This One’s for the Guys

ecently my husband and I have been discussing the phrase, “Men are from Mars, women are from Venus.” While we know that idea has been refined since the relationship-advice book came out years ago, sometimes it still seems to ring so true. So as I began planning this month’s issue with its focus on things of interest to men, I realized I would have to think outside the box of what I typically produce. And I’m so glad I did. (Thankfully I didn’t have to go to Mars to do it.) This one’s for you, guys. I started by asking myself, “What is something I don’t necessarily enjoy but my husband does?” That’s when the idea hit me. Golf. Though I’ve never really understood the hype about this sport, my husband has spent hours trying to teach me technique. He emphasizes the importance of enjoying a sport together, so I’ve decided I can enjoy this one thing just for him. And Phoenix is certainly the place to enjoy golf, boasting some of the premier courses in the country. We are excited to share with you some of the best courses we’ve found. And for all those grill lovers out there, we have some great recipes for healthy grilling on Dad’s Day, along with a few other masterpieces from nutritionist Suzette Zara. Does grilled portobello burgers sound amazing? How about hearty-yet-healthy stuffed peppers with cream cheese and fresh jalapenos? Is your mouth watering yet? Mine is! Check out our What’s Cooking? article for the instructions. In light of celebrating Father’s Day this month, writer Casey Gibbons inspires dads in our Parent’s Corner. Whether you’ve been a father for a few decades or are a nervous daddy to be, these real life stories will inspire walking out being the best daddy by example.

Update Your Fitness Knowledge Answers to the Top Three Questions Men Have about Their Bodies Article Jenna Damron

T

he world of fitness has progressed in such a way that the known science behind training isn’t the same as it was in the 1980’s world of bodybuilding. Consequently, there are many “old school” trains of thought that may or may not be accurate. For someone new to fitness or weightlifting, or even a seasoned veteran, this can often lead to many misconceptions and confusing information. As a trainer at Pulse Fitness, I often hear alot of the same questions from my male clients. 1. How do I gain muscle in my upper body? It has been long known that progressive overload (that is—a gradual increase of stress, or loads used, placed upon the body during exercise) leads to hypertrophic gains, or muscle growth. However, it is important to realize that there are three specific mechanisms for hypertrophy. These are: mechanical tension, metabolic stress and muscle damage. So... how do I train using these three mechanisms?

Repetition Range:

A repetition range of 6-12 maximizes muscle growth through the mechanism of a build-up of metabolites in the muscle, a.k.a. metabolic stress.

16 Paradise Valley Lifestyle | June 2014

Appropriate Load:

Research does not support using a load less than 65% of 1 rep maximum, even with increased repetitions. The load is not sufficient enough to create muscle damage and/ or metabolic stress. It has also been shown that training to complete fatigue or failure is optimal for muscle growth. Essentially, heavy weights = big muscles. Rest Intervals:

Medium rest intervals (60-90 seconds) between exercises allow for full strength recovery but still create enough stress and muscle damage to maximize muscle size gains. Total Training Volume:

It has been shown that two to three exercises per muscle group is sufficient to produce significant muscle size adaptations. At least two exercises should be performed that work the muscle in the fully lengthened position. Additionally, at least one exercise should be performed that works the muscle in a medium to short length. This maximizes the benefit that can be received through the mechanism of mechanical tension.

2. Is cardio really necessary? While weight lifting can increase resting metabolic rate and burn calories, it IS important to do cardio. Now don’t get me wrong, I am not telling you to spend hours on the elliptical trying to sweat out those extra pounds as most misguided women (and some men!) often do. In fact, more fat-burning benefits can be obtained through short, high intensity intervals. At Pulse Fitness, we call this metabolic conditioning, or metcon. This type of training should increase your heart rate to greater than 85% of its maximum, then allow for a recovery time. Total time spent doing metcon can range anywhere from 4-15 minutes. One of my favorite high-intensity interval workouts to do is Tabata. This involves eight 20-second intervals each followed by 10 seconds of rest. A multitude of exercises can be performed in this fashion, including but not limited to: treadmill sprints, kettlebell swings, jumping lunges, plyometric pushups and many more. This type of cardiovascular training is more effective than aerobic training in increasing fat loss while also increasing growth hormone, metabolism and testosterone release. It’s time to finally pair your cardiovascular training with your weight training to maximize your results.

We are a family-owned business servicing the Phoenix valley since 1998.

3. As a male, what are the top supplements I should be taking? Supplements, if used correctly can be a valuable tool to enhance physical training. There are two main supplements I recommend to all of my male clients. Protein Powder:

Protein shakes can help increase your total daily calories while increasing the percentage of protein found in the diet. Both of these factors are highly important when trying to gain muscle and lean out. Without proper caloric and protein intake, your body does not have the building blocks necessary to activate the pathways that lead to muscle gains and recovery. When searching for a protein powder, you want to look for one that has the first ingredient as whey protein isolate. Casein and whey protein concentrate are other ingredients that can be used. Soy protein is among the lowest quality and is not in a form where the body can digest and use it. Branch Chain Amino Acids (BCAAs):

There are three BCAAs that are essential amino acids, but not produced by the body. These are leucine, isoleucine, and valine. Consuming BCAAs during your workout will decrease muscle breakdown, produce muscle repair and help to decrease soreness. When looking for a BCAA supplement, you want to look for one that has a higher ratio of leucine to isoleucine and valine. An 8:1:1 ratio or 5:2:1 ratio can both be beneficial.

Healthy Grilling for Dad’s Day Article Suzette Zara | Photography Joy Reynolds

A

s temperatures heat up, fire up the grill. Honor dad for Father’s Day with these healthy grilled recipes easy enough for a kid to make. Spicy Pepper Stuffers are a healthy alternative to those popular fried poppers, and they’re guaranteed to make dad happy with their creamy cheese filling. Naturally low in carbs, they are a rich source of vitamin A and capsaicin, loaded with antioxidants and anti-inflammatory benefits. The portobellos are also a nutritional powerhouse, providing terrific immune system support. Both recipes are easy to prepare and ideal for entertaining guests at any Father’s Day barbeque.

Grilled Portobello Burgers

These tasty burgers are a terrific healthy alternative to traditional beef burgers. Portobello mushrooms are actually cremini mushrooms which have been allowed to grow large. Low in fat, portobellos are a good source of fiber and potassium. The meatiness of the portobello allows them to stand up well to grilling. The tasty balsamic marinade provides a flash of flavor, while the low-fat Rosemary Ranch Spread adds a cool, creamy contrast. Ingredients: 4 large portobello mushroom caps, wiped clean 1/3 cup balsamic vinegar 1/4 cup extra-virgin olive oil 2 tablespoons chopped rosemary 1 teaspoon salt 1/2 teaspoon coarsely ground black pepper 4 slices reduced-fat Swiss cheese 1 cup fresh spinach or green lettuce leaves 1 large tomato, sliced or chopped 1 large avocado, peeled and sliced 4 buns (reduced calorie and/or whole wheat, to taste) 18 Paradise Valley Lifestyle | June 2014

Rosemary Ranch Spread:

1 cup nonfat Greek yogurt 3 tablespoons chopped fresh rosemary 1 tablespoon lime zest Juice of 1 lime Directions: Preheat grill or grill pan to medium-high heat. In a small bowl, whisk together balsamic vinegar, oil, rosemary, salt and pepper. Place mushrooms in shallow baking dish, and spoon marinade over mushrooms. Let stand at room temperature for 20 to 30 minutes, turning occasionally. When heated, brush grate with oil or lightly spray grill pan. Place mushrooms on grill, reserving marinade for basting. Grill until tender, about 5-7 minutes per side. Brush frequently with marinade. Place one slice cheese on top of each mushroom during the last few minutes of cooking. Grill buns until lightly toasted. While mushrooms cook, prepare the spread by stirring together all spread ingredients in a small bowl. Brush top and

bottom of each bun with spread. Place lettuce leaves on bottom of bun, top with mushrooms, tomatoes, avocados. Serve promptly, with a side of lowfat tortilla chips or Creamy Lean Potato Salad. Yield: 4 sandwiches. Calories: 285; Fat 13g; Protein: 21g; Cholesterol: 0g. Cost Per Serving: $2.45 Skinny Pepper Stuffers

Here’s a fun spicy appetizer to fire up any outdoor barbeque. These delicious stuffers are actually quite healthy. Try topping them with Monterey Jack or feta, to vary flavor. Or, double the filling, for extra gooey stuffers, and use cheese mixture as a dip with lowfat chips. They can easily be made in the oven, too. Simply bake stuffed peppers at 350°F (8 to 10 minutes), then top with cheddar, and broil until melted (3 to 4 minutes). Use a variety of colored peppers, for visual appeal. These peppers are great for easy entertaining. If making ahead, simply stuff the peppers, cover and chill. Grill when guests arrive.

Ingredients: 12 medium peppers (jalapeĂąo or mixed red), halved lengthwise and seeded 1 block (8 ounces) reduced-fat cream cheese (Neufchatel), softened 1/2 cup shredded reduced-fat cheddar cheese, divided 2 tablespoons parmesan 1/3 cup chopped fresh cilantro, divided 1/4 cup minced green onions (optional) 1 teaspoon fresh lime juice 1/2 teaspoon salt 1/2 teaspoon garlic salt 1/2 cup chopped seeded tomato Directions: Preheat grill to medium-high heat. In a large bowl, combine Neufchatel (soften in microwave if too hard), parmesan, onions, lime juice, Âź cup shredded cheddar, salt, garlic and 1 tablespoon cilantro. Stir well until thoroughly combined. Evenly divide cheese mixture to fill each pepper half. Place peppers, cheese side up, on grill rack or grill grate coated with cooking spray. Cover and grill peppers about 6 minutes; top each pepper with cheddar and tomatoes; continue grilling about 2-4 more minutes, until cheddar is melted and bottoms of peppers are charred. Place peppers on serving dish; sprinkle with cilantro. Best served warm.

Grilling tips Heat it Up

At the start of the grilling season, preheat grill, with all burners on high or with an even layer of preheated charcoal, for about an hour before brushing cooking grates. This process usually only needs to be done once to get your grates into shape for the season. Direct and Indirect Heat

There are two types of grilling, depending on the food. Direct grilling refers to cooking the food directly on top of the heat source, usually with the lid off. It cooks food with intense heat, making it best for thin cuts of meat (burgers and chops) and most vegetables. Indirect heat uses a fire built on one or both sides of the food, allowing the hot air to circulate around it. It requires a covered grill, creating a gentler cooking method than direct grilling, allowing larger cuts of meat to cook thoroughly without burning on the outside. Rule: If it takes less than 25 minutes to cook, use direct heat; otherwise, use indirect heat. Keep the Heat

Yield: 12 appetizers. Calories: 86; Fat: 4.3g; Protein: 2.9g; Carbs: 2.1g. Cost Per Serving: $.88.

It is important to maintain even heat, which is simple on a gas grill. On a charcoal grill, the heat is controlled by air vents. To ensure airflow, do not cover bottom vents with charcoal, and leave vent on top of grill partially open. The more open the vents, the hotter the grill will cook. To get medium heat, keep vents about halfway open.

H

ave you ever made a hole in one? Was it into the clown’s mouth at a putt-putt course or from 170 yards away on your favorite par-3? No matter where you played or how good you are, golf has always been a game of strategy that requires as much mental ingenuity as physical talent. In today’s golf industry, this same mental ingenuity applies to golf club owners, too, who are constantly looking for ways to appeal to golfers who have many options for where to hit the links. Fortunately for these owners, the appeal of their courses, along with new and inventive ways of doing business, is placing them ahead of the field when it comes to captivating a variety of golf enthusiasts. The Wigwam

If you’re a golfer looking for a new course to play this summer but don’t want travel too far from home, the Wigwam may be your stroke of good luck. This getaway staycation is where you can experience the game on your choice of three, 18-hole championship-caliber courses. 20 Paradise Valley Lifestyle | June 2014

Situated in the West Valley, the Wigwam is an Arizona treasure owned by real-estate investment and development company JDM Partners Inc. Tom O’Malley, chief operating officer for JDM, estimates a considerable rise in the number of golf courses in the Scottsdale area from two decades ago. While many owners are cutting expenses to accommodate players in the midst of today’s economic downturn, JDM has invested more than $10 million through the past four years to enhance the Wigwam’s grounds and multiply its staff, all in an effort restore the property to its original glory as an icon in the resort and golf industry. “We believe the guests expect a wonderful experience, and we’re giving that to them, and we’re finding they appreciate it,” he says. Of the property’s three courses, Gold Course and Patriot Course confront the golfer in the style of master course architect Robert Trent Jones Sr. Gold Course is long and winding with sand traps flanking narrow

and is a favorite among locals and members, perhaps in part to its par5, 591-yard finish next to a canal. One of the Wigwam’s newest offerings is its Hybrid Golf Outings, designed to replace traditional cocktail parties with more comfortable social activities, like a putting contest or a three-hole Horse Race. Guests may select one outing or bundle several. “We want to make things fun and create such an experience that people will choose our courses over others,” says Tom. Multiple membership options are available with the Wigwam; all include access to the Arizona Biltmore Golf Club. Courses also are open to the public. Arizona Biltmore Golf Club

fairways. Course highlights include a 645-yard par-5, a long par-4 guarded by a canal, and the finishing hole, said to be one of the toughest in Arizona. In 2013, Gold Course was voted Best of Our Valley: Most Challenging Course by Arizona Foothills magazine and has hosted qualifying rounds for the U.S. Open. Patriot Course is a short-game challenge full of bunkers, ponds and dogleg fairways, and has been described as a great contradiction for the way the layout changes from front to back. The 17th hole is especially memorable as a replication of the famous par-3 16th hole at the Augusta National. Designed by Arizona Hall-of-Fame golf course architect Robert “Red” Lawrence, Heritage Course includes some of the same features as its more well-known counterparts but has sprawling fairways

If you’re a history buff who happens to enjoy golf, you’ll love Arizona Biltmore Golf Club, where you can swing your driver in the shadows of the greats. Biltmore Golf Club is located on the grounds of the historic Biltmore Resort, where every United States president from Herbert Hoover through George W. Bush has stayed. Opened in 1929, the hotel quickly became an Arizona landmark under the ownership of chewing-gum mogul William Wrigley Jr., who spent four decades ensuring the property remained a model of sophistication. Today’s course owners, JDM Partners Inc., are committed to preserving the prestige associated with this aptly nicknamed Jewel of the Desert and welcome others to experience the same lifestyle of our nation’s elite, including the two golf courses they’ve enjoyed. Adobe Course was one of the first courses in Phoenix and immediately became a classic. Adobe golf is simply designed and void of the trickery associated with modern course architecture, harkening back to the good old days. The slightly shorter Links Course requires accurate ball placement, with its rolling hills and deep bunkers. Here, the golfer starts to see a little more desert impact. This course was designed to mimic the seaside links of the British Isles. Like the Wigwam, the Biltmore Golf Club offers Hybrid Golf Outings. The Biltmore also offers golf specials, where guests can continued >

combine golf and a meal or take advantage of discounted greens fees after 2 p.m. Membership with the Biltmore is open to individuals, families and corporations. The club’s Presidential Membership provides access to the Biltmore Golf Club and Resort, and the Wigwam. New junior memberships are available to prospective members under the age of 40. Forest Highlands

If you’re a serious golfer, especially living in Arizona, you’re used to playing in the heat.

When the idea of the desert sun bearing down on you makes you want to skip your weekly round, head to Forest Highlands. As its name suggests, this golf club is nestled in a stand of Ponderosa pines (the largest in the world), which brings milder temperatures to both its courses. In fact, the cooler weather is a significant reason why people venture to this Flagstaff attraction. “Most of our members are from the Phoenix metro area,” says Greg Gonsalves, general manager and chief operating officer for Forest Highlands. “They know us as Heaven

in the Pines.” Established in 1987, Forest Highlands was originally developed as a golf club community with acreage for residential construction and one par-71 course called Canyon. After a decade of growth, the owners purchased an additional 200 acres, which later became a second par-72 course called Meadow and provided additional home sites. Today, the property is fully envisioned with 800 home sites and two 18-hole golf courses, each remarkably different in design. With soaring pines flanking each fairway and canyon vistas peeking through, Canyon Course is known for its breathtaking beauty, earning it a recurring distinction as the No. 1 private golf course in Arizona by Golf Digest and placing it among the top 100 courses in the world, according to Golf Magazine. Golfers of all skill levels appreciate the seven sets of tees on this course, as well as the challenge of navigating its undulating hills. Meadow Course is a more traditional course, giving golfers the feeling of walking through a park as they traverse a mountain meadow filled with lakes, wildflowers and

scenic wetlands. Forest Highlands has hosted two USGA Championships and will host its third this summer on Meadow Course, a testament to the quality of golfing experienced on this layout. Perhaps more than its award-winning courses, Forest Highlands is known for combining a family-friendly lifestyle with a commitment to improving the greater Flagstaff area. That’s why other activities are offered

through the club’s extensive recreation program and why the member-led Forest Highlands Foundation has presented grants of more than $3,700,000 to more than 80 local charities since 1999. “Our members are very proud to be part of a tradition of truly great golf,” says Gonsalves. “Word of mouth has sold the community, and it’s just brought the right people here.” Regular memberships with Forest High-

Parent’s Corner

Father Shows Best Article Casey Gibbons

P

owerful. Influential. Heroic. Men, would you like to be these? When you are a father or a father figure, you are. When someone positions you as the primary male role model in their life, you are crucial to their emotions, thoughts and behaviors. You are a big deal. And when it comes to life, you truly can show them best. While it is understood that being a dad to someone is a top-honor, what is often misunderstood is what a man should do once he is one. What does it look like to “show them best” if there isn’t a manual that comes with each young person? While there are thousands of stats and ideas on what can be done, there is one man that has lived fatherhood for one boy and one girl who is an example to all. My brother and I were raised by a successful dad. Although he was an Eagle Scout, Marine, and businessman, his most valuable success was in our home. He was and is a father that has showed us best through his actions and words. His 65 plus years of life can answer some of the questions about being a dad for other men just simply by hearing how he lived as we were growing up. 1. He understood imperfection. Dad knew we would make mistakes and need understanding. He listened well to us before he enforced discipline. With his patience, we felt heard and respected even though we knew discipline was needed and would come. Afterwards, he always, yes, always, chose to forgive us. In addition, dad was the first to admit his own shortcomings. Whether it was from his childhood memories, relationships with others, or something at work, he would talk with us so we could learn from him and, at times, offer our own forgiveness to him. Dad kept life real and knew we weren’t perfect and that was okay. Consequently, we did all we could to please him and make him proud because of our gratitude for his understanding. 2. He loved unconditionally. The words, “I love you unconditionally” came from dad countless times. And he meant it. 26 Paradise Valley Lifestyle | June 2014

He loved no matter what we did or didn’t do. And as any parent would know, that isn’t easy and also says a lot. We absolutely knew no matter what extra-curricular activities, friends, clothes, music, hairstyles, colleges, or jobs we chose, as long as it wasn’t harmful or disobedient, he supported us. His words were encouraging and positive when he spoke to us and when he spoke of us; often times even when he didn’t know we were listening. Because of his love, we trusted him, and loved him unconditionally in return. 3. He provided, protected, and played. Dad did everything he knew to do to provide for us with life necessities and anything above and beyond. He worked hard but not for his own gain, it was to give his family his best. And because he worked hard, he protected us from anything that would come against us to break up the family. He guarded his faithfulness to mom, his time with us, and entertainment choices or people that weren’t beneficial to our minds and hearts. Consequently, we had the freedom to enjoy the provided and protected life. We had a blast playing with Dad at home, on special family nights, in the car, on vacations, and at extra-curricular activities. We loved being with him! While being a “father that shows best” may take effort, it comes with matchless rewards. Perhaps you have attempted your best but have fallen short. Start fresh. Even if your child is older, you can choose to be successful starting today. You can be that powerful, influential, heroic man to whomever it is in your life that needs you as a dad.

s the grass greens and days get longer, it is time to go to the ball fields. And who better to sit with in the bleachers than the rabid fan, full of facts and anecdotes and opinions on the state of the game? George Will, arguably the most famous fan of the Chicago Cubs, takes off his political pundit hat and waxes nostalgic on the 100th birthday of Wrigley Field. This is not field reporting, but an emotional and personal reflection on the history of a team, a place, of baseball. As there are few triumphs to record, Will meanders through the Lincoln Park neighborhood and reveals the oddities of personalities that stop through Chicago and leave stories that create legend. Readers will learn about America’s first female member of a President’s cabinet, about the baseball-related shooting that inspired Bernard Malamud’s The Natural, and will consider the relationship between beer and attendance at baseball games. The greatness of Ernie Banks, “Mr. Cub,” will be on display for all to see. But Will also provides commentary on the architecture of the building itself, and provides fodder for why the structure has contributed to the fortunes of the team. He suggests, despite his love for the Chicago Cubs, that historic decisions by the owners, including chewing-gum magnate P.K. Wrigley, made the stadium too successful. A less popular structure would have forced the Cubs to purchase a winning team. But in the era of Jumbotrons and product placement and concession stand apps, Wrigley Field is that bright and shining Valhalla,

purposely slow to install night lights and video screens at the urinals. She is beloved, wise and full of characters that tell America’s story of competition and loyalty, success and defeat, yesterday and today. Carl Sandburg describes Chicago as a city “with lifted head singing so proud to be alive and coarse and strong and cunning,” aware of those sneering at her. He must have been a Cubs fan. The writing is graceful and funny, the information is stunning, and the critique is sharp – the perfect way to spend an afternoon for any baseball fan.

Parting Thoughts

Real Life Super Hero Article Hona Amer

M

ost little boys dream of being a super hero. They want to have strength to lift cars, the ability to fly through the air, or to become invisible at any given moment. They embody the role by wearing red capes around their house, wanting to save the day. They jump off tables, willing to take a risk. Courage, bravery and valor become stamped across their minds. These boys grow into men who still have a heart to make a difference. Great men are pillars of our society. These men were pioneers who discovered uncharted territory out west. They signed the Declaration of Independence. They were the ones who discovered electricity and first took flight in a plane. These men were the ones who fought battles on foreign soil with great courage, even if it cost them their lives. All of these feats have impacted our society. The desire to change the world and be the hero doesn’t leave when a man reaches adulthood. Men are on the hunt to do something significant. Many times, they become the salesperson who can make a deal, the doctor who saves lives, or the police officer who protects people. In their professions, they wear the armor of a hero. When the day is over and they come home to their families, the cape tends to fall by the wayside. Finding their place in the home can be difficult. Instead of saving lives, there are dirty dishes and crying babies. Yet, we, your children, still see the cape, because great fathers are heroes at home as well. The greatest role a man can ever play is one that cannot be easily replaced. That role is the role of a father. Great fathers take on the responsibility of raising the next generation. Children grow up needing a father who will encourage, discipline and love them. Even more, they

need a father who is present. When they go play in their baseball game, they want to know that he is cheering in the stands. When they go to their choir audition, they want to know that he will be there for them no matter the outcome. Even though they know their dad won’t be perfect, they need to know that their dad will be present, even when life gets difficult. The season of going to baseball games, choir performances, or ballet recitals doesn’t last for long. As the days turn to weeks and the weeks turn into years and graduation is on the horizon, it might seem like we, your children, don’t need you anymore. Even though we want to make some of our own decisions, we will always need you. Instead of helping us tie our shoelaces, our need for you begins to change. We need help getting our car started when the battery dies. We need advice on which college to attend. As we reach adulthood, we need the wisdom and insight in knowing how to raise great kids. Though our needs will change as we go through life, Dad, we will always need you to be present in our lives. When we all have wrinkles and distance separates us, we still want you in our lives. Even if the cape seems tattered and worn, we never stop seeing you wear your red cape, because you have proven to be our hero over and over again. Hona Amer is the author of the book, Smart Work U, which focuses on helping prospective college students achieve the most from their college experience, in the most cost effective manner. After the completion of her M.B.A., Hona Amer serves as an adjunct professor and founder of The H Group, a creative marketing company. Her weekly inspirational message, Monday Morning Coffee With Hona, can be found at HonaAmer.com.
