eeping the ‘look’ of your bedroom fresh is always a challenge. Because the bed is the focus of the bedroom, creating a seasonal look or nice transition between summer and winter months can be easily accomplished with bedding changes. Simple, but very effective, is to change the color of your sheets. If your sheets are a neutral color like white or ivory, try using a stronger color in the same color palette as your bedding. If you have a duvet or throw on the bed, changing that as well can complete a total transformation while keeping the decorative pillows like euros and shams intact. Even simpler but just as effective is changing one or two decorative pillows to a more dramatic or bold color or texture. This can freshen the look any time you have the urge. For instance, if your bed is a monochrome color a well placed toss pillow in a poppy red, teal or tangerine can really make the bed ‘pop.’ Draping a complementary throw blanket over the end of your bed can raise the level of interest even higher. Creating a seasonal look can be easily accomplished with a few well chosen bedding colors and textures, and provides the opportunity to change your bedroom with the seasons. T

he view of the Phoenix Dream Center from Grand Avenue fails to convey what good is being done inside. Behind the walls of the old Embassy Suites hotel, about 300 people are hard at work, rebuilding their lives. “We do not consider ourselves a homeless shelter by any means,” says Pastor Brian Steel, director of the Phoenix Dream Center. “This is a very clean, strict campus. Everyone here is on an exact path and map. They have so many credit hours to graduate, so they’re in classes here from nine in the morning to four in the afternoon, and in the evening they’re doing outreach. We really believe that true healing can come through them being able to go out and help serve the needs of other people.” Residents consist of people rehabilitating themselves, kids who have aged out of the foster care system and are in need of a transition home, and victims of sex trafficking. All of these people are receiving an education in life skills and are expected to meet certain goals. “There are certain key components to life, and we call those milestones,” explains Steel. “Some milestones are very basic. like a driver’s license, an ID, getting health insurance. There are 112 dif-

ferent milestones for everyone who comes through this program. We have a pool of 22 different teachers who volunteer from different professions. We’ve got Phoenix law-enforcement, retired college teachers, who all come and teach a real wide variety of classes, anything from spiritual, Christian-based classes to very practical classes like ‘Dress for Success.’” Curriculum is aimed at helping members of the program reach their milestones and ultimately garner the skills they will need to thrive when they re-enter the community. Meanwhile, they are expected to pay it forward during their stay by participating in the Dream Center’s outreach events, which is a significant component of their charitable efforts. The Dream Center enters the community about 110 times a week to find new people who could benefit from their programs, or to help feed and clothe those in need. “We’re called the Dream Center because we believe that it’s not just that people don’t have a job, it not just that they don’t have an income and house and family. Many of our people have already had that stuff, but they didn’t have the life skills and behaviors to keep those things,” explains Steel.

The importance of continued support is not lost on Pastor Steel. “In the past 4 years, we’ve had a success rate of 96 percent who, within one year of graduating, have not relapsed and are still maintaining socioeconomic status,” says Steel. The Dream Center is heavily volunteer-driven, as the budget for payroll is limited. About 400 volunteers come through the Dream Center every month. The Dream Center requires a spectrum of involvement from their volunteers. Some get background checks and undergo training so they may help rehabilitate sex trafficking victims. Others visit juvenile delinquent centers on outreach events. The Dream Center welcomes all who would like to get involved. To learn more about volunteer opportunities, it is best to attend one of their regular tours, which run every Tuesday at 12 p.m. and every first Saturday of the month at 9:30 a.m. The Dream Center also accepts financial and material donations. The Dream Center, much like a college campus, offers health services, a licensed counseling office and three different churches. Members of the program receive help with everything from signing up for insurance to job placement. A new laser tattoo removal machine has recently been acquired in order to help newly-rehabilitated individuals shed their gang affiliations. A community garden will be replacing the pool, allowing the Dream Center to grow some if its own food and provide a peaceful pasttime and quiet place to study. The recent addition of several solar panels has made the Dream Center one of the greenest non-profits of its size. Most unique, perhaps, is that the Dream Center is one of the best-equipped organizations to aid victims of sex trafficking. When the Dream Center realized the prevalence of the issue in the area, it became a priority to provide care and rehabilitation for the victims. “We have a waiting list. It’s just heartbreaking,” says Steel. “We’re one of the top five trafficking shelters in the nation.” When they began the program in 2009, the Dream Center could only accommodate two sex trafficking victims at a time, but thanks to a recent renovation by 10 luxury home designers, the Dream Center’s Hope Wing, as they call it, now has 33 beds, all fit for a princess. This month, the Dream Center will begin more renovations with the help of six other designers to add 18 more beds. The rooms are built to accommodate the victim’s emotional progress (girls gain roommates as they progress through the program) and, because 30 percent of the girls are pregnant when they enter the program, they are able to accommodate their children as well. Each victim’s rehabilitation program is specifically tailored to her needs. Sociologists and psychologists sign off on progress and, once girls reach the final stages of their rehabilitation, they typically receive sponsorship from a local business or church. They also receive a group of mentors who will help teach practical life skills, provide professional networking, and offer continued emo-

Matt Suess PVL: What brought you to Arizona?

PVL: Where did you study art?

Suess: I moved to Arizona from Cape Cod, Mass., back in the fall of

Suess: I am a self-taught artist and a self-taught photographer. I never went to art or photography school and instead learned from life experiences. The path has been long - 24 years now - but ever so enjoyable. But even before I started my pro career, photography was a hobby of mine, starting when I was 12 and had my own darkroom.

Once I moved to Arizona I ended my career as a photojournalist and began my new career as a full-time fine art photographer. Being based in Arizona has allowed me the opportunity to photograph and sell my artwork at juried art festivals in California, , Colorado, New Mexico, Arizona, Utah, Texas and Oklahoma. PVL: Describe your art. Suess: With my fine art photography, I strive to push the limits of

the art form by constantly experimenting with new techniques and creative possibilities all while staying inside my unique style of high contrast, bright and colorful imagery. The final prints you see are not straight from the camera and usually involve hours, days, even weeks of post processing and enhancing in my digital darkroom. For me, out in the field taking the photograph is just the first step in a long process of perfecting my final vision. PVL: What inspires you?

PVL: Where can people view your art? Suess: The easiest way to view my art is on my website and photo blog,

MattSuess.com but viewing artwork online fails in comparison to viewing it in person. That is why I make myself and my artwork available at numerous art festivals and exhibitions throughout the year in five different states. My exhibition schedule is on my website and updated often. PVL: When is your next show? Suess: For 10 weeks, from January 11 through March 23, 2014, you can find me in the Big White Tents at the Celebration of Fine Art located on the southwest corner of Hayden Road and Loop 101 in Scottsdale. The show is open daily from 10 a.m. to 6 p.m. and you can view my artwork in my studio (in addition to a 100 other artist studios), chat with me, and sign up for occasional free demonstrations I will be having there.

Suess: I draw inspiration from within. As a photojournalist for 17

years I had to photograph some of life’s most ugly moments. But since 2006 I put myself in a position where I didn’t have to photograph the worst life has to offer and focus my work on nature. Since 2006 I have only photographed what I like to see and what gives me pleasure. Mother Nature gives me inspiration nearly every single day, and with the travels I normally do throughout the year I am never at a loss for material. 18 Paradise Valley Lifestyle | January 2014

After deciding to sell a variety of successful dealerships, Koeppel saw an opportunity to start fresh out West. But this time he could build his new endeavor around his lifelong passion of stylish clothing and fashion. “I was toying with a couple of different concepts when I came out here,” explains Koeppel. “What I found once I arrived was a huge void in the market. There were little boutiques and giant department stores, but there was absolutely nothing in between.” Looking to fill that need, Koeppel opened the doors to the original Scottsdale Jean Company (SJC) in 2005, with an original shop located near Raintree & the 101. His instincts proved right and the company took off from the very first day. Within months SJC became Arizona’s largest independently owned retailer of designer jeans and clothing. In early 2012, Koeppel decided to move the store to its current location in Gainey Village. “I was looking for something with a greater visibility, but equally as important is our current location’s centralized convenience,” says Koeppel. “We stayed away from the malls because it is important for our customers to be able to get here, park 20-feet from the door, and get in and out very easily, all while having an outstanding shopping experience.” 20 Paradise Valley Lifestyle | January 2014

Contrary to what the company’s name might imply, SJC offers so much more than just jeans. Spread across its impressive 8,000 square feet of retail space is a wide array of tops, dresses, casual clothing, shorts, shoes and accessories for both men and women, with an inventory that encompasses over 60 of today’s hottest designer brands. SJC is also proud to be the state’s exclusive independent retailer of Kiehl’s full line of premium skin, hair and body care products. New inventory arrives daily so there will always be something new no matter how often you visit. “We are constantly looking to bring in items and brands that will have a large appeal to our clients,” says Koeppel. “Only about half of our mix is jeans, with the rest being other great items. The misconception some have is that we just carry jeans because of our name. We’re pretty much a one-stop shop.” That essence of Scottsdale Jean Company goes well beyond just great looking clothes. It’s also about the shopping experience and outstanding customer service. Every member on staff is a trained fit-specialist, focused on finding the right fit and style for all body types. They also offer on-site alterations for all of their jeans. But it is their children’s play area that shopping moms and dads value the most. “We literally have customers with younger children, who


when asked where they want to go, ask to come to SJC,” says Koeppel, whose own children were young when he first opened the store so he installed the play area out of necessity. “Just this last weekend I had a long-time client stop in with his two little ones. The kids were crying when it was time to leave because they we having so much fun. It happens more than you can imagine.” Shortly after SJC first opened, Koeppel recognized that his customer base was far beyond just Arizonians. A fair portion of the sales was stemming from Scottsdale’s role as a tourist destination. People from far and wide were buying his clothes and he disliked the idea that the relationship had to end when they returned home. Out of that he saw the need for a website so that people all over the world could shop at SJC. Today, SJC’s entire inventory is online and updated every day, ready to ship anywhere in the world at the click of a mouse. Koeppel is proud of his company’s accomplishments over the past eight years, and is excited for what the future holds for SJC. He also rests easy knowing it looks as though he made a pretty shrewd career move out of the automobile industry and into retail eight years ago. “I was looking for something that I could enjoy and that I could grow,” he says. “Look, the bottom line is that it is a lot easier to sell great clothes than it is cars. Everyone enjoys coming here, having an excellent experience, and leaving with clothes they love and will get much use out of. Our goal is to make the whole experience easy and enjoyable. aking a house a home takes work. There is always something to repair or clean. The organization of storage and maintenance of the property along with the lighting, decor and food prep duties seem to go on longer than a Little House On the Prairie T.V. marathon. But all of this work is worth it if it will make a house a home. Right, Pa? Ma? Most all parents would agree that they want a beneficial home environment for their children. (Is there anyone wants a dirty, unkept, uncomfortable, unorganized, place to live...don’t ask your teenage son). At the same time, is our effort, time and money spent with the wrong goal in mind? Are we focusing on an inferior investment of keeping house rather than making it a home? Could it be that our desires to do for the house is secondary to what a child ultimately desires in a home? Think back. What would you say was the most valuable assests you appreciated in your childhood home? Would it be the immaculate outdoor lighting? Having everything dusted and mopped? Magazine-perfect decor? Or, would there be another list that would speak to the heart of the home rather than the housekeeping of the home? ou can imagine my surprise to find a wonderful Italian Trattoria tucked away at the Scottsdale Seville at Scottsdale Road and Indian Bend. Especially since it’s been there for almost 12 years and I just discovered it. I am embarrassed to admit this one snuck by me, but I am delighted to share my dining experience. From the moment I walked in, I liked the warm, inviting ambiance. The restaurant is decorated in a wonderful soft contemporary motif. Beautiful wood tones make it casual and cozy. There’s a patio off the lounge area, which has a nice intimate feeling. And, the small bar with a flat screen TV had guests enjoying appetizers and a few beverages. I liked the large glass window letting diners have a peak at the food preparation and the brick pizza oven. I was greeted by Michael Mendoza, one of the general managers. He along with Daryl Monica, the owner’s son, are very personable and greet everyone as if they were family. During my visit I noticed many of the guests appeared to be regulars and each was greeted sincerely, with little personal tidbits. “We love what we do and we take the time to really get to know our customers,” says Mendoza. A Menu That Is Sure to Please

I started my evening with a wonderful appetizer, the Prince Edward Island Mussels served with a delicious homemade tomato sauce of capers and onions. There was enough to share and it was very tasty. In fact the sauce was so good; I couldn’t resist dipping my bread into it. So yummy. Speaking of the homemade bread, there were two kinds served, garlic and rosemary focaccia and oregano, parmesan and romano 26 Paradise Valley Lifestyle | January 2014

accompanied with a creamy dipping sauce made of herbs, roasted red peppers and romano cheese. Beware: the breads and sauces are so enjoyable you could make a meal out them. Next, Chef Vinny personally prepared and delivered his favorite entrée: the grilled chicken and shrimp penne pasta made with pesto cream sauce and sautéed artichokes. It was delicious. I had to force myself to stop from finishing it as I knew I had more items to sample. Being 100 percent Italian myself, I had fun sharing stories with Chef Vinny about our Italian heritage and what part of Italy our families are from. I discovered he moved from New Jersey, his parents owned a restaurant, his grandfather was a baker and he also owned restaurants in New Jersey before relocating to Arizona. “It’s in the blood,” says Chef Vinny. “We make people feel like they are at home. Our most important recipes is love.” A Thin Crust Pizza Like No Other

With 16 gourmet pizzas to choose from, you can’t help but pick a winner. I thoroughly enjoyed the Sausage Caramelized Onion that’s hand tossed and baked in a fire pizza brick oven and has a delicious pecan wood flavored crust. The crust, although thin, had a nice crunch to it. Mendoza shared that Chef Vinny has a secret ingredient in the pizza that makes it so good. “We make food to make people happy,” shares Daryl. “And, with my dad, it’s not only a job, it’s his hobby.” There are 10 different sauces used in their meals, so it’s hard not sticking with your favorite and forgoing sampling all the other items on the menu. I had to do just that but was glad to sample the Chick-


en Saltimbocca. It’s a chicken breast layered with prosciutto, spinach, feta and mozzarellas cheese in a pomodoro sauce served with a side of penne pasta. I can see why this is one of the popular house specialties. Mendoza suggested I enjoy a glass of wine with my meal and after I described to him that I like a lighter dry wine, like a merlot, and he came back with a glass of Negroamaro from Salento, Italy which has now become my new favorite! They have a wonderful selection of other wines and customize their wine list to meet their customer’s tastes.

Like any good Italian, I had to sample the homemade cannoli and I wasn’t disappointed. The crust was thinner than most cannoli shells and the filling had a creamer consistency with mini chocolate chips. Another popular dessert is the Panna Cotta, which is Italian custard with a scrumptious Grand Marnier caramel sauce. Be sure to check out their weekday $5 lunches and the pizza special served on Monday and Tuesday evenings. The pizza special for two includes one of their delicious 13” gourmet pizzas, served with a small salad and a glass of Chianti or Pinot Grigio or draft beer. The portions are large so you’ll definitely want to go hungry. I definitely plan on returning with friends to share this delightful experience, wonderful food and warm atmosphere. And, as my grandmother Rosina would say, “Mangia! mangia!”(“Eat! Eat!”) and enjoy.

ell, it’s that time of year again. You know what I mean: the one after the holidays when we all make New Year’s resolutions to lose weight and get healthy. I want to challenge you to rethink how you look at “losing weight.” Instead of focusing on a magic number on a scale to gauge your success, I want you to look at the bigger picture, your health. Most of us take our health for granted, and what an amazing gift it is, until it’s compromised and we no longer have it. As you become more in tune with your body and more aware of what you’re consuming as fuel by choosing clean, real food, that number on the scale will fall into place. 28 Paradise Valley Lifestyle | January 2014

My journey to finding true health started 10 years ago when I was diagnosed with stage 2 Hodgkin’s lymphoma at age 31. I had no history of cancer in my family, yet here I was, a mother of a two children, ages 5 and 2 1/2, with essentially one foot in the grave. While I pursued medical treatment for my disease, it also seemed logical to me that what I really needed to do was transform what I ate and put in my body, not only for myself but also for my children’s health as well. The journey I have walked over the past decade has left me with a passion to help others transform their health and the quality of their lives.


We have become a nation that consumes food like any other product, and it’s no surprise that we are the sickest nation on the planet. Our bodies were never designed to process and break down all these foreign substances and chemicals that we call food today. As a result, we gain weight and from that weight, diseases develop in our body. Someone who is 40 percent overweight is twice as likely to die prematurely as is a normal-weight person. As individuals, we need to take responsibility and reclaim our own health, and it all starts with eating real, clean food!

Week 2: Choose two fruits and/or vegetables with every meal. Eat a minimum of two different fruits or vegetables (preferably organic because conventional produce is full of pesticides and chemicals) with every breakfast, lunch and dinner.

Here are my suggestions for a new way to make lifestyle changes that support better health and quality of life.

Then go through your cupboards, pantries, refrigerators and freezers, and get rid of foods that contain chemicals (represented on labels by words you can hardly pronounce or don’t know the meaning of).

Week 4: Focus on the quality of the meat you eat. Choose meat that is locally raised within 100 miles of where you live. Try to choose all-natural, grass-fed, hormone-free, pesticide-free and antibiotic-free meat.

This simple four-week plan will help you get started with realistic goals you can achieve and move you toward greater true health, not just losing weight.

W

e lifted our umbrellas with our carry-on bags in hand and began the upward climb. The rain was coming down, but that didn’t seem to stop progress. As we walked onto the plane, people were slowly shuffling to their seats. I found my spot, sat down, buckled the seat belt, and was ready to go. It seemed like the rain wasn’t going to cause delays until lightning started to appear in the distance. And when the lightning appeared, everything stopped. No more passengers could load the plane. None of the crew could direct the plane for take-off. So, we waited. Ten minutes went by with hopes that the storm was passing over. But those ten minutes soon became a long wait. I was flying home from a vacation at the beach. I had just spent days walking along sandy beaches with the ocean’s waves crashing into the shore. The change in scenery was refreshing. Yet, as I sat on the airplane waiting, all I could think about was home. For some people, home represents an actual physical dwelling, where you can relax after a long day. Others might correlate the thoughts of home with family and friends with whom you enjoy spending time. Home might be a community of people at your church, work, or school. We need places of belonging. We need a safe haven where we can breathe. When I was sitting on that plane waiting to come home, I wasn’t just longing for a particular dwelling. I began to think about the airport and where the car was parked. I thought about driving through a city where all the buildings look familiar and the people at the grocery store know my name. While we need adventure and novelty to feel alive, we also need places that are familiar. We need moments where we don’t have to have everything figured out or put on a strong presence.

Finally, everyone made it onto the plane. The captain and crew were excited to be leaving. However, one more lightning strike kept us grounded for ten more minutes. As we journey through life, the road is not always smooth. Unexpected events can try to derail or distract us. We might be going through our day and get an unexpected call about a family emergency. We might get an undesirable health report from a doctor, or a family member may decide to walk out of your life. These events can make our lives seem less familiar. Not everyone’s thoughts about home make him or her feel excited. When events try to shake us, our association with “home” might begin to change. As the saying goes, “home is where the heart is.” When we limit home to a location, we can miss some of the wonderful aspects of doing life together. There will be things in your life that will change as your season of life changes. You might move across the country, change jobs, or lose someone you love. Yet, you can always create places of “home” where you can rest and enjoy the people who you care about most. As the plane took off, everyone was excited to be headed to his or her destination. There were business travelers, families who had gone on vacation, and people going to visit relatives on the plane.
