Caesar? Um, No! I love recipes. I read a ton of recipes. I love cooking. In fact I love all things food. I even enjoy grocery shopping. I consider it retail therapy without the guilt. (Did you hear? Susan bought a 27 dollar piece of cheese? Apparently, no one is concerned with my monthly cheese expenditures.) Recently, as I was scouring the internet for new dinner ideas, I stumbled upon a recipe for kale, sweet potato and crispy chickpea Caesar salad. Wrong. That’s just a salad. Where is the romaine? Where are the croutons—arguably the best part? And don’t even get me started on the conspicuously missing anchovies. And kale. Really? Honestly, are we not ready to send kale back to the planet from which it came? Clearly kale is not meant for human consumption. I feel confident in saying you need a fully functioning appendix to digest that stuff. A food blogger I admire recently featured kale in one of her recipes. She mentioned that one must massage kale to make it more appetizing. What? I need to massage my kale? What’s next? Shall we start giving facials to our spinach or mani-pedis to our arugula? I mean I hate spending time simply washing lettuce. Now I’m expected to provide spa treatments to leafy greens? I digress. A kale and sweet potato salad may in fact be a salad. But it’s not a Caesar salad. You know what a Caesar salad is? A Caesar salad is a Caesar salad. Nothing else is a Caesar salad. Kale and sweet potatoes and crispy chickpeas are so far removed from Caesar salad that it can’t even be labeled distant cousin. It’s a completely different salad and should have its own unique name. Maybe call it a kale, sweet potato salad. Who needs “Caesar” in there? It’s misleading. Similarly, many children’s activities that take place during the summer months are labeled camp. Here’s one: math camp. Say it real slow people and let it sink in. “Math camp.” Imagine a mother uttering these words, “Hey little Jimmy, mommy and daddy signed you up for math camp. You’ll love it. There will be lots of other kids there with type A parents. You’ll feel right at home.” Camp should involve the outdoors and crafts or swimming or games — not fractions, co-signs and tangents. Math camp is school.

And how about rest stops? I’ll Give them the “stopping” part, but “rest?” In all my years of shlepping up and down the Florida turnpike, I’ve never once rested at a rest stop. I’ve snacked. I’ve bought coffee. I’ve used the bathroom. But rest? No. Never. And one more thing about Caesar salads. You hear a lot about how when it comes to current events and politics, we need to at the very least agree on what the facts are. Well, we live in a society where we can’t even agree on what constitutes a Caesar salad. We’re doomed.

City’s Bond Projects are Moving Forward to Next Review Phase The five projects that will be funded with proceeds from the city’s $16.5 million bond issue have completed their review process with the Planning and Zoning Board and the Community Appearance Board, and will soon be heading to the Building Department for review. Last month, the Planning and Zoning Board approved site plans for the construction of the city’s new fire station and emergency operations center (EOC) at 2101 NE 36th Street (Sample Road); a new community center at Dan Witt Park that will double as an EOC for the police department; and a new public works administration building just north of Dan Witt Park. In January, the Community Appearance Board gave its approval for those projects, as well as the renovation of an existing public works building to be used for fleet maintenance, and the buildout of the second floor of the library for use as a community room.

stucco finish, a silver metal roof and a neutral color palette. The Community Appearance Board did recommend a few revisions to the plans, such as changing some of the landscaping, using commercial grade paint, making sure all powder-coated surfaces are double-coated, and using a blue glass instead of a green glass for the windows in the fire station to compliment the pale bluegrey paint color on the second floor. The Planning and Zoning Board approved the site plans subject to the Community Appearance Board’s requests, and made several recommendations of its own. Those recommendations included adding more prominent signage for a handicapped parking space at the fire station; relabeling the “family” restroom in the community center as a “unisex” restroom; and turning a set of steps on the west side of the public works administration >>>

<<< building into a ramp, or some other type of exit, for the handicapped. In December, the City Commission reviewed the designs for the bond projects and was overwhelmingly in favor of them. The Commission voted to move the designs forward to the city’s Development Review Committee (DRC), the Community Appearance Board and the Planning and Zoning Board. The DRC reviewed the plans and found that they meet all city code requirements. The design of the new public works administration building that was presented to the Planning and Zoning Board and the Community Appearance Board was different from the one shown to the City Commission in December. The flat roof was changed to a pitched roof – a suggestion made at the City Commission meeting – and the building blends more with the houses in the surrounding area.

Kaufman Lynn Construction, the firm the City hired to serve as the Construction Manager at Risk, has been working with the architect – as well as William Gallo, of Gallo Herbert Architects, who was hired to serve as the City’s representative – to make sure the bond projects are delivered within a guaranteed maximum price. When construction documents with the guaranteed maximum price are ready, they will be brought to the City Commission for approval. Y

In January, Waste Management notified Lighthouse Point city officials that it will no longer be accepting mixed paper for recycling because there is no viable market for the materials. Mixed paper includes newspaper, mail, magazines, glossy inserts, pamphlets, catalogs, office paper and school paper. These materials should now be disposed of in trash containers. This change affects approximately 18 municipalities in Broward County, including Lighthouse Point, that have a recycling processing contract with Waste Management. According to Dawn McCormick, a spokesperson for Waste Management, paperboard is also considered mixed paper and is no longer accepted. Paperboard includes items such as cereal boxes, tissue boxes and pasta

boxes. The only paper-based items that Waste Management is still accepting are flattened cardboard boxes, said McCormick. Effective August 1, 2020, mixed paper will be counted as contamination just like other items that are not accepted, including plastic bags, soiled pizza boxes, garden hoses, plastic toys and clothing. The City pays Waste Management a recycling processing fee of approximately $90 per ton. Waste Management charges the City an additional $55 per ton to dispose of the contamination. “That’s why It’s so important for the economics of recycling that residents only recycle the right materials,” said McCormick. Lighthouse Point Yacht Club Redevelopment Plans Are Up for More Approvals this Month Plans to redevelop the Lighthouse Point Yacht Club continue to work their way through a lengthy approval process that began over a year ago. On March 3, the planning and zoning board is scheduled to review an amendment to the city’s comprehensive plan that will allow residential units on the yacht club property. Terry Paterson, the yacht club’s owner and developer, is proposing to build up to 22 residential units on a portion of the yacht club property that is currently used for tennis courts and parking. Paterson has stated that he plans to use the proceeds from the sale of the residential units to subsidize an updated yacht club facility. Last October, the Broward County Commission approved Paterson’s application for a land use plan amendment that allows up to 22 residential units to be built on the yacht club property. The change to the city’s comprehensive plan is being done to allow the zoning changes that will be needed to permit the residential units. If the planning and zoning board approves the text amendment to the comprehensive plan on March 3, it will be scheduled to go to the city commission for a first reading on March 10. If approved by the city commission, it would then be transmitted to the Florida Department of Economic Opportunity (DEO) for approval. “The city is going to request an expedited review by the state,” said Mayor Glenn Troast. Once the comprehensive plan amendment has been reviewed by

the state, it would go to the county for approval, and then back to the city commission for a second and final vote. “That whole process could take three or four months,” said Troast. In the meantime, other approvals that are needed at the city level will continue to move forward “on parallel paths.” In order to carry out his redevelopment plans, Paterson is requesting several text amendments to the city’s zoning code. The yacht club property is currently zoned as a business district that does not allow for a residential component. In order to build the townhomes and single-family homes, Paterson is requesting that a new zoning district be created. According to Troast, the developer is planning to go to the Planning and zoning board meeting on April 7 to have the zoning text amendments, a developer’s agreement and a preliminary site plan reviewed. If the zoning text amendments, the developer’s agreement, and preliminary site plan meet the planning and zoning board’s approval, they would then go to the city commission for a first vote. The city commission will not be able to cast a second and final vote until the amendment to the city’s comprehensive plan is approved by the state and the county. The yacht club property will also have to be rezoned to correspond to the new zoning district that is created. Once the property is rezoned, the redevelopment plans would go to the city’s development

review committee, the community appearance board, and then back to the planning and zoning board for site plan approval. In January, Paterson made an informal presentation of a revised site plan to the planning and zoning board. During discussion of the site plan, the Board stressed to Paterson the importance of having a developer’s agreement in place. The city is actively working with Paterson and his attorney to finalize a developer’s agreement. The developer’s agreement will contain all of the provisions of how the yacht club property will be developed, and will refer back to the zoning and the site plan. It will include a timeline, or phasing plan, detailing what will be developed and when. The developer’s agreement will be attached to the yacht club property, so If the property were to change ownership, the new owner would be subject to the same developer’s agreement. The developer’s agreement will also include a requirement for a performance bond, which is typically issued by an insurance company. If the developer fails to build what he has committed to build under the developer’s agreement, the performance bond would provide the city funds to restore the property to a reasonable condition so it is not an eyesore, said Troast. “It’s just something to give us the ability to clean it up,” said Troast. “It’s a protection factor for the city.” The amount of the performance bond is still being negotiated. Lighthouse Point Households Will Receive 2020 Census Invitations in the Mail This Month Between March 12 and March 20, invitations to participate in the 2020 Census will start arriving by mail in households in Lighthouse Point, and across the country, according to the U.S. Census Bureau, which is part of the U.S Department of Commerce. Census day is officially April 1, but the response period opens as soon as the invitation arrives. This year, for the first time in the history of the census, people will be able to complete the census form online, by phone or by mail. The census form will be available online and by phone in English and 12 additional languages. “It is so very important that everyone in Lighthouse Point is counted in the 2020 Census,” said Lighthouse Point Library Director

Christy Keyes, who is in charge of census outreach in the city. Keyes has attended census meetings designed to improve the Census 2020 count by coordinating the efforts of the municipalities within Broward County. Keyes has also made sure that documentation explaining the census has been available to residents at the library and through other means of distribution. Census data is used to distribute more than $675 billion per year in federal funds for a variety of needs, including healthcare and human service programs, new roads,

national school lunch programs, education, public housing and emergency services. An undercount in the 2010 Census cost Broward County approximately $21.1 million per year, or $210,970,000 over the last decade, according to the U.S. Census Bureau, because 14,600 residents were not counted. The census data also helps determine how many seats each state will have in the U.S. House of Representatives, and is necessary for an accurate and fair redistricting of state legislative seats, county and city councils and voting districts based on population changes. Florida gained two congressional seats as a result of the 2010 Census. The census will ask for information such as the name, gender, date of birth and ethnicity/ race of each individual living at the residence (including young children), even if they are not related, or are not a U.S. citizen. The census will not ask about citizenship or immigration status. The census will also ask for a phone number (to be used only for official Census Bureau business, if needed), and whether the residence is owned or rented. Households that haven’t responded to the initial invitation will receive reminders and eventually receive a paper questionnaire. If no response is received online, by phone or by mail, a census worker will follow up in person, starting in May.

Official census workers can be identified by an ID badge with their name, photograph, Department of Commerce watermark and expiration date. They will carry an official bag or laptop with the Census Bureau logo, and will present a letter on Census Bureau letterhead stating why they are visiting the residence. They work between the hours of 9am and 9pm. An official census worker will never ask for anyone’s full social security number, for money or donations, for anything on behalf of a political party, for a bank account or credit card number, or for access to a person’s home. Completing the census is mandatory. Answers can only be used to produce statistics, and not for law enforcement purposes. All Census Bureau employees swear a lifetime oath to protect respondent data, which, by federal law, is kept confidential for 72 years. Census workers are subject to a $250,000 fine and/or five years in prison for disclosing information that could identify an individual respondent or household. According to the Census Bureau, cybersecurity measures have been put in place to keep information safe. In December, the Census Bureau will deliver the census count to the President and Congress as required by law. In March 2021, each state will receive the official count. The U.S. Constitution mandates that everyone in the country be counted every 10 years. The first census, taken in 1790, recorded a population of approximately 3.9 million. No Risk – No Reward BY CRAIG HALEY

JUNE 1 WILL MARK THE 17-YEAR ANNIVERSARY THAT ELITE FORCE MARTIAL ARTS HAS BEEN IN BUSINESS IN LIGHTHOUSE POINT. In February 2003 I moved to South Florida to fulfill my dream of owning and operating my own martial arts school. I’m beyond grateful and honored to have been so well received by the people of Lighthouse Point, Deerfield Beach, and Pompano Beach. Was it a risk to sell my house in Syracuse, quit my “stable” job, and move to Florida with only $1,800 in my pocket? The answer is a big “Hell Yeah!” A funny thing happened two years after I moved to Florida. The AT&T office I worked in closed, and over 300 people were out of a job. Had I stayed, that would have been me. My parents thought I was crazy to leave that job when I did. I had no idea of knowing the office was going to close. I took the chance because I wanted to look forward to going to work every day. I wanted to do something that I loved for a living. Fast forward all those years later, the city of Lighthouse Point gave me and two others the honor of being the city’s Keeper. I am incredibly honored and grateful for this award. Life is full of risks, and none of us are guaranteed anything in life. If we want something, we have to make it happen. There is a saying that I heard years ago, “Don’t wait. Create!” Meaning, we can’t wait around to see if something better comes along. We have to make it happen. We have to create our own luck. In my book, luck happens when preparation meets opportunity. I know many people that talk about wanting to get in shape, start a business, change careers but they never take the necessary actions to start to move the needle towards those goals. I get it. It’s scary to step out until the unknown. We all fear failure, and none of us want to fail publicly. I read an article about Jeff Bezos when he started Amazon. He had a great job and was considering leaving to start this online bookstore. He talked to his boss, and his boss thought it was a great idea. But his boss thought it was a great idea for someone that did not already have a good job. His boss told him to think about it over the weekend before making a final decision.

Jeff had the support of his then wife. He thought about the decision like this. He thought about him sitting on his front porch in his rocking chair at 90 years old and how he would feel if he never tried the business. He knew he would be filled with regret. So, the decision was quite simple. He knew he had to try! What dreams and goals are you thinking about but not acting on? Take the rocking chair test. How will you feel when you are old and looking back on your life? Will you regret not doing it? Will you regret not trying? Look at how Amazon has changed all our lives for the better. What if Jeff Bezos never tried? Colonel Sanders started selling his “secret recipe” at 62 years old. He took a risk at an age when most people are considering retiring and look at the Kentucky Fried Chicken empire he created! One thing is for sure. Your chances of success greatly multiply when you focus on where you want to go, and when you do not focus on what you fear. In white water rafting, they call this the “positive point”. Meaning, the people in the boat need to focus on where they want to go and paddle there. If they focus on the rocks and downed trees, they will collide right into them. All of us are capable of so much, and there are many people that live locally that have created amazing businesses and lives for themselves. Go after your dreams, take massive action, be relentless when obstacles come, and watch the magic happen! The Luck of the Irish? BY DR. JILL SELBACH SOME PEOPLE THINK OF THEMSELVES AS HAVING GOOD LUCK AND SOME THINK OF THEMSELVES AS HAVING BAD LUCK. JUST VISIT OUR LOCAL CASINOS TO SEE THE LUCKY PEOPLE and the people whose luck has run out. Truly though, that roll of the dice really is random. People also differ in their beliefs as to whether they can influence things in their lives or if things just “happen” to them. Luck seems to be less about chance and more about psychology and attention, according to research. On the scientific side…Richard Wiseman’s renowned study in 2003 surveyed the abilities and consideration of

individuals who either thought about themselves as “lucky or unlucky.” Most of us know people in both camps: those who are always winning something and others who are always down on their luck. In Wiseman’s study “lucky” and “unlucky” subjects were asked to count the number of photographs in a newspaper. The selfdefined ”lucky” people were likely to notice a large sign early in the paper that told them to stop counting in addition to another sign that advised them they’d won $250. The “unlucky” participants were focused on the task and neglected to notice these details. The conclusion here is that paying more attention to your surroundings, including seemingly irrelevant details, is more likely to bring you positive outcomes defined as luck. The research led Wiseman to define what leads one to be “lucky.” One important component of being “lucky” is being aware of what is around you. This includes opportunities, people and objects

that could be helpful to you. The next important factor is the expectation that something good could be around the corner for you and this will lead you to look more attentively for it. Lucky people tend to be more optimistic, perseverant and succeed more due to these characteristics. When one has optimistic beliefs more opportunities are pursued. Wiseman is a believer in trusting your feelings. Often we discount our gut and miss opportunities. Lastly, Wiseman found that a positive mindset, specifically about bad luck, is important for changing your luck. Being aware of good fortune and looking for unexpected positives is a way of thinking that is healthy to adopt. Our thoughts, beliefs and attitudes influence our behaviors. In a study in 2010 researchers discovered that talismans used by people who believed it would bring them luck did in fact, perform better at a prescribed task when they had it in their possession. The talisman improved the individual’s selfconfidence and thus positively influenced performance. When we perform well, we have an increased belief in ourselves. The fact seems to be that our attitude will make all the difference in how we perceive things, how we react to situations and people and our behavior in general. Sometimes occurrences completely out of our control occur and we judge them as positive (lucky) or negative (unlucky). But more often than not, we use the word luck when situations do not occur by chance. Your friend is lucky to be able to buy a new boat. No, they worked hard, saved and planned for that. Luck is not the responsible party here. I have such bad luck, my computer was stolen when I left it unattended in the library. We frequently attribute luck to situations that are negative and for which we do not want to take responsibility. Changing our mindset to look for and expect positive things is life changing. What we draw our attention to becomes bigger in our lives. If you look for the good opportunities around you, you will see them. Just give it a try!! Change your luck! MARCH 1 IS “WORLD COMPLIMENT DAY. YOU ARE SUPPOSED TO PAY A TRUE COMPLIMENT TO AT LEAST THREE PEOPLE. IF YOU KNOW SOME CREEP WHOM you can’t say anything nice about, try this: “You have good posture”. I Want You to be Happy Day is celebrated on March 3. Find a way to make someone happy. Suggestion: Send money to me. That will make me happy. An envelope filled with LARGE bills will make me very happy. March 5 is Multiple Personality Day. I will extend good wishes to the three people who live in my head--if they are available on that day. Dentists’ Day is March 6. I plan to send my dentist a pair of gloves lined with fish hooks, along with a note—“try these on and let me know if it hurts.” Be careful with March 7, which is National Crown Roast Pork Day. You are required to cook a crown roast, not just a pork roast. The food police have been alerted. Violators will be forced to write “a pork roast is not a crown roast” 942 times. March 8 is Be nasty Day. My wife tells me I celebrate this year ‘round. If she tells me that on March 1, it will fulfill World Compliment Day. Middle Name Pride Day occurs on March 10. Supposedly there was a good reason why your middle name was chosen. I think my middle name was supposed to be “Bubba” but was somehow

misspelled into “Beelzebub”. My wife thinks it was a perfect choice. The second Thursday in March is Popcorn Lovers Day, not to be confused with “Corn Pop”, the guy Joe Biden punched out. I hate this holiday. Last time I ate popcorn those hard , plastic-like pieces got stuck in my diverticula, turning it into “Jim goes to the hospital day”. March 16 is Giant Panda Day. If you’d like to attract pandas to your yard, plant bamboo. If you don’t have any bamboo, I can sell you some. My bamboo comes with a guarantee. You get your money back if no pandas show up in your garden within 87 years from the date of purchase. Everyone knows that March 17 is St. Patrick’s Day, but did you know it also is Submarine Day? It also is the date my Boston Whaler became a submarine. One of the happiest days of my life. March 20 is Extraterrestrial Abductions Day. This coincides with Abduct Earthlings Day celebrated by Little Green Men from a planet in the Andromeda Galaxy, which explains why most alien abductions occur on this date. Be especially careful to avoid UFOs on March 20. Near Miss Day was established on March 23, 1989 when an asteroid the size of a mountain came close to hitting Earth. I have no joke for this. Consider it the educational part of this column. Finally, March 30 is National Doctors’ Day. I will celebrate it on the 31st. They make me wait. Let them wait. Y

Why You Should Have Uninsured Motorist Coverage BY MARTIN ZEVIN, ATTORNEY

IN A INSURANCE COMMERCIAL FEATURING YOGI BERRA, THE BASEBALL LEGEND ADVISES A YOUNG BUSINESS MAN ABOUT INSURANCE SAYING, “THE ONE YOU REALLY NEED TO HAVE. If you don’t have it, that’s why you need it.” He was definitely right when it comes to uninsured motorist car insurance coverage.

In Florida, only two types of coverage are required: personal injury protection (PIP) and property damage liability. It is estimated that one out of three drivers in Florida only have the minimum required coverage. It is important that you be fully protected in the event one of those drivers injures you due to a rear-end collision or other accident which is not your fault. Therefore, it is extremely important that you properly protect yourself by carrying a maximum amount of uninsured motorist coverage (U.M.). I recommend at least $100,000 per person/$300,000 per occurrence for each

vehicle in your household. If you have more than one vehicle, I strongly recommend “stacking”, which allows you to combine your coverage on each of your cars. Stacking is well worth the small additional premium. Your U.M. coverage also stands for underinsured motorist coverage. This means that you can make a claim against the other driver’s insurance and get the total amount available under that policy and still make an additional claim under your U.M. coverage if your injury justifies it. During my forty years of handling personal injury cases, I have often had to turn people away who were seriously injured through no fault of their own but did not have U.M. coverage and where the negligent party did not have bodily injury liability coverage. Trying to go after an individual driver in Florida is an exercise in futility since it will be virtually impossible to collect even if you go to trial and get a judgment against that person. If you do make an uninsured motorist claim with your own company, this should not affect your premium since you were not at fault. Your uninsured motorist coverage follows you wherever you go. You can make an uninsured motorist claim if you are driving a rental car, driving someone else’s car, a passenger, a pedestrian, a bicyclist, or injured in another state. This coverage provides you the maximum protection to insure that you will be compensated fully for your injuries if someone else is at fault. For the Chicken Meatballs

1 pound ground chicken 2-3 scallions, finely chopped 1 inch piece of fresh ginger, peeled and grated 2 cloves of garlic, finely chopped or grated 1/2 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper neutral oil such as vegetable or canola for rolling

tablespoons coconut oil cup Thai red curry paste cloves garlic, finely chopped inch piece of ginger, peeled and grated. 15-ouncs cans coconut milk (full fat) cups vegetable stock (see note) bunch of blue kale, hard ribs removed and sliced to bite sized pieces 2-3 tablespoons fish sauce (start with 2 and taste, this will depend on what brand you use. I like Red Boat Fish Sauce. You can substitute soy sauce too.) 2 teaspoons sugar 8 ounces fettuccine noodles, cooked to package directions (or whatever noodle you choose) 1/4 cup cilantro and/or basil, chopped, plus more for serving lime wedges, thinly sliced red onions, sliced scallions, red pepper flakes and halved grape tomatoes for serving

Directions

To make the meatballs, combine the chicken, scallions, ginger, garlic, salt and pepper in a bowl and mix until it is just combined. Coat your hands with oil and roll into balls about a tablespoon in size. You should have about 15. Heat a large Dutch oven or heavy bottom pot over medium-high heat. Add the coconut oil and when it’s hot, cook the meatballs on all sides until they are brown and crisp on the outside. Remove and set aside. Add a little more oil to the pan and add the Thai red curry paste, ginger and garlic and cook until fragrant — just 1 or 2 minutes. Add the coconut milk, broth, fish sauce, sugar, herbs and kale. Add the meatballs back in. Cook for another 10-15 minutes or until the meatballs are cooked through and the kale has softened. Place the noodles in the serving bowls and pour the soup over. Top each bowl with the toppings you choose. Note: To make an easy vegetable stock, place 1 quartered onion, 2-3 carrots, 1 head of garlic (halved crosswise), 2-inches of ginger, 2-3 scallions, 4-6 shitake mushrooms and salt and pepper in a heavy bottom pot with a touch of neutral oil. Cook for a few minutes until a tiny bit brown. Add 2 quarts of water, bring to a boil then reduce heat to low and simmer for 3 hours. Drain and discard veggies. Voila — veggie stock. Or just buy it.

Add Some Zip with Zinfandel BY DAVID EHRENFRIED

I SUSPECT THAT NEARLY EVERYONE WHO HAS HAD MORE THAN A FEW GLASSES OF RED WINE OVER THE YEARS HAS PROBABLY DRUNK SOME CALIFORNIA ZINFANDEL. I’m not talking about white zinfandel, the sweetish and fruity blush wine that was popular in the 1980s. I’m referring to the robust red version: juicy, bold and plump, with lip-smacking red or black fruit flavors and often a strong streak of vanilla, smoke and spice. I recall someone describing zinfandel’s smoky wood aromas as reminiscent of a cedar cigar box. Even if you haven’t been a “Zin” fan, good red California Zinfandel is a wine I recommend trying again if you haven’t tasted one in a while. It probably won’t add bounce to your step, but it just might add some special zip to a meal and your taste buds. There are other reasons to try quality red California zinfandel. First, if you’re looking for bold red wine, good zin needn’t be expensive, especially when compared to some other full-bodied California wines (most notably Cabernet Sauvignon). Second, California zinfandel vintages over the past six years have been excellent. Consequently, there are plenty of outstanding options. And third, zin is food flexible — a robust wine that drinks well with many different kinds of food. And despite its relatively high alcohol content (typically 14-15.5% Alcohol by Volume or ABV), good zin can hold up nicely to moderately spicy Indian and Asian dishes. The most expensive California zinfandel wines sell at retail mainly in the $40-60 range. In that price bracket are a lot of the

very best California Zins. Happily though, there are many excellent zins that cost far less. My wife and I tried several widely available Zins in the $10-35 range that were all tasty and enjoyable. Two, in fact, I thought were exceptional. (see sidebar) There are zins selling for under $10, but frankly I’ve found them to be thinner and less interesting. While some have been enjoyable, my experience is they’ll seldom deliver the verve and oomph a really good zinfandel should. You won’t regret spending a little more.

Zinfandel vines are unique and quirky. In warm climates they live and thrive productively for decades, even up to 60 years. In the right hands, grapes from older vines produce delicious, beautifully structured wines of great character. But zinfandel grapes from younger vines grown in the right areas can also produce outstanding wines. Regardless, making top quality >>>

Try the Wine <<< zinfandel requires great skill. Older vines tend to produce large grape clusters that ripen unevenly. Consequently the grapes need to be culled carefully to ensure consistent quality. The foundation for good wine is quality grapes; you can’t make one without the other. Zinfandel is a black-skinned grape, which helps account for red zin’s deep purple color and ample tannins. Vanilla, smoky, woody and other aromas are imparted by aging in oak barrels. (If you’re curious, white zinfandel wine is made by exposing the grape’s pulp to their dark skins just long enough to make the resulting mixture melon-colored, following a process similar to making other rosé wines.)

Shopping for Zinfandel

For a wine to be called zinfandel at least 75 percent of its contents must come from zinfandel grapes. However, you may see wines called zinfandel on their labels next to red wine blends with various other names that also are made with zinfandel. Zinfandel may even be the main ingredient. These wine styles can be quite similar so it can get a little confusing. Many wines labeled zinfandel are also made using other varietals such as syrah, and others to add complexity. Blending is generally a good thing — winemakers do that to make their wines taste better. Most importantly, choose zinfandel or mostly-zinfandel blends made by vintners who specialize in these wines. You’ll also notice that California zinfandel usually comes from specific parts of the state. Some may just say California zinfandel, or something to that effect. That means the wine was made with zinfandel grapes that could have been grown anywhere in California. Zins selling for under $10 typically fall into this category. But as you look over zins on the shelf or on a restaurant wine list, it matters where the grapes were grown, since wine regions in California have different conditions that can result in different wine styles. For example, better zins from warmer areas like the Napa Valley, the northern San Joaquin Valley tend to be very bold with noticeable tannins along with blackberry and dark fruit, vanilla, pepper and other flavors. On the other hand, grapes grown in Sonoma County’s relatively cool Russian River Valley tend to produce softer wines with more raspberry and red fruit and subtler smoky and spicy flavors. Mendocino County, though farther north, is still a warm growing area and produces some beautifully bold and complex zins. One of the main and oldest zin growing regions centers on the town of Lodi in San Joaquin County. We didn’t taste any wines costing more than $35 for this column (see tasting notes), but you can figure that the costlier the wine, the more likely it is that the wine is made from grapes that came from a single vineyard or area. That should be clear on the label. That, however, doesn’t always guarantee quality. As the wines we selected show, you can buy wonderful Zins for under $20, so don’t feel you need to break your budget to buy special or delicious wine. Y

ur world is increasingly interconnected. One of the challenges the citizens of tomorrow face is the need to speak and communicate in more than one language. There is a new approach being adopted across the country which is called Dual Language Immersion Education. Put simply this gives parents the choice to enroll their children in a complete curriculum taught in two languages. Beginning in preschool these students stop speaking English in the classroom but still enjoy time with their English-learning classmates at lunch and on the playground. The schools of the First Presbyterian Church (the Pink Church) are considering offering a dual language curriculum in Spanish and English starting in pre-kindergarten and continuing through middle school. They have started a pilot program in the Imagination Station Preschool and are evaluating parent interest in offering this curriculum through the 8th grade in the Lighthouse Christian School. The schools have engaged addalingua, a Michigan based education organization to help them decide on their approach and to help implement the program using the addalingua methodology, should they decide to proceed. addalingua was founded in 2009 and operates from their headquarters in Holland Michigan. They work with schools across the United States to help with the implementation of dual language immersion education. To further explain what dual language immersion is, it is important to know what it is not: It is not a move toward “everyone must learn Spanish.” The Pink Church schools would continue to offer a traditional English curriculum. It is not a move to “stop speaking English.” Children in the program will be bi-lingual. Tuition will be the same for both programs.

If we give students the gift of bilingualism, of multilingualism — if we give students the gift of those skills and those opportunities — they have a better sense of themselves, their community, and their future, and a better appreciation for our diversity as a country. As Tom said, we aspire to a day when every child has the opportunity to be bilingual or multilingual and we have much work to do to pursue that goal.

We also understand more clearly the importance of bilingual education to students’ understanding of self and community. Nelson Mandela once said, ‘If you talk to a man in a language he understands, that goes to his head. If you talk to him in his language, that goes to his heart.’ That’s a powerful statement.

We knew that in our community there were parents who desired a second language for their children and providing this option would help us to partner with parents (“together with parents”). We decided that speaking a second language and knowing the cultures that speak it would definitely prepare our students “for a life of service in God’s kingdom,” a kingdom that includes the whole world and a world in which there are many Spanish speakers. Another reason we implemented Spanish immersion was to attract more people to our school. The closest other school to offer an immersion education is 50 minutes away. We hoped that some parents would enroll their students in Pella Christian specifically for the immersion program and then see what a great thing Christian education is and become convinced that it was a great option for their children, immersion track or English track. This has been the case as a few families who have older kids in the community school system enrolled their students in our immersion program and then transferred their older children into the English track because they decided they wanted a Christian education for them as well. It has also been an opportunity for those members of our community who are “not religious”, but who are open to their children learning about Christianity.

What were some of the initial concerns that your community expressed when you were exploring adding a dual language immersion program?

Some of the main concerns were: DISCORD WOULD OCCUR AMONGST SPANISH IMMERSION STAFF AND ENGLISH TRACK STAFF. This has not happened at all; in fact some of the

English track teachers most against implementing an immersion program were quickly won over by the warmth and work ethic of our immersion staff. THAT IT WAS IMPOSSIBLE FOR STUDENTS TO LEARN ALL THEIR GRADELEVEL CONTENT AND A SECOND LANGUAGE AT THE SAME TIME. This

fear has also not played out; as I stated before we now have our own data to show that they are learning at the same pace as their English track peers. THERE WAS ALSO A CONCERN ABOUT STAFFING. This has definitely not been easy, but we are grateful that every year the Lord has provided a new teacher for us. Some of the difficulty has come in getting our international hires their visa before the start of the school year. ANOTHER CONCERN WAS THAT THIS WOULD CHANGE OUR SCHOOL.

That has happened, but people now acknowledge that the change has been positive. At one of the first meetings about implementation, we had a grad from PCGS start crying at the meeting as she said that she wanted her children to have the same education as she did. She now has her son in our immersion program and is one of our biggest supporters!

riving over the bridge into St. Simons island is like driving through a time warp to a simpler era — a time when children still climb giant oak trees in the park and grandpa teaches his grandson how to catch sea crabs and fish at the community pier. A time when the heart of the city is a darling main street dotted with old-fashioned ice cream parlors, homemade fudge shops and homestyle restaurants with charming names like Barbara Jean’s. A time when the town diner, Frosty’s Griddle and Shake, is the busy gathering spot for uniform-wearing little league players looking to get a chocolate milkshake after a Saturday morning baseball game. This nostalgic town, with its wholesome American values, might as well be the set of a Hallmark classic movie. You can almost imagine the meet-cute moment when the town’s carpenter meets the town’s bookshop owner budding an epic romance which includes watching sunrises over the coastline and cuddling on a picnic blanket eating ripe Georgia peaches. The neighborhoods of St. Simons Island, which were once a series of more than 40 plantations, are now lined with cute cottages and endless groves of oak trees, covered thick in hanging Spanish moss, which cast mesmerizing shadows and patches of light on every street. The town has a sleepy southern charm and sauntering Southern pace far-removed from the hustle and bustle of other seaside tourist towns. Like Georgia’s version of Cape Cod, St. Simons Island is thus a destination for leisurely escape, simple pleasures and family connection.

The island is also a place rich with American history, ranging from the colonial era, to the Revolutionary War, plantation times, post-abolition, WWII and, more recently, the 30th G8 summit, which took place on the island in 2004. The town is dotted with abundant historical landmarks, offering families ample educational opportunities to help kids continue to learn in between solid doses of spring break escapism. For example, visitors will learn that St. Simons Island was an important landmark in the colonial era when the British settled at Fort Fredrica and defeated Spanish invaders coming up from their stronghold at the Castillo de San Marcos in St. Augustine, Florida. At the Fort Fredrica National Monument, visitors will learn about the colonial battles between the British and the Spanish. A battle fought in St. Simons may

very well be the reason we speak English in the United States, not Spanish. As the story goes, the Spanish invaders from Florida had far superior forces in number than the British troops in Georgia, but due to a clever deception crafted by the colony of Georgia’s founder James Oglethorpe, which involved a fake letter detailing British reinforcements which were non-existent, the Spanish receded without much of a fight. This historic battle, known as the Battle of Bloody Marsh, was reportedly not so “bloody” after all. It secured the British as the keepers of Georgia, an important stronghold. At the Fort Fredrica National Monument, children can play dress up in revolutionary war costumes, write letters using a feather ink pen to describe the Fort Fredrica settlement and watch a mini documentary on St. Simons’s place in colonial history. Across town, families can learn about the Gullah Geechee communities of St. Simons Island. The Gullah Geechee are the descendants of Africans who were enslaved on the rice, indigo and Sea Island cotton plantations of the lower Atlantic coast. Many came from the rice-growing


region of West Africa. Visitors can visit The Historical Harrington School Cultural Center, which was formerly a school built in the 1920s to serve as the main educational structure for the descendants of slaves on St. Simons Island. It hosted grades 1-7 until desegregation in the 1960s. One of the historical property’s hosts, Emory Rooks, is the great-great-grandson of a St. Simons Island plantation slave. He will show you his look-alike great-greatgrandfather’s picture in a historical book at the Harrington School. Just down the road, visitors with find Christ Church and its picturesque cemetery set in tall, mossy grass under towering oak trees. The church was founded on St. Simons Island in 1736 by English colonists. Following a petition for a charter by descendants of early settlers, Christ Church was established by an act of the state legislature in 1808. It is the second oldest Episcopal church in the diocese of Georgia. Close by, one former plantation, the Retreat Plantation, is now a notable destination for a peaceful stroll down the Avenue of the Oaks — a seemingly endless avenue of 160-year-old oak trees, which tower over greens and provide a shady entrance to what is now the Sea Island Golf

Club. Here, visitors will learn the stories of plantation owner Anna Page King, a fascinating woman with a memorable personality who challenged certain Southern norms during her time. A short drive from there is The World War II Home Front Museum, which illuminates coastal Georgia’s contributions to WWII. Through immersive exhibits and interactive experiences, visitors will learn about blimps on anti-submarine patrol, radar training to direct fighter pilots, building Liberty ships to supply troops overseas, and more. Stories from throughout American history come alive on St. Simons Island, especially when delivered by the charismatic raconteur Cap Fendig. Cap runs Lighthouse Trolley Tours and will take guests to all of the aforementioned destinations and more. Cap’s family has lived on St. Simons island since the 1800’s. “I’m an endangered species,” Cap jokes. “I’m a native.” Cap is a lively oral historian with an endless

The King and Prince

If one is to explore the history of St. Simons Island, then one should probably also stay at the city’s most historic and luxurious hotel — the King and Prince Beach & Golf Resort. Legend has it that the King and Prince was started by two hometown rabble-rousers who were kicked out of the local bar for being drunkards. The two — one a towering tall man, the other a stubby short man — were nicknamed the King and Prince. Snubbed by the local bar room, they opened their own pub and dance

Getting to and Navigating St. Simons Island

Whether its food, beach, history, hospitality, luxury or merely quality family time you seek this Spring Break, St. Simons Island is a destination worth exploring. Floridians will find its proximity easy, too. Visitors from South Florida can either make the approximately eight-hour drive, or take a short flight to Jacksonville and rent a car. From Jacksonville Airport, the drive is only about an hour and 15 minutes. When you arrive in St. Simons Island, stop by the Golden Isles Visitor Center to get great suggestions from a local, pick up walking maps and glossy brochures on anything that could possibly interest you, including the island’s many surrounding nature preserves. Bikes are also a great way to traverse this cute little island and can be rented downtown at Ocean Motion [1300 Ocean Blvd.]. The island has more than 21 miles of navigable bike paths.

During prohibition, the ballroom reportedly did not abide by laws and was a favorite drinking spot of St. Simon’s, mostly male, socialites. The hotel transformed over time, becoming more luxurious — a place with fashionable parlors, a classy bar, ballroom, ladies’ lounge, card room, outdoor palm garden, elaborate beachfront boardwalk and elegant Mediterranean architecture. In 1942, during WWII, German U-boats were spotted off the coast. The hotel became a radar station to protect the coastline from submarine invaders and was reappropriated to become a base for naval officers. St. Simons island is the most western location on the eastern coastline (at roughly the same longitude as Akron, Ohio) and could have been a strategic place to divide the country from the center. The hotel’s signature and recently renovated restaurant ECHO gives nod to this WWII history. The King and Prince Beach & Golf Resort became a member of the Historic Hotels of America in 1996, and then was named to the National Register of Historic Places in 2005. Now the seaside hotel boasts multiple pools, luxurious rooms, and a stunning view of the Atlantic Ocean. Opening the patio doors allows guests to hear the laps of waves on the sand just outside their bedrooms. A variety of different room types — ranging from small homes, to condos with kitchens and more classic hotel suites offers options for every type of visitor.

For dinner, the Georgia Sea Grill is an excellent choice for a fine-dining affair with stunning, artistic plating. Another fun culinary adventure to try is doing an olive oil tasting at Golden Isles Olive Oil. Owner Donna MacPherson is an olive oil connoisseur and will teach guests about the nuanced differences and health benefits of international olive oils. The Bali-style paradise has eight romantic suites overlooking Marino Ballena Nacional Park, one of the best places in Costa Rica to see migrating humpback whales. En-suite amenities include a luxurious king-sized bed, floor-to-ceiling glass walls, a double rain shower with solar heated water, luxury linens and an oversized purple hammock — perfect for taking in the panoramic views of the Whale’s Tail sandbar. Sunsets are the main event at the saltwater infinity pool, which by the way, has an underwater sound system. But the heart of Kurà rests on sustainability and community. The ecoresort bans all single use plastics and reduces waste by composting and recycling. Solar panels provide nearly 100 percent of the energy used at the property and wastewater is purified on-site and then repurposed for irrigating the gardens.
