Hello there!

It’s hard to believe that a year has already flown by since we launched Pensacola City Lifestyle. As I reflect on this incredible journey, I’m filled with gratitude and excitement for what’s ahead. This year has been one of growth, connection, and countless lessons that have shaped our magazine and our mission.

What have I learned? First and foremost, the heartbeat of Pensacola is its people. From our early days of planning the premiere issue to now, the stories of resilience, creativity, and community have been our guiding light. Whether it’s shining a spotlight on local businesses, sharing the unique charm of our neighborhoods, or celebrating the rich tapestry of culture that defines our city, this magazine has become a reflection of all of you — our readers, neighbors, and friends!

I have also learned that the power of collaboration cannot be overstated. Through partnerships with local businesses, nonprofits, and community leaders, we’ve been able to create something far greater than a magazine. Pensacola City Lifestyle has become a platform for connection, inspiration, and impact. One of the most rewarding parts of this year has been seeing how these collaborations have brought new opportunities and awareness to our city’s hidden gems.

As I look to the future, my expectations for the magazine are bold yet grounded in purpose. I see us growing as a trusted voice in the community, expanding our reach, and diving even deeper into the stories that matter most. I envision more initiatives that bring people together, more events that celebrate our shared love for Pensacola, and more ways to give back to the community that has embraced us so warmly.

Hidden History: Fort Pickens

Fort Pickens is a cherished landmark, beloved by Pensacolians for its mix of natural beauty, recreation, and profound historical significance. Beyond its pristine beaches, fishing spots, and hiking trails, this 19th-century fort is a cornerstone of Black history, not unlike its connection to the 25th United States Colored Troops (USCT) who served from 1854 to 1865. A place where history and nature intersect, Fort Pickens remains a symbol of resilience, sacrifice, and hope.

FORT PICKENS: A MONUMENT OF STRUGGLE AND RESILIENCE

Constructed between 1829 and 1834, Fort Pickens was part of a national effort to strengthen coastal defenses. Built largely by enslaved African Americans, the fort stands as both a testament to military strategy and a stark reminder of the exploitation endured by Black people in that era. The grueling labor required to haul bricks, mix mortar, and lay foundations was performed under harsh conditions, embodying the profound sacrifices of those whose names history often overlooks.

During the Civil War, Fort Pickens became a Union stronghold in Confederate Florida. Its strategic position at Pensacola Bay allowed it to control access to the Gulf of Mexico, symbolizing a beacon of resistance against oppression. While most of Florida fell under Confederate control, the Union’s presence at Fort Pickens provided a glimmer of hope for enslaved individuals seeking freedom.

Designated as part of the Underground Railroad Network to Freedom, Fort Pickens played a crucial role in the broader story of emancipation. It offered sanctuary to enslaved individuals risking everything to escape bondage. This designation underscores an often-overlooked truth: the Underground Railroad was not confined to northern routes but included southern sites like Fort Pickens, where Union forces offered a lifeline to freedom. Wine Local

THE BEST LOCAL WINE SHOPS IN PENSACOLA

Pensacola has a uniquely fun culture. That culture manifests itself in many ways. One of the more unexpected yet tangible ways is in our local wine culture. In the first wine article for this magazine, I argued that we do, in fact, live in Wine Country. If you missed that article, you might be saying “we don’t live anywhere near Wine Country.” If your definition of Wine Country is only of a place where wine grapes grow then you would be correct, but your definition is woefully lacking. As a refresher; Wine Country is so much more than a place where grapes grow. It is a place where you can enjoy wine and enjoy the fellow and friendship that comes with sharing wine. Countries have identifiable, unique, and ubiquitous culture. Since we have established that we have this unique culture I argue that we do live in Wine Country. Wine culture = Wine Country. So where are the best places to take part in this culture, and buy a nice bottle of wine?

Aragon Wine Market

To be considered as one of the best local wine shops you must have these things: sell mostly wine (75% or more of total sales), be locally owned, and have wine knowledgeable staff. There are a few honorable mentions to start. So Gourmet, Wine World, ABC, and Four Winds. All sell good wine. Four Winds and So Gourmet are locally owned but are not true wine shops (they both have great food!). ABC and Wine World are not locally owned (FL owned), and wine knowledge is ephemeral. That leaves us with the following locations. Let’s take a look in chronological order, and to be clear, I am not paid by any of these shops. This is pure unbiased good stuff.

The first dedicated wine shop that is still running is Aragon Wine Market. Opening its doors in October of 2008 and located at the far southern end of 9th Ave, Aragon has been a benchmark of what a wine shop should be. Owner Charlotte and Wine Education Trust Certified Level 2 manager Pepper, along with the rest of the staff, can always get you a wine to match whatever you have going on. They also have a wine tasting every Thursday.

The Bottle Shops, both the original on Baylen St. and the more recent addition on 12th Ave in East Hill represent the traditional wine shopping experience. The founder and owner of the Wine Bar on Palafox, Ian, needed more room to store the wine. The result was the Bottle Shop on Baylen which opened in November of 2015. With continued success he opened up the second Bottle Shop in East Hill in Oct of 2021. Their staff is very knowledgeable, (esp. Todd, Richard, and Gary) and both have their own weekly wine tastings; East Hill every Wednesday and Baylen every Friday.

Next, opening in the summer of 2018 is Anna’s Fine Wine. Attached to Joe’s Patti’s Seafood and managed by Paula, Anna’s specializes in harder to find wines and wines with a certain flare. She hosts one of the biggest wine tastings once a month on the last Thursday. Not something to miss!

Our newest wine shop is one of our most unique. A Curious Wine Shop opened in January 2024 and is located on the 1st floor of the old Sacred Heart Hospital building on 12th Ave. Owner Hilary is a Level 1 Sommelier and a Certified Specialist of Wine. She is passionate about wine education and curates three different wines every week for anyone to taste during store hours. Those three bottles of wine represent a different weekly theme and can be purchased together in her signature Curious Wine Tasting Boxes that also come with a wine geek’s dream of wine information. If you aren’t that curious, then you can just go in and buy a good bottle.

While its reputation for being temperamental may seem intimidating, the soufflé is not as unattainable

as it appears. With a little patience and precision, you can follow the recipe step by step and achieve stunning results right from your own kitchen. This Valentine’s Day, wow your special someone with a dessert that embodies sophistication and indulgence. Not only will it delight their taste buds, but it will also earn you well-deserved bragging rights as you bring this classic back to life.

PROVIDED

Quick tips for Soufflé Success:

• Now is the best time to practice mise-en-place and have all your tools and ingredients measured and ready to use.

• Have all of your ingredients at room temperature (eggs particularly)

• Do NOT open the oven while the soufflé bakes.

• You can make the soufflé mixture a day in advance while keeping it covered and chilled in the fridge.

What you will need:

• 4 to 6, 6 oz oven safe ceramic ramekins with straight sides

• 1 spatula + 1 wooden spoon

• 1 medium heatproof bowl

• 1 medium mixing bowl

• 1 small pot to use as double boiler

• hand mixer

Ingredients:

• 8 oz bittersweet good quality chocolate finely chopped

• 3 large egg yolks

• 6 large egg whites

• 2 tbsp unsalted butter plus extra for greasing

• ½ cup sugar divided plus extra for greasing

• 1 tsp orange zest (Optional)

• ¼ teaspoon salt

Directions:

1. Preheat oven to 400 degrees

2. Grease ramekins with butter using a brush stroking upwards and dust with sugar.

3. Heat water over medium in a small pot and without touching the water, place the heat proof bowl with 2 tbsp butter and

chopped chocolate. Stir occasionally until smooth. Set aside and let cool

4. In another mixing bowl mix ¼ cup of sugar and egg yolks until the brightness of the yellow lightens and a smooth silky texture forms.

5. Pour the yolk mixture into the chocolate and fold until combined.

6. In a dry and clean bowl begin whisking the egg whites with the electric mixer until it begins to look white and frothy.

7. Gradually add ¼ cup of sugar (1 tsp at a time) and mix until stiff peaks form.

8. Gently fold in the egg white mix (one scoop at a time) onto the chocolate mix.

9. Pour batter into ramekins.

10. Place in the oven and turn the temperature down to 375.

11. Bake until the tops puff and look dry, around 18 minutes.

12. Remove from the oven and dust with powdered sugar.

13. Serve immediately with a berry garnish and an optional side of whipped cream or Crème anglaise.
