Editor’s Letter

Breaking Bread Together O

ne of my favorite dates years ago took place at Bodean’s restaurant. It’s February, and the 20th anniversary of that dinner (which led to marriage and kids) and as we brainstormed our food issue for this month that memory came to mind. It isn’t the ambiance or anything aesthetic that stuck with me. It was the incredible food and fun company. I had Australian mussels because my beau had just returned from two years living in Australia. Sharing his adventures over a plate of adventurous (and quite delicious) food created a special moment I have always remembered.

So many special moments are made when we eat together. Something magical happens in the breaking of bread or making a meal or eating out. Though I was more engrossed in the person I was with at that dinner years ago than anything else, I do love to create a beautiful setting to share meals with my family, and one of my favorite things to do is find a great restaurant to splurge on with friends, too. Tulsa has an amazing variety of culinary options, and so many are excellent quality. We hope you enjoy the spread we have prepared for you.

Around Town Frank Mitchell Takes Over Local Edward Jones Office Frank Mitchell has been named to take over a local Edward Jones office. Mitchell, his wife, Teri Bowers, and their two children have lived in Tulsa for more than 20 years. M

any families are extending their inside dining and cooking areas to the great outdoors, where they can cook and dine in a natural setting with lush plants, all-weather rated surround sound systems, outdoor-rated televisions, and ambient lighting while being fully covered from the weather. As a designer at Tom’s Outdoor Living, I have installed refrigerators, wine fridges, ice makers, beer dispensers, grills with LED lighting and rotisserie options, as well as fully functioning sinks with hot and cold water, trash can enclosures, drawers for extra storage, side burners, and flat surface grills in outdoor kitchens. This is just a sampling; there are many other options. We thought it might be helpful to share a few tips to think about before having an outdoor kitchen designed/installed. 1. Where will the outdoor kitchen be installed? We have found over time that having your outdoor kitchen space near your indoor kitchen can be very helpful and efficient when time for cleanup. 2. What appliances do you want in your outdoor kitchen? Do you need a pizza oven or maybe you need a 30” or a 42” grill. Do you need a sink, or a trash can holder, maybe a side burner would be best. With all

the options available for outdoor kitchens, knowing where to go to look at these items and then determining what works best for you and your family is one of the most important decisions to be made before designing your outdoor kitchen. 3. What electrical and plumbing is needed? Determine which appliances need electrical outlets, and if you want additional outlets on the outside of the kitchen for a other options, like a margarita machine, a ceiling fan, or ambient lighting on the covered structure. If you are not using propane, then you will need a plumber to help run the gas line, and if you are installing a sink then you will need the plumber to see where you can tap into the water/drain line. 4. What type of counter space do you want? Do you need extra room for preparing food or will that be done inside the house? Do you need a bar overhang for guests who might pull up an extra stool? What type of countertops do you want? Some of the options are large flagstone slabs, granite and concrete. 5. What type of flooring will you use in your outdoor kitchen? You want to make sure whatever you use will not be slippery when wet. Usually if you use a concrete

base you can have some slip resistant material added in to help with traction when the surface gets wet. 6. Do you need a fully covered structure or a pergola to help block some of the hot summer sun? Once you decide which structure you need then you must determine where the columns for this structure will land. You don’t want the columns installed in the walkway, so make sure your outdoor kitchen has enough space for posts to sit on the countertops so they can be incorporated into the kitchen rather than an afterthought. 7. Who will do the installation? This can be an overwhelming project that will most likely require the help of a designer, project manager, and architect. You will possibly also need a permit. Once you get your outdoor kitchen designed and installed, the only thing left to decide is… what’s for dinner? So invite the neighbors, family and friends and start grilling. Roses and Romance in Area’s Newest Hot Spot Broken Arrow’s Rose District Revitalized

H

istory has been renewed in the new Rose District, a successful and rapidly blooming district recently revitalized on Broken Arrow’s 100-year-old Main Street. Community leaders developed a vision to restore the feeling of community enjoyed there in the past, and its name wasn’t just pulled out of a hat; it actually has historic symbolism. “The Rose District’s name harkens back to historic days in Broken Arrow when it was referred to as the ‘City of Roses and Sparkling Spring Water,’” says Warren Unsicker, CEcD and VP of Economic Development at Broken Arrow Economic Development Corporation (BAEDC). “In the early part of the 20th century, residents placed roses in front of their homes and businesses to show the trains coming through that it was a respected and inhabited area.” Today the Rose District is a thriving community of about 50 different businesses, including restaurants, arts and entertainment venues, historical societies, antiques and retail shopping. The district runs from the Broken Arrow Performing Arts Center at Houston and Main to several blocks north at Midway Street, 12

offering a great mixture of places to enjoy along the way. The results of town hall meetings, committees, focus groups, surveys, and a branding firm ensured that this area could appeal to both younger and older citizens. “What resulted is an artistic, trendy-yet-timeless image that is now pervasive in the district and its branding elements like the marble plaques in the streets, masonry planters, iron benches, wider sidewalks and mid-block crossings invite more foot traffic and alfresco dining,” says Unsicker. Considered the region’s newest hot spot, 21 new businesses have opened in the last year. “The city’s seen well over the nearly $5 million initial investment returned through private dollars poured into the district, “he says. The Rose District is the perfect spot for Valentine’s Day. Choices to celebrate include excellent dining, spa treatments, flowers and gifts, Belgian chocolates, jewelry, and various entertainment options. Take in a show at the PAC just after indulging at one of the eateries within a comfortable walking distance, then browse clothing shops, home décor and furniture stores, or even a bookstore.


Creating new businesses while maintaining the old town look and feel is an exciting process. The recently opened Pinot’s Palette, In the Raw, and The Rooftop joined veteran hot spots Main Street Tavern and BruHouse, and soon Andolini’s Pizza will open just south of these businesses in another new building currently underway by The Ross Group with Selser Schaefer Architects. This development will also house 11 downtown apartments of which five will be two-story lofts. Event centers are available to rent for public or private events. Visit the Rose District to witness the budding beauty of the area, and be sure to stop and smell the roses that will be in bloom just around the corner. ’m a self-taught cook and credit my mother for my love of cooking, because she was such a wonderful cook,” says Candace Conley, who opened The Girl Can Cook in December 2010. She originally started teaching cooking

classes at Metro Appliances and More Viking kitchen gallery in 2008. Specializing in teaching the public different cooking techniques for all types of cuisine, Conley’s goal is to give her students confidence in the kitchen. With her passion for cooking and teaching, one of her favorite lessons is, “I have no secrets and my intention is to put myself out of business so that you go home and cook, have an absolutely lovely time and you don’t need me anymore!” She shares a lot about her love for this job which allows her to instill the same passion in others. “Italian cuisine is my favorite thing to cook,” Conley states. She is currently planning a two week trip in the summer to northern Italy to perfect her methods. She loves traveling to other

vicinities to learn about different cuisines and techniques. The Girl Can Cook was originally located on Cherry Street, but recently relocated to the Rose District in Downtown Broken Arrow in the new Main Street Square. The new spot suits her needs and is more functional. “My new location has the look and feel of a contemporary industrial loft, including a large open kitchen, dining room and living room. It’s just like walking into someone’s home, actually, a lot like my home,” says Conley. Students all have individual movable prep stations where they prepare their dishes. “We are one of the only hands-on cooking schools in the Tulsa Metro area. I

Soup Chicken broth Sliced celery Carrot slivers Pasta Acini de pepe In a bowl, combine the ingredients for meatballs. Use your hands to mix the ingredients well and form small meatballs, no more than ½ to 1 inch in diameter.

In a large pot bring the chicken broth to a boil. Add the celery and carrots. Roll the meatballs in Parmesan cheese and drop into soup. Reduce heat and simmer until the vegetables are tender and the meatballs are cooked, at least 30 minutes. In a separate pot, boil water and make acini de pepe. Cook until the pasta is tender and drain. Drop ¼ tsp of olive oil into pot to keep it from sticking. Spoon ½ cup of acini de pepe into individual bowls, then ladle 1 to 2 cups of soup on top of pasta. Add a heaping spoonful of Parmesan cheese to the top of each bowl.

You Say Potato, I Say Love at First Bite Words Denise Snodell

O

ne day, when you least expect it, you might walk into a fine dining establishment and fall in love. It happened to me. There I was, expecting a nice meal, good company and nothing more. The usual suspects were present: Favorite people and all the trappings of a place where you don’t have to struggle with greasy fingers and a ketchup packet. After a dainty glass of wine and some conversation, I found before me a plate of artfully arranged tenderloin medallions, sprigs of pencil-thin asparagus and what looked like ordinary scalloped potatoes. I took one nonchalant taste of the latter dish, and KAPOW, there was no turning back. People. These were no ordinary scalloped potatoes. Let me say here and now, I can’t believe I’m devoting an entire column to a potato experience. I don’t consider myself a foodie, especially when family life gets busy. Sometimes, as the dinner hour approaches, my expletive rolodex spins out of control. I say to myself, “Blankety blank. Why does everybody in this house get hungry every single evening? I just fed them yesterday.” Most of the time, I’m all about short cuts and freezer diving: “Hey guys, what’ll it be? Stouffer’s tartare, or Mrs. Paul’s au poivre?” But then one day, out of nowhere, I find myself swooning over spuds. Unbelievable. Despite it all, even a Zagat rube like me can tell the difference between extruded taters mixed with cream of chicken soup and recently unearthed Yukon Gold baked to a subtle al dente perfection in…what? What exactly were the magical ingredients? I had to know. I just had to know the chef’s secret. All conversations swirling around me turned to background noise. I took more 26

bites. The dish was heavenly. I knew if I could confirm the cheeses involved, my cooking repertoire would take a new direction. Was that Swiss I tasted? Probably. But I knew there was more, much more than one cheese. It was time to break a rule and go full-out CSI. Love can do that to a person. My husband has always had a thing for potatoes, and suddenly, apparently, I did too. I had to make this dish at home. They say a way to a man’s heart is through his stomach. In this case, cholesterol would clearly be en route to my guy’s ticker as well, but still. I flagged down the waiter and whispered, “Would you mind asking the chef what cheeses he used in the scalloped potatoes?” There might have been a flinch in the waiter’s face, but I didn’t care. My oven back home was already pre-heating in my mind. I was going to make this dish. The waiter kindly, discretely reported back to me, “Swiss and parmesan.” Then, he took off like a thief in the night. I suppose at this point you’d like a special scalloped potato recipe. You are, after all, holding a lifestyle magazine in your hands and patiently tolerating this odd tale of passion. Here it is: Simply Google “scalloped potato/Swiss/parmesan.” That’s it. If you can momentarily block out your cardiologist’s face, you’ll find some nice choices. I picked one that also included heavy cream and garlic. Worked like a charm. Funny. I’ve always known the French call potatoes “pommes de terre,” which translates to “apples of the earth.” But now I understand why.
