ith the New Year upon us, most of us turn our thoughts to resolutions and goals for the months ahead. A majority of these goals have to do with health and fitness. However, most of us struggle with the question “What does it actually mean to be healthy?”

Each year it seems as if that question is becoming harder and harder to answer, with a seemingly endless array of new diets popping up—Paleo, gluten-free, dairy-free and juicing are a few that come to mind—making it difficult to decide what foods are actually good for you and what you should avoid eating. Not to mention, all the talk about how to exercise to loose weight as quickly as possible. All that information can be pretty confusing and overwhelming while trying to navigate your personal health. To begin, the Merriam-Webster Dictionary defines health as “the condition of being sound in body, mind, or spirit; especially freedom from physical disease or pain.” I really like this definition because it establishes the connection between body, mind and spirit, something that is oftentimes overlooked. For example, if you eat right (yes, it is okay to indulge sometimes) and workout you will have more focus and energy to do the things you love, which, in turn, will make you feel more satisfied and fulfilled as a person. To me, that is what health is. Of course not everyone is the same. For some, eating three hearty meals a day and lightly working out for 30 minutes makes all the difference, while others prefer to eat six small meals a day and do a longer, more rigorous workout to feel their best. It all depends on what works best for you. I hope our “Health and Fitness” issue offers some guidance with articles on exploring Arizona’s national parks, a famed Phoenix healthy eatery and Amy Van Dyken-Rouen’s tremendous story about overcoming fitness obstacles.

hen Phoenix native Mike Pendergraft began working as a valet at local Valley restaurants in high school, he never thought that four decades later he would still be in the business. However, after finding early success and eventually climbing into a management position, he had a hunch that this was an industry he could make an impact on for years to come. In 1980, with the Phoenix Country Club as his first client, Pendergraft did just that. Today, the same kid who once parked cars for some extra spending money as a teenager is now the President and CEO of the company he founded just years later, American Valet. “We offer our staff the opportunity to work with the public in an attempt to 14

Having grown to more than 80 locations across both Arizona and New Mexico, American Valet has a team of over 600 that provides professional parking and transportation services for a diverse spectrum of business and private clients. Hospitality and events were a huge focus back in the 1980s when American Valet first hit the scene, but the industry has shifted dramatically over the last 20 years. As his company needed to adapt in an effort to survive, Pendergraft sought opportunities in healthcare, hotels and casinos, as well as shuttle and charter services.
“As the hospitals got bigger, parking naturally became an issue and most of the time people who need to go to the hospital are not necessarily in the frame of mind to be driving around looking for a parking space,” says Pendergraft. “The same thing with hotels—they realized they could have us run their valet, do it better because that is what we specialize in, and trust us due to our high level of service.” American Valet is able to maintain such a high level of client service and interaction because of the the culture that Pendergraft and his team have cultivated and maintained over the years. “We simply look for people with a passion to serve other people, because that really is all we do,” says Pendergraft, talking about what he feels makes an ideal candidate for his team.

A
13-year-old girl traded her dreams of being a doctor for motherhood. Everyone told her she couldn’t do both, and for a while she believed them. Two-years later, at 15, something clicked in her heart and mind when she attended the Girls Rule Foundation’s (GRF) Brilliant, Beautiful and Bold (BBB) event with her basketball team. “After the workshop she said, ‘I believed other people when they said that I couldn’t be a doctor and a mother, but I’m leaving this workshop committed to being a doctor. I’m not going to believe anyone else; I’m going to do it,’” says Dena Patton, co-founder and executive director of GRF. The purpose of GRF is to help girls dream big and build bright futures. The Foundation empowers them to lead healthy, successful lives, while encouraging higher education and leadership. It also helps girls find their voice and recognize their worth, accomplishing this through four different programs, most of which are offered at no cost. The BBB event is its signature program, and most popular. GRF lays out a pink carpet and puts up a photo booth so girls can snap photos 16

while holding a sign declaring ‘I AM Brilliant, Beautiful and Bold.’ It also offers a 60-minute inspirational workshop that empowers girls to recognize their brilliance and embrace their talents. Then GRF gifts them with a ‘wear and share bracelet’ to commemorate the event. BIG DREAMS
Girls Rule Foundation is a young program, founded in 2008. It has spent some of those years building a strong infrastructure, so it will be in the best position to fulfill its goals. While it has 100 volunteers, 15 strong women on the board of directors and two advisory boards (one of which is comprised of teens), there are only three women who conduct the programs. However, that’s about to change as GRF moves forward with its first leadership certification program. “Our goal for 2016 is to reach 12,668 girls. The biggest way we are going to accomplish this is through our new certification program. If we have 20 or 30 people get certified, we can do it,” says Patton.

This year GRF served nearly 1,200 girls, but could have served many more with the right leaders in place. Patton leads by example, with big dreams of her own, and is confident that GRF can reach its goal. Certified leaders will be able to conduct the signature BBB program locally or nationally. “This is a way that people can give back and get involved. A lot of people love our work and want to work with the girls, but unless they worked with one of our three facilitators we haven’t had a way to do that until now,” says Patton. The first training will be held on February 20, 2016. People can apply online for the free five-hour training. They’ll learn GRF’s four-point curriculum and how to conduct the BBB program. Certification requirements include booking a program within 30 days, committing to lead four workshops a year and attending either the GRF Summer Camp or Annual Mother Daughter Shine Brightly Summit in the fall. NO PERMISSION NEEDED
“No one gave me permission to change the world. In fact, I got the opposite. So many people need to stop thinking ‘who am I to make a difference.’ We all might have something that moves our heart, from animal abuse to domestic violence, mine is girls’ empowerment and leadership,” says Patton. While no one gave Patton permission to change the world, her personal journey as an award-winning entrepreneur, professional speaker and business coach, as well as her years of training in self-development and leadership, set her up for the job. “The change I want to see in the world is leaders helping girls realize their dreams and how beautiful, brilliant and bold they are, so they become our next generation of strong leaders.”

Hard to Believe It’s Healthy

I
always find it fascinating when I hear the stories behind how businesses and products got their start. Jewels Bakery and Café has one of those stories. The seed for the business was unknowingly planted in 2009, when Julie Moreno’s nine-year-old daughter, Sophia, was diagnosed with Celiac disease. Moreno, a wife, mother of six children and first grade teacher, soon found herself in a situation where she either had to prepare separate meals for her family or get creative with healthy recipes that all would enjoy. Through trial and error, she developed many delicious recipes her family loved, recipes her children couldn’t even tell were made with ingredients that were good for them. Moreno has always enjoyed cooking and baking; it's something she has done for as long as she can remember, having grown up in a family involved in the food industry. Her grandfather owned a tortilla factory, which was later converted it into a café, and her grandmother and mother baked and decorated cakes.

Moreno began by baking breads and other baked goods, then selling them at local farmers’ markets. She did this for two years, then in December, 2013 she opened Jewels Bakery and Café. Everything served at Jewels is made daily from scratch using Moreno’s recipes. All the ingredients are fresh and locally sourced. "We serve natural, scratch-made meals,” says Moreno. “It’s feel good food that's healthy for you, and that the whole family can enjoy." Regardless of any dietary restrictions, Moreno prepares her meals and baked goods using gluten-free recipes. Her recipes are also egg and dairy-free. She uses locally sourced products, including hormone, antibiotic and cage free chicken; hormone, antibiotic and nitrate free meats and organic produce when possible. Cartel coffee, from Tempe, is roasted in-house in small batches that produce super fresh organic beans. “Everyone deserves to eat a fresh, healthy meal, regardless of their dietary restrictions,” says Moreno. GREAT SELECTIONS
Breakfast is served all day, and once you’ve tasted some of the items offered, you’ll understand why customers insist on it being served that way. Some popular choices include the omelet chorizo, chicken and waffles and biscuits and gravy. I really enjoyed the chicken and waffles, which is served with a wonderfully sweet honey sauce. Additional brunch selections are available on weekends. 18

That question became reality for six-time Olympic gold medalist Amy Van Dyken-Rouen when she severed her spinal cord in an ATV accident, leaving her paralyzed. Since then, Van Dyken-Rouen has made amazing strides, both physically and personally, finding joy and purpose in things she would have never expected before. FOR THE LOVE OF SWIMMING
T
here are hardly words to describe the pure joy and sense of satisfaction one feels when they are doing something they truly love. We all thrive off of doing what makes us happiest, whether it be running outside, cooking an elaborate meal, traveling to foreign countries, or simply reading a good book. But what happens when it’s all taken away? 20

It was swimming that brought Van Dyken-Rouen true happiness, and not because she had a natural gift or because her abilities made her a star. A severe asthmatic, Van Dyken-Rouen had a difficult time growing up with her condition until a doctor suggested she try swimming to help build her lung capacity. She joined her first swim team at the age of six. “The thing I love most about swimming is that I was not good at it right away,” says Van Dyken-Rouen. “It took me six years to finish one length of the pool, so I was awful, but I loved it so much that I kept going back to it.” Van Dyken-Rouen was never one to give up and always aimed for the stars. For years, she worked tirelessly to overcome her asthma and truly excel at the sport that had taught her about friendship, teamwork and her own capability to put mind over matter. THE ROAD TO THE OLYMPICS
Many swim practices later, Van Dyken-Rouen found herself on the road to the 1996 Olympics; a long and bumpy one due to her asthma. In order for her to be allowed to participate in the Olympics,
and remain healthy and on top of her game, she had to spend months experimenting with different asthma medications that were within the legal limits set forth by the Olympic Committee. “It’s funny, a lot of people ask me what’s the one thing that I would change about myself, and I never say my asthma. It’s one of those things where, yeah it absolutely stunk, but it made me who I am and it made me persevere,” says Van-Dyken Rouen. Her perseverance certainly paid off at the Olympics. She competed in five events, swimming a total of ten times over seven days, and took home an outstanding four gold medals. “When you get that medal around your neck and hear the national anthem being played for you and see all the cameras surrounding you, you know there are tons of people celebrating our country because of something you just did. And not only that, but accomplishing a lifelong goal; it is such a surreal feeling,” says Van Dyken-Rouen. The thrill of competing at her highest level and the pure euphoria and sense of accomplishment she felt knowing she had reached a dream was beyond comparison. It certainly seemed like the sky was the limit. A TRAUMATIC TURN
Things completely changed for Van Dyken-Rouen in June, 2014 when she was in a severe ATV accident that severed her spinal cord, leaving her paralyzed. Although her life would never
be the same, Van Dyken-Rouen never gave up on the fact that she would one day be able to walk again and a cure for spinal cord injuries would be found. So she gathered her strength and began a grueling physical therapy regimen to help her regain sensation and movement in her legs. “I want to break all the rules. I want to give people hope that if you continue to work great things can happen,” says Van-Dyken Rouen. With each day, it seems like she is getting one step closer to that goal, recently trading in the exoskeleton for a pair of braces that allow her to walk using her own power. “The first 50 steps I took, I cried so much, I was sweating so much and cussing at everyone, but I did it, and that was the biggest accomplishment, just taking those first steps.” EVERY NEW DAY
That was just the beginning. Van-Dyken Rouen started her own foundation, Amy’s Army, which raises funds to help people with various spinal cord injuries get the necessary medical equipment they either can’t afford or insurance doesn’t cover. She has recently taken on Arizona’s continuing drought and dropping water reservoir issues by storm too, speaking at news conferences to promote the use of rooftop solar power. Van-Dyken Rouen is also a tremendous motivational speaker, sharing her story of loss, struggle and hope with the entire nation. Her advice for anyone struggling to overcome an obstacle: “If you have a goal, make sure you continue working at it. There are going to be days where you will take ginormous steps forward and you’ll reach that goal, and that’s great, but there will also be days when you take steps backwards, and that’s when you learn the most about yourself.” That is the spirit of a true champion. POWER OF 30 MINUTES

A
few months after I welcomed my third child into the world, I decided it was time to get back into shape. I had gained a whopping 40 pounds during my pregnancy, which seems to be the norm for my poor five-foot two-inch frame. I also worked full-time. Needless to say, by month seven or eight, the idea of taking a walk around the block after dinner was about as appealing as a root canal. Normally I’m active, but I’ve never been great at sticking to a workout routine. I had a long list of excuses I could share, but ultimately it boiled down to my top two. Number one was time. Carving time into my hectic schedule seemed impossible. The number two excuse had to do with expectations. Oftentimes, I would get frustrated because I couldn’t live up to my own expectations. Track record shows that if I couldn’t lose the weight quickly, my brain would decide the program must be faulty. Secondly, if I couldn’t complete the work out I expected to for the day, I would feel like it was pointless. After the birth of number three, I became a stay-at-home mom for the first time. I decided my top excuses were null and void with my new life and that I would begin anew. I’m a busy mom, but I decided no more excuses! I perused the web for a fun exercise program. I found the perfect one that involved dance, a coach with a fabulous accent, fun music and the promise of a terrific bootie. What more could a gal ask for? In addition to my new exercise program, I decided I would have a better attitude and reset my personal expectations. I used to find it discouraging when I needed to switch gears before I was ready, or stop something that I told myself I would complete. In order to avoid this personality quirk, I readjusted my expectations. I assured 34

myself that I would be okay with 10 or 15 minutes of exercise, even if I planned for 30, because it was better than none at all. My plan was 30 minutes of exercise a day, four days a week. I could always add more days or time, but I would be satisfied with 30/4. A few months later, I was in better shape than I had been in years. I felt terrific and my Brazilian dance moves had improved tremendously! There were many days when my 30 minutes were cut short and weeks when I worked out less than planned. I was okay with that because I set realistic expectations and kept plugging along no matter what. My new plan worked! Then my wheels started turning. What else could I accomplish in 30 minutes a day? I never tried writing a novel. I thought that could be fun. Voilà! Three months later, I’m typing the final pages of my first novel, surprising myself with the accomplishment. What about learning Spanish? Voilà! Three months later, I speak perfect Spanish. Just teasing! My 30 minute breaks are limited these days and I’m now editing the novel I wrote, but I do spend some time on my Spanish almost daily and my language skills are improving. I challenge you to find 30 minutes in your day and make something wonderful happen in your life this New Year. Look your excuses in the eye and tell them to take a hike. Come up with a plan that works for you, set realistic expectations so you don’t get discouraged and keep plugging along slow and steady. You will get there if you persevere.
