As males, we all possess different qualities and traits that define our individuality. Yet at the same time there are vast commonalities that characterize us as men. In this issue, we highlight just a handful of local, man-friendly places where we can experience some of the “guy” things that we inherently enjoy. The opportunity for manly endeavors are abundant and endless in our great community, whether actively playing a round of golf at one of the many magnificent courses in the area, reminiscing at a car show amidst hundreds of classic automobiles and motorcycles, hiking on one of the nearby trails, enjoying succulent, lip smackin’ barbecue or kicking back at a local sports bar or brewery with a cold beverage while watching the game and engaging in camaraderie.

A

wonderful concept in dining brings comfort food with a gourmet twist to the Valley. Chef and partner, Harold Marmulstein, along with Guy and Larry Restaurants LLC, have put together this winning combination. Chef Harold has a great deal to offer. He has been around food all his life starting at his father’s wholesale and retail bakery in upstate New York. After graduating from high school, he went to the Culinary Institute of America at Hyde Park. He used his culinary talent at a number of popular establishments on the east coast as well as running his own restaurant, Dick & Harry’s, with his

brother for 12 years. He was the head chef for Guy & Larry at the Roaring Fork before they decided to combine talents and open the first Salty Sow in Austin, Texas, in May 2010. The Phoenix location opened in March 2013. With over 30 years of experience, Chef Harold’s incredible passion keeps him busy as he oversees the kitchen at both locations and creates unique recipes for the Special Board each evening. “I’m proud of what we do. We serve a great product and provide great service at a great value,” explains Chef Harold. AN AMERICAN GASTROPUB EXPERIENCE

I immediately liked the décor when I entered the restaurant. It has a casual, upscale atmosphere with a huge bar, wooden tables and booths, an extra long table that has an expansive view of the kitchen and a generous size patio. Combined, the seating is 297. There are two TV’s located in the bar area and two out on the patio which are perfect to catch the game highlights. I found my visit to be a unique journey into different styles of cooking. Many brought me back to childhood memories where meals were prepared over a period of time. My mom would simmer her pasta sauce on the stove for hours. The spare ribs she’d used to f lavor the sauce would be so tender they’d fall off the bone. She’d also make deviled eggs and pot roast with potatoes. Who has time to cook that way these days, Chef Harold does! He does every day and we get to enjoy his mouth-watering dishes. For starters, there’s the Truff le Deviled Eggs made with truff le oil and sprinkled with bacon bits. They’re creamy and tasty. The Duck Fat Fries are incredible, not greasy just crispy and delicious. Chef Harold’s attention to detail makes these fries outstanding. First, they’re blanched in hot water for 3 ½ to 4 ½ minutes. Then they’re fried at 275 degrees for two minutes in duck fat. And, just before serving, they are cooked at 350 degrees for another minute or two. Served with a 110-minute egg and a cold béarnaise dipping sauce, you’ll definitely not be able to eat just one. I loved, loved, loved them. I equally enjoyed the Brussels Sprout Caesar Salad and the Brussels Sprout Leaves vegetable dish. Now, most people shrug their nose at Brussels sprouts. Not normally a fan myself, I naturally had to try them for the article, but to finish them because they are so darn good is an enormous compliment. I’m dreaming about these f lavorful dishes, along with the Pork Belly entrée that is so tender and so good, you’ll be dreaming about them, too. Also on the menu is an Asiago-Crusted Halibut; Hanger Steak; Slow-Cooked Beef Shoulder; Rotisserie Roasted Pork; Rainbow Trout Almondine; and Breaded Chicken Thighs. Plus, there are three other salads - a Farm Salad, Roasted Organic Beets and a PV Salad. If you are in the mood for a burger you can choose from an 8 oz. cheeseburger, lamb burger and a French dip rare that people rave about. The homemade desserts are definitely worth saving

I sampled the featured Mini Cocktail Sampler Board which featured the Cactus Cooler, the Margareta Cooler, the Peachy Irishman and the Blanche. They were all very good. A wide selection of local beers and wines are also available. Farmto-table fresh everyday and nothing frozen, a lot of prep time is required to make these delicious recipes each day. So, whether you stop for happy hour with friends or plan to enjoy the culinary journey of slow cooking, you’ll definitely see why the Salty Sow has made their mark in the neighborhood.

A “Pro-State” of Mind Taking a Stand Against Prostate Cancer AUTHOR DANIELLE ACCOVELLI | PHOTOGRAPHY JENNIFER STEWART

P

resident and CEO of the Arizona Diamondbacks Derrick Hall made a name for himself in baseball for his pioneering spirit, driving determination and always-positive attitude. However, on the morning of September 17, 2011, Hall received the devastating news that he had prostate cancer. After a long and tearful conversation with his wife, Hall made the bold decision to go public with the news. A naturally positive person, Hall was determined that he could and would beat prostate cancer, and with the help and support of his family, he endured surgery and treatment all with unwavering positivity. Along the way, Hall openly shared his journey and the challenges that he faced, encouraging all men to get tested for prostate cancer and viewing his battle as an opportunity to be a resource for men. With this in mind, the Derrick Hall ProState Foundation was founded as an open platform where men could go to and get the tough questions answered. Today, the Foundation offers a vast array of resources and support for both men and their families with the vision of driving awareness, educating men and encouraging them to get tested. Here, Derrick Hall shares his inspirations and plans for the Pro-State Foundation.

Just the name in itself -- rather than "prostate" to change it to “pro-state” with a hyphen, and to make it a “pro-state of mind,” -- because I think every patient, every victim needs to make sure he, or she, when it comes to cancer, is as positive as possible to get through it. It’s amazing the recovery time, the ability for the body to recover when the mind is going through positive thoughts, and so I’m just trying to remind men, especially those going through prostate cancer, to have a very “pro-state of mind,” and that was really the vision behind the name.

Personally, that’s just who I am. I’m a very positive person. I love life, I live life to the fullest; I think everybody needs to, and cancer can create such a dark cloud over our heads that we have to find a way

to turn it into a positive. It’s all about overcoming diversity and getting through it knowing that there are others with you and that you’re not alone, so naturally you want to stay as positive as can be for them as well. I admire those who fight any disease, and in particular cancer, with a strong attitude and a positive mindset and tend to believe that survival is a little longer, and in some cases completely defeated, because of that positive will and that positive attitude. I highly encourage people to stay as positive as can be and if our name and if our foundation provides just a glimmer of that, and a bit of hope and light, then its extremely rewarding for me.


HOW HAS SURVIVING PROSTATE CANCER IMPACTED YOUR OUTLOOK?

It definitely changed it. I think at first there was definite depression and fear, you start thinking about your own mortality, but then you quickly turn it around. There’s something extremely powerful in saying that you’re a cancer survivor, and so that’s the way I was looking at it. I’m always going to have it in the back of my mind, there’s always going to be that anxiety because I still need to be tested and there’s always that fear that it could come back again. But then you can’t control that, and things that you can’t control you shouldn’t let lead your life, so I just keep thinking about all

the positives—having beat it—and I continue to believe, and I always will.

I always tell people that

f the idea of longer, warmer days has you reaching for the tongs, it’s time to get your grilling game on before the season is in full swing. Serving family and friends the most mouth-watering grilled entrees with ease requires a little know-how and a few crowd-pleasing recipes. From versatile chicken to hearty ribs to tender seafood, it’s never been more fun to incorporate new flavors into grilled cuisine. For the best results on the grill, keep these tips in mind: • A grill is not an oven, so don’t walk away from it when it’s on. Organize what you’ll need ahead of time; no running back and forth. • Always scrape hot grill grates clean with a wire brush so food will release more easily. Before cooking, try using tongs to dip paper towels lightly into oil and swipe over the grates. • If the meat or skin sticks, it’s not ready to be turned. Let it sit for another minute or two. • Try chicken thighs, which have a deeper, richer flavor than breast meat. • The pork tenderloin can withstand the dry heat of the grill and stay moist. • Salmon, tuna and swordfish steaks grill well because they are thick and crumble less than other types of fish. • A safe inside temperature for ground beef is 160°F; medium steaks is 140°F. Heat poultry to 165°F and whole cuts like breasts to 170°F. Medium pork should be 150°F. Seafood should be 145°F. • For maximum flavor and juiciness, let meat rest 5-10 minutes before cutting or serving. Another tasty grilling tip is to add flavor with sauce. Servings: 4 For up to 2 pounds of chicken 1/2 cup Musselman’s Apple Butter 1/4 cup molasses 1/2 teaspoon ground ginger 1/2 teaspoon salt 1/4 teaspoon pepper Mix all ingredients in medium bowl. Brush sauce over chicken in the final 5 minutes of grilling. Additional sauce can be served at the table. CITRUS APPLE BUTTER GLAZE FOR SEAFOOD

Servings: 4 For up to 4 fish fillets or 2 pounds of shrimp 1/2 cup Musselman’s Apple Butter 2 tablespoons orange juice 2 tablespoons lime juice Mix all ingredients in medium bowl. Cook one side of seafood (skin side down). Brush glaze generously on top. Flip seafood and cook until done. Discard any remaining sauce. ASIAN APPLE BUTTER GRILLING SAUCE FOR PORK

Servings: 4 For up to 2 pounds of pork tenderloin or ribs 1/2 cup Musselman’s Apple Butter 1/4 cup Musselman’s Apple Cider Vinegar 1/4 cup water 2 tablespoons honey 3 cloves garlic, minced 1 teaspoon ground ginger 1/4 teaspoon salt 1/8 teaspoon pepper Mix all ingredients in medium bowl. Lightly brush or mop sauce over pork during entire grilling time, so sauce slowly cooks into pork. Discard any remaining sauce.

hen Louis and Melisa Conti escaped to Sedona for a quiet weekend to themselves, they never would have guessed that a bit of window shopping would end up changing their lives. But strolling along the Tlaquepaque Village they entered a shop called Vom Fass that featured gourmet vinegars, oils, spirits and liqueurs, and knew right away that it was something they wanted to be a part of. Louis has a well-established dental practice up near North Mountain and Melisa had recently begun a new career as an accountant, retail was not something that the couple had ever anticipated getting involved with. But as they investigated investing in their own franchise and bringing it to Scottsdale, they realized that this was worth taking the risk and in November of last year, Vom Fass Scottsdale opened up for business. Translated from German to mean “from the cask,” one of the unique characteristics of any Vom Fass shop is the fact that all of their products are displayed in vessels which allow them to be dispensed and sampled. Vom Fass employees serve as both educators and tour guides as customers make their way through their selection of hand-crafted, small-batch products. And with the ability to sample things they might otherwise not have been willing to purchase, many leave with something they might not have considered buying before stopping in. Having grown up in an Italian family which was centered on amazing food and drink, the high quality of all of the Vom Fass products was one of the main reasons which drew the Conti’s toward the brand. Their fruit vinegars are fermented directly from the fruit, not from juice or other additives being blended in, which is rare to find. And the spirits 24

are all small-batch runs which are purchased by Vom Fass to be sold exclusively in their stores. “I had a woman in the other day and explain to me that her husband only buys his scotch from Scotland when he makes it over there,” says Melisa. “I let her know that we have a bottler in Scotland that selects casks for us who bottles them or blends and bottles them right at the source. When she realized ours were not mass-produced products and that they were brought over here just for us, she ended up buying a gift for her husband.” The Conti’s have been able to turn their shop into a true family business. Melisa oversees day-to-day operations, while both their son Natali and their daughter Reina work at the shop. Louis has maintained his dental practice but has been able to shift his schedule around to where he also is helping customers almost each and every day. Looking down the road, the Conti’s hope to open at least one if not two more stores in the Valley, and continue to share with their customers their love of their product and level of hospitality that they fell in love with during that fateful trip to Sedona. “Everything we offer, we source directly from its producer,” adds Ben Meinen, the director of development for Vom Fass USA who was in town recently for a visit at Vom Fass Scottsdale. “It’s a very ethical way to do business, but it also ensures that we have the best quality from the time that it is an olive on a tree to when it comes into the shop, or when it was a single barrel of Scotch sitting on a warehouse in Scotland to when it’s poured into a glass.” Vom Fass Scottsdale is located within the shops at Scottsdale Waterfront, where they are open and offering complimentary samples of their products seven days a week. Audi Q5 Diesel has Fuel Economy and Performance ARTICLE AND PHOTOGRAPHY TOM STRONGMAN

C

lean diesel power appeals to drivers on two levels: performance and fuel economy. Audi’s midsize utility vehicle, the Q5, is available with five powertrains, ranging from a 2.0-liter turbo to the supercharged V-6 in the sporty SQ5, but the one that catches my eye is the 3.0-liter turbodiesel V-6. Sure, the 354 horsepower in the SQ5 has addictive acceleration, yet the TDI clean diesel engine delivers more torque than any engine in the lineup. Torque is the force that pushes you back when you mash the throttle, and the diesel steps away from a stop with a satisfying lunge. The TDI scoots to 60 miles per hour only 1.4 seconds slower than the hot SQ5, but its value is the fact that it has a highway mileage rating of 31 miles per gallon versus 24 for the SQ5. I submit that most of us would trade mileage for a fractionally slower acceleration. Diesels used to be loud and smelly, but the current crop of clean diesels is neither. In fact, if you didn’t know this was a diesel you couldn’t tell by listening. The Q5 TDI has a base price of $47,000. That’s at least $4,000 less than the SQ5. The Q5 is an ideal size if you don’t need three-row seating. It slips through urban traffic as easily as a midsize sedan, yet you sit higher and have a better view of the road. The diesel is backed by an eight-speed Tiptronic automatic transmission that can be shifted manually with steering-wheel paddles. A quick burst of power only takes a flip of the paddle shifter. After a few seconds, the transmission reverts to automatic mode. 26

Audi’s quattro all-wheel-drive system divides power from side to side and front to back as conditions require. That means the wheels with the most grip get the most power. That’s handy on slippery surfaces, of course, but also on dry pavement when driving briskly. The test car’s 20-inch wheels and summer tires would not do well in ice and snow, so winter tires are probably in order. In spite of its taller ride height, the TDI handles more like a sedan than a utility vehicle. The ride is firm, and the brakes are strong and powerful. The blind-spot warning system has yellow lights in the side of the outside mirrors. The Q5’s interior is well designed and executed. The combination of brushed aluminum, soft-touch surfaces and optional piano black trim is inviting. The sculpted front sport seats were supportive and comfortable. Wind and road noise was not intrusive at highway speeds, and the optional Bang & Olufsen audio system with 14 speakers has excellent sound. Price The base price of the test car was $47,000. Options included the prestige package of blind-spot warning system, Bang & Olufsen sound system, navigation, rear view camera and Audi connect. The exclusive package includes Nappa leather and piano black inlays. Sport front seats, 20-inch wheels and summer tires round out the pricing. The sticker price was $62,025. Warranty Four years or 50,000 miles. The first scheduled maintenance, at 5,000 miles or 12 months, is free. Father Figure Foundation (FFF) is an Arizona-based non-profit tax exempt organization that helps alleviate the financial burden for at-risk absent fathers who are unable to pay their child support and nurture a relationship with their children by fostering an environment of volunteerism, community service and extracurricular activities for kids. WHAT INSPIRED YOU TO START FATHER FIGURE FOUNDATION?

Four years ago, I personally experienced the trauma of our broken child support system. I felt hopeless with nowhere to turn when I couldn’t pay my child support. I was incarcerated, not because I didn’t want to pay my child support, because I couldn’t. The anger from what I had experienced inspired me to search for solutions to rescue single dads from the severe consequences of short-term financial challenges. Jail time makes a bad situation worse, and the choice offered by the court system doesn’t provide a realistic way to resolve the problem. By proposing options 28

to the courts, the child, father and custodial mother can develop effective co-parenting relationships and engage children in extracurricular activities. By alleviating temporary economic stress, absent fathers and mothers remain positively engaged with their kids, opening the door to impactful co-parenting. According to the Office of Child Support Enforcement, 1 in 3 kids in the U.S. come from broken family homes. $116,000,000 is past due in child support to moms and kids, and here in Arizona, $1.7Billion. We have an epidemic problem here that needs attention. HOW DOES THE APPLICATION PROCESS WORK?

It’s a pretty easy process to apply. Friends and family, word of mouth, non-profit and community partners, and our family courts refer the court ordered parent to FFF. They fill out our background questionnaire and submit it online. Once they pass our background check, we have an orientation where we direct these members dads to our community service volunteer projects. Those volunteer credit hours are exchanged for cash, which is paid by FFF directly to the


Department of Economic Security in Arizona, so that the moms and kids collect a portion of the unpaid child support. Our offer free membership is 100 percent organic and philanthropic. WHAT SETS THIS ORGANIZATION APART FROM OTHERS?

When I started FFF, I dug deep to resolve the larger problem, first with myself, then in our community. After losing everything, I knew that this cause went beyond just rescuing myself. I knew that with my passion& vision to help in this struggle, it would be critical for me to team up with caring people. I thought that we could build something together and accomplish many wonderful things like providing true options to judges to omit jail time of these heartbeat dads while keeping families connected. We also wanted to give parents courage about the importance of impactful co-parenting, and their obligations by fostering a loving and nurturing relationship with their children with our partnered self-improvement and development workshops. We want to inspire kids to find their passion. So, my team and I have put together a platform that does this. The more families participate in these mentorship classes and workshops, the more their kids win while covering those costs.

We are currently in the development of our pilot program launch, writing the curriculum for several of our platforms. In particular, our screening process and certification, as well as the arrangement with our non-profit partners for volunteer efforts and extracurricular activities, development and self-improvement classes, workshops and forums. We will also assist and support our Superior Court family judges and attorneys through our proactive solutions. It is important we report accurate metrics to disclose that FFF works, so it resonates a clear & sustainable model.

Most importantly, I have four great kids, two that live here in Arizona. And just this past July, I was awarded custody of my two boys, which is what I am most happy about. A Tribute To Dad WORDS MARK RUSSELL

M

y father, Lawrence Gibbilini, was born on the north side of Chicago in 1918. When the crash of '29 sent the country spiraling into the great depression, Dad, along with his six younger brothers and sisters, helped make ends meet by selling their mother's pizza door-to-door; some say the first pizza delivery ever. Despite the tough times, the pizza business took off. Dad was in charge of the distribution department but quickly tired of organizing his siblings and requested a transfer into production (the start of his cooking career). His mother, a great traditional cook, taught him the secrets of her pizza and many other family recipes. My dad, on the other hand, liked to experiment and actually started using fresh vegetables and whole wheat in his recipes (to the horror of his mother) before it was in vogue. When my dad was eighteen, his mother sold her pizza business and decided that Lawrence should go into the bricklaying business with his father. But Dad had a passion for cooking and refused to give it up completely. On weekends he would throw a large checkered tablecloth over the dining room table, drag up every chair in the apartment and invite all his friends, family and acquaintances over for dinner. He would serve them his variations of time-honored Gibbilini dishes as

well as recipes he was developing. Most received outstanding reviews and earned him the title of “Lawrence of Oregano.” Dad’s pasta and sandwiches were great but his pizza, stuffed and thin crust, were his crowning achievements. Over the years, it seemed we always had family and friends over, eating, drinking, talking and listening to old Frank Sinatra and big band records. My dad truly practiced his philosophy about life: the key to happiness is friends, good food and music. My dad died at the age of 72 while cutting the rug to Frank Sinatra with my mother. Years later, I cleaned out his garage and found close to a thousand assorted plates, glasses and silverware (none of which matched) that made me think he’d been collecting them for years in hopes of opening his own restaurant. I wish I had known. All in all, I’d have to say that was probably Dad’s only regret in life. He was well-loved and thought of by his family and friends and lived life with a zest that I can only envy. We miss him greatly. Founded by Mark Russell in 1993, today Oregano’s Pizza Bistro has 15 locations across the state of Arizona. Specializing in original Chicago-style thin crust, stuffed and pan pizzas, Oregano’s continues to be inspired by recipes passed down from the Gibbilini family.
