailor our care to reflect that,” she explains. Her team also collaborates with specialists to address mental health needs and provide a comprehensive approach.

LESSONS FROM THE PANDEMIC

The COVID-19 pandemic underscored the importance of patient advocacy. Telehealth became a valuable tool, particularly for seniors with mobility limitations. However,

Carrie cautions against over-reliance on virtual care. “Telehealth is a tool, not a crutch,” she notes. The pandemic highlighted the need for advocates to bridge communication gaps between care teams. “Coordination is key, and patient-centered care with a strong team yields the best results.”

LOOKING AHEAD WITH GRATITUDE

As a new year begins, Carrie reflects on her journey with gratitude. She values the trust her clients and their families place in her team and draws inspiration from her staff’s dedication. “I’m thankful for the amazing people I’ve met—our clients, their families, healthcare professionals, and my incredible staff,” she shares.

As she looks ahead, Carrie embodies the wisdom of Maya Angelou: “People will forget what you said, people will forget what you did, but people will never forget how you made them feel.” For Carrie, advocacy is about ensuring every client feels valued, respected, and heard—a compelling reminder of the impact one person can make.

MATCHA DO ABOUT NOTHING

SERVES

1 person

Ingredients:

• 1½ oz. matcha-infused gin or vodka

• ½ oz. dry vermouth

• ½ oz. rose syrup

• 1 oz. pistachio milk

Directions:

Combine all ingredients in a shaker filled with ice. Shake vigorously until well chilled, then strain into a chilled coupe glass. Its vibrant green hue and silky texture are sure to impress.

Matcha-Infused Gin or Vodka

Makes 1 cup

Add an earthy depth to your spirits with matcha infusion. Combine 1 Tbsp. of matcha tea powder with 1 cup of gin or vodka, stirring for 5 minutes at room temperature until fully dissolved. The vibrant green infusion is a striking addition to your cocktail repertoire.

Rose Syrup

Makes 1 cup

A fragrant and versatile syrup that elevates drinks and desserts with its subtle floral sweetness.

• ¼ cup culinary-grade dried rose buds

• 1 cup honey

• 1 cup water

Combine all ingredients in a saucepan over medium-high heat. Heat gently, stirring until the honey is fully dissolved. Avoid boiling to preserve the delicate floral notes. Let the mixture steep for 15 minutes off the heat, then strain into a clean jar. Store in the refrigerator for up to 2 weeks. Perfect for cocktails, teas, or even drizzling over desserts.

Ingredients:

• ½ oz. Sakura Syrup

• ½ oz. lime juice

• ½ oz. yuzu juice

• 2 oz. shochu

• 4 oz. ginger beer

Sakura Syrup Makes 1 cup

The essence of cherry blossoms is captured in this luxurious syrup, a sweet and fragrant elixir that enhances cocktails, desserts, or breakfast treats alike.

• ¼ cup cherry blossom tea

• 1 cup boiling water

• 1 cup coconut sugar

Steep the tea in boiling water for 15 minutes to create a rich and fragrant infusion. Combine the infusion with coconut sugar in a pan, heating gently while stirring to dissolve the sugar completely. Once it comes to a boil, remove from heat and strain into a glass container with a sealable lid. Store the syrup in the refrigerator for up to 2 weeks.

Directions:

To prepare, combine all the ingredients in a copper mug filled with ice. The copper mug not only keeps the drink refreshingly cold but also adds a touch of traditional charm. Garnish with a sprig of fresh mint, which adds a bright, aromatic finish to this stunning cocktail.
