Sponsored by Cullum Homes, The “Full Throttle Fashion Show” starred “McLarens, Martinis and Models.” The event started with cocktail hour that featured the ‘TripleM’ Martini. Cuisine for the evening was prepared on site by James Beard Award Winner Chef Chris Bianco, courtesy of Sub-Zero Wolf and Arizona Wholesale, the preferred appliance provider for Cullum Homes. Cocktails and big bites were followed by a preview of Cullum’s multi-million dollar homes currently available and under construction. Guests got the first glimpse of the project’s unique, underground “Car Bar” and saw the setting for 40 imaginative luxury homes designed to capture the diamond in the desert view of Camelback and surrounding mountains. The attendees then sat back and watched the engines roar, during the Full Throttle Fashion Show presented by Phoenix Fashion Week. Styled by Natasha Duran the show featured the high-performance excitement of McLaren.

THE CITY OF SCOTTSDALE MEMORIAL ACTION COMMITTEE SEEKING DONATIONS The City of Scottsdale Memorial Action
Committee (COSMAC) plans to design and install a memorial on the mall near the downtown City offices by Memorial Day 2015. The memorial will individually honor citizens of Scottsdale who lost their lives while serving our country on active duty. Emotional Eating Verses Healthy Weight Loss Article Dr. Julie Anné
I
t’s Saturday night, the kids are in bed, and it’s been a long hard day. Soccer camp, a burst pipe in the laundry room, and that comment by the neighbor. Your spouse won’t be home for at least another hour, and that ice cream is looking really good. You struggle with the thought, as the neighbor’s comment was about you having broken your date to walk the previous night, and you remind yourself it was just this morning that you renewed your commitment to stop overeating and to start being “good.” The familiar internal battle begins and you don’t want to think about it anymore. Working to push aside that imposing sense of “knowing” and rising pang of guilt, you reach for the mint chocolate chip ice cream and lie as you promise, “Just one scoop.” But that one scoop looks so small, so you add some more, and then the chocolate syrup and those yummy candy sprinkles you’ve been avoiding in the pantry. Hmmm, that “one scoop” tastes so good. And feels so good. And somehow, wonderfully, soothes the edges off of a really rough day. And you deserve it. Right? Even though that “one scoop” is leading to another, and then another and... then there’s the cookie dough for Christmas in the freezer.
Followed by the guilt.
Emotional eating is a seldom acknowledged, albeit primary factor, in the creation of weight issues and body-image concerns. Taken to the extreme, emotional eating can turn into Binge Eating Disorder, which is the most common form of eating disorder in America, affecting more than 4 million men and women. Emotional eaters turn to food to help comfort or soothe diffi-
cult emotions and/or feelings. Quite frequently, emotional eaters have a difficult time tolerating distressing emotions and interpersonal conflicts. They utilize food as both a coping mechanism and as a means to avoid feeling stressful emotions in the moment. What are some of the feelings that typically drive emotional eaters to food? At A New Beginning / TheHealthyWeighOut, clients most typically cite struggles with stress, loneliness, loss (or fear of loss), sadness, anxiety and boredom as primary emotional struggles which frequently drive them to overeat. Emotional Eating and Weight
Two thirds of American adults are now considered to be overweight or obese. While factors such as processed foods, inactivity and genetic factors are frequently targeted as causal factors, the presence of emotional eating is seldom mentioned. Overweight individuals who emotionally eat oftentimes attempt to curb their overeating by dieting, which can fuel a vicious diet-overeat-diet-overeat problematic eating cycle. Research repeatedly shows that the more people diet, the more they tend to overeat, leading to significant weight gain. This diet-overeat-weight gain cycle ironically makes dieting a consistent and reliable predictor of future weight gain. How do you know if you are an emotional eater? The following are a few of the most significant signs that you might be struggling with this prevalent form of disordered eating: • Do you frequently eat when you are not physically hungry? • Do you eat in secret? • Do you eat to make yourself feel better, to cope with stress, or to avoid uncomfortable issues? continued >

ake one chocolate lover with an idea, add it to a great city with passionate entrepreneurs, mix them together and you get a new business called Chocolate Tour of Scottsdale. It’s a chocoholic’s dream of taking an afternoon to discover new locations that will fulfill their craving of wonderfully rich tastes of chocolate in multiple varieties. How It All Began Ofelia Montelongo, CEO and founder, was born and raised in Mexico and moved to Arizona seven years ago. She earned her MBA in leadership from a university in Spain and recently left her career in the financial industry as a portfolio manager to dedicate herself to her new business. It was while studying in England this past summer that Montelongo discovered a Chocolate Tour of London. Being a true chocoholic, she went on the tour and realized it was an awesome idea. So, she decided that when she returned back to the states, she was going to take this 16

idea and expand on it. Upon her return, she contacted many small business owners in the downtown Scottsdale area to share her vision. On October 30th, the Chocolate Tour of Scottsdale held its first tour. In just a few short months, it has grown in popularity.
Bottled water is provide along with a pretty, small bag for items you may want to share later or for those items you may decide to purchase. A photo is taken of the group as well as small signs to hold when taking your own personal photos that mark any special occasion.
What to Expect? The two and a half hour walking tour is approximately two miles long and consists of eight stops. Presently, the tours are held on Thursday, Friday and Saturday starting promptly at 3 p.m. Groups are limited to 12 as many of the stops are in small establishments. Stops include Gloria’s Café, Chocolade van Brugge, Paula Jacqueline Cakes, Petersen’s Old Fashion Ice Cream, Classic Cakes & Confections Bakery, Caketini, Godiva Chocolate, and Sprinkles Cupcakes. On the tour Montelongo shares the history of chocolate and how it was considered a “food of the gods,” enjoyed only by the affluent and you sample truffles, cupcakes, baked goods, gelato and hot chocolate.
Sampling the Chocolate It was last November that Fred Verbeke and his wife Christine left their jobs and opened a small candy store on Marshall Way called Chocolade van Brugge. Here you will find more than 100 chocolate selections, chocolate coffee drinks and hot chocolate. Verbeke is a true chocolatier and his Belgium chocolates are made of only the purest ingredients, not with preservatives like those found in American chocolate, creating a smooth and creamy chocolate. I enjoyed four small pieces dark chocolate lavender, ganache with sea salt, crème brulee and one that had crushed ice cream cone added to the chocolate – it turned out to be my favorite. Each
bite was heavenly. Verbeke also made me a cup of hot chocolate to sample and it was without a doubt the best hot chocolate I’ve ever tasted. He combined dark and bitter chocolate with a few more ingredients and, wow, it was wonderful. Chocolate Lover’s Delight Ingredients: • 19.8 oz of brownie mix • 3.9 oz. of instant chocolate pudding • 16 oz pkg of frozen whipped topping, thawed • 1.4 oz bars of chocolate covered English Toffee
Chocolate Truffles Yields 5 dozen Ingredients: 18 oz pkg cream cheese, softened •cups confectioners’ sugar, sifted 3 cups seminisweet chocolate chips, melted 1 ½ tsp. vanilla Directions: In a large bowl, beat cream cheese until smooth. Gradually beat in confectioners’ sugar until well blended. Stir in melted chocolate and vanilla until no streaks remain. Refrigerate for about 1 hour. Shape into 1 inch balls. Roll truffles in ground walnuts (or any ground nuts), cocoa, coconut, confectioners’ sugar, candy sprinkles, etc. To flavor truffles with liqueurs or other flavorings, omit vanilla. Divide truffle mixture into thirds. Add 1 tablespoon liqueur (almond, coffee, orange) to each mixture; mix well.

his coming Valentine’s Day marks a significant anniversary for Arcadia Farms, the popular café and catering business in downtown Scottsdale. Little did owner Carolyn Ellis realize when she opened the restaurant in 1990 how successful her restaurant and catering business would become. Or, that after 25 years she’d continue to expand her business.
The Woman Behind The Scenes
Carolyn Ellis is a delightful lady with a wonderful vision and work ethic. She grew up in Richmond, Virginia, and spent the summers at her aunt and uncle’s farm. There she learned about the term “farm fresh,” which was prominent at family celebrations and included many varieties. Ellis incorporated this concept as one of the main components of her business by using local, organic produce since she opened. Ellis began her career in the banking industry with Continental Bank working in Virginia then moved to Colorado. In 1977, her job moved her to Arizona and she later switched careers to the real estate industry, opening her own real estate firm. At the same time she decided to go to culinary school. Later, she purchased the building her restaurant is in. With the down turn in the real estate market, Ellis was prompted to switch careers again. So, in 1990 she opened a bakery and carry out market. Her customers 20

soon requested that she serve lunch, and within two months, she was serving lunches. For a number of years, she ran the cafés at many local museums, including the Heard Museum, the Botanical Gardens and the Arizona Science Center. The restaurant and the catering are two separate businesses she equally enjoys. On the catering side of her business, they serve 800 lunches daily to corporations and 400 bridal showers a year. “The women in the community kept us in mind when they entertained,” Ellis says. “I’ve been blessed to have had that support and it has continued. I’ve watched their children grow as we catered their baby shower, graduation party, bridal shower, rehearsal dinner and wedding. Our business has grown one client at a time. We know exactly what items they like and we make sure we provide them.” One of her biggest supporter is her husband of 30 years Howard Sullivan, a retired Arizona State University professor. She has one child and three stepchildren who all live out of state. Winning Combinations
Presently, the café is located in three small buildings. It has a quaint, cottage-life feeling with small, separate rooms which create a cozy atmosphere and there’s a wonderful patio that wraps around the restaurant and seats 100. A small marketplace is across
the street; it carrues baked goods and items to go. Modern American cuisine is offered in the restaurant and all varieties of cuisines are offered on the catering side - Mexican, Latin, Chinese, Italian, Thai, Asian, French, etc. I was delighted to see a wide variety of menu items that will please the most discerning palette. The breakfast menu includes fresh baked goods from their bakery. Eggs, grilled chicken apple sausage, applewood smoked bacon, breakfast potatoes and seasonal fruit are just the beginners. Choices of eggs; omelets; crepes; French toast; breakfast bruschetta; egg strata cobbler; smoked salmon; breakfast Panini; wild mushroom, spinach and leek tart; and a breakfast quesadilla can make it difficult to decide what to order. I started my tasting with the egg strata cobbler served with grilled vegetables, sausage and cheddar cheese. It’s a generous portion and was very good. Next, I sampled the French toast that is served with fresh strawberries and chicken apple sausage. Very yummy! I really enjoyed the wild mushroom, spinach, leek tart as well as the crepes, “Croque Monsieur,” made with rosemary, ham, cheese and a delicious Béchamel sauce. Definitely a repeat for me on a future visit! A popular item on the lunch menu is the strawberry chicken salad served with fresh strawberries, toasted almond, mixed greens and poppy seed dressing. Other items include a wonderful selection of cheeses from the artisanal cheese plate which is served with fruit, almonds and assorted toasts; a crab and avocado
tower; trio of bruschetta; a grilled chicken and vegetable quesadilla; crab cakes; five gourmet sandwiches including a turkey and brie and a warm grilled ham; plus seven fresh organic salads which include a pesto grilled shrimp salad; and a Arcadia Greek salad. Save room for dessert. The dessert menu includes a warm apple-cranberry crisp, chocolate pecan pie; salted caramel budino; and a few others. But, if you haven’t tried their popular baby cakes, which come in eight flavors, you really must. I tasted the Chocolate Raspberry, the Coconut and the Tuxedo and each was very moist and oh, so good! They are larger than a cupcake, perfectly decorated and enough to share. Being a chocolate lover, I really enjoyed the Chocolate Raspberry and plan on making it part of my future birthday treat for friends. Also, Ellis is writing her first cookbook to be published later this year. It will include tips on entertaining, photos of tablescapes, music selections and some of her secret recipes. What began as a marketplace and catering company evolved into café, gourmet marketplace and full service catering and event planning company. Two private dining rooms and a courtyard are available to rent for special occasions and small weddings. A new, larger marketplace will be opening February 14th to mark the 25th year of serving quality items. 3 Simple Steps to Healthy Lunches Article Nancy Backues
I
walked into the kitchen exhausted. After endless cries of “Mommy,” drinks had been brought, questions answered, extra snuggles given, bedtime fears kissed away, and both kids were finally asleep. I looked around the kitchen. I had been working hard at motherhood for 15 hours straight, and I was nowhere near done. There were dishes to be done, counters to be wiped, floors to be swept, permission slips to be signed, and coffee to be prepped for the next morning. Then my weary eyes fell on a familiar sight. Two empty lunch boxes. UGH! In addition to everything else that stood between me and my bed that night, there were still two lunches to be made. As a mom of two school-aged children, I have a passionate lovehate relationship with packed lunches. I LOVE providing healthy, nourishing food for my children, but I dread the process of packing them every…single….day. Whether it’s the night before or the morning of, it seems there’s never a convenient time for lunch packing. We’re either rushed to get to bed or hurried to get out the door, so we grab anything that’s handy with no thought to what’s nutritious. I vowed to make a change. Right then and there, in that kitchen, I swore things would be different in our home—at least on the lunch-making front. And with a few small changes, that’s exactly what happened. 1. Make it simple. I wanted to bring my kids on board and teach them to be responsible for making their lunches. After all, if they made it, they would be more likely to eat it, I rationalized. But at 7 and 9 years old, it would have to be a pretty simple plan. That meant a lot of easy-to-grab foods: granola bars, applesauce packets, cheese sticks, individual-sized yogurt, etc. As a general rule, prepackaged food is not my first choice, but I had to allow some exceptions for 26

this to work. I eased my guilt by searching for products with the fewest ingredients (for example cheese sticks and applesauce) and without dyes and preservatives (organic yogurt and granola bars). 2. Make it fun. In a rare, not-like-Mom move, the new system allowed for a treat every day. Sometimes the kids were allowed to choose the treat (a cookie or piece of candy, fruit chews, etc.) and sometimes I threw something in as a surprise (a note from mom, a silly drawing from dad, etc.). We pack lunches together as often as possible, and it’s fun to brainstorm new and creative “treats” to include. 3. Make it healthy. If left to their own devices, my kids’ lunches would consist of foods high in taste, but low on nutrition. After gathering ideas from Pinterest, I came up with a simple list to help them create a nutritious lunch. They simply needed to choose one from each of the following categories: protein & grain (nutbutter or turkey/ham sandwich), cheese and crackers or pretzels, chips and hummus, trail mix, yogurt with muffin or granola bar), veggie (carrot or celery sticks, mini peppers, broccoli or cauliflower florets with dip or dressing), fruit (apple/applesauce, mandarin orange, raisins or other dried fruit, banana), treat (cookie, piece of candy, fruit snacks, fruit leather/strip), and a drink (water bottle, juice box, or milk). We still encounter nights when we’re rushed and I end up making lunches long after everyone’s tucked into bed. And there are some nights when the options are limited, because I haven’t been to the store in a while. On those nights, we do the best we can with what we have, and we do better once I’ve had time to restock. It’s not a perfect system, but slowly—little by little— my love-hate relationship with lunch-packing is leaning a little heavier on the LOVE side.

Parting Thoughts
You Say Potato, I Say Love at First Bite Words Denise Snodell
O
ne day, when you least expect it, you might walk into a fine dining establishment and fall in love. It happened to me. There I was, expecting a nice meal, good company and nothing more. The usual suspects were present: Favorite people and all the trappings of a place where you don’t have to struggle with greasy fingers and a ketchup packet. After a dainty glass of wine and some conversation, I found before me a plate of artfully arranged tenderloin medallions, sprigs of pencil-thin asparagus and what looked like ordinary scalloped potatoes. I took one nonchalant taste of the latter dish, and KAPOW, there was no turning back. People. These were no ordinary scalloped potatoes. Let me say here and now, I can’t believe I’m devoting an entire column to a potato experience. I don’t consider myself a foodie, especially when family life gets busy. Sometimes, as the dinner hour approaches, my expletive rolodex spins out of control. I say to myself, “Blankety blank. Why does everybody in this house get hungry every single evening? I just fed them yesterday.” Most of the time, I’m all about short cuts and freezer diving: “Hey guys, what’ll it be? Stouffer’s tartare, or Mrs. Paul’s au poivre?” But then one day, out of nowhere, I find myself swooning over spuds. Unbelievable. Despite it all, even a Zagat rube like me can tell the difference between extruded taters mixed with cream of chicken soup and recently unearthed Yukon Gold baked to a subtle al dente perfection in…what? What exactly were the magical ingredients? I had to know. I just had to know the chef’s secret. All conversations swirling around me turned to background noise. I took more 34

bites. The dish was heavenly. I knew if I could confirm the cheeses involved, my cooking repertoire would take a new direction. Was that Swiss I tasted? Probably. But I knew there was more, much more than one cheese. It was time to break a rule and go full-out CSI. Love can do that to a person. My husband has always had a thing for potatoes, and suddenly, apparently, I did too. I had to make this dish at home. They say a way to a man’s heart is through his stomach. In this case, cholesterol would clearly be en route to my guy’s ticker as well, but still. I flagged down the waiter and whispered, “Would you mind asking the chef what cheeses he used in the scalloped potatoes?” There might have been a flinch in the waiter’s face, but I didn’t care. My oven back home was already pre-heating in my mind. I was going to make this dish. The waiter kindly, discretely reported back to me, “Swiss and parmesan.” Then, he took off like a thief in the night. I suppose at this point you’d like a special scalloped potato recipe. You are, after all, holding a lifestyle magazine in your hands and patiently tolerating this odd tale of passion. Here it is: Simply Google “scalloped potato/Swiss/parmesan.” That’s it. If you can momentarily block out your cardiologist’s face, you’ll find some nice choices. I picked one that also included heavy cream and garlic. Worked like a charm. Funny. I’ve always known the French call potatoes “pommes de terre,” which translates to “apples of the earth.” But now I understand why.
