IT’S GAME TIME…

T

his month we will be celebrating Fall Arizona style. That means great weather, Halloween, tailgating, and opening up my home for fun dinner parties.

This month we will be showing you the best spots for going trick-or-treating -- if you’re willing to think outside the box that is. We even have a fun tutorial on tailgate parties, all you need to know from ideas on different themes, things to bring to what travels well. I’m going to be taking you inside my home this month for some Southern cooking as I share with you a few of my favorite fall recipes that I have been serving up for my friends and family for years. Be forewarned: I’m slightly addicted to sugar, so if most of the recipes inside this issue are dessert based, you now know why! We have some great recipes from starters and dips to the desserts decorated like little footballs. So cute! So keep reading and you might find yourself inspired or at least intrigued, either way I’ve done my job! This month we feel honored to be featuring a well deserving mother and her journey of starting an incredible organization called Feeding Matters. Through pain and suffering we find ourselves stronger on the other side of our struggle. This mother of three sure did. Feeding Matters Organization Started by a Mother Inspired By LOVE Article Becca Mulder

F

eeding Matters was inspired by a mother desperate to find answers and a cure for her premature triplets. In 2002, Shannon Goldwater gave birth to her three babies four months early. Though they overcame numerous life-threating infections and countless surgeries, feeding and nourishing them adequately became the biggest challenge. They would cough, gag, cry and turn away from the bottle, leaving Shannon feeling helpless and scared. The triplets were eventually placed on feeding tubes because they weren’t capable of eating by mouth. Trying to just survive and still finding no answers, the Goldwater family spent over a year of their lives in and out of numerous doctors and multiple programs. “I had nowhere to turn and didn’t know of other parents going through a similar issue,” Shannon says. “This battle, and the love for my children, inspired me to create Feeding Matters in 2006, a nonprofit organization that would change the journey for others.” Through the support of family and friends, Shannon started her endeavor of creating Feeding Matters. The first of its

kind, this non-profit organization helps other families in a similar situation find their way. Never looking back from that point forward, Shannon has her husband to thank for all of his love and support through his suffering too. The community has embraced Feeding Matters with open arms through the financial and emotional support continuously offered. With minimal education and research available about premature births, parents are not only struggling to nourish their children, but medical professionals are also struggling with proper evaluation and intervention options. Currently, there is no standard of best practice, no specific diagnosis code for insurance reimbursement, and no universally accepted name for this complex medical condition. “What we do know is that over one million infants and children struggle to eat across the country, over 15,000 living in Arizona,” says Shannon. “That is why we are focused on providing support to parents while also partnering with medical experts to develop accredited educational opportunities, share research findings, and understand the most effective treatment model.” The vision for Feeding Matters is to see that every child is evaluated immediately by an interdisciplinary team of specialists, and to equip medical professionals to create individual treatment plans that match each child’s ability and needs. The Mission

Feeding Matters’ mission statement is “To bring pediatric feed-


ing struggles to the forefront so infants and children are identified early, families’ voices are heard, and medical professionals are equipped to deliver collaborative care.” No other organization of its kind exists. One of the main challenges today is a general lack of awareness on how to diagnose and treat feeding struggles. “Most believe it is a behavioral issue or that the child will eat when they are hungry,” explain Shannon. “Not our kids – they will starve themselves just to avoid the pain they experience while eating. Last year Feeding Matters enhanced the lives of children

W

hen he was still a toddler, Guy Stillman received a toy train from his brother for Christmas. That gift ignited what would become a lifelong love for the railroad, and the inspiration for what would become his lasting legacy and gift to Scottsdale—McCormick-Stillman Railroad Park. Beginning in 1942, Stillman’s parents started to assemble parcels of land in and around Scottsdale. By the late 1960s, they had accrued nearly seven square miles. The property was known as McCormick Ranch and was known for raising the finest purebred Arabian horses and Angus cattle. (McCormick was the surname of Stillman’s stepfather, Fowler McCormick, who was also the grandson of John D. Rockefeller.) With the encouragement of Stillman, Mr. McCormick donated a large parcel of land from his ranch to the city of Scottsdale in 1967, stipulating that it be used as a park for residents to enjoy for years to come. While McCormick Ranch grew, so did Stillman’s love of the railroad. Over a 2016

year period, he built a 5/12 scale replica (where five inches represents one foot) he named the Paradise and Pacific Railroad. After turning down an offer for the railroad from Walt Disney, who was looking to acquire it for a theme park idea he was working on, Stillman decided to keep it in Scottsdale; he donated it to the city in 1971. Today, McCormick-Stillman is more than just a park where families can enjoy a legendary fall day outside in the valley sun. It is a fully functioning train yard complete with a one-mile track that treats visitors to a ride into another time and place. Various other park attractions include an arboretum, playgrounds, historical train cars, and a 10,000-square-foot, hands-on model railroad building. “Guy Stillman wanted everyone to come out and enjoy this park,” explains Henry Garcia, the assistant coordinator for McCormick-Stillman. “That’s why he had his family donate the land for the park, as well as his trains.”

October also marks the arrival of Railfair at McCormick-Stillman Railroad Park. Held this year on October 11 and12, canopies will be erected throughout the park, and various clubs from throughout the state and beyond will come setup and run their own unique railroad displays. Some displays are interactive where kids can push buttons and pull levers to make things go, while others just simply run in the background of the good conversation of model railroad enthusiasts. Bounce houses and other entertainment will also be scattered around the event, as well as complimentary tours through the Roald Amundsen Pullman car, which was used by presidents Herbert Hoover, Franklin Roosevelt, and Dwight Eisenhower at various points of their campaigns or presidencies. Closer to the holidays, McCormick-Stillman is transformed into something more reminiscent of the North Pole rather than a desert park. Train rides are offered throughout the winter evenings as riders are treated to a light display that rivals any other in the metro area. “We have tons of lights with animated displays, dancing trees, music, and even a winter village,” explains Garcia. “What makes it unique is you don’t have to walk around to see the lights; just get on the train and enjoy the ride.” December 12 marks opening night of the holiday lights at McCormick-Stillman, and it includes a tree lighting ceremony and a visit from Santa. More than 35,000 visitors come out for the three-week event, and the train runs as late as it needs to in an effort to ensure every rider with a ticket makes it back to see the lights. Located at the southeast corner of Scottsdale and Indian Bend roads, McCormick-Stillman Railroad Park is open every day of the year except for Christmas Day and Thanksgiving. Hours vary depending on exhibit and season, but all information can be obtained on the park’s website at TheRailroadPark.com. While there is no admission fee to the park or the model railroad exhibit, some attractions—including a ride on the railroad or carousel—do require tickets, which can be purchased at the park or online.

T

he Alexander family has joined the Arizona Cardinals family for the second year in a row of the ten years that husband Lorenzo has played professional football. Lorenzo and wife Manjanique call Virginia home for most of the year, but they love the adventure of traveling to Arizona for football season. This all-American family comes together to support Lorenzo in making his dreams a reality, and they also give back to our community with their own foundation called the Lorenzo Alexander ACES Foundation. Together, through their foundation, Lorenzo and Manjanique host three to four free football and life skills camps for underprivileged youth each year, and they give scholarships and provide back-to-school supplies. A typical weekend for the family usually involves date night for Lorenzo and Manjanique on Friday night. Saturdays might include a birthday party for one of the kids’ many friends and schoolmates. If a new kids’ movie is released, they enjoy going to see it as a family. “Sunday we go to church and then—depending if its football season or not—we are either home watching the game or heading to the stadium to cheer Daddy on.” says Manjanique. Last month, they just celebrated becoming a family of six by welcoming their son Myles two days before sending their oldest, Vanessa, off to the University of Arizona. They also have two other children, Zoie (6), who is in first grade and their little athlete Mason (4), who is in preschool. When in Arizona, Manjanique is a full-time, stay-at-home mother. In

Virginia, she works part time as a real estate agent, and she owns a pilates studio. “Our goals for our family this year are to spend as much time together as possible while still maintaining a presence in the community,” she says. “It’s hard to juggle it all, but it’s very important to our family to give back. We believe in God first, family second, and everything else will fall into place. We are looking forward to visiting our daughter at U of A as well as the Super Bowl in February and a big family reunion next summer in Washington, D.C.” Keep an eye out for Lorenzo on the football field this year and cheer extra loud, because this family has learned the importance of life, family and—most importantly—God.

F

all is here and that means football season and tailgate parties. Whether you are actually at the game or having a party at your home, the pregame festivities always add to the excitement of the game. Here are a few ideas to help you have more enjoyable tailgating events that will create lasting memories.

Preparation

A time-saving idea is to pack staple items in a plastic tub so each time you go to a game, you’ll have everything handy. Consider including cups, plates, napkins, tablecloth, utensils, a sharp knife, bread board, salt, pepper, paper towels, wipes, safety pins, first aid kit, aspirins, baggies or plastic containers for leftovers and trash bags. For night games, add a flashlight and bug spray. For sunny days, have sunscreen, sunglasses, a hat or visor. You may want to include a portable radio or app for your smart phone, for preand post-game news. For tailgate hot daytime games, a handheld, battery-operated fan and gel neck wraps will keep you cool. Don’t forget your sta-

dium cushions, and if it’s cool, pack a blanket. An umbrella can shield you from the sun and keep you dry in case of rain. These items can be packed in your car the night before to give you more time on game day. Next, have two coolers, preferably on rollers. Keep food in one and beverages in the other since you will be opening and closing the beverage cooler more often. While driving to your party, keep the cooler inside the car and not in the hot trunk. When you get to your destination, make sure the cooler isn’t in direct sunlight; even put a blanket over it to shield it from the sun or place it under a table. No matter the weather conditions, an awning or umbrellas can keep everyone cool if it’s hot or dry if it’s rainy. Theme Parties

Decide early in the week what types of food you plan to bring and divide up the menu with your friends. Avoid having the same food at each game by planning theme parties. Each week take one theme and prepare appetizers


and entrées that are Italian, Mexican, Asian or American. For an Italian theme, foods like ciabatta rolls with Italian lunchmeats or meatball sandwiches would pack well. For the following game, consider a Mexican theme and pack burritos, tacos, chips and salsa. Serve egg rolls, stir fried chicken and rice when you choose an Asian theme. For the American theme, you can serve hot dogs, hamburgers, ribs, pulled pork sandwiches, or sandwiches. And don’t forget dessert! Cookies and brownies are easy to make and don’t need to be kept cold while you are eating your meal. And, be sure to bring plenty of snacks; chips, pretzels, nuts and popcorn are always good. Cut-up fruit, a vegetable platter and a tossed salad are great side dishes. For the salad, keep the bottled dressings in the cooler. And, don’t forget to bring plenty of water. Grilling at the Game

Bringing a portable grill and grilling tools is a little more work, but they add more options to your tailgate party menu. Hot dogs and hamburgers are great basics served on toasted buns. Jazz them up with different types of mustards, relish, and condiments. For the hamburgers, try different cheeses, add bacon strips, avocado or mushrooms. Other alternatives are chicken or beef kabobs, bratwurst and other sausages, steak, ribs and chicken. Be sure the grill is placed where the smoke won’t drift to another tailgater’s spot. Consider bringing a propane grill so you won’t have to spend extra time heating it up or waiting for the coals to cool down. And, always have water handy as a safety precaution. Packing an Ice Cooler

It is imperative that you keep your raw foods—meat, poultry and seafood— wrapped securely in plastic containers so they don’t leak. Place them in the bottom of the cooler where it stays the coolest. Putting everything in plastic bags or containers will keep them from getting wet

When cool enough to touch, squeeze softened garlic from skins. Bake in the preheated oven 30 minutes, or until cheeses are melted and bubbly. Serve warm.

Apple-Cheddar Sausage Meatballs with Dijon Balsamic Glaze Yields: 48 meatballs Prep Time: 30 min. Cook Time: 30 min. The maple-flavor is key in this recipe. Don’t worry if you can’t find the maple-flavored sausage because there’s maple syrup added to the recipe. The maple sausage will just make it that much better though! Dijon-balsamic glaze on top of the maple flavor is heavenly. Ingredients 1 (16-ounce) Maple-flavored Jimmy Dean pork sausage 1 Lg. Egg lightly beaten ½ Cup fine breadcrumbs 1/2 cup coarsely grated peeled tart baking apple 4 ounces grated sharp Cheddar cheese (1 cup) 1/2 cup Dijon mustard 1/4 cup tomato sauce 1/4 cup maple syrup 1/4 cup balsamic vinegar Directions: 1. Combine sausage, egg, breadcrumbs, apple and cheese in a large mixing bowl; stir well. Shape into 4 dozen (1-inch) balls. In a large skillet over medium-high heat, cook in batches of 12 or 24, turning frequently until lightly browned, about 10 minutes. Drain if desired, then return to skillet. 2. In a small bowl, combine mustard, tomato sauce, maple syrup and vinegar. Pour over sausage balls. Cover and simmer for 30 minutes. Transfer to chafing dish or slow cooker; serve hot with toothpicks. 22

Double Chocolate “Football” Cupcakes Yield: 18-24 cupcakes Ingredients 3/4 cup unsweetened cocoa powder 1 1/2 cups all-purpose flour 1 1/2 cups sugar 1 1/2 teaspoons baking soda 3/4 teaspoon baking powder 3/4 teaspoon salt 2 large eggs 3/4 cup warm water 3/4 cup buttermilk 3 tablespoons vegetable oil 1 teaspoon pure vanilla extract 8 oz. unsweetened chocolate, chopped 6 cups confectioners’ sugar 16 Tbs. (2 sticks) unsalted butter 6 Tbs. milk, plus more, if needed 2 tsp. vanilla extract 1/4 tsp. salt Instructions Preheat oven to 350 degrees. Line standard muffin tins with paper liners; set aside. Sift together cocoa powder, flour, sugar, baking soda, baking powder, and salt into a large bowl. Add eggs, warm water, buttermilk, oil, and vanilla, and mix until smooth, about 3 minutes. Scrape down the sides and bottom of bowl to assure batter is well mixed. Divide batter evenly among muffin cups, filling each 2/3 full. Bake until tops spring back when touched, about 20 minutes, rotating pan once if needed. Transfer to a wire rack; let cool completely.

For the Frosting: Have all the ingredients at room temperature. Put the chocolate in the top pan of a double boiler set over but not touching simmering water in the bottom pan. Stir until the chocolate is melted and smooth. Let cool to room temperature. In a large bowl combine the confectioners’ sugar, butter, the 6 Tbs. milk, the vanilla and salt and beat with an electric mixer on low speed until combined, about 1 minute. Stop the mixer and scrape down the sides of the bowl. Increase the speed to medium and beat for 2 minutes, then reduce the speed to low. Reserve about a 1/2 cup of the frosting at this point to make the laces. Add the chocolate gradually and beat until combined, then increase the speed to medium and beat for 1 minute more. If the frosting is dry, add more milk, 1 tsp. at a time, until it is creamy but still holds peaks. To Decorate: Using a small star tip in a pastry bag, zig-zag the chocolate frosting in a diamond shape on the cooled cupcakes. Then put the reserved vanilla frosting into a bag with a small round tip and pipe on the laces.

his season is the greatest time of year in Arizona. The 75 degree weather is going to be here soon, and we LOVE it; we are done with the 100 degrees. Now that the weather is starting to change, it is time to get outside and get down and dirty with your plants. It’s time to get everything switched from summer to fall/winter. So take out those vincas and plant those geraniums for new color, or start to fertilize your gardens and plant the herbs and vegetables for the season. Plus, now that it’s cooler outside you are less likely to faint from heat stroke and you’ll want to be outside enjoying this weather. So, let’s get your yard into its top condition for all those fall events you will be having. Fall Opportunities

First, you will want to take an assessment of your yard and see what needs a little TLC. Does the pigmy palm need to be trimmed from the burning it got? Or do your flowers need to be changed out for the season? Step outside and look around, then decide where to start, don’t get overwhelmed. It won’t happen overnight and it will take some elbow grease. Now is the time to be changing all your annual flowers over to the fall and winter flowers. Geraniums and petunias are in season and will make all your containers look new for the fall and winter. When you plant these new flowers make sure you put down some new soil and little bit of osmocote with them. This fertilizer will make them bloom brilliantly and grow like crazy. Now to get the grass green again start tossing down your winter seed and get it started, as soon as the nights are cooler and into the 70’s this winter grass will start to sprout. Moving on to your bigger, greener plants; they need some love from you, too. They just survived a brutal summer and monsoon season, so now go outside and trim the brown and see what is left. Some might need to be changed out; others might just need some fertilizer. If you have something you aren’t sure about bring a sample to your local nursery and they can help you figure out what to do. Sometimes you can’t save everything and it’s just time to say farewell and get a new one. Now is the time to be doing that. You don’t want to attempt to plant new shrubs or bushes in the winter because the frosts cause them to have problems, so instead do it before things get too cold outside. Your gardens and plants will start to perk back up and look great with all this TLC you are giving them, then you can sit back and enjoy the flowers and the lushness of your garden. Preparing for the Winter

Arizona doesn’t have what I would call a very harsh winter in comparison to other parts of the country, but for us going from 112 degrees in the summer to 45 degrees in the winter or colder is harsh. You will want to be well prepared for any changes that might occur rapidly. As many people who have lived through a few winters here, 28

we know the freezing nights can come in a matter of a few hours and wreak major havoc on your garden and plants. There are a few things you can have on hand to help prepare for these cold nights. One is “frost cloth.” Frost cloths are not like sheets or random blankets you have in your house, these cloths actually are made to help keep outdoor plants warmer than the outside temperature. They will usually work great unless we dip into the teens at night, as they raise the temperature 7-9 degrees as long as they are properly covering the plants. Also, another product is called by a few different names “freeze pruf or cloud cover”. This you spray onto your actual plants top and bottom and it will help coat the plant and stop it from releasing water through its leaves and freezing when the temperature dips low. But, keep in mind this will only work if the temperature outside does not dip into the low 20’s or teens, it is also a great product to spray on your Christmas tree to lengthen the trees shelf life by a few days. These are a couple of things to have sitting in your garage or cabinets to help you when Mother Nature decides to strike with a cold night. The last thing you want to do is to be running around trying to find out who has these items when everyone else is also trying to find them too. Enjoy this beautiful weather that is coming and have fun getting dirty.

T

he bright lights flicker as they light up the night sky. People fill the stadium; spectators have come to watch the game. The players run onto the field, excited and ready. They are gearing up for their moment to shine. As the game starts, the clock begins to move; anything is possible. The underdog might rise up and win, or the favored team will pull out a victory. As both teams play to win, the stands are full of people cheering like it depends on them. The players are running down the field, but the attention is drawn toward the sidelines. The coach is talking to a player, but then the fans in the stadium happen to notice a few people sitting on the bench. Some are just resting from playing, while others look like they haven’t even played. Their eyes wander around, distracted and counting down the minutes until they can go home. It just hasn’t turned out like they expected; they thought that they would be the star of the team except that they have sat on the bench most of the season. As you know, no one usually signs up for the football team with the sole desire to sit on the bench. Fans don’t usually cheer for the second string benchwarmers. There are benefits to sitting on the bench. It can be safer than playing in the game. The chance of getting tackled, injured, or disappointed after losing is reduced. We can take this same type of mentality into our own lives. Sometimes in life, we resign ourselves to sit on the bench. Instead of actively engaging in the biggest game of our lives, we hold back and decide that it would just be better to sit. Some people live their whole life sitting on the bench. They want to participate, but they know the cost. They know that they might get out of breath and need to drink some water. They know that they might get pushed around or miss the ball. The risks are present. Sitting on the bench is a way to minimize the risks. Yet, is it possible that it is also shrinking our lives? Benchwarmers are

not names you remember. If a player sitting on the bench tried to tell everyone about the comfortable seat, the perks and benefits of watching from the sidelines, people would think it was ironic. The point is not to sit on the bench; the point is to play in the game. If you are still breathing, then you are still in the game. You might have been knocked down, injured, or broken, but you are not finished. If you have air in your lungs, you are not done. Let’s give it all we have while there is still time on the clock. Yes, there will be a cost. Without the cost, we will also miss out on the joy, excitement and victory. We will miss the moments when we overcame the obstacles, because we decided to push through. The person who made the winning touchdown is remembered, but we also remember the people who helped make it happen. No moment is too small if you commit to being present, because the big moments are made up small moments. If you have been sitting on the bench of your life, time’s up.
