y son calls a mere grilled cheese, a “cheese panini.” My daughters know more about the importance of marbling in beef than most carnivores. When they requested surf and turf for Valentine’s Day dinner, there was a reminder to be sure this included the tail and a petite filet, thank you very much. We eat like kings. And that’s in our own kitchen. Venturing out, we carefully consider not only the cuisine (from the land, sea or garden), but also the type of service (from chatty foodie wait The Dunwoody boys and the editor staff or from a familiar bartender) and convenience (5 or 15 minute drive)? TURNER IN CHARGE The Georgia Restaurant Association (GRA) has announced the 2015 Chairman of the Board for the association, Ryan Turner, current vice-chair for the GRA and co-founder and CEO of Unsukay Community of Businesses, the parent company for Muss & Turner’s, Eleanor’s, Local Three and Common Quarter in Metro-Atlanta. Since college, Turner has worked in every role in a restaurant from dishwasher to bartender. Turner served as the food and beverage manager at East Lake Golf Club prior to opening Muss & Turner’s in February of 2005. He and his partners opened Local Three in late 2010, Eleanor’s in 2012 and Common Quarter in 2013. In 2011, Turner and his partners received the GRA’s Restaurateur of the Year award, in 2013, they received the GRA’s Restaurant Neighbor Award for their involvement in founding and launching The Giving Kitchen. Turner currently serves as Board Chairman of The Giving Kitchen, a 501c3 serving those in the restaurant community facing hardship and crisis.
PARENTS CLUB LAUNCHES TRAVEL GRANT PROGRAM Pace Academy’s Parents Club recently launched the Citizens of the World Travel Grant Program to increase access to Isdell Center for Global Leadership (ICGL) study tours. The ICGL supports a global education for every Pace graduate and sponsors student study tours. Travel grants cover airfare once in Middle School and once in Upper School. The impact has been tremendous: a 55-percent increase in Upper School participation, and a 186-percent increase in Middle School.
CONNECT DUNWOODY The City of Dunwoody launched a newly redesigned and upgraded website to serve as the primary portal and tool for residents, businesses and visitors seeking continuous access to city information, news, event and communication. With more than 135,000 unique visits logged annually, the city sought to create a new website in which both first-time users and regular visitors would quickly find the project, news and 10

event information they came to obtain. The new site provides an innovative platform for interaction with the City through improved functionality and a more intuitively designed navigation interface. The City hired Jesse James Creative to develop and design the new site, the site layout and architecture. Under the direction of City staff, Jesse James Creative helped bring more information front and center for visitors with select content from interior pages and sections ‘boiled up’ to the top layers of the site to encourage exploration. MONTESSORI FOR ALL Springmont is offering two newly enhanced programs for their community. The school developed Plus, a new educational support program for students challenged by dyslexia or ADD/ ADHD, to benefit those who need supplemental instruction integrated with the Montessori classroom experience. The Plus Program provides students who have a diagnosed language or reading disability individually tailored instruction in individual and/or small groups by a learning specialist. Springmont also enhanced its Suzuki program for ages nine through 12. They added viola and cello to the violins, so there is more of a chamber music feel to the group. Springmont.com

A Buckhead Tradition is Reborn in Sandy Springs with Bishoku Sushi Article Helen Grebe
I
t’s a busy day on Roswell Road, cars jutting in and out of lanes as I turn my blinker on and slide into a tight parking spot in Parkside Shopping Center. It’s lunch hour and I’m anticipating the sweet crunch of a spicy tuna roll that will yield respite from my looming deadlines. Bishoku is my destination, a sushi restaurant that serves both lunch and dinner along with seasonal specials. Bishoku, owned by Jackie FukuyaMerkel, a gorgeous woman who is upbeat and dressed smartly, yields a warm energy upon entering. There’s an inviting mix of wood tables with lanterns overhead while supple jazz plays. If Jackie’s name sounds familiar, you’ve probably dined at her father’s restaurant, Sushi Huku, located in Buckhead on Northside and Powers Ferry for 20 years before he sold it to new management. Jackie grew up in the business with an attention to detail inherited from her father. Bishoku is the sole provider of sushi for the Ritz Carlton’s Sunday brunch, for the St. Regis, Lowes Hotel, Mandarin Oriental and Chateau Elan. Jackie has a strict ethic of quality, paying for the best fish available and shopping for her own produce while inspecting every item before it enters her kitchen. “Working hard is the only way to make this business work,” she emphasizes as I peer at the fresh sashimi being sliced at the 24seat sushi bar and inhale a steaming bowl of miso soup. I liken Bishoku to an elegant, Asian version of the infamous pub on television’s “Cheers:” a home away from home, or in this case, a second dining room away from your own, where everyone knows your name and your favorite order. While I peruse the menu, Jackie is moving constantly, greeting a regular couple by name while reminding another group of departing patrons that she’ll see them at Bishoku’s sushi and jazz night (Thursdays at 6:30 p.m.). “I know 80 percent of the people that walk in my door,” notes Jack-

ie, “and I believe that tradition, combined with delivering quality food, sets us apart Jackie Fukuya-Merkel from other sushi destinations.” For lunch, I settle on a combo, reasonably priced at $13, which includes my choice of two sushi rolls (spicy tuna and their bestselling crunchy crab roll) soup, salad and dessert. The salad is my favorite portion of lunch, crisp with a warm, spicy ginger dressing. The sushi rolls are delicious and just what you expect from a traditional sushi restaurant: no fancy fusion ingredients like mango or spicy remoulade sauce. My rolls are pure…to the point…classic sushi. The presentation of dessert delivers that extra something that sets Bishoku apart. I’m satiated and well fit to return to my hectic world. Before paying, I glance at the dinner menu, for future returns. I’m eyeing the lobster and avocado spring rolls at $10.95 (a bargain) and the short ribs marinated in miso (yum). My husband will flip for the king mushrooms and snapper in foil with a soy ginger sauce (at $14.95 for dinner this is a no-brainer). Complimenting Jackie on her perfect meal delivery she smiles and notes I am now a regular. In the competitive restaurant business, the devil is in the details. For Bishoku, success lies in the details. Bishoku’s mastered delivering high quality food--and that something extra--that keeps folks coming back.

the brickery “We were doing farm to table before it was ever called such a thing,” says Bruce Alterman, owner of the Brickery. He doesn’t hesitate to hop in his car and drive to pick up produce for his restaurant from local growers. Two appetizers to start your meal at the Brickery should 16

be Brussels Sprouts and Barely Battered Shrimp. When The Brickery says that their shrimp is “barely battered,” they mean it. A slight crispiness gives way to perfectly cooked shrimp. The Brussels sprouts, served with pasta, were tasty and could easily serve as a light lunch for someone watching their calories. The Caesar burger is something to behold. Served with freshly grated parmesan cheese and slathered with gooey
Caesar dressing, what’s not to love? Complete the dish with onion rings, of course!
teela taqueria Located in the lovely City Walk Center, Teela Taqueria offers some delicious taco combinations. You might be tempted to fill up on the lime-flavored chips and salsa, but do save room for two or three tacos. Two of the signature tacos are the Bang Bang Shrimp and the Chorizo taco. The Bang Bang Shrimp, lightly fried with a drizzle of a creamy smoked chili sauce gives it a delightful kick. And the Chorizo taco is not your normal Mexican sausage. This one comes with dates and feta, for a sweet and salty combo. If enchiladas are more to your liking, Teela does a mean mole chicken.
hearth pizza Hearth Pizza isn’t trying to win any pizza wars, like many of the other pizza restaurants you’ll find around the Atlanta area. Instead, they quietly do their thing with a crowd of regulars from the Sandy Springs neighborhood and office workers. The restaurant is located in the back corner of strip mall at the intersection of Roswell Road and Hammond Drive. Pizzas can be ordered in half or full sizes. Specialty pizzas include the New Haven Clam or Shrimp and Goat Cheese. Torn between the Mass Pike pizza with capicola, Italian sausage, cremini mushrooms, sun-dried tomatoes, and a dash of pesto or the Ring of Fire pizza with Garlic chili oil, chorizo salami, sliced cherry peppers, caramelized onions, cremini mushrooms, and cilantro? We don’t blame you. Both are equally unique and satisfying. So, take the whole office out for lunch, so you can order both!
cibo e beve Who says a hearty, flavorful lunch and a speedy lunch are mutually exclusive? Not at Cibo E Beve. Go traditional with chicken parmesan, marsala or piccata. Of course, there are plenty of pizzas and pastas to choose from. Pizzas can easily be shared between two for a light lunch. Our favorite is the margherita - simple, yet perfect. Favorite pasta? For starters, the upscale Ahi Tuna bites with chopped tuna atop an English cucumber with pickled ginger and feta, makes for a tasty, yet light lunch. And how do you put an interesting twist on hummus? Use a mixture of edamame and goat cheese for a delicious and unique dip. Like grilled cheese? Then you have to try the grilled feta sandwich! What an interesting spin on grilled cheese. A salad you say? The strawberry avocado salad with spinach, goat cheese, and toasted almonds is covered in a basil vinaigrette dressing. Another intriguing option is the chopped salad with kale, broccoli, raisins and even Brussels sprouts all tossed in a Thai dressing. Meehan’s even has gluten free dining options.

S
itting at the quiet bar at Kevin Rathbun Steak at the end of Krog Street, I sigh, feeling the weight of the day fade as Kevin sizes me up and listens to my description of the perfect drink to quench my Thursday thirst. It’s not on their traditional and comprehensive cocktail menu, but the martini he brings is textbook. Is he a mind-reader? The glass is filled generously, served with a professional air that reassures me that everything will be all right. The rest of the meal, taken at the dark wood bar, was more than all right. It was, as it always is, exceptional. When I told Kevin Rathbun this, as he kindly came to say hello, he immediately credits his staff. I ask how he manages to land, then keep bartenders, servers and managers who look you in the eye, anticipate your next need and make you feel like you are their favorite guest. “Well, we spend more time
during an interview figuring out if the candidate is nice, a good person,” says Rathbun, who opened Rathbun’s, Krog Bar and Kevin Rathbun Steak in Old Fourth Ward and KR Steak more recently on Peachtree Hills. “Sure, we look at their experience, but worry more that they are just ... nice.” Rathbun meant he doesn’t hire jerks, but he, himself, is just too nice to say that. As one of my very favorite spots in all the world, the bar at Rathbun Steak never disappoints. I’ve enjoyed a more formal (but never stuffy) experience in the dining room and a less formal (but always polished) meal out by the wood-burning fireplace abutting the Beltline. We started with a half dozen Powder Point oysters, from Duxbury, Mass. They were meaty and crisp, served with a champagne mignonette that commanded respect. The dry-aged steak for two was served sliced, in its own juices, by Kevin who continued to stay alert and sweet (and refoldedmy napkin after I stepped away for a moment - I love that). The sides were rich and addictive. We added the scalloped sweet potatoes with Gruyere to our Valentine’s Day meal wish list. Yes, the service is more than just nice at Kevin Rathbun Steak, topping my list of restaurants I hope you will

We started with a lovely pantry board featuring local cheeses and a carefully flavored flatbread (this one floated up to my lips laden with arugula, pecan pesto, chevre and a touch of tomatoes). The menu this month will feature beautiful produce from Grant Wallace Farm and another cast iron pie (fans follow the pie news closely, waiting for February’s rabbit pot pie), says general manager Caitlin Crawford, who is also an accomplished baker and photographer (pop a forkful of her dark chocolate mousse pie and you’ll love her forever). Last time I cozied up to the bar, I had the half roast chicken, served crispy on a bed of butternut dumplings, confit Brussels and cauliflower puree with turnips. I couldn’t get enough of the vegetables and can only dream of recreating that soiree at home. Good thing Ration and Dram is open every day for dinner and for brunch on weekends. At the top of my Honorable Mention list is The Paper Plane in Decatur. Come on, you can do it! Venture outside BuckhavRation and Dram en and you will be generously rewarded for your small effort. This place is a gift. The staff will welcome you with a sort of small-town graciousness that’s a treasure. Their refined attention will immediately put you at ease as you address the wine and cocktail list. The succinct menu (that is to say, short but inclusive of your desires) includes a fabulous Swiss cheese fondue that will make you swear you just spent the day skiing. “Members and non-members only,” is their motto. You’ll be a member immediately. (Tell them I sent you.) Another long-time in-town favorite of mine is the One Eared Stag in Inman Park. You can actually park on the street in front of the restaurant and get a table without a reservation most nights. That’s not to say you won’t be f loored by the imaginative menu and satiated by the tastes that come out of Chef Phelen’s kitchen. Now in its third year, locals know and love the Stag for the fried chicken dinner served up every Monday night, a chef ’s board the size of a small island offered up for Sunday brunch and the secret meat stick, a burger so monumental that grown men cower in its presence. Yes, yes, yes, I love BuckHaven’s many amazing restaurants as much as you do. But, why not drive or Uber into another of Atlanta’s charming neighborhoods to experience a meal that will leave a very good taste in your mouth.
Old Fourth Distillery Makes History in Atlanta
T
he buzz surrounding the opening of Atlanta, Georgia’s Old Fourth Distillery—the first of its kind going back to the state’s prohibition law more than a century ago—has been building since the launch of its Kickstarter campaign in 2013. Leading up to its official opening on November 20, after reaping $40,372 in pledges, traffic by foot and automobile gawked at the polished bronze kettles through the Distillery’s storefront windows anticipating the craft vodka they were set to produce. Based in the heart of the Historic Old Fourth Ward on Edgewood Avenue, the popularly termed “O4D” was started by a crew of

five—Andy DuVall, Justin Gray, Gabe Pilato, and brothers Jeff and Craig Moore; the latter three attended Dunwoody High School in the mid and late-1990s, and Justin grew up in Dunwoody. Since the departure of R.M. Rose Co.—Georgia’s last operating distillery—in 1907 to Chattanooga, where distilling was still legal, O4D is making history in Atlanta and, great vodka, gin, whisky, and bourbon are soon to follow. Lifestyle Publications had the opportunity to sit down with one of the partners, Gabe Pilato—who has played the roles as a renowned chef, restauranteur, and sommelier prior to O4D—and gets the inside scoop on how the Distillery came about, the trials and tribulations they incurred, their aspirations, and future plans. Perimeter North Lifestyle: How did the idea of starting a distillery come about and why vodka? Gabe Pilato: It all came about when we found the space across the
street from Craig and Jeff’s office—which they have owned for 10 years—became available. We were all recently reunited at our annual New Year’s Eve party and were brainstorming ideas about what we could do with the space. Someone threw out the idea for a distillery and after some quick research, we realized there hadn’t been one in Atlanta for 100 years. The rest, as they say, is history. I think we even had the name picked out before 1 a.m. that night!
distilling, and bottling every drop of O4D out there in the world, so it is a pretty daunting task, but we couldn’t be happier. We know how lucky we are to get to do this every day. PNL When will the vodka be available in stores and restaurants, and what are your future plans regarding the next spirit you produce? GP The vodka is available in stores and bars and restaurants now.
We hope to launch a gin in twelve to 18 months, and a properly aged whisky in several years.
PNL Why did you choose the location in Old 4th Ward? GP We all live in the area and Craig and Jeff own the building across the street, so really it was a no-brainer. PNL What were the most difficult hurdles in getting the Distillery legalized and then building it? GP Well, there was no precedent for what we were doing, but luck-
ily we had great supporters in City Hall and, of course, our lawyers, so while everything took a long time, we knew in the end it would be worth it. Being the first at anything is always difficult, but also very advantageous. No one had ever built a distillery in Atlanta before, so obviously there were major challenges in getting our very specialized equipment installed and working properly. One of our partners, Justin Gray, is a genius contractor; he designed and oversaw the build out from the beginning, so we are very lucky to have him on our team. PNL What makes a great vodka and how do your methods stand out? What are the most fun and most difficult tasks? GP As a general rule, vodka is considered a neutral spirit. Because of that, commercial distillers tend to use industrial distillation methods to produce a very astringent and flavorless spirit; 99 percent of vodkas are identical for this reason. Ours is distilled from cane sugar, which carries over into the finished spirit and gives the vodka a lovely caramelized sugar aroma. Because it is made by hand, it feels much softer and rounder on the palate, with none of the rubbing alcohol harshness of commercially made vodkas. PNL What are some of the most difficult things about making vodka? GP The fermentations are pretty difficult to get just right. Like any-
thing, we are just working on dialing in efficiencies so we are not wasting time, materials, or space. It’s just the five of us fermenting,

oved locally since his early days at Woodfire Grill, Kevin Gillespie won America’s hearts and stomachs as a finalist and fan favorite on Bravo’s Top Chef in 2009. Since his appearance he has received numerous distinguished national and local awards as well as opened Gunshow in Glenwood Park in the summer of 2013. Gillespie’s first cookbook, Fire In My Belly, introduced readers to his passion for cooking and provided personal background into his culinary past and his recipes. Returning now with his second cookbook, Pure Pork Awesomeness, Gillespie continues to promote his farm-to-table agenda, this time specializing in pork. Beginning from a wish to have a pet pig as a child, Gillespie has always had a preference for a particular protein, pointing out how “everyone who knows me knows I am crazy about pork.” Wanting to share his knowledge and inspire others, he compiled his latest cookbook because “to be able to put it all down on paper was really important to me. I’m really proud of it, and I hope it’ll inspire people to try new things with pork.” In Pure Pork Awesomeness, Gillespie educates readers on making informed choices when selecting pork, such as the differences between commodity pork and pastured pork, explains the difference in breeds, and gives advice for selecting different cuts and types of pork. But this cookbook is not just packed with every aspect of porcine information, it also features 100 mouth-watering, pork-prais-

ing recipes from across the globe. Stand-alone events will be offered on 10 Friday mornings and seven Thursday evenings throughout 2015. Events will begin with a short encouraging dialogue with a graduate from Wellspring Living, and then attendees will divide into groups for projects that will directly impact our survivors. An anticipated 1,500 runners will gather to the sound of bagpipes to compete in the 2015 Tartan Trot 5K/10K race. Last year, the race hosted 1,000+ runners and raised approximately $90,000. These funds, along with generous donations from corporate and individual sponsors, helped St. Luke’s provide financial and hands on support to many outreach partners locally and around the world. As Downton Abbey fanatics everywhere are gearing up for the Season 5 premiere in January, Biltmore Estate will be dressing-up the Estate with a new exhibition “Dressing Downton: Changing Fashion for Changing Times.” Visiting the south for the first time, the exhibition will be opening February 5 and continuing through Memorial Day, May 25. The exhibition features more than 40 costumes from the popular PBS series “Downton Abbey” and the clothing will be showcased in rooms throughout Biltmore House in groupings inspired by the fictional show and by real life at Biltmore, the grand Vanderbilt estate of the same era. Scouts of all ages are encouraged to wear their uniforms to church one Sunday a year as a reminder that a part of the Scout Law is that a Scout is reverent, and that Scouts promise to do their “Duty to God.” These values strengthen youth character in their family, community and faith. ane is the editor’s daughter who lives in Ann Arbor and works at the wonderfood conglomerate, Zingerman’s. Born in England, raised in Hong Kong, Boston and Michigan, this girl has superior taste. Enjoy her take on clam chowder (the white one). 2 tablespoons unsalted butter Half a medium onion, finely diced 2 celery stalks sliced into 1/4-inch pieces 3 tablespoons all-purpose flour 2+ cups chicken or vegetable stock 2 (10-ounce) cans chopped clams in juice 3/4 cup heavy cream 2 bay leaves 1 pound Idaho potatoes, peeled and cut into 1/2- inch cubes Salt and freshly ground black pepper Fresh dill
Heat the butter in a large pot over medium-high heat. Add the onion and celery and saute until softened, mixing often. Add potatoes for a few minutes then sprinkle and stir in the flour to distribute evenly, cook 3 minutes. Add the stock, juice from 2 cans of chopped clams (reserve clams), bay leaves, and stir to combine. Bring to a simmer, stirring constantly (the mixture will thicken), then reduce the heat to medium-low and cook 20 minutes, stirring often, until the potatoes are nice and tender. Then add clams and season to taste with salt and pepper and dill and cook until clams are just firm, another 2 minutes. For the oven toasted croutons:
Toss the bread cubes in the melted butter, parsley and season with salt and pepper. Bake at 350 for 20 minutes, stirring until brown and crispy. Store left-overs in an air-tight container and use for salads or snacking.

2 to 3 tablespoons unsalted butter 1/2 loaf fresh Italian bread, cut into 1-inch cubes 3 tablespoons freshly chopped flat-leaf parsley Salt and freshly ground black pepper
