A PERSONAL NOTE

Y

ou are most certainly aware that we are in the midst of unprecedented activity in the high-end real estate market… resulting in critically low inventory of million dollar-plus properties like yours. Consequently, this is a once-in-a-lifetime opportunity to sell your important property to fully maximize your ROI. Since Premier Estate Properties has achieved the majority of recently closed as well as pending million dollar-plus sales in your marketplace, we are privy to market valuations that are not yet public knowledge. That makes us uniquely qualified to guide you in accurately valuing your ultraluxury property.

The 25th Annual Dunn’s Run

Over the years, Dunn’s Run has become a local tradition. This year’s run/walk will honor Jim Dunn, the late founder of J.R. Dunn Jewelers in Lighthouse Point. Dunn started the race 25 years ago as a way to give back to the community. Dunn’s Run has raised $3.5 million dollars for the Boys and Girls Clubs of Broward County.

Creatively Speaking

The Day the Starter Died BY SUSAN ROSSER LIKE A ZILLION OTHER PEOPLE, I BAKED MY FAIR SHARE OF SOURDOUGH BREAD DURING THE PANDEMIC. IN A TIME WITHOUT MUCH GOOD NEWS, THE SHEER MIRACLE of 1,000 grams of flour transforming into wildly delicious loaves with only the addition of water, salt, and a whole lot of elbow grease was precisely what I needed. Any worries occupying my brain were displaced by my singular focus on a ginormous bowl of dough. I pulled, stretched and kneaded that mass into submission. My starter was like the pet I never had. I housed it in the fridge, which slows down fermentation. This way, I only had to add flour and water, a process known as “feeding,” once a week. Every week, I fed my starter like clockwork. But as the months dragged on, and my kids flew the coop, and my husband and I were vaccinated — while life wasn’t quite back to normal, it also wasn’t as if we were living through the apocalypse. I slowly shifted my focus back to the outside world, and my starter paid the price. I forgot about it. As the time between feedings increased, my starter never showed signs of being dead (a foul smell or mold). Until one day, it did. There it was, a little blue spot of mold along the ridge of the mason jar. At first, I was devastated. I had imagined I would be one of those people who would someday say, “My starter is 22 years old.” But about 15 seconds after the initial disappointment, I felt a sense of relief and then absolute joy. I didn’t want my pandemic-starter to be my forever-starter. I am ready to close the door on the Covid era and start anew. I doubt I will take up jiu-jitsu or learn to play a woodwind instrument. And I don’t want to get all preachy on this matter because the truth is I probably won’t make any noticeable changes. Yet, the prospect of starting a new sourdough starter pushed me to consider what the next phase of my life could look like. The universe was sending me a signal.

I have no clue how I will start over — but just considering a little change has been a desirable diversion. The other day, I casually mentioned to my husband that perhaps I should investigate voice lessons. I don’t have grand plans to sing anywhere other than the shower, but I often sing around the house. It might be to everyone’s advantage if I sounded a touch better. And yes, the next time I seek to bake a loaf of sourdough bread, I will have to make a new starter. I like to imagine that this new batch will be my forever starter, but I remind myself that life has chapters that start and end. And that’s OK. It’s likely I may never have 22-year-old starter. And perhaps my next chapter will include singing, baking and who knows what else. Luckily, my family is incredibly grateful for my newfound baking skills — the singing not so much. Y

Three Favorite Treats You Never Thought Could Be Good For Your Teeth BY DR. GABRIELA ESPINOZA Pinch yourself, you’re not dreaming. Studies have revealed that three of our most favorite dietary vices may actually have cavity-fighting properties and be good for your teeth. Here’s a quick breakdown: DARK CHOCOLATE – All hail the cocoa bean. This news may have been around a while, but it’s still all good. Cocoa beans, which are used to make chocolate, contain antioxidants, including flavonoids, polyphenols and tannins. Tannins cause dark chocolate to have that delightful bitter taste, and they also have properties that help prevent bacteria from sticking to your teeth. Polyphenols have antimicrobial properties, which means they help to reduce the amount of bacteria in your mouth. Bacteria

in the mouth are what cause bad breath and gum disease. If you’re planning to run out to get some dark chocolate, aim for 70% cacao or higher. RED WINE – Yes, you heard right. Red wine, like dark chocolate, also contains tannins and other antioxidants. A study published in the Journal of Agricultural and Food Chemistry recently concluded that red wine inhibited the growth of bacteria and oral biofilms, which become plaque. BLACK COFFEE – The trifecta is complete. Results of a recent study revealed that black coffee might also have properties that inhibit the growth of bacteria. The study found that an extract called canephora, present in about 30% of the world’s coffee, helped break down the biofilms. Coffee also contains tannins, the same antioxidants found in red wine and

chocolate. The coffee bean cited in this study is called Robusta. Robusta is often found in darker, stronger roasts. Enjoy, in moderation — Is this all too good to be true? Well, maybe. While offering benefits, coffee, chocolate and red wine all have dark pigments that can stain teeth. Check with your dentist for the best and safest options to whiten and brighten your smile! Dr. Gabriela Espinoza is an orthodontic and cosmetic dentist at Park Plaza Dental. She has over ten years of experience caring for her patients. She received her dental degree (DMD) from the Boston University Henry M. Goldman School of Dental Medicine and completed a fellowship in Orthodontics at New York University. Dr. Espinoza focuses her practice on restorative dentistry, aesthetic dentistry, Invisalign and orthodontics. City BEAT

The Alamanda Bridge Won’t Be Replaced with a Culvert Line Lighthouse Point residents concerned about a possible plan to replace the Alamanda Bridge on NE 24th Avenue (between NE 46th and 47th Streets) with a culvert got some good news at the Aug. 24 city commission meeting. Mayor Glenn Troast stated that the concept of the culvert was "being pulled and will not be happening." Instead, the City has issued a request for qualifications (RFQ) to find a bridge engineering consultant that can assist the City in evaluating other options that may be available. The City was considering replacing the Alamanda Bridge with a culvert, or large round pipe, possibly seven feet tall, which the water would pass through. At road level, it would have looked like a bridge with a sidewalk, pedestrian barriers and lighting. The Alamanda Bridge is the only way to access NE 47th Street, which sits on an "island." A culvert would be less expensive than a new bridge, and vehicular traffic could be maintained during replacement. Residents who live next to the Alamanda Bridge expressed concern about the aesthetics of a culvert and a possible decrease

in water flow that would cause a greater amount of floating debris to accumulate. They also emphasized that Lighthouse Point is a boating community known for its beautiful waterways and converting the Alamanda Bridge into a culvert would set "a precedent" for other bridges in the city. Some residents started a website and an online petition against the culvert. Last year, the Broward County Commission approved $913,588

in transportation surtax funds to replace the Alamanda Bridge, which has reached its useful lifespan. The funds expire in June 2023. The City is working to extend that deadline and obtain additional funds when the time comes to design and build a bridge on NE 24th Avenue. The bridge engineering consultant the City is looking to hire would evaluate other bridges in Lighthouse Point, not just the Alamanda Bridge, said Troast. Y

Pompano Citi Centre Update Several new businesses are getting ready to open their doors at Pompano Citi Centre, the shopping center located at the southwest corner of North Federal Highway and East Copans Road. Burlington department store, TJ Maxx and Five Below (a $5-andunder retail chain store) — located in the revamped former Sears retail building — are expected to open in the first week of October. Two groundfloor tenants in the northwest corner of the building — Crafty Crab (a full-service seafood restaurant and bar) and America’s Best Contacts & Eyeglasses — are expected to open by the end of the year, according to Carlos Fernandez, property manager of Pompano Citi Centre. The new TJ Maxx store will replace the TJ Maxx location that was in the Venetian Isle Shopping Center in Lighthouse Point. A new 18,829-square-foot retail and restaurant building that is being constructed on the site where the Sears Auto Center used to be, fronting Copans Road, should be completed in November. The building has six tenants — Aspen

Dental, Venetian Nail Spa, The Joint Chiropractic, Tropical Smoothie Cafe, Wing Stop and Five Guys Burgers and Fries. The first tenant to open will be Aspen Dental, and the others will follow, said Fernandez. Leases for two other spaces in the new building are currently being negotiated. There are three spaces still available for lease on the second floor of the old Sears retail store. Plans are moving forward to build a gated 356-unit residential development on a portion of property at Pompano Citi Centre. The market rate rental apartments will occupy the site of the former Macy’s department store and the surrounding parking area. Sterling Organization, which owns Pompano Citi Centre, has a contract with The Morgan Group, a multi-family developer, to build the project. In February, the Pompano Beach City Commission approved on first reading the developer’s request

for a land-use plan amendment to change the land use designation of the 12-acre site from commercial to residential. The land-use plan amendment was approved by the Broward County Commission in September, and is expected to go to the Pompano Beach City Commission for a second reading on October 12, 2021. According to the city’s Development Services Department, the site where the proposed residential development would be built will also need to be rezoned as a Planned Development. Y

Pompano Beach Water Taxi to Resume Service The Pompano Beach Water Taxi is expected to be back in service this November, after being completely shut down in March 2020 due to the pandemic. Currently, the water taxi’s itinerary is as far north as Cap’s Place in Lighthouse Point and as far south as Bokampers in Fort Lauderdale, where passengers have the opportunity to connect with the Water Taxi of Fort Lauderdale. Efforts are underway to expand the Pompano Beach Water Taxi service to Deerfield Beach, with stops at Two Georges at The Cove and at NE Second Street. There is also a goal to eventually secure a stop in Lauderdale-By-The-Sea and at the Hillsboro Inlet Lighthouse. Y LEFT the Pompano Beach Water Taxi

New Publix at Shoppers Haven Is Moving Forward

Plans for a new Publix to fill the anchor space at Shoppers Haven — the retail center located at the southwest corner of North Federal Highway and Sample Road in Pompano Beach — continue to move forward. The 52,000-square-foot anchor space was formerly occupied by Winn-Dixie. Christopher Partridge of Partridge Equity Group, which owns and manages Shoppers Haven, said the existing anchor space will be completely demolished, and Publix will build a brand new structure at the same location. If the necessary approvals are obtained, Publix would also like to add a liquor store adjacent to the grocery store. The proposed plans have been submitted to the City of Pompano Beach, and are currently going through a review process. The previously existing Winn-Dixie permanently closed in early 2019 and the grocery store retail space has since been vacant. There is already a Publix in Venetian Isle Shopping Center, which is almost directly across from Shoppers Haven, on the opposite side of Federal Highway, in Lighthouse Point. There is also a Publix in The Shoppes At Beacon Light, which is also in Lighthouse Point, and about one mile south of Shoppers Haven. Partridge said that, for now, Publix’s plan is to keep all three stores open. Another instance of Publix stores being in such close proximity to one another is in Oakland Park. The Publix

at the Northridge Shopping Center, located on the northwest corner of East Commercial Boulevard and Dixie Highway, is directly across the street from another Publix store, which was formerly a Safeway, and before that an Albertsons. Having both locations prevents competition from moving in. In addition to redeveloping the Shoppers Haven grocery store space as a Publix, Partridge Equity Group is proposing to enhance the facades of the entire shopping center “to create a more modern and inviting appearance.” The owner is also proposing to reconfigure the existing parking areas to enhance circulation and accessibility. The 215,000-square-foot shopping center, which dates to the late 1950s, has not undergone a major renovation in many years. The Shoppers Haven plans also include adding a six-story multi-

family residential building, called Vista Clara Communities at Pompano Beach, to the south end of the property. The proposed residential building would feature up to 250 luxury rental apartments at market rates, according to Partridge. “It’s something we definitely want to do, but we want to do it when the timing’s right,” said Partridge. “We’re going to allow the market to dictate the need for new market rate apartments; we’ll build it when the need is there.” Partridge said that, right now, his focus is on renovating the shopping center and getting the Publix opened. An Outback Steakhouse is currently being built on a Shoppers Haven outparcel along Federal Highway, just south of the Walgreens at Sample Road. Construction got underway last March. The steakhouse is expected to open by the end of October 2021. Y

Custom Rod & Reel Will Relocate to Old Payless Shoe Store Building The Custom Rod & Reel store that has been at 1835 NE 25th St. in Lighthouse Point for 45 years has plans to move into the building at 1790 N. Federal Highway in Pompano Beach, formerly occupied by Payless ShoeSource. The approximately 5,400-square-foot building has been gutted, and work is just getting underway on the interior buildout and a new facade, which will take about four to five months to complete, said Jordan Smith, who is the manager and co-owner of the store with Robert Rutner. "We look forward to the increased exposure on Federal Highway and serving the South Florida fishing community at our new location," said Smith.

Wahoo Bay Underwater Educational Marine Park Is Getting Underway LIGHTHOUSE POINT RESIDENT ROY ROGERS PLEDGES $100,000 TO THE PROJECT Wahoo Bay, the interactive underwater educational marine park that is being developed inside a half-acre area of the Hillsboro Inlet, adjacent to the Hillsboro Inlet Park, continues to make progress. Water marker buoys delineating Wahoo Bay as a swim-only area are expected to be installed by this month, according to Rob Wyre, chairman of Shipwreck Park. No jet skis, motorized boat traffic or anchoring will be allowed, to ensure protection of marine life habitat and a safe zone for snorkelers to explore and learn about the marine environment and its importance to everyday life. Shipwreck Park, a not-forprofit organization, is behind the Wahoo Bay project, working in collaboration with the City of Pompano Beach, Broward County and several educational institutions. Wahoo Bay will have a particular focus on educating youth. The marine park will be a place where students can come on supervised, scheduled field trips to have an underwater educational experience. The target group is students in grades K-12. Wahoo Bay is collaborating with the Guy Harvey Ocean Foundation and the Bergeron Wildlife Foundation in developing the virtual curriculum component that will provide information on the Wahoo Bay website (wahoobay.org) to students across the globe, not just in Broward County. That curriculum will also include historical data collected from the water monitoring equipment on site at Wahoo Bay. protection system, called SEAHIVE, which was developed by the University of Miami. The SEAHIVE will be deployed in the water along the southern seawall of the Hillsboro Inlet Park. Each of the six, 20-foot long modules will have mangroves planted on top, providing an ecofriendly environment for marine life. The Wahoo Bay project also includes plans to deploy a number of artificial reef modules that will be pieces of underwater public art and designed in a way that encourages coral growth and marine life habitat. Underwater public art will also be attached to the six SEAHIVE components. In August, the U.S. Army Corps of Engineers issued a permit for the development of Wahoo Bay. A permit from the state of Florida will follow, and then an order can be placed for the SEAHIVE, which will take about 90 to 120 days to be fabricated and delivered, said Wyre.

Wyre expects the order for the SEAHIVE to be placed late this month or in November, and installed early next year, along with the live action underwater cameras and water monitoring system that will be physically attached to the SEAHIVE. A swim platform would be built next to the existing dock at the Hillsboro Inlet Park in the second quarter of 2022. The next phase will involve putting the artwork in the water, establishing a virtual curriculum, and, depending on the availability of funding, adding some educational components on land, such as interactive educational displays. Fundraising for Wahoo Bay gained momentum in August, when an event hosted by Shipwreck Park at the Oceanic restaurant raised over $50,000 in private donations. 14th Street Causeway Bridge

MAINTENANCE AND REPAIRS WILL IMPACT VEHICLE AND BOAT TRAFFIC The 14th Street Causeway Bridge over the Intracoastal Waterway in Pompano Beach will be undergoing routine maintenance and repairs, scheduled to start this month, which will affect vehicle and boat traffic. The project is being carried out by the Florida Department of Transportation (FDOT). Lane closures on the bridge will occur daily at any time during work shifts for the duration of the project, according to Ricardo Baraybar, the senior project engineer. The project is expected to be completed in spring 2022, depending on the weather and holidays. Except for four consecutive weekends when the bridge will be entirely closed, one lane in each direction will remain open for traffic at all times. Pedestrians will be able to use the one sidewalk that remains open and bicyclists will be able to use the one vehicle lane that remains open. Wyre said close to $200,000 has been raised for the project so far, which will be enough to pay for the SEAHIVE and its installation. “We’re still in the process of fundraising,” said Wyre. The goal is $1 million, which

is the estimated cost to construct the Wahoo Bay project and cover ongoing expenses for a couple of years, such as providing life safety for the people physically visiting the park, and maintaining the underwater cameras and sampling devices. In addition to donations from private individuals, corporate sponsorships are being sought with companies that share Shipwreck Park’s mission of conservation through education, said Wyre. Y

Pompano Beach Is a Top Contender for Broward Commuter Rail Station The Florida Department of Transportation (FDOT) recently held three public kickoff meetings (Aug. 30, Aug. 31 and Sept. 1) to introduce a Project Development and Environment (PD&E) Study for Broward Commuter Rail, a commuter rail system similar to TriRail that will run along the Florida East Coast (FEC) Railway from Deerfield Beach in Broward County to Aventura in Miami-Dade County. The Broward Commuter Rail service is anticipated to have a total of six passenger stations. Nine potential station locations were determined between 2010 and 2016 using certain evaluation criteria.

This includes how well a city’s policies, existing conditions and funded improvements would support a station and related new development that will bring residences, jobs and transit riders. vision for creating “a more robust downtown and innovation center,” and that the zoning and land use policies enforce this vision and are transit supportive. Each potential station location was given a rating based on its potential for transit-oriented development. The Pompano Beach location received a “High” rating. The Pompano Beach station location is served by three main BCT bus routes, is adjacent to a major bus transfer station, and is less than five miles north of the Oakland Park/Wilton Manors potential station location, which “makes this the best location for the station,” says the report. Broward Commuter Rail Station <<< a good alternative site, said Tran. The entire site is City-owned. “There’s plenty of existing public surface parking on the site, and the ability to build structured parking if needed for future redevelopment,” said Tran. “Its location on Atlantic Boulevard has greater visibility and ease of access from I-95 and other major thoroughfares.” The City’s plan to create a new urban downtown and Innovation District includes building a new city hall and ancillary government offices in the Innovation District or downtown core. With the relocation of City Hall, the current site would be available for the rail station and future redevelopment. Final selection of the station locations will be made by the Broward County Board of Commissioners and the Broward Metropolitan Planning Organization. The Broward Commuter Rail service will cover a 27-mile segment along the FEC Railway, sharing the tracks with FEC freight trains and Brightline intercity passenger trains. Compared to the Brightline intercity passenger rail service, Broward Commuter Rail would have more frequent stops with two-to-five-mile station spacing, lending itself to shorter trips. Rail trains would have three to four cars totaling 500 feet. According to FDOT, the new commuter rail system won’t compete with Tri-Rail, which uses the CSX Railroad, because, based on previous analysis, Tri-Rail and Broward Commuter Rail have different ridership markets. A designated operator for Broward County Rail hasn’t been identified yet, but Tri-Rail is a potential operator being considered. The County will evaluate this in conjunction with Miami-Dade County prior to making a joint decision, since the same operator would need to serve both counties. Miami-Dade County is studying the implementation of commuter rail service in the FEC corridor for the segment from Aventura to downtown Miami. Tran noted that one of the reasons why Pompano is a top candidate for a Broward Commuter Rail station is because there’s a rail spur on NW 15th Street that connects the CSX tracks to the FEC tracks. If Tri-Rail ever switched to the FEC tracks, Pompano would be one of only a few locations in the tri-county area to have an east-west rail connection between the two corridors. The implementation of the Pompano

connection is currently being evaluated. In January 2021, FDOT and Broward County executed a memorandum of understanding to advance Broward Commuter Rail, and are collaborating on the PD&E study. The capital cost estimate for Broward Commuter Rail will be developed during the study, as well as the operations and maintenance costs. The PD&E study is anticipated to be completed by the end of 2022. Over the next several months, FDOT will continue to perform the engineering and environmental analyses. FDOT will also coordinate meetings with the public throughout the study, including a workshop scheduled for February 2022 and a public hearing scheduled for August 2022. Small group meetings and individual stakeholder meetings will be held with nearby neighborhoods, homeowner associations, civic organizations and public officials. Y

Personal Development

What Makes Successful People Successful BY CRAIG HALEY

SUCCESS CAN BE DEFINED IN SEVERAL WAYS. TRUE SUCCESS IS DIFFERENT FROM PERSON TO PERSON. SOME MIGHT INCLUDE EARNING A specific amount of money or having a certain size house. Others may think success is being famous or influential. Freedom from monotonous or boring tasks could be considered success. My definition of success is waking up every day and liking the thing I must do that day. I don’t want to dread any of the activities in the day that lies ahead. Fortunately, I look forward to most days. I get to do what I love for a living. Recently, success mentor and best-selling author Darren Hardy, laid out the top 10 traits of successful people. This month I will address the first five, and next month I will tackle the second five.

Success Trait #1: Relentless Drive Successful people and top achievers have an insatiable appetite to win. They will put in hours of hard work, preparation, and planning to ensure they are ready to perform at their best when needed. The late, great Kobe Bryant had a legendary drive. His trainer talks about how Kobe would tell him to meet him at 5:00 in the morning to do some strength and conditioning work. When the trainer arrived, Kobe was drenched in sweat. He had been working out since 4:00 in the morning. After the strength and conditioning workout, Kobe told his trainer he would practice his jump shot and didn't stop until he made 800 shots. After all that, Kobe went to practice with the team. That is relentless drive Success Trait #2: Supersized Thinking By now most people know that the McDonald brothers founded McDonald's restaurant. They came up with the "speedy service" 50 pointpubs.com •

system and had a highly successful operation in California. Ray Kroc was a milkshake machine salesman and approached the McDonald brothers to buy his machines. When Kroc saw the operation, he knew this could be a worldwide business that would be massively successful. On the other hand, the McDonald brothers preferred to keep tight control over their system and not expand the operation. After much pleading and negotiating, Kroc convinced the brothers to allow him to build the franchise to what it is today. Ray Kroc had a supersized vision and acted on it.

Success Trait #3: They Find Massive Leverage Successful people find ways to make themselves act disciplined when they don’t want to. After all, they are human too. Former Navy Seal, author and speaker Jocko Willink >>>

Personal Development <<< wakes up at 4:30am every morning and posts a picture of his watch on Twitter and Instagram to show everyone that he continues to be disciplined by waking up early and working out. This morning obligation provides the leverage he needs to follow through and post each morning. His millions of followers expect it from him. That is massive leverage.

Success Trait #4: They Maintain a Maniacal Focus Successful people always have their goals and objectives in their sights. Author and speaker Brian Tracy has a famous quote, "Clarity is power!" Paul J. Meyer says, “If you are not making the progress you would like to make or are capable of making, it simply means your goals are not clearly defined.” Writing and re-writing your goals every day, creating vision boards, and posting your goals in writing where you will see them multiple times throughout your day are all excellent ways to keep your goals at the forefront of your mind. My good friend and best-selling author, Jeffrey Gitomer, writes his goals on Post-it notes and sticks them on his bathroom mirror. When he achieves the goal, he moves it to his bedroom mirror. This way, he is reminded of what goals he wants to achieve and what goals he has achieved. I bet that makes him feel pretty good. Success Trait #5: Unrelenting Resiliency The much-quoted Winston Churchill famously said, "Never give in. Never give in. Never, never, never, never — in nothing, great or small, large, or petty — never give in, except to convictions of honor and good sense. Never yield to force. Never yield to the apparently overwhelming might of the enemy.” On March 17, 1990, WBC World Champion Julio Cesar Chavez fought IBF World Champion Meldrick Taylor. Chavez was unbeaten with a record of 68-0 with 55 KOs. Taylor’s hand speed and superb footwork were too much for Chavez, and he was ahead on the scorecards heading into the final round. Chavez was being outpointed but stayed resilient and continued to move forward, throwing hard punches. Chavez never wavered or got discouraged, and with only two seconds left in the fight, he landed a right hand and knocked out Taylor. Most people would be mentally beaten and discouraged after losing virtually the entire fight. Not Chavez, though. He stayed focused, resilient and believed he could win when most thought it was impossible. That is unrelenting resiliency! Stay tuned next month for the remaining five traits that make successful people successful! Choosing an Executor for Your Estate BY GREGORY EDWARDS

HERE’S AN UNCOMFORTABLE TRUTH: SOMEDAY — HOPEFULLY IN THE VERY DISTANT FUTURE — YOU ARE GOING TO DIE. THE GOOD NEWS: YOU CAN MAKE THAT MOMENT EASIER ON YOUR HEIRS BY TAKING A FEW SIMPLE STEPS. One of the best ways, financially, to prepare now for that time is to choose a person to be the executor of your estate. Unfortunately, that also can be one of the more overlooked aspects of estate planning — which can spell trouble for your family and your wealth. Your executor is essentially the CEO of your estate — the person responsible for ensuring your will is executed properly. This role can mean handling everything from distributing assets to heirs to making sure any taxes due are paid. In other words, your executor

Four considerations when choosing an executor:

1. PICK SOMEONE YOU TRUST WHO IS WILLING TO DO THE JOB. You need to select someone — such as a family member —

in whom you have a great deal of faith. That won't guarantee things will turn out as you want them to, but it can potentially reduce the risk of negative outcomes. Your executor must also have the time required to do a good job and be inclined to take on the role and all it involves. This is true even if they ultimately engage a professional for additional help. 2. MAKE SURE THE EXECUTOR KNOWS WHAT YOU WANT TO HAPPEN AND RESPECTS YOUR WISHES. The idea here is to

eliminate any vagueness in the will. Clearly communicate what you want to happen. The executor must respect your wishes even if they disagree with them. For example, even if you leave money to a particular cousin whom the executor despises, the executor must still disburse the funds. While it is possible to replace an executor, it is often costly and problematic. The better approach is to carefully and explicitly specify your wishes and choose an executor who will do an excellent job in the role by following your wishes and preferences. 3. SELECT SOMEONE LIKELY TO BE AROUND TO DO THE JOB. When choosing, consider a candidate's age and health

is a crucial player on your estate planning team. Not surprisingly, then, people often find it difficult to choose their executor. The good news: You can choose from virtually anyone. Although in our experience, a family member is the most common option, professionals — lawyers, bankers and others — are also commonly selected. Family member executors may engage a professional for help doing the job — a move that can potentially help avoid family conflicts over assets.

status. After all, an executor who isn't alive or healthy enough to administer your estate won't do you any good. Have a relatively young and healthy executor as your first choice or as a backup. 4. CONSIDER THE PERSON’S FINANCIAL HEALTH. C andidates who have financial challenges, excessive debt or liens against them may not be good, trustworthy options. If you haven't chosen an executor, it's a great time to take this crucial step. If you already have one but haven't revisited the issue in years, you might consider making sure your choice is still the best for you, given your situation and goals. Legal Matters

Avoid Probate

BE SURE ALL ACCOUNTS HAVE BENEFICIARIES

BY MARTIN ZEVIN, ATTORNEY PROBATE COSTS THOUSANDS OF DOLLARS IN ATTORNEY'S FEES AND COURT COSTS. IT CAN TAKE A YEAR OR LONGER. IT IS AN UNNECESSARY BURDEN TO PUT ON YOUR LOVED ONES. Some people mistakenly believe that just having a Florida will avoids Probate. This is not true. A will only names who will inherit your estate and who will be the personal representative (executor). If you do your homework, your executor will have very little to do and almost nothing to pay. The following is your most important homework assignment: name primary and contingent beneficiaries on all accounts. If you have individual accounts, such as IRA's or regular accounts in your name alone, designate at least one primary beneficiary

and one contingent beneficiary. Beneficiaries are also known as: payable on death (p.o.d.), transfer on death (t.o.d.) or in trust for (i.t.f.). In some banks, checking accounts are not allowed to have beneficiaries. In that case, add someone you trust as a joint owner on the checking account. That will enable the person to write checks if you become incapacitated. Upon your death, your joint account holder can use what's left to pay for funeral expenses, death certificates, etc. Anything left over will go to that person without probate. If you have joint accounts (with a spouse, significant other, child, etc.), be sure to name beneficiaries if you should die in a

56 pointpubs.com •

POINT! PUBLISHING

common accident or if one of you dies and the survivor forgets to name a beneficiary. Be sure to do this on all accounts; this applies to banks, brokers, investments, life insurance: anything with a cash value when you die. In my practice, I often have to probate the proceeds of a life insurance policy. Typically, the husband named his wife as primary beneficiary but with no alternates. The wife dies first and then he dies. With no contingent beneficiaries, there must be probate. As an additional homework assignment (for extra credit), consider pre-need plans with a funeral home or cremation society. You are paying in advance for your cremation or burial. Pre-planning for funeral and burial expenses eliminates enormous stress and financial pressure from your personal representative. They just have to make one phone call. The company with whom you signed the contract picks up your body and takes care of the rest. This can be particularly beneficial if you wish to be buried out of state. All arrangements have been prepaid, including with the out-of-state funeral home. Without the pre-need contract, your personal representative would be at the mercy of a Florida and an out-of-state company to make immediate decisions, almost always at a much higher cost than what you paid when you were alive. If you do sign a pre-need plan, be sure your personal representative has a copy. While this has nothing to do with avoiding probate, it does make things so much easier (and less costly) on your loved ones. This article does not discuss ways to avoid probate on your home or any other real estate you own. Please refer to other articles I have written recently, which discuss revocable living trusts, life estate deeds and other options. Also not discussed here are the advanced care directives (power of attorney, health care surrogate and living will) to protect you if you become incapacitated. Do everything you can do now, while you are alive and legally competent. You will be giving your loved ones less stress, financially and emotionally. You will be giving yourself the greatest gift of all: peace of mind. Medicare Advice

Medicare Annual Enrollment Period

IS IT FOR YOU?

BY PHILIP ALSTEN, RPh.

YOU CAN’T TURN ON YOUR TV OR LISTEN TO THE RADIO WITHOUT NOTICING THE AMOUNT OF ADVERTISING FOR MEDICARE. THAT'S BECAUSE THE MEDICARE ANNUAL ENROLLMENT PERIOD BEGINS ON OCT. 15 AND RUNS THROUGH DEC. 7 EACH YEAR. But how do you know if it affects you and whether you need to do anything? The annual enrollment period is when people who are enrolled in Medicare decide what they will do about their Medicare plans for the following year. (If you are not enrolled in Medicare, the annual enrollment period does not affect you.)

During AEP, those already in Medicare can make the following changes if they wish to: • If they are on original Medicare (with or without a Medigap plan) and they do not yet have a prescription drug plan, they can sign up for a prescription drug plan, and it will begin on Jan. 1 of the coming year. • If they are on original Medicare (with or without a Medigap plan) and they already have a prescription drug plan, they can choose a different prescription prug plan if they feel there is a better one available. That plan will also begin on Jan. 1 of the coming year. • If they are on original Medicare (with or without a Medigap plan and with or without a prescription drug plan), they can opt to leave original Medicare and cancel their Medigap plan and enroll into a private Medicare Advantage Plan. • If someone is currently a member of a private Medicare Advantage Plan, they can choose to change to a different private Medicare Advantage Plan, and that new plan will begin on Jan. 1 of the coming year. • If someone is currently a member of a private Medicare Advantage Plan, they can opt to leave their Advantage Plan 58 pointpubs.com •

POINT! PUBLISHING

and return to Original Medicare. Again, this will begin on Jan. 1 of the coming year. Note: A person leaving a Medicare Advantage plan to go back to original Medicare, may or may not be able to purchase a Medigap (aka Medicare Supplement) plan. This will depend on certain rules and variables. Note: Medicare Advantage plans are managed care plans offered by private insurance companies that contract with the federal government. If this all sounds confusing, that’s because it is. And it’s in your best interest to seek help from a trained professional who can educate and guide you in the right direction. There is no cost to enlist the help of an independent insurance agent. Independent agents represent many companies and can help you weigh all your options to find what works best for you. Get Psyched

Sports and Head Trauma BY DR. JILL SELBACH

SPORTS ARE GREAT AND CERTAINLY SOMETHING IN WHICH WE WANT OUR KIDS TO BE INVOLVED. WHEN THEY ARE YOUNG, WE TAKE THEM TO THE PARK ON SATURDAY MORNINGS TO learn basic skills in soccer, baseball, basketball and football. This helps them develop social skills and understand teamwork. As the years go by, sports become more competitive. The opportunity for tackle football comes up. My son asked me if he could play. Everyone in my house knows my answer, "I am saving your brain." I know this may be a little dramatic. We know that many of these contact sports have the potential for concussions, especially football. If there's an injury to be had, my son will have it. What's a concussion? A concussion is a type of traumatic brain injury (TBI) caused by a bump, blow, or jolt to the head. It can also be caused by a hit to the body that causes the brain to move rapidly back and forth in the skull, known as a contrecoup injury. This forceful movement can cause the brain to bounce around

or twist the skull creating chemical changes and sometimes stretching and damaging brain cells. Doctors often describe concussions as "mild" brain injuries because they are not lifethreatening but the effects can be serious. Although the injured person may feel better in a couple of weeks, some symptoms can last for a month or longer. Symptoms of a concussion can be cognitive, physical or emotional. Cognitive symptoms may include difficulty thinking, feeling slowed down, poor concentration and short-term memory issues. Physical symptoms include headache, blurred vision, nausea, vomiting, dizziness, sensitivity to light, balance issues, fatigue and sleep disruption. Emotional symptoms can include irritability, sadness, and anxiety. It is important to rest, engage in only light activity initially and gradually increase activity level until back to normal. A physician should always be consulted if there is suspicion of a concussion. >>>

Get Psyched <<< There has been much media attention on chronic traumatic encephalopathy (CTE) of late. It has many parents concerned. In the past it was associated primarily with boxers and was called dementia pugilistica. Now the focus has been on football players who have suffered repeated concussions and traumatic brain injuries. CTE is a progressive degenerative disease that has both physiological and behavioral components. It can persist over years or even decades due to traumatic impact to the cranium. Over time the brain of someone with chronic traumatic encephalopathy begins to deteriorate. It loses mass and some areas of the brain enlarge and others atrophy. CTE results in the accumulation of tau protein which stabilizes cellular structure in the neurons but can become defective and then disrupts neuronal functioning. Not all people who suffer a concussion or multiple concussions will develop CTE. Education is needed about risks of head injury, how to mitigate risk and how to properly treat and recover from these injuries. The bottom line is to minimize risk, have head injuries treated by a medical professional and follow the instructions to recover. The CDC recommends when an athlete suffers head trauma during a game they should come out of the game. "When in doubt, sit them out." Keep a young athlete with a possible concussion out of play the same day of the injury and until a health care provider clears them to play again. The severity of the injury needs to be determined by a healthcare professional. Do not try to judge the severity of the injury yourself. After you remove a young athlete with a possible concussion from practice or play, the decision about return to practice or play is a medical decision that should be made by a health care provider. As a coach, it is helpful to record the following information to be given to a health care provider to aid in assessing an athlete: • The cause of the injury and estimated force of the hit or blow to the head or body • Any loss of consciousness (passed out/knocked out) and if so, for how long • Any memory loss immediately following the injury • Any seizures right after the injury • Number of previous concussions (if any) Inform the young athlete's parent(s) about the possibility of a concussion. The CDC has a fact sheet that can help parents watch a young athlete for concussion signs or symptoms that may show up or get worse once the young athlete is at home or returns to school. Tidbits & Trivia

Myths about the Human Body Debunked BY JIM TERLIZZI

ALMOST EVERY KID HAS HEARD THE ADMONITION: "YOU MUST WAIT THIRTY MINUTES TO GO SWIMMING AFTER A MEAL OR YOU'LL GET A CRAMP AND DROWN." THE THOUGHT WAS THAT a large meal increases blood flow to the stomach and away from muscles. This is false except for two instances: If your meal included two bottles of chardonnay or if you're wearing a thong bathing suit. The latter is known as "the wedgie effect,” causing cramps in the gluteus maximus. WAKING UP SLEEPWALKERS CAN KILL THEM IS ANOTHER MYTH. When I walk in my sleep, I head for the

kitchen and start to cook. Fortunately, my wife usually leads me back to bed before I get too far. The ingredients I use could kill us both. IF YOU STEP ON A RUSTY NAIL, YOU WILL GET LOCKJAW. Sometimes I wish this were true. There are

some "yap-yap" people I would like to stick with a rusty nail. However, if you drink a “Rusty Nail” (drambuie and Scotch whiskey), you will not be able to keep your mouth shut, a condition known medically as jabber-jaw. CRACKING YOUR KNUCKLES CAUSES ARTHRITIS. If this were true, everyone

who has ever been treated by a chiropractor would have the disease. This does not apply to cracking your knuckles against the skull of a guy named Arthur, which can result in "Arthuritis”. SWALLOWED CHEWING GUM STAYS IN YOUR DIGESTIVE SYSTEM FOR SEVEN YEARS. This is not true

for gum, but it is valid for a vial of Crazy Glue. I think they have this confused with breaking a mirror. You will get seven years if an errant shot from your .357 magnum misses your victim and breaks his looking glass.

HUMANS USE ONLY 10 PERCENT OF THEIR BRAINS. This is only true for politicians. Writers are the sole group to use 100 percent of their brains, which explains the brilliance of this column. YOUR NAILS CONTINUE TO GROW AFTER YOU ARE DEAD.

What actually happens is the skin around your nails becomes dehydrated and retracts from the nails, making them look longer. To prevent this, moisturize your fingertips before you pass away. It may not seem important at the time, but it would be a nice gesture to put this myth to rest. MONOSODIUM GLUTAMATE (MSG) CAUSES CHINESE RESTAURANT SYNDROME.

This was based on an unscientific letter sent to the New England Journal of Medicine some 50 years ago. Sprinkling some of it on your food won’t hurt you. Injecting it into your veins is not recommended, but it will make you taste good. One caveat: MSG can make bad food tasty, so it probably will be found in dishes that aren’t healthy in the first place. YOU LOSE MOST OF YOUR BODY HEAT THROUGH YOUR HEAD. This came from a

government study in the 1950s, where subjects wearing Arctic survival gear were placed in freezing environments. It was found they lost most heat from their heads. The government preached this as gospel until a brilliant writer ( I know, that’s redundant) pointed out that the heads were the only body part not covered. Y

Try the Wine

Indulging in Australia’s Shiraz and Rhône-Style Wines BY DAVID EHRENFRIED I LIKE POKING AROUND IN LOCAL WINE STORES. THE SCENERY, SO TO SPEAK, IS CONSTANTLY CHANGING AS BOTTLES OF THIS AND THAT APPEAR AND DISAPPEAR. AND THERE’S OFTEN AN element of surprise in finding things I didn’t expect—a particular wine or great buy, for example. I’m not usually one to shop for wine with a single purpose in mind, find and buy what I want, and then leave. My wife is very good at that. Not me. As you might guess, she seldom tags along when I shop for wine. I prefer going from section to section, noting what’s available (and what’s not), looking at wine labels, checking ratings and other information on my cell phone, and wondering. It’s neither possible nor practical to taste every wine that catches my eye, so I ponder a bit, make mental notes, and usually move on. Often I don’t get anything. When I do, I’m typically picky and have an objective in mind, even if it’s as simple as finding a kind or style of wine I’ve not tasted before, revisiting a particular wine, or finding a topic for this column. Among my customary wine store stops is checking out Australian wines, shiraz in particular. If there’s a wine my wife and I agree upon unequivocally, it's good Australian shiraz. It can be seriously delicious and often provides excellent value. shiraz is known nearly everywhere else as Syrah, the name the French long ago gave to this grape that’s native to France and used to make both wines. So don't let anyone tell you differently: shiraz and syrah are made from the same kind of grapes. (Syrah was among the grapevines James Busby, the father of Australian wine, introduced to Australia from France in 1833.) It’s not clear why or when Australians decided to call syrah shiraz. It is pretty clearly there’s likely no connection to Iran’s ancient city of shiraz or the

treasured shiraz Persian rugs made there. I think we can chalk up changing the name of Australian syrah wine to shiraz to brilliant marketing. Anyway, during one of my wine store visits a few months ago, I noticed a few French Rhône-style blends that were available from several notable producers of Australian shiraz. In Australia, as in France, these wines are typically made with varying amounts of grenache, syrah, and mourvèdre (also know as mataro or monastrell). Outside France, they’re now often labeled “GSM,” “SGM,” etc., depending on the proportions of each grape varietal used.

Let the Tastings Begin I had tasted only a few of these Australian blends over the years, and it occurred to me that it would be fun to taste some pairs of similarly priced shiraz and GSM wines from the same producers to see what could be learned and shared with you. The pairs of wines I picked were from four different wineries located in the two main Barossa Valley and McLaren Vale wine regions in South Australia: D’Arenberg, Schild, Chapel Hill, and John Duval. (See tasting notes.) The wines ranged in cost from $10 to $40. The least costly pair was the 100% shiraz and the GSM blend from D’Arenberg’s popular and inexpensive “The Jump Stump” line of wines, which retail between $10 and $15. D’Arenberg, one of Australia’s largest winemakers, also makes many other wines at higher price points. The Schild and Chapel Hill wines were each higher quality and cost between $15 and $25. These producers, Schild especially, are known for making wines of consistent quality and good value. They also make wines from

more selected grapes that sell for more than $50 a bottle. John Duval Wineries produces superb wines that retail in the $30-$100 range. The two we tasted, Plexus and Entity, were easily the best of the pairs and the most expensive, retailing for $30-40. Before starting his winery, John Duval was for many years the head winemaker at Penfolds. In that capacity, he made Penfolds’ “Shiraz South Australia Grange,” arguably Australia’s most famous and expensive wine, general retailing north of $750 a bottle. Many other producers make both very good 100% shiraz wine and GSM or similar blends that you may find in stores near you or online. You may also see blends of shiraz and cabernet sauvignon, which is another wine topic altogether.

power and personality. It should be bold, energetic, and aromatic with a mixture of tasty dark berry and plum fruit, smoky wood, chocolate, earth and savory, sometimes peppery, flavors. Its color should be dense, deep purple, and its texture smooth, even velvety, with subtle but noticeable tannic astringency. The best shiraz is intense, rich, round, full of flavor, and without hard or sharp edges. It should never taste flabby. Australia’s GSM wines are remarkably similar to the popular, easy-drinking French blend, Côtes-du-Rhône. Good GSM >>>

Contrasting Australian Shiraz and GSM Blends You don’t have to be a wine expert to tell the difference between wine made entirely of shiraz and a GSM blend. They’re about as different from one another as blueberry and cherry pie, or the voices of Aretha Franklin and Barbara Streisand to use a different analogy. Good Australian shiraz, like all quality syrah from France, California, Washington State, Chile, or South Africa, should make a delicious statement. Shiraz should have considerable

Tasting Notes Even though I’m partial to shiraz, I did not find the shiraz wines we sampled to be generally better than the blends. I enjoyed some producers’ blends more than their pure shiraz. While I would recommend all the wines, these wines support the rule that quality is usually higher when spending more than $15-20 per bottle. The Stump Jump wines, the least expensive, were the least tasty and least enjoyable of the four pairs of wines. Duval’s wines, the most costly, on the other hand, were in a different league from all the others. But wine and personal tastes vary, so I encourage you to taste some of these or similar wines yourselves to draw your own conclusions. 2017 D’ARENBERG THE STUMP JUMP SHIRAZ, McLaren Vale, 14.5% ABV ($9-

Barossa Valley, 14.5% ABV ($13-18): What a great buy! Tasty mélange of sweet and tart berry fruit plus sage, pumpkin pie spices, and a black pepper kick. Mid-weight and silky. Very enjoyable. 2018 CHAPEL HILL THE PARSON SHIRAZ,

McLaren Vale, 14.5% ABV ($15-$20): Dark berry, vanilla, and earthy aromas; punchy dark fruit and spicy flavors. Velvety but out of kilter. Needs a couple of years.

Try the Wine <<< blends, like Côtes-du-Rhône, are lighter in color and body, round, and more easy-going but with plenty of red and dark fruit mixed with herbs, earthy flavors and a black pepper kick. They may also have slightly more alcohol content than pure shiraz. This is because grenache, though not as full-bodied as shiraz, is more alcoholic. It also has mainly red fruit flavors and aromas like raspberry, strawberry and red cherries, in contrast to shiraz's blueberry, blackberry, dark cherry, and plum characteristics. It's also less tannic than shiraz. Mourvèdre, on the other hand, is dark, full-bodied, tannic, and highly aromatic. It also has a distinctive black pepper kick or finish.

Shiraz should have considerable power and personality. Consequently, when grenache, shiraz, and mourvèdre are skillfully blended, the result is a unique wine that’s more than a jumbled sum of its parts. Grenache softens shiraz's intensity and adds a layer of lighter fruit and finesse, while mourvèdre adds back richness and aromatics as well as a hit of black pepper at the end of each sip. These Rhone-style blends can vary considerably depending on grape quality, the exact percentages each grape variety used, and other factors. But fundamentally, they should reflect the attributes of each grape variety to produce pleasing wines with plenty of vibrant fruit and other flavors. As the wines we tried demonstrated, sometimes the blends succeed beautifully, and sometimes they don’t. But that’s wine.

Food Pairings Pure shiraz nicely complements substantial foods that can stand up to powerful wine. 100% shiraz wines are lovely, for instance, with red meats, roasted or grilled poultry, salmon, and hearty or saucy dishes. But don't hesitate to drink good shiraz, as well, with seasoned grilled or roasted fish. GSM blends, like Côtes-du-Rhône, drink nicely with a broad range of foods, including lighter meals of fish, poultry, or vegetables seasoned with garlic or shallots and aromatic spices like rosemary, sage, thyme, oregano or marjoram. They’re also great with hamburgers. Y

his year marks the 25th Anniversary of Dunn’s Run, a fun-filled event held every year on the first Sunday of October along the ocean on A1A in Deerfield Beach, benefitting the Boys & Girls Clubs of Broward County. The run on Sunday, Oct. 3 is dedicated this year to “Run for Jim,” honoring its late founder, Jim Dunn of J.R. Dunn Jewelers, who founded the run 25 years ago to give back to our local community. “It’s an emotional year for us as a family because Dad was looking forward to this moment for years and 25 is a big milestone. This event has meant a lot to the community and the 25th is extremely significant because of the legacy that Dad was proud to build. He was always competitive and was aiming to make this the biggest one yet, said Sean Dunn. Jim first founded Dunn’s Run in 1996. South Florida businessman and philanthropist, Jim Moran, motivated him to visit the Boys & Girls Club in Hollywood, Florida. After visiting the club, Jim was so inspired and found it was a huge opportunity to help the youth in our community, and so Dunn’s Run was founded to do just that. OCTOBER 2021 • pointpubs.com

“Jim put his heart and soul into this charity. His father died when he was just eight years old, and he got a lesson in charity from his mom who was a visiting nurse. She always found time and some money to gather up turkeys and bring them to disadvantaged families during holidays. He wanted the children without means to have a safe place to get them off the streets and give a better chance at a good life. So, we want this race to be the biggest yet in Jim’s honor,” said Ann Marie Dunn. It wasn’t long before Dunn’s Run had grown into a huge success. Over the years, it grew into one of the largest races in the tri-county area. Dunn’s Run even attracted many famous figures, including Jeb Bush, American politician, and

Allen West, former Congressman. The latter came all the way from Washington D.C. to run through the streets of Deerfield Beach with the American flag. Jim loved that Dunn’s Run always felt patriotic. His favorite moment of Dunn’s Run was always seeing a huge American flag raised above Deerfield Beach from the fire truck. He loved that it was an event built around family for people of all ages, from the young future of our community to its experienced elders. No job was too big or too small for Jim. From the numerous months of preparation in logistics and advertising to make the run a success — to waking up at 2:00 in the morning on race day to make sure all the water stations were stocked and ready to go for the eager runners. Let’s Do

LUNCH BY MRS. KOSSENFLOFFER

Pardon me for being a perpetual New Yorker, but I will never get used to our October weather — no matter how long I live in Florida. To me, October symbolizes autumn. So when a trip to the mailbox is tantamount to taking a hot steam, it never ceases to put me in a foul mood. But over the years, I have developed coping mechanisms for a South Florida October. Chief among them is lunch-fordinner. Yes, we all know about breakfast for dinner. But many lunch foods don’t require much actual cooking — which is desirable when the outdoor temperature is still in the high 80s. There’s nothing wrong with a tuna sandwich or Italian sub for dinner. In fact, it’s pretty amazing. And it’s a great excuse to serve potato chips with dinner — a welcome addition to any meal. If serving lunch at dinner time isn’t your jam, consider these ideas for actual lunch. It could be the highlight of the day. And for those who are never going to put this much effort into lunch, consider the dine out ideas to satisfy your cravings.

INGREDIENTS 1 head red leaf lettuce, torn 1 pound baby red potatoes 10 ounces haricots verts or green beans 1 watermelon radish, cut into wedges 1 pint cherry tomatoes, halved 2 (6 or 7-ounce) cans tuna packed in olive oil, drained 4 hard-boiled eggs ½ cup pitted kalamata olives, sliced Freshly cracked black pepper, for serving Flaky sea salt, for serving For the dressing 2 tablespoons red wine vinegar 3/4 cup olive oil 2 teaspoons Dijon mustard 1 teaspoon salt 1 teaspoon pepper 1/2 teaspoon sugar 1 clove garlic grated 2 anchovies, minced (optional, and you can put the rest of the anchovies from the tin on the salad.) PREPARATION Add the potatoes to a medium pot and cover the potatoes with cold water. Add salt to the water and bring to a boil. Cook until the potatoes are tender and can be pierced with a knife, about 10 minutes. Using a slotted spoon or spider, remove the potatoes. Add the haricot vert to the boiling water and cook until they turn bright green, about 1-2 minutes. Drain the vegetables and put them in an ice bath to stop the cooking. Cut the potatoes in half and mix them with just enough dressing to coat the potatoes. Drain the green beans and also toss them with a little dressing. If you can’t envision yourself Arrange all ingredients on composing this salad, the a platter or individual plates Niçoise at Le Val de Loire is a and serve with the dressing perfect choice. Chopped Salad with Shrimp

AND CREAMY LEMON-DILL DRESSING Serves 2 There is intentionally a lot common ingredients in this salad and the summer rolls. This way you can use up all those fresh veggies you bought. And again, this is a salad; throw in any veggies you love. INGREDIENTS 1 pound cooked shrimp 1/2 head Boston lettuce, torn 1 red or yellow bell pepper, sliced into matchsticks 1/2 English cucumber, chopped or sliced into matchsticks

1-2 scallions, sliced 1/4 cup watermelon radish, chopped 1/2 head radicchio, chopped 1 cup snow pea pods, blanched and sliced Fresh parsley and dill chopped (optional)

For the dressing 1/4 cup sour cream 1/4 mayonnaise 3 tablespoons fresh lemon juice

2 tablespoons fresh dill, chopped 1 garlic clove, grated Kosher salt and black pepper to taste

PREPARATION Whisk all the dressing ingredients in a medium bowl. As for the rest, it’s a salad — you know what to do. But, just in case, combine all the salad

ingredients in a large bowl. Top with half the dressing and toss well. Divide on plates and top with more dressing if desired. OCTOBER 2021 • pointpubs.com

I intentionally have not given amounts for this recipe because you might want to make just two or three for yourself or a whole bunch for a crowd. Or you can prep a batch of veggies in advance and have them ready to go for some last-minute rolls in a flash. Also, the veggies are just suggestions — use whatever you like, but the fresh herbs really make it. INGREDIENTS Round pieces of rice paper cooked shredded chicken Cucumber, cut into matchsticks Carrots, cut into matchsticks Bell peppers, cut into matchsticks Watermelon radish, cut into matchsticks Snow pea pods, cut into matchsticks Red cabbage, thinly sliced Scallions, cut into matchsticks Fresh cilantro Thai basil Fresh mint Nuoc cham and peanut sauce for dipping (recipes below) PREPARATION Dip the rice paper into a bowl of water until it just barely softens. It will continue to soften once it is out of the water, so don’t leave it in too long, or it will become challenging to work with. Place the rice paper on a damp clean kitchen towel. Grab a small handful of chicken, vegetables and herbs and place them near the bottom of the paper, centered between the left and right, leaving about an inch at the bottom edge. Fold the bottom edge over the vegetables. Fold the left and right sides of the paper towards the center, and then roll the bundle away from you. If you will not eat it right away, place the finished rolls under a damp dishtowel and continue. For the Nuoc Cham 2 tablespoons granulated sugar 1/4 cup fresh lime juice 1-2 tablespoons fish sauce 1 garlic clove, grated 1/4 cup water Red pepper flakes, to taste Whisk all the ingredients together and serve immediately with the summer rolls. Or store in the refrigerator until ready to use. For the Peanut Sauce 1/2 cup smooth peanut butter 1/4 cup soy sauce 2 tablespoons rice wine vinegar 1 tablespoon honey 1 clove garlic, grated 1 teaspoon fresh ginger, grated Water to taste (to thin it out) In a small bowl, combine all ingredients except the water. Once combined, add enough water to thin to your liking. OCTOBER 2021 • pointpubs.com

The

MEDI-VEGGIE sub

An all-veggie Mediterranean inspired sub is as easy as opening a few cans and jars. Of course, you can throw on some salami or other meat if you so desire. I put it all together and then weight it down beneath a cast iron pan for easier handling. There are many “wet” ingredients, so it is important to use a crusty and chewy loaf of bread to avoid a mushy sandwich — such as a ciabatta bread or a baguette. Again, I haven’t given amounts because it’s a sandwich. At the end of the day, use as much or as little as you like. INGREDIENTS Crusty bread such as ciabatta or a French baguette Roasted red peppers Artichoke hearts Fresh mozzarella Banana peppers Sliced pitted olives, any kind you love Tomatoes, sliced

NOTE: I usually make a quick vinaigrette by combining 1 part red wine vinegar, 3 parts olive oil, a touch of Dijon mustard, salt, pepper and a bit of dried oregano in a jar, covering it and giving it a good shake. If you want to go the extra mile, grate a clove of garlic in there too. Save any extra dressing in the fridge and use for salads during the week.

Let’s Do

LUNCH

[CONTINUED FROM PAGE 76]

Smoked Salmon Pizza A friend of mine once pointed out that everyone has a precise way to eat a bagel with smoked salmon. I was perplexed. She went on to say that people are very particular about what toppings they use, what sort of bagel they like and the decision to toast or not to toast. I immediately knew she was right because I, too, have a specific way I like my bagels. I have entirely abandoned the bagel and the cream cheese in this recipe, but I am true to my favorite toppings. INGREDIENTS 1 store-bought pizza dough (see note) 1/2 cup olive oil, plus more for the bowl 2 tablespoons everything but the bagel seasoning 8 ounces smoked salmon 5-6 radishes, thinly sliced 1/2 red onion, thinly sliced 1 lemon, thinly sliced 2-3 tablespoons capers, drained 1 8- ounce container crème fraîche Fresh dill, optional Greek olives for serving PREPARATION Coat a medium or large bowl with olive oil. Remove the pizza dough from the refrigerator and place it in the bowl. Cover with a damp kitchen towel and let sit at room temperature for about 30 minutes. Pour 1/4 cup of olive oil onto a 13 x 18-inch sheet-pan. Place the dough onto the pan and stretch it to fit the pan. If the dough snaps back, cover with plastic wrap and let it sit for about 10 more minutes. (You can also roll out the dough on a floured board.) Preheat the oven to 450 degrees. Place the oven racks at the top and the bottom. Once the dough is stretched out to fill the pan, cover with plastic wrap and let it sit for about 30-60 minutes until it rises to be almost as tall as the pan. Dip your fingertips into some of the oil on the side of the pan. Using your fingertips, press indentations all over the dough. Sprinkle with the seasoning and bake on the bottom rack for 15 minutes. Then move to the top rack and bake for 5 more minutes until it is golden brown. Remove from oven and let cool before topping. Once the dough has cooled, top with the salmon, radishes, lemons, onions, capers, crème fraîche and dill. Slice and serve. Serve with greek olives on the side. NOTE: I like to use focaccia dough, which is lighter and crispier than pizza dough. But that is a lot more involved. So just buy pizza dough at the bakery. 94 pointpubs.com •

Franks and Beans Tacos This lunch is admittedly a touch more lowbrow than the others, but it lends credence to the belief that you can place anything within a taco shell for gratifying meal. INGREDIENTS 1 15-ounce can baked beans (such as Heinz) 8 hot dogs, sliced 1 tablespoon grainy mustard 8 soft corn taco shells Neutral oil for brushing, such as vegetable oil For the dipping sauce 3 tablespoons grainy mustard 3 tablespoons sour cream Topping options Red onions, jalapenos, avocado PREPARATION Pre-heat the oven to 425 degrees. Line a rimmed sheet-pan with parchment paper and set aside. In a medium bowl, combine the hot dogs, beans and mustard. Stir to combine. Place the taco shells on a microwavesafe dish. Cover with a damp paper towel and microwave until they are soft, about 30 seconds. This step prevents them from tearing. Place about 3 tablespoons of the hot dog mixture on a soft taco shell. Place on the sheet-pan and repeat with the remaining shells and filling. Brush all the shells with a neutral oil. Place the sheet-pan in the oven and cook for about 15 minutes. Halfway through the cooking, flip the tacos and brush them with more oil. Continue cooking until the shells are crispy. While the tacos cook, combine the mustard and sour cream to make the dipping sauce.

Last Resort

The Green Mountains of Vermont are Calling

KIMPTON TACONIC

As soon as you spot the grand front porch at the Taconic Hotel, you know you're not in Florida anymore. The traditional clapboard architecture is in keeping with the elegant inns of New England. And while Vermont is a perfect place for rest and relaxation, the folks at Taconic will help you organize a customized itinerary for your stay. Plan adventures like fly fishing, skiing, hiking, golfing, kayaking and if you've never taken a swim in a sparkling swimming hole, here is your chance. And, of course, Manchester is the perfect place to see the colorful leaves during the fall. The hotel is located in the Green Mountains in southwestern Vermont in the town of Manchester — which seems as if it were conjured out of an early American painting. But the town does have a more hip side, with some trendy shops and farm-driven dining options. The hotel's restaurant, Copper Grouse tavern, offers a diverse blend of updated yet unpretentious classics. The chef sources ingredients from local farms to create a menu of familiar yet inimitable fare. Beverages at Copper Grouse incorporate mostly American wines, craft-brewed beers and many local spirits. Kimpton Taconic, 3835 Main St., Manchester Village, VT

Superior Results for Hip and Knee Surgery Our Caring, Patient-Centered Practice My practice combines world-class orthopaedic care in a warm and welcoming environment where every patient is treated with respect, the way I would want my family to be cared for. From the rst phone call, you will nd my team 100 percent engaged in addressing your needs. I care for people in their 80s and 90s who refuse to relinquish their independence and opt for surgery to regain an active lifestyle. I also treat patients in their 20s and 30s who desire an improved quality of life and want to feel “normal” again.

Safely Going Home the Day of Surgery My emphasis on preempting and preventing pain after surgery has been a game changer. Patients walk the day of surgery and the vast majority of my patients go straight home the afternoon of their hip or knee replacement surgery. This requires coordinated pre-operative planning and detailed communication between my staff and the patient. “Dr. Leone is the best. I had my left hip done using the SPAIRE technique and the recovery was so incredible I decided to have my right hip done.” ~Bettina Kapp

“I went to three orthopedic surgeons and Dr. Leone was the only one who discovered the underlying cause of my knee pain. Four days after my knee revision surgery I was walking eight miles.” ~Dan Bell
