hristmas, Christmas, and Christmas. It’s all finally right around the corner. For me Christmas means family and a chance to get out of the heat and go into the cold with hopefully snow, lots and lots of snow. Every year my family flies East to Iowa for a week, to visit my husbands family and then to Missouri to visit my extended family. All of the gifts, laughs, dinners, board games, movies, church and of course kids not sleeping because they’re not in their own beds is what Christmas is all about. My favorite Christmas tradition is getting all the extended family together and going to a Christmas Eve service in Iowa at the church my husband grew up in. My family and I attend church all year but there’s something about church at Christmas time. With all of the glamorous decorations and the twinkling lights floor to ceiling, its just a beautiful time of year. In this month’s issue you will discover the unique ways that Arizonians get to spend the holidays. I think its safe to say that Christmas in Arizona is unlike Christmas anywhere else mainly because the temps are 20 to 30 degrees warmer than the rest of the country, and that’s the way we like it! That doesn’t mean we have to miss out on any of the fun. Check out our feature story for a bunch of ideas for the holidays. Also you’re not going to want to miss the opportunity to go inside the kitchen with Carrie Hudson as she explains how we can stay fit and healthy even in the midst of the holidays. Around Town Currently, the Foreign Language Immersion program provides instruction in Spanish for half the day and in English for the other. Many parents are thrilled to attest to their child’s bilingualism as a result of participating in the program. Hula’s Modern Tiki Expands Hula’s Modern Tiki is opening a new location this month in Old Town Scottsdale, taking the place of Big Earl’s BBQ behind the Sugarbowl. The restaurant is an urban take on classic tiki bars and restaurants from the 50’s and 60’s. Originally located on Central and Camelback, Hula has enjoyed significant success, having been consistently voted one of the best Phoenix Restaurants, and boasts stellar service, an expansive patio and proximity to the light rail. Restaurant owner Dana Mule hopes to bring the same laid-back vibe to cosmopolitan Old Town.

Camelback’s Echo Trail Renovations

Fires are most prevalent in winter, so keep holiday hazards in check. Make sure lights are secure and free of damage and keep Christmas trees well-hydrated. Exercise caution while cooking and while using candles and space heaters -- do not leave them unattended. Keep flames and heating elements away from flammable materials. Never drink and drive. Renovations on Camelback’s popular Echo Trail were slated to be finished by November 30, but that date has since been pushed back. Renovations include the addition of walkways, entrances, a roundabout and a permanent restroom, as well as the expansion of the parking lot. These changes are aimed at improving pedestrian and vehicle safety and traffic flow. The city will also be rebuilding and rerouting the trail to improve hiker safety and environmental sustainability. The improvement project is now expected to last through the end of the year with no clear estimated date of completion. In the meantime, hikers are encouraged to enjoy Camelback’s Cholla Trail instead, which offers a similarly rigorous hike and incredible views. The Holidays Can Be Healthy, Too Article Carrie Hudson

h, how I look forward to this time of year. Celebrating the holidays with family and friends and making memories that will last a life time, and it’s all centered around GREAT food! I know some of us feel guilty this time of year as we splurge and eat things that aren’t on our diets and gain some extra pounds. What I have found to be true is that extra weight comes from eating processed food because our bodies can’t break down all those foreign ingredients found in most foods we consume today. Here are three family favorites to help you celebrate the holidays this year with amazing food that not only tastes great but also promotes health and wellness. Below each recipe is a link to the original source. *NOTE: For optimal health, choose organic and GMO FREE ingredients as much as possible.

Balsamic Roasted Turkey with Apple Stuffing 1 turkey (10-15 pounds, pick an organic, GMO FREE bird) ½ cup grapeseed oil or extra virgin cold press olive oil ½ cup balsamic vinegar 14 Paradise Valley Lifestyle | December 2013

1 tablespoon Celtic sea salt (I prefer to cook with Himalayan salt because of its health benefits) 10 apples, peeled, cored and sliced in half 4 sprigs rosemary 1. Remove the gizzards (save in refrigerator for gravy) 2. Rinse bird well and pat dry with paper towels; then truss (tie legs together with string) 3. Place turkey breast side up in a roasting pan, then put rosemary inside bird 4. Drizzle bird with oil and balsamic vinegar, then sprinkle with salt 5. Wedge apples around roasting pan to prop turkey up evenly place 2 apple halves in cavity of bird 6. Place roasting pan with turkey, apples, etc., in oven on lowest rack 7. Roast at 325°, 15 minutes per pound; a 15-pound turkey requires 3 hours and 45 minutes 8. If skin begins to brown too soon, cover with foil 9. To check temperature stick a meat thermometer deep into thigh; at 175° it is safely done 10. Remove turkey from oven and allow to sit for 20 to 30 minutes before carving Serves 12

Take note, because of the balsamic vinegar in this recipe, the turkey skin will be much darker than a bird cooked in the traditional method. Read more at ElanasPantry.com

One of my all-time favorites since I was a kid has been green bean casserole; you know, the one with Campbell’s soup and those French’s fried onions that come in a can. Talk about processed food, this is true example of how far from we have come from REAL food. Here’s a clean food version of the recipe that is bound to please your guests, and I don’t think they will EVER want the processed version again.

Nontraditional Green Bean Casserole by Season with Spice What you’ll need: I personally like to use organic ingredients as often as possible. 1 pound of fresh green beans, steamed or boiled until softened

Cream of Mushroom:

2 cups of Swiss brown or button mushroom – chopped finely 4 cloves garlic Dab of butter 1 1/2 tbsp olive oil 1/2 tsp soy sauce 1/2 tbsp water 1/2 cup cream 1/2 cup milk 1 tbsp corn flour (starch) –dissolved in 1/2 tbsp of water Pinch of thyme Pinch of dried parsley Dash of Season with Spice’s ground nutmeg Salt and black pepper to taste

fry until browned. Remove and place on a tray lined with paper towel. 7. Mix everything together in a baking pan (keep a few onion rings to place on top), and bake for 20 minutes at 375F (190C). Enjoy this nontraditional green bean casserole for your next Thanksgiving.

2. Add coconut butter and agave nectar. Mix until well combined. 3. Press 1/4 in thick into tart shells or 9” pie plate. 4. Dehydrate for 3 hours at 116°. You can start at 140° for 45 minutes and then lower the temp.

Notes: You can bake the onions for a healthier version, but you won’t get that traditional crispiness in the casserole like you will if you deep fry or pan fry the onions.

French Fried Onions:

2 large white onions – sliced into rings 1/2 cup milk 1/2 cup flour 1 cup of cooking oil Salt and black pepper to taste Process:

1. Cook green beans and set aside. 2. On medium fire, heat olive oil in pan, then add butter. Lower heat and sauté garlic for one minute. Add mushrooms in and turn heat back up to medium. Add soy sauce and water, and sauté for 5-7 minutes until liquid is cooked out. Add a dash of salt and black pepper. 3. Turn fire to low. Stir in milk and cream with the mushrooms. Sprinkle on the spices. Add dissolved corn starch. Cook on low, constantly stirring until soup thickens. Set aside. 4. Add milk to one bowl, and flour to the other (add a dash of salt and black pepper with the flour). 5. In a wok or deep frying pan, add cooking oil and heat on high. The oil is ready when you stick the handle of a wooden spoon into the oil, and bubbles form around it. When the oil is ready, turn the fire down. (Safety note: Never heat oil unattended.) 6. One at a time, dip onion rings into milk, and then into flour, coating well. Add to oil and

The finale I’d like to share with you is a healthy version of an all American tradition, apple pie. This version is full of flavor, but has NO regular flour or regular sugar. NO guilt in serving this dessert, great for family and friends that have gluten intolerance or need to watch their sugar intake.

4 apples, peeled, cored and thinly sliced Juice from 1/2 lemon 1/4 cup pure maple syrup 1/4 cup agave nectar 1 teaspoon cinnamon 1/3 cup raw oat flour 1. Place apple slices in bowl. 2. Sprinkle with lemon juice and toss. 3.Mix together maple syrup, agave and cinnamon. 4. Stir into apple mixture 5. Add oat flour and toss to coat. 6. Place filling in two separate glass pie plates. 7. Place in dehydrator and dehydrate at 115° for 6 hours, stirring occasionally. Add water if mixture starts to dry out. Maple Cinnamon Glaze

1 tablespoon coconut butter, softened 3 tablespoons maple syrup* 1/2 teaspoon cinnamon 1. Whisk all ingredients together to combine. Assembly:

Raw Apple Pie with Maple Cinnamon Glaze Crust:

2 cups walnuts, soaked until soft 2 tablespoons coconut butter 1 tablespoon agave nectar 1. Drain walnuts. Place in food processor and process until a coarse meal is achieved.

1. Place filling in four, 4” tart shells or one 9” pie plate that you have already prepared with the crust. 2. Place back into dehydrator for 2 hours. 3. Remove and top with Maple Cinnamon Glaze. *Maple syrup is not raw but used in raw food recipes. here may not be sleigh bells or snow giving us a white Christmas, but December can still be a festive month when you catch the holiday spirit and participate in the many events around town, especially those being offered at the charming, historic Hermosa Inn. This wonderful, luxury boutique hideaway is situated on six acres of quiet, tranquil desert. It was the original home and art studio of southwest artist Alonso “Lon” Megargee, who himself built the one-room, authentic adobe hacienda in the 1930’s, which he called Casa Hermosa, meaning “beautiful home.” Megargee decided to run Casa Hermosa as a guest ranch to supplement his artist occupation. He had an underground tunnel dug for guests to make a clean get-away during gambling raids. It now is the wine cellar. In 1941, Megargee sold Casa Hermosa and it remained a private residence with a few different owners, until Fred and Jennifer Unger and Art Cunningham purchased it 1992. It was their vision to renovate it and make it the charming 34-room desert hideaway it is today. They changed the name to the Hermosa Inn. Not Just for Out-of-Towner’s

the history and the ambiance, as well as the fabulous southwest cuisine, make it a destination that shouldn’t be overlooked. “We’re not just for special occasions, we’re a comfortable, rustic, “Old Arizona” inn with a contemporary southwestern atmosphere”, states Kendra Riley, director of communications. Two wonderful restaurants wait to serve you fresh, delicious meals. Whether you want a casual lunch or a more gourmet meal, you are in for a wonderful culinary experience. This past August, a casual dining restaurant was added, “Last Drop,” named after Megargee’s painting where the cowboy is giving his horse the last drop of water out of his Stetson hat. At Last Drop, you can enjoy breakfast, lunch and dinner with a lighter, less formal menu and atmosphere in a relaxing indoor setting, on the large patio or in the small, cozy bar with many of Megargee’s paintings. Live entertainment on the patio is performed Monday through Friday from 6:30 to 9:30 p.m. Chef James Ducas, who has been at the Inn for six years, was recently promoted to executive chef. He began his culinary journey at age 14 washing dishes, learned the culinary craft in New York with hands-on training, moved to North Carolina where he was executive chef at Pacific Café’ and, later, became partner and executive chef of Savoy in Asheville before moving to Arizona. Recently, Chef Ducas was been promoted to executive chef of both Last Drop and the four-diamond, award-winning restaurant, LON’s. With an acre organic garden just outside the

LON’s kitchen, growing herbs and vegetables, Chef Ducas is always creating and garnishing new dishes that are sure to tempt your palette. “I have fun with food. I love the smell and flavors and creating new dishes for the menus is my passion,” explains Chef Ducas. Festive Happenings

Start out the month with a complimentary wine tasting at LON’s on December 3. Then on December 13, 14, 20 and 21 enjoy Christmas Carolers along with the award-winning jazz vocal group, Mayneswing. For those who want to learn some new ways to serve holiday cheer, there is a Mixology crash course on cocktails class being offered on December 15. Also on that day is the Eighth Annual Ornament and Holiday Card Benefit where one-of-a-kind ornaments and holiday cards created by students from the Scottsdale Artists School are available for purchase. On December 21 and 22 you can sign up to make a Gingerbread House. Christmas Eve and Christmas Day will find prime rib, sea bass and pork loin

Don’t miss this family fun field trip to the enchanted ‘North Pole.’ The Grand Canyon Railway, an authorized concessioner of the National Park Service and the U.S. Forest Service, runs daily from Williams, Ariz., to the Grand Canyon’s South Rim. And every winter, the Grand Canyon Railway’s Polar Express comes to life on this holiday-themed expedition based on the classic children’s book written by Chris van Allsburg. Through January 2014, families can reserve seats aboard The Polar Express. A holiday favorite, this well-loved one-hour trip travels through the magical, starry-night wilderness to the North Pole and showcases a reading of the timeless story over the loudspeakers—while passengers read along with their own books—the view from the train highlighting decorative lighting, storefronts and other structures to bring the village to life. ward to a spirited collection of elves and other characters to pass out refreshments and provide continuous amusement to make the experience memorable. And there are plenty of opportunities to take pictures as moms and dads, grandmas and grandpas and boys and girls dance, sing and act out traditional holiday songs. Once at the North Pole, Santa Claus, his reindeers and helpers welcome travelers before Jolly Saint Nick himself boards the train for the return trip to Williams, making his way through each passenger car to greet every child and bestow them with a keepsake gift commemorating their belief in the spirit of Christmas. Valley residents Erica Gardner and her husband took their six-year-old daughter on The Polar Express a few years ago. “From the snowy wonderland to the decorations surrounding the hotel and adjacent property, you really felt as if you stepped into a magi-

cal land of Christmastime,” says Gardner. The three of them especially enjoyed the train ride at night, and their best memory was listening to the reading of The Polar Express while Santa’s ‘helpers’ passed out hot chocolate and cookies. Gardner also says seeing the wonder of the season through her daughter’s eyes is something she’ll never forget. “The Polar Express is, hands-down, the best family oriented event … during the holiday season in Arizona,” she explains. Four-year-old Alexa has traveled with her mom and dad and big sister to the North Pole for the past three years in a row. On the drive to Williams, their family watches The Polar Express movie to build excitement. And then once at their destination, her favorite part of the experience is riding on the train with Santa, especially when he presents her with her very own sleigh bell. There’s still time for you and your loved ones to embark on this memory-making, time-honored family tradition. Trips from Williams to the North Pole are offered most nights at 5:30 p.m. and 7:30 p.m. from Nov. 8 through Jan. 4, 2014 ($23 for kids ages 2-15 and $37 for adults). Matinee tickets are also available at 3:30 p.m. on select dates for $18 (children) and $32 (adults). Tickets may be purchased for Christmas Eve for $43 (children) and $69 (adults). In addition, the Grand Canyon Railway offers a Polar Express Package which includes a round-trip ride, one-night stay at the Grand Canyon Railway Hotel and breakfast and dinner at the Grand Depot Café. The package price, not including taxes, is $350 for two adults and two children. Passengers also receive a 50 percent discount on a future train trip to the Grand Canyon through the end of February 2014. Williams is located about 30 miles west of Flagstaff along Interstate 40. Parking is free and is available around the hotel and depot complex. Tickets will be available at will-call inside the historic Williams Depot and must be picked up by the traveler who made payment; a photo I.D. is required. It’s recommended that train-only guests arrive at least one hour before departure. If you purchased a Polar Express Package and you’re on the 5:30 p.m. departure, arrive in Williams around 4:00 for check-in, to pick up your train tickets and have ample time for dinner. The passenger cars are equipped with luggage racks near the ceiling so guests can bring coats, diaper bags, camera bags and backpacks; however, strollers may be parked outside the depot.

rom an outsider’s point of view, the holiday season in the Valley of the Sun may be a bit hard to imagine. After all, desert sands and cacti have never really been synonymous with the holiday spirit. But people in the know realize that December in Arizona is a great place to be during the most magical time of year. For those looking to wrap lights around something a tad bit more traditional than a saguaro (though there is nothing wrong with that), a quick trip to Flagstaff might just be in order. That is where Darrell Norman can be found, owner of the Arizona Christmas Tree Farm. Darrell welcomes people from all over the Southwest who come to cut down their own holiday tree, choosing from thousands of different shapes and sizes of Colorado blue spruce from across the farm’s three acres. “We have trees from about three feet tall up to over twenty,” says Norman, who keeps the farm open pretty much seven days a week 20 Paradise Valley Lifestyle | December 2013

from the day after Thanksgiving all the way through Christmas Eve. “On the weekends we tend to have out the hot chocolate and families are free to wander around and find just the right tree to take back home.” Venturing south to Tohono Chul Park in Tucson for offers visitors a holiday experience unique to the Sonoran Desert with their annual Holiday Nights event. The 49-acre park will use over 750,000 lights to illuminate its botanical gardens, complete with their own Desert Snowperson. As visitors stroll through the park, they can browse Tonono Chul’s many galleries and shops, or sample a winter treat or two while the sounds of the season play in the background. “We do Holiday Nights as our holiday gift back to the community,” explains Marcia Ring, who is Director of Marketing and Communications for Tohono Chul Park. “We have different bands and

other entertainment throughout the weekends, and we get about 1,500 people per night who come out and just enjoy the evening.” Beginning the last weekend in November with the Ballet Tucson performing “Nutcracker in a Nutshell,” Holiday Nights will continue at Tohono Chul Park through the first two weekends in December. Native-American Award Nominee Gabriel Ayala will perform along with The Desert Melodies and the Sonoran Dogs country western band on December 6th and 7th, while the final weekend will feature music from Domingo DeGrazia’s Spanish Guitar Band and Way Out West, as well as a magic show for the entire family. A winter wonderland of an entirely different sort can be found no further away than the W Hotel in Downtown Scottsdale. For the second year in a row the hotel will be bringing a 1,500-squarefoot hybrid ice skating rink to its rooftop pool area. The rink, called CHILL, is an eco-friendly sheet of synthetic ice that is actually constructed out of a fully recyclable polymer compound, which means there is no refrigeration or electricity required. Unlike last year, the 2013 version of CHILL will be situated atop the lawn of the hotel’s WET pool deck which will leave the heated pool open throughout the month. This will allow for visitors to choose between a dip in the water before or after a little bit of ice time. CHILL will be open to ages over five years old during the day, but when the sun goes down the scene will shift to a much more

adult-oriented vibe, complete with live music, DJs, and a variety of specialty cocktails. The W Scottsdale is even offering special promotional room packages with unlimited skating for those who might not want to make the long trip home. Clearly, Arizona boasts a holiday spirit that is as unique as the state itself. And it is easy to see that its residents would not have it any other way.

ecently, a young woman came into our salon to look at her fur coat. While she was in the store, we started chatting. She was talking about how much she loved fur, and how much most of the women her age love them too, but feel badly about admitting that they enjoy wearing their garments. The client revealed during our conversation that she had been at a charity event at an outdoor venue in Phoenix in January of 2013. In her words, “there were so many women wearing furs, but they all made excuses about why it was okay to wear their particular garment---they weren’t doing anything wrong--it belonged to their grandmother—they never bought one new, etc., etc., etc.”. This young gal could not understand how intelligent adult women could feel like they had to apologize for exercising their right to wear whatever makes them feel comfortable, glamorous, fashionable and good about themselves. As I think about the conversation, it’s a bit surprising to me that with all we have tried to do as a society in order empower women, many still feel like they can’t stand up for themselves when it comes to defending personal choices. Even more concerning is that women feel as if they have to justify their choices to anyone. It goes without saying that a vast majority of men would never put up with someone intimidating them about anything, let alone about their choice of clothing. The conversation inspired me to write this article about the upside of wearing fur. Maybe some of the very women who are not 26 Paradise Valley Lifestyle | December 2013

wearing their garments because they don’t want to “feel like they have to explain themselves” will realize that by wearing a natural product, they are supporting one of the most important causes of our time—preserving our environment. FUR IS GREEN. Real fur is an organic material. Fake fur and any other synthetic fabrics are made from petroleum products. These products do not break down easily and remain in landfills for centuries. Just like anything natural, fur products are biodegradable and eventually return to the earth. They will not pile up in landfills, exacerbating our ecological and environmental problem of waste building. FUR PROCESSING IS EARTH FRIENDLY. The main chemicals used to “dress” furs are table salt, water, alum salts, soda ash, sawdust, cornstarch, lanolin and other natural ingredients. Small quantities of formaldehyde can be used to protect fur follicles during dressing or dying and gentle acids such as acetic acid (better known as vinegar) are also used. Fur “dressing” and coloring are relatively mild processes as they must be in order to preserve the fur and maintain the natural beauty of the product. And, since most furs are available in an extraordinary array of natural colors, only a small portion of them are dyed. FUR IS A RENEWABLE, SUSTAINABLE RESOURCE.

Worldwide, the fur industry uses only part of what nature produces each year. The industry does this so that wildlife populations are not depleted and damage is not done to the natural habitat that sustains them. Generally, plants and animals produce more offspring than the land can support to maturity. Like other species, we live by making use of part of the surplus that nature creates. Conservationists define this use as “sustain-

able use” of renewable resources. Synthetics, as mentioned above, are made from the non-renewable resource petroleum. This is not consistent with the sustainable use of our environment. Production, transportation and disposal of this chemical can cause environmental problems. All furs used by the fur industry are abundant. Absolutely no endangered species are used by the fur trade. One of the goals of the fur trade is to help to maintain long-term ecological balance and to support wildlife management. Doing so also helps to ensure the industry’s future. FUR IS DURABLE AND RECYCLABLE. Well-caredfor-fur garments are long lasting and hardy. Furs are one of the few clothing items that are often passed down thru multiple generations. Most of the time, there are sentimental meaning and memories associated with a fur. Unlike most other textiles, furs can be remodeled and updated. Fur restyling is a very big part of business. Not only can a fur be made into another outerwear garment, but it can be repurposed to make handbags, pillows, keepsake teddy bears and many types of home accessories and gift items. Millions of tons of mass-produced, cheap disposable fashion garments are filling up landfills at a pace that the environment can’t possibly keep up with.
